Calabrian nduja with the sweetness of sundried tomato and the softness of stracciatella. Designed by Luci, it’s a beautifully composed plate of flavour and texture, finished with crisp pangrattato. Perfect for relaxed autumn entertaining.

INGREDIENTS

Pasta:

100g strozzapreti

10g sundried tomato

3 tbsp stracciatella

1 tbsp parmesan

Salt, to taste

Nduja Sauce:

1 clove garlic, sliced

1 shallot, finely sliced

25ml white wine

10g nduja

30g tomato paste

100ml hot water

25ml olive oil

Pangrattato:

1 slice sourdough

1 tsp olive oil

Black pepper

METHOD

1. For the pangrattato, blitz or finely chop the sourdough. Toast in a pan with olive oil, salt and black pepper until golden and crisp. Set aside.

2. To make the sauce, heat olive oil in a pan and gently cook garlic and shallot until softened. Add tomato paste and nduja, cooking until fragrant.

3. Deglaze with white wine and allow to reduce. Add hot water and simmer until slightly thickened and glossy. Set aside.

4. Cook strozzapreti in salted boiling water until al dente.

5. In a pan, warm the nduja sauce with sundried tomato. Add the pasta and toss to coat, loosening with a little pasta water if needed. Stir through parmesan.

6. To serve, spoon into a bowl, top with stracciatella, scatter over pangrattato and finish with a drizzle of olive oil.

TO SERVE

Serve immediately while warm, allowing the stracciatella to melt gently through the pasta.

What’s the simplest way to explain the value of styling in one sentence?

Property styling creates a clear picture of a property’s potential, elevates the energy, excites buyers, and stirs urgency to secure it.

What’s your process from first consultation to install, and what should vendors have ready before you arrive?

Our initial consultation involves a walk-through of the property, which can be (and has been) in any kind of state imaginable. We’re experts at seeing the wood for the trees. Some clients prefer to leave it entirely to us, while others enjoy collaborating. We discuss the ideal layout for each room, define the look we want to create, and the market the home will enter. For example, will it suit a polished, tailored interior for a mature professional, or a relaxed contemporary style for families? We also cover practical matters, such as what needs to be stored or decluttered, any trade works to be completed, and we answer client questions. We then devise a bespoke styling plan, map out a timeline, schedule our trades, and specify items such as floor coverings and interior finishes, if required. Furniture, linen, accessories, lamps, artwork, and fresh flowers are hand-selected by one of our stylists. Installation day is a hive of activity, with a stylist, picture hanger, styling assistant and movers onsite, and after a bit of organised chaos, a meticulously curated, beautifully styled space emerges.

How do you use furniture, linen, homewares and artwork to help buyers emotionally connect with a space?

A styled home offers a sense of luxury, calm and abundance. It feels considered and resolved, wanting for nothing, which reflects what many buyers aspire to.

What does “maximising market potential” look like in practical terms, and how do you measure success?

Buyers have varied tastes, but most place a high value on generous space, great light and effortless flow. In each home, we aim to maximise those qualities through correct scale, colour, placement and detail, making every property the best version of itself. Seeing our clients’ reactions is a joy, and many say they wish they’d done it years ago, sometimes engaging our in-house design team, STUDIO by Cooper Robinson, for their next home. And hearing of strong auction results is always music to our ears.

In 2026 and beyond, what will sellers need to prioritise to make homes stand out?

Styling aside (but, obviously, essential), the best advice is to invest in new carpet, new or resurfaced floorboards, simple, luxurious window coverings, and fresh paint. The impact on older properties, especially, is significant. These are the “forever” details buyers notice online and in inspections, giving sellers an edge. Once the styling is packed up, buyers can see a beautiful blank slate and feel confident about creating their dream home. ■
