That’s Good Eatin’
WHEN I THINK of food destinations around the world, a few countries’ cuisines come to mind — Italy, France, Mexico, specifically. Dialing further in, there are specific cities where people go just to eat. I think, as a state, Louisiana certainly can hold its own at the top of the list for places where travelers have specific restaurants or meals on their “to do” lists when going there. And I’ve definitely heard visitors saying they were coming to Louisiana “to eat.”

There are many reasons folks come to Louisiana to explore the cuisine — far too many to go into in this short space, especially when there have been books written on this subject. For one, Louisiana has unique food crops, which is part of what makes the food so delicious. Here, we have sweet potatoes, sugar cane, rice, pecans, seafood, tomatoes, strawberries, honey, satsumas — I could go on. The food, after all, is only one part of what comprises an amazing meal. The preparation is the other, and because Louisiana contains such a rich, diverse cultural heritage, all of those hands preparing the food, all of the years of recipes handed down, the patois of ethnicities shaping a dish — all of those things makes the food here special and different from any other place in the country. Or the world. Louisiana cuisine is a fusion of Native American, African, Spanish, French, Italian, German, Caribbean, Hispanic and Asian, leading to soul, Creole, and Cajun culinary styles. There’s magic in the food here — no doubt about it.
In this issue, Melanie Warner Spencer has the tasty job of mapping out a food trail as she takes us along for some of the most delicious, quintessential dishes Louisiana has to offer. She highlights not 20, but 21 of the best dishes in the state. I got hungry just reading it, and I bet you will too.

What Is Your Favorite Restaurant Right now?

This is a bit silly and totally biased, but my favorite restaurant of the moment is my own wine shop, Wild Child, for Friday lunch. Our team has developed a menu using the best of the best ingredients and all of our bread is baked in house using Straw Cove flour milled in Lafayette. There’s an ever evolving cast of lunch regulars, and Katie picks a special bottle of wine to pour by the glass each week.
Melanie Warner Spencer The Greyhound in Covington. With its stellar food and gorgeous Art Deco interior design, I want to live there. My husband and I both cannot stop thinking and talking about the wood oven roasted feta with pita appetizer. I crave it a couple times a week with its mix of olive oil, olives, garlic, herbs and tomatoes. It’s a savory delight.
Liz Williams Clancy’s. It is reliable and familiar—just the place when I want the comfort of home. I love the classic nature of paneed veal or fried eggplant sticks served with aioli. The specials are always an irresistible surprise. There is a bit of Creole New Orleans and Creole Italian with a modern touch!

Liz Williams founded the Southern Food & Beverage Museum and authored several books about food and culture, especially New Orleans food culture. Her podcast, Tip of the Tongue, about food, drink and culture, appears weekly. She is a graduate of LSU Law Center and has practiced law in Washington, DC and Louisiana. She has served as judge in many cooking competitions and consulted internationally on the food of New Orleans. Travel is an excuse to eat in new places.

New Orleans resident Gina Ferrara is Louisiana’s new Poet Laureate. An English professor at Delgado Community College, Ferrara has five poetry collections and her work has appeared in many journals.

Braided Heritage: Recipes and Stories on the Origin of American Cuisine
“Braided Heritage: Recipes and Stories on the Origin of American Cuisine” is written by one of the best culinary historians in the country, Dr. Jessica B. Harris. Harris spent decades researching the Americas, Africa and the Caribbean in order to tell the origin story of “American” food. She shifts from writing about the historical origins of food to sharing contemporary recipes she hears about from her friend. In “Braided Heritage,” she shares recipes from Louisiana classics like red beans and rice as well as more international fare like enchiladas suizas. 272 pages, $35
Metates and Other Poems
Catharine Savage Brosman’s “Metates and Other Poems” is deeply set in place, from the deserts out west to grounded in cities like New Orleans. A metate is a grinding stone that indigenous folks traditionally used to grind cacao beans. These poems are steeped in location, in history, the scenes grinding against each other. In the title poem, Brosman opens with “We arrive too soon; the small museum isn’t open yet. / Chairs and a swing invite us to the porch, / as a determined breeze, configuring the trees / in random motions, riffles through my hair / and lifts my collar.” Brosman has published numerous poetry books, and she is currently an emeritus professor at Tulane University. 52 pages, $18.95

Beautiful And Ugly Too
“Beautiful and Ugly Too” is a culmination of a life’s work for Chuck Perkins. An activist, a spoken word poet, a club owner and an essayist born and raised in New Orleans, Chuck Perkins’ “Beautiful and Ugly Too” is a culmination of a life lived engaged in New Orleans. “Beautiful and Ugly Too” has poetry that dives deep into mythology and free verse poetry but also essays that take the reader along for a day in the life of a New Orleanian in different stages in his life. Perkins is a rare writer that truly embraces his physicality and force in his writing. You can feel the football player in him. Shreveport’s Own John Hoffman Lands the Gig of a Lifetime with Primus

THE MOMENT SHREVEPORT LOCAL JOHN HOFFMAN learned he was chosen to become the newest member of Primus, filmed as part of a multipart YouTube web series called the “Primus Interstellar Drum Derby,” chronicling the band’s search for a new drummer, is pure cinema. Discovered in a nationwide talent search and performing against some of the best drummers in the world, John had reached the final two and was prepared to head home to await the band’s final decision.
“At the wrap party for the audition, they were doing some final interviews with me, and it was dawning on me that this might be the last time I was around all these great people I had met,” recalls John. “Only, I realized the interview was a distraction.”
But then, Primus’ legendary front man and lead guitarist, Les Claypool and Larry “Ler” LaLonde, emerged from a back room carrying a cake, singing,
“For He’s a Jolly Good Drummer.” From the video, it’s clear that the enormity of the moment is too much for John to initially comprehend. But that confusion evaporated once Les uncovered the cake and John read the life-changing message spelled out in white icing.
“It took me a second to process what was happening. Then I saw the words ‘HOFFINGTON YOU GOT THE GIG’ spelled out on the cake, and everything clicked,” says John. “The multi-month process had been incredibly emotional, so it didn’t take much to send me over the edge.” Hoffman, son of keyboardist Stanton Hoffman of The Killer Bees, made a career gigging in and around the Shreveport music scene. Sometimes averaging five to 10 gigs a week, John credits a supportive community of local drummers with helping to find and sustain steady work, from house shows to corporate jobs and even church gigs, earning him the affectionate nickname “The Busiest Drummer in Shreveport.” Little did John know that his amiable reputation, his ability to chameleon himself into the performance style of dozens of collaborators and the creative outlets forged during the dog days of COVID lockdowns were precisely the training he would use to secure his place with Primus.
“Looking back, I was unconsciously making the right decision the last few years, leading up to the audition,” says John. “After work dried up during COVID, I started filming myself playing video game music and nostalgia television like ‘The Jetsons,’ a lot of weird songs that I loved. When Primus called for audition tapes, I had a huge collection of videos to send in.”
John’s style of quirk and high musicianship caught the eye of Primus, rocketing him into a whirlwind audition process that saw him not only meeting personal heroes like Claypool and LaLonde, but also competing against some of his favorite drummers like Nikki Glaspie. In the end, John outlasted the competition and found himself performing his first gig with the band in the Dominican Republic, proudly wearing his Drew Brees jersey to keep a little bit of home close by. Soon enough, a true homecoming was in order as Primus’ upcoming tour led straight through Shreveport, back where John’s Cinderella story began many months before.
“I remember the morning of the show, waking up on the bus and looking outside. I saw some of my friends from the local crew already working to set up,” remembers John. “Everything about that day was personalized and familiar; the mayor made July 29 John Hoffman Day, I got to look out on the crowd and see a thousand people wearing white sunglasses like I often do, my brother got to play with the band and after the show, we hugged for the third time in our entire lives. It was so special to see everyone come together in a way they maybe hadn’t in a while. I saw high fives and fist bumps; there was just this warmth coming off that crowd that translated onstage and made for a really, really great night.”
Having secured their permanent drummer behind the kit, who knows what the future holds for Primus? Yet assuredly, John Hoffman will continue to do Louisiana proud in whatever galaxy the legendary band blasts off to next.



Through the Grape Vine
Landry Vineyards offers locally-made wines and family fun in West Monroe

ON A SWELTERING LATE JUNE MORNING in the middle of a particularly wet growing season in the hilly outlands west of Cheniere Lake, the team at Landry Vineyards is prepping to absolutely crush it. A huge haul of blueberries from a farm in nearby Bastrop is in, and the fresh fruit needs to be pressed so the juice can be fermented in French Oak barrels, then bottled and reborn as part of a popular Merlot blend, one of the Louisiana vintner’s dozens of varietals now available in more than 650 retail locations across more than 40 states.
With dedication and patience, and the right amount of pressure, amazing things can happen—even with wines in north Louisiana.
A natural planner who left the engineering field not long ago to run the winery he and his wife began in 1999, Jeff Landry is always planning one step ahead of the seasons. But today, he has blueberries on the brain.
“I am not against making fruit wines and muscadine wines—we do that, and people love them,” Jeff Landry says. “But we must have a commitment to wine grapes to be taken seriously, by the industry and by wine connoisseurs, and we need to grow more of our own grapes here in Louisiana, and we’re going to.”


About 35% of Landry Vineyards wine is produced from Louisiana-grown grapes, like blanc du bois, Norton, and lenoir — or Black Spanish, though he wants to boost that percentage soon. They also grow muscadines, with the rest being Central Coast California grapes hand-picked by a family Landry has known for years.
What began a quarter of a century ago in Folsom, Louisiana, with Landry and his wife, Libby, handpicking grapes and filling five-pound buckets has evolved into mechanical harvesting and wine production of 40,000 gallons and 200,000 bottles each year, proving that though the local climate and agriculture present certain challenges not faced by wineries in Napa or Naples, it is nothing Jeff Landry and his consulting viticulturist Fritz Westover can’t overcome.
Besides, this soil is ultra-rich in other ways. Landry Vineyards was built with community in mind.
The Landry property holds cottages and RV spots for overnight stayas, and they host regular live music concerts and social events on their stage and sloped grassy lawns at the winery.
“Most of the time it’s whole families out here for events or in the tasting room, and they bring their balls to throw, and we have our cotton wagon for rides,” Libby Landry says. “These are kids being kids, playing, running, jumping through the vineyards. They’re off their phones, they’re off their iPads, and the family is playing together. It’s a beautiful thing.”

Q&A
If you could sit back with anyone for a glass of blanc du bois at Landry Vineyards, who would you want to visit? Honestly, any agricultural people in the industry, so they can see and understand what we’re doing. Because a lot of people don’t know you can grow these types of grapes in Louisiana. So, you want to educate those people. That would be a lot of fun, and it’s also very important for the future.
You’re very open about your faith. Do you think that’s interesting when you consider you run a winery in the Deep South? There’s definitely a so-called Christian culture that says wine is taboo. But, no, that’s really mixing things up. That’s completely wrong. Everything has its proper use. Wine is no more inherently wrong than food, you know? Scripture says a lot about wine and viticulture. Anyway, we say everything in moderation.
Where did your passion for agriculture come from?
My grandparents in Pointe Coupée Parish. My grandpa had a giant garden when I was growing up, like half an acre, and I spent a lot of time there with them. They lived off the land completely. They didn’t even deal with cash, really. Everything was agriculture-based. When my grandpa got his Social Security check — it was probably less than $100 — but he said, “Look, I’m a rich man.”


That kind of connection is key for the Landrys, especially that they are now grandparents.
Their third son, Noah, manages the vineyard and bottling process. June is prime blanc du bois growing season, but like his father, he’s thinking ahead. He is researching new plants that are more disease resistant. Healthier plants mean fewer pesticides. It all goes back to the health of the land and the people.
“Blanc du bois is a French-American hybrid, and a really good wine,” Noah Landry says. “Honeysuckle is actually growing all around the property, and every spring, honeysuckle impacts our vines. It’s incredible when you pick up on the flavor of that.”
Whether it’s a light sparkling rosé, a rich pinot noir or a smooth Cottonport, the Landry label has come to represent a stunning variety.
“Moving to West Monroe after Katrina was like starting all over again,” Libby Landry says of their arrival from Folsom in 2006. “Every plant that we put in the ground was a new start.”
When he first drove through the property that year, Jeff Landry could envision the hills covered in what is now 16 acres of grapes, but the couple, with four young boys in tow, would not have made the move if they hadn’t found a church they wanted to belong to in West Monroe.
“For us, living out the faith is the importance of recognizing community as being bigger than us,” says Jeff Landry, now 59. “We’ve learned that from church, and it’s true, and whether people are churched or unchurched, you love your neighbor.”
Inspired by his reformed Presbyterian faith, Landry says this work is a calling to be a small creator inspired by the Creator. His canvas is the vineyard, and his vision? An elevated, wine-appreciating community in the heart of the “Bible Belt” — but one centered on presence and moderation, and on strong families spending quality time together.
And that idea is growing beyond Landry’s own live concerts, parties and tours, too. Thirsty Farmer, a relatively new vintner just down I-20 in Calhoun, has been making a great name for itself since the pandemic, and Landry’s stream of weekend visitors, vino lovers and agritourists from Acadiana to Arkansas to Memphis are realizing that when it comes to wine, Louisiana, too, can have great taste.
“It’s a pleasure to really just make people happy — not just happy but truly fulfilled — because when you do that, they remember your name and your wine and they keep enjoying bottles of it long after they leave the tasting room,” Jeff Landry says. “There’s nothing more pleasant or more pleasing to me than hearing people say, ‘This was beautiful, and we had a wonderful experience.’”

Bossier Artist Joshua Chambers Creates Magical Metaphors in an Absurdist World

BOSSIER CITY ARTIST JOSHUA CHAMBERS is a painter, storyteller, philosopher, teacher, theater set designer and former museum curator who was once described as “elusive and happily odd.” That description, he says, “felt correct.”
“Elusive” may seem apt when viewing his paintings. With scant but symbolic imagery, Chambers challenges viewers to think about what he is saying about himself, contemporary times and how they themselves relate to that imagery.
Born and raised in Tulsa, Oklahoma, Chambers comes to this philosophical and introspective approach to painting through a long parallel career while teaching and creating art. With a master’s degree in fine arts from Louisiana Tech in Ruston, he did a stint as curator of education and public programs at the Masur Museum of Art in Monroe and taught in talented arts programs in Ouachita, Bossier and Caddo parishes. He now serves as an assistant professor of studio art at Centenary College in Shreveport. All the while, he continued to develop his painting vocabulary and voice, which is to tell stories.
As a teacher and artist, Chambers says his objective “is to suggest a story without fully telling it while inviting viewers to bring their own interpretations and emotional responses to the work.” The imagery in his stories, he continues, usually begins with a “real person and a real moment — grounded in personal experience.” Although the thematic starting point is often

autobiographical, he says he strives to reinterpret his visual metaphors “through a more imaginative, sometimes storybook-like lens, allowing them to evolve into open-ended narratives … [that] often blend the emotional truth of the original experience with symbolic and surreal elements.”
For the curious minded, the philosophy behind his paintings becomes a bit clearer when Chambers explains how playwright Edward Albee and absurdist writers such as Franz Kafka, Jean-Paul Sartre and Albert Camus were “gateways” for him into existentialism, humanism and postmodern thought. “And I can’t leave out Shel Silverstein,” he says. “His poems and illustrations continue to have a huge impact on me. The way he paired simple line work with powerful, often whimsical storytelling continues to influence how I think about visual narrative and tone.”
Equally important, Chambers draws upon his background as a theater set designer. Audiences, he

says, must “suspend belief to accept the state as a complete world, even when it’s made up of just a few carefully chosen elements. The gaps are filled in by imagination. I aim to create a similar experience in my paintings. I intentionally keep the imagery minimal and focused, using only the most essential elements. This restraint allows the viewer’s imagination to do some of the work, much like a stage set invites the audience to complete the world in their minds.”
Chambers’ metaphorical imagery often contains animals, especially playful chimpanzees and birds. Chimpanzees fascinate him, he says, because they act as “a kind of storybook version of me.” Humans, he continues, have had a “complicated” relationship with them. “We entertain ourselves with them, exploit them, protect them and sometimes see ourselves in them,” he says. “That layered dynamic makes the chimpanzee an ideal figure through which I can explore themes of identity, vulnerability, and connection.”
Birds, especially the sandhill crane, also have symbolic meaning. “The crane,” he says, “represents resilience and adaptability. It’s a species once threatened, now carefully repopulated through human effort, and it serves as a reminder of both our destructive power and our capacity for stewardship. Like chimpanzees, birds have long been imbued with symbolic meaning across cultures, and while I often draw from that broader symbolic language, I also infuse each figure with personal meaning.”
As to viewers, Chambers’ goal is to “create a sense of shared understanding like swapping stories with friends, but without needing to be in the same room or even the same moment in time.”
It is, he says, much “about assigning meaning to the seemingly meaningless — inviting viewers to question, laugh, reflect or even contradict themselves. Sometimes, we need to laugh at why we cry — or cry about why we laugh.”

I have taken the oath myself: I promise that this year’s holiday celebrations will be as much fun for myself as for my guests.
Of course, we make food that we like to eat and that we like to make. If you enjoy experimenting and making something that sounds exciting, then pick your dishes and try them out on friends and family. If you prefer the tried and true, think of it as making your
Cheese for Dessert
Serve as a course before a selection of fine chocolates or in place of pie or cake. Duplicate the portions for every additional four guests. For groups larger than eight, include a wider variety by adding different cheeses from each category.
1. SOFT CHEESE You should have one creamy cheese like a Camembert or a Brie. Select one that is already soft and take it out of the refrigerator at least four hours before serving. Have a butter knife on the board for cutting.
2. FIRM CHEESE There should be a firm cheese — an Emmentaler, cheddar or an Edam. A small sharp knife should be placed next to this cheese. It should also be at room temperature.
3. BLUE CHEESE Select your favorite, like a Gorgonzola or a Roquefort at room temperature. This knife doesn’t need to be too sharp. If you really don’t like a blue cheese, select a goat cheese instead. Either a blue or a chevre will offer a nice contrast to the creamy and firm cheeses.
4. TO SERVE Buy 5 ounces of each cheese for the platter. Use either thin slices from a baguette or unsalted water crackers in a small basket for people to spread the cheese as they wish to. Serve Bosc pears, already sliced, or dates or figs with the cheese. Serves 4
traditional foods. Then, invite your guests to participate in building your traditions.
And let people help. If it’s a dinner, ask for a category of dishes. If you hate to fix vegetables, create a list of vegetables that will go well with what you are serving. Assign the helpers a vegetable, and you can forget about them for the dinner party.
If it is a cocktail party, a wonderful assortment of dips can be had if everyone brings one. There can be tapenade, hummus, salsas of various kinds, artichoke and oyster dip or whatever your guest’s specialty dip might be. You can supply a platter of vegetables — fresh or grilled — and people will have a grand and healthy selection. Don’t forget to ask for some sweet dips for fruit.
If you serve cheese, put together notes on your cheese board. I have been experimenting with a cheese course for grand meals. Holiday meals do qualify as grand meals, so having a nice variety of cheeses served at room temperature can be a simple addition to any buffet.
If your holiday parties and meals include children, they need to be included in the preparation too. I like to give children who can write a list of guests so that they can make place cards on small tents of paper. It eases that hesitation that people feel when they arrive at the table and have to figure out where to sit. If there are older children, let them copy the menu and then roll and tie them with a ribbon. It can become a keepsake of the dinner for everyone to take home.
Holidays should be fun. They should be a time to cherish our families and friends, not worry about things that don’t matter. Raise a glass together, laugh together and remember the people that you love.

Composed Salad
This is an easy salad to expand as your dinner party grows. It looks nice on your buffet table. Unfortunately, nothing continues to look terrific after we start taking servings out, but this salad holds up pretty well.
2 cups baby arugula
2 avocados, sliced
2 mangos, sliced
1 large tomato, sliced thinly
1 cucumber, peeled and sliced
5 radishes, sliced thinly
2 red and/or yellow bell peppers, seeded and sliced thinly
1 cup white mushrooms, quartered
1 recipe of dressing
DRESSING
1/4 cup soy sauce
1 cup sesame oil
¼ cup mirin
¼ cup orange juice
2 tablespoons honey
Zest of 1 lemon
2 cloves of garlic mashed through a garlic press
1 tablespoon dried ground ginger
1. FOR THE DRESSING Place all of the ingredients in a jar, replace the lid. Shake well. Let the flavors meld for at least two hours before using.
2. FOR THE SALAD Place the arugula into a bowl. Toss with 1/8 cup of the dressing. Then place the arugula over the platter. Arrange the various vegetables in an attractive manner on top of the arugula.
3. TO SERVE Place ½ cup of the dressing in a bottle with a nozzle and squirt in zig zags over the vegetables. Place a pair of tongs for people to use to serve themselves. Serves 4
Roasted Chicken
With all of the fancy food we eat during the holidays, it is nice to have a meal which gets plenty of attention, but is still simple and familiar. What could be more homey than roasted chicken?
1 4-pound chicken
6 lemons
1 bunch Italian parsley, leaves only
Tops from a bunch of green onions, cut to 3-inch lengths ½ cup mayonnaise
Salt and pepper to taste
1 cup white wine
1. PREHEAT oven to 400°F. Make sure the chicken is fully defrosted and the cavity is empty.
2. ZEST the lemons on waxed paper or parchment paper.
3. USE YOUR HAND to gently loosen the skin over the breast without tearing it. Rub half the zest underneath, then layer about 20 parsley leaves evenly. Slide in as many green onion tops as will fit under the skin.
4. MIX mayonnaise with the juice of 1½ lemons. Stir well.
5. SALT AND PEPPER the cavity. Rub remaining zest inside and over the chicken. Place on a rack in a roasting pan. Halve the remaining lemons, squeezing juice inside and over the chicken. Fill the cavity with lemon halves, parsley and green onions. Pour the mayonnaise mixture over the chicken.
6. ROAST 10 minutes, then reduce heat to 350°F. Continue cooking 30–40 minutes, until juices run clear.
7. REMOVE the chicken without piercing the skin and place on a platter. Mix pan juices with wine and cook for 15 minutes while the chicken is resting. Pour the sauce into a pitcher and serve on the table with the chicken. Serves 4

Cotten’s Famous Hamburgers opened in 1982, but it feels like it has been there since the ‘40s. The only regret you’ll have is if you don’t get a side of the beer-battered onion rings. Oh, and the prices are also straight out of another era with the hamburgers starting at $2.89.
Vestal is housed in a beautifullydesigned space that serves as a veritable shrine to wood-grilled meat. Order the filet mignon with or without house-made chimichurri sauce and the carnivore in you will leave very satisfied.

MANY KNOW CORY BAHR as the chef who in 2017 “Beat Bobby Flay” on the Food Network show by the same name, or from his turn that same year as a finalist on “Food Network Star.” Others may know him from his earlier reign in 2011 as the King of Seafood, having taken the title in the Louisiana Seafood Cook-off and the Great American Seafood Cook-off. Bahr has also held the titles of “People’s Best New Chef,” and Food Network’s “Chopped” Champion, among many others. The title he holds most dear, however, is Louisianian, and he serves as a culinary ambassador for the state, participating as a board or council member in organizations dedicated to promoting and maintaining sustainable practices and a stable fishing industry. In 2018, Bahr opened Parish Restaurant in his hometown of Monroe (where he also owns Standard Coffee Co. and Heritage Catering & Events, with a sushi concept scheduled to open this year). At Parish, we can’t get over the Broken Arrow Ranch Elk Loin. The dish is served with elk from an Ingram, Texas exotic game ranch, caramelized sweet potato (sourced from Mississippi) tostones, a green curry spiced sweet potato purée, Fresno peppers and finished with a chimichurri and black garlic molasses. established Shreveport’s Freeman & Harris Café in the ‘20s. While you can’t go wrong with anything on the Orlandeaux’s menu, the main event is the stuffed

shrimp. The iconic Shreveport dish features butterflied shrimp stuffed with Creole-seasoned crabmeat dressing and covered in a spicy cornbread batter. The concoction is then formed by hand into an oblong shape, egg-washed and fried. We make sure to pop in to grub on this when we are up North.

We imagine when David Lynch wrote the line, “I plan on writing an epic poem about this pie” for Agent Gordon Cole in “Twin Peaks,” he was talking about the icebox pies at Strawn’s Eat Shop. Strawn’s has seen various iterations since originally opening in 1944, and while the scenery may have changed, the pie is forever a work of perfection. Whipped creamtopped pies on offer include strawberry, peach (when in season), chocolate, coconut, banana and butterscotch. We are partial to the banana. The creamy pudding center is positively loaded with banana slices, rendering it a veritable health food.

The biscuits are buttery and fluffy and everything you want in this perfect style of bread. The best part — you can have ham, sausage, bacon or fried chicken on it.

IN THE EARLY 1900S, a wealthy Louisiana lumber baron (originally from Pennsylvania) opened The Hotel Bentley in Alexandria. It’s said that Joseph Bentley built his hotel, inspired by the grand Capitol Hotel in Little Rock, Arkansas, after being denied rooms at another local establishment. Not only did Bentley create luxe accommodations for travelers, but he also created an apartment (with a personal elevator) for his own use. Since then, the hotel has had many owners and many ups and downs (including closures), but today it’s a testament to its creator’s vision, complete with a residential tower. Hotel guests and the general public flock to the hotel’s restaurant, The Bentley Room, for business and pleasure and, if they are smart, for the decadent chargrilled oysters. Swimming in house-made barbecue butter, the oysters are a delectable must.
We love a good pie, but we’ll drive well out of our way for a great pie and that’s what you’ll get at Lea’s Lunchroom. Our editor is partial to the coconut meringue. Seems she’s not alone as it’s
one of Lea’s best sellers. You’ll go for the sweet snowflake coconut filling and keep coming back for the golden-brown meringue sprinkled with baked coconut flakes for a little crunch.

Lasyone’s Meat Pie Restaurant may not have invented the Natchitoches meat pie, but they certainly perfected it. Meat pies are said to be the product of Natchitoches’ Native American, French and Spanish culinary influences. In the ‘50s, butcher James Lasyone began crafting the recipe for his nowfamous pies. In 1967, he opened his own meat pie kitchen. Ever since, Lasyone’s is the spot for crispy, spicy meat pies (and also crawfish pies added to the menu later by James’ daughter, Angela).

There are an awful lot of places in Louisiana to get char grilled oysters, but few have the history and elegance of The Hotel Bentley in Alexandria. Also, house-made barbecue butter. Need we say more?

Festive, fabulous and fun are a few adjectives that come to mind when talking about Jack Rose at the Pontchartrain Hotel on St. Charles Avenue. Brunch can get a little rowdy, in the best way, so grab your besties and don a flashy ensemble (sequins are encouraged) and prepare to dazzle and be dazzled. You’ll know you’re in the right place when you enter the lounge and your party is greeted by a colorful and monolithic painting of gold-grilled New Orleans rapper Lil Wayne. The pork cheeks with polenta and creole meuniere is quite simply a culinary wonder. Creamy polenta is gently topped with the meltiest, most piquant pork cheeks swimming in a pool of Creole meuniere. Unlike its French counterpart, comprised of browned butter, parsley and lemon, meuniere’s Creole cousin uses stock, heavy cream, aromatic vegetables and Worcestershire sauce. It is exceptional.

Turtle soup is downright ubiquitous on Louisiana fine dining menus, but there is one that has a certain je ne sais quoi and it’s at New Orleans’ iconic Commander’s Palace. Savory, meaty, not too thin or too thick, it’s the best turtle soup to cross our palettes and we’re sure it’s not only because of the generous glugs of sherry swirled into the dish with a flourish.

Preserving Wildness
The Wonders of White Lake Wetlands Conservation Area

“THE AIRBOAT IS READY TO GO,” says Lance Ardoin, but before we step into the cauldron of a South Louisiana August morning, there’s something I need to understand. In his office south of Gueydan, a well-thumbed copy of Aldo Leopold’s “A Sand County Almanac” on the shelf behind him, Ardoin leans forward. “White Lake Wetlands Conservation Area is not just important for winter waterfowl in Louisiana,” he says. “This place has long been recognized as one of the most important winter waterfowl grounds in all of North America.”


White Lake WCA contains some of the last remnants of coastal prairie in Louisiana. Biologist Manager Lance Ardoin conducts prescribed burns on the coastal prairie to promote growth of woody vegetation.
Located in southwest Vermilion Parish, White Lake WCA contains 52,000 acres of freshwater marshes, lakes, canals and bayous, with an additional 20,000 acres that it leases as farmland. A 12-mile stretch of the Gulf Intracoastal Waterway runs near its northern border, the north shore of White Lake at its southern end. Lyndon B. Johnson hunted here twice during his presidency. Today, the public must enter lotteries to receive coveted hunting tours that run only in parts of the WCA and only on limited days during each season. Approximately
20,000 acres are set aside strictly for wildlife refuge.
BP donated this land to the state of Louisiana in 2002. While the oil company holds mineral rights in perpetuity, it’s here that Ardoin, biologist manager at White Lake WCA, and a team of six biologists and technicians work year-round to maintain a healthy habitat for shorebirds, alligators and waterfowl that includes pintail mallards, hooded mergansers and greater white-fronted geese.
“The ultimate value in these marshes is wildness,” Leopold writes in “A Sand County Almanac,” the first book that Ardoin read in Wildlife Management 101 at McNeese State University. But preserving wildness is merely one of the full-time jobs he oversees. He and the team also work year round to protect farmlands and communities to the north from flooding.
“To continue to manage this place means to be on the front lines,” Ardoin says. “That means that we’re constantly working on various projects, including prescribed burns, herbicide spraying and hydraulic management. All that work creates a more diverse environment and gives waterfowl a food source and area to rest.”
Take one of those projects on its own — hydraulic management, say — and a much larger team would have no trouble keeping busy throughout the year. That’s


because the waterways within White Lake WCA vary in elevation. Two 48-inch pumps maintain waterflow between Cadeau (also called Carreau) and the Florence Canal. To get from one to the other requires the airboat to climb an eight-foot spoil bank. In Cadeau, Ardoin turns the boat in the opposite direction of the spoil bank to provide enough distance to gain the speed necessary to cross. Adjusting his earmuffs, he says, “This is an aggressive jump. You’re going to want to hold on.”
Then it begins, the tornado-whir of the boat’s fan, the passage from water to land and, briefly, it seems, into air, five seconds in all, tame-to-thrilling on the rollercoaster scale, and then we’re on the other side, swerving through a body of water three feet higher than the one we just left behind.

Upkeep of spoil levees such as this one has been piecemeal over the years and requires monthly inspections. “When you’re talking about this amount of water,” Ardoin says, “a leak that starts as a rat hole quickly becomes a man-size hole.” Spoil banks also erode. Those along the Gulf Intracoastal Waterway deteriorate from storms and barge traffic. Since its construction a century ago, the waterway has also widened 100 feet. For nearby farmers, it’s essential that Ardoin and his team tame it.
Pulling up to a recently rebuilt section, we watch as waves from a passing barge rise halfway up the nearly four-foot spoil bank. “You can imagine what happens when a storm comes through,” he says.
“This is just a Band-Aid. You need rocks to protect it.” Rock levees serve multiple purposes. Besides offering stronger protection, they also create marshland. As of now, only one and a half miles of rocks protect the northern border, but state funding has been approved for a partnership between White Lake WCA and the Coastal Protection and Restoration Authority to begin building more next year.
“Our main hope is to protect the community,” Ardoin says, echoing Leopold’s aspiration: “When we see land as a community to which we belong,” he writes, “we may begin to use it with love and respect.” This, in every aspect, is Ardoin’s backyard. Turning the airboat around, he sets off to see what he needs to do next.

Conservation Area includes a two-mile birding and nature trail that is open to the public year-round. Parking is available at the trailhead at the south end of Highway 91, 7.4 miles south of Gueydan. The trail area includes a covered pavilion with tables, two educational kiosks with information about species in the area and an observation tower at the trail’s southeast corner.
• A 500-acre island within White Lake WCA includes several buildings that can house a dozen hunters. Lyndon B. Johonson stayed here on the two occasions he hunted at White Lake during his presidency. A portrait of Johnson hangs in the Presidential Suite inside the largest of the buildings.

THERE IS NO PLACE MORE CHARMING during the holidays than a historic small town. Especially in Louisiana, where religious celebrations are infused with that special blend of the state’s many cultural influences. From beautiful, twinkling light displays and festivals to shopping in quaint boutiques and festive dinners in cozy cafés and eateries, there’s no better time to visit small-town Louisiana. This season, we have our hearts (and stomachs) set on Covington. Nestled on the north shore of Lake Pontchartrain, Covington is a bedroom community of New Orleans located 40 minutes away on the Bogue Falaya River in St. Tammany Parish. With its lively Historic Downtown St. John District, bursting with shops, bars, more than 25 restaurants and art galleries, it’s easy to walk to holiday shopping destinations, fortify yourself throughout the day and enjoy a night on the town, all without getting in the car. Bonus: Parking is free in Covington’s ox lots, named after the tradespeople who’d bring their goods to town and park



their oxen on the squares. We started our day of retail therapy and foodie fun at the Saturday farmer’s market.
Upon arrival, my husband Mark and I felt transported to the small-town fairs of our youth. A five-piece string band was posted up in the gazebo while families enjoyed lunch at nearby tables and shopped local vendors’ wares. We beelined for the Credo Farms stand where handmade soaps, candles and preserves caught my magpie eye. Holiday hostess gifts, unlocked. Produce, meat, coffee and food stalls were also in abundance. Next, we walked to the Tammany Trace trailhead to duck into Rosemary’s Closet, a vintage apparel and record store, but alas, we learned the hard way that it is appointment only. We suffer so you don’t have to.



While we didn’t have time for it on this trip, we have been known to haul our bikes across Lake Pontchartrain and hit the Tammany Trace hike and bike trail. The 31-mile asphalt trail is scenic (and wheelchair accessible) fun for the entire family. No bikes? No problem. Rent one at Brooks’ Bike Shop of Covington (they even have two- and four-seater surreys). Turkey overindulgence? The Tammany Trace is your friend. Outdoorsy types will also want to carve out time for kayaking on the Bogue Falaya River. Rent kayaks at Brooks’ or at The Chimes restaurant (Covington and Mandeville locations) through Canoe & Trail Adventures (which also rents bikes).
By now, it was time for our 1 p.m. lunch reservations at The Greyhound (reservations aren’t required, but we didn’t want to take chances). Housed in a former Greyhound bus station, the upscale casual Greyhound is owned by the same husband-and-wife, three-time James Beard Award-nominated chef/ owners as nearby (and much-lauded) Del Porto Ristorante. We started with the wood oven-roasted feta. The feta is served in a tiny, hot castiron skillet still bubbling from the oven. It is swimming in olive oil with tomatoes, herbs, olives and garlic and served with an enormous house-made pita. Please get this dish or you will regret it. That’s not a threat; I just really need everyone to enjoy this decadent, savory delight. As is his custom, Mark got the burger (featuring ground short rib, chuck and sirloin, caramelized onions, cremini mushrooms, a crispy Parmesan creation and other goodies piled high on a brioche bun) and judging from the silence other than post-bite blurts about the flavor of the meat, it’s a winner. I opted for the döner kebab, which is a wrap filled with house-made beef and lamb gyro


loaf, red cabbage, tomatoes, cucumbers, radish and red onions with an addictive garlic sauce. (I recommend sharing this, because it’s a lot of food.) Of note, The Greyhound has takeaway on offer for Thanksgiving.
Full and quite possibly foundered, we made the short trek to Lee Lane for my favorite type of shopping, books. (If you’ve been reading this column for long, you know you can always expect a trip to the local bookstore and record store. The latter of which you’ll find further down in this missive.) Ox Lot Books is straight out of a cozy romance or mystery. The family-owned book shop is in an actual cottage, which, on the outside a white picket fence and cheerful light blue with white trim ooze historical charm; while inside, the moody, dark blue vibes give enchanted (and possibly haunted) library. An enormous brick hearth, ample seating areas and reading lounge (home of a regular silent book club) invite visitors to sit and read a spell and the mix of new and used books (including a rack of freebies) keep the love of reading accessible. Books are the main event, but gifts also abound, such as cheeky, literary-themed

mugs, tarot cards, candles and bookmarks, of course.
Lee Lane is also home to various antique and art stores, restaurants and, on the corner of N. Florida and Rutland, The English Tea Room. Plan ahead and work the Christmas High Tea at the tea room into your trip. It runs from December through the first week of January.
No trip to Covington is complete without a visit to H.J. Smith & Sons General Store and Museum on nearby Columbia Street. Family-owned and operated since 1876, it is part hardware store, part museum and not to be missed. Santa visits the store during the holidays, so check on his schedule before you go. Additional shops worth a stop while you’re in town are Reenie & Miggin’s Downtown Mercantile on Lee Lane and Black Flower Apparel and Records on Columbia Street. We found a host of Christmas gifts at the former, including an adorable, sparkly gator ornament, as well as holiday-themed children’s PJs, dish towels and other kitchen items and holiday candles. At Black Flower, it’ll be easy to find a gift for the vinyl lover in your life. They also have super-soft T-shirts with cool designs.
Covington has more specialty coffee shops than anticipated, including a few that roast their own, such as Abita Roasting Co. We stopped in at Haven Coffee
and Cocktails on North New Hampshire Street, which makes its coffee drinks with Northshore Specialty Coffee. Metaphorically, kill two holiday birds with one stone by grabbing a latte (or a drink) and a seat, plus a pound of Northshore beans for your favorite coffee connoisseur.
If your visit to Covington includes an overnight stay, do book rooms at the grand Southern Hotel. The circa-1907 Mission-style hotel was originally designed as a retreat for taking to the waters via nearby mineral springs. Later, it served as a sanitarium and, still later, was home to government offices. In 2014, after extensive restoration by preservationist new owners, it returned to its roots, reopening as an ultra-luxe hotel. The on-site French (and locally inspired) restaurant, The Gloriette, has one of the most beautiful interiors we’ve ever seen. The food is superb, too, and the restaurant is open for Thanksgiving dining.
As for us, our shopping adventure had come to an end, so we made our way back across the lake with our holiday list checked off and a nice little caffeine buzz to keep us alert on the Causeway.

HISTORIC NATCHEZ on a dramatic bluff overlooking the Mississippi River makes for the perfect weekend getaway.
Stroll down oak-draped streets with antebellum homes and historic buildings and churches, dine at restaurants overlooking the river, learn its extensive history at the city’s museums or take a ride up the Natchez Trace sporting autumnal colors.
This time of year, Natchez lights up for the holidays, creating a magical destination. And the town is only a short drive for most Louisiana residents being located less than two hours north of Baton Rouge and directly across the river from Ferriday, Louisiana.

DAY ONE
MORNING – Learn the region’s history with a visit to the Grand Village, a 128-acre site containing three prehistoric mounds. Here visitors learn of early Native American life through a reconstructed Natchez tribal house and the park’s museum. In town, Fort Rosalie and the Natchez National Historical Park explains French settlement on the river’s dramatic bluff that began in 1716.
AFTERNOON – After lunch at Biscuits and Blues, which serves up Southern dishes and live music in the evenings, take a tour with one of the city’s historians and storytellers working to foster a deeper understanding of Natchez’s history. One preservationist is Roscoe Barnes III, tourism manager at Visit Natchez, whose article “The Civil Rights Movement in Natchez, Mississippi” has become a piece now used by the Mississippi Department of Archives and History as an official lesson plan for educators. along the Natchez Bluff. This festive European-style market features local vendors and seasonal snacks. First, grab a Christmas in Natchez Passport at the Postal Shoppe and gather stamps from vendors, then return it completed for a holiday gift. Village Hours are 4 p.m. to 7 p.m. Fridays and 1 p.m. to 6 p.m. Saturdays.
EVENING – Enjoy dinner at Magnolia Grill at Natchez Under the Hill, a section of town located right on the river beneath the city bluff. It was here in the 1800s that steamboats docked and visitors flush with cash would enjoy food and drink, sometimes a bit of rowdy pleasure. Today’s visitors may rather relish steaks and seafood instead, while watching the sun set over the river in a blaze of glory.
DAY TWO
MORNING – After breakfast at Natchez Coffee Company, a favorite among locals, explore the town’s 13 National Historic Landmarks and more than 1,000 structures on the National Register of Historic Places. Bike or stroll the riverside, peruse the many boutiques,

AFTERNOON – You’ll need a car to explore the Natchez Trace, which begins its 444-mile stretch toward Nashville just outside of Natchez. At the southern end of this historic highway maintained by the National Park Service are historic homes and plantations, Native American mounds and hiking trails, some of which follow the original trail that dates back 10,000 years.
EVENING – Fall brings a host of events to Natchez with the most popular being the candlelit Angels on the Bluff cemetery tour Nov. 6-8. Visitors will hear from costumed reenactors of those buried inside the historic Natchez City Cemetery, dating from 1822.
By the end of November, it’s holiday time! Natchez has been dubbed the “Christmas Capital of the South” and visitors may enjoy special events such as the Annual Lighting of the Tree Nov. 29, with performances and family activities, and the Christmas Parade on Dec. 6.
