f you hear someone arguing that the good old days are gone, the folks at a Freeport business have a counter-argument — a long red counter where customers can step up and step back in time and get a taste of those good old days. That’s because the good old days haven’t gone the way of Edsels and Hula Hoops at Union Dairy. A neon sign still beckons people inside where soda jerks man the counter, ice cream scoop in hand, ready to whip up a Nutty Tutty, RazzA-Mac or a good old-fashioned ice cream soda. Just place your order, have a seat on one of those oh-so retro and oh-so red stools, grab your spoon and enjoy. Union Dairy is a treat for the whole family. For golden-agers, visiting the vintage ice cream parlor is like taking a drink from a soda fountain of youth; and for those who wouldn’t know a poodle skirt from a penny loafer, it’s still a great place to chill — somewhere the whole family can enjoy. While ice cream gets a lot of people through its doors, that’s not all that’s on Union Dairy’s menu. You can get something to eat before your treat — burgers, hot dogs, and other entrees — and a slew of special events helps draw crowds to one of Freeport’s classic gems. General Manager Martiny McClellan has served up more scoops than she can count over the past decade she’s been at the parlor, but it never gets old.

McClellan oversees a staff of “soda jerks” — what soda fountain workers were called back in the day — who help guide customers through Union Dairy’s impressive menu of food and frosty treats. “We bring that old-fashioned time back,” McClellan said. “They love coming here, sitting at the counter and watching us make their ice cream. There’s so many different flavors to choose from, it’s like we make it hard for people to decide when they come in and they’re like, ‘We don’t know what to choose!’” Who can blame them? It would take someone nearly 2 months of trying a different flavor every day just to get through all the choices — and the 51 flavors are just the ones featured at any given time. More than 30 more make their way on and off the menu from time to time.

The walls at Union Dairy are adorned with vintage ads that add to the old-fashioned flavor at the ice cream parlor.
Then there are the ice cream treats — the “Most Wanted” and “The Staples,” as they’re called — more than two dozen in all, with names like Banana Wheel, Pig Dinner, Dirt Sundae and the Holy Cow (that’s 12 scoops of ice cream and all the toppings). You can have your cake and eat it, too, with Union Dairy’s custom cakes and cookies for special occasions. The burgers really stack up on Union Dairy’s menu, too, with nearly 20 different kinds to choose from. Throw in some hot dogs, sandwiches and sides, and you’ve got a lot to chew on. The staff — many who are in high school or college — will be happy to help if you need to narrow down your choices. McClellan said it’s a good place for budding young workers to grow. The better they master the menu, the better they can help customers — some of whom have walked in their footsteps behind Union Dairy’s counter. “It’s a good place for kids to start out working, and we get a lot of people that have come back and said they worked here when they were younger, and some of them are 80, 90 years old,” McClellan said. “Some of them remember when ice cream was $0.05. It’s nice to continue to carry on a tradition of it.”

Union Dairy’s days go way back — more than 100 years — to 1914 when dairy workers Albert Hill and Conrad Kaiser teamed up to start a place of their own. After beginning with the standard dairy fare of milk and butter, they added ice cream production two decades into the business. Everything was made on site for decades until the flavors were sold off to different dairies. Today, the operation is run by the Alber Family: Pete, Linda, Willy and Jean. The Albers gave the place a different name, the Alber Ice Cream Parlor, but the Union Dairy name had become so familiar to people in The Pretzel City that that the new name didn’t stick. These days, the ice cream is made by Spring Brook Ice Cream of Manitowoc, Wisconsin, but those tried and true flavors haven’t been forgotten. Some of them are the brainchild of Hill and Kaiser and are still found on the menu Ever wonder what the differtoday. The most popuence is between ice cream lar among the origiand sherbet? If you want to start off with dinner before your dessert, there’s also plenty of seating available at tables and plenty of menu items to choose from, many of which are named in honor of the city the business calls home. The grill was added in 2005 and in keeping with a commitment to keep things local, Harbach Meats, on U.S. Highway 20 just west of town, supplies Union Dairy’s meat. Most of the burgers are topped with slices of Springbrook Cheese from nearby Davis.

Customers are in for a treat when they take a seat on the retro red bar stools and winding counter at Union Dairy. Like the business’ website says: “An old fashioned ice cream parlor is part of the American tradition. It reflects upon a simpler time that many would refer to as the good ole days. Nothing ever changes in an old fashioned parlor.”
Nearly 20 different burgers are on the menu, including one topped with pizza sauce and another with a grilled pineapple slice. The Willy Burger, named for one of the owners, has a treasure trove of toppings — bacon, lettuce, onion, tomato, pickle, ketchup, mustard, mayonnaise and cheese — and that can be upgraded to a Fat Alber burger, with double the beef, bacon and cheese. Another two burgers are named in honor of Freeport’s heritage, when Abraham Lincoln and Stephen Douglas held one of their famous debates at a nearby park: the Lincoln-Douglas Burger, with horseradish and Havarti cheese, and the Heated Debate, with pepperjack cheese and peppers— and like the historical events they’re named after, the best dishes are up for debate; everyone has a favorite. One thing that’s not up for debate, though, is that you’ll always manage to find something on the menu.

“I feel like you can’t come here and not find something that you’d like to eat,” McClellan said. “We can find something for you, and you won’t be disappointed.” McClellan’s predecessor as general manager, current Freeport Mayor Jodi Miller, wrote a new chapter to the longtime establishment’s history by adding car shows and special events to the fold, which McClellan has continued during her time in charge. Classic car shows are held in the parking lot across the street from the parlor on the first Saturday in May and September, as well as a “Puttin’ The Car Away” cruise in Mid-October. The annual Bike Night for motorcycles is July 22. The kids can have fun, too: Starting this year, the first Friday of each month will be a Family Fun Night, and will put the focus on kids. May’s game night saw kids and their families play board games, and June’s event will feature painting.
Union Dairy hosts classic car shows in the parking lot across the street on the first Saturday in May and September, as well as a Puttin’ The Car Away cruise in Mid-October. Other events include a Dairy Dog Day for the dogs; Chalk That Walk, to decorate the sidewalk in front; and an ice cream bingo night. “We want to try and bring people together more in the community,” McClellan said. “We like to try to find something to do to keep people connected with the community. If it wasn’t for the community, we wouldn’t be who we are now. I always try to add something new every year and see what works.” “We make a lot of people’s day when they come in here,” McClellan said. “They may be having a crappy day, or are going through something, and they just want to come and get their favorite scoop of ice cream. It makes me feel good, because I know from working in the restaurant business for a while that you can’t satisfy everyone, but not many people will go out and tell you the positive things, so it’s nice to hear all of the good feedback.” If the Union Dairy’s past is any indication of its future, the downtown mainstay will be around for another 100 years — and by that time, today will be the good old days and a whole new generation will be taking a trip down memory lane, and it’s sure to taste as sweet then as it does now.

FUN ZONE AHEAD

hen Mike Jankovec was ready to move on from a media career to a new adventure a few years ago, he bought a small bus, ripped the interior out, loaded up all of his belongings and set off to his parents’ farm south of Lake Carroll. Little did he know then that that little bus would lead to bigger things — like a bigger bus that he turned into a small business. That little bus served as the inspiration for an idea to turn a school bus into a cool bus, and today Jankovec is the man in the driver’s seat of Bubba Bus Adventures, a repurposed school bus that’ll take passengers to parties, on tours, or — like the name says — on an adventure.

A bus trip brewery tour? You got it. Want to find wineries on winding roads? Sure thing. Wondering who gets a bridal party to their wedding destination? Jankovec says “I do.” Whatever customers are looking for, Jankovec will pull out all the stops, and he’ll do it in style. The former school bus been given a fresh coat of paint — Jankovec swapped the official National School Bus Glossy Yellow for basic black — and the interior was overhauled to turn the bus into a lounge on wheels, complete with comfortable seating, party lights, a TV, climate control, a Bluethooth sound system, and plenty of room to get your party started. The bus’s Bluetooth sound system will sync with passenger’s devices, letting them pump up whatever jams they want.
“It’s been real nice,” Jankovec said. “People obviously don’t want to drink and drive. People just have a good time. All it is, basically, is a school bus with some leather couches in it, a TV, and we put some lights in there. It’s just a lot of fun.” With travel packages starting at $75 per hour, Jankovic will chauffeur his clients to their party or other social gathering throughout northern Illinois, or even into southern Wisconsin or eastern Iowa. Jankovec is willing to go the extra mile on occasion — for a Chicago Cubs baseball game, for example — but he said there are plenty of interesting places nearby that keep the bus busy, including some he’s learned about himself while transporting customers.

The bus is fully insured and can accommodate up to 20 passengers, who can bring their own food and drink, including alcohol. Wedding parties have been a big hit — people like knowing they don’t have to worry about driving home after tipping a few on the special day. Letting someone else take over the driving duties can also make the trip just fly by. “They love it for the weddings,” Jankovec said. “You can just let go and have fun, and not have to worry about how you’re going to get from Point A to Point B. Our goal is to get you home safe.” The trips have been fun for Jankovec, too. “It’s just a good time,” he said. “We’ve been to a bunch of different events. The bus has also handled kids parties (a schoool bus kids didn’t mind going on!), and has also picked up parties at Lake Carroll for a trip to see an outdoor concert. While Jankovec may be new to the bus driving gig, he knows a thing or two about what it takes to entertain people. Before Bubba Bus Adventures, he operated TV and radio stations in Ely, Minnesota, just a few miles south of the Canadian border in the thick of the forests and the land of lakes — “It’s a hub for going off into the wilderness,” he said. He produced music shows and organized the annual Boundary Waters Blues Festival in that neck of the woods around Labor Day weekend. While his stage is smaller these days, his goal remains the same: make sure his people have a good time, from the moment they board the bus to the moment they step off. “The people are so entertaining and funny,” Jankovec said. “They’re just so nice and it’s so nice to watch people have a good time and they’re joking around.”

Born and raised in Chicago’s suburbs, Jankovec moved back closer to home to be with his father, who moved to a farm near Lake Carroll. When he got the idea for a party bus, he learned a family friend had a former Thomas school bus from Fort Leavenworth, Kansas, so he bought it and brought it home. A little elbow grease later and the bus was ready to roll. Keeping Bubba in good shape is a family affair. Mike’s sister, Cindy Jankovec, helps keep the bus looking good, and his niece, Katie Gold, handles the booking. So far, clients have been the ones to pick the places Bubba has gone to, but Jankovec is considering planning a few trips of his own and inviting fellow adventurers to tag along, such as brewery runs and Oktoberfests. Bubba has been to quite a few places — the back of the bus has a bumper crop of stickers from some of the destinations. Sometimes the stickers can even pique passengers’ interest in a destination. It’s been quite a journey for Jankovec, and he’s glad he decided to get behind the wheel. “All I was trying to do was move my stuff,” he said, but the wheels on the bus are still going round and round, and as long as he’s on board with the business, there’s bound to be a lot of smiles along the miles. “It’s more than just hauling and getting people on the bus,” Jankovec said. “I like to interact with these people, and they like to interact as well. We all just have a good time, and I feel like, even though I’m the sober driver, I feel like I’m part of the party.” “It’s an interesting way to make a buck,” he said. “I never thought I’d be doing this, but it’s a lot of fun. And until it isn’t, I’ll keep doing it.”

f you need a lift, Cody Cole is your man — even if it’s hauling nearly a quarter ton of dead weight off the floor. And don’t think that he can’t do it just because he’s not a 6-foot-tall mass of muscle, because he can, and he has. The Lake Carroll teenager and Eastland High School senior-to-be is one of several students in the school’s powerlifting program, and being on the team has allowed him to compete against other high school students throughout Illinois, mostly from Chicago and the suburbs, but throughout the nation as well, and he’s racked up quite an impressive record.

Cole has come a long way since he first picked up the weights, but he’s not done yet. For him, there’s only one way to go: forward. “Always forward, never backward” is a lesson his football coaches drilled into him and it’s a motto Cole lives by, one that’s he’s found especially important in the weight room. That’s more than 1,000 pounds of combined weight, which the sport of powerlifting uses to measure one’s strength. He owns the state and national record for the squat for his age and weight class, as well as a state record in the deadlift — both records recognized by the Illinois High School Powerlifting Association and the American Powerlifting Federation.

Cole’s goal at the end of this year was to get his name on the top of a category school’s leaderboard, which is displayed prominently inside the weight room, and he reached it — and he’s already planning to do it again. All of that power also has also helped Cole on the football field too, where he’ll play for Eastland-Pearl City Wildcatz in the fall. He’s picked up speed and it’s help give him a boost too. He set the school record earlier this year for the tallest vertical leap at 35.8 inches from the ground — just a hair under 3 feet, and 3 inches better than second place. It’s a big leap from 29 inches during his freshman year and 33.5 inches as a sophomore. “I was so happy about that,” Cole said. “I knew that came as a direct correlation from my lifting, and I feel like I put a lot of hard work in. It definitely felt like I worked very hard to get up on the board.” His time in the weight room also has led to sense of leadership and determination, both with guiding younger students at the school as well as being a youth leader at his church. “It feels more interesting now because I feel like I have a purpose to learn a lot of that stuff,” Cole said. “It’s inspiring me to know that I can inspire others to want to do the same kind of things.” For all Cole has accomplished, when you look at him, it’s hard to tell he’s done all of that, Eastland powerlifting coach Chris Dertz said. Dertz runs the school’s weight room, a newer addition to the school in the past decade, and one which lead to an interest in forming a powerlifting club at the school in recent years. “His strength and weight ratio is incredible,” Dertz said. “The thing about Cody, what I appreciate about him is that he’s a super strong kid, but athletically he’s off the charts. It’s good genetics, too, but the fact that he’s so strong, but so lean at a small body weight, it’s incredible.”

Playing football has been one of Cole’s favorite activities, and when Dertz tried to organize a flag football team at the middle school a few years ago, it intrigued him. One of the ways Dertz wanted to get his athletes prepared for it was with weightlifting, which Cole came to enjoy. The flag football program wound up not materializing, but the weight training jump started a weightlifting club that’s unusual for a downstate school Eastland’s size. Cole didn’t really get heavily involved with the sport until he noticed a football teammate, Cadin Colehour, bulk up during his time as an underclassman. Seeing how that translated into improved performance on the field was enough to motivate Cole to want to emulate him.

Colehour, who recently finished his freshman year at McKendree University in downstate Lebanon, took Cole under his wing, and it paid off. He continues to help organize much of Cole’s training. “He was scrawny as a sophomore,” Cole said. “He was stupid scrawny, and then he got huge, and his numbers just started exploding. He was squatting over 400 pounds, benching over 300, deadlifting over 400. He was just an absolute monster. Whenever we’d play football he’d be one of the strongest guys out there, along with Eli, and after Eli left, he was literally the strongest person on our team. You could see just how much it correlated to being on the field, and I was like, ‘I want to get that strong.’” Dertz’s son, Elijah, also has been an influence; he’s set numerous national and world records in his age and weight division using the same weights and machines Cole uses at the school, and it’s led to a collegiate football career at Loras College in Dubuque, where he finished his sophomore year. Eastland’s lifters participate in competitions throughout the state and nation. One of the major state meets was a IHSPLA regional on March 19 at McHenry High School. That’s where Cole set his recent personal bests and joined the school’s 1,000 Pound Club, among the elite few who have been in the program.

Cole had plenty of support from not just those he knows, but others he had never met before. That’s the nature of weightlifting competition: camaraderie and competitiveness, where feats of strength are encouraged and cheered regardless of who’s doing it. “The culture is amazing,” Cole said. “Every single meet I’ve been to, I’ve been rooted on by someone that I don’t even know. It’s awesome. It’s like, yeah you have that competitiveness between each other, but you’re never going to see someone go up angrily, like in football, and try to do something stupid. You root for the person next to you, even if you’re kind of hoping that they don’t get it.” Despite being a school club, the program doesn’t get any funding from the school district. Participants typically pay their own way to enter in competitions and represent the school. When he’s not concentrating on lifting or football, Cole works a pair of jobs to earn enough cash to compete. His dedication to the sport comes from knowing he can do so much more, he said. He keeps up with recent weightlifting trends and media as well, always striving improve himself. As of May, Cole’s also in the top three in the weightroom’s history for his squat total, as well as his longest broad jump at 9-2. He also hopes to reach 500 pounds in the deadlift in June. Dertz himself grew up around the weight room during his days in high school sports, but came to appreciate it even more when he saw Elijah’s passion for power lifting. That that father-and-son bond has helped him help others at the school, like Cole, giving them a chance to find the limits of their strength — and push beyond it. “He loves to help with the kids,” Cole said. “He loves talking with you about stuff that may not have anything to do with lifting. he owners of Lena business have a lot of er stories to tell, and they’ll be the first to tell you that most of them are true. As for the rest? Well, they’re probably just telling some tall ales. Lagers and lambics. Pilsners and porters. Bitters and bocks. Sweet, sour, citrusy or stout … there’s a lot brewing in the beer world, and you can go a round, or two, that world at Lena Brewing Company, where customers can hoist a whole host of heady hops. The story-tellers can be found — fittingly enough for a place that turns grains into brews — in a building that got its start with grain: an old feed mill off of U.S. Highway 20, southeast of town, that Lena Brewing Company shares with the family’s sister businesses: The Mill Furnishings and Design, right next door to another member of the family, The Rafters Restaurant. The former feed mill was part of farm operation before it was moved to its current location.

The complex is like a combination of Midwestern farm and charm, welcoming visitors to enjoy the relaxed atmosphere, whether they’re buying a beer, a bite to eat, or a bedroom set. But if it’s brews that you choose, then Lena Brewing Company can help, and there’s plenty of space to enjoy a cold one, inside the bar or outside on the patio/deck area. “We just want them to have a comfy space to hang out and have good beer to drink,” she said. “There’s really a vibe when you open the garage doors, and when the umbrellas are up when it’s sunny, with people on the patio,” taproom manager Katie Quittschreiber said. Among all that good beer Quittschreiber is talking about is one that’s close to home for Lake Carroll residents — in fact, it’s made specifically for the community. The brewery created a Lake Carroll brew in honor of the community’s 50th anniversary. The light brew, which has an alcohol content of 3.9% and is made of Pilsen malts and German pearl hops, was first announced at Lake Carroll’s New Years Eve celebration at Plumtree Lodge, and is now available at the Trailside general store in Lake Carroll. The brewery crafts new flavors every so often, giving beer lovers even more of a reason to keep coming back. The bar features about 20 different beers, most of which are on tap.

Among them: the 38-degree Hefeweizen, heavy on wheat and unfiltered yeast with a banana and clover flavor; Drunkelberry with dark wheat and a black raspberry punch; the Mailbrew Coconut porter with chocolate and coconut; a Chocolate Covered Strawberry, available during cooler months of the year; as well as caramel pecan coffee and thrashed oats stouts. The Hefeweizen is a year-round “fan favorite,” Quittschreiber said, and is among the bar’s top sellers. “It’s an unfiltered wheat beer, and it’s got notes of banana and clove in it,” she said. “It’s very traditionally brewed, and has been around since the beginning. It’s mild and refreshing. I consider a Hefeweizen to be kind of a gateway to craft beers. It’s got more depth than the LFD or something on the lighter end.” Bartender Danielle De Behnke enjoys the Hefeweizen, too. “They’ve tried to make it as traditional as possible,” she said. “If you’re German, and you come in and try it, you’ll be like, ‘Good hef!’”

The newest creation is a “strawberry smash,” a brew created earlier this year that is a sweeter version of the LFD ale, and is “super aromatic,” with strawberries, Quittschreiber said. Stout beers include blends of thrashed oats oatmeal and caramel pecan coffee — and unlike more mainstream stouts, they appeal to a wider audience. As a local brewer, Lena Brewing Company prides itself on being able to more easily finesse its recipes to appeal to more people. “People might say that they don’t like stouts because they’re bitter and heavy and chewy, but when you’re a small brewery like us, you have the ability to brew it whatever way you want,” Quittschreiber said. “So you can make it lighter and you can sweeten it up.”

In honor of Lake Carroll's 50th anniversary, Lena Brewing Company created a beer to mark the occasion. The light brew, which has an alcohol content of 3.9% and is made of Pilsen malts and German pearl hops, is available at the Trailside general store in Lake Carroll.
Several varieties of mixed drinks and sodas are also available, and many of the drinks are made with locally produced spirits. Cocktails are concocted using Blaum Brothers bourbon, gin and vodka, all distilled about 30 minutes west in Galena, The Bloody Mary comes served with a peppered rim, pickle and olives, with either Blaum’s classic or Hellfyre vodkas. Kennay Farms’ gin and vodka, from Rochelle, about an hour’s drive east of Lake Carroll, is another spirit found behind the bar. Brews aren’t the only drink blended at Lena Brewing Company; it also makes its own root beer. Looking for a flavored soda? You can get a Blumers, from Minhas Brewery in Monroe, Wisconsin. If either doesn’t quite whet the whistle and you want something with just a hint of alcohol, Lena’s own ginger beer contains less than 1%.

If you’d rather tip a glass than hoist a mug, wines are available — and in keeping with Lena’s local flavor, some come from local wineries. From Hawk’s Mill Winery from Browntown, Wisconsin, comes a pair of reds: Currently Single, which is more of tart fruit red; and a sweet Alpaca Punch. Massbach Ridge Winery in Massbach has three wines at the bar: the light rose Blushing Pink, the semi-dry red Ridge Red, and the semi-dry white St. Pepin. If you want to wine and dine, food can be ordered from The Rafters restaurant next door and delivered to the bar. The bar also has a Mug Club, trivia on the first Thursday of the month, and festivals and live music on occasion (check Lena Brewing Company’s Facebook page for more information). While enjoying a brew or two, with just a turn of the barstool customers can check out a selection of Lena Brewing gifts and apparel. Hops garden and taproom tours, for large groups, are available by appointment. The story tellers at Lena have other tales — or rather tails — to tell, too. Not only can you bring a friend, but you can bring a best friend: Dogs are welcome inside the bar and there is a “wall of fame” featuring pictures of dogs who’ve dropped by over the years.

Package beer is also available at the bar, and the staff will be happy to put together a mixor-match package. “Some people just come in and get a six-pack to go, but often will say they wish they could stay,” Quittschreiber said. “I like creating that feeling, or when people pop by for a beer and end up staying 3 hours.” The brewery has seen plenty of success since Ross Vehmeier started it in 2015. Ross’ parents, Gary and Sylvia Vehmeier, opened The Rafters 20 years ago, and Ross eventually made his dream of bringing a brewery to northwest Illinois come true, joining a growing number of craft breweries in Illinois, which rose from nearly a couple of thousand in 2010 to almost 9,000 today. According to the Brewers Association, a national trade group for small and independent craft brewers, Illinois ranks 13th in the number of craft brewers, with nearly 300 breweries rolling out 394,000 barrels of beer a year. “[Ross] saw how craft beer was trending, both west and east, and wanted to bring that to the Midwest,” Quittschreiber said.
