Amidst Challenges, the Future of Farming in Wisconsin is Hopeful By Mackenzie Krumme For the past six years, Kristen Conley and her husband have been searching for a farm to purchase. Both grew up in Grant County. Kristen raised hogs while her husband, Kennedy, milked goats. They have the experience, the education and the passion to take on someone’s legacy. But, thus far, they have had no success. Today, they rent land in Sinsinawa Mound, Wisc. a small town near the Illinois border where they manage a small-scale vegetable farm. They hope to someday own their own property and pass the legacy to their boys, ages 5 and 6-years-old. Due to the decrease in milk and agriculture product prices, more farmers around Wisconsin are postponing retirement, filing bankruptcy or simply shutting down. Despite the looming uncertainty, there are still many people who want to pursue the farming lifestyle that historically shaped Wisconsin identities for hundreds of years. “Our heart is really in the country and in farming,” said Conley. “We want our kids to learn the responsibility [of growing food for people]. Challenging Environment Since 2013 the net-income of farmers dropped nearly 50 percent, the greatest drop in income in a four-year period since the start of the Great Depression, according to Farmers Aid, a farm advocacy group. Specifically, Wisconsin lost more than 700 dairy farms in the past year. The downturn is fueled by falling export prices and over production. Milk prices plummeted from $22.34 in 2014 to $13.96 in 2018 according to The Cap Times. “You have farmers who have made really good decisions for a lot of years,” said Joy Kirkpatrick, an expert in farm transfer and outreach specialist at the Center for Dairy Profitability. “They’ve had to make a big purchase or repair something to keep farming and they’ve done it in this weird place of historic low milk prices.” In these financially tight situations, the last thing farmers want to do is sell their land, said Kirkpatrick, because it is their retirement equity and it is what researchers call ‘symbolic capital.’ “It’s the idea of ‘If I am not a farmer, what am I?’” said Kirkpatrick. “For so many people, that has been their identity since they were 15 years old. They’ve always been ‘farmer on County Road JJ,’ or whatever.” In 2012, the number of Wisconsin agricultural land transactions reduced more than 30 percent from 2,194 to just 1,463 in 2016, according to the U.S Department of Agriculture. The average age of farmers in Wisconsin has steadily been increasing and sits at 59 years old. This contributes to new farming families like the Conley’s, having trouble buying a farm. There is very little farming land for sale and most available options are too expensive. In the face of these challenges such as falling product prices, debt and difficulty purchasing land, people like Conley still want to farm. “We know farming might not be in cows but there are other ways to feed the world,” said Conley. Desire to Farm Jennifer Blazek, the director of the Farm and Industry Short Course at UW-Madison, a course geared towards helping young farmers learn the business-side of farming and agriculture, said her students are still showing up to learn.
Where are we now, where do we want to be and how do we get there? Seven tips from farm succession expert Joy Kirkpatrick
Joy Kirkpatrick, an expert in succession planning from the University of Wisconsin Center for Dairy Profitability, says farmers can have more control over managing the future of their business than they do weather and product prices. Here are seven tips from Kirkpatrick for farmers in crisis, making a change to their businesses or transferring the farm to the next generation. 1. Organize your information This is when you can start putting together financial information for your farm. This is not about analyzing your information. Focus on finding farm balance sheets, income statements and tax papers. Gather information for three to five years of the business. Then start looking at the trends that are happening with the business. Try to get an idea of all your assets. 2. Develop and discuss intentions and priorities Where would you like to be personally and where would you like to see the businesses in three years or five years? This gives everyone in the business a chance to voice what they would like to see happen. Is everybody heading in the same direction or are there drastically different ideas that need to be addressed so a conflict doesn’t breed and fester? A facilitator, someone who is not a

pursue farming in some capacity.
“My students are in pretty tough spots when it comes to their family farms. But they still are interested in being [in the program] and still want to go back even though they know it’s going to be difficult,” said Blazek.
“Absolutely, young people still want to be farmers,” said Alber.
Farming for Blazek’s students is about family, tradition, history and values, she said. In addition to the short course offered at UW-Madison,the Wisconsin School for Beginning Dairy and Livestock Farmers (WSBDLF), started more than 20 years ago, is growing. “Our Dairy Grazing Apprenticeship program is the first formal apprenticeship for agriculture in the nation,” said Nadia Alber, director of WSBDLF. “Over the last four or five years, it just keeps getting bigger.” Started in 2010, participants in the program are paid to learn and work on a dairy farm through a two-year nationwide apprenticeship. There are 40 active master-apprentice pairs (majority in Wisconsin), 25 journey dairy grazers and more than 150 apprentice candidates seeking to be hired. In addition to the apprenticeship program, the goal of WSBDLF is to cultivate a new generation of farmers. From a graduate analysis, 50 percent of the people who come out of the program started their own farm, 25 percent are working on a farm and the last 25 percent are trying to
The total number of farmers in Wisconsin is decreasing but the majority of the loss is due to a one-third decline in mid-level farms between 50 and 999 acres. The number of small-scale, less than 50-acre farms, however, increased 60 percent since the 1980s, according to Milwaukee Magazine. Blazek said younger generations are looking at farming as ways to give back to the community. “[The younger generations] are asking themselves, what am I doing to give back? “Agriculture fits in because you are providing vegetables at your farmers’ market or milk at the store. You may not meet your consumer but you are still giving back,” said Blazek. Like Conley, a small-scale farm is something her family has dreamed about doing for a long time and although she and many other young farmers face challenging times, this is still their career choice. “There is a bigger picture and we might not know what it is now. We feel it is our duty to make things better for the next generation,” said Conley.

Where Are We Now? Continued from page 3 part of the business or a member of the family, can help put some structure to these conversations. 3. Communication Skills and Patterns When you are thinking about large changes in the business, whether that be succession planning or adding an enterprise, you really have to think about how everyone communicates with each other. If someone is related to you, or that person is a child, you may have to set aside the parent-child relationship and think about this person as a business partner. 4. Estimate family living needs What are the family living expenses? What does it cost for health care and health insurance? This can be pretty shocking to those who don’t track their spending. Being aware of how much you spend is important in a time of transition. Knowing what you need out of the business puts everybody on much better footing. 5. Critically analyze the farm business financials This is where you start to understand the financial performance of the farm and compre that to what the farm needs to produce for the family. If you are adding a family to the farm, and that family has to live off of what the farm produces, how is that going to look? Does the older generation take less from the farm? Do you need to use assets differently to generate more income? 6. Develop a management transition plan In succession planning, we get really wrapped up in the
assets. It is a big deal to think about moving cattle, machinery and land to another person. The details of transferring assets can overshadow the transition of management. The next person in line should get a chance to start making decisions and learn from the older generation. 7. Creating a timeline Set your goals out on a timeline. Start working backwards from your goal and ask yourself what needs to happen for that change to be in place when you want it to be. This helps people think more clearly about completing short term goals that will get them to that long term goal. These steps can help you get organized and have a clearer picture of your business. Note that these steps do not eliminate the need for professionals such as attorneys or accountants.

Heat oven to 350˚F. Cream butter and sugar in a large bowl until light and fluffy. Beat in egg and cheddar until blended. Combine the flour, baking powder and cinnamon in a medium bowl; gradually add to butter mixture alternately with the buttermilk. Fold in blueberries. Transfer batter to a greased 9-inch springform pan. For topping, combine the flour, sugar and cinnamon; cut in butter until crumbly. Sprinkle over batter. Bake for 50-55 minutes or until center is set and a toothpick inserted near the center comes out clean. Cool in pan on a wire rack for 20 minutes. Carefully run a knife around edges of pan; remove sides of pan. Garnish with whipped cream.

Farmers in Wisconsin are facing a historical crisis as the price of milk and agriculture products hit a five year slump. Jennifer Blaztek, director of the Farm and Industry Short Course at University of Wisconsin- Madison, which teaches students the business side of farming, says farmers are resilient and often prepared for the fluctuation of the agriculture industry. But that does not mean there isn’t struggle. Here is a list of resources compiled to help farmers in crisis.
Cowboy Beef Stew BeefTips.com 21⁄2 pounds beef Stew Meat, cut into 1-inch pieces 1 package (12 to 14 oz.) dried bean soup mix with seasoning packet (not quick cooking) 2 cans (141⁄2 oz. each) diced tomatoes with green peppers and onion 2 tablespoons vegetable oil 1 can (14 to 141⁄2 oz.) beef broth 3 cups frozen diced or hash-brown potatoes (optional) Salt and pepper
Soak beans in water overnight in refrigerator according to package directions. Reserve seasoning packet. Coat beef with seasoning from reserved packet. Heat 1 tablespoon oil in large stockpot over medium heat until hot. Brown 1⁄3 of beef; remove from stockpot. Repeat twice with remaining oil and beef, adding additional oil as needed. Pour off drippings; return beef to stockpot. Drain beans; discard water. Add beans, tomatoes and beef broth to stockpot. Bring to a boil. Reduce heat; cover tightly and simmer 13⁄4 to 21⁄4 hours, or until beef is fork tender. Stir in potatoes, if desired; bring to a boil. Reduce heat; continue simmering, uncovered, 5 to 7 minutes or until potatoes are tender, stirring occasionally. Season with salt and pepper, as desired.

Resistance Is Not Futile
CALS Plant Pathologists Have Developed A Soybean Plant That Staves Off Stem Rot And Defies Drought University of Wisconsin College of Agricultural and Life Sciences If there’s anything that could be called the archenemy of Midwestern soybean producers, it just might be Sclerotinia stem rot. Once thought of as only a sporadic problem in the region, the disease has become a recurring and widespread threat. Sclerotinia stem rot is perhaps better known as white mold, a name derived from the fine, pale filaments that spread over infected stems, leaves, and pods. The disease thrives under wet and cool conditions. That’s when the fungus that causes it, Sclerotinia sclerotiorum, tends to persist — especially when plants are flowering. And when it peaks, it can be an absolute scourge to soybean fields with high yield potential. Severe infection with white mold weakens the plants. They begin to grow askew, wilt, and die, leading to much lower than optimal yields. Between 2010 and 2014, white mold cost U.S. farmers $1.2 billion in losses. But a solution to this problem may soon be on the way. By identifying and targeting specific genes that regulate the soybean response to S. sclerotiorum, a team of researchers in the Department of Plant Pathology has gen-
erated plants with increased resistance to white mold. And, as an added bonus, the plants show greater tolerance to drought. “We’ve made significant progress in understanding how S. sclerotiorum hijacks plant defenses and causes disease,” says Mehdi Kabbage, assistant professor of plant pathology and leader of the research team. “We’ve uncovered some promising genetic targets for increasing resistance in soybeans.” The team includes associate professor and extension specialist Damon Smithand research associate Ashish Ranjan. Their work is built on previous studies showing that certain molecules, called reactive oxygen species (ROS), play a key role in regulating how plants respond to attacking pathogens. At low levels, ROS act as helpful signaling molecules, part of the communication system that controls the basic functions of plant cells. But at high levels, the molecules become toxic. “The plant cell recognizes this particular threshold and basically commits suicide, which is to the advantage of the pathogen,” says Kabbage. Continued from page 16 enzymes called NADPH oxidases. The researchers focused their initial investigation on the underlying mechanisms of this process. They found that specific soybean NADPH oxidases are activated following infection with S. sclerotiorum, resulting in the production of damaging ROS levels. “So it appears that the fungus may be hijacking the soybean ROS machinery to its benefit by modulating the expression of NADPH oxidases in the host plant,” Kabbage says. Next, the team used a gene-silencing technique in the lab to inhibit the activity of NADPH oxidase genes in soybean plants. They found that the modified plants produced less potentially damaging ROS following S. sclerotiorum infection and showed a remarkable level of disease resistance compared to control plants. The researchers also discovered, quite by happenstance, that the modified plants could withstand long periods without water. “When we were done doing our work with these plants, and they were in pots waiting to be cleaned, we noticed that the silenced plants were staying green longer, even after we stopped watering them for days,” Kabbage says. “And it made sense. A lot of stresses like drought and cold also induce ROS, eventually causing plants to die. So if you can delay the plant from reaching that toxic threshold, it makes sense that you would get tolerance to other ROS-inducing stresses.” Because the plants with silenced genes displayed such significant and useful traits, the research team generated stable transgenic versions that will be tested in the
field against a broad range of stresses. They first have to go through the excruciating process of increasing seed quantities, generation by generation, until they have enough plants to conduct trials. Their target is the 2019 field season. “We’ve invested a lot of money over the years to develop something just like this,” says Robert Karls BS’91, executive director of the Wisconsin Soybean Marketing Board, which provided funding for the current project and prior soybean research at CALS. “We’re excited because we’re going to be able to offer a new tool for growers to help them produce beans more efficiently and help their bottom line.” A great deal of science has gone into developing ways to manage white mold, from more effective crop rotation methods to better tillage and planting practices to improved irrigation management. There are also soybean varieties with moderate genetic resistance to the pathogen. But this is the first time that a genetic tool has been developed to establish or enhance white mold resistance in soybean germplasm. For this accomplishment, the researchers were named finalists for the 2017 Wisconsin Alumni Research Foundation Innovation Award. And given that white mold can infect more than 400 other plant species, including lettuce, sunflower, and potato, the method for creating the resistant plant may have applications beyond soybeans in the future. This study was funded by the Wisconsin Soybean Marketing Board and the North Central Soybean Research Group.

Southwestern Pork Pot Roast Wisconsin Pork Producers Association 3 pounds boneless pork shoulder (tied with kitchen twine if necessary) 1 tablespoon canola oil (or other neutral-flavored oil) Salt Pepper 19 oz. enchilada sauce (mild or medium red, OR 21⁄4 cups red enchilada sauce*) 1 white onion (small, cut into 12 wedges, slice through the root end so that each wedge has a bit of the root holding it together) 12 oz. small red potatoes (cut into 1⁄2-inch wedges) 15 oz. hominy (drained*) 1 ⁄4 cup queso fresco (or other soft cheese**, crumbled, optional) Cilantro sprigs (for garnish, optional)
1 hour. Turn the meat over and add the onion and potatoes to the skillet, submerging them in the liquid. Cover and cook until the vegetables start to soften, about 30 minutes. Add the hominy, cover, and cook until the pork is tender but not falling apart, the onion and potatoes are tender, and the hominy is heated through, about 15 minutes. Remove the skillet from the oven, set aside, letting the meat rest in the liquid for 15 minutes. Remove the meat from the skillet, remove the kitchen twine, if necessary, and slice the meat across the grain. Arrange on plates or a platter with the vegetables alongside. Drizzle with a little sauce. Sprinkle with the queso fresco and garnish with the cilantro, if using. Serve the remaining sauce at the table.
Preheat the oven to 350oF. Meanwhile, season the pork with salt and pepper. In an oven-ready skillet, braising pan, or Dutch oven large enough to comfortably hold the pork with the lid on, warm the oil over medium-high heat. Add the pork and cook until well-browned on all sides, 10 to 12 minutes. Transfer the meat to a plate or platter and set aside. Add the enchilada sauce to the skillet and bring to a boil, scraping up any browned bits (careful—it may splatter). Return the pork to the skillet, along with any accumulated juices, and return to a boil. Cover the skillet, place it in the oven, and cook for

Using a sharp knife, cut a horizontal slit in the side of each chop, forming a pocket for stuffing. Set aside. Combine hot water, melted butter and instant bouillon in small mixing bowl until bouillon is dissolved. Add stuffing mix, corn, bell pepper, onion, basil and pepper. Stir until all liquid is absorbed. Spoon corn mixture into pockets in chops. Close with wooden picks or small skewers. Place pork chops, standing on end, in a slow cooker, cover and cook on low heat setting 6 to 7 hours or until pork chops are tender. Remove pork chops from cooker. Pour drippings into 4-cup measure. Pour 11⁄2 cups dripping back into slow cooker. Turn to high heat. Dissolve cornstarch in water. Stir into drippings. Cover and cook about 15 minutes, stirring at least once. Spoon 1⁄4 cup sauce over each serving.

Italian Beef Meatball Sandwich Rolls BeefTips.com 1 recipe Italian-Style Beef Sausage 2 eggs, divided 1 ⁄4 cup seasoned dry bread crumbs 12 cherry-sized Mozzarella balls (about 6 ounces) 12 ounces refrigerated pizza dough 2 tablespoons shredded Parmesan cheese Marinara sauce, chopped basil leaves (optional) Preheat oven to 400°F. Combine Italian-Style Beef Sausage mixture, 1 egg and bread crumbs in large bowl; mixing thoroughly. Shape into 12, 2-inch meatballs. Place a Mozzarella ball in the middle of each meatball, making sure the Mozza-
rella ball is completely covered with the beef mixture. Place meatballs on aluminum-foiled lined broiler rack coated with cooking spray. Bake in 400°F oven 17 to 19 minutes. Cook’s Tip: Italian-Style Beef Sausage: Combine 1 pound Ground Beef (93% lean or leaner), 1 teaspoon fennel seed, 1⁄2 teaspoon salt, 1⁄4 teaspoon ground coriander, 1⁄4 teaspoon garlic powder, 1⁄4 teaspoon paprika, 1⁄4 teaspoon black pepper and 1 ⁄8 to 1⁄4 teaspoon crushed red pepper in large bowl, mixing lightly, but thoroughly. Cut dough into 12 pieces, about 1 ounce each. Stretch each piece to cover 1 meatball, pinching the edges to seal. Place on parchment-lines shallow-rimmed baking sheet, seam-side down. Place remaining 1 egg in small bowl, beat with a fork. Brush rolls with egg; top with Parmesan cheese. Bake rolls in 400°F oven 10 to 12 minutes or until golden brown. Serve with marinara sauce and basil, as desired.

Farm-To-Table Is Changing The Restaurant Business Metro Creative Services Farm-to-table is a movement that promotes serving local products, preferably food and beverages acquired directly from a producer. Farm-to-table eateries source ingredients locally as much as possible, and diners are increasingly expressing a preference for these establishments. According to the National Restaurant Association’s “What’s Hot” survey, locally sourced meats and seafood, locally grown produce, environmental sustainability, and natural ingredients/minimally processed foods were among the most popular food trends. Farm-to-table establishments reduce carbon footprints by cutting back on the amount of resources necessary to get food from the farm to the restaurant. The farm-to-table movement began as a countermeasure to big agriculture and chemically controlled produce. Although there is no hard

In its 2014 Organic Survey, the U.S Department of Agriculture’s National Agriculture Statistics Service reported that sales of organic products increased by 72 percent since 2008. California, Washington, Pennsylvania, Oregon, and Wisconsin were the top five states for organic farming, accounting for 78 percent of organic sales in the United States at the time of the survey. Supporting farm-to-table establishments can benefit the planet, but consumers should know that there are additional advantages to patronizing such businesses. • Support for local businesses: Local restaurateurs who embrace farm-to-table can support and promote other local operations. Restaurants can help farmers by purchasing excess crops or simply providing the demand for farmers’ products. • Greater control over ingredients: In some instances, chefs can travel to nearby farms during harvest to personally select items for their restaurants, ensuring excellent quality. • Better taste and quality: Fresh food is picked at its peak instead of being forced to ripen during a long journey. This typically translates to more flavorful foods. • Evolving and updated menus: Because farm-to-table means sourcing in-season ingredients, restaurants must have fluid menus that change based on the availability of ingredients and fishing and harvesting quotas. This can lead to greater variety and prevent menus from becoming dated or overly familiar. Hyper-local sourcing that fuels farm-to-table operations continues to be an in-demand restaurant trend. This machine is built to take down trees and can take the stumps down to 1.5” sub-surface. It is perfect for clearing building lots, paths for utilities, fence lines, and property maintenance, etc. The mulch can make a good working surface compared to bare dirt and mud. This allows every post in the bundle to dry much more evenly. Most of us around here know that wood posts not lasting has been an issue in this part of the country. They then treat the posts to the American Wood Preservers Association Standards, with your choice of preservatives, including CCA, ACQ or Creosote. The turned posts are available in diameters of 3 1/2” up to 7” and in lengths from 6’ through 12’. We carry in stock the 7’ & 8’ posts and a lower count of 10’ & 12’ posts but can order whatever size option you may need as well as full sized timbers. (Posts up to 9’ are treated CCA .4 lbs./cubic ft while anything 10’ and above is treated CCA .6 lbs./cubic ft).
