They’re back! As sure as spring teases us with warmer weather and more sunshine, those elements are just the ticket for the wildflowers in the Illinois Valley to start popping, like this bloodroot pictured at right. On Saturday and Sunday, Starved Rock State Park is playing host to a wildflower pilgrimage — guided hikes to view the spring wildflowers, including bluebells, trillium, Dutchman britches and more. The hikes leave from the Starved Rock Visitor Center at 9 a.m. and 1 p.m. According to park personnel, the hikes will be of varying lengths and times, and guides will inform participants of the different hikes before setting out to find these flowery surprises. Do you need to rethink your first-choice college? Study shows less than 60 percent enroll in top option Tens of thousands of high school students will be receiving their college acceptance letters in April and May. It’s an anxious time – students and their parents want to believe their school holds the promise that attendance will be their “golden ticket” to eventual financial success. So, if they are trying to get from “Point A” (here and now) to “Point B” (financial independence), how do they select the school that will deliver that return on their investment? “Young people tend to quickly fall in love with a school, and parents tend to quickly wear their son’s or daughter’s acceptance as a badge of honor, or at least validation as a successful parent,’’ says David Porter, social architect, consultant to colleges and universities throughout North America and author of “The Porter Principles,” a guide to college success through social engineering. “Students and parents should be skeptical and consider all of what a college has offer, and how it will deliver on the implicit promise of financial independence. Which school will nurture and grow the prerequisite face-to-face, problem-solving skills required to secure gainful employment and financial independence upon graduation?” According to the most recent study from the University of California, Los Angeles’ Higher Education Research Institute, only 58 percent of the surveyed 204,000 college freshmen enrolled at their firstchoice college, the lowest percentage to do so since the question was first asked in 1974. The major factors behind the decline are cost and financial aid. A 2012 study by the research group, Ipsos, and the student loan giant, Sallie Mae, indicates that roughly 70 percent of families are ruling out colleges based on cost. First choice or otherwise, Porter says students and their families should consider a variety of factors in estimating the most value to be had at a campus. Some are more relevant than others:

• A school’s ranking: According to one of the world’s leading public intellects who regularly weighs in on academic issues, Malcom Gladwell, the national ranking a school receives doesn’t necessarily reflect the needs of individual students. Just like an expensive sports car is valued, in part, from an arbitrary, expensive price tag, so too are colleges. The various needs a young adult will have are by no means fully represented by the seven variables used by the U.S. News rankings, run by Robert Morse. The variables include undergraduate academic reputation, financial resources and alumni giving. • On-campus culture and community: In addition to academics and the rigors thereof, a college offers (or fails to offer) a unique on-campus college experience. Will the environment foster success (post-graduate financial independence), or will it essentially be a few more years of high school under the guise of “college?” Look for safe, wholesome campus venues, like a student union or a next generation dining learning commons that invites student interaction, collaboration, problem-solving and dining 24/7. Social architecture – the conscious design of an environment to encourage social behaviors that lead toward a goal – is a ground-breaking approach that social architecture visionary Porter is successfully introducing to more campuses across North America every day. • Parent-student understanding: Move out and stay out (because you can). Mom and Dad, we want a nice home, a nice car, nice vacations, nice stuff, nice meals, etc. etc. etc. It costs tens of thousands of dollars per year to attend most colleges. Whether or not a student assumes massive debt to follow his/ her dreams, or a parent shares the burden should be moot if the student can identify, pursue and secure gainful employment upon graduation. Having debt is an enormous burden at any stage of life if you are unemployed. Choosing a school is a great opportunity for parents to lead by example on how to make a purchase decision for any “big ticket” item. Do your homework. Buyer beware. Coach them using some of the same skills you would use to buy a house or purchase a car or invest in a new business.

Food court How about making some different pancake recipes for a change in your breakfast menu? There are so many different recipes; it’s kind of fun to try something different.

Buttermilk Pancakes 1 3/4 cups all-purpose flour 2 tablespoons granulated sugar 2 tablespoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1 egg, lightly beaten 1 1/2 cups buttermilk 3 tablespoons cooking oil In a large bowl stir together flour, sugar, baking powder, baking soda and salt. Make a well in the center of the flour mixture. In another bowl use a fork to combine egg, buttermilk and oil. Add egg mixture, all at once, to flour mixture. Stir just until moistened (batter should be slightly lumpy). For standard-size pancakes, pour about 1/4 cup batter onto a hot lightly greased heavy skillet or griddle, spreading batter if necessary. (For dollar-size pancakes, use about 1 tablespoon batter.) Cook over medium heat for 1 to 2 minutes on each side or until pancakes are golden brown. Turning to second side when pancakes have bubbly surface and edges are slight dry. Serve warm. Serve with butter and syrup of your choice. Makes 12 standard-size pancakes or 40 dollar-size. On this recipe I like to add semisweet chocolate chips for something different.

Alaskan Sourdough Pancakes 1 2 2 1 1 1 1 2

package yeast cups flour cups warm water to 2 eggs teaspoon baking soda teaspoon salt tablespoon sugar tablespoons shortening, melted In a glass mixing bowl, combine yeast, flour and warm water; beat well with plastic or wooden spoon and set in warm place for 8 hours or overnight. Add all remaining ingredients and beat again with plastic or wooden spoon. Spoon desired amounts of batter into pancake shapes in oiled skillet. Fry on both sides. Serve with butter and your favorite syrup.

Sweet Milk Pancakes 2 4 1 4 2 2 4

cups flour teaspoons baking powder teaspoon salt tablespoons sugar eggs cups milk tablespoons cooking oil Stir together flour, baking powder, salt and sugar in large mixing bowl. In another bowl beat egg well. Add milk and oil and beat well. Make a well in dry ingredients and gradually stir in liquid ingredients, mixing until smooth. Heat skillet on high with 1/2 tablespoon cooking oil. Spoon batter into skillet to form 4 inch pancakes. Brown on both sides. Serve with butter and your favorite syrup or jam.

French Pancakes

Baked Apple Pancake

6 eggs 1/4 teaspoon salt 1 cup milk 1/2 cup flour 1 tablespoon sugar Margarine 6 to 8 tablespoons black raspberry jam Powdered sugar Cinnamon Beat eggs. Add salt, milk, flour and sugar and beat well. Heat skillet on medium high. Put dab margarine in hot pan. Spoon in 2 tablespoons batter and shake gently to distribute pancake evenly. Cook on both sides. Flip pancake from pan. Spread line of jam down center. Roll up like jelly roll. Sprinkle with powder sugar and cinnamon and serve Continue with remaining batter.

3 apples 4 tablespoons butter 1 cup flour 1 cup milk 6 eggs 1 teaspoon vanilla 1/2 teaspoon salt 1/4 teaspoon nutmeg Powdered sugar Turn oven to 450° and place cast iron skillet in oven while preparing ingredients. Cut apples into thin wedges. In a heavy skillet, melt 2 tablespoons butter and sauté apples. Place flour, milk, eggs, vanilla, salt and nutmeg in blender in the order given. Blend until well mixed. Remove skillet from oven and melt remaining 2 tablespoons butter. Quickly arrange sautéed apples in skillet and pour batter over apples. Place in 450° oven and bake 15 minutes. Reduce oven temperature to 375° and bake 10 minutes longer. Sprinkle with powdered sugar, slice into wedges and serve with maple syrup.

Whole Wheat Pancakes 2 2 2 1 1 2 2 4

cups whole wheat flour tablespoons brown sugar teaspoons baking powder teaspoon baking soda teaspoon salt eggs cups buttermilk tablespoons margarine, melted Combine flour, brown sugar, baking powder, baking soda and salt. Add eggs, buttermilk and margarine and beat well. Spoon batter by tablespoonful into hot oiled skillet. Brown on both sides. Serve with butter and favorite syrup.

Finnish Pancakes 2 tablespoons butter 2 cups milk 4 large eggs 2 to 2 1/2 tablespoons sugar 1/2 teaspoon salt 1/2 cup flour Melt butter in 9-by-13-inch baking pan. Combine milk and eggs and beat lightly. Add sugar, salt and flour. Pour into baking pan. Bake at 400° for 20 to 25 minutes. Serve with butter and maple syrup or jelly.

IHOP Pancakes 1 1/4 cups flour 1 large egg 1 1/4 cups buttermilk 1/4 cup sugar 1 teaspoon baking powder 1 teaspoon baking soda 1/4 cup cooking oil Pinch of salt Preheat skillet or griddle over medium heat. Use a pan with a nonstick surface or mist skillet with a little nonstick spray. In a blender, combine flour, egg, buttermilk, sugar, baking powder, baking soda, oil and salt until well combined. Cornmeal Pancakes 1 1/4 cups all-purpose flour 1/2 cup cornmeal 2 tablespoons granulated sugar 2 tablespoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1 egg, lightly beaten 1 1/4 cups buttermilk 3 tablespoons cooking oil In a large bowl, stir together flour, corn meal, sugar, baking powder, baking soda and salt. Make a well in the center of the flour mixture. In another bowl, use a fork to combine egg, buttermilk and oil. Add egg mixture, all at once, to flour mixture. Stir just until moistened. (Batter will be slightly lumpy.) Pour about 1/4 cup batter onto a hot lightly greased heavy skillet or griddle, spreading batter if necessary. Cook over medium heat for 1 to 2 minutes on each side or until pancakes are golden brown, turning to second side when pancakes have bubbly surface and edges are slightly dry. Serve warm. Serve with butter and syrup or fruit on top.

Potato Pancakes 1 pound potatoes, peeled and shredded 1 small onion, minced 2 eggs, lightly beaten 1/4 cup flour 2 tablespoons chopped parsley or chives 1/2 teaspoon salt 1/4 teaspoon pepper 1/4 cup vegetable oil Wring potatoes in dish towel and place in a colander to drain. In bowl, combine potatoes, onion, eggs, flour, parsley or chives, salt and pepper in large skillet, heat oil over medium heat. Spoon batter onto skillet, making 3 to 4 pancakes at a time. Cook 3 to 4 minutes on each side. Remove to paper towel-lined dishes. Let cool. Serve with applesauce or sour cream. Peace and Justice Roundtable will sponsor Holocaust film, discussion PRINCETON — The film “The Boy in the Striped Pajamas” will be shown at 6:30 p.m. May 1 at the Princeton Public Library, in conjunction with national Holocaust Remembrance Week, April 27-May 4. After the showing, there will be a group discussion about the film. The Princeton Peace and Justice Roundtable is the sponsor of this special event. tells the story of two young boys who become friends in the unlikely setting of a German concentration camp prior to World War II. Bruno is the son of an SS Commandant who moves his family to the countryside when he is assigned to run the camp. Soon after the family’s arrival, young Bruno befriends Shmuel, another youth, who is strangely dressed in striped pajamas and living behind an electrified fence. Bruno is told he can’t be friends with this boy because he is a

Friends of Princeton Public Library plan book sale PRINCETON — The Friends of the Princeton Public Library will hold its annual book sale from 10 a.m. to 8 p.m. April 24, from 9 a.m. to 5 p.m. April 25 and from 9 a.m. to 1 p.m. April 26. There will be more then 9,000 quality used hardcovered and paper-

backed books available for sale. All books have been cleaned and sorted into more than 30 categories for easy shopping. They will be selling current best sellers, cookbooks, mysteries, children’s books, history and science books as well as puzzles, DVDs and CDs.

White announces poetry contest Secretary of State and State Librarian Jesse White announce entry forms are available for the 10th annual Illinois Emerging Writers Competitions Gwendolyn Brooks Poetry Award. “We created the Illinois Emerging Writers Competition to promote creative writing and provide a new outlet for talented writers,” White said. “Great poems have the ability to enrich and enhance our lives, and I am looking forward to discovering talented new

poets with this year’s competition.” The competition is named in honor of the late Pulitzer Prize-winning Illinois Poet Laureate Gwendolyn Brooks and is co-sponsored by the Illinois Center for the Book and Kevin Stein, who succeeded Brooks as Illinois Poet Laureate. The competition is open to Illinois residents age 18 and older. Entries must be postmarked by June 30. Cash prizes will be awarded for first ($100), second ($300)

Auditions are set May 9-10 for ‘The Little Mermaid Jr.’ HENRY — River Valley Players Youth Theatre is seeking young actors ages 5-14 for the youth theatre musical Disney’s “The Little Mermaid Jr.” at St. Mary’s Community Center in Henry. Auditions will be at 6:30 p.m. May 9 and 10 a.m. May 10. All auditioning must be age 5–14 at the time of auditions. Those auditioning should arrive 30 minutes prior to audition times to complete the audition forms and information. Auditions will consist of singing, dancing and reading from the script. All audition material will be taught at the audition, no advance preparation is necessary. The song “Part of Your World” will be taught during auditions. Wear clothing and

shoes that allow freedom of movement — no flip-flops or sandals. Participants should bring a schedule of all conflicts, including camps and vacations, for June and July to auditions. Note: Attendance at all scheduled rehearsals is important so be aware that casting of some roles may be contingent upon availability for scheduled rehearsals. The story of this delightful musical revolves around the lovely mermaid Ariel who longs to leave her ocean home — and her fins — behind and lives in the world above. But first she’ll have to defy Journey “under the sea” with Ariel and her aquatic friends in Disney’s “The Little Mermaid Jr.,” adapted from

Disney’s 2008 Broadway production. In a magical underwater kingdom, the beautiful young mermaid and her father, King Triton, make a deal with the evil sea witch Ursula, and convince the handsome Prince Eric that she’s the girl whose enchanting voice he’s been seeking. Featuring such musical hits as “Part of Your World,” “Poor Unfortunate Souls” and the Oscar-winning “Under the Sea” this is one production you won’t want to miss! Performances will be July 17, 18, 19 and 20 at St. Mary’s Community Center. Princeton Buddy Bags plans inaugural car cruise PRINCETON — The Princeton Buddy Bags will hold its inaugural car cruise May 4 in Princeton High School’s north parking lot. Registration begins at 8 a.m. The cost is $5 and one food item per car. Dash plaque will be given to the first 50 vehicles. There will be a 50/50 raffle. Buddy Bags is a collaborative project between Tri-County Opportunities Council, Princeton Elementary School District, Malden School District, Princeton Christian Academy and other area churches, organizations

and individuals. It is a not-for-profit ecumenical organization working to address childhood hunger. Buddy Bags provide area children with snack pack on days when school is not in session. They try to provide two breakfasts, two lunches, snacks and drinks. Items needed include: microwave soups, including Ramen Noodles, Ramen Cups, etc.; pasta cups, including microwavable Mac N’ Cheese, Chef Boyardee, spaghetti, ravioli, etc.; Vienna sausages, beanie weenies and baked
