RIVERSIDE – On Dec. 19, the Riverside Board of Trustees approved new laws regulating taping, photography and commercial filming within the village at their regular board meeting. Recently, Riverside has been photographed and videotaped for film and TV shows, including ABC’s “Betrayal,” which filmed in the village in October. The village approved an ordinance requiring photographing or filming the village’s public space to turn in an application before the event. The application will be used to protect village property and citizens. The fees were updated to reflect the current market. The fees would cover the use of village security and equipment to block off streets, control traffic and watch equipment. However, companies may use their own security. Trustee Joseph A. Ballerine said he would not approve the ordinance if the board was regulating photography or videography in private citizens’ homes. “We’re not going to drag this out; we want to know. We want them to notify us legally so that we know in the event that we get any calls,” Village Manager Peter Scalera said. In addition to having the proper paperwork, trustees also were interested in getting

LA GRANGE – Hinsdale South High School principal Brian P. Waterman was named the new principal of Lyons Township High School for the 2014-15 school year by the district’s board of education Dec. 16. Waterman, who was selected from a group of 50 applicants and eight who received interviews, will replace David Franson, who is retiring June 30.

I realized the families that I saw this night, owed their lives to these Soldiers who were willing to fight. Soon round the world, the children would play, and grownups would celebrate a bright Christmas Day. They all enjoyed freedom each month of the year, because of the Soldiers, like the one lying here. I couldn’t help wondering how many lay alone, on a cold Christmas Eve in a land far from home. The very thought brought a tear to my eye, I dropped to one knee and started to cry. The Soldier awakened and I heard a rough voice, “Santa don’t cry, for this life is my choice.” “I fight for freedom. I don’t ask for more,” “My life is my God, my Country, my Corps.” The Soldier rolled over and drifted to sleep, I couldn’t control it, I continued to weep. I kept watch for hours, so silent and still, as we both shivered from the cold night’s chill. I didn’t want to leave, on that cold, dark night, this Guardian Of Honor, so willing to fight. Then the Soldier rolled over, with a voice soft and pure, whispered, “Carry on Santa.....It’s Christmas Day....., All is secure.” One look at my watch, and I knew he was right, Merry Christmas my friend....and to all a Good Night.

He held the same position at Glenbard North High School before taking over at Hinsdale South. “LT is thrilled with our selection,” Superintendent Timothy Kilrea said in a release. “Feedback from those on each of the interview teams to discussions with students at the site visit centered on several consistent messages – Dr. Waterman is student focused, well respected by teachers, appreciative of all parents, approachable and fair. I look forward to welcoming him to the LT family.” Waterman, 39, said he prides himself on getting to know students, not an easy task for an administrator with a schedule full of meetings and other obligations.
“You have to do it the right way,” Waterman said. “I think a really critical time is during passing periods throughout the day. I also think attending athletic events and extracurricular activities is a great way to connect with students.” Waterman and his wife, Julie, live in Downers Grove with their three sons: Nathan, 10; Justin, 8; and Andrew, 6. Waterman has already gotten to know a number of people and groups at LT. “I’ve met with every stakeholder group throughout the interview process … and everyone’s just been so welcoming,” he said. “They just have such a great culture of success over there.” Waterman received degrees form Eastern Illinois University, North Central College and Aurora University. His doctoral dissertation was related to the value that technology plats in a comprehensive suburban high school. Waterman signed a oneyear contract with a salary of $163,120.

BROOKFIELD – Two local Girl Scouts decided to take action after two recent natural disasters, one on the other side of the world and the other close to home. Lyons Township High School freshmen Anastasia Quercia and Elizabeth Strzelczyk of Brookfield’s Troop 58157 first decided to take action after a devastating typhoon hit the Philippines in November. They collected money on local streets and sent it to UNICEF to help chil-
dren in the Philippines affected by the storm. About a week later, after a deadly tornado hit Washington, Ill., Quercia and Strzelczyk were at it again. The girls spent two Saturdays raising money in Brookfield and La Grange and quickly wound up with $150, collected $1 or a coin at a time. “It’s important to actually know I can make a difference for someone in need,” Quercia said. Quercia and Strzelczyk are currently exploring service projects to take up in the future.

DIXON – Shaw Media announced Monday that it has agreed to acquire the assets of The Herald-News in Joliet from Sun-Times Media. The purchase is expected to close during the first week of January. Terms of the deal were not disclosed. The Herald-News has been serving Joliet, Will County and Grundy County communities for more than 150 years and will continue as part of Shaw Media’s newspaper group. “We are excited to bring The Herald-News into our es-

A Westchester man sentenced to 20 years in prison for a 2010 residential burglary in Riverside had his conviction overturned Dec. 17 by the Illinois Appellate Court, which ruled that the judge made an error in her instructions to jurors before they deliberated. On Sept. 9, 2010, police found Martin J. Canonico, 50, of the 10600 block of Essex Street, Westchester, in a backyard in the 300 block of Addison Road while searching for a person who broke into a residence in the 200 block of Addison. A woman at the residence at the time of the burglary had her leg injured during the incident and was treated at a local hospital.

A jury convicted Canonico of residential burglary, and he was sentenced to 20 years in prison. Canonico, who had 15 prior convictions including residential burglary, theft and assault, is still in custody at the Illinois Department of Corrections. “It is disappointing that the Appellate Court would remand this case back before trial,” Riverside Police Chief Tom Weitzel said in a news release on Wednesday. “My officers spent three days collecting evidence, taking statements and preparing the case for bond hearing. “Additionally, I had seven officers called to testify at the trial. It is apparent that now the state will have to re-try Mr. Canonico based on the Appellate Court’s decision.”

2013 in review as we look toward new year 2013 has been a very busy year for Cook County government. I am happy to report that we passed a balanced budget with nearly unanimous support and issued the final rollback of the Stroger sales tax that was killing local businesses. Moreover, Cook County finally has been able to get its fiscal house in order. Since taking office in 2010, President Toni Preckwinkle and our county board have been able to solve $1.2 billion in budget deficits, all without raising taxes. Some of the things I have worked especially hard on this year have been passing a Veteran’s Hiring Preference COMMUNITY amendment, cleaning up the VOICE scandal-plagued Medical ExJeff aminer’s Office, working to get an early Medicaid expanTobolski sion waiver that has saved county taxpayers $75 million this year alone, and reforming the appointment process for the Metra Board of Directors. One of the recurring themes I have learned while serving as your county commissioner is the struggle between competing interests in the city of Chicago and the suburbs. I believe suburban taxpayers pay more than their fair share and do not receive an equal proportion of county services. This year, I fought against a proposal to charge unincorporated county residents with a “special services assessment.” The logic behind the amendment was that these residents do not contribute as much in taxes and they should be taxed more. These residents see very little in the way of county services, and I believe any additional taxes would be unjustified. I am happy to report the measure failed to pass. Similarly, I have fought against the horse rider’s fee that is charged to individuals who ride in our forest preserves. I believe these trails should be free and open to everyone. We pay our fair share in taxes for the forest preserve already and should not be charged an additional fee to use them. Finally, the board currently is discussing an amendment to the Solid Waste Ordinance that charges more fees for garbage hauling in the suburbs, but exempts the city of Chicago. This fee undoubtedly will be passed on to suburban residents. I do not think it’s fair to make our suburban taxpayers shoulder this additional fee, and I do not plan on voting for the measure. It has been an honor to serve as your Cook County Commissioner, and I wish everyone a joyous holiday season.

A big thumbs up to the students and adult volunteers who have come together at Hauser Junior High in Riverside to collect a tremendous amount of donated food. As of Dec. 18, the group had collected 40,000 cans of food for donation to the Salvation Army and the Riverside Food pantry. That is just amazing. Keep up the good work, folks. A thumbs up to the Riverside Police Department on the numerous awards issued to its officers recently through the Cook County Sheriff’s awards program. Officers were honored for their service to the community and for their heroism. We write about their accomplishments and struggles frequently in the paper, but it’s nice to shine a light on the recognition they all deserve keeping our community safe. Thanks guys.

Like most kids, I’m on break from school for the holidays. Most of my friends are having parties, playing video games and eating junk food. But not me! My dad and mom are making me do chores around the house. My dad signed me up for a class at the library. He’s making me do homework to prepare for it. GRACE VACULIK Grace DeVeno Vaculik, age 92, of Brookfield, passed away Sunday, December 8, 2013, at Elmhurst Memorial Hospital. She was employed as a housekeeping attendant for 15 years by Berwyn MacNeal Hospital. She was a member of many clubs, including the Seniors club of Brookfield and LaGrange, as well as TOPPS and Womens club of St. Barbara's. Her hobbies were writing to her friends and family, and spending time with her nieces and nephews. She is survived by many nieces and nephews. She was preceded in death by her husband, Rudolph Vaculik; her parents, Salvatore and Theresa DeVeno; her sisters, Anna Marie DeStefano and Felicia Galasso; and her brothers, August and Thomas DeVeno. Services were held at St. Barbara Church in Brookfield, on Thursday, December 12, 2013. Interment, Queen of Heaven Cemetery, Hillside, IL. Old Town Pour House comes to Oak Brook OAK BROOK – Old Town Pour House proclaims beer a staple of life. The restaurant-bar backs that up once you step inside the new Oak Brook eatery. Nestled in an expansive storefront underneath Neiman Marcus inside the upscale Oakbrook Center, Old Town Pour House gives shoppers a cozy wind-down over a cold brew and American cuisine. The restaurant opened on the east side of the shopping mall in late November, making it Old Town Pour House’s second location, as the owners ventured west from their popular Chicago location. The exterior screams modern with its bold signage and contemporary outdoor fireplaces. Inside, it’s the same story, with a mix of tables and booths surrounding a bar with a good number of flat-screens. A companion and I dined at Pour House on a recent holiday shopping night. Picking up the menu, we discovered that beer selections practically outnumber food options three to one – a good thing in my book. From ciders to lagers to wheats, there are plenty of unique craft selections to pair with your meals. The full bar boasts about 90 taps. My date and I kicked off the experience with a pair of tasty appetizers – the Firecracker Rolls under the “Bar Bites” portion of the menu, and the Truffle Mac N Cheese under “Shareables.” Our waitperson assured us both sections of the menu are essentially shared plates. The Firecracker Rolls are a spicy mix of Cajun chicken, a vegetable medley and avocado cream. It’s definitely a spicy dish – have a beverage handy – but the avocado cream was a nice cool-down. The Truffle Mac N Cheese was the favorite dish of the night at our table. With Parmesan breadcrumbs and black truffle, accented by smoked bacon tidbits, it was anything

For our entrees, my date, readying for some post-meal shopping, opted light for the Pour House Chopped Salad. The salad is a fresh-made combo of marinated grilled chicken, romaine lettuce and a host of other ingredients. The sweet-and-sour tarragon dressing was a great touch; you may want to ask for extra. I opted for the Pour House Burger. The Angus beef patty was topped with aged white cheddar and a pair of beer-battered onion rings on a Portuguese bun. It was a solid burger complemented nicely with olive-oil-parsley fries. Other menu options extend to five additional salad selections, including the Seared Tuna Nicoise Salad and the BBQ Smoked Chicken Salad, a trio of soups and five dinner entrees ranging from Miller Farms Chicken to Cedar River Strip.

Will it be Rodgers or Flynn behind center? Hub Arkush
This week, we have two matchups to preview: The Bears versus the Packers with Aaron Rodgers at quarterback, and the Bears versus the Pack with Matt Flynn behind the wheel. My best guess is it will be Flynn irrespective of what’s at stake. Reports from late last week are that Rodgers never was close to being medically cleared, so it’s hard to imagine he will make that much progress for the Bears game. The only thing that’s certain is we won’t know until late in the week, if before Sunday at all. With Rodgers, you’re talking about the best quarterback in the game, and one of the best ever. The Packers are capable of beating you with the pass or the run, and Jordy Nelson, James Jones, Jarrett Boykin and, perhaps,
even Aaron Quarless all become weapons you have to scheme for. If it’s Flynn at quarterback, the Bears will focus their attention on stopping Eddie Lacy, James Starks and Nelson, and then trust individual defenders to make plays against the rest while the defense tries to force Flynn to make a play to beat them. Don’t think for a minute that Flynn can’t beat you. He’s very comfortable in Mike McCarthy’s offense and just fine reading defenses, going through his progressions and knowing when to quit on a play to fight another day. But he has nowhere near the cannon Rodgers does nor can he command that kind of accuracy. Keep Flynn in third-and-long, and he’s unlikely to beat you. The Packers are top five or top 10 in almost every offensive category, regardless of the quarterback, except avoiding interceptions and allowing quarterback sacks. There, it makes a difference who’s under center. Rodgers has thrown four intercep-

tions and has been sacked 18 times in 251 attempts. Flynn, Scott Tolzein and Seneca Wallace have thrown 10 interceptions and have been sacked 24 times in 280 attempts. Flynn has seven of those picks and 17 sacks in 166 attempts. Regardless of which quarterback it is, the story of this game for the Bears’ defense figures to be their 32nd-ranked run defense versus Lacy and Starks. With Flynn at quarterback, the Bears will pack seven, eight or even nine in the box on most plays. Lacy is dynamic at getting to the second level, but not a huge threat to outrun anyone in the secondary or go all the way. Defensively, the Packers have been a huge disappointment this year and are more likely to be the reason whether the Bears win the NFC North than Rodgers’ injury. After their best outing of the year versus Atlanta in Lambeau three weeks ago, Dallas and Pittsburgh have scorched them the past two weeks. They had no answers
for the Steelers’ Le’Veon Bell last week, and Matt Forte should have a big day. After a fast start to the season, B.J. Raji and Ryan Pickett have been ineffective up front, and the loss of Johnny Jolly for the season with a neck injury has been huge as he was playing the best football of his career. Clay Matthews and Nick Perry are back from injury at the outside linebacker spots, but neither is rushing the quarterback the way they are capable, and A.J. Hawk and Brad Jones inside are not as stout as they need to be against the run. Tramon Williams and Sam Shields have been inconsistent, at best, on the corners, making the occasional big play but struggling in coverage often. That matchup with Brandon Marshall and Alshon Jeffery is potentially another big edge for the Bears. Morgan Burnett and M.D. Jennings are serviceable safeties, but Burnett has failed to make the leap to perennial Pro-Bowler the Packers envisioned.

Bushrod: That’s not bad. In college, that’s not bad. But the bad thing is we only got paid once a month, which sucks for teachers. Musick: At that point, were you thinking about teaching if football didn’t work out? Bushrod: Honestly, I really didn’t know. Probably not teaching in school, but coaching, being around kids. That situation made it neat because it wasn’t like I was up there giving long lectures or anything, but it was being around the kids, seeing how they interact, and I was able to do it in all three phases of school: elementary, middle and high school. But mostly it was elementary school, because I was a young college kid. They pretty much just had me overseeing and giving the kids busy work and keeping them in line and all that stuff. Musick: So mostly you worked with kindergarten through sixth grade? Bushrod: For the most part, but I
would sit in for a couple high school classes, too. Musick: Were you all right with that? Some teachers prefer the older grades. Bushrod: (smiles) Yeah, you know, you’ve just got to keep them in check and figure out the things they can and can’t get away with. Because in high school, you get a substitute teacher, you try to take advantage of that. Musick: So what’s more difficult, being a substitute or blocking pass rushers? Bushrod: Oh, man. This sport is tough mentally and physically, but I wouldn’t change it for the world. If you can do this, you can easily teach a bunch of little kids. (laughs) But hats off to teachers, man. That’s not an easy job. [As a teacher], you have a responsibility to kids to try to put them on the right track. Whether they do it or not, it’s still going to be reflected on you, good or bad.

LAKE FOREST – Imagine being a sugar-filled 8-year-old with a nose for trouble. Today should be a great day for chaos. Today, you’ll have a substitute teacher. Jackpot. Then the door opens. In walks a mountain. It’s Jermon Bushrod, a 6-foot-5, 320-pound offensive lineman who is back in Virginia during his winter break from Towson University. Change of plans. Better behave, little man. Here’s our recent conversation with Mr. Bushrod, now the Bears’ left tackle: Musick: You once worked as a substitute teacher. What’s the story behind that? Bushrod: Honestly, it was more of like a college break job. At Towson,
we had like 45 days off for Christmas break, and I would go home and I would train, and I needed to find a job. I had an aunt who was a principal, so she helped me out and put me together with the right contact. I went through the whole process and they let me be a substitute teacher. It was neat, especially to the younger kids, to meet somebody so big coming into the room. They were kind of intimidated. They had a bunch of questions. Musick: What kinds of questions did they ask? Bushrod: Well, they knew I played football in college. You know how little kids are. They ask you all kinds of questions: Girlfriend? How big am I? How much do I weigh? You know, just normal kid stuff. Musick: Do you remember what you earned as a substitute? Bushrod: I want to say it was $80 a day. Musick: In college, that’s a lot of

Kincanon fully committed to program Bulldogs baseball star all in for hoops team this winter By DAN SANTAROMITA

dsantaromita@shawmedia.com RIVERSIDE – Will Kincanon starts at guard for the Riverside Brookfield boys basketball team and has been one of the team’s leading scorers. That almost didn’t happen. Kincanon, an ace pitcher for the RB baseball team, committed last spring to pitch for Middle Tennessee after high school. He wanted to focus all of his efforts into baseball and wasn’t sure he wanted to divide his time between two sports anymore. Turns out that feeling didn’t last too long. “During the summer for baseball, I talked to coach [Tom] McCloskey for a while and said that I didn’t think I was going to play [basketball],” Kincanon said. “But once open gym started to come around, I wanted to play.” When Kincanon changed his mind, he asked McCloskey if he could play. The coach simply asked for a full commitment from Kincanon. McCloskey received that commitment and the Bulldogs have reaped the benefits on the floor. Kincanon led the Bulldogs in scoring in four of the team’s first seven games this season. In a 65-62 win at Timothy Christian on Dec. 17, he led RB with 16 points, eight assists and seven rebounds. Kincanon can’t stay away from baseball, though. Once he finishes his school work and basketball practice, he still tries to do weight lifting or a throwing session to stay fresh with baseball. “Anything to keep the ball in my hands,” he said. “I just try to get all the work in I can

Kincanon will be anxiously awaiting the start of baseball in March, but until then, he will help the Bulldogs push for a 13th straight conference title. The winter sports season is still in its early stages, but it’s not too late to look back at some memorable achievements from the fall season. Riverside Brookfield had a number of standout athletes this fall, but none were as impressive as Mailin Struck. Struck won the Class 2A girls cross country state title in dominant fashion, and while her performance was unquestionably the best moment of RB’s fall season, there were plenty of other memorable accomplishments, listed in no particular order.

Mailin Struck was a Christmas present come early for the RB girls cross country program. Struck, a German exchange student, was a dominant runner the entire fall. She won conference, regional and sectional titles to put her among the favorites in the Class 2A state race. Once there, Struck left no doubt by winning the race by 29 seconds and recording the fastest time among girls from all three classes. Struck’s efforts helped the Bulldogs take 19th at state. She later went on to compete in regional and national races earlier this month. Struck placed 18th at the Foot Locker National Championships to cap off her sensational cross country season.

Veon makes state swimming for second time Sydney Veon highlighted a record-setting sectional meet for RB at Lyons Township. The Bulldogs came in fourth place at the 14-team meet and set two school records. Veon broke her own record in the 100-yard breaststroke to qualify for state in the event for the second straight year. She came in 52nd at state. Also at the sectional meet, Veon teamed with Dana Callanan, Julia Keller and Hannah Flynn for set a new school record in the 200 medley relay by three seconds.
4. Girls volleyball wins 20 matches The Bulldog girls volleyball team finished with a 20-16 record and made it to a Class
4A regional final before losing to Downers Grove North. RB was led by all-area selections in seniors Monica Kasper and Amanda Lelivelt and junior libero Natalia Gheewala. Coach Dan Bonarigo has helped build the program up as this fall marked the third straight year RB won 20 matches or more.
5. Boys runners win regional The girls cross country team wasn’t the only set of runners to enjoy success at RB. The boys team won its own regional in Class 2A. Senior Dan Curtin crossed the finish line first for RB and took second at the meet. Kevin Faje (fourth), Matt Sagan (fifth) and Kyle Georgopolous (sixth) also placed in the top 10. The next week at sectionals, RB ended the season with a ninth place finish.

Nazareth, Fenwick and St. Joseph all had success in various sports. Here’s a look at some of the best of those successes, listed in no particular order.
7. Ryan stars for Fenwick girls cross country Western Springs resident Olivia Ryan was an elite cross country runner this season. Ryan was third in both the regional and sectional meets. Once at state, Ryan took 22nd in the Class 3A state meet.

2. Roadrunner soccer wins first sectional The Nazareth boys soccer team had a trailblazing season by winning the first sectional in school history. The Roadrunners beat Lindblom and Hancock to advance to the Riverside Brookfield sectional. Once there, Naz beat Little Village 3-0 and won the final once Kennedy was forced to forfeit the match for fielding an ineligible player in the semifinal. They lost to eventual state champion Washington 2-1 in the supersectional. Chris Tovar and Mark Haraus were all-conference players for the Roadrunners.

The Huskies had a memorable regular season, Wes Ott going 12-0 before losing in the MAC Cham-
pionship Game to Bowling Green. NIU is still bound for the San Diego County Credit Union Poinsettia Bowl, where it will face Utah State, which lost the Mountain West title game, at 8:30 p.m. Thursday, televised on ESPN. Ott has been used as a reserve the past two seasons and talked about the upcoming bowl, Heisman finalist teammate Jordan Lynch, and Huskies’ attempted run at an undefeated season.
Santaromita: What are your thoughts on the season so far? Ott: The MAC game was a disappointment. The university and the team were pretty excited the whole season. We went 12-0 the whole season and now we’re just basically hoping to send the seniors off on a high note [in the bowl game].
Santaromita: What’s different in the preparation for a bowl game and the regular season? Ott: The first part of the bowl practices are mainly
geared toward the freshmen and the younger players on the team that don’t get much playing time. Once it gets close to the bowl game, we’ll get more into preparing for Utah State.
Santaromita: Is it nice to be done with finals and simply focus on football? Ott: It’s just football the whole time. It’s your only focus. Of course, the bowl game is really fun.
Santaromita: What’s it like playing with Jordan Lynch?
Ott: He got a lot of national recognition this year. Everyone is really proud of him, from players to coaches. He’s an inspiration to be around because he comes to work with the same mentality every day. Santaromita: Is there anything you miss about your time at LT? Ott: I just miss the camaraderie being around my friends that I’ve known since freshman year.

That showing matched last season’s finish and was the fourth time in a row LT was top 10 in the team standings at state. Senior Ciara Rattana, a Tusculum College recruit, tied for 16th in her fourth trip to state.
3. Chatt goes out as three-time all-stater Girls tennis star Alex Chatt didn’t get the state title she desired, but added another stellar season to her long list of career accomplishments. The future Northwestern player entered the state tournament as the top seed in the singles draw and took third. She was

4. Hudson brothers stand out at state golf The LT boys golf team proved to be one of the top teams in the area throughout the season. After coming up just short against eventual state champion Hinsdale Central in the conference and regional meets, the Lions had an uncharacteristically poor meet at the sectional. The only two state qualifiers were brothers Dan and Jon Hudson. Dan, a senior committed to Kansas, tied for eighth. Jon, a junior, tied for 19th.
5. Boys soccer makes sectional final It may be remembered as a season of near misses in terms of major accomplishments, but the LT boys soccer team on the whole had a terrific season. The Lions posted a 17-3-3 record, losing to eventual Pepsi Showdown champion Lane Tech and coming up short to Hinsdale Central in conference. However, the
Lions evened the score with the Red Devils in the sectional semifinal. The 2-1 win advanced LT to a sectional final to face another familiar rival in Morton. The Mustangs knocked out LT to end the run of a standout senior class with the likes of Frankie Kocimski, Matt Murphy, Emilio Godinez, Peter Kass and Spiro Kass.

Throughout its postseason run, the Lyons Township boys cross country team was just off the winning pace. They were fourth at the conference meet, third at the regional and third in the sectional. In most cases, those results paint the picture of a team that would finish in the middle of the pack at state. However, the West Suburban Silver dominated the state meet with four of the top five teams. LT was fourth and took home a trophy. Henry Hostettler, James Ryan and Dan Lupano led the way for the Lions by placing in the top 50.
6. Girls swimming shares conference title The Lions swept their way through West Suburban Silver in dual meets, but finished second to Downers Grove North in the conference meet to share the WSS title with the Trojans. LT also won its own sectional, advancing 11 individual entries and all three relays to the state meet.
7. Pair of LT girls runners finish inside top 50 Senior Lexy Rudofski and junior Katie Hamor were LT’s only representatives at the Class 3A girls cross country state meet, but both showed well. Rudofski closed out her career with a 23rd place finish while Hamor took 48th.

The winter sports season is still in its early stages, but it’s not too late to reflect on a solid fall sports season at Lyons Township. As usual, LT was competitive in every sport and saw a lot of success during the fall. The only conference title came from the girls swim team, which went 5-0 in West Suburban Silver duels, but lost the conference meet to Downers Grove North. However, the Lions had plenty of postseason and individual accolades, listed in no particular order.

Vegetable peels or skins are particularly good sources of insoluble fiber, which helps prevent constipation. Lab research has found that whole apples have a much greater effect on cancer cells than peeled ones, probably because of the antioxidants in the skin. 3. Potato skins have far more fiber, iron, potassium and B vitamins than the flesh. Potato skins are also rich in antioxidants. 4. You don’t need to wash fruits and vegetables in soap — plain water is fine. It will remove nearly all dirt, as well as bacteria and some pesticide residues, if any are present, on the surface. Onion Crumb Brussels Sprouts Casserole Serves 12. • 1/2 cup Country Crock Spread, divided • 2 cups chopped onions • 3/4 cup panko bread crumbs • 8 cups cooked Brussels sprouts (or thawed frozen), halved • 1 cup fat-free half and half Preheat oven to 375 F. Melt 4 tablespoons Country Crock Spread over medium-high heat in large nonstick skillet and cook onion, stirring occasionally, until golden brown, about 8 minutes. Add crumbs; cook, stirring until lightly toasted, about 2 minutes; remove to bowl. Melt remaining spread in same skillet. Add Brussels sprouts; toss. Stir in half and half and 1/2 the crumb mixture. Pour into shallow 2-quart baking dish. Sprinkle with remaining crumb mixture. Bake 25 to 30 minutes or until bubbly around edges.

Holidays are often stuffed with our favorite foods of all time. However, when you rely on old standbys just because they are familiar, it lessens the potential pizzazz. The ideas that follow — they each take just seconds to read and are almost that quick to prepare — prove that virtually any winter holiday staple (like potatoes, stuffing or pumpkin) can be twisted and turned into a new holiday masterpiece on demand. Better yet, rather than starting from scratch, they can improve the meal for just pennies per serving. Food preparation — even for holiday guests — can be easy, nutritious, inexpensive, fun and fast, as the following split-second sensations prove. The dishes are delicious evidence that everyone — including you and your kid helpers — has time for tasty home cooking and more importantly, the family time in the kitchen that goes along with it! Another benefit: You effortlessly become a better cook, even when preparing holiday specialties, since there are no right or wrong amounts. These are virtually-can’t-go-wrong combinations, so whatever you choose to use can’t help but
draw “wows” at the table.
Stuffing Stuffed muffins: Stuffing doesn’t always need to be stuffed into something. It can make quite a statement on its own. Fill either regular-sized or minimuffin trays with cooked stuffing and bake or form it into loaves. Or stuff the stuffing, by placing a surprise, like a prune or a green olive, in the middle of a stuffing muffin. Main course: Stuffing can function as a surprising course, rather than its usual side dish status. Substitute seasoned, dry stuffing mix for the bread, or along with it, in your favorite bread pudding recipe for a kick.
Ham or turkey New glaze: Give your glaze a fresh outlook, and create an innovative meal theme at the same time. For Hawaiian flair, for instance, glaze with a syrup you’ve created as it reduces while you are stirring on the stovetop from coconut milk, pineapple juice, freshly ground black pepper and cayenne pepper. Turn it into a theme by adding chopped macadamia nuts and fresh pineapple chunks to your side dishes and a drizzle of bottled guava, papaya or mango nectar to your pumpkin or apple dessert pie before baking. Then, top it with sprinkles of sweet-
ened coconut flakes just before serving. Gravy upgrade: As good as they are, gravies and sauces are often bland. Why not perk them up a bit as they heat. Consider adding just a dash of strategic flavor, like cayenne and chopped jalapenos (experts recommend wearing latex gloves and not touching your eyes during or after handling peppers); finely diced garlic and pumpkin pie spice; or peach jam or allfruit, no-sugar spread (also available in the jam aisles of most supermarkets) and curry powder.
Sweet potatoes Baked buffet: Instead of a casserole, consider baking sweet potatoes to serve to guests individually, along with a buffet of toppings, such as honey, pure maple syrup, mini marshmallows, composed butters (like those to which you’ve added freshly chopped herbs or spices) or a mixture of diced dried fruit like cranberries, golden raisins, apricots and figs. Standout substitute: Mix in or substitute sweet potatoes for pumpkin in a dessert pie or muffins. Sweeten a sweet potato puree (made from the flesh of peeled sweet potatoes) with honey or brown sugar, warm it and use as a dessert topping for vanilla ice cream that you then top with
browned, melting mini marshmallows and toasted walnuts.
Pumpkin or apple Cozy cocktail: Consider a toast with mini pumpkin or apple smoothies (or a combination of both) during appetizer time or to start off the meal. In a blender, to vanilla soymilk, add a dash of canned pumpkin pie filling or apple pie filling, banana, pumpkin seeds, candied pecans and ice. Blend until smooth. Side surprise: Add minced, unpeeled pumpkin or apple to your stuffing or green bean casserole before cooking, as well as a sprinkling of pumpkin pie spice or cinnamon and crushed graham cracker crumbs. The same additions can be made to a mixed green or spinach salad if you cube and roast the pumpkin first. (Apples, of course, can be used raw.) You can serve it warm on top of the salad for a wilted effect, or let it cool first. Drizzle with roasted pumpkin seeds and poppy seed-based salad dressing, or raspberry vinaigrette.
