DIXON – It sounds like a joke aching for a punchline: Why did the boatload of chickens cross the hallway? Tuesday afternoon, the voyage was made so that a crew of sixth-graders at St. Mary Catholic School in Dixon could show off the emblem of their graciousness and effort. No joke, the school raised $2,668 this Lenten season for Rockford-based Hope for Haitians. Principal Jean Spohn said every dime raised goes to recovery efforts in Haiti that continue in the wake of the January 2010 7.0-magnitude earthquake. St. Mary Catholic School in Sterling took part, too; its final tally will be made after Easter break. In Kathy Shirley’s classroom Tuesday, there was no mistaking the Captain. Spohn sported a captain’s hat that Shirley’s husband, Glenn, recently ordered off Amazon.com. Holding the vessel and directing her fellow swashbucklers was Cecilia Sagel, the 11-year-old taskmaster who took charge as soon as a bare-bones plan for a boat was in place. “Let’s get the tall ones in the back and the short ones

in the front,â€? Cecilia said from front and center of the deck. “Please be careful of the chickens. Don’t knock them over.â€? If she sounds bossy, it’s because she’s relished the chance to be ‌ well ‌ bossy. “It was especially fun, because I got to boss around the boys in our class,â€? she said, grinning like the cat that ate the canary. “Some of them went on strike, but I just told them what to do, and [religion and social studies teacher Sarah] Campbell told them they had to do it.â€? Bob Pfundstein of Hope for Haitians planted the seed when he gave the school a presentation, showing the K-8 students videos of children mired in poverty, and talked about how it would cost just $125 to clothe and educate a Haitian child for a full year. The fundraising took off like a discharged cannonball. “We have so much,â€? Cecilia said. “There are some things I feel like I could not live without. My life would

never be the same if I didn’t have that one thing, like my dog. They probably don’t have a dog. It feels nice to be able to help people when they don’t have as much as we do. He explained how poor these people are, how much we can help, and how much it would mean to them.� Given a choice of an animal they could raise money to buy for Haitians in need, the sixth-graders picked chickens. Thomas Powers, 12, coined the phrase “boatload of chickens,� his logic being that if they picked chickens, they could, in fact, fill an entire boat with them. “If everybody just kept bringing in $30, we could collect a lot of chickens into a boatload of chickens,� his classmate and the project’s de facto ringleader, Cecilia said. “We have a really big class,� said Alicia Ardis, its 12-year-old director of decoration. The eighth-graders committed to educating as many children as possible on the Haitian situation,

In order to get the word out, the class created a cardboard boat to help steer the fundraiser forward. and earmarked the leftover cash for buying goats and chickens. The seventhgraders picked chickens, too. Glenn Shirley has been volunteering in the school since he retired from the State Police, and since the sixth-graders were in kindergarten. “He’s very attached to this group, besides being attached to me,� Kathy said. When he heard about the boatload of chickens, he ordered the captain’s hat, and suggested creating paper sailors hats. The hardest part, Cecilia said, was painting the boat, but they managed to paint it and cut it out during a single class with part-time art

teacher Heather Hartzell. What began as a simple boat became more and more elaborate. They didn’t plan on making a merchicken, with the tail of a fish and the body of a chicken, or an anchor, or a slew of origami barnacles. “All I did was cut a circle out, cut a line to the middle, folded it over each other, taped it and pushed it into the middle a little bit,� Alicia said. “It took like 5 seconds.� They’re not sure what will become of the boat, but it might be nice to keep it at the school, in case they do the Hope for Haitians fundraiser again – or just to provide a general reminder of what’s possible when

friends since preschool band together. “We can show just how much you can do with your friends,� Cecilia said. “We like to chit-chat a lot, and we’ve all really been in school together since preschool. We’ve had people come and people go, but we’ve mostly stayed together. Sometimes we can get into fights, but we’re always friends, and we do everything as a team.� It had to be surreal to step back and watch it happen as a teacher. “It’s very gratifying when they take hold, and you see the leaders come from the class, and then see all of them pitch in to help,� Shirley said.

Figure of 8? $211,057 Winner finds a heart of gold in VFW fundraiser BY RACHEL RODGERS

DIXON –The queen of hearts has finally come out of hiding. After 44 weeks, or 308 days, the queen showed her face for Rock Falls resident Noel Reed Jr., who has won a sizable chunk of the $301,510 jackpot. He will receive 70 percent, which totals $211,057 before taxes. In the Dixon VFW’s packed banquet hall Thursday, Reed’s orange ticket with the number 8 scrawled on it was drawn, picking the card that revealed the longsought-after queen of hearts. The queen was one of 10 cards left on the board. If another card had been chosen, the jackpot would have climbed to nearly $390,000. After a collective groan from the crowd, VFW board member Mike Kuba called Reed, who was not in attendance for the drawing. “I got his voicemail,” Kuba told the audience as they quietly waited to hear the winner’s response to the news. Reed could not be reached for comment Thursday night, but VFW quartermas t e r Tom Bushman said he spoke with him, and he said “That just made my life” after realizing he won a 6-figure payout. “I’m glad the money went to someone local and someone w h o deserves it,” Kuba said. Though many ticket holders were disappointed the game came to an end, VFW officials will finally have a short breather from 7-day work weeks – at least until the next game

starts. “Everybody was getting worn out, and we needed a break,” Bushman said. “I wanted the game to go a couple more weeks” But Bushman isn’t disappointed. As the jackpot grew, he was just hoping it would hit $100,000.

Repairs, charity

The VFW will keep 15 percent of the jackpot, totaling about $45,226, which will go toward building maintenance and repairs to the facility. VFW Commander Chuck Langele said the sum won’t cover everything, but it’ll make a good start. “This game is the greatest thing in the world,” he said. “Every VFW should start one of these.” The remaining 15 percent will be split among two national and eight local charities: Dixon Food Bank, Vietnow, Buddy Bags, the Lee County Historical Society, Pegasus Special Riders, Habitat for Humanity, PADS Homeless Shelter, the Leydig Center, the Semper Fi fund and the American fund. Split evenly, each organization will receive about $4,500.

Next game

Those looking to try their luck in another hunt for the queen of hearts won’t have to wait long. Tickets for the second game will be on sale starting Thursday at the VFW, 1560 Franklin Grove Road. The first drawing will take place at 7:30 p.m. on April 7. The VFW open at 2 p.m. Monday through Friday and 11 a.m. on weekends. The game will begin

Deviled eggs with a twist BY GRETCHEN MCKAY Tribune News Service

H

oliday meals are an excuse to trot out all the familiar, incredible foods we grew up with and absolutely adore, perhaps even more than the family members who gather around the dinner table. At Easter, that often means honey-glazed ham (with lamb a close second), creamy au gratin potatoes, ricotta pies and eggy sweet breads so rich in tradition. Also, there are the egg dishes, including hardcooked ones, tinted with all the hues of the rainbow inside coffee cups filled with a stinky mix of water, vinegar and Paas Easter egg dye tablets. An ancient symbol of new life, colored eggs have been the stuff of Easter baskets and maddash egg hunts since the early 19th century, thanks to the Pennsylvania Dutch, who brought their tradition of the Oschter Haws, or Easter Hare, with them when they settled in the commonwealth. Along with the eggs every year, comes the question: What do you do with all the leftover eggs on Easter Monday? One can only eat so many egg salad sandwiches, after all. For many, the answer is to slice the orbs in half, mash the yolk, mix it with mayonnaise and/or mustard, spoon the mixture back into the empty egg white shells and then dust the top with paprika for some deviled eggs. Also sometimes called salad eggs or stuffed eggs, this cocktail party and

picnic classic has a long and tasty history. While the first known reference to deviled eggs appeared in print in Great Britain in 1786 – the word “deviled” refers to making a dish dark or richly spiced – culinary historians believe the dish’s roots can be traced all the way back to Roman times. Then, eggs were boiled and seasoned with spicy sauces or vinegar. Stuffed eggs similar to what we eat today appeared in Andalusia (now Spain) in the 13th century, and across Europe by the 15th century. Introduced in the U.S. in the 1800s, the finger food became a picnic, party and Easter dinner staple sometime after World War II. Made with just three or four ingredients, classic deviled eggs might be one of the easiest recipes. But you can be so much more adventurous with the fillings, if you care to step out of the box. The unusual twists will make that surplus of hard-cooked eggs seem downright egg-cellant.

Deviled Eggs with Parsley, Green Onions and Jalapeno Makes: 24 12 hard-cooked eggs 3 ⁄4 cup mayonnaise 2 teaspoons stoneground or Dijon mustard 2 tablespoons minced fresh parsley, plus extra sprigs for garnish 2 tablespoons minced green onions 1 small jalapeno, minced 1 teaspoon chopped

fresh cilantro Pinch of cayenne pepper ¼ teaspoon salt Pepper to taste ½ to 1 teaspoon paprika, or to taste Slice each egg in half lengthwise. Scrape out yolks and place in bowl. Add mayonnaise, mustard and blend together with a fork. Add the rest of the ingredients, except the paprika, and use a fork to blend until the mixture gets creamy. Spoon mixture into each egg half. Bacon and Balsamic Deviled Eggs Makes: 24 12 hard-cooked eggs 5 bacon slices, cooked and crumbled 1/ cup mayonnaise 3 2½ tablespoons finely chopped onion 1 tablespoon Dijon mustard 1 teaspoon balsamic vinegar Salt and pepper to taste Cut eggs in half lengthwise and scoop out all the yolks. Put yolks in separate bowl and mash. Add bacon, mayonnaise, onion, mustard, balsamic vinegar, and salt and pepper. Stir until well combined. Bagels and Lox Deviled Eggs Serves: 12

12 hard-cooked eggs, peeled and halved 1/2 cup cream cheese 1/4 cup mayonnaise 1 teaspoon Dijon mustard 2 sliced scallions 3 ounces smoked salmon, chopped, plus more for garnish Salt and pepper, to taste Handful bagel chips, broken into small pieces Mix together cream cheese, mayonnaise, mustard and scallions. Stir in salmon. Season with salt and pepper. Spoon into the egg whites; top with broken bagel chips and more smoked salmon. – Food Network Shrimp Deviled Eggs Makes: 12 6 hard-cooked eggs 1 tablespoon mayonnaise 1 tablespoon basil pesto 1 shallots, diced finely 6 green olives, chopped into small pieces 2 tablespoons fresh parsley, chopped 2 tablespoons capers 1 cup small cooked shrimp, chopped Sea salt and black pepper 12 small cooked shrimp, for garnish Extra-virgin olive oil, for garnish Good quality paprika, for garnish Peel and cut eggs in half lengthwise. Remove yolks and place in a medium bowl. Add mayonnaise and pesto to the yolks and mash with a potato masher. Add shallots, olives, parsley, capers and chopped shrimp. Stir to combine. Season with sea salt and black pepper. Drop teaspoonfuls of the egg yolk mixture into the egg halves, then top with small shrimp. Drizzle with extra-virgin olive oil

and sprinkle with paprika. Refrigerate until it’s time to serve. – Miasdomain.com

Roasted PepperThai Chili Deviled Eggs Serves: 16 8 large hard-cooked eggs 1/3 cup mayonnaise 1 tablespoon Dijon mustard 1 teaspoon white-wine vinegar 1/4 cup diced roasted peppers 1/4 to 1/2 teaspoon

minced red Thai chili Coarse salt, to taste Thinly sliced chilies, for garnish Peel and halve eggs lengthwise; remove yolks and transfer to a bowl. Mash with a fork; mix in mayonnaise, mustard and vinegar. Press through a sieve to make smooth. Pulse yolk mixture with roasted peppers, Thai chili and salt in a food processor. Using a pastry bag fitted with desired tip (I used a plastic baggie), pipe yolk mixture into whites. Garnish with thinly sliced chilies. Serve immediately, or

How to hard boil an egg Do you go with a hot start, or a cold start? Fresh eggs or ones that have been sitting in the fridge for days? That’s the quandary when it comes to hardboiling eggs for your Easter celebration. Some cooks, like Kenji Lopez Alt, managing culinary director of the website Serious Eats and author of “The Food Lab: Better Home Cooking Through Science,” swear by the method I grew up with – carefully dropping eggs into water that’s already boiling. Others, including the America Egg Board (incredibleegg.org), say you should bring the eggs slowly to the boil in a pot of cold water. It’s enough to scramble a cook’s brain. For this story, we’re going to go with the easier version – a cold start. Here’s how: • Place your eggs in a large pot and cover with cold water by 1 inch. Bring to a rolling boil over medium-high heat. • Allow eggs to boil for 30 seconds, then cover with a tight lid, remove

from the heat and set aside for 12 minutes. • Drain eggs in colander, then chill completely, either in an ice bath (for at least 15 minutes), under cold running water or in the refrigerator over night. The cooler the egg is, the firmer and tighter its structure will be and the easier it will be to peel the shell away from the cooked white. • Gently crack the eggs all over their surface, starting at the fat end and gently rotating and tapping all around until the egg is covered with cracks. Roll egg under the palm of you hand. • Start peeling from the large end. If you like, you can peel eggs under cool, running water. • To make deviled eggs, slice the eggs in half lengthwise. Scoop the yolks into a bowl and prepare filling. Fill empty egg-white halves with the yolk mixture using a spoon, piping bag or a resealable plastic bag with a corner snipped. • Hard-boiled eggs keep, chilled, 5 days. – Gretchen McKay Tribune News Service
