Pete Esser Named 2021 Friend of Nursing Education The Southwest Tech nursing faculty annually recognizes someone who has shown exceptional service to the college’s nursing programs and its students. This year’s recipient, Pete Esser, began his teaching career at Southwest Tech in June 1990. While studying at UW-Platteville, Esser had a goal of teaching at Southwest Tech – a goal he achieved. He currently teaches independent study math courses, and small and large groups in specific skills areas, especially nursing math. I decided to come to Rosemeyer Jones Chiropractic after numerous times at other health care providers without any results. Pickleball Committee Fundraising for Upgrades PAPA (Platteville Area Pickleball Association) felt the community’s support for their project at the groundbreaking event on April 28 from the great turn out. They have raised $336,404 which funds their fully lit 8 courts along with a patio. Now PAPA is focusing their efforts on raising the additional $26,936 needed for upgrades. This money would be for the purchase of protective fence covers, windscreens, benches, picnic tables and a small storage shed. Cindy Tang offered a $35,000 match challenge to complete the project and upgrades with $8,516 left to match. Construction will begin soon with a completion date in the fall of 2021. 1. Heat the grill as directed. 2. Using your hands, mix the beef, garlic, salt, and pepper in a bowl until well blended; do not overmix. Using a light touch, form into 12 patties no more than 1Ú2-inch thick. 3. Put a portion (about 11Ú2 teaspoons) of cream cheese in the center of each of the 6 patties; top with the remaining patties and press together, taking care to seal the edges well. Refrigerate the burgers until the grill is ready. 4. Brush the grill grate and coat it with oil. Put the burgers on the grill, cover and cook for 9 minutes, flipping after 5 minutes, for medium-done (150 F, slightly pink). Add a minute per side for well-done (160 F). 5. To toast the buns, put them cut-sides down directly over the fire for the last minute of cooking. 6. If serving the burgers directly from the grill, serve on the buns. If the burgers will sit, even for a few minutes, keep the buns and burgers separate until just before eating.
