Hands-on learning soon to be hands off? BY JERMAINE PIGEE
DIXON – For the 18th consecutive year, about 1,000 third-graders from Lee and Ogle counties came to Lowell Park on Tuesday and Wednesday for some hands-on education during Outdoor Stewardship Days. Whether there will be a 19th year remains to be seen, said Lindsay Daniels, administrative coordinator for the Lee County Soil and Water Conservation District, which sponsors the 2-day event. “The way [state] funding is for soil and water conservation districts, we will be lucky if we can be here next year,� Daniels said. “We are really struggling.� Thanks to the budget stalemate, SWCD funding has been suspended for fiscal year 2016. If the suspension remains in effect, districts statewide will have to lay off workers, she said. “We didn’t receive funds for fiscal year 2014, and nothing for fiscal year 2015,� Daniels said. “Since 2008, our funding has been cut by about 70 percent.� At Stewardship Days, Natural Resources Conservation Service, Illinois Department of Natural Resources, University of Illinois Extension Service, and other volunteers joined soil and water conservation district representatives to give presentations to the youngsters. The third-graders traveled between 22 stations learning about the water cycle, conservation law enforcement, forestry and wildlife habitats, among other things. They also had the rare opportunity to see a peregrine falcon, a great horned owl and a redtailed hawk up close. Kiana Olalde, from St. Mary School in Dixon, liked the conservation law enforcement station.
She heard a presentation from an officer who protects wildlife and the environment. “We got to feel the animal pelts,� the 8-year-old said. “I also learned not to mess with the animals.� Fellow St. Mary student Cody McBride also liked learning about conservation law enforcement. “There was a stuffed coyote, and I’ve never seen a coyote,� he said. Using a pencil, paper and a thumbtack, Katie Pratt, agriculture literacy coordinator for Lee County Ag in the Classroom, taught students how to make pinwheels. “It was a hands-on project to illustrate what wind energy is and how to collect wind energy,� Pratt said. “If you blow on the pinwheel really strong, it will not move well because strong wind is not how we get our energy. An easy, soft breeze will move the blades around the wind turbine.� Daniels said she hopes Outdoor Stewardship Days can continue, “For a lot of these thirdgraders, this is their only field trip,� she said. “This event could be put by the wayside just because we probably will not be here as employees.�

IN BRIEF NIU evacuated after bomb threat DeKALB – Northern Illinois University campus buildings were evacuated Thursday evening after a bomb threat was received, according to an NIU police safety bulletin. “The university has received a bomb threat. All buildings need to be evacuated immediately,” the police safety bulletin reads. “Occupants need to stay beyond 500 feet of campus buildings.” No further information was available at press time. – Shaw Media report
Urbana schools ease fingerprinting policy URBANA (AP) – School district officials in Urbana have decided to lift a requirement for prospective student tutors or supervised volunteers to undergo fingerprint background checks.

The Urbana school board voted unanimously Tuesday night to update its volunteer background screening policy to mirror rules in Champaign and other nearby school districts. The (Champaign) News-Gazette reported that only volunteers who have unsupervised contact with students and all new employees will be subject to fingerprint background checks. The district has paid $50 per fingerprint background check for every volunteer since 2008. Now volunteers will undergo online name checks that will cost the district $8 apiece. Requiring name checks instead of fingerprinting on 400 tutors this year is expected to save $13,000.

DIXON – Rita Crundwell’s last belongings will soon go to the highest bidder. An online auction of Crundwell’s assets will be held from Oct. 20 to Nov. 3, the U.S. Marshals Service announced Thursday. The items come from a summerlong seizure of the former Dixon comptroller’s remaining assets. Up for auction are her Terry Bradshaw football memorabilia, a Childeric English saddle, Harley Davidson apparel, cowboy boots and hats, an ATV and mopeds. Items for sale will be viewable early next week on TXAuction.com. This will be the first of two auctions, with the second taking place “before the end of the calendar year,” Marshals Service Chief Inspector Jason
Wojdylo said. The second auction will include Crundwell’s belt buckle collection and household goods. Wojdylo said the government decided against having a live auction out of concern that poor weather might reduce attendance. Bidders must register for this month’s auction at the site. Registration requires credit card information, phone numbers and a shipping address. Wojdylo said some items might have a refundable deposit requirement. Closing times on items will vary. There will be a “dynamic close” – a high bid placed in the last 5 minutes extends the closing time on an item. Winning bidders will be responsible for retrieving their winnings. Jason Wojdylo, chief inspector of the U.S. Marshals Service’s division of asset forfeiture, said the auction represents a conclusion of sorts. Since Crundwell’s arrest April 17, 2012, “we’ve been on the hunt for her assets. ... It is fair to say that we are getting toward the end of resolving the assets that are known. “I think, by the end of the calendar year, we will have crossed that finish line.” For 2 decades, Crundwell stole $53.7 million through her position as Dixon comptroller. She pleaded guilty to wire fraud in November 2012 and is serving a 19-year prison sentence. In addition to paying back what she stole, Crundwell was ordered to pay another $53.7 million in restitution. Proceeds from asset sales go to the city. Motsinger later admitted to police that he had been contacted by Gerken, whom he had known for years, to arrange a drug deal with Clark. Motsinger arranged the deal via text message and went to the house with Gerken, who acted as though he was going to buy drugs, but fatally shot Clark after the two began to “scuffle,” court records show. After being shot in the chest, Clark handed Motsinger 6.87 grams of cocaine, which Motsinger then tried to hide, court records show. Clark was transported to Kishwaukee Community Hospital, where he later died.

hey’re crunchy and delicious out of hand. Not to mention crazy nutritious. But autumn’s favorite fruit is even more spectacular when it plays nice with others in dishes – both sweet and savory.
Fall Greens with Apples, Pecans and Cheddar Serves: 4 12 ounces assorted chicories, such as radicchio, Belgian endive, watercress and spinach 1 shallot, minced 1 tablespoon finely chopped herbs or fresh flat-leaf parsley ¼ cup extra-virgin olive oil, plus more for serving 2 tablespoons sherry vinegar, plus more for serving Kosher salt and freshly ground black pepper 6 ounces aged cheddar, crumbled (about 1 cup) 3 ⁄4 cup fried or toasted pecans 1 green apple, cored, quartered and shaved on a mandoline 1 red apple, cored, quartered and shaved on a mandoline Wash greens and spin dry. Refrigerate in an airtight container, with a damp paper towel over them to absorb any lingering moisture, until ready to use or up to overnight. Put greens in a large bowl and scatter the shallot and herb mix over them. Drizzle oil and vinegar over salad, and season with salt and pepper. Add cheddar and pecans, and toss. Divide salad among four plates and arrange apples over the salad, covering it. Drizzle a little oil and vinegar over the apples, and season with salt and pepper. — “Battersby: Extraordinary

Pumpkin and Apple Soup Serves: 6 3 pounds sugar pumpkins, seeded and halved Oil for greasing pumpkin Kosher salt 3 tablespoons unsalted butter 1 small white onion, chopped 3 Granny Smith apples, peeled, cored and diced 1 clove garlic, minced 1 tablespoon firmly packed light brown sugar ½ teaspoon freshly ground cinnamon ¼ teaspoon white pepper ¼ teaspoon freshly ground nutmeg 1 ⁄8 teaspoon cayenne pepper 3 cups low-sodium vegetable broth 1 cup unfiltered apple cider ½ cup heavy whipping cream Candied walnuts, for garnish (I used pecans) 1 Granny Smith apple, cored and finely diced, for garnish Preheat the oven to 400 degrees. Oil the inside of the pumpkin halves, and season with salt. Place cut-side down on a baking sheet and bake for 30 minutes, or until the pumpkin meat is forktender. Remove from the oven. When it’s cool enough to handle, use a spoon to scoop out the roasted pumpkin. Set aside. In a large pot, melt butter over moderate heat. Once butter begins to brown, add the onion and sauté for 5 minutes. Add apple, garlic, brown sugar, cinnamon, white pepper, nutmeg and cayenne, and cook for 3 minutes. Add the roasted pumpkin, broth and cider, stirring to incorporate, then season
with salt, and bring to a boil. Reduce heat to low, and simmer for 20 minutes. Stir in the cream and let cool for 10 minutes. Transfer soup to a blender (or use an immersion blender in the pot) and purée until smooth. If needed, add additional water or broth to reach the desired consistency. Return the mixture to the saucepan. Serve warm, and garnish with freshly diced apple and candied walnuts. – Food & Wine
Spaghetti in Tomato-Apple Sauce Serves: 6 28-ounce can (3 cups) Italian plum tomatoes, preferably San Marzano 6 tablespoons extravirgin olive oil 2 large stalks celery, cut in ¼-inch dice (about 1 cup) 1 medium onion, chopped (about 1 cup) 1 teaspoon kosher salt 1 pound tart, firm apples, such as Granny Smith 1 pound spaghetti 1 cup freshly grated Grana Padano or Parmigiano-Reggiano, plus more for passing Pour the canned tomatoes into the food processor or blender, and purée until smooth. Pour 4 tablespoons of the olive oil into the skillet, set it over medium-heat, and strew the chopped celery and onion in the pan. Cook and stir the vegetables for about 5 minutes, until they wilt and start to caramelize. Stir in puréed tomatoes. Season with salt, and heat to a bubbling simmer. Cook, stirring occasionally, for 5 minutes or so. As the tomatoes perk, peel and core the apples, and remove the seeds. Shred them, using the coarse holes of a shredder or grater. When tomatoes have cooked about 5 minutes,

Heat again to a simmer, and cook the sauce, uncovered, for about 15 minutes, stirring now and then, until it has reduced and thickened and the apple shreds are cooked and tender. Meanwhile, bring a large pot of salted water to a rolling boil. Add the spaghetti, and cook it’s until barely al dente. Drain spaghetti for a moment, and drop it into the warm sauce. (Reheat, if necessary.) Toss pasta with sauce for a minute or 2, until all the strands are coated and perfectly al dente. Turn off heat. Sprinkle grated cheese over the pasta, and toss well. Drizzle the remaining olive oil, toss once again, and heap the pasta in warm bowls. Serve immediately, passing more cheese at the table. Note: This is a tart-sweet sauce, so don’t skimp on the Parmigiano-Reggiano. 2½ cups sifted all-purpose flour 1½ teaspoons baking powder 1 teaspoon baking soda ½ teaspoon, plus 1 tablespoon ground cinnamon, divided ½ cup sugar 3 tablespoons butter, softened 1 egg ¼ cup apple juice or cider ¼ cup milk 1 tablespoon vanilla 1 medium apple, peeled, cored and finely chopped 2 cups vegetable oil for frying 1 cup powdered sugar In large bowl, combine flour, baking powder and soda, and 1 teaspoon cinnamon. Make a well in the center. In small bowl, cream sugar and butter until fluffy. Beat in egg. Add apple juice, milk and vanilla; beat until combined. Pour into well of dry ingredients and stir until smooth. Stir apple into the batter. Cover and chill dough for 1 hour. Place dough on floured board, knead lightly and roll out to approximately 1-inch thick. Cut with a floured 2¼-inch doughnut cutter (I
used two concentric biscuit cutters). Reroll scraps and cut a few more. Pour at least 2 inches of oil into a large wok or skillet and heat to 375 degrees. Without crowding, fry doughnuts for 1 to 2 minutes on each side, until golden brown. Repeat until all doughnuts have been fried, reheating oil to temperature as necessary. Drain on paper towels. If desired, sift 1 cup of powdered sugar with remaining tablespoon ground cinnamon and sprinkle over warm doughnuts. Note: Be sure to check, and re-check, the temperature of the oil – any higher than 375 degrees and the dough will burn before it cooks all the way through. And don’t be afraid to have a heavy hand with the sugar topping.
