Meet restaurateurs Tom and Ashley Fahey from The Terrace Rooms & Wine.
They may be unintended restaurateurs, but Tom and Ashley Fahey have deliberately and thoughtfully crafted Terrace Rooms & Wine on the Ventnor seafront on the Isle of Wight as a wine-lover’s paradise. Tom is sommelier, buyer, host and chef, while Ashley runs front of house, design and marketing. Here’s how this partnership delivers one of the UK’s best wine lists.
TOM, WHAT WAS YOUR PATH TO BEING A RESTAURATEUR?
I was a guidebook inspector and restaurant reviewer for 15 years. I spent time in 70+ restaurant kitchens observing how things are done. In 2020, Ashley’s father bought a restaurant and needed help, I went to give it, then Ashley moved down to help and we found ourselves in charge of The Terrace in Yarmouth. We had always sworn we would never ever open a restaurant.
ASHLEY, WHAT WAS YOUR PATH INTO HOSPITALITY?
I’ve worked in hospitality my whole life. My father briefly had a restaurant when I was 11, so I was a novelty waitress that summer; then, as soon as I was allowed to get a job, I started waitressing in the local pub. I completed hotel management training before heading off to Barcelona, where I stumbled into the world of superyachts. I’ve been back in the UK for 12 years now working in private houses running cookery schools and then my father’s restaurant.
HOW DO THE TWO OF YOU WORK TOGETHER ACROSS FOOD, WINE AND OPERATIONS?
Aside from breakfast, Tom is in charge of all things food. I generally look after the hotel side of things but we both give input to each other’s elements of the business. While I’m involved in the wine side to a certain degree, it is definitely his domain as he is ridiculously good at it. We just don’t let him loose on room design or the overall guest experience.
YOUR WINE LIST IS SOMETHING SPECIAL. WHAT IS THE ETHOS BEHIND THIS LIST?
Tom: Inclusivity. We want to give the curious a route into the world of wine that isn’t price exclusive, so while the list is global and driven to show key styles and favourites, it’s also extremely affordable. There are barely ten wines that cost over £100; the median price is about £40.
YOU RECENTLY WON AN AWARD FOR THE BEST NEW ZEALAND WINE LIST IN THE UK. WHY ARE YOU DRAWN TO NZ WINES?
Ashley lived in Auckland for a year – we drank a lot of New Zealand wine as a result. What expanded the representation was our search for immediacy and deliciousness at a good price point. New Zealand producers deliver this in spades.
WHAT FACTORS HELP YOU DECIDE A WINE IS ON THE LIST?
Since the Pinot Noir Conference in New Zealand and visiting so many vineyards where I could speak to viticulturalists and winemakers, I’ve realised the importance of sustainability. We’ve dropped a lot of lines where we can’t get straight answers about practices in the vineyard. Outside this, wines are picked for a number of reasons – perhaps to deliver a particular tasting, perhaps they are better value or more delicious than an existing line, perhaps they make a statement about a particular style or region, or perhaps they are made by a key producer.





DO YOU EVER DISAGREE ON WINES?
Ashley: It can happen. We have a pleasant Loire Sauvignon from a top Sancerre producer that I’m attached to because it sells well and has a great price point, while Tom thinks an example of modern biodynamic Sancerre would be better in the slot. The result will likely be finding something that we no longer feel is relevant so we’ll lose one and the debate is settled.
HOW OFTEN DO THE WINES CHANGE?
Constantly. We have a bin-end selection in the bar where guests can take a mixed case on departure for £68. It’s a big saving and it works because we’re always finding new wines. We sometimes have to change due to vintage, too. 2024 has not been a great one in Europe so we might skip it altogether. About 25% of our list can never be rebought due to age or rarity so when those lines end, we need another to take the slot.
YOUR ROSÉ LIST HAS ALSO BEEN RECOGNISED. WHAT IS IT ABOUT ROSÉ THAT DRAWS OUR INTEREST?
Tom: We’re by the sea, so guests naturally want to drink rosé but, perhaps more importantly, rosé is a neglected and misunderstood category. Because so much of our ethos lies in encouraging an interest in wine, we latched on to the opportunity rose presented. Dark rosé isn’t sweet. Pale rosé isn’t always dry. Rosé is as varied and complex as white or red. It can be oaked, it can be tannic, it can be natural and funky or clean and delicate. We have fun with tastings that demonstrate all of these things in the glass.

WHAT ROSÉ FROM YOUR CURRENT LIST DO YOU CONSIDER AS THE BEST ALL-ROUNDER?
Michel Seresin’s ‘Zosia’ Pinot Noir Rosé is a brilliant all-rounder. Clean flavours, crisp but rounded acidity and deeply concentrated fruit with so much power and a hint of lactic balance from partial malolactic.
YOU START YOUR MENU FROM THE WINE. HOW DOES THAT WORK?
Most sommeliers are presented with a dish by a chef and tasked with picking a wine to match. Because I perform both roles, I can create dishes to match wines. Often I work based on flavour matching – so I make a warm tartare sauce with salted gooseberries and asparagus pickled in elderflower vinegar that mirrors the flavours of Marlborough Sauvignon. Another classic is Island dairy beef with stuffed padron pepper, elderberry and eucalyptus paired with Coonawarra Cab. The berries, green pepper and eucalyptus are exact mirrors and the weight and acidity of the wine do a lot to balance and lift the steak and sauce.
IS THERE A COUNTRY TO WATCH FOR WINE AFICIONADOS?
I’d urge consumers to explore Spain in more depth than Rioja and Alberino. In every region, key growers are pushing to rediscover wine heritage that’s been lost in the commercial bulk winemaking of the dictatorship. Those tiny, brave wineries spearheading the reemergence of terroir-first winemaking and rediscovery of unique, indigenous grapes that actually mean something in the glass make up a tiny proportion of output and it’s only with consumer knowledge that these initiatives can be made the norm. For price-aware drinkers looking for quality and excitement, Spain is hard to beat.
DO YOU HAVE THAT ONE BOTTLE THAT IS WAITING FOR THE RIGHT OCCASION?
Yes, a jeroboam of Domaine Pinson Mont de MIlleu 1er Cru Chablis 2016. It was bought for us on our wedding day by a dear friend. We will be cracking it in December for our 10th anniversary, alongside the winemaker who is popping over from Chablis for the occasion.
WHAT WINE IS YOUR CURRENT PICK TO SHARE OVER A DINNER WITH FRIENDS?
Chateaux Doyenne’s 2018 Cotes du Bordeaux is the wine I open again and again when I want to give guests a wow moment. It’s one of the best, yet the lack of prestige associated with the domaine brings it in at only £20 retail. Come here and try it – it’s worth the ferry price alone!

From Capital to countryside: why London buyers continue to choose the Cotswolds
For decades, London and the Cotswolds have been linked by more than distance. The capital brings careers, culture and pace; the Cotswolds offers space, beauty and permanence. Together they form one of Britain’s most enduring property relationships; not an escape from London, but a rebalancing around it.
“The appeal isn’t about turning your back on London,” says Fergus Mitchell, founder and director of The Cotswold Letting Agency and Property Search Co. “For many buyers, it’s about gaining the best of both worlds, a rural home environment that still allows access to the capital when needed.”
The Cotswolds’ visual identity, limestone villages, historic towns and protected countryside gives it unusual consistency. Planning constraints limit overdevelopment, preserving character and supporting long-term desirability.
For London buyers used to compact plots and dense streets, the change is immediate: gardens, outlook and architectural individuality become everyday features. “Cotswold property has an emotional dimension,” says Naomi Gleeson, cofounder of Property Search Co. “People connect with the architecture and landscape in a way that’s difficult to replicate elsewhere. That emotional pull often underpins the decision to move.”
Rail services from stations such as Kingham, Charlbury, Moreton-in-Marsh and Kemble typically reach London in around 70–90 minutes, while the M4, M5 and A40 support flexible travel. With hybrid working now common, distance is measured in journey time rather than mileage.
“The perception of what counts as commutable has shifted,” Mitchell explains. “If you only need to be in London part-time, living in the Cotswolds becomes entirely practical rather than aspirational.”
SCHOOLS AND FAMILY PRIORITIES THAT ANCHOR THE MOVE
Education is often decisive. The region sits within reach of highly regarded schools across Oxfordshire, Gloucestershire and Wiltshire, allowing families to trade urban density for rural space without sacrificing academic options. Villages within realistic school reach and station access tend to see sustained London demand and price resilience.
People connect with the architecture and landscape in a way that’s difficult to replicate elsewhere.
COMMUNITY LIFE REPLACING URBAN DENSITY
A common concern is social isolation. In reality, many arrivals find the opposite: village events, clubs and local networks create frequent interaction and shared identity. “There’s a misconception that rural living is isolating,” Gleeson says. “In the Cotswolds, communities are active and socially rich. Many buyers are surprised by how connected they feel once settled.” The presence of many former Londoners further smooths transition, blending metropolitan expectations with rural rhythms.
SCARCITY THAT SUSTAINS THE LONDON–COTSWOLDS LINK
Protected landscape and limited new development constrain supply, particularly in prime villages and commuter-friendly towns. Many transactions remain private or off-market, reinforcing exclusivity.



This scarcity keeps demand closely tied to London: buyers continue seeking countryside living within reach of the capital. Ultimately, the relationship endures because it answers a modern aspiration –careers and culture in London, daily life in landscape and community.
“The move is rarely about abandoning the city,” Mitchell reflects. “It’s about redefining how you live around it.”

With up to 2,000 limestone karsts and islets, Ha Long Bay in Northern Vietnam is geologically spectacular, drawing visitors from across the globe to cruise its calm waters.
Giselle Whiteaker lingers in this landscape at the InterContinental Halong Bay Resort.
Through the floor-to-ceiling windows in the hotel lobby, we can make out the outlines of the limestone karst formations that make up Ha Long Bay. On this unseasonably cold day for Northern Vietnam, they are shrouded in a light mist, the water opalescent without the sun to draw out its emerald-green undertones. The sight is mesmerising, mystical, but inside my head there’s a soundtrack running of ‘Puff, the Magic Dragon’, as he ‘frolicked in the autumn mist’. When you consider that Ha Long translates to ‘descending dragon’, this could very well be the mythical land of Honah Lee.
My friend Steph and I have arrived at the InterContinental Halong Bay Resort after a few days cruising through Lan Ha Bay, Ha Long’s equally beautiful but less-visited sister further south. With memories of kayaking past the dangling lines of oyster farms, learning how to shape the perfect fresh spring roll, cycling to the tiny fishing village of Viet Hai within Cat Ba National Park, and drifting past long-lived traditional fishing boats, we’re ready for some downtime. This is the perfect place for it.
The first sign that this is a resort with design at the forefront sits in the circle of the driveway – an intricate golden filigree sculpture resembling fan coral, with water tumbling from its base. Flanking the walkway leading to the charcoal and gold entrance, walls cascading with water end in a pair of koi ponds, dotted with greenery. Then inside, there’s a statement chandelier-like light fixture illuminating the lobby, the check-in desks set to the sides to make way for the view of the bay directly ahead.
The resort’s architecture, led by luxury hospitality architecture firm WATG, reflects the heritage of the region, weaving together narratives from ancient folklore and celebrating the interplay of land, sea, islands and inlets that forms Ha Long Bay’s natural beauty. This is extended by the selection of artworks across the property, all crafted by local artists. These include an arresting geological ink painting alluding to the karsts behind the concierge desk, a sculpted fisherman dangling a line into one of the swimming pools, and another resting on a roughly hewn crescent visible through the windows of the Marina Kitchen, one of several on-site dining establishments.

The interiors, conceived by international design firm P49Deesign, are equally evocative, given room to shine through extended ceiling heights, large picture windows and generously proportioned spaces. This extends to the 275 guestrooms, suites, private villas and residences. Our entry-level Classic Twin has a footprint of 53 square metres and it goes up from there – all the way to the stunning oceanfront Halong Bay Villa that spans 565 square metres and has a private outdoor pool.
The colour palette across the resort highlights the striking colours of the land and sea, with turquoise blue upholstery, soft greys and timber and brass
accents, with playful textures reminiscent of fish scales, rippling water and iridescent pearls. With all rooms facing the bay, it draws the outside in, so the room becomes an extension of the landscape.
Ensconced in our room, I leave Steph to make the most of our deep bathtub, which benefits from sliding doors that open to the room for a soak with a view. Making my way to the Hidden Lagoon Spa, I unintentionally take a circuitous route that leads me outside, past a waterfall, through a rocky garden, and along timber-framed walkways bordered with running water. Water, it seems, is ever-present here.

Sitting in the calm sanctuary that is the spa lobby, I peruse the treatments on offer. Hidden Lagoon is the sole spa in Northern Vietnam to offer an MLX Quartz sand bed, which is tempting, but after sweating through a volcanic sand bath in Japan, I’m unsure of my heat tolerance. Instead, I opt for a massage that promises to ease tension through a combination of Swedish and Vietnamese techniques. A gong chimes as my therapist, Ha, leads me into the treatment room for a delicious hour of kneading, stretching and soothing, after which I retire to the relaxation room and nibble on dried dragon fruit to accompany my apple and ginger tea.

We lean on the bar, watching the bartender craft cocktails with creativity and precision, balancing delicate wafers topped







with sugared gel and tiny flowers on the edge of the glasses. Steph’s Indigo Reverie – a combination of Vietnamese vodka, ume, shiso and butterfly pea – comes in a tall glass that sits on an illuminated wooden base, the beverage appearing to glow from within. My choice, Celestial Ember, is an intriguing blend of rum, sweet potato and smoked chilli honey, topped with a frothy layer of espuma that makes me think of Vietnamese egg coffee with a spicy edge.

Savouring our beverages, delightfully content, we sit facing the bay of the descending dragon as the sky slowly darkens. In the distance, pinpricks of light hint at boats chugging their way to their overnight mooring spots. We enjoyed our time on the water, but it’s cold outside and the cocktails are warming us from within. It is with some reluctance several hours later that we slide from our perches in search of a light dinner before bed.
Arriving at Marina Kitchen in the morning, we are offered a window table that looks over the beach to the water, still milky on this overcast day. We linger over breakfast, grazing from the most extensive
buffet known to man, sipping Vietnamese coffee while quietly humming ‘Puff, the Magic Dragon’. We’re on holiday after all, with nowhere else we need to be. Ha Long has a way of distorting time, of calming haste and making ambitious itineraries feel beside the point. Here, cradled between water and sky, it feels natural to pause.
Later, we’ll need to decide how to fill our day; perhaps a stroll along the beach, or a hike up Bai Tho Mountain, stopping in at nearby Bao Hai Linh Thong Pagoda. We could ride the cable car at the Sun World Ha Long amusement park. A little further afield, we could visit Yoko Onsen to take a dip in the Japanese-style mineral baths in the Quang Hanh valley, surrounded by green forests and mountains. Or, we could just stay right here and breathe in a landscape crafted over millennia.

A new floating sound bath experience at Langdale Hotel invites guests to surrender to stillness in the heart of the Lake District. Here’s how water and sound waves soothe body and mind.
It’s dark outside, a light breeze whispering through the trees, while inside, the lights have been dimmed. You’re lying on an inflatable bed, your head resting on an airfilled pillow. Eyes closed, you slowly drift around the warm-water pool. Surrounded by gentle vibrations and resonant tones, your body is comfortably cradled while sound waves ripple through you, inviting deep relaxation, emotional release and energetic balance. You take a deep breath and feel a profound sense of calm flood your senses, the floating sound bath soothing your soul.
The floating sound baths are a new offering from Langdale Hotel in the Lake District. The almost monthly restorative wellness experience is centred on a ritual that combines warm-water buoyancy and therapeutic sound in a one-hour evening session designed to soothe body and mind.

The Langdale Hotel sits deep within the Langdale Valley on an estate that spans some 35 acres. This is a landscape defined by its quiet drama: steep fells, shifting light and pockets of ancient woodland. And while it may be a region where wellness has historically taken the form of fell walks, cold-water dips and lungfuls of bracing air, there’s something to be said for slowing down and indulging in some serious ‘me’ time.
The floating sound bath ritual takes place in the hotel’s indoor pool after hours. The lighting is softened and participants are gently guided onto the inflatable beds and set adrift.
