Mercury Towers is celebrating its second anniversary. How has the destination evolved since it first opened its doors?
Mercury Towers has evolved from a retailfocused concept into a fully immersive lifestyle destination. Today, it offers a complete 360° experience, featuring family-friendly attractions like Planet Play and Odyssey, the Museum of Illusions, a five-star hotel, over fifteen restaurants, a state-of-the-art spa, gym, and wellness services. It has truly transformed into a vibrant entertainment and leisure hub for all.
What have been the standout moments or events that have helped define Mercury’s presence over the past two years?
Some of the most defining moments have been our collaborations with key stakeholders such as Malta Artisan Markets, Allied Rainbow Communities (ARC), and PBS as official partners for the Euro Village. We’ve hosted cultural activities that celebrate Malta’s heritage, from historical reenactments to showcasing traditional Maltese produce and animals. Other highlights include the creation of a full-scale skate park, outdoor kids’ activities, and themed events such as International Yoga Day and World Radio Day. The official launches of Luciano, Radio, Cabana, and the opening of ME Malta have also been major milestones.
For someone visiting Mercury for the first time, how would you describe what makes it special?
Mercury Towers is a unique destination with something for everyone, catering to different age groups, interests, and budgets. Visitors can enjoy a full day out with family, spend quality time with loved ones, or simply unwind and treat themselves to a shopping or dining experience. With ME Malta, our five-star hotel, guests can even spend an entire weekend within the Mercury district, enjoying diverse cuisines, entertainment options, and wellness experiences.
Mercury brings together entertainment, dining, retail, and hospitality in one space. How do these elements create a complete lifestyle experience?

ME Malta was the cherry on top of the entire project. As one of the fastest-growing luxury hotel brands, ME by Meliá’s first five-star property in Malta has significantly enhanced Mercury’s profile. Q: Stepping into your new role as General Manager at ME Malta, what attracted you most to this position and to the Mercury Malta property in particular?
Since I had the privilege of being part of the pre-opening team within Mercury for a few years, I had contributed towards several decisions that I knew would positively impact both Mercury and ME Malta in the long term. Following the successful opening of Mercury Towers, transitioning the day-to-day operational responsibilities of the hotel felt like second nature, and having worked for several years in the hospitality sector made it all the easier. I love the hotel business, so this felt a bit like coming full circle. >>


Q: ME Malta is known for blending contemporary luxury with local culture. How do you envision bringing this brand philosophy to life here in Malta?
The hotel is lucky to have a boutique heart with all the comforts of an international luxury lifestyle brand unique to Malta. We activate the brand vision through seamless guest experiences and genuine, culturally immersive journeys — from collaborating with local artists to exposing our guests to traditional crafts and the island’s expression of music and food.
To me, luxury has moved away from grandiose chandeliers and heavy curtains. Nowadays, expectations are shaped by memorable, tailor–made guest experiences. The soft metrics — how we make a guest feel through discreet interactions and meaningful connections — have become essential in a luxury setup.

Q: The hospitality landscape in Malta is evolving rapidly. What opportunities do you see for ME Malta to stand out and redefine the guest experience on the island?
The fact that ME Malta has a boutique setup, with only 170 keys, allows us to be more agile and focused on the guest experience. Our unique positioning within Mercury Towers allows for a more complete expression of true hospitality.
ME Malta is the only hotel on the island with special attributes that include vast entertainment options, a premium retail shopping experience, and guaranteed access to some of Malta’s best restaurants within Mercury Towers.
Q: What key priorities or initiatives are you focusing on during your first year as GM to enhance both guest satisfaction and team culture?
There cannot be one without the other. The team is the only significant differentiator between a guest-centric hotel and any other. To me, the most important people within the hotel are my team, because they are the specialists and craftsmen of true hospitality. Staff retention, working collaboratively, and maintaining a flat management structure have been essential so that our team can contribute to and own the guest journey. The result is that ME Malta has become the leader within the ME brand for guest satisfaction — an acknowledgment that makes us all very proud.

Q: Sustainability and design are increasingly important to travellers. How will ME Malta reflect these values?
From the very beginning, the fact that ME Malta is housed within a Zaha Hadid monument is already a testament to how strongly we believe in design as an expression of the brand’s overarching vision. The hotel’s interiors were created by a leading international design firm, but we are proud to have local elements integrated throughout all our rooms. It is important to bring a Maltese flair to the property and, in turn, to the guest experience.
Regarding sustainability, Meliá has been recognised for several years as one of the most sustainable companies in the world — a recognition we are proud of and determined to uphold worldwide. ME Malta must play its part in this global vision of excellence. Sustainability is a

core value in every decision we make. To us, it is more than a buzzword or the use of recyclable materials; it is a circular approach that considers social, environmental, and economic responsibility in equal measure.
Q: Looking ahead, what’s your vision for ME Malta’s role within Malta’s luxury tourism scene, and what do you hope guests will remember most about their stay?
When a guest visits us, we are given the privilege — and the responsibility — to shine a light on Malta’s beautiful culture and heritage. I hope that we continue to create lasting, positive memories of the islands and the property. Our aspiration is to offer Malta a product to be proud of, and to provide better-quality options for potential visitors to the islands.
As ME Malta steps confidently into its debut season, its vision is clear: to redefine luxury through emotion, creativity, and a sense of place. Q: You lead the kitchens at three of Mercurys’ most distinctive venues: Luciano, Cabana, and Radio Rooftop. How would you describe the overall culinary identity that connects them?
Each venue has its own personality, but all share a focus on quality, authenticity, and flavour. Luciano offers refined Italian cuisine with Gino D’Acampo, Cabana celebrates Maltese influences with ftira-inspired pizzas, and Radio Rooftop serves vibrant Japanese-inspired dishes. Across all three, the common thread is a passion for ingredients, creativity, and memorable dining experiences.
Q: What drew you to Mercury and this dynamic, multi-venue role?
ME Malta and Mercury Towers presented a unique challenge, three very different culinary concepts under one roof. After ten years in anoth-
er five-star property, I was drawn to the opportunity to shape diverse dining experiences, collaborate with talented teams, and push creative boundaries while honouring local flavours and Mediterranean influences.
Q: Each of your kitchens offers different dining experiences. How do you maintain their unique personalities while ensuring consistency in quality and creativity?
It starts with defining the DNA and story of each venue. Luciano is rooted in authentic Italian cuisine crafted from prime ingredients, Cabana is approachable yet thoughtful, and Radio Rooftop is fun, contemporary, and sharing-focused, with Japanese inspiration. While the concepts differ, we maintain strict standards, meticulous sourcing, and clear communication across all kitchens. Creativity is encouraged in every venue, but always with purpose to preserve each kitchen’s identity.
Q: Luciano, Cabana, and Radio Rooftop each have their own following. What do you think keeps guests coming back to each of them?
Guests return because each venue delivers something unique, reliable, and memorable. Luciano offers refined Italian dining with attention to detail and an extensive wine list. Cabana is a go-to for vibrant, comforting dishes served in a relaxed setting. Radio Rooftop serves innovative, playful Japanese cuisine and unique cocktails that make every visit stand out. Q: Do you find that each restaurant attracts a different type of diner or mood, and how does that shape your dishes?
Absolutely. Luciano guests often seek a memorable Italian dining experience, from pasta to premium cuts of meat or fresh fish. Cabana din-
ers enjoy comfort food in a relaxed atmosphere, while Radio Rooftop attracts a younger, livelier crowd looking for fun, flavour-packed bites with Japanese flair and a Mediterranean twist. All outlets are family-friendly. Understanding these moods allows us to tailor dishes in style, portion, and presentation while maintaining the same high standards.
Managing three busy kitchens under one umbrella is no small feat. What does a typical day look like for you?
A typical day balances leadership, creativity, and operations. I start with briefings in all kitchens, connecting with teams, checking product supply, reviewing menus, and overseeing quality.

Mornings often include breakfast service and banqueting operations for events. Afternoons are spent on guest requests, menu development, and sourcing new ingredients or suppliers. Evenings focus on pre-service tastings with the head chefs, followed by service oversight and quality control across all outlets.
Q: Collaboration must be key. How do you work with your team of chefs to keep ideas fresh and evolving?
We foster open communication and creative freedom. Tastings and brainstorming sessions allow every chef to contribute ideas, ensuring our menus evolve while staying true to each venue’s character. If something is not quite right, we refine it until it is perfect, both in taste and presentation.

Q: As Mercury celebrates its second anniversary, how do you feel the dining scene there has evolved since opening?
The dining scene at Mercury has become more vibrant and competitive, with guests expecting both quality and innovation. The development has set a new benchmark for multi-venue dining in Malta, offering diversity, creativity, and consistency across cuisines.
Q: Can you give us a hint of what is next — any new menu launches, collaborations, or surprises for diners?
Our menus change with the seasons, showcasing the freshest ingredients. There are plenty of new dishes and exciting surprises on the way — but you will have to come and try them yourself. I am keeping a few delicious secrets for now.

Q: Are there a few dishes that guests absolutely must try?
Definitely yes; our signature dish that our costumers must try are the tagliolini lemon and langoustine , our mini bun with sweet and sour pork , and of course our spaghetti pomodoro , with five different types of tomato.
Q: Italian cuisine is famous for its simplicity and emotion. What flavours instantly transport you back to Italy, and how do you bring that feeling to Malta’s table?
Usually the smell of freshly baked bread or pizza , the fresh scent of basil, the taste of a nice ragu , or the classic spaghetti with clams.
When it comes to expressing all these feelings , each of them different and unique to every one of us, I believe the best approach is to respect the product we are working with, allowing it to do most of the work, while blending our own culinary vision with the rich gastronomic history of Malta.
Q: Desserts often tell the last chapter of a meal. Which dessert best represents the personality of IT Malta?
Naturally, as an Italian restaurant, tiramisu is a must-try. It may be a simple dessert, but the sweetness of the mascarpone cream paired with the bitterness of the coffee creates, for me, the perfect balance for that final sweet bite of the evening. >>

Absolutely, our menus are always designed to respect the seasonality of the ingredients, so you can expect them to evolve over time.

Q: If you could describe IT Malta in just three words, the feeling you want guests to take with them after dining here, what would they be?

Malta’s approach to citizenship is undergoing a profound transformation. As of 29 April 2025, the previous “Exceptional Investor Naturalisation” (MEIN) programme, which granted citizenship through direct financial contributions, was suspended, making way for an updated merit-based framework rooted in exceptional service to Malta or humanity. This evolution reflects Malta’s aspiration to reward achievement, innovation, and social value, rather than simply capital inflows. Citizenship by Merit marks a pivotal shift — one where citizenship becomes recognition, not transaction. The renewed pathway centres on citizenship by merit, emphasising contributions in fields such as science, culture, philanthropy, sports, and social development. Applicants must demonstrate that their work or influence confers tangible advantages to Malta or humanity at large.
Eligibility under the Citizenship by Merit framework demands far more than wealth. Applicants must be at least 18 years old, reside in Malta for a minimum of 8 months prior to the application, and hold title to a residential property by way of purchase or lease. Above all, they must prove that their achievements offer tangible benefit to Malta, whether through scientific research, cultural advancement, technological innovation, entrepreneurship or philanthropic action.
Depending on the field of contribution, endorsements may be required from recognised Maltese authorities such as the University of Malta for academic or scientific initiatives, Arts Council Malta for cultural work, or national sports organisations for athletic achievement. These endorsements confirm that the applicant’s
work aligns with Malta’s strategic and social objectives.
The new framework’s credibility rests on rigorous due diligence. Every applicant undergoes extensive background verification through the Community Malta Agency (CMA), including police certificates from all countries of residence in the previous decade. Individuals with serious criminal records, international sanctions, or entries on INTERPOL or Europol lists are automatically disqualified.
This uncompromising standard reflects Malta’s commitment to maintaining the integrity of its citizenship and the trust of its European partners.
The process begins with the submission of a detailed proposal to the Community Malta Agency. This document outlines the applicant’s achievements and how their expertise, leadership, or philanthropy will contribute to Malta’s development or global reputation. If preliminary criteria are met, the individual is granted a one-year residence card linked to a Maltese address. During this period, an independent evaluation board reviews the evidence and submits its recommendation to the Minister responsible for citizenship, who makes the final determination.
This approach ensures that each case is examined on merit rather than monetary value. The system rewards substance over spectacle, impact over investment.
Successful applicants become full Maltese citizens, acquiring all rights of European Union membership, including freedom of movement across the EU and Schengen Area. Access to Malta’s robust healthcare and education
systems is included, as is the right to include one’s spouse or dependent children within the same application.
Yet the real value of this citizenship extends beyond legal privileges. It confers prestige and trust, a formal acknowledgment of excellence and contribution that reflects positively on both the individual and the Republic of Malta.
For entrepreneurs, investors, and innovators accustomed to the transactional nature of global residency programmes, Malta’s merit route offers a refreshing alternative. Alfie Borg’s work vibrates at the intersection of fashion, commerce, and high-octane pop culture. Born and raised in Malta, Borg began sketching on any surface he could find, a childhood insistence on image and colour that would mature into a signature visual language: saturated palettes, comic-book iconography, and incisive riffs on fame, faith, and politics. His canvases read like stylish manifestos and provocations, inviting viewers to reconsider the icons and ideologies that shape modern life.
Borg moves effortlessly between the studio and the boardroom. As chairman of Hudson Holdings, the vehicle through which leading sports and fashion brands entered markets across Malta, Africa, and Southern Europe, he applies a curator’s eye to brand storytelling. Earlier, after nine years as managing director of Time International Ltd, Borg led a management buyout in 2006 and reimagined the company as Hudson Holdings, transforming commercial legacy into contemporary momentum. That duality, creative impulse and strategic rigour, informs both his practice and his public projects.
On canvas, Borg favours bold colour, layered imagery, and crisp, kinetic composition. His pieces are confident and playful yet often quietly subversive, probing notions of identity and the commodification of culture. Recent exhibitions have paired visual spectacle with social purpose:100

percent of proceeds from his current shows are directed to the Hudson Foundation, the philanthropic arm he founded to amplify marginal voices and practical causes.
The Hudson Foundation supports Ukrainian refugee children in Malta, the Association for Abandoned Animals, environmental restoration projects such as olive-tree planting in Park tal-Majjistral, and inclusive play through a playground co-sponsored with HSBC for children with autism and behavioural challenges. Borg’s exhibitions thus operate as both cultural event and charitable campaign, where art functions as generosity. He lives in Malta with his wife, Veronica, and their family, children Tara, Tim, and two-year-old grandson Seb, Sean and fiancée Emily, and their dog Brandy.
On 29 November 2025, Borg opened his fourth solo exhibition, Heart, at Museum of Illusions, Mercury House, Malta. A selection of originals and limited-edition prints will be displayed at Mercury Mall for couple of weeks. All sales from shows had supported the Hudson Foundation.
