DIXON – For nearly 3 hours and 37 rounds, Rebekah Zeigler did all she could to keep the blood from rushing to her head. But when Tom Wadsworth, emcee of the first combined LeeOgle-Whiteside Regional Spelling Bee, turned and announced to the Centennial Elementary School fifth-grader, “You’re going to Washington!”, she put her hands on her cheeks and dragged her fingers down to reveal bright red streaks – streaks of relief, no doubt. She also survived a showdown with three other spellers – eventual runner-up Mariam Elahmady of River Bend Middle School in Fulton, Aaliyah Gaffey of Challand Middle School in Sterling, and Rebekah Starwalt of Byron Middle School – that began in Round 14 and lasted the subsequent 13 rounds. Typically, Wadsworth waits for the final three spellers to bring them to the front of the stage, but after the quartet, along with Taylor Miller of Forreston, duked it out for five rounds, until Miller bowed out on the word quisling – she went with the double-z – he brought the foursome to the front after Round 15. He obviously knew the talent that was on hand. So did the defending champion. “They were really, really good spellers,” she said. “I started sweating and got really nervous that I would spend one wrong.” But she relied on two tried-and-true techniques to prevail. First, she clasped her hands together and told herself she was “cool, calm, and in control,” a trick she learned at Gymnastics Divine in Dixon. “Only I couldn’t bite my nails this time, because I painted them,” she said. Sweet-and-sour chicken a savory, unique dinner BY GRETCHEN MCKAY Tribune News Service
“Sweet-and-sour” chicken often brings a saucy Chinese-American dish to mind, but in Iranian cooking, it refers to what goes inside a bird, not on top of it. Quick and easy, this elegant roasted chicken dish is fancy enough for company, but it also makes a wonderful mid-week meal if you can sneak out of the office a little bit early. (It takes about 1.5 hours to prepare.) Instead of a traditional bread stuffing, roasting chickens are filled with a savory mix of fruit and onions perfumed with advieh, a warm and spicy spice mix used in many Iranian dishes. It’s exquisite. If you can’t find advieh at your local grocery store, make your own by combining ½ teaspoon ground cumin with 1 teaspoon each of ground cinnamon, ground nutmeg, ground rose petal (optional) and ground cardamom.
Sweet-and-Sour Stuffed Chicken Serves: 4 2 small frying chickens or 4 Cornish hens 1½ teaspoons sea salt 1 teaspoon black pepper ½ teaspoon turmeric
For filling ¼ cup butter 1 large onion, peeled and thinly sliced 2 cloves garlic, peeled and crushed 1 cup pitted prunes, finely chopped 1 apple, cored and chopped 1 cup dried apricots, finely chopped ½ cup raisins 1 teaspoon sea salt 1 teaspoon pepper 2 teaspoons advieh 1 teaspoon sugar ½ cup melted butter For basting ½ cup butter ¼ fresh lime juice ¼ teaspoon ground saffron Clean and rinse birds, then pat dry. Mix salt, pepper and turmeric and rub birds inside and out with mixture. Make filling: Heat oil in wide skillet and brown onion and garlic. Add prunes, apple, apricots and raisins, and stir-fry for 1 minute. Add salt, pepper, advieh, sugar and melted butter and stir-fry for 20 seconds. Remove from heat and set aside. Preheat oven to 425 degrees. Stuff chickens with fruit mixture and pin cavities shut. Place in ceramic roasting pan drizzled with oil. Cover with a layer of

Place in oven and bake for 1 hour. Uncover and bake for 30 to 45 minutes, basting occasionally, until meat separates from the bone. Serve in the dish or arrange on serving platter. In his book, “Salt, Sugar, Fat: How the Food Giants Hooked Us,” author Michael Moss writes about the “bliss point” of food; representing that perfect balance of tastes (usually some combination of salt, sugar, and fat) that leaves the eater wanting more. He claims that manufacturers manipulate their recipes or formulas to achieve this. Bliss point sounds fairly pleasant, but the goal in this case is to hook us on these unhealthy foods. In fact, some research has shown that junk foods have the same addictive properties as alcohol and drugs. And because these foods contain high amounts of added sugar, sodium, and unhealthy fats, a junk food addiction can damage our health just like alcohol and drugs. The other side of this coin is that many of these foods are not satiating. The concept of “satiety” as applied to food determines the degree to which a food fills us up and satisfies our hunger. Junk foods are deficient in key nutrients such as fiber, protein, vitamins, minerals, and water. So, not only are they not filling, but our body realizes that it needs more nutrition and asks for more food to get what it needs.
It’s a pretty sure bet in their favor when food manufacturers say things like “bet you can’t eat just one,” it’s because they’ve stacked the deck in their favor. Foods that are addictive but not satisfying allow them to sell more and more product. They also set us up for over-consumption and the extra pounds that come with them. Weaning yourself away from junk foods can be challenging, but you can do it with some effort. Plan your meals and snacks around whole, fresh foods and eat regularly so that you are not hungry and grabbing for convenient items. Do everything you can to avoid purchasing and consuming things such as chips, cookies, and crackers because if you bring them home, you will eat them. Buy the smallest package available to limit the quantity consumed. If you must bring these snacks home, find a place that keeps them out of sight. As with any addictive substance, you might experience withdrawal symptoms as you wean yourself

Gaffey, an eighth-grader, used a similar technique, only she “scribbled� on her hand. At one point, she showed incredible resolve by getting halfway through phenomenon, getting stuck, then starting over. Spellers can do that, as long as they don’t change the letters they’ve already spoken. But she spelled her 26th word of the day, vivaci, with an “e� on the end. “You did extremely well today,� Wadsworth said. Two rounds later, fatigue set in for the sixth-grader from Byron. Starwalt, smooth until that point, swapped the “i� and the “u� in prosciutto. “I don’t know how to spell it, either,� Wadsworth said as comforted her. al Superintendent Bob Sondgeroth joked. Elahmady missed Kafkaesque. Zeigler missed adhocracy, then inviscate, giving Elahmady a shot to win, but she missed jocosity. Again, fatigue and nerves were on display when Elahmady left a “t� out of fictitious. After acing chandelier, Zeigler couldn’t close it out, missing obdurate. “It was kind of nerveracking,� Elahmady said. “I was getting nervous every time I’d get one wrong, she’d get one
wrong, and I’d have to snap back into it.� But after she missed dentrifice, Zeigler correctly spelled cologne, then scullion, sending the auditorium into frenzy for her, and the rest of the field. Elahmady also received a Merriam-Webster Collegiate Dictionary, as well as a $100 Amazon gift card. In addition to a shot at the national bee, Ziegler received a 2016 U.S. mint proof set, an unabridged Webster’s Third New International Dictionary, and a 1-year
online subscription to Encyclopedia Britannica. Every competitor, having won their respective school bees to reach the regional event, got their champion medal and a pin. Following the Lee-Ogle and Whiteside regional educational offices’ merge last summer, the respective regional events followed suit. With Zeigler’s victory, a girl has won the regional event in 15 of the past 18 years. The last boy to win it was Chris Rademacher, who won it as a seventhand eighth-grader at Aplington Middle School in Polo in 2013 and 2014, respectively. Zeigler also became just the second fifth-grader to win it, after becoming the first fourthgrader to win it a year ago. Last year, Zeigler was eliminated in the written test portion at the national bee, and was unable to make the ESPN-televised rounds. Now, she’s a little more battle-tested. “I thought this would’ve been a lot shorter,� she said, laughing. “We’re more than an hour after the expected time. But it makes me feel a lot more proud, knowing I had to go against those three.� Her just dessert? A return visit to DC Cupcakes, the cupcakery-turned-realityTV-show. “That makes it a lot sweeter,� Zeigler said. “That’s my incentive, and it makes this even more fun for me.�

Queen still winning her game of hide and seek Jackpot in fundraiser for VFW rises to $142,095 STAFF REPORT
DIXON – If you’ve got your heart set on winning nearly 100,000 bucks, you’ve still got a chance. The determined deck didn’t show its face card Thursday night during the Dixon VFW’s Queen of Hearts fundraiser, and that pushed the jackpot to $142,095, up from $111,860. The fundraiser, now going into its 40th week, is raising money for the VFW’s building fund The object of the game is to guess where the queen of hearts is hiding. When the game started, 54 standard playing cards, including two jokers, were placed face down on a board and each card was given a number. People buy tickets – six for $5 – and on the back of each one, they put their name, phone number, and the number under which they think the queen is lurking.

Tickets for the Queen of Hearts fundraiser are available at the VFW, 1560 Franklin Grove Road, which opens at 2 p.m. Monday through Friday and at 11 a.m. Saturday and Sunday, and closes depending on events and attendance. The next drawing will be held at 7:30 p.m. March 3, with the last ticket sold at 7:25 p.m. Donations also will be accepted for the building repair fund. Call 815-288-5165 for more information. Each week, the tickets are put in a barrel and if the winning ticket has the correct card, they win. If no one gets the correct card, another drawing is held the next Thursday. The person who finally picks the queen of hearts will win 70 percent of the jackpot – or nearly $100,000 – whether he or she is present for the drawing, with the rest of the money going to the VFW and Dixon charities.
