Arguably the world’s most famous pasta sauce, Ragù alla Bolognese is a crowd favourite at neighbourhood diner Osteria Renata. Restaurant director, Alex Ghaddab, invites you to recreate the popular recipe at home.
Ragù alla Bolognese:
2 tbsp olive oil
2 tbsp unsalted butter
1 medium onion, finely chopped
1 celery stalk, finely chopped
1 carrot, finely chopped
250g grass-fed ground beef (preferably chuck)
250g free-range ground pork
100ml whole milk
300ml dry white wine
400ml homemade or good-quality store-bought chicken stock
Salt & freshly ground black pepper
A pinch of nutmeg (optional) Parmigiano Reggiano rind
Pasta:
400g paccheri pasta (La Dispensa Gentile is a recommended and widely available brand)
Salt (for the pasta water)
To Finish:
Freshly grated Parmigiano Reggiano (to garnish)
METHOD
Base Preparation:
In a heavy-bottomed pot, heat the olive oil and butter over medium heat. Add the onion, celery, carrot, and a pinch of salt. Cook gently for 8–10 minutes, until soft and translucent.
Caramelise the Meats:
In a separate heavy-based pan, working in batches, cook the ground beef and pork until well caramelised, stirring to break up the meat — about 10 minutes. Deglaze the pan with half the white wine, then add the mixture to your pot of softened vegetables.
Deglaze & Simmer:
Stir in the milk and reduce until absorbed (about 5 minutes). Add a pinch of nutmeg. Pour in the remaining white wine and allow it to evaporate completely.
Add Stock & Slow Cook:
Add the chicken stock, reduce the heat to low, and simmer uncovered for at least 2 hours, stirring occasionally. If the sauce starts to dry out, add a splash of water or more stock.
Cook the Paccheri:
Bring a large pot of salted water to a boil. Cook the paccheri according to packet instructions or until al dente — start tastetesting from the 8-minute mark. Drain and reserve a small cup of pasta water.
Combine:
Toss the drained paccheri with the hot ragù. Add a spoonful of pasta water if needed to loosen the sauce. Let it rest for 1–2 minutes, then serve in a large dish to share at the centre of the table.
To Serve:
Plate immediately and finish with a generous sprinkle of freshly grated Parmigiano Reggiano.

Instantaneous torque vectoring (front to rear), a rear limited slip diff, and the ability to individually brake all 4 wheels
independently means this Urus handles like a Lamborghini, not an SUV.
This is a hyper SUV that deserves the hype being both meaner and greener at the same time. This hybrid powertrain approach has already shown its potential in the Lamborghini V8 hybrid Temerario supercar and V12 hybrid Revuelto hypercar. The instantaneous torque and response is also perfectly suited to an SUV – especially one designed with performance at its core.
This updated Urus also has multiple aerodynamic and technological updates to make it an even more compelling drive.

Marshall White CEO Simon Jovanovic has been named as one of the event’s ‘Top 8’, a group of eight influential male leaders who have pledged to take a visible stand against family violence. Recognised for his role in the business community, Simon joins leaders including Carlton Football Club CEO Brian Cook to raise awareness and inspire other men to act. Marshall White Director and Auctioneer Nicholas Brooks, along with team members from across the business, will also attend, with Nicholas leading the live auction to raise vital funds on the night.
The event will feature keynote speaker Tarang Chawla, a respected advocate, writer and Commissioner at the Victorian Multicultural Commission. Tarang’s dedication to ending violence against women stems from personal tragedy and drives his work through initiatives such as Not One More Niki,
his acclaimed podcast There’s No Place Like Home, and his advisory roles with both state and federal governments on family violence reform and gender equality.
This year’s Stand Up in September forms part of a wider campaign to inspire accountability and awareness across Melbourne. In partnership with the Carlton Football Club’s Carlton Respects initiative, You Matter is creating space for men to lead change one conversation at a time.
By attending, you will help support You Matter’s work, furnishing fully equipped homes for women and children recovering from family violence. Since becoming a registered charity in 2020, You Matter has grown from supporting one woman’s relocation to helping 302 families, a total of 671 women and children across Melbourne, creating ‘Havens’ that offer safety, dignity and the change to begin again.
