Youth chorus delights after lighting of tree in Clarendon Hills By DANNY CIAMPRONE dciamprone@shawmedia.com CLARENDON HILLS – Shining through the almost comical cold during the Christmas Walk on Dec. 6 were the smiles of hundreds of residents celebrating the start of the holiday season, but that enthusiasm can only go so far before one notices they’ve lost all feeling in their extremities. After two hours of enjoying the Christmas Walk, the relief of seeing an indoor choral concert was too inviting to resist. Right after Santa Claus lit the Christmas tree in Clarendon Hills outside Village Hall, the Prospect Elementary School Chorus performed hol-

iday songs, winter songs and traditional carols at the Clarendon Hills Public Library. Maybe it was the enthusiasm of the kids singing, or maybe it was the library’s industrial furnace, but after a few short minutes of the concert beginning everyone’s shivers subsided and holiday enjoyment took over. Included with the performance, the Prospect School Chorus provided song sheets to the audience which participated in the holiday concert. The concert on Dec. 6 was in preparation for the concert at 7 p.m. Thursday at Prospect School. During that concert, the students also will present a 15-minute musical called, “Elfis and the Elves get All Shook Up.”

You wouldn’t know it was cold talking to Jan Anderson, president of the Hinsdale Chamber of Commerce, who was delighted by the turnout and celebration to start the season. “We are open for business and happy about it,” Anderson said. “We’re happy to have Santa light the tree and kick off the holiday season here in Hinsdale.” One Hinsdale resident enjoying the Christmas Walk for the first time was Mistie Lucht, who just moved to the

village six months ago. “What a great community that they put this on for us,” Lucht said. “You run into people you know and it’s just very festive.” The cold wasn’t bothering Lucht or her kids, who said they were having a “wonderful time.” “We started with the tree, made our way to some face painting and now we’re seeing Santa,” Lucht said. The Christmas Walk also included the Radio Disney Road Crew, holiday carolers, giveaways and a place to warm up in the gingerbread cookie tent.

HINSDALE – North Pole, Alaska, is known as the town that celebrates Christmas year-round, but on Dec. 6 it had nothing on Hinsdale’s celebration, and that included the blistering winter cold. The high temperature on Dec. 6 in Hinsdale was 18 degrees without wind chill, while in North Pole it was a comfortable 28 in comparison. But that didn’t stop residents and guests from around the county who enjoyed the 48th annual Christmas Walk to ring in the holiday season. “It’s very cold, but it’s a great turnout,” said Hinsdale Village President Tom Cauley, who helped Santa light the village Christmas tree outside Memorial Hall. The Christmas Walk is one of the largest events organized all year by the Hinsdale Chamber of Commerce and the village. It’s an exciting time for the kids who get to see Santa Claus ride in the fire truck and light the tree, but, at the same time, it’s one of the most nerve-racking moments for Tim Scott, Hinsdale director of economic development. “My most nervous moment of the entire year is waiting to see if [the lights] work,” Scott said with a laugh. “Thankfully they did.” Scott said he was “pleasantly surprised” by the turnout given how cold the conditions were.

tain restrictions, and absent complaints, residents can put in ice skating rinks on their personal property without seeking approval from the Hinsdale Village Board, Hinsdale Village President Tom Cauley said. Cauley said the property owner has received several emails from residents in favor of the rink. “The reason we’re bringing this to the board is to see if anyone opposes it,” Cauley said. Trustee Laura LaPlaca’s only concern was that since a portion of the rink is on village property it has to be open for anyone to use, not just the residents who live at 655 Harding. “It has to be like the other rinks where neighbors could skate on it,” LaPlaca said. Approval for construction was unanimously approved by the board provided that the rink is open to the general public.

Against the sports complex Lemont Mayor Brian Reaves continues to press forward trying to build a sports complex in Lemont. He tried to get it through previously without any input from the residents. He only gave us a 30-day notice, but we exercised our right and had enough signatures on a petition to force it to go to referendum. As it stands today, he’s been trying to secure private financing for the sports complex and is unable to do so because the investors do not want to invest in polluted land that the village of Lemont does not own; the land is owned by the water reclamation district. So, if the private investors have no desire to invest in a $20 million sports complex, what gives him the right to burden the taxpayers with a $20 million bond so if this thing fails it’s up to the taxpayers to bail it out? Bottom line, if he cannot secure private investors for this $20 million sports complex, why does he continue pressing on and still wants it to bring it to referendum? The private investors don’t want it, and we don’t want it either.

District 86 flat levy a ‘tragic mistake’

To the Editor: The “flat” or “zero” levy for Hinsdale High School District 86 is a tragic mistake that, if allowed to happen, would inflict irreparable harm on the quality and reputation of our public high schools. If the board majority must have their historically low levy, they should at least keep up with the current CPI of 1.7 percent. It’s simple arithmetic that something must be sacrificed if revenue falls below the level of inflation. To understand the gravity of the situation, it is important to recognize that District 86 is already fiscally conservative, with per pupil expenditures and financial reserve levels substantially lower than our academic peer group, including New Trier Township. Something will need to be sacrificed under a flat levy, and the board majority ([Richard] Skoda, [Claudia] Manley, [Victor] Casini, and [Ed] Corcoran) have been unclear on what that might be. This doesn’t mean they haven’t given any clues. We can expect their pet priorities to be funded, including Dianne Barrett’s legal bill, unspecified capital improvements repeatedly cited by Mr. Corcoran, and as many as five highly compensated new administrators. No, this group intends for the budgetary ax to fall on our teachers, or as Corcoran expressed it in an email which

• LETTERS Continued from page 11 Excellent approach to District 86 tax levy To the Editor: Hinsdale H.S. 86 Board members [Claudia] Manley, [Ed] Corcoran, [Victor] Casini, and [Richard] Skoda have stated they will vote “yes” for a “zero property tax increase.” They are to be applauded for using intelligence, empathy, consideration to multiple relevant factors, and professional demeanor in making this decision. Having an open Finance Committee meeting to discuss the tax levy prior to the preliminary vote at the November Board meeting, not required by law, demonstrated new openness, and an opportunity for anyone to ask questions, or make comments after a presentation by the District’s audit firm, financial consultant, and business office staff. Unlike previous years, a draft copy of audited financial report and management letter were made available at the beginning of the meeting. This provided an early opportunity to all to review those documents prior to the annual audit presentation and annual tax levy approval at the December Board meeting. In previous years, only one factor was considered in determining the property tax levy. That factor was the “maximum tax increase allowed by law;” also known as a “balloon tax levy.” It is not based upon: need, financial condition and projections, analysis of costs, elimination of waste, and other factors. It is solely based upon the intent to collect the maximum tax bill from each and every taxpayer in the District 86. Nothing beyond a simple calculation is required; no thought process. Departure from this “Tax and Spend” ideology related to the annual tax levy is needed. Hopefully, Board members [Kay] Gallo, [Michael] Kuhn, and [Jennifer] Planson understand that and will demonstrate solidarity as one united Board, voting “yes” for the “zero property tax increase.”

District 86 tax levy freeze ‘most unwise’ To the Editor: Richard Skoda, today is your day. The longtime Hinsdale High School District 86 Board member could hardly contain his enthusiasm as he voiced his “second” to the motion to freeze this year’s district tax levy, not even adjusting for the 1.7 percent CPI increase. He offered a lengthy discourse, reading a “taxpayer’s letter” decrying taxes/fees of all types and at all levels of government. Joined by the three newly elected board members, Skoda’s position prevailed. We too are taxpayers. We, however, distinguish among taxes, rather than asserting as an article of faith a singular position. Voting a district levy freeze as an expression of philosophy about taxation, based upon assumptions about future expenditures containment that includes amazing blitheness about the local impact of anticipated pension cost-shifting from the state, appears most unwise. What does seem clear enough: Skoda, the self-described lifelong “educator” (whom we suppose enjoys a generous teacher pension) and his allies intend to cap expenditures by restructuring teacher salaries and benefits. In speaking of current teacher health benefits, one board member disdainfully contrasted these with those of the “real world.” We ourselves have been scrutinized more than once by a board member and by a supporter of the board’s levy decision, with the question “Are you a teacher?” We are not teachers. Rather, we are community members who see a tight correlate between attracting and retaining an excellent faculty, which is not fungible, and fair open-minded negotiation with that faculty that is not agenda-driven.

Willowbrook revenues rise, expensive projects linger By DANNY CIAMPRONE dciamprone@shawmedia.com WILLOWBROOK – Revenue projections are hitting the mark, sales and eating tax are on the rise and the village of Willowbrook has adequate cash at hand, but officials are also preparing for large capital projects that need to be addressed within the next few years. Tim Halik, Willowbrook village administrator, recently presented to the village board the 2014-15 budget preview, which outlined revenue trends, capital spending and an overview of 2013-14 projects, to name a few. One of those projects for the 2014-15 fiscal year is a water tank re-painting project. The village currently has three above-grade water storage towers, which hold 4 million gallons of water. Halik said the oldest of the towers was painted in 1999 and the village hired an engineering firm to analyze

about $379,000 in 2009-10 to about $468,000 in 2012-13. The village hopes the soonto-be-complete construction of Chick-fil-A at Route 83 and Plainfield Road will boost places of eating tax for the village. Halik said he does not have a definite opening day, but officials told him the restaurant is scheduled for opening in the first quarter of 2014. “If you look at some of the numbers in neighboring towns in which there’s a Chick-fil-A, they do really heavy volumes, so we’re cautiously optimistic it will be positive influence in our revenues,” he said. A citizen survey was mailed out to 1,000 random residents in July with 224 responding. According to the survey, 99.1 percent were “satisfied” or “very satisfied” with quality of life in Willowbrook. In regard to what developments were most desired in town, restaurants and theaters ranked the highest, according to the survey.

HINSDALE – Declaring Hinsdale Police Department’s participation in Illinois’ annual Drive Sober or Get Pulled Over drunk driving crackdown and Click It or Ticket campaign a success, the Hinsdale Police Department announced it issued 152 citations during the enforcement period that ran from Nov. 18 to Dec. 1. Police reported four drunk driving arrests, 46 citations for no seatbelts, one citation for a child safety seat violation, three driving on a suspended license arrest, eight citations for no insurance, 45 citations for speeding, one person was arrested for drugs and 44 citations were issued for other violations to the Illinois Vehicle Code during the enforcement period.

CLARENDON HILLS – Changes were officially made Dec. 5 to the intersection of Chicago and Middaugh avenues in Clarendon Hills to improve safety for pedestrians. Now, pedestrians pushing the “walk” button will halt all vehicular traffic in all directions while they cross. The village of Clarendon Hills and Community Consolidated School District 181 worked in partnership to investigate changes to the stoplight and signage at several intersections along Chicago Avenue. A study was conducted recently to see if changes needed to be made to the intersection after a 17-year-old driver hit a boy while turning left from southbound Middaugh to eastbound Chicago Avenue in September.

DARIEN – The Darien Lions Club is planning for its 39th annual food basket program. Last year, with the support of several local businesses, organizations and schools, the club provided hams, turkeys, dairy products, produce and canned food along with gifts to 200 families in Darien and nearby communities. Cash donations will be used to purchase food supplies for the project. The cost to sponsor a local family is $75 and checks can be made payable to the Darien Lions Club Foundation, a qualified 501(c)(3) organization. Park district offers ice skating, sledding CLARENDON HILLS – The Clarendon Hills Park District offers both outdoor ice skating and sledding throughout the winter months, depending upon weather conditions and other factors. There are ice rinks available

at both the Hosek Park and Prospect Park tennis courts, which may be open and serviced with lights until 10 p.m. each night. When the rinks are open, the main gate will be unlocked and an “open” sign will be posted near the rink. Lighting systems will operate with the push of a button, which is operational after dark. Interior decorating tips for the holiday season: repurposed, sustainable and sparkly

(BPT) - This year’s holiday season is taking on a decidedly modern twist, with an emphasis on recycling and repurposing old decorations, utilizing sustainable decor, and adding sparkle to complete the look. Shari Canepa, American Society of Interior Designers (ASID), member, LEED Green Associate, and a member of the interior design faculty at The Art Institute of California - San Francisco, a campus of Argosy University, says that sustainability begins with the icon of Christmas: the Christmas tree. “It can no longer be artificial or cut. Bring a potted tree into your home with the intention of planting it after Christmas in the yard. The idea is to save a tree and plant a tree, giving a gift to nature after Christmas.” Canepa recommends creating a new focal point in the public area of your home to reinforce the spirit of the season. “You can do this with a tree, wreaths, special seasonal decorative accessories or lighting. Shifting the focal point changes your psychological relationship to the room.” To design a new focal point, Canepa suggests an arrangement of various sized potted trees that can be conveniently moved. Create a mini forest of varying sizes and heights and decorate with lights and ornaments. “Supple evergreen branches wrapped around a stair banister with or without lights is also a nice addition.” To continue the sustainable trend, utilize energy-friendly LED lights around pictures, ceiling moldings, desk railings, in interior flower arrangements or on door casings. “Sophisticated or elegant interiors move toward white lights while energetic, youthful or modern themes make use of the color option. These energy saving lights make using lots of sparkle for Christmas guilt-free,” Canepa says.

Modernize the holiday by choosing a salmon and chartreuse color scheme over traditional red and green, mentions Canepa. “If this part of the color wheel leaves you flat, use the symbols of Christmas like candy canes, reindeer, stars, pinecones, stockings, candles and balls - but make sure they are other hues than red and green. Add white, lots of white, which adds pop.” Silver, gold and mirrored surfaces are also appropriate and modern, as are neutral colors such as white, gray and beige when combined with shiny materials. “Silver is the metallic accent that ties [this year’s holiday] colors together,” says Ann Durkin, part-time adjunct faculty professor of Interior Design at The Art Institute of Phoenix. Durkin adds that this holiday season marks a shift toward textures that express warmth through materials - such as wood, suede and burlap. “There is a strong desire for more touchable handmade or nature-made objects with a modern twist.-This can be an embroidered or knitted pillow covers, textured rugs or a burlap tree skirt.”

She advises holiday decorators to keep things simple and to showcase special pieces such as handmade ornaments. “There is no need to buy new decorations every year.-But don’t let the old decorations drive your design for the space.”-Be selective in how you will re-use them. Durkin says that updating old ornaments can be as simple as repainting them with matte silver paint and affixing silver beads with a sheer silver bow. Old ornaments may also be re-covered with fabrics such as burlap, to give an earthy hand-made appearance.-”This way you can still preserve the original look of the ornament, if it makes sense to use it again in the future. Think of it as a slip-cover for your ornament. “The overall idea is to have fun and re-use existing decorations as much as possible by reinventing them,” Durkin states. The key to this holiday season’s decorating: keeping things simple yet chic while matching your personal style. “Create a timeless ensemble which could extend beyond the holiday season and be used as the basic foundation for your interiors throughout the year,” says Durkin.

Tasty pheasants, Christmas presents, countrysides covered in snow.” As exemplified by this holiday hit by Henry Sanicola, Frank Sinatra and Dok Stanford, holly and mistletoe are an integral part of holiday imagery and tradition. Holly is used to adorn a home in green and red finery alongside evergreen boughs and wreaths. In addition, it has become customary to hang a bouquet of mistletoe under which people are encouraged to share a holiday kiss. While these elements of celebrations are now incorporated into many of the secular and religious components of Christmas, they have very different origins.

Holly

Holly has been used since the days of the early Pagans as a decoration for midwinter festivities, when it was brought into homes to keep evil spirits away. The ancient Romans also believed that holly prickles drove away evil spirits, and it held a place of honor at December festivals dedicated to the god Saturn. To avoid persecution during the Roman pagan Saturnalia festival, early Christians would participate in the tradition of hanging evil-repelling holly on their homes to appear like the masses. Eventually as the number of Christians grew, the tradition became less of a pagan one and more associated with Christians and Christmas. Some people have inferred that holly and its prickly edges is symbolic of the crown of thorns Jesus wore at his crucifixion, with the red berries representing blood.

Mistletoe

Mistletoe was once held sacred by the Norse, Celtic Druids and North American Indians. It is actually a parasitic plant that grows on a wide range of host trees. Heavy infestation can dwarf the growth and kill these trees. In cultures across pre-Christian Europe, mistletoe was seen as a representation of divine male essence (and thus romance, fertility and vitality). The plant also was thought to be a symbol of peace, and anyone standing below it should receive tokens of affection. When enemies met

beneath mistletoe, they had to lay down their weapons and observe a truce until the next day. This is how the tradition of kissing under the mistletoe likely began, and why a ball of mistletoe is now hung in homes during Christmas, a season of peace and affection. Homeowners who hang mistletoe and holly around their homes during the holiday season should be mindful of pets and youngsters around the plants. Mistletoe and holly are considered to be moderately to severely toxic, and ingesting the leaves could be dangerous. Therefore, keep these plants away from curious hands. Mistletoe is commonly hung up high, which should make it less problematic, but holly should be hung high as well. Now largely associated with Christmas celebrations, holly and mistletoe were once part of pagan rituals and ancient superstitions.

Here’s a recipe that shows off the vibrant flavor of Vietnamese cinnamon: Poached Cinnamon Cheese Pears 4 large pears 3/4 cup pear juice 1 tablespoon honey 1 teaspoon vanilla extract 1 cinnamon stick 2 tablespoons golden raisins 4 ounces softened cream cheese 1/4 teaspoon Vietnamese cinnamon powder 3 tablespoons slivered almonds Slice pears in half lengthwise and core. Place in a saucepan. In a small bowl combine juice, honey, vanilla extract, cinnamon stick and raisins; pour over the pears. Cover and simmer about half an hour, until pears are just tender. Place pears on a serving platter. Blend together cream cheese, leftover cooking liquid and cinnamon powder. Spoon some of the mixture atop the center of each pear, sprinkle with almonds, and serve. (BPT) - Cinnamon may be the world’s most popular baking spice, but all cinnamons are not created equal, and in the foodie world, Vietnamese cinnamon has emerged as the most prized of the bunch. The bunch, by the way, includes an array of cinnamons and cassias, all from evergreen trees of the Cinnamomum genus. Some are from Indonesia, others from China, Sri Lanka or Mexico. Dark reddish/brown and lushly aromatic, Vietnamese cinnamon is favored for its distinctly sweet, peppery, spicy flavor. Combine milk and 1/4 cup butter in a small saucepan and heat until butter melts. Pour into a large bowl and stir in oats. Let stand about 10 minutes.

Sprinkle yeast over warm water, and let stand 10 minutes or until bubbly. Add eggs, vanilla, sugar, salt and yeast mixture to oat mixture. Stir well.

Stir in whole-wheat lour and 2 cups allpurpose lour, 1 cup at a time. Turn dough out onto a clean, loured surface; knead in remaining all-purpose lour, 1/4 cup at a time, until smooth and pliable. Knead about 6 minutes. Spray a large bowl with cooking spray and place dough in it. Cover and let rise 1 to 1 1/2 hours, until doubled in bulk.

To prepare the illing, combine cranberries and sugar in a small saucepan. Cook, stirring constantly, until sugar melts and cranberries start to pop. Remove from heat and set aside.

Coat two 9-by-5-by-3-inch loaf pans with cooking spray. When the dough has risen, punch it down; divide into two equal parts.

Preheat oven to 400 F. Place olive oil and butter in a heavy ovenproof skillet (or a well-seasoned iron skillet). Heat over medium heat until butter melts. Add green onions, bell pepper and garlic; sauté about 3 minutes. Scatter potatoes over all. Cover and cook until potatoes are fork-tender, 10 to 12 minutes.

Melt remaining 1/4 cup butter. Roll out one portion of dough into a 12-by-16-inch rectangle on a loured surface. Brush with 2 tablespoons melted butter. Sprinkle on 2 tablespoons cinnamon-sugar, stopping 3/4 inch from edges. Spread with half the cranberry illing, stopping 3/4 inch from edges.

Roll dough up, starting on one of the short sides. Pinch seams together at both ends; tuck ends under slightly. Place loaf, seam side down, into prepared pan. Repeat for second loaf.

Whisk together eggs, cream, thyme, oregano, salt and pepper. When potatoes are tender, pour egg mixture evenly over top of potatoes. Jiggle pan slightly to make sure eggs run down between potatoes. Sprinkle cheese evenly over top of eggs. Place pan in oven and bake 8 to 10 minutes, until eggs are soft-set and cheese is melted. Remove from oven. Let stand about 3 minutes. Cut into wedges and serve with slices of crusty buttered bread and jam. – Teresa Blackburn, Relish

Place turkey and cheese on one slice of bread. Top with another slice of bread; grill in panini maker or pan until crispy and browned.

Preheat oven to 300 F. Coat bottom only of a 9-inch square pan or 9-inch tube pan with cooking spray. If using a tube pan with a removable bottom, wrap outside of pan with foil to prevent leaks.

Combine lour, sugar, ginger, cinnamon and nutmeg in a large mixing bowl. Using a pastry blender, cut in butter and shortening to make a crumbly mixture. Scoop out ? cup and set aside.

Add egg and molasses to lour mixture and stir. Combine buttermilk, baking soda and salt. Add buttermilk mixture to lour mixture; stir well (there will still be a few lumps). Pour into prepared pan; sprinkle reserved lour mixture evenly over top.

Bake 30 minutes. Increase temperature to 350 F and continue baking 18 to 20 minutes, until toothpick inserted in center comes out clean. – Crescent Dragonwagon, for Relish

maple-pumpkin cheesecake pie serves: 10

prep: 55 mins

for the crust: • 1 cup all-purpose lour • 1/2 cup yellow cornmeal • 2 T sugar • 1/4 t salt • 7 T chilled unsalted butter, cut into small pieces • 3 to 4 T ice water for the ﬁlling: • 12 ounces cream cheese, softened, divided • 3/4 cup sugar • 3 eggs • 1/4 cup half-and-half • 2 T all-purpose lour • 1 (15-ounce) can solid pack pumpkin

cook: 50-60 mins

Mix lour, cornmeal, sugar and salt in the bowl of a food processor. Add butter and pulse until incorporated. Add water, 1 tablespoon at a time while pulsing, until ball forms. Remove and wrap with plastic wrap. Chill 30 minutes.

Roll dough out on a lightly loured surface with a lightly loured rolling pin into a 14-inch diameter round. Fit into a 9-inch pie pan, and crimp excess dough around the edges of the pan. Chill at least 15 minutes.

Preheat oven to 350 F. To prepare the illing, combine 8 ounces cream cheese, sugar, eggs, half-and-half and lour in a bowl. Beat with an electric mixer on medium speed until smooth. Remove 1/3 cup of the mixture and

transfer to a separate bowl; reserve. Add pumpkin, cinnamon, ginger, allspice, salt and nutmeg to the egg mixture; beat until smooth.

To the reserved egg mixture, beat in remaining 4 ounces of cream cheese and maple syrup.

Pour pumpkin mixture into the pie crust. Spoon little dollops of the maple mixture all over the top and gently swirl it through (using a fork handle, or a chopstick) the illing.

Bake on a baking sheet, 50 to 60 minutes, until illing is just set. Remove from oven and cool on a wire rack 1 hour. Chill in refridgerator 3 hours before serving. – David Bonom, Relish

• 1 egg, beaten • 1 cup sugar • 3 cups all-purpose lour • 1 T baking powder • 1/2 t salt • 1 ounce almond extract

cook: 30-40 mins

• 3 T cream • 1 cup unsalted butter, room temperature • Swedish pearl sugar or cake decorating sprinkles

Preheat oven to 350 F. Combine butter and granulated sugar in a large bowl. Using a mixer at medium-high speed, beat until light. Add lour, baking powder and salt; beat well. Add almond extract and heavy cream. Mix well.

Turn dough out and work into a ball. Cut into four portions and shape each into a ball. Flatten each ball into a 4-inch circle. Refrigerate 10 minutes.

Place dough rounds on a baking sheet. Brush tops with beaten egg. Sprinkle pearl sugar on top. Bake 20 minutes. Remove from oven. Decrease temperature to 300 F.

Cut each round into 10 slices, then cut each slice in half (except the short ends). Return to oven and bake 20 minutes for crispy cookies or 10 minutes for chewier cookies. – Classic Relish recipe, courtesy Erica Schultz

• 1 3/4 cups powdered sugar • 1/2 cup Dutch process cocoa (made with alkali) • 2 t cornstarch

Preheat oven to 300 F. Mix together sugar, cocoa, cornstarch and salt. Gradually add egg whites, stirring with a spoon until mixture forms a dough. (Mixture should be thick enough to form into balls; if not add more powdered sugar and cocoa). Add nuts; mix well.

Form dough into 15 balls. Place on a parchmentlined cookie sheet. Bake 16 to 19 minutes, until glossy and crackled. Remove from parchment paper and place on a wire rack to cool. – Tamar Haspel, Relish

Place dried date pieces and golden raisins in a food processor. Add dried cherries, apricots, white chocolate chips and walnuts. Pulse several times to chop coarsely. Add orange juice and pulse until mixture holds together.

• 1 1/2 cups sugar • 1 t cinnamon • 1/2 t salt • 3 T butter, cut into small pieces • Cinnamon sugar

Preheat oven to 375 F. To prepare the crust, mix lour and salt in a large bowl. Cut in shortening using a pastry blender or two knives until mixture resembles coarse meal. Add ice water 1 tablespoon at a time. Stir gently and gather into two balls, one about twice as large as the other.

Roll out larger ball on a lightly loured surface until it is large enough to cover the bottom and sides of a 9-inch springform pan, with about 2 inches of overhang. Roll the smaller dough ball into a 9-inch circle.

To prepare the illing, combine apples, lour, sugar, cinnamon and salt; toss well. Spoon into prepared crust. Sprinkle pieces of butter on top. Place top crust over illing. Fold overhang evenly around top crust. Cut 10 to 12 slits in top crust. Sprinkle with cinnamon sugar if desired. Barone’s builds buzz with pizza prowess GLEN ELLYN – A serious craving for pizza one recent Sunday afternoon prompted us to try someplace new, Barone’s of Glen Ellyn, which turns out to be a community institution steeped in the village’s history and in the noble art of the American pie. Founded in 1971, the restaurant has two dining rooms, decorated with photos tracing the history of Glen Ellyn, with an homage to earlier identities such as Danby and Prospect Park written prettily across faux-finished walls. Warmly greeted as we were directed to our table, we were treated to one of several booths with a digital frame shuffling through a display of historic photographs, which proved great fun and a conversation kick-starter. The attractively designed space is conducive to conversation, even as the rooms began to fill shortly following the daily mid-afternoon opening. Looking for an interesting brew, my dining companion found Mama’s Little Yella Pils, which he recommends for its crisp, clean flavor, and I enjoyed a generously poured house cabernet. Cocktails are available, along with a variety of wines and craft beers. While we studied the menu, which extends to Italian dishes and other staples in addition to pizza, we enjoyed thick slices of crusty bread accompanied by a petite carafe of olive olive for dipping and a shaker of Parmesan. While good enough to be homemade, the bread turned out to be from Turano Baking Company of Berwyn. We opened with a delicious wedge salad, with ultra crisp iceberg lettuce smothered in the house bleu cheese dressing and well sprinkled with diced tomato and crunchy, flavorful bacon for zesty contrasts in texture and taste. This alternate thin crust with its mildly tell-tale sweetness means the welcome end of deprivation for pizza lovers trying to avoid gluten. My companion went for the stuffed pie, with fresh spinach, mushroom and bacon.

“While not classic Chicago style, it’s a tasty suburban twist,” he said. And while he ordered a “small” pizza, it provided eight massive slices – and ample leftovers for lunches. The service was terrific, and we liked being able to help ourselves to water refills with a wine-bottle-cum-watercarafe as we lingered over the meal. The menu ranges from pasta and Italian specialties to barbecue ribs, burgers, soups

and salads, with gluten-free pasta also available. Off the dining rooms is a spacious entry area that accommodates pickup and delivery services, and houses a freezer case of pizza and other dishes that folks can take home to finish cooking in their own kitchen. Another case holds tempting desserts, ideal to take along if you haven’t left enough room at dinner. Also sold are package wine and beer, candy, ice cream and ices.

As we walked to its parking lot, we spotted Barone’s playroom for kids, featuring toys and video games with several rapt young people – another thoughtful touch at this venerable family restaurant.

Are the Browns the cupcake the Bears need? Hub Arkush

With the Bears desperately needing to close out the season with three more wins to keep their hopes of winning the NFC North and a trip to the playoffs alive, the Cleveland Browns would appear to be exactly the cupcake the doctor ordered. After all, the Browns are 4-9, mired in a four-game losing streak, and stuck in last place in the AFC North. Ah, but looks can be deceiving. The Bears have faced three other lastplace teams this season in the Vikings, Redskins and Rams, and their record is 1-3 against them, with a loss to each. While the Browns record is weak, they do own victories over the Bengals and Ravens, and they actually had a 26-14 lead last week in New England with only two minutes remaining before the Patri-

ots made a miraculous comeback with the help of some questionable officiating. This is a team the Bears absolutely cannot afford to look past if they don’t want to risk all the ground they just made with Monday night’s win over the Cowboys. The good news for the Bears is the Browns’ greatest struggles are in the area of the Bears’ greatest challenge. While the Bears are still dead last in the NFL against the run, the Browns are only 28th in the NFL in rushing and 27th in average gain per run. That is in large part due to their early season trade of Trent Richardson to the Colts, which may have netted them an extra first round draft choice in the 2014 draft, but left them with the aged Willis McGahee, who is averaging only 2.7 yards a carry, and youngsters Chris Ogbonnaya and Fozzy Whittaker. Cleveland is better throwing the football, ranking 10th in passing yardage, but they’re only 28th in average gain per pass and are 18th in interceptions and sacks allowed.

Part of the problem is the inability to keep quarterbacks healthy. Brian Hoyer had won the starting job before tearing up a knee and going down for the year, and former Bears’ quarterback Jason Campbell was playing very well with an 88.0 passer rating before battling a concussion for several weeks. Campbell did make it back last week to throw for 391 yards and three touchdowns with no interceptions at New England, the bulk of it going to Josh Gordon. Gordon is enjoying an All-Pro type season with 71 receptions, 1,400 yards and eight touchdowns. He will pose the biggest challenge for the Bears’ defense, Tim Jennings and Zack Bowman in particular. Tight end Jordan Cameron also is extremely dangerous. He’s caught 72 passes for 825 yards and seven touchdowns on the year. For all their prowess in the passing game, the Browns still average only 19.8 points a game, good for 27th in the league is scoring. The Browns’ defense has been ex-

cellent most of the season in keeping opposing offenses off the field, ranking seventh in total defense, fourth against the run and second in average yards per rushing play. They are eighth against the pass, and third in average yards per pass play. Big plays are the Browns defense’s Achilles heel, though, as it’s only 24th in interceptions, 14th in sacks and 19th in points allowed. Paul Kruger and rookie first-round draft pick Barkevious Mingo are their best pass rushers. D’Qwell Jackson is the club’s leading tackler from the inside linebacker spot, and Phil Taylor and Ahtyba Rubin do a really nice job up front at nose tackle and the five techniques, respectively, in the Browns’ base 3-4 defense. If the Bears’ offense plays like it did against the Cowboys, it’ll be an extremely tough out for Cleveland. But if the Bears can’t pressure Campbell in the pocket, he, Gordon and Cameron will give the Bears another shootout like all the other last-place clubs they’ve faced.

have alternated wins and losses, handily beating Glenbard North and Willowbrook and falling to Glenbard West and then Oak Park-River Forest in overtime. During the game against OPRF on Saturday, Phillips scored a career-high 23 points on 8-of-10 shooting. Larry Motuzis added 11 points for the Hornets, who entered overtime with the game tied 37-37 but were outscored 16-6 in the extra session. The defending West Suburban Silver conference champion Red Devils posted an emphatic 59-35 victory over Downers Grove North on Dec. 6 before dropping a tightly contested game to York the next night. The Dukes were last season’s runner-up in the conference. Junior forward Matt Rafferty was held to his lowest point total of the season during the rout over Downers Grove north, but the 6-foot-7 forward bounced back nicely, netting 15 points and grabbing seven rebounds in a 34-30 loss to York. Points were at a premium in the match featuring the reigning top two teams in the conference. Neither squad could pull away in the second half, as Central shot 27 percent from the field while York connected on 31 percent of its shots. Rafferty gave the Red Devils a chance to win in the waning minutes of the fourth quarter, hitting a 3-pointer to put Central up 30-29

HINSDALE – Hinsdale Central’s girls basketball team was loving life during a season-opening six-game winning streak. Two recent losses were a bit harder to stomach. The Red Devils – whose offense carried them to those six straight wins to start the season – stumbled slightly in the last week, losing to Benet and conference foe Lyons Township over a three-game span. It’s hard to fault the offense, which has averaged 57.7 points in the last four contests, but the defense has given up 60 or more points both losses this season. However, head coach Tom McKenna is not pushing the panic button quite yet, instead trusting his senior-laden roster to overcome the season’s first wave of adversity. “These girls have been here

before,” McKenna said. “We have a lot of seniors on this team who have shown a lot of poise in the past. We have a good team and I think we will continue to be competitive no matter who our opponent is.” Junior guard Gabrielle Rush continues to pace the the Red Devils’ offense. Rush scored 15 points during a 64-55 loss against Benet Dec. 5, then led all scorers with 29 points against Lyons Township on Tuesday.
