Helping the hungry at the holidays Longtime Putnam County Food Pantry volunteer Jan Schuster helps keep everything orderly in the pantry located in the basement of Granville’s United Church of Christ. Schuster is just one of many volunteers from Bureau and Putnam counties who work year-round to help make sure families in our area don’t go hungry in times of need. With the holidays fast approaching, now is a great time to visit your local food pantry with a donation. Most food pantries in the area are working to prepare a Thanksgiving feast as well as a Christmas basket for families/individuals who find themselves down on their luck at this time of the year. Any and all donations are always welcome. All food products must have a good expiration date. And don’t forget personal care items, which are always welcomed by pantries and patrons alike. Items for infants, babies and toddlers are also much appreciated. As always, cash donations are welcomed, since the food pantries are able to buy food in bulk at very reduced prices. Rest assured your financial donation will go toward buying a lot of groceries to feed a lot of people. Unsure what to donate? Why not visit your local food pantry and ask. The ebb and flow of products on the shelves varies, so volunteers at your local pantry will be able to tell you exactly what the most current need are to help feed the hungry in your area. Delivering holiday spirit to Illinois Valley area seniors Be a Santa to a Senior Everyone deserves to enjoy the warmth of the holiday season, and this year, area seniors who are alone or impoverished will be able to do just that. Sponsored by the Home Instead Senior Care office serving LaSalle, Bureau, Putnam and Grundy counties, the Be a Santa to a Senior program provides gifts and companionship for lonely and isolated seniors. The program is made possible by the support of area nonprofit organizations, retailers, numerous volunteers and members of the community. “There are so many seniors, right here in the area who have nothing and no one,” said Christine Schouten, owner of the local Home Instead Senior Care office. “Through this program, we are able to show them that they are valuable members of our community and that people still care.” Home Instead Senior Care has partnered with LaSalle Veteran’s Home, IVCH Adult Day Care, V.A.C. Bureau County Senior Center, Prairie Land Home Care, Bureau County Housing Authority, Putnam County Achievement Center, Community Nutrition Network, Grundy County Health Department Senior Division, Hy-Vee, Sullivan’s Foods, Handy Foods and Jewel to help
with the gift collection and distribution. Participating retail locations will display Be a Santa to a Senior Christmas trees from Nov. 20 to Dec. 7 that feature ornaments with seniors’ first names and their gift requests. Holiday shoppers can pick ornaments from the trees, buy the items listed and return them unwrapped (and with the ornament attached) to the store. Museum and Science Center is partnering with the Rock Island Arsenal to bring the Arsenal of Innovation Exhibit to the Quad Cities. Event-goers will be able to discover all about the inventive and innovative spirit and impact of the Rock Island Arsenal. The event runs through Sunday, Nov. 15, where one can experience artifacts from the Rock Island Arsenal Museum collection that showcases the history of innovations made in manufacturing and weaponry throughout the years. Also get a sense of what the Rock Island Arsenal is, its history and impact on the Quad Cities region. A pie and coffee social hour hosted by the Cherry United Church of Christ and Holy Trinity in Cherry has been moved to 1:30 to 3:30 p.m. Thursday, Nov. 12, due to the church hall being in use. WYANET — Thursday, Nov. 12, 6:30 p.m., the library’s 2nd Thursday@the Library program will celebrate a step back in time ... 1915 to be exact. The library has asked locals to bring items from 100 years ago to the library for a “show and tell” of sorts. There will be books, a Victrola, diaries and tools, just to name a few. Come and celebrate the end of the R.A. Sapp Library’s centennial. Refreshments will be served. What a year it has been. Throughout the year, patrons have placed their names in a drawing for different items. Each month, a name is drawn and that person wins a book, DVD or like item. All the names will go back into the big drawing for an eReader. This drawing will take place next week at this 2nd Thursday@the Library program. SHEFFIELD — The Sheffield Public Library will again be participating in “Celebrate Sheffield,” the annual holiday event which will take place on Saturday, Nov. 14. The library will be open that day from 9 a.m. to 2 p.m. The library will carry out its theme for this year’s celebration, “Believe in the Magic of Books” with many holiday decorations including a running train in honor of the 30th anniversary of the book, “The Polar Express.” Karl Rahr will portray the conductor in the book, and children will have the opportunity to have “Believe” tickets punched. Refreshments, including cheeses, dips, candy, coffee and punch, will be served. A book sale will also be held featuring books from “Books are Fun,” a nationwide company that offers a diverse selection of books, educational items and gifts at reasonable rates. The items will be pay and take. This would be a great opportunity to do some holiday shopping. In conjunction with the event, librarian Sue Lanxon will also be reading two new holiday books for the children in the children’s department at 11 a.m. and 1 p.m. The children can also participate in
a “make and take” craft which accompany the book titles. The Sheffield Public Library urges everyone to visit and participate in the silent auction held as part of the “Celebrate Sheffield” event. The library has prepared a holiday book basket containing “new” holiday books for children. Some of the titles included in the basket are “ Express 30th Anniversary” edition, “A Shiloh Christmas,” “The Pups Save Christmas (Paw Patrol),” “Frozen Olaf’s Night Before Christmas” book and CD, and “Santa’s Sleigh is on its Way to Illinois.” A special “I Believe” boxed ornament is also included. All proceeds from the basket auction will be given to the Cornerstone Community Wellness Center. A container where shoppers can drop their Sheffield Bucks will also be located in the library. Remember many holiday-themed titles are available at the library or favorite holiday books can be ordered through the RAILS interlibrary loan system. It’s that time of year when we are all thinking about some new side dishes to fix for our Thanksgiving feast. While all of us will probably still prepare our green bean casseroles and our favorite homemade Jell-O salad, I thought you might like to try something new this year. Once we had a Thanksgiving dinner where everyone had to bring a new dish to pass. It was a lot of fun. If you decide to do that, make sure you bring along copies of the new recipe to share.
Sweet Potato Casserole Filling 2 1/2 pounds sweet potatoes (about 5 medium) 2 tablespoons butter, softened 1/2 cup firmly packed brown sugar 1/2 cup 2 percent milk 1 large egg 1/2 teaspoon salt 1/2 teaspoon vanilla Vegetable cooking spray Topping 1 1/4 cups cornflakes cereal, crushed 1/4 cup chopped pecans 1 tablespoon brown sugar 1 tablespoon melted butter 1 1/4 cups miniature marshmallows Preheat oven to 400°. Bake sweet potatoes on a baking sheet 1 hour or until tender. Reduce oven temperature to 350°. Let potatoes stand until cool to touch (about 20 minutes); peel and mash with a potato masher. Beat mashed sweet potatoes, butter, brown sugar, milk, egg, salt and vanilla at medium speed with an electric mixer until smooth. Spoon mixture into an 11-by-7-inch baking dish coated with cooking spray. For topping: Stir together cereal, pecans, sugar and butter. Sprinkle over sweet potato mixture in diagonal rows 2 inches apart. Bake at 350° for 30 minutes. Remove from oven; let stand 10 minutes. Sprinkle miniature marshmallows in alternate rows between cornflake mixture, and bake 10 more minutes.
Corn Pudding 1/2 cup unsalted butter 5 cups fresh yellow corn kernels 1 cup diced yellow onion 4 large eggs 1 cup milk 1 cup half-and-half 1 cup softened cream cheese 3 tablespoons chopped fresh basil
1 tablespoon sugar 1 tablespoon salt 3/4 teaspoon black pepper 1 cup (4 ounces) shredded cheddar cheese Preheat oven to 350°. Melt butter in a large skillet over medium-high heat; add corn and onion, and sauté 4 minutes. Remove from heat, and cool 10 minutes. Meanwhile, whisk together eggs, milk and half-and-half in a large bowl; gradually whisk in cream cheese until blended. Whisk in basil, sugar, salt and pepper; stir in corn mixture and 3/4 cup cheddar cheese until blended. Spoon mixture into a lightly greased 2-quart baking dish; sprinkle with remaining 1/4 cup cheddar cheese. Bake at 350° for 40 to 45 minutes or until golden brown and a knife inserted in center comes out clean. Remove from oven to a wire rack, and cool 15 minutes.
Pimento Cheese Creamed Spinach 3 10-ounce packages frozen chopped spinach, thawed 2 tablespoons unsalted butter 1/2 medium-size yellow onion, finely chopped 3 garlic cloves, minced 4 ounces cream cheese, cut into small pieces and softened 1 cup milk 1 8-ounce container sour cream 1/4 cup mayonnaise 1 tablespoon Dijon mustard 1 large egg, lightly beaten 1 4-ounce jar diced pimiento, drained and rinsed 2 cups (8 ounces) shredded cheddar cheese, divided 1 1/2 teaspoons salt 1/2 teaspoon freshly ground black pepper 1/2 cup Panko breadcrumbs 2 tablespoons unsalted butter, melted Preheat oven to 350°. Drain spinach well, pressing between paper towels. Melt two tablespoons butter in a large Dutch oven over medium heat. Add onion, and sauté 5 minutes or until tender. Add garlic and sauté 1 minute; remove from heat. Stir cream cheese into onion mixture until melted and well blended. Stir in spinach, milk, sour cream, mayonnaise and mustard. Stir together egg, drained pimiento and 1 1/2 cups cheese; stir egg mixture into spinach mixture. Spoon

mixture into lightly greased (with cooking spray) ramekins or a 2-quart baking dish; sprinkle with salt and pepper. Toss together Panko, two tablespoons melted butter and remaining 1/2 cup cheddar cheese; sprinkle over spinach mixture. Bake at 350° for 50 minutes or until bubbly and golden.
Sausage, Apple and Cranberry Stuffing 1 1/2 cups cubed whole wheat bread 3 3/4 cups cubed white bread 1 pound sausage 1 cup chopped onion 3/4 cup chopped celery 2 1/2 teaspoons dried sage 1 1/2 teaspoons dried rosemary 1/2 teaspoon dried thyme 1 Golden Delicious apple, cored and chopped 3/4 cup dried cranberries 1/3 cup minced fresh parsley 3/4 cup turkey stock or chicken broth 4 tablespoons butter, melted Preheat oven to 350°. Spread the white and whole wheat bread cubes in a single layer on a large baking sheet. Bake for 5 to 7 minutes in the preheated oven, or until evenly toasted. Transfer toasted bread cubes to a large bowl. In a large skillet, cook the sausage and onions over medium heat, stirring and breaking up the lumps until evenly browned. Add the
celery, sage, rosemary and thyme; cook, stirring, for 2 minutes to blend flavors. Pour sausage mixture over bread in bowl. Mix in chopped apple, dried cranberries and parsley. Drizzle with turkey stock and melted butter, and mix lightly. Allow stuffing to cool completely before loosely stuffing a turkey or put into a baking dish and bake by itself.
Homemade Cranberry Sauce 1 12-ounce bag fresh or frozen cranberries 1 cup sugar 1 strip orange or lemon zest 2 tablespoons water 1 cup cranberry juice, divided 1/4-ounce packet plain gelatin Empty cranberries into a saucepan; transfer 1/2 cup to a small bowl. Add sugar, orange or lemon zest and water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste. Let cool. Heat 1/2 cup cranberry juice over low heat, then stir in gelatin packet. Puree cooled cranberry sauce with another 1/2 cup cranberry juice, then add the gelatin mixture. Pour into a mold and refrigerate overnight. Serve with whipped cream. I hope you’ll try some of these new recipes. Malden Cheer Camp MALDEN — The Malden cheerleaders will host a Little Pom/cheerleading camp titled “Celebrating Disney” from 9 a.m. to noon Saturday, Nov. 14.
