DIXON – Without her Monetary Award Program grant, Sauk Valley Community College nursing student Annette Cady is being very judicious about the number of No. 2 pencils she buys. The 20-year-old Dixonite has left no stone unturned since she found out the college would not be picking up the state’s tab this semester. Classes
resumed Monday. She received $212 last semester, which she used for transportation, books, and required materials for classes. But for the sake of her mental health, she also was able to occasionally go out for a meal with friends. She had to put the kibosh on that practice. MAP CONTINUED ON 2

Where did the money go? The maximum MAP grant a Sauk student can receive, based on tuition cost and income, is $912. The grant funds are for tuition only, and Pell grants often pick up where they leave off. In May, the Legislature approved a budget with $397 million for MAP grants, but Gov. Bruce Rauner vetoed it at the beginning of the ongoing budget stalemate. Sauk picked up the tab in the fall for 468 eligible students, to the tune of about $60,000, said Melissa Dye, dean of business services. Until the budget passes, the Illinois Student Assistance Commission has nothing to distribute. The Sauk Board of Trustees elected to cover MAP grants in the fall, because students didn’t know they might not receive it. Trustees discussed picking up the tab again this spring, but had to draw the line somewhere. “The fact that we’re being shorted about $2.5 million from the state this year is significant, and we need to be extremely thoughtful on what we can pick up and what we can’t,” said David Hellmich, the college’s first-year president. “The more we absorb, the more that could translate into tuition next year.” The good news? “I haven’t heard of any students not being able to attend because of the MAP situation,” Dye said. DIXON – The group charged with the task of consolidating Dixon’s marketing bodies has its officers. But each of the group’s 11 members has a chance to shape history. The Dixon One task force met for the first time Thursday night, and will get together every second and fourth Tuesday to plan the merger of Main Street, the Riverfront and Dixon Tourism into – you guessed
it – Dixon One. “It’s my vision and the council’s vision to not be formal,” Mayor Li Arellano Jr. said. “We want you to be comfortable sharing and critiquing ideas. We want everyone’s input.” The task force voted to name Gary Gehlbach, chairman of the Lee County Industrial Development Association, as its chairman; Dave Hellmich, firstyear president of Sauk Valley Community College, was named vice chairman;

very morning is a battle. My 2-yearold twins, Anna and Elise, are fun, creative, and smarter than I could’ve imagined. We read books, build train tracks and Lego towers, and play their favorite game, Jump on Daddy. But, say they’re up at 6 a.m. By 8, there’s a maddening temptation to turn on Elmo, or “Cinderella,” or one of the other characters who, when on our flatscreen TV, transfix my kiddos. It’s early. I worked late. I’m beat. I’ve never been a morning person, and

I admit I, myself, am addicted to social media. Just give Daddy his 10-minute fix, girls. But on Facebook, Twitter or the like, another battle unfolds. All-caps headlines insist that screen time can be lifethreatening for kids. You read that right. I wish I was exaggerating. According to the American Academy of Pediatrics, my children should never
be exposed to technology. Not until they turn 3 in August, and then they can safely digest an hour a day. An article suggests banning screen time for kids younger than 12. That would make it awfully hard for them to take the online-administered state-mandated Partnership for Assessment of Readiness for College and Careers test, now wouldn’t it? Politicians want our kindergartners typing on keyboards. But for what? To improve our global rank in math and science? “There’s a lot of conversation about whether the new standards being developmentally appropriate – for instance, taking kindergarten kids on keyboarding, in order to do better on an assessment,”
said Dan Rick, assistant superintendent of Dixon Public Schools. “Their hands aren’t big enough for keyboarding.” And they could get addicted to technology. They might never leave the house. What will they do without sufficient Vitamin D? Will they wither away? I jest. Sort of. We’ve become an obese, detached society. Those are broad generalizations, but tell me it isn’t troubling when a teenager texts or instant messages someone in the same room. Guys, remember when you were in high school, that quick-dry-cement-like lump in your throat when you called the girl you had a crush on? That rite of passage has gone the way of the dodo. Now the

yet, so I can stop staring at a screen for a bit. I’d encourage kids to do the same, in little ways: pick up a real book, rather than your Kindle or, worse yet, sitting in front of your computer. Call your friends, rather than texting. Rather than watching TV, go see your school play. There’s this running joke I keep hearing, that kids know their way around handheld devices better than us old fogeys. But I’m not laughing. Not yet. Not until someone helps me make peace of the battle between preparing our kids from the future and making sure they encounter a rose, let alone smell it, along the way.

W
ell, that was fun while it lasted. The cakes, the cookies, the candy canes and champagne – they’re all increasingly fleeting memories. Now it’s time to get down to the nitty gritty. Now it’s time for salads. Don’t groan. Salads are great, even if you haven’t made a weight-loss resolution. They’re good for you, they’re delicious and they can contain almost any combination of ingredients in creative ways. Start with a base of lettuce, usually. It can be peppery (think arugula, radicchio or watercress), it can be buttery (think Boston lettuce), it can even be almost sweet (think baby greens). Add whatever vegetables you like, from artichoke hearts to raw zucchini. Tomatoes and a mild form of onion are always welcome, too. You can boost both the taste and the tactile appeal with a bit of crunch – croutons, perhaps, or toasted nuts or seeds. Everyone loves crispy noodles in their salads, and few things are more addictive than those delicious sesame sticks. Add hard-boiled eggs if you like, and cheese will make it even better. The only problem is deciding which kind to use. And all of that comes before you even settle on a dressing. With so many options available, there are literally millions of ways to make a salad. That said, the salads I made for this story must be prepared exactly as they are printed in the recipes. Just kidding. Feel free to make them any way you like. Still, they are all remarkably good as is. The first one is called The Best Lentil Salad, Ever, and ordinarily I am wary of superlatives. An awful lot of people throughout history have made an awful lot of lentil salads, and to describe this one as the
very best seems closeminded and perhaps premature. On the other hand, I’ve had it. It just might be the best lentil salad, ever. It isn’t the lentils that make it so great; they merely form the base for what is to come. An assortment of Indian spices (cumin, turmeric, coriander, cardamom, cayenne, cloves, nutmeg, cinnamon) are added to a decidedly non-Indian vinaigrette made from apple cider vinegar, strong mustard and maple syrup. Additional sweetness comes from dried currants, with capers and red onion providing a briny bite. I added goat cheese, arugula and walnuts to mine; you might want to add fresh herbs, sprouts or other ingredients to yours. Put it all together and you have what might be the best lentil salad, ever. A more traditional salad, and much brighter and sprightlier in taste, is a mixed green salad with oranges, dried cranberries and pecans. The oranges provide a nice citrus taste, but they do more than that. You also use orange juice to rehydrate the dried cranberries. The rest is a straightforward salad, with mixed baby greens, a simple vinaigrette and toasted pecans. But it is the combination of the orange segments and the toasted pecans that make this salad sing. An orange, in both its zest and juice forms, was also an ingredient in my next salad. But it is the main ingredient that really makes this one stand out. Kohlrabi is a root vegetable that tastes like a milder version of broccoli mixed with a bit of apple (though with none of its sweetness) and a hint of mustard. It can be cooked, but to be honest I have only had it raw, in salads. Kohlrabi salad with cilantro and lime begins with the kohlrabi root (the leaves are also edible) cut into matchstick shapes and mixed with cilantro, scallion and jalapeùo. It is then tossed with a sweet-and-sour vinai-
grette made with olive oil, orange juice, lime juice, honey and vinegar. The result is surprisingly refreshing, especially because the jalapeùo I used had no heat to it whatsoever. None. A little kick would have been welcome, but I am not absolutely convinced it would have made it any better. And finally I made a salad that would be a hit at home or at any potluck: couscous salad with chickpeas. Couscous was somewhat popular about a decade ago, but it has fallen out of favor. It’s time to bring it right back into favor where it belongs. Though people look at it and immediately think it is quinoa or bulgur, it is actually pasta. Little, tiny bits of pasta, just right for soaking up all the flavors around them. The flavors, in this case, come from a garlicky vinaigrette, plus mint, cinnamon, green onions and smoked paprika. Chickpeas provide an umami taste, and this earthiness is countered by the sweet acid of a tomato and salty, creamy feta cheese. It’s a great salad. It might even be the best couscous salad, ever. Nah. But it’s so good you’ll want to add it to your repertoire.

I used crimson lentils, which are also small but do not quite taste the same. 1. Rinse lentils well. Place in a pot and cover with 3 to 4 inches of water. Bring to a boil, reduce to a simmer. Check lentils for doneness after 15 minutes, although they will probably take 20 minutes. They should be al dente – fully cooked but still firm. Do not overcook. 2. While the lentils are simmering, whisk together the oil, vinegar, syrup, mustard, salt, pepper, cumin, turmeric, coriander, cardamom, cayenne, cloves, nutmeg and cinnamon, or place all these ingredients in a jar with a tight-fitting lid and shake vigorously to combine. 3. When the lentils are cooked, remove from heat, drain and place under cold running water to stop the cooking. Once cooled slightly but still warm, place them in a large serving bowl and toss with the dressing. Add onion, currants and capers. Add optional items and serve immediately or refrigerate for up to 3 days and add optional items just before serving. Place couscous, Ÿ teaspoon of salt, Ÿ teaspoon of pepper and cinnamon in a bowl. Stir in boiling water, cover, and let stand 10 minutes. Fluff with a fork. 2. Combine oil, lemon juice, garlic and sugar. Add this mixture to the couscous along with the remaining Ÿ teaspoon salt, the remaining Ÿ teaspoon pepper, mint, green onions, paprika, chickpeas and tomatoes. Sprinkle with cheese. Bring 1 cup orange juice to simmer in heavy, small saucepan. Remove from heat. Mix in dried cranberries. Let stand until softened, about 30 minutes. Drain well; discard soaking juice. 2. Whisk oil, vinegar, orange peel and remaining 3 tablespoons orange juice in small bowl to blend. Mix in cranberries. Season dressing to taste with salt and pepper. (Can be prepared 1 day ahead. Cool and refrigerate. Bring to room temperature before serving). 3. Place greens in large bowl. Toss with 2/3 of dressing. Divide greens among six plates.
