DIXON – It took the threat of losing her leg to get Diana Nelson to stop running. In 2007, she was running a cross-country race along the Rock River in Prophetstown, and cut her leg on a tree, resulting in 8 days in the hospital and 13 days on crutches. “I had gangrene and everything in my leg,” she said. “They almost took it off. I couldn’t believe something so stupid could make me lose my leg.” It ended a 25-year stretch during which a day didn’t pass without her getting out for a run. “25 years, 8 months and 21 days … but who’s counting?” Nelson said. She’s broken both of her wrists, slipping on ice, but both times resumed running, cast and all. In fact, despite having cracked five vertebrae and shrinking 5 inches since she overcame her gangrenous injury Nov. 19, 2007, she’s yet to miss another day. Every day, she gauges the wind while walking across Kilgore Road to fetch her paper. After all, when she calls time and temp, the recorded message tells her only, well, the time and the

“So what?” she said. “I always think, ‘If I’ve got an excuse today, I’ll have an excuse in a few days.’ I don’t have any excuses, and I don’t want them.” It’s rare for her to run indoors. There either has to be lightning like crazy – “I got scared one time … really, really scared” – or extremely icy. If those conditions exist, she runs in her house. Her 1,000-or-so-square-foot house. Yup. You read that right.
“A friend of mine told me she ran in her house, and I said, ‘Are you nuts?’” she said. “Then I did it.” If it’s a 7-mile day, that means nearly an hour and a half of running loops around her home. You don’t want to do the math for a 9-miler. “It’s so boring,” she said, pounding her fists on the table. “I hate it. It’s bad.” Just a few years ago, it wouldn’t have taken nearly as long. In 2009,

I just did it.”

Junior executives find out the world of profit and loss isn’t so mysterious – and it can be fun, too BY CHRISTOPHER HEIMERMAN
DIXON – In order to teach elementary school students about a larger-scale economy, Northern Illinois University professor Alan Clemens brings things home. He made the rounds last Thursday morning at Madison Elementary School in Dixon, teaching Junior Achievement to three classes. The 6-week program encourages kids to develop entrepreneurial knowledge and skills. In Maggie Olson’s fourth-grade class, he talked about geographic borders that divide regions in the U.S. – the Mississippi River, the Rocky Mountains and such – but then asked if there were things that divided the Reagan Middle School campus? More importantly, “Why does it smell so much different when I walk down the hall that way?” he asked, pointing toward the hall that, if you turn right, leads into Madison. Turn left, and you’re at Reagan. “Because they’re teenagers,” several students blurted out. “When I came down here, I crossed a line into a magical, mystical place called Madison,” Clemens said. “Do you have different languages and customs? Do you use a different kind of money?” No, but Zackary did begrudgingly say Reagan has better water fountains. “Thinking about the whole United States is a little large for their scale,” Olson said. “But putting it into terms of Reagan and Madison, they see that every day.” He broke the classroom into groups representing different regions of the U.S. and gave them handouts that showed what resources each region boasts, then challenged them to come up with different possible business ventures for each reason. The team representing the Eastern seaboard suggested a lumber company. “There’s a lot of trees,” Bella said. “There’s a ton of trees,” Clemens agreed, raising his arms so his fingertips nearly brushed against the tiles. The team also suggested a storage company. “Like Raynor, right?” Clemens said, drawing a wave of nods. “They might not understand everything with the business aspect, but by making it familiar, he gets their wheels going and thinking about it,” Olson said. She loves having a male role model in the room – “In elementary, there aren’t that many male teachers,” she said, especially a towering one, and over the 4 years of the program in her classroom, he’s gotten them going, period – in a good way. “He always apologizes for getting them riled up,” Olson said. “But he changes things up. This material can be dry, but it’s all in how you present it.” She counseled teams during their think tanks, too. When Molly, a member of the Southeast region team, suggested smoothies, Olson explored her logic. “Why not shaved ice?” she asked.
“What on the sheet says smoothies would work?” Molly pointed to an icon of mixed fruit. “Fruit!” a few of her teammates said. Team South came up with summer camps and sushi restaurants. Team Midwest came up with a lawn-mowing business. “That would even be a good business for people your age,” Clemens said, drawing some head shakes. Robbie countered, saying he’d like to bring an NFL team to Dixon. “Do we have a stadium?” Clemens asked. “How many people go to a Cubs game, or a Bears game? Is there anywhere close to big enough to fit all those people?” You could hear a pin drop after Clemens stuck a pin in Robbie’s idea. But he was proud of him for throwing an idea out there. Trial and error is healthy and, ultimately, productive. Over the weeks, they’ll build from business ideas to how specific resources – capital, both natural and human – figure into a business’ prospects. “One very important thing,” he emphasized. “We need to think about the kinds of resources that are available before we build our companies in these places. We don’t want our businesses to fail.” He certainly succeeded Thursday morning. A member of Leadership, Educational Psychological and Foundations at NIU, his bread and butter is teaching teachers how to teach. Thursday mornings at Madison would make a nice training session. But just to be sure the roomful of potential business leaders of America – or Dixon, at least – look forward to seeing him every week, he left two bags of animal crackers – one vanilla, one chocolate. Don’t worry, parents. They’re sugarfree.

Teacher Maggie Olson said that games like this help students get a grasp on topics that might come off as a bit daunting or dry straight from a textbook. “They might not understand everything with the business aspect, but by making it familiar, [it] gets their wheels going and thinking about it,” Olson said.

The class’ broad scope will include computer-aided design, product development, electronics, robotics, aerodynamics, 3-D printing and more. In the second semester of the pilot year, they’ll take a parametric modeling CAD course. The plan is that in subsequent years, students will be able to choose an area of focus for their second semester. Looking farther down the road, the plan is for high-schoolers to be able to tackle four classes over 2 years. Scott would like to expand the partnership to more school districts, with Newman Central Catholic in Sterling, Fulton Unity Christian and Riverdale High School in Port Byron all potential partners. But MIT needs the pilot year to gauge just how many students it can physically accommodate – and effec-

MORRISON – A dual-credit program in the works for 2 years at Morrison Institute of Technology finally is ready to create opportunities for students and engineering employers alike. Juniors and seniors from Morrison, Prophetstown, Erie and Fulton high schools will be able to enroll in the pilot program starting in the 201617 school year. “We have employers continuing to come to us, and we don’t have the graduates for the jobs they’re trying to fill,� said MIT President Chris Scott, who came aboard in the mid-1990s as an instructor. “It’s mind-boggling to me. Virtually every project out there is related to engineering and engineering technology.� High school students taking advantage of the dual-credit courses will begin their first semester

A Sterling and a Rock Falls resident have become the first two Whiteside County residents helped through the Safe Passage Initiative, which launched Tuesday in this county, officials said in a news release Wednesday. That makes 41 addicts placed in treatment
since the program began Sept. 1 in Lee County – three in the last 6 days, the release said. Rock Falls, Sterling and Morrison police and the Whiteside County Sheriff’s Department have partnered with Dixon and Lee County “to formulate proactive community strategies to tackle the heroin epidemic in their

For instance, Erie Superintendent Bradley Cox said a handful of students have amassed more than 30 college credit hours through the school’s partnership with Black Hawk College in Moline. “That’s basically your freshman year,� Cox said. “If you go to Drake [University in Des Moines, Iowa], we just saved a family $50,000 to $60,000.� In Erie, the same tuition reimbursement system will be used for the Morrison Tech partnership as is used for the Black Hawk cooperative: Students who earn an A or a
B will get back 75 percent of their tuition, while a C earns a 50 percent reimbursement. Superintendents Daryl Hogue and Scott Vance, of Fulton and Morrison, respectively, said their districts are waiting to see final cost figures before determining whether tuition reimbursement will be offered there. The former Morrison Junior High School principal fondly remembers taking seventh-graders for daylong visits to the 2-year technical university. “I’ve always had high respect for the resource Morrison Tech is, given all the information that principals and administrators have learned about industry and manufacturing, and the skills gap that exists,� Hogue said. Whereas Erie has gone away from advanced placement testing, opting instead for the Black Hawk partnership, Fulton uses a mix of AP testing and its dual-credit partnerships.

Amendment to fight heroin addiction fails WASHINGTON – The Senate on Wednesday rejected an amendment that would have added $600 million in emergency money to a measure designed to combat the nation’s heroin and opioid-addiction epidemic. “I’m disappointed – not surprised, but disappointed,� Sen. Jeanne Shaheen, D-N.H., who offered the amendment, said on the floor after the vote. She asked her Republican colleagues

who voted against her measure, “How many more people have to die before we’re willing to provide the resources necessary to fight this epidemic?� The Senate voted 48-47 for the amendment, with four Republicans crossing the aisle to support it, but failed to reach the 60-vote threshold required for passage. Republicans have argued that money to fight drug addiction was already included in the
spending bill approved at the end of last year and more can be added during the appropriations process later this year. The main bill, the Comprehensive Addiction and Recovery Act, is a bipartisan piece of legislation that would authorize the Justice Department to issue grants to assist with state efforts to combat drug abuse. It would also increase access to drugs that can counteract the effects of an overdose.

Transportation issues could be the reason few Fulton High students have taken dual-credit classes at Sauk Valley Community College on the western edge of Dixon, but that doesn’t explain why so few have taken courses online, a method of education the college has made a key initiative, he said. He hopes the Morrison Tech partnership will be good for the students, and
for the companies that would like to hire them in a few years. “We continually hear from industry that this skills gap exists, and what they want are kids who are STEM-trained and have skill sets from pre-engineering and engineering programs,� Hogue said. “What better place to get that, than what exists in our back yard?�

trip away the wrapping – the fragrant prize inside is worth the work. Citrus fruits are vibrant gems, their juice-packed segments tidily arranged like spokes of a wheel. Bound in sunlit peels, the flavors and visual possibilities seem endless. Many supermarkets and farmers markets sell more varieties of citrus than ever before, showing off piles of behemoth pomelos, red-blushed blood oranges and Cara Cara oranges with bright, salmoncolored interiors. There are containers of kumquats, too. Chefs know the just-right acidity that citrus can bring to dishes. Whether the fruit is added in segments, peeled slices or as a smidgen of juice, it can cure taste bud boredom. Whole Foods and Asian groceries are generally good sources for offbeat varieties. Here’s an introduction to a few extraordinary varieties. Blood orange: Imagine oranges that aren’t orange. Their flesh is a shocking purplish-red. OK, bloodred. They are sweet, with an irresistible raspberry-like flavor, generally seedless. More glory than gory. These stunners provide color and flavor drama, too. They can be eaten out of hand, turned into marmalade or squeezed into fabulous wake-up-red juice. Try them in cocktails such as mimosas (sparkling wine mixed with blood orange juice). Cara Cara orange: A cross between two navels discovered in the mid-’70s at the Hacienda de Cara Cara in Venezuela, now most are California-grown. Sampled next to traditional navel oranges, both are seedless and have similar outside color, but inside the Cara Cara’s flesh is a splendid, deep salmon hue. It is slightly sweeter and less acidic and edged with a hint
of blackberry and sweet cherry. Pomelo: Picture a citrus fruit that’s almost as big as a volleyball; that’s the pomelo. It’s an ancestor to the grapefruit that is wildly popular in Asian cuisines. It ranges in flavor from tangy with a slightly tart edge to spicysweet. The thick, soft rinds vary in color: yellow, yellowbrown, lime-green or pink. The sweeter-than-grapefruit flesh also varies, from light yellow to deep pink, from juicy to slightly dry. Generally, pomelos are less juicy than grapefruit, so when cut into sections, they hold their shape better. The rind is often candied and found in fancy fruitcakes. Kumquat: These beauties look like tiny round or oval oranges, generally about 1 inch long. The entire fruit is edible, and because the rind is sweet and the interior is tart, they are like an insideout orange. In Cantonese, kumquat translates as “gold orange,” a nod to the fruit’s role as a symbol of prosperity. Although they can be thinly sliced, seeded and used raw in green salads, I think they shine best when cooked. This stunning salad makes a great impression served on a large platter on a buffet table. The ingredients can be doubled and it can be prepared several hours in advance, covered with plastic wrap and refrigerated – making it a delicious addition to a potluck gathering. If you don’t want to mess with cooking and peeling the beets, ready-to-use steamed beets are sold in the refrigerated deli at some supermarkets and Trader Joe’s. Fresh blackberries can be added as a garnish.
Citrus and Beet Salad Yield: 4-6 servings 2 medium red beets,
tops trimmed 1 inch from bulb 2 medium golden beets, tops trimmed 1 inch from bulb 3 blood oranges, divided use 1 Cara Cara orange Optional: peeled segments of ¼ pomelo 1 tablespoon fresh lemon juice ½ small fennel bulb, very thinly sliced crosswise ¼ red onion, very thinly sliced Good-quality extravirgin olive oil Coarse sea salt, such as fleur de sel or Maldon sea salt Freshly ground black pepper ¼ cup loosely packed fresh cilantro and/or Italian parsley 1. For beets, preheat oven to 400 degrees. Wash beets, leaving some water on skins. Divide and enclose in two separate aluminum foil packets; place on rimmed baking sheet and roast until beets are tender when pierced with a knife, about 1 hour. Let cool. 2. Meanwhile, using a sharp knife, cut all peel and white pith from all citrus except 1 blood orange (cut top and bottom off citrus, making those two cuts parallel to each other and cutting just below white pith – place cut side down on work surface and cut off peel and pith in strips starting at the top, following the contour of the fruit). Cut remaining blood orange in half and squeeze juice into small bowl or cup. If using pomelo, cut the peeled fruit into segments along the membranes. 3. Peel cooled beets and cut off stems. Slice 2 beets crosswise into thin rounds. Cut remaining 2 beets into
wedges. Layer beets and oranges on plates or a platter, dividing evenly (add pomelo segments if using). Arrange fennel and onion over beets. Add lemon juice to blood orange juice; stir and spoon over salad; drizzle salad generously with oil. Season to taste with coarse sea salt and pepper (do this at the last minute if making ahead). Let salad stand for 5 minutes to allow flavors to meld or refrigerate up to 4 hours covered with plastic wrap. Garnish salad with cilantro and/or parsley leaves. I like to serve this irresistible sauce atop grilled or broiled pork chops or chicken thighs. It’s easy enough for a weeknight dazzler, but delicious enough for company. Here I serve the sauce-topped protein over raw spinach leaves for a salady taste and texture, but if you prefer, saute the spinach in a little olive oil and season with garlic salt.
Sweet-Sour-Spicy Kumquat Sauce Yield: 4-6 servings 1 tablespoon vegetable oil 2 medium shallots, thinly sliced 6 kumquats, washed, dried, thinly sliced crosswise, seeded 3 tablespoons sugar 2/ cup water 3 1/ cup dried cranberries 3 or dried cherries 1/ cup white wine vin3 egar ¼ teaspoon dried red pepper flakes 1. Heat oil in medium skillet on medium-high heat. Add shallots and cook until starting to soften, about 4 minutes, stirring occasionally. Add kumquats, sugar, water, cranberries, vinegar and

The rich mixture balances perfectly with the small amount of tangy citrus. For dessert, top them with a smidgen of whipped cream and ground cinnamon. Serve them plain as a fast breakfast indulgence. Or use candied sliced kumquats as garnish (in small skillet, place 1 tablespoon sugar and 1½ tablespoons water; place on mediumhigh heat and simmer until sugar dissolves, and then add 3 sliced and seeded kumquats – simmer until liquid evaporates).
Kumquat-Spiked Custard Yield: 6 servings 6 kumquats, washed, dried 2½ cups milk (whole or 2 percent) 3 large eggs ½ cup granulated sugar
¼ teaspoon salt 1½ teaspoons vanilla extract 1. Adjust oven rack to middle position. Preheat to 350 degrees. 2. Cut kumquats in lengthwise quarters. Use small pointed knife to pluck out seeds and finely chop. Set aside. 3. Place milk in large, heavy-bottomed saucepan. Scald milk on medium-high heat. To scald means to heat milk just below the boiling point. Remove from heat. 4. In large bowl, whisk eggs, sugar, salt and vanilla to combine. Whisking constantly, add hot milk little by little in a thin stream to egg mixture. If you add the hot milk too quickly, it might curdle eggs. Stir in kumquats. 5. Ladle mixture into 6 (1-cup) custard cups. Place cups in 9-by13-inch baking pan. Add enough hot water to the pan to come 1 inch up the sides of the cups.
