With a spring in her step Spring is here, and so are spring sports for area children of all ages. Lydia Warren of the Putnam County Lady Panther track team shows off her winning long jump form at a recent track meet in LaSalle. Warren, as many others on area track teams, participates in multiple events on the team to help raise their team scores. This time of year area high school students are busy running track, hitting baseballs or softballs and fishing in Illinois High School Association (IHSA) level competition. Around Bureau and Putnam counties, younger students are forming area T-ball and older baseball and softball teams for spring. Volunteers are needed to help coach and be assistant coaches for these town-wide teams. These seasons will run from April to July for some of the participants each year. What an easy meal to fix when you have a box of Stove Top Stuffing. Add a few ingredients, and you’ve got a meal. Just add a salad, and it’s about as easy as you can get.
Ham and Cheese Stuff ‘n Puff 5 eggs 1 cup milk 1/2 cup sour cream 1 10-ounce package frozen chopped broccoli, thawed, drained 1 6-ounce package Stove Top stuffing mix for chicken 1 1/2 packages (6 ounces each) Oscar Mayer smoked ham, chopped 1 cup shredded Cheddar cheese, divided Heat oven to 375°. Beat eggs, milk and sour cream in large bowl with whisk until well blended. Add broccoli, stuffing mix, ham and 1/2 cup cheese; mix lightly. Pour into 2-quart casserole; cover loosely with foil. Bake 1 hour. Uncover. Sprinkle with remaining cheese; bake 5 minutes or until cheese is melted and broccoli mixture is heated through.
Pork Chops with Apples and Stuffing 1 6-ounce package Stove Top stuffing mix for chicken 1 21-ounce can apple pie filling 6 boneless pork loin chops (1 1/2 pounds) 3/4-inch thick Heat oven to 375°. Prepare stuffing as directed on package. Spread pie filling onto bottom of 13-by-9-inch baking dish sprayed with cooking spray. Top with chops and stuffing. Cover with foil. Bake 40 minutes or until chops are tender (145°), removing foil after 30 minutes. Can also substitute 6 boneless skinless chicken breasts.
One Dish Chicken Skillet 1 1/2 cups hot water 1/4 cup butter or margarine, melted 1 6-ounce package Stove Top stuffing mix for chicken 6 small boneless skinless chicken breasts (1 1/2 pounds) 1 10 3/4-ounce can condensed cream of mushroom soup 1/3 cup sour cream Mix hot water, butter and stuffing mix. Cook chicken in large nonstick skillet sprayed with cooking spray on medium heat 5 minutes on each side. Mix soup and sour cream; pour over chicken. Top with stuffing, cover. Cook on low heat 10 minutes or until chicken is tender (165°).
Layered Meatball Bake 1 6-ounce package Stove Top stuffing mix for chicken 1 10 3/4-ounce can condensed cream of mushroom soup 1/4 cup milk 1 12-ounce package frozen meatballs 2 cups frozen peas 1 cup shredded Cheddar cheese

Heat oven to 400°. Prepare stuffing as directed on package. Mix soup and milk in 13-by-9-inch baking dish. Stir in meatballs and peas. Top with cheese and stuffing. Bake 20 to 25 minutes or until heated through.
Easy Chicken Pot Pie 1 2/3 cups hot water 1 6-ounce package Stove Top stuffing mix for chicken 3 cups chopped cooked chicken 1 10-ounce package frozen mixed vegetables 1 10 3/4-ounce can condensed cream of chicken soup 1 cup milk Heat oven to 375°. Add hot water to stuffing mix; stir just until moistened. Combine chicken and vegetables in 2-quart casserole. Mix soup and milk; pour over chicken mixture. Top with stuffing. Bake 30 minutes or until hot and bubbly and chicken is done (165°).
Easy Pleasing Meatloaf 2 pounds lean ground beef 1 6-ounce package Stove Top stuffing mix for chicken 1 cup water 2 eggs, beaten 1/2 cup barbecue sauce, divided Heat oven to 375°. Place meat, stuffing mix, water, eggs and 1/2 cup barbecue sauce in bowl. Mix just until blended. Shape into loaf in 13-by-9-inch baking dish. Top with remaining barbecue sauce. Bake 1 hour or until done. Can double recipe and make 2 loaves side by side in 13-by-9-inch baking dish. Bake at 375° for 1 hour and 25 minutes. Refrigerate leftover meatloaf and use to make sandwiches. Serve with potatoes and steamed veggies.
Cheesy Green Bean Casserole 2 16-ounce bags frozen French cut green beans, thawed 1 10 3/4-ounce can cream of mushroom soup 1 cup Cheez Whiz cheese dip 1 1/2 cups hot water 1/4 cup margarine 1 6-ounce package Stove Top stuffing mix for chicken Heat oven to 350°. Combine beans, soup and cheese Whiz in 2-quart casserole. Add hot water to margarine in medium bowl, stir until melted. Stir in stuffing mix just until moistened. Spoon over bean mixture. From Sunday, April 12 to Saturday, April 25, the library will hold amnesty weeks. During this time, patrons who have overdue items can bring them to the library and will owe nothing on the items. However, if an item is damaged or lost, the patron must pay the full amount for the item. If a patron has a previous fine, stop by the circulation desk to take a chance at reducing your fine by 10, 25, or even 50 percent. The reduction in a patron’s fine is once per patron during the two weeks. Also during these two weeks, there will be free replacement on lost and/ or damaged library cards. There will be a raffle in the children’s and adult departments that allows a patron to enter once per visit when they check out. There will be a winner each week in each department. Jay Braida Golf PRINCETON — The sixth annual Jay Braida Memorial Golf Open will be held July 11 at Chapel Hill Golf Course in Princeton. This year’s recipient is Kamden Wahlgren of Princeton. His parents are Erick and Staci. He has two other siblings Kaiden, 10, and Emma, 5. Kamden is in second grade and was diagnosed with Pediatric Auto-Immune Neuropsychiatric Disorder Associated with Strep in 2012. He was recently diagnosed with Lyme disease and Toxic Encephalitis.
