An old-fashioned Christmas Carol Sing First Lutheran Church of Princeton has organized its first old-fashioned Christmas Carol Sing. The event is set for 2 p.m. on Dec. 8 at the church, located at 116 N. Pleasant St. in Princeton. The old-fashioned sing-along will run about an hour. Organizers say it will be a time for area people to gather together to sing the Christmas carols they know and love. The church is looking at the Christmas Carol Sing as its gift to the community. Larry B. Peterson (pictured at right) will accompany the crowd on the organ. Peterson is the director of music for Augustana College Campus Ministries and instructor of organ for the Augustana Department of Music in Rock Island. Peterson said the sing-a-long will be less of a concert, and more of “a Norman Rockwell kind of thing.” There is no fee to attend, and an offering will not be taken. What Bureau County United Way dollars go for … Illinois Valley Center for Independent Living The Illinois Valley Center for Independent Living Personal Assistant program is designed to help people with disabilities of any age remain independent in their own homes, rather than going into an institution. The program coordinator helps consumers identify their needs and goals, and provides resources to move toward them. She also helps to link them up with resources to fund caregiver services, if possible. Last winter, Debbie (a pseudonym), a Princeton resident, experienced a traumatic brain injury and was hospitalized in Peoria for several weeks. She wanted to go home, rather than into a nursing home, for rehabilitation, so she contacted IVCIL from the hospital; the personal assistant coordina-

tor was able to give her support on various aspects of modifying her home and acquiring medical equipment. Debbie hired a reliable caregiver through the IVCIL personal assistant registry and was discharged to home. Debbie reports she is doing well and continuing to thrive in her home environment. Thanksgiving 2013 In the fall of 1621, the Pilgrims, early settlers of Plymouth Colony, held a three-day feast to celebrate a bountiful harvest, an event many regard as the nation’s first Thanksgiving. The Wampanoag, the Indians in attendance, also played a lead role. Historians have recorded ceremonies of thanks among other groups of European settlers in North America, including British colonists in Virginia in 1619. The legacy of thanks and the feast have survived the centuries, as the event became a national holiday 150 years ago (Oct. 3, 1863) when President Abraham Lincoln proclaimed the last Thursday of November as a national day of thanksgiving. Later, President Franklin Roosevelt clarified that Thanksgiving should always be celebrated on the fourth Thursday of the month.

Where to feast 4 — Number of places in the United States named after the holiday’s traditional main course. Turkey Creek, La., was the most populous in 2012, with 440 residents, followed by Turkey, Texas (415), Turkey, N.C. (295) and Turkey Creek, Ariz. (294). There are also two townships in Pennsylvania with “Turkey” in the name: Upper Turkeyfoot and Lower Turkeyfoot. 7 — Number of places and townships in the United States that are named Cranberry or some spelling variation of the acidic red berry (e.g., Cranbury, N.J.), a popular side dish at Thanksgiving. Cranberry Township (Butler County), Pa., was the most populous of these places in 2012, with 28,832 residents. Cranberry township (Venango County), Pa., was next (6,608). 32 — Number of counties, places and townships in the United States named Plymouth, as in Plymouth Rock, the landing site of the first Pilgrims. The two counties, both named Plymouth, are in Massachusetts (2012 population of 499,759) and Iowa (24,907 in 2012).

Participants in the first feast 25.3 million — Number of U.S. residents of English ancestry as of 2012. Some could very well be descendants of the Plymouth colonists who participated in the autumn feast that is widely believed to be one of the first Thanksgivings especially the 684,000 living in Massachusetts. 6,500 — Number of members of the Wampanoag American Indian tribal grouping, as of 2010, roughly half of whom reside in Massachusetts. The Wampanoag, the American Indians in attendance, played a lead role in this historic encounter, and they had been essential to the survival of the colonists during the newcomers’ first year.

Preparing the feast … Enjoying the day … and the aftermath 98.6 percent — Percentage of households in 2011 with a gas or electric stove essential for cooking their Thanksgiving feast. Another 96.8 percent had a microwave, also helpful in preparing the meal. 98.3 percent — Percentage of households with a television in 2011. No doubt, many guests either before, after, or perhaps even during the feast will settle in front of their TVs to watch some football. 35.8 percent — Percentage of households with a stand-alone food freezer in 2011, which they may want to use to preserve their Thanksgiving leftovers. Far more (99.2 percent) have a refrigerator. Fortunately, 69.3 percent have a dishwasher to make the task easier.

Culinary delights 64,366 — The number of supermarkets and other grocery (except convenience) stores in the United States in 2011. These establishments are expected to be extremely busy around Thanksgiving, as people prepare for their delightful meals. 3,889 — The number of baked goods stores in the United States in 2011 – a potential place to visit to purchase refreshing desserts. 2,918 — The number of fruit and vegetable markets in the United States in 2011 – a great place to find holiday side dishes. 242 million — The number of turkeys forecasted to be raised in the United States in 2013. That is down 5 percent from the number raised during 2012. 45 million — The forecast for the number of turkeys Minnesota will raise in 2013. The Gopher State was tops in turkey production, followed by North Carolina (35 million), Arkansas (29 million), Indiana (17 million), Missouri (17 million), and Virginia (16 million). $23.1 million — The value of U.S. imports of live turkeys for 2012, with 99.8 percent of them coming from Canada. When it comes to sweet potatoes, the Dominican Republic was the source of 51.1 percent ($4.6 million) of total imports ($9.1 million). The United States ran a $17.6 million trade deficit in live turkeys during the period but had a surplus of $71.2 million in sweet potatoes. 768 million pounds — The forecast for U.S. cranberry production in 2012. Food court Now’s the time to start getting some cookies ready for Christmas time and for the in-between guests you have for the holidays. You can bake them, freeze them and when you know you’re having people in, pull them out, and you’re ready to entertain.

Red, White and Blue Chocolate Chip Cookies 2 1/2 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 tablespoon vanilla extract 1/2 teaspoon instant coffee granules 1 cup butter at room temperature 3/4 cup light brown sugar 1/2 cup granulated sugar 2 eggs 1 cup semisweet chocolate chunks 3/4 cup white chocolate chips 1 1/2 cups red and blue mini M & M’s Preheat oven to 325°. Line baking sheets with parchment paper. Combine flour, baking powder, soda and salt; reserve in small bowl. Stir together vanilla and coffee granules until granules are dissolved. On medium speed, beat butter until fluffy, 3 minutes. Add light brown and granulated sugars; beat in eggs, one at a time, then coffee mixture. On low speed, beat in flour mixture until just combined. Stir in chocolate chunks, white chips and M & M’s. Drop dough by 1/4 cupfuls 3 inches apart onto baking sheets. Using lightly floured fingers, press dough to form 2 inch mounds. Bake 20 to 23 minutes or until lightly browned. Cool on pans on racks 5 minutes. Transfer to racks, cool completely.

Frosted Pumpkin Cookies 1 cup shortening 2 cups packed brown sugar 1 15-ounce can solid pack pumpkin 4 cups all-purpose flour 2 teaspoons baking powder 2 teaspoons baking soda 2 teaspoons ground cinnamon 1/8 teaspoon salt 1 cup chopped pecans

1 cup chopped dates Caramel Frosting 1/2 cup butter, cubed 1 1/2 cups packed brown sugar 1/4 cup 2% milk 1 teaspoon maple flavoring 1/2 teaspoon vanilla extract 2 to 2 1/2 cups confectioners’ sugar In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in pumpkin. Combine the flour, baking powder, baking sofa, cinnamon and salt; gradually add to pumpkin mixture and mix well. Stir in pecans and dates. Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake at 375° for 13 to 15 minutes or until firm. Meanwhile for frosting, combine the butter, brown sugar and milk in a small saucepan. Bring to a boil over medium heat, stirring constantly, boil for 3 minutes. Remove from the heat, stir in the maple flavoring and vanilla. Cool frosting slightly, beat in enough confectioners’ sugar to achieve spreading consistency. Remove cookies to wire racks, frost while warm.

Sour Cream Cutouts 1 cup butter, softened 2 cups, sugar 3 eggs 1 cup (8 ounces) sour cream 1 teaspoon vanilla extract 5 3/4 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 2 16-ounce cans vanilla frosting Gel food coloring of your choice In a large mixing bowl, cream butter and sugar. Beat in eggs, sour cream and vanilla. Combine the flour, baking powder, baking soda and salt. Gradually add to creamed mixture and mix well. Cover and refrigerate overnight. On a lightly floured surface, roll out dough to 1/8 inch thickness. Cut with floured cookie cutters. Place 1 inch apart on ungreased baking sheets. Bake at 375° for 12 to 15 minutes or until lightly browned. Remove to wire racks to cool. Tint some of the frosting with food coloring. Decorate cookies as desired. Yields about 6 1/2 dozen cookies.

cup shortening cup sugar cup packed light brown sugar eggs teaspoon vanilla extract 1/2 cups all-purpose flour teaspoons baking soda teaspoon salt teaspoon ground cinnamon cups old fashioned oats cup raisins cup coarsely chopped pecans In a large bowl, cream the shortening and sugars until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda, salt and cinnamon. Add to creamed mixture, just until combined. Stir in the oats, raisins and pecans. Shape into 1-inch balls. Place 2 inches apart on ungreased baking sheets. Flatten with a greased glass bottom. Bake at 350° for 10 to 11 minutes or until golden brown. Do not over bake. Remove to a wire rack to cool.

Nestle Crunch Snowball Cookies 1 1/2 cups butter 3/4 cup powdered sugar 1/2 teaspoon salt 1 tablespoon vanilla extract 3 cups all-purpose flour 5 Nestle Crunch candy bars 1/4 cup powdered sugar Preheat oven to 375°. Beat butter, 3/4 cup powdered sugar and salt in large mixer bowl until creamy. Beat in vanilla extract, gradually beat in flour. Stir in chopped Crunch bars. Shape dough into 1 1/4-inch balls. Place on ungreased baking sheets. Bake for 10 to 12 minutes or until cookies are set and bottoms are lightly browned. Sift 1/4 cup powdered sugar over hot cookies on baking sheet, cool on baking sheets for 10 minutes. Carefully remove to wire racks to cool completely. Sprinkle with additional powdered sugar. Store in airtight containers.

Pumpkin Chocolate Chip Cookies 1 cup butter, softened 3/4 cup sugar 3/4 cup packed brown sugar 1 egg 1 teaspoon vanilla extract 2 cups all-purpose flour 1 cup quick cooking oats 1 teaspoon baking soda 1 teaspoon ground cinnamon 1 cup canned pumpkin 1 1/2 cups semisweet chocolate chips In a bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. Combine the flour, oats, baking soda and cinnamon; stir into creamed mixture alternately with pumpkin. Fold

Bake at 350° for 6 to 8 minutes or until toasted, stirring every 2 minutes. Set aside to cool. In a large bowl, cream butter and sugars until light and fluffy. Add eggs and vanilla; beat well. Combine the flour, baking soda and salt. Add to creamed mixture, beat well. Stir in the oats, chocolate chips, and toasted coconut and pecans. Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 350° for about 12 minutes or until browned. Remove to wire racks to cool.

Potato Chip Cookies 1 cup butter flavored shortening 3/4 cup sugar 3/4 cup packed brown sugar 2 eggs 2 cups all-purpose flour 1 teaspoon baking soda 2 cups crushed potato chips 1 cup butterscotch chips In a large bowl, cream shortening and sugars until light and fluffy. Beat in eggs. Combine flour and baking soda, gradually add to the creamed mixture and mix well. Stir in potato chips and butterscotch chips. Drop by tablespoonfuls 2 inches apart onto ungreased baking sheets. Bake at 375° for 10 to 12 minutes or until golden brown. Cool for 1 minute before removing to wire rack. This should give you a few cookie recipes to start with — you can even get the kids busy helping. Library Corner PRINCETON — Thursday and Friday, Nov. 28 and 29, the library will be closed for the Thanksgiving holiday. LADD — Preschool story times are held at 10:30 a.m. on the first and third Monday of each month. They are geared toward children ages 3-5, who are accompanied with a parent or guardian. OHIO — Thursday, Dec. 5, the Ohio Public Library will be hosting a tablet and basic technology purchasing seminar at 6 p.m. The class is intended to help patrons looking to purchase either a tablet or other technology device this holiday season. WALNUT — Saturday, Nov. 30, the Walnut Public Library will be joining the Community Christmas Tree Lighting with an open house. Prizes will be awarded in three different categories: Prekindergarten and first grade; second and third grades; fourth and fifth grades. Prizes will be handed out on Dec. 21. Fascinating facts about the Library of Congress Origins The Library was founded in 1800, making it the oldest federal cultural institution in the nation. Better Business Bureau advises to give wisely The tornadoes that struck Central Illinois have gained worldwide attention. Generous donors wishing to help the victims are being cautioned by Better Business Bureau to confirm the legitimacy of all charitable fundraising and crowdfunding efforts. “A tragedy of this nature that is the focus of high profile media attention inspires people to give,” says Jessica Tharp, vice president of BBB Heart of Illinois. “But, unfortunately, it also catches the attention of scammers who try to take advantage of well-meaning generosity.” BBB Wise Giving Alliance has seen charity scams following all recent natural disasters and manmade tragedies, and encourages donors to balance their generosity with thoughtfulness and research. “Try to avoid making emotional giving decisions,” says

H. Art Taylor, president and CEO of the BBB Wise Giving Alliance. “The first request for a donation may not be the best choice. Check with the BBB to help avoid questionable fundraising efforts.” BBB also reminds consumers that donations made through crowdfunding websites are usually considered gifts to the recipients and are not tax deductible unless the group receiving the funds is a 501(c)(3) organization as designated by the Internal Revenue Service. BBB urges consumers to make wise choices with their donations: • Respond thoughtfully. Take the time to check out the charity to avoid wasting your generosity by donating to a questionable or poorly-managed effort. The first request for a donation may not be the best choice. Be proactive and find trusted charities that are providing

assistance. • Respect the victims and their families. Organizations raising funds should get permission from the families to use either the names of the victims and/or any photographs of them. For example: Some charities raising funds for the Colorado movie theater and Newtown school victims did not do this and were the subject of criticism from victims’ families. • Registration confirmation. About 40 of the 50 states require charities to register with a state government agency (usually a division of the state’s Attorney General’s office) before they solicit for charitable gifts. If the charity is not registered, that may be a significant red flag. • Results should be shared. After funds are raised for a tragedy, it is even more important for organizations to provide an accounting of how funds were

spent. Transparent organizations and/or individuals will post this information on their websites so that anyone can find out and not have to wait until the audited financial statements are available sometime in the future. • Retail sale disclosures. If any items are being sold (such as T-shirts, etc.) in the context that their sales will benefit the victims, look for a disclosure that states the actual or anticipated amount of the purchase that will benefit the a specified charity and, if applicable, any minimums or maximums being raised (e.g. up to $100,000) as well as campaign term limits (e.g. during the month of November). • Remember online giving cautions. Never click on links to charities on unfamiliar websites or in texts or emails. These may take you to a lookalike website where you will be asked to pro-

Most embarrassing moment: When I had to talk on the announcements and I was nervous so my voice was all shaky.
