ROCK FALLS – The city observed a milestone Thursday in its ongoing journey to make the riverfront a destination point. Holiday Inn Express & Suites at 301 E. Second St., the riverfront’s christened redevelopment anchor, opened 1 day short of 2 years after plans for the project were publicly announced. Delays drove up the cost for the Rock Falls Hotel Group from about $6.1 million to $7.5 million. Just a few minutes on an inviting patio overlooking the river, however, made city officials believe the hotel was worth the wait. “There seemed to be one thing after the other through the construction process, but the end product is very good, and we think the hotel is going to be wellreceived,� Mayor Bill Wescott said. At about noon, staff at the 68-room hotel were looking to clear the final operational hurdle. “We’re just waiting for
everything to be ready at the front desk so people can check in,� General Manager Amy Poci said. Word came at about 4 p.m. that all of the technology was properly connected with the parent company’s mainframe. Reservations were taken online prior to the opening. “The online bookings have been going very well,� Poci said. “We’ve had a lot of weddings, and there has been a good mix of leisure and business travelers.� Some work will continue after the opening. Landscapers were working feverishly to fill in the green space, and crews were handling some lastminute details, such as hanging mirrors in the fitness room. Poci said the hotel staff is at 18, but after gauging demand, it’s likely that number will grow. Poci and Becky Gragert, the assistant general manager, were busy with all of the finishing touches, but both are seasoned veterans – Poci has been in the hospitality business for 15 years, and
Gragert for a decade. “Every time somebody would come in the door, I would get excited and say that I can’t wait until we’re open, because I know we’re ready,� Gragert said. The mayor said, that after many years of cleaning up the riverfront, the psychological importance of the hotel’s presence is huge. “So much work and money have gone into dealing with all of the environmental issues in the last 13 or 14 years,� Wescott said. “Many people have been involved, and it’s to their credit that they kept the vision that someday we might be able to redevelop the riverfront.� Wescott reflected on a presentation the city made at the National Brownfields Conference in September. “The EPA told us that we had accomplished something that rarely happens,� Wescott said. “They said that most cities never do that last step and actually redevelop brownfield sites.� The sense of urgency to
develop around the hotel hasn’t waned, Wescott said. “We expect to announce more commercial activity in Rock Falls soon along the First Avenue corridor, and look for opportunities to arise from the city’s recent acquisition of property near the I-88 interchange.� Whiteside County Economic Development Director Gary Camarano said the hotel is a great example of using available incentives, such as the TIF district and enterprise zone, to spur growth. “The addition of Holiday Inn Express to the area’s lodging lineup makes the region more attractive to tourism, and it is a significant enhancement to what is becoming the gateway to the Whiteside County region,� Camarano said. The initial phase includes replacing the gravel near the hotel with a concrete road, trail work behind it, riprap, landscaping, lighting, and security cameras. The second phase would include the
amphitheater – the project’s crown jewel. The mayor still holds out hope that the amphitheater can be part of the city’s 150th anniversary celebration next year. The city hopes to have the first phase completed by the end of July, and the second installment by spring 2017.

“First, do no harm” is a reminder to health care practitioners that every decision related to caring for a patient has the potential to do harm. How might this apply to what you eat and how you exercise? People who want to control their weight often concentrate on adding healthy foods or intense exercise. Maybe more protein, the latest supplement/super food, or insane workout will miraculously improve their waistline.

Food-wise, it only makes sense that you can’t just add things to your diet and expect to control your weight. Something has to come out. Why not focus
first on substances that might actually be harmful? These examples come readily to my mind: Sugar – Excessive sugar in our diet has been linked to obesity, tooth decay, and some cancers, as well as chronic inflammation, which contributes to heart disease, arthritis, etc. Eliminating most of the added sugar from your diet will reduce calorie intake and is a good first step toward improving your weight and your health. Fat – Saturated fats
and trans fats contribute excess calories and also affect cholesterol levels. Trans fats are especially troubling because they have been shown to both raise bad cholesterol levels and lower good cholesterol levels. Eat less meat, poultry, and dairy (cheese is one of the largest sources of saturated fat in the American diet) to reduce your fat intake. Read the labels on all packaged foods and look for the word(s) “hydrogenated” or “partially hydroge-
nated” to avoid foods that contain trans fats. Salt – We need a tiny bit of salt to maintain our body’s fluid balance. Too much increases blood pressure and risk for kidney cancer, osteoporosis, and other problems. Preparing your own meals from fresh whole ingredients and eating out less can help to reduce the amount of sodium you consume. As far as exercise is concerned, study after study shows that while it is important, it cannot be relied upon for weight
loss. Furthermore, people who are not used to exercise often injure themselves by attempting to work longer or harder than they are able. Being completely inactive is one of the most harmful things you can do for your health. In this case “first, do no harm” means getting up out of your chair and moving more. But don’t cause harm by overdoing it. If you need to move more, gradually increase your activity so that you do not become injured or discouraged.
WWII veteran, 110, dies Man born in 1905 enlisted in army in October 1942 NEW ORLEANS (AP) – A 110-year-old Louisiana man who enlisted in the army during World War II to serve his country has died. Local television station KPLC-TV in Lake Charles reported that Frank Lev-
ingston died Tuesday. Multiple media outlets described him as the country’s oldest World War II veteran but that could not be independently confirmed. Levingston was born Nov. 13, 1905 and grew up in northern Louisiana. ABC News reported that he enlisted in the Army on Oct. 6, 1942, less than a year after the Japanese attacked Pearl Harbor and launched the U.S. into the war raging in
Europe and the Pacific. “He felt the obligation to give to the country whatever he possibly could, and he was very excited about it,” his nephew, Lee Levingston, told ABC News. “He gave it his very best.” In December, Levingston was part of a group of veterans who traveled to Washington, D.C., for a ceremony marking the Dec. 7, 1941, attack on Pearl Harbor. Ahead of the trip, Lev-
ingston was honored at a ceremony. District Attorney John DeRosier, speaking at the ceremony, said when he looked at Levingston, he didn’t see a 110-year-old man. “I see a young black soldier in green utilities with worn combat boots, scampering across the sand on those beaches,” he said. Levingston served as a private during the Allied invasion of Italy and did

DIXON – A child pornography case involving a Dixon man is the Dixon Police Department’s first investigation to come from the Illinois Attorney General’s High Tech Crimes Bureau. “It’s the first time I’ve received a case like this,” said Detective Sgt. Steve Howell, who has worked there 17 years. David R. Edmunds, 57, who in 2009 took a plea deal and was sentenced to 2 years probation in Lee County for aggravated criminal sexual abuse, now is facing eight child pornography charges:

Police were led to Edmunds after Google intercepted an email containing a digital photo depicting two naked boys performing a sexual act, according to a news release and court documents. With the help of the agencies and a trio of warrants, Dixon police seized and searched his Google account. Information mined from that account led police to his home Tuesday in the 900 block of West First Street. It was searched, and Edmunds was
arrested, the release said. Smaller departments such as Dixon’s typically do not have a cyber crimes officer, so the enhancement to an investigation that the ICAC Task Force provides is particularly helpful, Howell said. In the 2009 case, Edmunds stopped a 15-year-old boy in a Dixon neighborhood, asked him where he was going, then invited him into his house, where he fondled, kissed and performed a sex act on the boy, according to court documents. Two felonies were dropped in exchange for a guilty plea in that case.
MADISON, Wis. (AP) – An Illinois woman has been declared brain-dead after being shot during a random drive-by shooting along a Wisconsin interstate while traveling home with her husband and children, a coroner said Tuesday. Tracy Czaczkowski, who was shot Sunday, was declared brain-dead early Monday morning and is being kept on life support only to preserve her organs for donation, said Greg Hahn, the coroner in Wisconsin’s Sauk County, where the shooting took place. Hahn said her condition is irreversible and that it’s accurate to say she is dead. The U.S. Drug Enforcement Administration released a statement earlier Tuesday saying Czaczkowski had died. Her husband works for the DEA, but investigators believe the shooting was random and that the suspect had killed another person just hours earlier in suburban Milwaukee. “Tracy was a loving wife of 15 years, a mother of two tender age children, daughter and good friend to all,” the DEA statement said. The family was returning to their home in Buffalo Grove, a Chicago suburb, after spend-

DIXON – Competing against three other national finalists, Dixon native and Chicago artist Nora Balayti won an art contest for a German brewery. Balayti was commissioned by the Paulaner and Hacker-Pschorr Brewery in Munich to create a painting that captures the fundamentals of the Reinheitsgebot, the Bavarian Purity Law that allows only four ingredients to be used in brewing beer. Online voting for the contest ended Saturday, and Balayti garnered the most votes. The other artists were from Denver, New York City and Los Angeles. The 2001 Dixon High School graduate won an all-expense paid trip to

The competition was established to celebrate the 500th anniversary of the Reinheitsgebot, the first food purity law on record. Balayti has worked as a commission-based mural artist in Chicago since 2008, painting about 70 murals throughout the city.

The Blazer’s driver opened fire on their BMW sedan, hitting Czaczkowski in the neck, according to investigators. Police stopped the Blazer with a spike strip and shot the driver after he emerged with a gun. The Dane County Sheriff’s Office identified the suspect Tuesday as 20-year-old Zachary T. Hays of West Allis, a Milwaukee suburb, and said two of his brothers also were in the Blazer. No charges have been filed against Hays, and he remained hospitalized at the University of Wisconsin Hospital on Tuesday. His condition hasn’t been released. Investigators believe Hays killed 42-year-old Gabriel Sanchez in West Allis hours before the interstate shooting. Hays has not been formally charged in either Sanchez’s or Czaczkowski’s deaths.

Sesame WholeWheat Tart Dough Prep: 20 minutes Chill: 1 hour Makes: Two 9-inch tart shells 2 cups all-purpose unbleached flour ½ cup whole wheat flour 1 teaspoon salt ½ cup (1 stick) unsalted butter, very cold ½ cup trans-fat-free (nonhydrogenated) vegetable shortening, frozen 2 to 3 tablespoons sesame seeds, optional 1. Put flours and salt into a food processor. Pulse to mix well. Cut butter and shortening into small pieces; sprinkle them over the flour mixture. Use on/ off pulses with the food processor to blend the fats into the flour. The mixture will look like coarse crumbs. (Alternatively, use your hands or a pastry blender to work the butter and shortening into the flours and salt in a large bowl.) 2. Put ice cubes into about ½ cup water and let the water chill. Remove the ice cubes, and drizzle about 6 tablespoons of the ice water over the flour mixture. Add the sesame seeds if using. Briefly pulse the machine (or knead with your hands) just until the mixture gathers into a dough. 3. Dump the mixture out onto a sheet of wax paper. Divide the dough in half; gather each into a ball. Flatten the balls into thick disks. Wrap each in plastic; refrigerate until firm, at least 1 hour. (Dough will keep in the refrigerator for several days.) Spring Veggie Tart Prep: 45 minutes Cook: 65 minutes Makes: 1 tart, serves 6 ½ recipe sesame whole wheat tart dough, see recipe ½ medium leek, tough green ends removed, white section split lengthwise, rinsed 2 tablespoons extravirgin olive oil ½ cup fresh shelled or thawed frozen peas 2 cloves garlic, crushed ¼ bunch skinny asparagus 2 teaspoons minced fresh cilantro, basil, chives or parsley (or a combination) 1 ⁄8 teaspoon dried or fresh minced thyme ½ cup shredded fontina or brick cheese, shredded

Alternatively, use a shallow 9-inch pie plate. 2. Lightly flour a sheet of wax paper. Put the dough disk onto the paper and cover with another sheet of floured wax paper. Roll gently with a rolling pin, lifting the paper occasionally to loosen the dough and turning the dough over several times, until it is a uniform circle about 12 inches in diameter and ¼-inch thick. Remove the top sheet of wax paper. Loosen the dough from the bottom sheet of wax paper, then fold the dough in half and gently put into tart pan. Unfold and gently fit dough over bottom of pan and up the sides. Trim edge. Refrigerate at least 1 hour or up to overnight (cover it well). 3. Heat oven to 400
degrees. Press a piece of foil over bottom of crust. Fill crust with pie weights or dried beans (this prevents puffing). Bake until crust is nearly opaque, about 20 minutes. Carefully remove foil and beans. Bake until golden, 3 to 5 minutes. Cool. The crust can be parbaked several hours in advance (or even overnight). 4. Meanwhile, for filling, thinly slice the white portion of the leek and some of the tender green. Heat olive oil in a large skillet over medium. Add leek; cook until golden, about 3 minutes. Add peas and garlic, cook and stir 1 minute. Remove from heat. 5. Trim off the asparagus tips and reserve them. Cut the stems into 1 ⁄8-inch thick pieces. Stir tips and stems into the cooled leeks along with the herbs. (Filling can be refrigerated overnight.) 6. To cook the tart, heat the oven to 350 degrees. Set the tart shell, in its pan, on a baking sheet. Spread the vegetable
mixture over the bottom of the tart crust. Sprinkle cheese over vegetables. Beat eggs, cream, milk, salt and pepper in a small bowl until smooth. Slowly pour the egg mixture over the vegetables being careful not to get any between the crust and the pan, or you will have sticking later. 7. Carefully put the tart into the oven. Bake until filling is set and golden brown, 35 to 38 minutes. Cool on wire rack. Unmold from pan (or slice directly in the pan if using a pie plate). Serve warm. Shred cheese at home to avoid added cellulose. 4 thick-cut bacon strips, about 6 ounces total, diced 5 ounces (about 2 cups) sliced shiitake mushroom caps (discard stems) 3 ounces (about 1 cup) sliced button mushroom caps ½ large sweet onion, thinly sliced ½ teaspoon dried basil ¼ teaspoon salt Freshly ground pepper 1 recipe sesame whole wheat tart dough or 1 box (22 ounces) ready pie crust, thawed About 1 cup shredded cheese, such as fontina or brick 3 or 4 small ripe toma-
toes, thinly sliced, patted dry 1 tablespoon chopped fresh herbs, such as chives, basil and parsley 1. Cook bacon in a large skillet over medium heat, turning often, until crisp, about 5 minutes. Remove crisp bacon with a slotted spoon to a plate. Pour the bacon drippings into a small dish. 2. Return 2 tablespoons of the drippings to the pan. Add mushrooms and onion to skillet. Cook and stir until golden, 5 to 7 minutes. Remove from heat. Cool. Season with basil, salt and pepper. Mixture can be refrigerated for up to several days. 3. Heat oven to 400 degrees. Have two parchment-lined baking sheets ready. 4. Roll one dough disk (or one refrigerated pie crust) between sheets of floured wax paper into a 1⁄8-inch thick circle. Remove the wax paper. Carefully transfer dough to a baking sheet. 5. Smear 1 to 2 tablespoons reserved bacon fat over the crust leaving a 2-inch border. Spread half of the mushroom mixture over the crust leaving a 2-inch border. Top the mushrooms with ¼ cup of the cheese, then with half of the crispy bacon, sliced tomatoes and herbs. Top with another ¼ cup of the cheese. Fold the border of the crust up and over the filling. Repeat to build a second galette. 6. Bake galettes, rotating pans occasionally, until crusts are nicely golden, about 25 minutes. Cool a few minutes before cutting into wedges. Serve warm. • Safely operates packing lines/ palletizer/ spin wrap • Perform proper Lock Out/Tag Out Procedures on Palletizers. • Perform designated mechanical work on packing lines as needed using approved tools. • Make proper adjustments on packing lines to make operation run at an efficient and timely pace. • Ensure packing line has proper amount of packing supplies to meet production needs. • Monitor jug/pail usage and assure quantities are staying compliant with production demand. • Monitor lid and corrugate levels and replace as necessary. • Performs sanitation duties and material handling • Maintain a sanitary and clean packing line. • Perform proper clean up duties in Dry Pet Production Department (Processing or Packing) during plant-wide cleanups. • Clean shakers on packing line as necessary. • Performs packing line/ palletizer/ spin wrap troubleshooting and quality assurance checks • Must be able to recognize problems with the packing line and address as necessary (through personal involvement, Team Leader involvement, or Maintenance involvement dependent on situation.) • Perform quality assurance checks according to company/plant standards. • Performs changeovers packing lines/ palletizer/ spin wrap • Adjust mechanical settings on packing line as necessary to complete a changeover. • Change out packing supplies, including bags, bundler film, tape, and corrugate as necessary. • Operate hoist to move large packing supplies. • Physically change out mechanical parts as necessary. • Change out date coder ink/ Make up fluid. • Understands operation of Laser Coder and Laser Safety. • Computer proficient. • Must be able to work any shift, overtime, weekends & holidays.
