Graduate: Program more than just ‘a way out’ Lee County Drug Court graduates 15th class in 10 years BY CHRISTI WARREN
DIXON – People were dressed up. There were speeches and a receiving line. There were smiles, tears, hugs, and cake. It was 4 p.m. Wednesday in Lee County Court – Judge Jacquelyn Ackert’s courtroom, to be specific, and it was packed. Everyone in the courtroom – family, friends, supporters – was there to celebrate the accomplishments of the five people sitting in the front of the courtroom: the June 2015 graduates of Lee County’s drug court. Three women and two men, all there for different addictions, made up the class of 2015. Smiling, proud, changed. This is the 10th year for Lee County’s drug court, and its accomplishments have been extraordinary, Lee County State’s Attorney Anna Sacco-Miller has said. Thirty-eight people
have successfully graduated, and the program has grown from just five participants in 2005 to 21 in 2014. Just 18 percent of those graduates have recidivated, which means that 82 percent haven’t. Some wanted to use their names for this story, and some didn’t. One of the women, Jenna, a 26-year-old Dixon woman and mother to a son, brought tears to the eyes of a number of audience members as she read a speech about what drug court, and finding sobriety after years of alcohol abuse, has meant for her. “I am now someone,� she said. A safer place for addicts The Lee County law enforcement community is making strides to change the way people with drug addictions are prosecuted. First, though, is creating a safe space for addicts to go and ask for help without fear of being criminally charged. Though it’s still in its planning stages, said State’s Attorney Anna Sacco-Miller, the law enforcement community, along with KSB Hospital, is working to outline just such a program. “The idea is when someone is — when they finally decide, ‘OK, I need to quit. I need help’ – that they come in, that they turn in their equipment, we take them to the hospital, and they get treatment, they get help as quickly as possible.�

Theater finally finding its focus BY PAM EGGEMEIER
STERLING – Efforts to make the Sterling Theater a viable downtown business are starting to gain traction with its third general manager since Theater Management Group left town. Krista Morthland, director of the Northwest Illinois Business Incubator, succeeds Tim O’Brien and Rob Hutcherson, as operations chief at the theater. Morthland had been doing marketing work at the brewand-view since July 1, and started as general manager Dec. 1. Greater Sterling Development Corp. bought the theater in December 2012, and it now is operated as a nonprofit by its board. The series of management changes, however, have made it difficult for the theater to execute its business plan – one based on community involvement and support. Morthland, a Rock Falls native, has stepped up promotions for a string of special events for children and adults. Themed premiere activities range from pajama parties for “Paddington” and the latest “SpongeBob” release to drink specials and adult-only decorations for “Fifty Shades of Grey.” The theater has also been opened to the YMCA Day Camp kids, fundraisers, rentals, corporate parties, and birthday packages. Contests on Facebook, freebies, and partnerships with other businesses are also being utilized to drive foot traffic to the theater. “It’s about getting the word out through a combination of advertising, social media, and community involvement,” Morthland said. “Word of mouth is still a powerful tool.” The business partnerships include working with restaurants on meal specials, and prize donations by retailers. At the end of the day, Morthland realizes movie choices bring viewers, and serving alcohol creates a niche for the theater. “We try to get the first-run blockbusters because we know the choices must be largely based on popularity.” Coming soon are “Jurassic World”, “Ant-Man”, “Minions”, and Disney’s “Inside Out”. focus seems to be bringing tangible results. City Manager Scott Shumard said the theater has operated in the black every month since Morthland took the management reins. Depending on the movie, the theater has sold from 500 to 750 tickets on an opening weekend in the 416-seat theater. Some premiere weekends have brought in close to $10,000 in revenues, and more than $70,000 has been made since December. Shumard said that while the improved box office numbers are encouraging, the project has always been about much more than ticket sales. “This was also about avoiding a costly demolition, keeping a landmark, and creating business opportunities in the Fourth Street storefronts and the entire downtown,” Shumard said. The city receives $2,120 a month in rent from the four Fourth Street businesses, three of which had been vacant before the city fixed them up. “The prior owner allowed the building to fall into such disrepair, that tenants left and no one could move right in,” Shumard said. Asbestos was removed, and structural repairs were made. Between the theater and the storefronts, repairs were made to the sewer system, bowed walls, broken roof joists and leaking windows. When the city loaned GSDC $550,000 to buy the property, the plan was to turn the loan payments over to the next buyer. While the city is hesitant to rock the boat when there is some stability at the theater, the original plan is still in place. “There is finally consistency in doing what we had originally planned, which is using the theater for community purposes,” GSDC Executive Director Heather Sotelo said. “The support is growing, and the community is vested in it.” Sotelo said the theater is available, and there have been some interested parties. The improved financials has her confident the sales pitch will be more compelling. “The theater is still for sale, but now the value is there and we have the numbers to back it up,” Sotelo said.

DIXON – A Dixon man not only needs a new heart, he could use your help in getting it. A benefit will be held for Cameron Roach as he awaits a heart transplant, and organizers are asking for donations. Roach, 21, was admitted in March to KSB Hospital with what he then believed to be the flu. Upon examination however, doctors diagnosed him with viral cardiomyopathy, a disease that caused irreparable damage to his heart. The benefit will be from 4 to 11:30 p.m. on July 25, at Elks Page Park, 7883 Lowell Park Road. Live music will be performed throughout the event and will feature local musician Gina Venier from 9 to 10:30 p.m. A silent auction, bake sale, lip sync battle, and 50/50 drawing will also take place. Admission will be $10 at the door, and free for children 12 and younger. Now’s the best time for one of America’s most popular fruits: Strawberries BY DANIEL NEMAN Tribune News Service
N
ow is the best time of the year. It’s strawberry time. So juicy. So sweet. So delicious. So soft-tender on your tongue. No sensation in the world can compare to eating a plump, sunwarmed strawberry straight off the vine. It is all that is good about the world, concentrated into one perfect, succulent bite. Strawberries are the fifth most popular fruit in the United States. In 2012, America grew more than 3 billion pounds of the berries. In fact, if you took all the strawberries grown in California alone and laid them end to end, they would circle the globe 15 times. That’s a lot of berries. But why not? Almost everybody loves strawberries. They’re good for you – ounce for ounce, they contain more vitamin C than citrus fruit – and a full cup of them has only 50 calories, according to the University of Illinois Extension. In celebration of the powerfully flavorful little fruit, I made three dishes. One was a straight-up dessert, one was an appetizer that was nevertheless somewhat sweet and one, just to be ornery, was an entree. You don’t usually see strawberries in entrees. But I think you’ll like this one. It’s grilled chicken breasts with strawberry red wine balsamic sauce. The recipe comes from Driscoll’s, the largest supplier of strawberries in the country. Let’s start with the first part first: the boneless, skinless chicken breasts are grilled (or in my case, cooked on a grill pan). That gives them the inimitable, hearty taste of a grill (or a grill pan) that happens to pair particularly well with the sweet lightness of fruit. Which brings us to the second part: the strawberry red-wine balsamic sauce. Flavored with shallots, garlic, bay leaf and thyme, this sauce has a warm and earthy

Which brings us to the third part: the strawberries themselves. Although most of the strawberries are cooked into the sauce, others are sliced and laid on top of the meat. They add not only a hint of sweetness to the dish but also an unexpectedly tart undertone that plays off the warmth of the sauce. Put it all on a bed of rice, and you have a deliciously different meal. For the appetizer course, I made a soup that is even more deliciously different. Strawberry soup, of course. This recipe from the Food Network is deceptively easy to make, yet it packs a remarkably satisfying sweet-and-creamy punch. All you do is throw some strawberries, half and half, sour cream, sugar and lemon juice into a blender or food processor and puree it all together. The result is a thick, rich soup that would be just the thing on a hot summer’s day. You wouldn’t want to eat too
much of it – this is definitely an appetizer – but a little bit would make a smooth and elegant introduction to any summertime meal. The strawberry dessert I made would also be perfect for serving to guests. Strawberry mascarpone trifle is a little more complicated, but only a little. It involves four different layers that should be assembled at the last minute, but each one can be made a day ahead of serving. The bottom layer is the easiest of all: ladyfingers. Go to a store and buy ladyfingers (I went to an Italian specialty store, but many grocers also carry them). Simple. On top of them goes a strawberry puree, which is made by gently heating strawberries and sugar for a couple of minutes and then pureeing them. The layer on top of that is sliced strawberries that have been macerating in a bit of sugar and lemon juice until they swim in their sweet juices. And the layer on top of that is a quick mixture of mascarpone cheese, yogurt, vanilla and sugar.
This combination is an intriguing alternative to the custard found in most trifles, and the yogurt gives it a lively tang. If you have any strawberries left over, you might want to place a whole, fresh berry on the top of every serving. It just looks right. It just feels right. What better way to celebrate the wonders found at this, the best time of the year?
Strawberry Mascarpone Trifle Yield: 4 servings 1½ pints fresh strawberries, rinsed, drained and hulled ½ cup granulated sugar Juice of half a lemon 6 ounces mascarpone ¼ cup plain low-fat yogurt 1 or 2 drops of pure vanilla extract 8 whole ladyfingers 1. Slice 1 pint of the strawberries thin and put them in a bowl. Sprinkle with 2 tablespoons sugar and the lemon juice. Toss lightly and set aside for 15 minutes. 2. Coarsely chop the remaining strawberries
and put them in a small, nonreactive saucepan with 2 tablespoons of the sugar. Cover and heat gently, stirring occasionally until the berries give off a fair amount of liquid, about 2 to 3 minutes. Transfer the contents of the saucepan to a food processor and process to a smooth puree. Scrape the puree into a small bowl. 3. Put the mascarpone, yogurt, vanilla and remaining 4 tablespoons of sugar in a small bowl and stir with a rubber spatula or wooden spoon until just smooth. 4. To assemble the trifle, split the ladyfingers in half and lay 4 halves in each of the 4 individual dessert bowls. Divide the strawberry puree among the bowls, spreading it over the ladyfingers. Cover each one with some of the strawberries and their juice, then top with a generous spoonful of the mascarpone mixture. Per serving: 426 calories; 23 g fat; 12 g saturated fat; 103 mg cholesterol; 7 g protein; 53 g carbohydrate; 35 g sugar; 4 g fiber; 68 mg sodium; 127 mg calcium. – Recipe by Ken Haedrich from “Cooking From the Garden”
Grilled Chicken Breasts with Strawberry Red Wine Balsamic Sauce Yield: 4 servings 1 package (16 ounces or 3 cups) strawberries, divided 4 teaspoons light olive or vegetable oil, divided 2/ cups sliced shallots 3 1 clove garlic, pressed or chopped 1 small bay leaf ½ teaspoons dried thyme leaves 2 tablespoons balsamic vinegar 1/ cups red wine 3 3 ⁄4 cups chicken broth 1½ teaspoons cornstarch 2 teaspoons cold water Salt and pepper, to taste 4 skinless, boneless
chicken breasts (4 to 5 ounces each) 1. Hull and slice strawberries. Set aside. 2. Heat 2 teaspoons oil in a small saucepan over medium-high heat. Add shallots, garlic, bay leaf and thyme and stir until lightly browned, 2 to 3 minutes. Add 3⁄4 cup sliced strawberries and cook for 1 minute, stirring constantly. You probably underestimate the connection between what you put in your mouth and how it affects your feelings, moods, and ability to think clearly. I’m not talking about alcohol or other mind-altering substances, although there is a connection. Dr. Kathleen DesMaisons, who worked in a drug- and alcohol-treatment facility, noticed that many patients being treated for chemical addictions also seemed to be predisposed or “addicted’ to consuming

sweets and other simple carbohydrate foods. She was so intrigued by this that she returned to school to study the effect of those foods on our brain chemicals. What she discovered is that the consumption of
sugar does, indeed, affect the release of dopamine and serotonin – brain chemicals that result in feeling rewarded, calm, happy, or relaxed. In fact, when researchers perform brain scans on someone eating something sweet, they see the brain light up in the same regions as it would in an alcoholic after a drink. Dopamine – the reward chemical – spikes and reinforces the desire to have more. It’s no wonder that many people turn to those foods for comfort. And it’s probably no surprise that many peo-
ple begin to crave more and more sugary things. Over time, sugar consumption affects other brain chemicals as well. High sugar consumption has been linked to low levels of Brain Derived Neurotrophic Factor, or BDNF, which supports memory and learning. Low BDNF levels have also been linked to depression and dementia. The U.S. Department of Agriculture estimates that the average American consumes 156 pounds of added sugar each year. The largest single source of added
sugar in our diet is soda pop. We also get a lot from candy, cakes, cookies, pies, fruit drinks, dairy desserts and milk products (ice cream, sweetened yogurt and sweetened milk). Significant amounts of sugar can also show up in products where you might not expect it, like barbecue potato chips, bread, and salad dressings. Begin paying attention to how much sugar you consume. Read labels carefully and note the sugar content of bottled and packaged foods. Sugar is listed in grams
on nutrition labels. Since many of us can relate more easily to teaspoons, just multiply the number of grams by 4 to figure out the equivalent teaspoons. It’s hard to go cold turkey where sugar is concerned, and as with many addictive substances, you may experience withdrawal symptoms. My advice would be to begin reducing your sugar consumption gradually. I would also highly recommend Dr. DesMaison’s books, “Potatoes Not Prozac” and “The Sugar Addict’s Guide to Total Recovery.”

Bake eggs for about 15 to 17 minutes, or until the whites are cooked and yolks are still bright yellow and jiggle when shaken. Toward the end of the baking time, toast and butter the bread. (I cooked my eggs for about 18 minutes.)
Remove baking dish from oven and carefully remove each ramekin from hot water, drying the ramekins off. Drizzle the eggs with melted butter and dust eggs with sumac. Serve immediately, placing each hot ramekin on a plate with buttered toast.

Eggs are a cheap and easy source of protein, but you can get tired of the same old way of preparing them, i.e. scrambling and frying. These easy baked eggs (also called shirred eggs) are an elegant alternative. Prepared in individual ramekins on a bed of baby spinach – abundant this time of year in farmers markets – this recipe is about as divine as they come. Instead of the usual salt and pepper, the eggs gets their zing from an onion-y yogurt sauce
and a liberal dusting of sumac, a ground fruit with a bright and tangy flavor that’s a favorite in Middle Eastern and Mediterranean cooking. The original recipe calls for labneh, a soft cheese made from strained yogurt, but I used Greek yogurt with terrific results. Paired with a salad and buttered toast, this dish makes a simple, rustic brunch or dinner. But it’s also delicious for breakfast.
Baked Eggs with Spinach, Yogurt
and Sumac Makes: 4 servings 2 tablespoons salted butter, melted Big handful of baby spinach leaves 8 large eggs 1/ cup Greek yogurt 3 1 tablespoon grated sweet onion ½ teaspoon kosher salt 4 slices good bread for toast Sumac, for garnish Arrange rack in center of oven preheated to 375 degrees. Set a large kettle of water to boil. Generously brush 4
6-ounce ramekins with some of the melted butter. Line bottom of each dish with ¼ of the baby spinach. Crack 2 eggs into each dish. In small bowl, whisk the yogurt, onion and salt with a tablespoon of water to make a sauce the consistency of heavy cream. Spoon a couple tablespoons of sauce over the egg white in each dish, avoiding the yolk so that it will stay a lovely bright yellow. Season each egg with a pinch of salt. Place ramekins on a 2-inch deep baking dish
