aintaining the ecosystem of the state’s largest private lake is no small task. It takes a team of dedicated volunteers, a lake manager, vigilance, and a sound plan to maintain the delicate balance between man and nature at Lake Carroll. It doesn’t hurt to sponge off Mother Nature, too. That’s where the people who play a part in keeping the lake looking good come in. Armed with a plan, plants and a pond – and a $10,000 grant – they’re spearheading a project that’ll help slow down rain’s rush hour, attract some critters, and give Lake Carroll residents a place where they can immerse themselves in the scenic setting and soak it all in.

Thanks to a ComEd and Openlands Green Region Grant, the retention pond south of the clubhouse will be enhanced with more plants to absorb more water that otherwise would meander through hills and valleys down to the lake. Heavier rains in recent years have led to more nutrient and soil runoff to the lake as fast-moving water takes a toll on the land, with erosion picking up sediment and pushing it toward the lake, taking valuable nutrients with it. The retention pond can help keep things in check, but it’s been hard

for the 60-by-70-foot pond to keep up with the demands. “What happens is you got that hard-surfaced roof and hard-surfaced asphalt where water doesn’t absorb when it rains, and you have all of that water rushing downstream at once, and there’s not a lot of ability for that to be absorbed into the ground there,” Lake Carroll lake manager Joe Rush said. “By creating a rain garden, and having natural plantings turn the ground into more of a spongy environment that sucks water, the water moves downstream less quickly.”

The planting and filtering process also helps prevent nuisance aquatic plants, bluegreen and bad algae that could be in the lake, which can be a health concern, Rush said. Also in the works are walking trails, a bench under a tree and an overlook of the pond. “They can enjoy viewing the natural setting that’s there and the critters that will be coming to that habitat,” Rush said. One of the plants that’ll put down roots should create quite a buzz: Goldenrod plants can attract the endangered rusty-patched bumblebee, the first bee in the continental United States to make the U.S. Fish and Wildlife Service’s endangered species list, and one of nature’s key players in pollination (see the info box on page 8 for more information). The $20,000 project should be completed within 2 years, with the grant funding half the cost. Part of it is being planned around the resurfacing of the adjacent clubhouse parking lot, of which a small chunk will be removed to make space for additional green space around the pond. The existing lot slopes downward toward the pond, and plenty of small rocks sit at the edge of the asphalt going downward. The area already has been prepped for seeding, and the rest of the work will happen next year, whether the parking lot work moves forward or not. True to its goal, the project will even have a trickle-down effect. Not only will it play a role in keeping the lake clean, it could help clean water downstream on the East Fork Creek, the Plum and even the Mississippi rivers to the Gulf of Mexico, Rush said. If you’re wondering how that works, you’ll be able to find out when informational signs and placards go up, another part of the project. The signage will feature information on the important role that plants and green spaces play on the environment. Lake Carroll was one of 26 recipients of the one-time state grant, designed to improve and support open space projects and restore pollinators throughout ComEd’s service area. Many projects focus on enhancing pollinator habitats and protecting species such as butterflies, bees, and others. Pollinators provide critical support to the region’s flowering and food plant populations.

As part of the retention pond project, more goldenrod plants will be added, like the ones seen here at the pond. The flowers are a magnet for bees, including the rare rusty-patched bumblebee. Its yellow flowers bloom in late summer and early fall the plant crosspollinates easily, so there are more than 100 different species of goldenrod.

The rusty-patched bumble bee, known as Bombus affinis in scientific terms, is a federally endangered species that can be found at certain prairie areas in Lake Carroll. All rusty-patched bumble bees have entirely black heads, but only workers and males have a rusty, reddish patch centrally located on the back. These bees once occupied grasslands and tallgrass prairies of the Upper Midwest and Northeast, but most grasslands and prairies have been lost, degraded, or fragmented by conversion to other uses. Bumble bees need areas that provide nectar and pollen from flowers, nesting sites (underground and abandoned rodent cavities or clumps of grasses), and overwintering sites for hibernating queens (undisturbed soil). Most prairies and grasslands of the Upper Midwest and Northeast have been converted to monoculture farms or developed areas, leading to smaller and isolated grasslands. Increases in farm size and advances in technology haveimproved the operating efficiency of farms, but have led to practices that harm bumble bees, including increased use of pesticides, loss of crop diversity which results in flowering crops being available for only a short time, loss of hedgerows and the flowers that grew there, and loss of legume pastures. Continued preservation of the bee can be done by growing gardens with flowering plants that provide nectar and pollen, such as lupines, asters, bee balm and spring ephemerals. — Source: U.S. Fish and Wildlife Service

The bee isn’t the only member of Mother Nature’s brood found around the lake: short green milkweed, Illinois tick trefoil, and Slender and Great Lakes Ladies Tresses – a variety of orchid – also have been sought out by biologists throughout Illinois. Lake Carroll Prairie Club members Jim and Pam Richards and Becky Wolter-Janopolous helped Rush with the grant writing. The club’s mission is to preserve and manage the lake’s prairies and woodlands to improve the quality of the community’s ecosystem. Funding for such projects isn’t widely available, and Rush and the Prairie Club were quick to jump on the opportunity.

“It’s a project that probably could not get funded without the assistance,” Rush said. “It’s important to try and make that ecological difference in a situation where there are not many funds available.” While the project will give residents yet another way to enjoy life at the lake, Rush also is hopeful that its educational components will help lake residents understand the important role nature plays in the lake’s ecosystem. “It’s a visible location, which is good because we want to create awareness of this type of habitat,” Rush said. “In the last couple of years, we’ve gotten overwhelming support from the community for the education that we’ve done for the prairie plantings.”

Wells – can tackle a whole host of tasks that customers don’t want to take on themselves. Painting? Yep. Refinishing decks? Pressure washing? Yep. Carpet and floor cleaning? Yep. And that’s not all. “We found out that diversity is really what’s keeping us going,” Todd said. “We’re going from doing one thing to another.” As people are getting their decks ready ahead of winter, and doing exterior house cleaning while it’s still nice outside, SteamGenie’s ready to wave its magic wand and make dull decks and dirt on domiciles disappear. He worked for a cleaning service when he lived in Texas, before life brought him and his family to north-central Illinois, where he took another job – but he found out he just wasn’t ready to make a clean break from his former career. He kept thinking about getting back into the cleaning business, and he did, joined eventually by his son. T.J. had been working at a local factory but found it to be too repetitive and tiresome. He wanted something new, and he found it working with his folks – but that something new was also pretty familiar. “I like being able to go from one day doing interior painting to the next going outside to pressure wash a house or go inside and refurbish cabinets,” he said. “I like the diversity of it. I was working a factory line, and it just was so repetitive every day. It gets real old real quick.” Having T.J. join the business turned out to be a huge blessing. As more homeowners pulled up carpet and put down different kinds of flooring – linoleum, laminate, tile, wood – the declining number of carpet cleaning calls put the family business in a tough situation. However, with T.J. in the fold, he brought ideas of doing more than just carpets. “Back then everybody had carpet,” Cheryl said. “Then we noticed that start to lull; we went from doing six a day, 6 days a week – just swamped – and noticed that people were starting to get more tile and linoleum. We were starting to get a little slow, and a little concerned.”

On any given day they can go from cleaning carpets to painting to refinishing cabinets. “We spend all of our time working,” Todd said. “Sometimes we’ll work 16 hours straight. It works out for us.” While many businesses are seeing a hit in traffic due to the COVID-19 pandemic, that hasn’t been the case for the Wells. In fact, business has been booming because more people are staying home and spending more time eying their decks, dusty corners and other spots that they otherwise might not focus on, Todd said. “After years of doing this, everything boils down to being about the money, but at some point it’s going to mean a little more to you than that,” Todd said.

“In this business, what you get out of it is making people happy.” That uptick in business has more than just one benefit to the bottom line. It’s like a snowball: As more people notice their work, the referrals are picking up, too. “We’d do a job and people would rave,” Cheryl said. “The next thing we know, we’ll get a phone call from their friend, and they would rave. It’s just us, but we take a lot of pride in what we do. We feel very blessed in every job that we go to, and people like our work.” Near and far, dirty and really really dirty, the Wells will tackle any job. We’re not afraid to work.”

t’s easy to see why Curt Strauss’s stories have happy endings – it’s because the people he tells them too are always laughing. The 21-year-old comedian with a Polo address and a Milledgeville High School diploma has been administering doses of the best medicine for a few years now, polishing his act and making a name for himself in the comedy world while studying marketing at Illinois State University in Normal. When he’s not staring at a laptop of academia, he’s telling stories in front of crowds in Bloomington-Normal. “I’ve always liked telling stories,” Strauss said. “I like telling stories about myself and making other people laugh.” Many stories are tales from the family farm, awkward teenage moments, and, perhaps most of all, spending time with his 92-year-old grandfather, Ed, who Strauss said, “is the one that’s making me this money right now.” (if you want to see some of those charming chuckles, head on over to Curt Strauss Comedy on Facebook for videos of Strauss and his grandpa).

Strauss will spin some more of his rib-tickling tales when he headlines Lake Carroll’s Turkey Trot Comedy Night in November at The Clubhouse. It will be his third appearance there, and the second in which he is the main act. He’s no stranger to Lake Carroll: He used to work in the clubhouse, and he said he’s excited to return for another Turkey Trot. “It’s going to be a real fun time,” Strauss said. “I’m looking forward to it. I’ve been preparing material that I’m really excited about. Lately it’s been landing well in Bloomington.” Strauss’ first Turkey Trot was one of his earliest shows, back in the summer of 2018. About 170 people turned out, and it felt special to him that people were paying good money to see him perform. “It felt real good that people were paying to come see me do what I love,” he said. “I was very comfortable because I knew everyone in the room and I could do certain jokes about certain individuals at Lake Carroll, like my boss, and a few jokes about working at Lake Carroll. They wouldn’t have landed anywhere else, but while I was doing the show in the banquet room at Lake Carroll, they loved it because people can laugh at the stories they can relate to.” Strauss is no stranger to being in front of crowds, but he used to do it on the court instead of on stage. A member of the Milledgeville Missiles’ basketball team, Strauss wanted to put an exclamation mark on his final time competing in front of a crowded gym, and he found a way to do it during Sauk Valley Media’s All-Star Basketball Classic for outgoing senior athletes in July 2017 at Sauk Valley Community College in Dixon.

Strauss doesn’t have to dig far to mine comedy gold. He just has to share stories about his family – “I love telling stories about my family growing up on the farm, and also making fun of myself,” he said. “[My family] may not like the stories that I tell, but I find them quite hilarious, and other people do, too. One of those family members is a favorite of Strauss’ Facebook followers, Grandpa Ed. You can watch videos of Curt and Ed on his Facebook page, at Curt Strauss Comedy. Playing for the Daily Gazette squad, Strauss’ game performance was anything but stellar: one shot, zero points. But he had a feeling when it came to getting people to laugh – well, that would be a slam dunk. And it was. When it came time for the Slam Dunk Competition, the funny bone came out and the laughs filled the gym. He knew he probably wasn’t the best slam dunker in the group, but he still managed to make all three of his attempts during the Slam Dunk Competition – with a different spin on each one. His first attempt was a successful driving two-handed jam. For his second attempt, Strauss put a white piece of tape on the free throw line to signify his next try. However, that turned out to be a setup, as Missiles teammate Buddy Bibler moved the tape closer – all orchestrated by Strauss beforehand. After that attempt was successful, Strauss had 6-foot, 5-inch Gazette teammate Nick Klimson of Morrison stand at the top of the charge circle. Would he have really tried that? “Absolutely not,” Strauss said at the time. “I like setting the bar really high, and then really undermining myself so

it makes people laugh. It was funny hearing everybody seeing when Nick was standing under the basket and going, ‘Whoa, whoa. No way.’” Bibler replaced Klimson on the mark, and Strauss successfully completed a leap over the 5-9 Bibler and threw down the jam with both hands. That final dunk drew the loudest applause of the night, prompting a teammate to yell, “Give it to him now!” of the mini basketball awarded to the dunk contest winner. Looking back, he said the all-star match was a gamechanger for him. “I have no problem with laughing at myself,” Strauss said. “I was literally trying to make people laugh at me so I would win that day.” His knack for creating funny moments, intertwined with storytelling, continued into college – but it wasn’t all laughs. One time,a girlfriend who called him out in front of his friends for not being funny – but he ended up having the last laugh. That embarrassing moment motivated Strauss to explore more about humor. He attended open-mic events in Bloomington-Normal, Peoria and Champaign, and it didn’t take him too long to develop ways to put together a successful routine.

Like most comedians, Strauss had to hone his act, and he did it close to home. The Other Bar in downtown Milledgeville was his first venue, performing in front of people he knew. A Christmas show at Triple P BBQ in Rock Falls followed, and so did the laughter: Most of the people there were unfamiliar to him, but the laughs were just as loud and just as long. He’ll perform there again this Christmas. “Those shows made me feel like I could actually do something in comedy,” Strauss said. “Everyone in Milledgeville and Polo had watched me grow up, but these were strangers, and it was more successful than the shows I had done before.” The performance business has been hit this year with the COVID-19 pandemic, and Strauss dealt with the blow of having six shows canceled. However, he’s still determined to keep ‘em laughing. “I love telling stories about my family growing up on the farm, and also making fun of myself,” Strauss said. “[My family] may not like the stories that I tell, but I find them quite hilarious, and other people do, too. “Being in front of people is where I really hit my element. I really hit my groove when I am in a crowd, whether it’s with my friends or in front of a few hundred people.”

here’s nothing quite like sinking your teeth into fresh-picked produce, plucked from the garden and bursting with flavor – but those flavors are all-too fleeting in the land of four seasons. But you don’t have to let those flavors get away just because Old Man Winter crashes the garden party. Canning offers a way to hold on to those rich flavors months after fruits and vegetables have been picked, whether it’s just preserving the produce or making the most of it by turning it into jams or sauces. If you’re not into firing up the stove and spending a day in the kitchen to can your own food, there are businesses not far from Lake Carroll where the owners’ can-do attitude keeps the shelves stocked with fresh goods year ‘round.

One of those places is the Galena Canning Company, about a half-hour northwest of Lake Carroll, in downtown Galena. Former private chef Ivo Puidak took the art of canning to new levels when he started his business from scratch back in the early 1990s. The third-generation canner with family roots in Estonia started small, with just a few homemade goods peddled from a card table and farmers markets. The work was hard, but the recipe for success was simple: follow grandma’s recipes and follow his mom’s rule:”You have to use only the best and freshest” – and a pinch of the family’s “Estonian magic.” When it comes to best and the freshest, there’s not much you can’t find at this Galena mainstay – hundreds of products, including salsas and sauces, jellies and jams, fruit butters and flavored oils, and a lot more. Starting with only two products – Baja Salsa and Chunky Garden Vegetable Pasta Sauce – Puidak built the business on a foundation of delicious recipes and family tradition. Chef Puidak died earlier this year, but his recipes and business’ legacy live on with his wife, Shelly Hanneman Puidak, son, Max Puidak and their staff, including general manager Chris Keating, who has been with the business for the past 14 years. Keating said fall is a very busy time for the business as it processes sauces, jams and salsas in a range of flavors and varying degrees of heat. Speaking of degrees, one of Puidak’s creations has a lot of them, and it’s attracted national attention, too. He created his all-natural Galena’mite Blasting Sauce more than 5 years ago, with help from some fellow Galena residents and a secret blend of 20 hot peppers, vinegar, salt, garlic and chef’s spices. What sets the sauce apart from others is that it’s not just about the heat. Puidak manages to keep the pepper’s flavors front and center.

The story of Chef Ivo Puidak’s accolades and accomplishments is told through photos, magazine covers, awards and other pieces of his past from a long and illustrious career. The founder of the Galena Canning Company passed away in March, but his legacy lives on through the work of his wife and son, Shelly and son Max , seen at left in a photo of the store’s opening day.

The sauce snagged the International Packaging and Container Design, going up against some Fortune 500 companies. He also appeared on the front page of the Wall Street Journal in 2000, discussing his business, the Blasting Sauce, and his custom displays. While the business has grown tremendously since it was launched, Keating said its founding principles remain. “We’ve got something for everybody’s taste buds,” he said, and “we work with several local co-ops and multiple different farmers to supply our recipes with the freshest ingredients.” Heading the other direction, about an hour northeast of Lake Carroll, you’ll find Bushel & Peck’s in Beloit. Launched in 2002 as a small farm in Monroe, Wisconsin, it’s grown into a successful business operation with locations at their farm in Monroe and a second store in Beloit, as well as an online store. Like the Galena Canning Company, the business is steeped in family tradition.

“Growing up, my family ate a lot of canned food created by my grandmother,” said Jackie Gennett, co- owner of the shop. Gennett went from caring for a small backyard garden in her childhood home in Chicago to developing a larger plot of land. In 2002 she and her partner, Rich Horbaczewski, bought 130 acres of land in Monroe, Wisconsin. After a few years of selling produce they added a canning operation and soon it became their main focus. “I thought it was a better way for us to sell our produce,” Gennett said. “I started out with a basic, tested and proven recipe from the 1940s.” Through the years the couple has added to their tried and true recipes, incorporating produce and flavors from throughout the world. “Most of our hot sauces are influenced from India, Central America, Jamaica,” Gennett said. “Our sauces have a lot of flavors from all over the world. The business’ Preservation Kitchen sells hot sauces, fermented food, jams and jellies. The shop also has local cheese, milk, meats, beer, wine, snacks and specialty groceries.

And while she oversees the business, Gennett still manages her canning at home, pickling cauliflower and beets as well as making sauerkraut. But when it comes to advice, Gennett said there’s a very important first step: Follow the rules. “Canning is a science, and for safety you want to follow the rules so the food is safe to eat after sitting on the shelf,” she said. Adhering to the rules and recipes is a fundamental part of canning, says Diane Reinhold, a registered dietitian and nutrition and wellness educator with the University of Illinois Extension. The U of I Extension has recorded classes on several canning topics, from methods to making sure equipment is working properly. Reinhold said failing to follow proper canning procedures could cause food-borne related illnesses, including botulism. “There is a lot of science involved when canning,” Reinhold said. Reinhold suggests the book “So Easy to Preserve” and said it’s the “home food preservation Bible.” Whether canning, freezing or dehydrating, each process requires specific steps, and using a proven recipe is essential to creating a safe and delicious product. Whether it’s prepared by the professionals or you’re ready to try a recipe at home, the art of canning can be a delicious way to preserve produce to enjoy during the cold winter months, and provide a simple item direct from your own pantry. “Just the other day I opened a jar of my pickled beets as a side dish for dinner and it was delicious,” Gennett said.

The name of Galena Canning Company’s signature sauce, Galena’mite Blasting Sauce, is more than just a play on words for the hot sauce that packs quite a bang. The name, and the dynamite stick bottles, is a nod to the city’s history as a mining town. Its access to the Mississippi River, and the predominance of lead ore, or “galena,” were key factors in the city’s growth during the mid-1800s. inning the Lake Carroll Club Championship has been a long time coming for Josh Heinrich. Ever since he was a teenager more than 30 years ago, Heinrich would finish his shot on No. 18 and think to himself that one day he would be the best golfer in the community – and after all those years of trying, the 47-yearold finally joined the club of champions, during the event, which was play Saturday, Aug. 22 and Sunday, Aug. 23. Heinrich rebounded from a tough first round, which included back-to-back multiple-bogey holes, to fire a 77 in his next go-around of the course, finishing withCont’ a d159. to pageXXone. But he wasn’t the only

Doug Wagner also ended with a 159, and it led to a playoff hole where Heinrich got the result he longed for. “It’s something I never thought I’d do,” Heinrich said. “I’ve always wanted to win the club championship, and now I have. It’s a lifetime achievement for me.” Wagner’s first playoff shot went a little off to the left and under a small tree near a natural area, while Heinrich’s shot was more on course. Wagner got out of the tough situation by lining his next shot over a fence and small tree, but it put a damper on his chances to win. Heinrich proved to be more accurate in his shots, getting more out of what he initially intended from his pitching wedge, with his third shot making green. He sank his putt from less than 3 feet away to clinch the championship. “My irons were very good all weekend,” Heinrich said, “and that was the key for me, and putting real well.” Wagner finished on Saturday for second place with Jake Thomas with a 78 – both were behind Marty DeCrane’s 75. The next day, a triple-bogey on No. 8 and a bogey on No. 9 helped ding his score after 18 to an 81. The runner-up finish is Wagner’s second in 2 years at the course: He shot a 79 at the senior club championship last year. “Overall I played fairly well, and better [Sunday] than [Saturday],” Wagner said. “That’s the way golf goes. We were all close right there in the end.”

After his 82 on Saturday, Heinrich’s next goaround appeared to have a similar result when he made a double-bogey on No. 10, but he immediately rebounded on holes that have proven problematic for him in the past. Heinrich birdied the par 5 No. 11 and the par 4 No. 12 to get back in the hunt – his penultimate shot on No. 11 almost made it in for eagle. No hole was more pleasing for Heinrich on Sunday than No. 16, where he sank a 20-foot shot for bogey. “Considering I shot an 82 with a triple and double [bogey on Saturday], I really played good on those two holes,” he said. Don Robinson shot the best 18-hole round of the Sunday session, having improved from an 83 in the Saturday round to shoot a 76 the next day to take top honors in the A Flight with a 159. Robinson, whose flight win is his second overall, tallied four birdies and finished the front nine Sunday at even par. He could have been three strokes better, he said, as

that’s how many times the ball came up about an inch from certain holes. “I played real well,” Robinson said. “Golf is one of those games where you never know from day to day. I just hit the ball well and putted well.” Tom Frieske shot a 77 in the Sunday round to lead him to second place in the flight, besting R.J. Howland in a playoff. Rounding out the top five best performances after Saturday’s rounds were A Flight golfers Mike Lindsey (79) and Rick Curia (80), who would tie with Bill Green for fourth in the flight each with a 163. Ken Clayton (178) won the B Flight, and Tom Hennings (188) was tops in the C Flight. In the three-woman ladies flight, which uses net scoring, Sheri Moutrey fired a 71 and a 69 to top the trio with a 140. Each woman scored better in the second round of 18 than the first: Tracey DeCrane was runner-up with a 73 and 70 (143), and defending champion Diane Schipkowski shot a 74 and 72 (146).

This was the most people who’ve participated in the event in a number of years, Heinrich said, with 41 golfers competing. “It was a good field with very similar players. I knew it would be an open field and I’m just glad I came out on top,” Heinrich said. Despite coming up just short, Wagner had a good time as well. “I just love to compete, and you get to compete with your friends, and they’re good golfers, too. It’s a good time, and I enjoy it very much.”

OTHER RECENT EVENTS Marty DeCrane earned a win on Aug. 30, teaming with Tracey to top the field in the Mr. and Mrs. Club Championship. The DeCranes tied with Rick and Barb Curia at the end of 18 holes with scores of 68, and wound up winning after a two-hole playoff. On Aug. 8, the Mike Allspaugh-captained Blue Team won the club’s Ryder Cup-style championship, 26-16, over the Red Team. Teams of Tom Bogusevic and Ron Hennings, Mark Sturtevant and James Weese, and Bill Green and Tom Frieske each scored three points to lead their team. The Senior Club Championship on July 26 saw Mark Melville win with a 79, followed by Matt Heinrich’s 81 and Robinson’s 83 in the championship flight. Bill Stelter won the A flight with an 82, Brian Peterson was tops in the B flight with an 86, and Schipkowski won the ladies flight in a playoff over Sandy Bogusevic – both had scores of 71 after 36 holes.

Lake Carroll residents fired up their boats to fire up the base and set course for Lake Carroll on Sept. 5, where a fleet of fervent supporters of President Trump took part in a floating parade to show their support for the president. More than 40 boats took part in the 45-minute parade, which ran from the Three Tubes Bay to the dam. Thanks to Maryann Buettner for sending in the photos of life on the lake!
