since 1991, before the Music @Bethel series emerged. Music@Bethel has become one of the most successful additions to the long-standing church. The music series began 14 years ago with the help of a new minister. “We have an exceptional musician who is the minister of music,” Braun said. Jeffrey Panko started at Bethel in 1998. Every year, he chooses performers for the annual Music@Bethel concert series,

which brings classical, jazz and concert musicians to Elmhurst. “The nice thing about Bethel is the acoustics,” said Panko, who describes the performers as “musicians of high caliber.” He believes many of them agree to perform at the church because of its acoustics and intimate setting. Panko said Chicago violinist Rachel Barton Pine has performed twice at the venue. “There’s nothing like live

ELMHURST – Bethel United Church of Christ may be turning 60, but the congregation is anything but old school. Church Council President and Elmhurst resident Ellen Braun has been a member of Bethel, 315 E. St. Charles Road, about 30 years and says the church always has changed but at the same time has kept the same fundamental values. “It’s a very important part of our life,” Braun said. “I look at our church as part of my family.” In 2007, the church joined the open and affirming coalition of the United Church of Christ, which means people of all sexual orientations are welcome. “We welcome everyone,” Braun said. “That’s very important to who we are.” Bethel prides itself on accepting people of all ages, ethnicities, genders and mental and physical abilities, as well as marital and socio-economic status. The church was founded by 24 charter members and celebrated its first Founder’s Day on June 28, 1953. In the past 60 years, six pastors – soon to be seven – have led the congregation. The Rev. Gretchen Sylvester joined in Sunday’s Founder’s Day Service of Worship and will take on her role as pastor Aug. 1. The Rev. David Wheeler, Bethel’s fourth pastor, also visited for the service celebrating the 60th anniversary. He hadn’t been back

Elmhurst author to expand books with app By MARI GRIGALIUNAS mgrigaliunas@shawmedia.com ELMHURST – For the past six years, students have been reading Kid Combat books, but soon, the author hopes his project will be more than words on a page. Christopher Helwink wants to create a Kid Combat app that would allow his third- through sixth-grade readers an opportunity to explore the characters and setting of Elmcrest. “I came up with the idea because books are changing,” Helwink said. The latest book in the adventure series is available strictly as an e-book. As a network architect, Helwink knows the effects of technology. He also sees kids reading on their e-readers and tablets all the time. “It seems like a lost opportunity, though, because it’s Photo provided still just words on their tabElmhurst resident and author Christopher Helwink poses during one of his recent school visits where he let,” Helwink said. “It seems explained how to write a book. like there should be more to it.” With teachers for a mother, sister and wife, Helwink has seen his young adult books implemented in classrooms. When his mother began sharing lesson plans that she created to compliment the books online with her colleagues, Helwink imagined how an app could assist teachers by providing tailored lesson plans and tools to supplement their students’ Perfect music for a summer evening! reading. Helwink began Tchaikovsky’s 1812 Overture, Ravel’s Bolero, searching for a developer and working with illustrator Sibelius’s Finlandia, and much more ... you’ll Khafre Liggens to expand his recognize every piece. Bring a lawn chair stories into an interactive and picnic starting at 6 p.m. app for kids and teachers. After finding developer Alan Savage, Helwink believes the app could be ready in three months, but the project needs funding. The author posted a detailed project outdoors at Cantigny Park description and outline on 1s151 Winfield Road, Wheaton crowd-funding website Kickstarter in search of backers Tickets through Cantigny: 630.668.5161 and at the park’s shop and for his newest dream. to the project. A link to the Kickstarter page is available at www.kidcombat.com. Kid Combat lives in a town modeled closely after Helwink’s native Elmhurst, but with one villain trying to take over the city. Kid Combat and his friends take action to save their way of life while adults follow the evil Phillip Arthur Jones without question. “I started to use Elmhurst, because that’s all I really knew,” Helwink said. Growing up, Helwink never considered a career as an author, but his mind was full of Kid Combat ideas since childhood. He began writing them down, but never expected his thoughts would produce not just one book, but an ongoing series. “I thought it would be a short story, because I thought there was no way I could write a book,” Helwink said. Now he’s working to bring his stories to life. In the app, readers could explore Elmcrest, including visiting the library to read the books and even choose their own adventures. Kids also can visit the arcade to play games, Kid Combat’s secret base to learn about the characters or Jones Mansion to read the villain’s diaries. Kid Combat goes to Lincoln school in the books just like Helwink did as a kid. In the app, teachers can visit the school and use lesson plans and supplemental materials as students read the books. “I think it’s an easy way to further their adventure in books and keep [kids] reading as opposed to always playing games on their tablets,” Helwink said.

ELMHURST – Sixth Ward residents of Elmhurst have a new alderman after the City Council approved Mayor Steve Morley’s appointment Monday. All 12 of the present aldermen voted in favor of Michael Honquest’s appointment to the 6th Ward seat. Fourth Ward Alderman Stephen Hipskind was absent. “Most importantly, I wanted to put somebody in that role that actually wanted the job,” Morley said. After Morley won the April race for mayor, his former position as 6th Ward alderman was left vacant. “At that time, I did not have a candidate in mind,” Morley said. The city invited eligible residents to apply for the seat. The mayor interviewed each one of the eight applicants for the position. While he recounted to the council that each candidate was highly qualified, he chose Honquest. “He struck me as a level-headed

person,” Morley said. “[He’s] someone who actually has roots in the community and deeply cares about Elmhurst, as I think most of us up here do.” Michael A 12-year resident Honquest of Elmhurst, Honquest works as an account manager at Forsythe Technology. While he never has held a city job, Honquest has volunteered at his church, Visitation Parish, and coached basketball in the community. His wife and five children joined the new alderman as Morley administered the oath of office. Morley said he did not turn the remaining seven applicants away but invited them to serve the city in other capacities. He also mentioned open positions on city commissions and boards. “I’m happy to say that all of the folks who did apply have expressed interest in staying involved with the city,” he said.

By MARI GRIGALIUNAS mgrigaliunas@shawmedia.com ELMHURST – City Council members will have to vote on whether to extend their agreement with the current developer of the proposed Addison Avenue multiuse parking structure at their next meeting. The Development, Planning and Zoning Committee recommended the City Council approve a fourth letter of agreement with Addison Corridor Development I to continue to work with the developer for another six months. The third letter of agreement expires July 15, the date of their next meeting. Fifth Ward Alderman and committee Chair Scott Levin said he supported approving an extension of the agreement to continue to work with the developer on the parking project. Previously, the Zoning and Planning Commission recom mended denial of Addison’s re-

quest for a conditional use variance that would have added two stories to the original building plan. The committee is supposed to receive a presentation on the commission’s recommendation next week. Seventh Ward Alderman and committee member Mark Mulliner, however, did not sign the letter from the committee recommending a six-month extension with Addison, saying he believed other options needed to be explored. At the council meeting Monday, alderman still had not received a copy of the fourth letter of agreement, only the recommendation letter from the committee. Levin suggested giving council members time to review the letter before a vote at their next meeting. “[Because] none of the members of the council have seen this, the confusion is becoming apparent,” Levin said.

A thumbs up to little Rico Suave, Nutmeg and their owners. The two dogs were profiled recently in these pages and provide a lot of support and joy in their work as therapy dogs in the community. It’s easy to see why a visit from a dog as cute as these two can have therapeutic benefits. Residents of Lexington Square lit up when they got time to pet these pooches. A thumbs up to welcome new grocery store Mariano’s into Elmhurst. Residents in the area seemed pretty excited at the recent grand opening. Mariano’s provides food to go, groceries, coffee and musical performances. We hope to see them grow in Elmhurst and become involved members of the business community here.

It’s difficult to believe that it has been two decades since the WDSRA Foundation was established. For 20 years, the foundation has been working quietly, yet ever so diligently, to make life better for families with special needs. The mission of the Western DuPage Special Recreation Association (WDSRA) is to provide community-based programming opportunities that allow children, teens and adults with special needs the ability to grow and COMMUNITY thrive while recreating. The VOICE sole purpose of the founSandy dation was, and still is, to Gbur develop long-term programs of giving to support that mission. While there is a Board of Trustees to guide the foundation in its efforts, it is an army of people who have attended events, volunteered in our name, secured a sponsorship, or made a donation in the name of the foundation over the last 20 years that we celebrate. After 20 years, we are grateful for the thousands of people who have shown their support. With the help of the foundation, WDSRA has been able to focus efforts on making high-quality programs and services available to all who need it. Over the years, we have seen the cost of providing services rise. At the same time, with the tenuous job market and uncertain economic times, we have experienced an increasingly steady rise in demand for scholarship assistance for families. Through it all, the foundation has been there to assist in funding program supplies and scholarships, as well as bigger ticket items like vehicles and uniforms. Now, more than ever, we find ourselves relying on the steadfast work of the foundation and those that show their support for WDSRA through it. With the numbers of people being diagnosed with disabilities increasing, the latest numbers indicate that Autism affects one in every 50 U.S. children, we expect the need for services to also increase. With the help of the WDSRA Foundation, we hope to grow that small army of support so that every child, teen and adult who can benefit from our programs will have access to them. After all, our vision of Equal Fun for Everyone is to create a better quality of life for all.

n LAST WEEK’S WEB POLL QUESTION: What are you doing for the Fourth of July?

Race brings family together By MARI GRIGALIUNAS mgrigaliunas@shawmedia.com ELMHURST – While many locals run in the 4 on the 4th race every year in Elmhurst, members of the Sheil family traveled hundreds of miles to run as a family. “Of course the Fourth of July is a big thing,” said Marty Sheil, one of several members of the military in his family. Marty’s late father was in the U.S. Air Force. Growing up, he remembers his family moving around, following his father’s duties. He lives in New Hampshire but recently traveled to Chicago’s western suburbs for a family reunion that was six months in the making. “Last Fourth of July was just a few months after my mother died,” he said.

Marty and his siblings converged last year at their mother’s home in Missouri, but after her death, the family members, who are scattered all over the country, lost their home base. This year, two of Sheil’s sisters went to work planning this year’s family reunion. When one of them, Beckie Evans, who lives in Downers Grove, suggested participating in Elmhurst’s 4 on the 4th as a family, Marty Sheil loved the idea. “If you’ve been to running events, they’re a really good group of people,” he said about the running community. At 56, he is oldest of the eight siblings but says he still is competitive in his age group when he runs the Army Ten-Miler every year in Washington, D.C. His

brother, Christopher Sheil – whom he adoringly calls “The Professor” – made his competitive running debut at the Elmhurst race. “I think we have all ability groups,” said Marty said of the 28 brothers, sisters and children who participated. The weeklong reunion also will include a Christmas celebration complete with Helga Sheil’s traditional German breads. The family also will use the occasion to enjoy a Thanksgiving dinner prepared by chef Francis Sheil, as well as a family talent show and trip to Wrigley Field to see a Chicago Cubs game. Marty said he is most excited to poke fun at his sisters with the help of his brothers. “I think we’re very typical American families,” he said.

8SOUND OFF Pavers in D-99 lots? I just wanted to comment about District 99 putting in brick paver parking lots. With this unstable economy, you would think they might think a little more about putting in asphalt, maybe conserve a little bit or save money. And then they might have money left over to get a jacuzzi for the teachers. Just wanted everyone’s opinions on that and I think it’s ridiculous we’re spending so much money when we could have done asphalt and saved some money.

Conroy brings animals to WDSRA day campers By SARAH SMALL ssmall@shawmedia.com A selection of animals from Brookfield Zoo traveled west Monday to the Western DuPage Special Recreation Association’s day camp in Carol Stream for children and teens in the camp to learn about the animals and interact with them. The event was organized by Rep. Deb Conroy (D-Villa Park) who learned about the zoo’s program that brings animals, keepers and staff to local community groups, and decided to coordinate an event in her district. “It’s probably the best part of the job, getting to see the kids and their expressions,” she said. Keepers brought animals that are easy to transport, such as a rabbit, a snake and an owl. Conroy said the most popular animal probably was the snake, who had the most visitors throughout the day. Conroy said she already has plans to run similar programs in communities within

General purpose bifocals are not designed for computer work as they force the wearer to tilt the head back in order to focus on the screen while looking through the lower segment of the bifocal lenses. A forced position like this can cause neck and shoulder pain and even low back pain. Experience, commitment to technology, and a genuine concern for patient welfare enable the highly qualified staff at SKOWRON EYE CARE to work together as a team to consistently deliver quality, affordable eye care. At Skowron Eye Care, our mission is your vision. P.S. Anti-glare coatings on prescription work glasses help diminish on-screen glare and brightness of overhead lights.

GLASSES THAT GO RIGHT TO WORK While reading glasses may be fine for reading books and papers at distances up to 18 inches away from the eyes, they may not be well-suited to computer work. No single lens prescription can meet all needs, which is why many office workers turn to dedicated computer-screen bifocals. These glasses have a mid-range prescription on the upper portion of the lens and a reading prescription on the bottom part. This setup enables those with desktop computers to shift their gazes easily from the computer screen to printed material, and back again. As with other types of bifocals and trifocals, computer-specific bifocals can be outfitted with no-line progressive lenses, which give co-workers little clue that they are bi- or trifocals.

Baked Apple Breakfast Co. starts day off right DOWNERS GROVE – Does anyone not like breakfast? The popularity of diners would suggest that not only does everyone love breakfast, but patrons will eat it just about anytime – morning or night. The thought holds true at The Baked Apple Breakfast Co. in Downers Grove, where breakfast definitely is the specialty, and you can get your favorites right up until close at 3 p.m. The eatery’s menu is playful and inventive with options such as the Company omelet – apples, cheddar cheese and a dollop of sour cream – and Red Velvet pancakes with a sweet cream cheese spread. Diners also are treated to plenty of lunch options. Available any time, the luncheon menu includes a well-rounded range of sandwiches, salads, wraps and burgers. On a recent Saturday trip, a friend and I decided to tackle both. I ordered the Wild Turkey – a panini-style sandwich of thick-cut roast turkey, bacon and cheddar. The side options give you a choice between fries and pasta salad.

It also comes with a pickle, as all sandwiches should. The turkey was moist and laid on deep, and the bacon retained a good crispiness, even under the pressed panini pressure. I’m glad I decided to go with the side of fries, because they absolutely stand out at Baked Apple. Long, thin and golden with a crispy crunch, these fried taters come in a bountiful bunch and really hit the spot. My dining companion was in the breakfast mood

The Baked Apple Breakfast Co. celebrated its grand opening earlier this year. and ordered the Uncle Jesse omelet – spinach, tomato and feta cheese. He really was feeling the hash browns, which, like the fries, were wonderfully crisp, with just the right amount of soft potato inside. His omelet was bright yellow with colorful glints of spinach and nicely filled. It was a substantial serving, and to Baked Apple’s credit, he nearly finished it all. Neither of us was in the mood for sweets on our recent visit, which was too bad. The menu has a lot of options for those who like waffles, pancakes and French toast. A few I considered for another visit are the Holly Berry French toast smothered in strawberries, blueberries and raspberries; the Company French toast, stuffed with cream cheese and covered in sauteed apples; and the Jane Goodall, consisting of your basic banana pancakes with walnuts. For traditionalists, there’s also a tasty looking eggs Benedict, which I spotted as it was delivered to a

Overall, we had a great time hanging out at The Baked Apple Breakfast Co. The price was good, and our coffee was strong and regularly topped off. York quarterback Charlie Rose throws a pass Tuesday during summer football practice.

7-on-7 impact By DAN SANTAROMITA dsantaromita@shawmedia.com ELMHURST – It’s not perfect, but it is fun. Not all coaches are fond of 7-on-7 football, but players seem to love it. It breaks up the grind of summer practices and is effective at teaching certain skills, like route-running and offensive chemistry. “The kids love it more than the coaches I think,” IC Catholic coach Bill Krefft said. “I think it’s beneficial. It’s not 100-percent perfect, and I don’t expect it to be.” Krefft’s reservations stem

Upcoming 7-on-7 events • Thursday: York at Addison Trail for West Suburban Conference 7-on-7 • July 18: IC Catholic at Buffalo Grove from the potential bad habits on the defensive side. The lack of actual tackling, players are downed by touch, changes the way players approach the point of contact. On top of that, both Elmhurst football teams, IC and York, use run-heavy offenses

York, IC players relish passing-focused competitions that add excitement to summer grind so mandatory passing isn’t the most efficient practice for those teams. As a result, neither team competes in numerous 7-on-7s. The Knights haven’t started summer camp yet and the Dukes scheduled two 7-on-7s for the summer. However, there’s value from participating. Defenses see different looks than what they see in practice. “I like 7-on-7s because then you get to see some of the other competition from around the area,” York senior linebacker Joe Helton said. “I really like going up against passing rather than running.”

York already took part in a 7-on-7 at Prospect and has one more scheduled for July 11. Addison Trail will host the West Suburban Conference event so familiar teams can go head to head in the summer. “I think it’s more fun going against teams we’re actually going to play during the season as opposed to playing teams like Prospect, some of those random ones,” York senior cornerback Ted Harrold said. “I like seeing the actual competition we’re going to be seeing during the year.” York coach Steve Nye sin-

gled out competition as the best aspect of 7-on-7. Summer practices are great for conditioning, strength and learning plays, but they don’t test players in pressure situations. Seeing the cream rise up during live action football, even if a modified version, is something for which Nye watches closely. “That’s really what you find out about is how they compete and how they react going against someone different,” Nye said. “They get sick of hitting each other and playing against each other.”

FOOD FOR THOUGHT

Gluten-free meals Get your gluten-free menu started with these tips: n Start your day with a gluten-free English muffin that’s crispy outside, fluffy inside and topped with delicious, nutritious goodies. Try topping yours with mashed avocado that’s been whisked with crushed chili, a splash of lime juice and a pinch of salt. Or, if you like something sweeter, try gluten-free almond butter with raspberries, blackberries or a dash of cinnamon sugar. n Go beyond the basics for your midday meal with a standout sandwich. Rethink tuna salad by using Dijon mustard instead of mayo and adding capers, diced sundried tomatoes and preserved lemon. Or go for a veggie extravaganza with portobello mushrooms, roasted red peppers, crunchy sprouts and hummus. n Everyone loves pizza for dinner. Using gluten-free tortillas, the whole family can create personalized minipizzas with thin, crunchy crusts. Simply assemble the toppings of choice and either grill or toast in the oven.

American as ... Fourth of July is not complete without apple pie By Lisa Messinger Creators Syndicate

EaSY RECIPE

Chicken Satay Prep time: 15 minutes Refrigerate: 1 hour Cook time: 6 minutes n 2 T fish sauce n 2 T red curry paste n 2 t minced fresh lemon grass n 1 pound boneless, skinless chicken breasts, cut into 3/4inch strips n Bamboo skewers n 1/2 cup storebought peanut satay sauce Mix coconut milk, fish sauce, curry paste and lemon grass in small bowl until well blended. Place chicken in large resealable plastic bag or glass dish. add marinade; toss to coat well. Refrigerate 1 hour or longer for extra flavor. Remove chicken from marinade. Discard any remaining marinade. Soak bamboo skewers thoroughly in water for at least 30 minutes before threading with chicken. This prevents them from burning when on the grill. Thread chicken strips onto skewers. Broil or grill over medium-high heat 3 minutes per side or until chicken is cooked through. Serve with peanut satay sauce for dipping.

Freedom is the name of the game on the Fourth of July. So why not extend that privilege in a fun way to your party guests’ taste buds? Alongside your red, white and blue decorations, paper plates and cups, make everything you set on the outdoor buffet a playful and delicious choice they can decide upon, such as: n Platters of large, juicy red, green and purple grapes. n Bowls of bananas and plantains. n Salad bar with romaine, arugula and spinach. n Angus beef hot dogs, turkey hot dogs and tofu hot dogs. n White frankfurter buns, wholegrain frankfurter buns and pretzel frankfurter buns. n All-American, Dijon and spicy mustard. n Plain potato chips, sour cream and chive potato chips and cheddar potato chips. n Orange juice, orange soda and orange-flavored iced tea. And for dessert, why not serve both this outstanding all-American apple pie and the famed French upside-down apple pie (tarte tatin). Lisa Messinger is a first-place winner in food writing from the Association of Food Journalists and the author of seven food books, including “Mrs. Cubbison’s Best Stuffing Cookbook” and “The Sourdough Bread Bowl Cookbook.”

All-American Apple Pie Yields 1 9-inch pie n 1 (9-inch) store-bought or homemade pie crust that includes top and bottom n 6 to 8 preferably firm and slightly tart apples, such as Granny Smith, Gravesteins or Rhode Island Greenings (about 3 pounds) n Granulated sugar (see note) n Ground cinnamon, to taste n About 3 T sifted all-purpose flour n 3 T butter, cut in small bits If crusts are homemade, keep them chilled. Preheat oven to 375 F. Peel and core the apples and slice them about 1/4-inch thick. Toss with sugar and cinnamon and with the flour. Fill the pie’s bottom crust

with apple slices, mounding them somewhat in center. Dot with butter. Cover loosely with top crust, using a little water to seal crusts together. Crimp edges using a fork or the tip of a knife, making several dents in the top crust. Place in the preheated oven and bake for 1 hour, or until

golden brown and giving off a pleasant scent. Preferably serve warm. Note: The amount of sugar is determined by how sweet the apples are.

Puff Pastry Tarte Tatin Yields 6 to 8 servings n 1/4 pound (1 stick) unsalted butter n 1 1/2 cups sugar, divided n 10 Golden Delicious apples n 2 T lemon juice n 1 9-inch circle pre-baked puff pastry (see note) Preheat oven to 350 F. In a 9-inch ovenproof skillet, melt butter over mediumhigh heat. Stir in 1/2 cup of the sugar and cook, stirring constantly until it turns golden brown. Carefully remove from heat and set aside. Peel, core and quarter the apples. In a nonreactive bowl, toss together the apples and lemon juice. arrange apple quarters rounded sides down in the ovenproof skillet, like a flower pattern, filling in the gaps with more apples placed curved side up. Sprinkle 1/2 cup sugar over the apples.

Cook over medium heat until the apples start to brown, about 5 minutes. Transfer the skillet to the oven and cook until the apples are tender, 20 to 30 minutes more. Remove from the heat and let the apples cool to room temperature. Before serving, preheat the broiler. Return the pan to medium heat, just until the caramel softens enough for apples to loosen. Remove the pan from the heat and top the apples with the pre-baked pastry. Invert a round heatproof serving platter over the pastry and, carefully holding the platter and skillet together, invert them; then lift off skillet to unmold the tarte tatin onto the platter. If any apples stick to the skillet or become dislodged, replace them on

the tarte tatin. Sprinkle the top evenly with the remaining sugar and caramelize it very briefly under the broiler. note: Follow manufacturer’s instructions for cutting and baking puff pastry.
