Bountiful Boutiques There are many things I enjoy about autumn, like pulling a blanket up to my chin when a chilly breeze blows through an open window at night or spending a crisp fall afternoon picking apples. The change of seasons also means its time to pack away the shorts and sundresses of summer and bring out again sweaters and the puffy winter coat. When you buy salon products at unauthorized, or discount stores, what you are getting may not be the same as you’d find in the salon itself? This is called “diversion.” Nine out of ten consumers don’t know what diversion is. But you likely have witnessed it. Diversion is when salon-brand products are sold in drug stores, grocery stores, outlets, flea markets or web stores, often at lower prices

here seems to be a new currency in the Stien Household—Pokemon Cards.

Both kids have been sucked into the world of these collectable cards with creatures with names that I can barely pronounce. It started with one pack purchased in the checkout line at Target. It satisfied my daughter’s need for me to buy her something each and every time we go to a store and seemed harmless at the time. Before I knew it, she and Colin were both at the kitchen table studying each card carefully and asking me what each of the characters’ names were. I did my best to decipher their unusual monikers. Next thing you know, they are talking about energy, damages and fire types versus lightning types. As in several other situations, we often bribe our kids to achieve desired behaviors. We prefer to call in “positive reinforcement.” The kids earn

points for good behavior, doing chores, listening and doing things without being asked. They typically get to pick what toy, game or privilege they would like for their reward. Based on their newfound interest in Pokemon, they both requested more cards for their next reward. After a few weeks of letting the dog out, clearing the table, getting ready for bed and school without lollygagging and limited yelling and screaming from me, they had each earned a sizeable collection of cards. Now, they have moved on to the trading stage. Not only did they trade with some of their friends, but they also they began trading amongst themselves. Unfortunately, this usually

ended in some hurt feelings and crying since Colin hadn’t quite grasped the concept of “fair trade.” Now that he has the hang of it, they often can be heard in the other room bartering not only for cards, but also for other items and services. For example, Colin will give her his stuffed pig and let the dog out for Maddie if she gives him her new Charizard card. Lucky for me, I now have my own leverage in getting them to do what I want, by offering cards for good behavior, and also by taking those cards away when they misbehave. It also works for when these cards are left strewn about my kitchen table and not put back in their designated tins, binders or carrying cases (all earned through good behavior, of course.) All I

have to do is threaten to toss them in the garbage and they pick them up in a jiffy. The cards, characters or even the game that you are supposed to play with them is beyond me. I actually have taken time to research them, simply so I can help referee their trading disagreements. It’s hard to determine what is a fair trade when you have no idea what their value is based on their damages, power, stats or abilities. I’ve had to sift through game boards, websites and Wikipedia and I still don’t get it. In my day, we collected Garbage Pail Kids and simply hoped the card with our name wasn’t something bad like “Michelle Muck”, and made fun of kids who did have undesirable cards named after them like “Acne Amy.” I’m pretty sure the more they learn how to play the game associated with the trading cards, they also will be able to strategize in any war room – business, politics or battle. The sliver lining is that despite the fact that I can’t differentiate between each card’s values, the kids certainly do both, for the sake of the game and their personal gain and popularity. The cards are relatively cheap, their behavior is good, we all are happy and it sure beats having to resort to the ridiculous “Elf on a Shelf” tradition to get them to behave. Somehow I think even my kids are too smart for that.

ords like “inspirational” and “dedicated” are used to describe Leah Gerlach of Carol Stream, but she doesn’t let the compliments go to her head. Instead, she keeps charging forward, helping others and never letting her visual impairment define who she is.

individuals of all ages, Gerlach said she has a special love of working with children. In 2000, she launched a computer day camp for school children with visual impairments. The camp was designed to help students review computer skills during the summer break. But Gerlach also had a second motive.

“She’s changed a lot of people’s lives,” said Dorothy Troyer, a former staff member who worked with Gerlach at the Spectrios Institute for Low Vision at Deicke House in Wheaton.

She had been involved in Girl Scouts for 11 years as a child, and throughout most of her adult life, as a director, member of the board of directors and president of the board. Her own fond memories of camp helped inspire her to craft the her own summer program as more than just a class, but an opportunity. While she grew up as the only visually impaired child in her classes, she saw the camp as a way to bring students with visual impairments together.

This summer marked Gerlach’s 28th anniversary at Spectrios. She was among the first full-time employees at the institute and in her time there she has performed nearly every job. “She’s a vital part of every aspect, of every part of Spectrios,” said Elizabeth Loan, program manager at Spectrios. “Everybody here has to wear multiple hats, but I think she’s worn more hats than anyone in the building.”

Gerlach said she just enjoys helping others find ways to be successful. A twin born eight weeks premature, Gerlach was diagnosed with Retinopathy of Prematurity as an infant. Though she has been visually impaired all her life, she hasn’t let it keep her from pursuing her interests. She has a master’s degree in rehabilitation counseling and administration for people with low vision, (which defines eye conditions not correctable medically, surgically or with traditional lenses) She also has a post graduate certificate in adaptive technology applications. “I like to learn. I think we grow by learning new things,” Gerlach said. She credits her parents for how they insisted she be treated just like everybody else. “Both were very empowering,” she said. Troyer said Gerlach has been an inspiration to countless individuals at Spectrios, whether they met her as the Spectrios receptionist, as a rehabilitation counselor or as an instructor in the use of electronic reading machines. When patients observe Gerlach efficiently managing the tasks of daily living, despite a significant visual impairment, it gives them hope. While her work provides an opportunity to work with

“That is a powerful thing, to find a friend, a comrade with whom they can share experiences, they can laugh about things that visually impaired children would laugh about,” Gerlach said. Loan said Gerlach is an amazing resource. Through the years Gerlach has given lectures and presentations. She served on local and state boards including the DuPage Girl Scouts Board of Directors and she serves as president of the Illinois Association for Education and Rehabilitation. Today she is a member of the Illinois Governors Blind Service Planning Council. In her spare time, Gerlach said she enjoys taking time to travel with her husband, Pat, and her guide dog, Boulder. He is her third guide dog and a true partner, Gerlach said. “It’s a very empowering relationship,” she said. At 63, Gerlach shows no signs of slowing down. She also enjoys her time as a mother of two and a grandmother of five. She also enjoys quilting, knitting and cooking. Gerlach said she realizes she is a role model at Spectrios for the clients, but her passion is in her ability to listen, try to understand what a client needs. While technology offers more support to the visually impaired, Gerlach said it’s about helping people to live their lives, to be productive and have a life of dignity.

When Donelly was diagnosed with breast cancer in February of 2013, rather than allowing her to give in to her disease, Paist stuck by her, championing her friend through the struggle. A month later, Donnely had her surgery, and after finishing the last of her treatments, she was given the all clear from her doctor. To commemorate that bond these friends shared through Donelly’s illness, as well as further solidify their friendship of nearly 20 years, Paist, a Wheaton resident decided to design a jewelry collection in honor of her friend and survivor. “Pam wanted a special piece of jewelry that would celebrate her survival,” says Paist.

wenty-eight years ago, Sharie Conard lost her best friend to cancer. “Cheryl and I raised our kids together. We were like sisters,” Sharie says.

One day when she offered to do her hair, Cheryl replied, “Conard, I don’t have any hair”! Cheryl had stopped going anywhere, choosing instead to remain in the privacy of her home until the day that she died. What was so devastating”, Conard says, “was that there were no hair or breast prosthetic services for her, let alone a private or compassionate environment. There was only a blue bandana that came off her head every time she moved.” A few years later and still troubled by that 28 | OCTOBER 2014 | SUBURBAN LIFE MAGAZINE

experience, Conard, a licensed cosmetologist, started her own business – Studio I, in St. Joseph, Mich. There, she specialized in providing custom-fitted wigs and a full line of apparel for mastectomy, lumpectomy, reconstruction and lymphedema patients. Her reputation eventually caught the attention of the Michiana Hematology Oncology Group in northern Indiana. In 2010, Conard was asked to open her second boutique inside their flagship cancer treatment center located in Mishawaka, Indiana. In 1994, while attending training conferences in Florida, Conard met Janis Boerman who shared the same passion for helping women with this special need. Janis was the owner of Naturally Yours, a place very similar to Conard’s, and located in Willowbrook. The two women struck up an immediate friendship and business HEALTH & WELLNESS

relationship that grew stronger each year. When it came time for Janis to retire, her biggest concern was for her clients, and who would continue to provide for their needs. It wasn’t long before the two realized the obvious. In January 2104, Conard purchased Naturally Yours. After turning over the day-to-day operations of her businesses in Michigan and Indiana to her three daughters, Conard then directed all of her attention to Naturally Yours. PUMPKIN Smooth and earthy, this favorite of the season is a dining gem By HANNAH PETERSON

Considered a symbol of a romanticized rural past, more than 1.5 billion pounds of pumpkins are produced each year, with Illinois considered one of the top five pumpkin-producing states in the country. One of the most important traditions of the autumn harvest, there are more than 40 different varieties of pumpkin grown in North America at any given time. Nearly all of the pumpkin is edible – the fleshy shell, seeds, leaves, and even the flowers – making it versatile for cooking, baking and more. “Our most popular pumpkin dish is going to be Pumpkin Creme Brulee. It’s made of fresh cream, sugar, eggs, vanilla, pumpkin puree, cinnamon and caramelized sugar,” says Chef Marco Conte, of Cafe Amano in Elmhurst. Conte has at Cafe Amano since its opening in 2005. He learned much of his technique and love for cuisine from his Italian grandmother. As a result many of his grandmothers recipes and preparation techniques are used at Cafe Amano. “Everyday of my life is about learning and sharing what I know with my patrons,” says Conte. The hardest part of working with pumpkin is cutting it and peeling it, he says. “Pumpkins have a very hard texture and special 40 | OCTOBER 2014 | SUBURBAN LIFE MAGAZINE

care must be taken, so I’d recommend a chef’s knife and a heavy duty vegetable peeler, as they usually get the job done,” Conte suggests. While many remain loyal to traditional fall favorites, Suzette’s Creperie is sampling from a different palate in its interpretation on pumpkin. Donna Hesik, past chef now manager, at Suzette’s Creperie, honing her culinary skills

INGREDIENTS: 2 cups heavy cream 2 teaspoons rum or vanilla 8 egg yolks 1/3 cup granulated white sugar 1 cup pureed pumpkin 1/4 teaspoon cinnamon 1/8 teaspoon ground nutmeg 1/4 teaspoon ground ginger 1/4 cup granulated white sugar for caramelized tops DIRECTIONS: Preheat oven to 300 °F . In a large bowl, whisk together the cream, rum or vanilla, yolks, sugar, pumpkin, cinnamon, nutmeg, and ginger, Blend well. Strain into a large bowl, skimming off any foam or bubbles. Divide mixture among 6 ramekins or custard cups. Place in a water bath and bake until set around the edges; but still loose in the center-about 30 to 40 minutes. Remove from oven and leave in the water bath until cooled. Remove cups from water bath and chill for at least 2 hours.

DIRECTIONS: In a medium saucepan, combine the pumpkin with the water and bring to a boil. Add the cream, butter, honey and a generous pinch of salt. Add the polenta in a thin stream, whisking constantly. Cook over moderate heat, stirring with a wooden spoon, until thickened and tender, about 20 minutes. Scrape the polenta into a 9-inch square pan and refrigerate until firm.

t’s October. Days are shorter. Leaves are falling. The air is decidedly cooler. What could be better than cuddling up in front of a roaring fire with a nice glass of Port? It kind of warms you all the way through.

But it isn’t as simple as, “Hey, honey, would you pop down to Cabernet & Company and buy a bottle of Port?” You could do that, and we’ll definitely sell you something good, but in most cases it’s a bit more complicated.

Originally this fortification process was done to stabilize the wine during transport in the 1700s, but producers soon realized it added so much more complexity to the wine that they made it part of the process. Port is produced in the Douro Valley of northern Portugal, one of the world’s oldest vineyard areas where wine has been made for at least 2,000 years. The grapes are mainly indigenous varieties such as Touriga Nacional, Touriga Francesa or Tinta Barroca-grapes you probably have never heard of and rarely see in other parts of the world. But in the Douro Valley they flourish.

What is Port?

Well, first and foremost, to be called Port – or Oporto – it should come from Portugal. Other countries produce similar style wine and call it “Port.” We’re guilty of that here in the United States, but really, to be Port it should be produced in Portugal.

Interestingly, it was thanks to the ever-present animosity between the English and the French that Port wines became popular in the late 1600s. Colbert, the first minister of France’s Louis XIV, didn’t like the English. He decided to place restrictions on the importation of English goods into France. Well, Charles II of England retaliated by increasing tariffs on French wines, ultimately banning their importation altogether. The English, however, were not about to do without their wine. So, they turned to Portugal. Specifically, the bigger, more full-bodied Port wines from the Douro Valley.

Port is a fortified wine, usually consumed after dinner. Fortified, because brandy is added to the wine during its fermentation process to stabilize the wine, to stop the fermentation process midstream, thus retaining

So, now you know a little of the history and a little about how Port is made. But what type do you like? Tawny? Ruby? Vintage? White? Port styles really are quite different. Port can be divided into two categories: wood-aged and bottle-aged. As Ports mature, the strong tannins and intense fruit flavors mellow and become smoother and nuttier in nature. The color changes from a deep purple-red to a paler, brick red...more tawny. If left long enough, all Ports will eventually turn into tawnies, however, the speed at which this occurs depends on how the wine is aged.

Wood aged. A Port that is aged in wood casks is more in contact with air, and will evolve into a tawny style much more quickly than a Port aged in a glass bottle with little or no air contact. Wine aged in small casks will age much faster than wine in large casks for the same reason-the larger the cask, the less direct air contact.

Within wood aged Ports there are four main types: 1. FULL BODIED RUBY PORTS, which are aged for a relatively short time (usually only two or three years) in large casks. 2. LATE BOTTLED VINTAGE PORTS (LBV’S), which age for four to six years in cask prior to bottling. Both ruby and LBV ports retain a lot of fruit and tannin. 3. TAWNY PORTS, which are aged in cask for much longer periods of time –10, 20, 30 or 40 years – and tend to have much softer tannins and more hazelnut and butterscotch flavors.

4. WHITE PORTS are made from white grapes and taste a bit more like sherry. They make great aperitifs. (Try a making a white Port spritzer...delicious!)

Glass bottle aged Ports are primarily vintage Ports, meaning the fruit is all from one outstanding year’s harvest. Port producers don’t always “declare” a vintage. The fruit has to be exceptional. If it’s not, it’s blended into ruby or tawny Port production. Vintage Port is aged in cask for only two years after which the wine is transferred to bottle and aged longer. Vintage Port is the best of the best and can age for decades. It starts out as a ruby with gobs of fruit and tannin, and ever so slowly turns into a rich silky tawny. You just need patience.
