One of the biggest perks of living in a place where it never gets cold and rarely rains is that you can barbecue pretty much yearround. Barbecue is one of my favorite things on Earth. I have a kitchen cabinet full of spices and rubs — one of my favorites is a coffee/mango steak rub from Maui that I buy by the kilo. I buy charcoal in bulk, because if you use gas, you might as well be cooking indoors. And I currently have separate bins in the backyard for briquettes, lump charcoal and “a voring woods. The Chandler Fire Department visited our backyard twice in
one day because one of the neighbors accused me of burning trash. At ÿrst, I was highly insulted, but I think the second visit was because the ÿreÿghters were hoping the meat might be done. They didn’t even bring the truck the second time. They just walked over. Unfortunately for them, they were too early. Good barbecue takes time. My wife says that one of the happiest moments in my life since she’s known me was when we received a Weber kettle grill as a wedding present. So, yeah, barbecue is my thing. See BARBECUE, Page 2D

Looking for evidence that Phoenix barbecue is ascendant? Look no further. When I ÿrst assembled this list in May 2016, Little Miss BBQ ruled the roost. That much hasn’t changed. But after revisiting some fringe candidates, checking out reader sugges-
tions and dropping in on some of the Valley’s latest offerings, the barbecue class of 2018 looks a lot different than it did nearly two years ago. That’s progress, folks. But friendships have been destroyed over the deÿnition of barbecue, much less what constitutes “proper” or good barbecue. So before we get to the meat of the matter, a few ground rules: z We’re talking meat smoked low and

slow — long cooks at low temperatures, and plenty of smoke for the meat to absorb. Backyard barbecue When people think about barbecue and great barbecue towns, they usually talk about Kansas City or Memphis, or someplace in Texas that’s famous for great brisket. But I think I grew up in the best barbecue town there is: Detroit. At least, it felt that way to me. To get the best barbecue in Detroit, don’t look for a speciÿc restaurant, though there are some good barbecue joints in the area. The best barbecue in Detroit is served by invitation only. You have to know somebody. I’m talking about eating in somebody’s backyard. Some place where the people have roots in the South. People who can trace their family back to Texas or Tennessee or, in my case, Arkansas. I say you have to know someone because it’s about more than the food.
Michigan summers When I think about barbecue I also think about those precious summer holidays — in a place that gets as cold for much of the year as Michigan, summer holidays are special. The family would pile into whatever big Mercury my dad was driving at the time and head into the city for a cookout with our cousins. I found out later that some of these people weren’t even related to us at all. Some were from the part of Arkansas where my parents grew up or they went to the church my folks attended when they ÿrst moved to Michigan or they worked in the same factory as my dad. To us they were family, so I called them all cousins. Again, it wasn’t all about the food.
Different times and tastes My parents and their friends and relatives came up in a time and place where they felt meat had to be cooked beyond well-done. If you ate raw meat — they considered anything with even a little bit of pink in it raw — you could get worms or some other illness. So the meat was sometimes tough and dry. Another thing about those cookouts was that there were guys who liked to hunt in that mix. So there would be rabbit or squirrel or, once, a raccoon mixed in with the ribs and chicken I was hoping for. And it seemed to be a huge source of amusement for the adults to watch some kid who was a notoriously picky eater — that would be me — trying to ÿgure out what was a chicken leg and what belonged to some other animal. So a lot of times I just ate hot dogs.
Cousin Doc’s place The main reason I liked the cookouts was the people, and a favorite place to visit was Cousin Doc’s house. Doc was an actual relative. He was my father’s ÿrst cousin. And, no, he wasn’t a doctor. Nicknames are just a common thing with my family. Doc seemed like a bigger-than-life, imposing ÿgure when I was a little kid. He was (or seemed) tall and had a shaved head before that was a common thing. He smoked a lot and had a deep raspy voice. He also had only three and a half ÿngers on one hand, but that’s a story for another day. When I was little, I thought he had two thumbs. One of Doc’s favorite expressions, if he wanted you to go away or if he just felt like messing with you, was, “I’m gonna crack your jaw.” I never saw him crack anybody’s jaw, but I had no doubt he could do it if he felt like it. While Doc might seem like somebody a little kid would avoid, I always liked it
Servings: Allow 3-4 wing sections per person. ⁄2 cup kosher salt

3-4 chicken wing sections per person or use other pieces according to the number of people you plan to feed Mix all ingredients (except wings) in 1 quart water, then add another quart cold water. Place wings (or whatever chicken parts you wish to cook) in a dish and cover with the brine. Allow chicken

degrees) until done. Cooking time will depend on size of the pieces. Smoke from pecan chips or chunks work well with this recipe. Adapted by Weldon Johnson
Cola Rib Marinade Somewhat sweet, somewhat spicy marinade that works well with pork ribs. Good with or without barbecue sauce. Servings: 4-6. 2 cups cola ⁄2 cup bourbon
1
⁄2 cup brown sugar
1
2 tablespoons dry mustard 2 tablespoons chili flakes 1 tablespoon minced garlic 1 teaspoon rosemary 2 slabs baby back pork ribs Whisk ingredients and set aside. Prepare baby back ribs by removing membrane from back (if butcher hasn’t done it already) and trimming excess fat. Place ribs in a glass or plastic dish (don’t use foil pans as it can react with the acid in the marinade) and place ribs in cola liquid and cover with plastic rap. A plastic food storage bag will also do, but you may have to divide the meat. Marinade for at least 4 hours up to overnight.
Cola-marinated baby back pork ribs on the grill.
Prepare grill for indirect heat. After coals are lit and start to ash over, add wood chunks or chips (cherry or pecan works well with this marinade) to create smoke. Place ribs on rack away from heat. Put cover on grill and allow ribs to cook over low, indirect heat (about 225
degrees) for about 2 hours. Check after an hour. Once meat begins to pull back from bone, apply sauce, wrap ribs in foil and continue cooking on low heat for another hour. Adapted by Weldon Johnson
when he was around for a couple of reasons. Doc was a good story teller and he could always make my father laugh.
Dad worked hard My dad, at least when I was a little kid, seemed like the most serious guy in the world. He worked the second shift at the huge Ford plant in Dearborn. We toured the place when I was in elementary school and it became a pretty good approximation of what I thought hell would look like. It was hot, loud, dirty and smelled like what could have been ÿre and brimstone, though it was actually molten iron and steel. It seemed like the most unpleasant place on Earth when our class took that tour. My dad went there six days a week. At that time, he worked a shift where they would work six days and get two days o“ . As a result, my dad’s time o“ shifted each week. He went to work at about 3:30 p.m. and got home around midnight. That meant he was usually asleep when I got up to go to school in the morning and he left for work before I got home from school. So the only time I would really see him was on the weekends or in the summers, when I didn’t have school. I loved my dad and I know he loved me, but I’m guessing working in that plant didn’t put him in the best of moods. It See BARBECUE, Page 3D

A welcome break But on those holidays when we went to Detroit to have a cookout at Doc’s or one of our other cousin’s places, Dad’s mood was lighter. It was a chance for him to swap stories about home (Arkansas), listen to his kind of music (Dad was a fan of Solomon Burke and Bobby “Blue” Bland) or do whatever else grown-ups did when they got together. So I knew that if Doc was going to be around, my dad’s high-pitched, screeching laugh that you only heard when he was really tickled about something would come out. One of the stories that Doc brought up a few times, and one of my favorites, involved him, his brother “Doughbelly” and my dad. It started something like this. “Hey,” Doc would say to me. “Ask your daddy why he pushed Doughbelly in that ÿre when we were little.” If somebody says something like that to you, you’re going to follow up, right? So I’d ask, “Daddy, why did you push Cousin Doughbelly in a ÿre?” My dad, who was sitting maybe 10 feet away, is hearing this whole thing. “I didn’t push Doughbelly in that ÿre, you know I didn’t,” he answered Doc. They’d start talking about some long-remembered day back in Arkansas that somehow ended up with Doughbelly on ÿre. This debate happened a few times when they got together. It always ended up with them talking loud and laughing louder. Before you think my dad was some kind of psycho who went around trying to knock o“ his cousins, Doughbelly was ÿne as far as I knew. We would see him most summers when we went to Arkansas, and if I hadn’t heard this story, I wouldn’t have thought Dough-
belly had been in any ÿre. As a side note, my great-aunt Fanny kind of settled the “who pushed Doughbelly into the ÿre” question one day long after I ÿrst heard the story. She said Dad didn’t push Doughbelly into the ÿre, he just tripped and fell. “But your daddy didn’t help him get out of it, though,” she added. Dad didn’t dispute that, so I guess it was true. Those cookouts were just a good time.
around my nephew as he stood there tending to the food. I looked at him at that moment and for a second I pictured Cousin Doc. I could just about hear that deep raspy voice saying “I’m gonna crack your jaw” and I could almost hear my dad laughing. Here are a couple of favorite recipes I have adapted over the years, but I’ve always felt part of the fun of barbecue is experimenting to ÿnd out what suits your tastes.

I was thinking about those times a couple of years ago when I was back home. For Dad and Doc, home was always Arkansas. When I talk about home, I mean Michigan. We got together at my brother Kenn’s place that day. As we were talking about whatever it is grown folks talk about, I noticed my nieces and nephews running around and playing, or, more likely with the teens among them, staring at their phones. I wondered what memories they were taking away from our family gatherings. I wondered if there was a Cousin Doc they’d be talking about after we were gone. They were too young to have met Doc and, for some of the youngest among them, my dad. As we were talking and joking, there was a point when one of my teenage nephews was standing over the grill ‘ipping hamburgers and hot dogs — we have normal food at our cookouts now, no more raccoons are harmed. He was wearing a T-shirt that was a little too tight and we were giving him a hard time about that. I think he was trying to show o“ his muscles or something. At one point, the ÿre ‘ar ed up and smoke swirled

St. Louis-style ribs at Andrew’s BBQ in Tempe.
Smoked Continued from Page 1D
We’re not playing tradition police. Meat is not the same as it is in your hometown? Don’t care. If it tastes good, let’s eat it. z We care about consistency, but remember that barbecue is a ÿnicky beast. Tiny variations in the wood or the cook or the meat or the weather can make for wild swings in quality. I’ve visited more than 4 0 barbecue joints across Phoenix and these are the dozen I’d return to.

Andrew’s BBQ A catering outÿt that opens for lunch during the week, Andrew’s has limited hours and a limited selection but a lot of “a vor. Andrew Vander Stroep feeds cherrywood into a Southern Pride smoker, putting a clean, sweet smoke on tender, meaty cuts. The pulled pork is solid when you get some bark, but better is the brisket, tender and sweet even when cut from the “at. On Wednesdays and Thursdays, Andrew’s serves up excellent ribs with a “a vorful rub, robust bark and texture that ÿghts back just enough. Details: 730 E. Bootleggers Modern American Smokehouse It’s unlikely to appeal to purists, but for those who don’t mind coloring outside the lines a bit, Bootleggers can turn out some tasty meat. The brisket isn’t ready to play with the Valley’s heavy hitters, but the pulled pork

is “a vorful with good texture, dense and meaty ribs are served with a thin, sweet glaze, and the hot links — stu‘ ed by Schreiner’s — bring formidable heat and a nice snap. Jalapeño and Dr. Pepper-based sauces are a little unconventional but well-balanced, and serving warm “our tortillas with Arizona barbecue is kind of a
genius move. It’s a nifty twist on the good old slice of white bread. Details: 7217 E. First St., Scottsdale, 480-404-9984.

Bryan’s Black Mountain Barbecue A ÿxture on the scene, it seems like Bryan’s has been around forever. Bryan Dooley is still doing his thing, and his signature style is still drawing folks despite the long trek. Dooley favors pecan for a lighter smoke “a vor, and the Culinary Institute of America grad executes his brisket, ribs and pulled pork with precision. A sauce with a vinegary kick pairs nicely with his “a vorful rub, and his sides — including a slaw with green olives and some killer beans — are almost too good for a barbecue joint. Details: 6130 E. Cave Creek Road, Cave Creek. 480575-7155, bryansbarbecue.com.
Burnt ends at Jalapeño Buck's.
A selection of barbecue (brisket, pulled pork, pulled chicken, ribs and hot links) at JL Smokehouse.
Danky’s Bar-B-Q Those who dig an aggressive, edgy smoke on their meat will appreciate Danky’s. A thick layer of hickory makes for some solid brisket, ribs and pulled pork, among other options. A pair of sweet relish-based sauces border on bizarre — though the green chilelaced javelina sauce is uniquely compelling — but those with more traditional tastes will ÿnd solace in a sweet and vinegary house sauce made with plenty of spice. Smoky ‘cue, crisp fried okra and some well-balanced, meaty beans make for a very solid plate. Details: 4727 E. Bell Road, Phoenix. 602-996-2016, dankysbbq.com.
Hek Yeah BBQ The hours are a little awkward and the menu isn’t always fully available, but Kenny Lorenz’s quirky north Phoenix neighborhood joint should be a mandatory stop for anybody who cares about ‘cue. The pulled pork is tender and perfectly seasoned and the chicken is accented with a “a vorful rub. But most importantly, on a good day, the brisket at Hek Yeah might be the best in town not made by a guy named Holmes. It has a thick, peppery bark, sweet smoke scent and gorgeous ripples of fat that melt on your tongue. Details: 15044 N. Cave Creek Road, Phoenix. 602626-8404, hekyeahbbq.com.
Jalapeño Buck’s A glaring oversight on the last pass (thanks to all who wrote in), Jalapeño Buck’s is not only among the Valley’s best barbecue joints, but it’s probably the most charming as well. From a kitschy tin roof shack in the middle of his family’s orange grove, pitmaster Duaine Burden serves AZ-Mex classics like an appropriately soupy green chile burrito alongside smoked meats that include barky burnt ends, sultry sliced brisket with beautiful pull and tender, well-seasoned pork shoulder. Here’s hoping it’s only a matter of time until the Mexican and barbecue sections of the menu cross-pollinate. Details: 34 34 N. Val Vista Drive, Mesa. 4 80-4 593050, jalapenobucks.com.

JL Smokehouse This south Phoenix hole in the wall — the ÿrst brickand-mortar space for what used to be a guerilla street operation — has been “ying under the radar since spring 2017. That needs to change. Pitmaster James Lewis goes by JL, though he insists the initials actually stand for “Just Love.” The name ÿts. The only thing bigger than his joyous personality is the “a vor of his barbecue, served with a splash of understated sauce that gently supports the “a vor of the meat. The pulled pork might be the best I’ve tried. The ribs combine a tender chew with killer bark, and even items like smoked chicken — too often served bone dry — are juicy and succulent here. Add some sticky mac and cheese, perfectly balanced coleslaw and a cup of peppery stewed greens and you have one of the best barbecue joints in town nobody has heard of. Details: 1712 E. Broadway Road, Phoenix. 501-3536844, jlsmokehouse.com.

Dear Abby: Seeing a child you love struggle with depression is such a helpless feeling. Parents wonder how to talk to them as they withdraw from the people and activities that used to bring them joy. You just want them to feel better again. Many times, parents tell themselves it’s just a phase their child will grow out of, but one in ÿve teens is a“ ected by depression. It’s important for parents to know that children even younger can become depressed, and that girls are twice as likely as boys to experience it. Depressed kids are more likely to abuse alcohol and other drugs and are at greater risk for attempting suicide. To help concerned parents reach out to their hurting children, USA.gov has created the free online-only Kids and Depression guide at www.USA.gov/fea-
tures/kids-and-depression. The guide’s sound, compassionate advice helps parents, grandparents and teachers recognize symptoms and risk factors in young people. It explains treatment options, including counseling and medication. And it also includes age-appropriate information about depression that parents can share with their children, elementary age through college. Abby, thank you for the love you show your readers, and for sharing this potentially lifesaving guide with them. – Nancy Tyler, Senior Editor, USA.gov Dear Nancy: You’re welcome. I’m glad you wrote because I receive many letters from worried parents and depressed young people. I know the online guide will provide important information they will ÿnd useful. www.DearAbby.com
HOROSCOPE Aries (March 21-April 19). Of course you have more power than you are exercising, but you wisely weigh the consequences of each action. Taurus (April 20-May 20). The absence of a person can be a presence – a presence so strong it dominates the room. Gemini (May 21-June 21). You’ll be the one with the cool news soon enough. Cancer (June 22-July 22). Setting yourself up for success will be a matter of casting the right people in the right roles of your life. Leo (July 23-Aug. 22). Your secret to relating to people is not in expressing yourself exceptionally well; rather, it is in observing exceptionally well. Virgo (Aug. 23-Sept. 22). If it’s true that the external circumstances somehow exist to balance and harmonize what’s going on inside you, you should be able to change your interior world through a rearrangement of your environment. Libra (Sept. 23-Oct. 23). It is your desire to be a delight to others.
TODAY’S BIRTHDAYS
Scorpio (Oct. 24-Nov. 21). “How my achievements mock me!” said one character in a Shakespeare play. It’s also the sentiment of everyone who’s ever done something remarkable and been daunted by the prospect of repeating it. Sagittarius (Nov. 22-Dec. 21). Because you know yourself well, you will see the world with greater accuracy. Capricorn (Dec. 22-Jan. 19). Plant your affection and something will grow. Aquarius (Jan. 20-Feb. 18). Caution: Some frivolous wastes of time really are just that. Pisces (Feb. 19-March 20). You can’t learn what you already know. Today’s Birthday (Jan. 24). You’ll accomplish much by thinking positively and strategically and then acting on what you plan. You really do need a mentor, though, to keep you on track. Seek qualified candidates now and by March you’ll be on a plan you can stick to. Cancer and Leo adore you. Your lucky numbers are: 3, 33, 31, 20 and 14.

Sometimes, these things come in waves. Right around the time Dooley was setting up shop in Cave Creek, Wes Hansen and Justin Erickson were selling in farmers markets, bringing in fresh pork products from Erickson’s family farm in Nebraska. Not long thereafter, Pork on a Fork went brick and mortar, and ÿve years later, they remain a favorite. The pork products are the strongest o“ erings, including a very nice pulled pork and smoky, pink ribs with a thin, darkly sweet glaze. Details: 1515 W. Deer Valley Road, Phoenix, 623-4 34 -1794 . Like Holmes, Hartman throws down some serious brisket, though his smoke and seasoning are a little lighter. If you can tear yourself away from the beef, there isn’t a miss on the menu, from ribs to pulled pork to sausage and more, depending on Hartman’s whims. The meats are served unadorned (hence “Naked”) and Hartman provides a full complement of sauces that are thoughtfully designed to match his meats. Jackson, Tennessee, original is a big, modern space with a full bar and some mighty ÿne smoked meat. Forget the brisket. Pork is king in Tennessee, and the only thing better than the heavily scented ribs — smoked over almond rather than di’cult -to-source hickory — is the pulled pork sandwich on a soft bun with a heap of coleslaw and a healthy dose of thin, vinegary sauce.
