Gaggenau combi-steam oven Large cast iron pot Mixing bowl Tongs Wooden spoon Knife and chopping board
1.
Preheat the combi-steam oven to Hot Air 180°C with 30% humidity.
2.
Combine the flour and five spice powder, then coat the chicken pieces evenly.
3.
Heat the vegetable oil in a large cast iron pot and brown the chicken in batches. Remove and set aside.
4.
Add the onion, garlic, ginger, spring onion and chilli to the pot and cook for a few minutes until fragrant.
5.
Return the chicken to the pot, then add the brown sugar, Chinese rice wine, cinnamon stick, dark soy sauce, chicken stock and hoisin sauce.
6.
Place the pot on a wire rack on shelf position 1 and cook for 30 minutes.
7.
Garnish with extra spring onions and serve.
INGREDIENTS 2 tbsp plain flour 1 tsp five spice powder 1 size 16 free-range chicken, jointed 3 tbsp vegetable oil 1 onion, finely chopped 4 garlic cloves, sliced 1 knob ginger, peeled and grated ½ bunch spring onions, finely sliced, plus extra for garnish 1 long red chilli, deseeded and finely chopped 2 tbsp brown sugar 3 tbsp Chinese rice wine 1 cinnamon stick 3 tbsp dark soy sauce 250ml chicken stock 2 tbsp hoisin sauce

A PLACE TO CALL HOME We spoke with Sherri Bruinhout, Launch Housing’s new CEO, whose 30 years in the housing and homelessness sector are matched by a passionate commitment to ending homelessness.

For those unfamiliar with your work, can you share the organisation’s mission and the impact you are striving to create across Melbourne? We have a clear and unapologetic focus at Launch Housing: ending homelessness. We’re ambitious, and we design thoughtful solutions that address people’s real needs. We believe stable housing is the foundation for safety, stability, community and hope. Anyone can find themselves in insecure housing, or worse, homeless, and if they do, they deserve more than waiting lists and temporary fixes. They deserve solutions that last. Launch works with people from all walks of life, from prevention and crisis response through to long-term social housing. As housing affordability pressures continue to rise, what are the most significant challenges facing individuals and families experiencing homelessness or housing insecurity? We are in the midst of a cost-of-living crisis and an unaffordable rental market, and too many people face homelessness because they can’t afford the rent. These pressures weigh most heavily on families, especially those on a single income, and we’ve seen an increase in employed people who need our help. Women with children escaping family violence often end up without a home, with too few supported crisis options available to them. We have also seen a concerning rise in the number of women aged over 55 seeking our services. Launch Housing is known for delivering both immediate support and long-term solutions. Could you share a recent initiative that reflects the impact of this work? Homelessness takes many forms and calls for new thinking, and at Launch we’re not afraid to do things differently. One initiative I’m especially proud of is Cornelia, a program for pregnant women facing homelessness. Funded by the Victorian Government and generous donors, it’s a collaboration between the Royal Women’s Hospital, HousingFirst and Launch, providing a safe place to live, access to maternal healthcare and support to transition to long-term housing. It’s one of a kind in Victoria. To end homelessness, we need to work together, and it’s through partnerships with community and government that we create real change. Looking ahead, what are the key priorities for Launch Housing over the coming year? We are always excited by opportunities to partner with organisations and people in our community to innovate solutions to homelessness. We continue to advocate for more supported housing for people with high and complex needs and have identified the Mornington Peninsula as a key area where rough sleeping is rising at an unacceptable rate. Some people need long-term support alongside their housing, not because they’re failing, but because recovery takes time. This is why we deliver ‘Housing First’ programs that pair safe, secure housing with wraparound support. We’re seeing around 90% of people in these programs maintain their housing and not experience homelessness again, becoming active, valued members of their communities. ■

This August, Menzies brings together a significant collection of modern, contemporary and First Nations Australian art for its winter auction in South Yarra, led by a quintessential work from celebrated artist Lin Onus.
Taking place on Thursday 27 August, the Important Australian & International Art auction will feature 78 lots, with major works by some of Australia’s most recognised artists, including John Olsen, Arthur Boyd, Charles Blackman, Bronwyn Oliver, Emily Kngwarreye and Sally Gabori. At the centre of the sale is Lin Onus’s Bulla Goonyah 1993, appearing at auction for the first time with an estimate of $350,000–$500,000. Illustrated on the cover of Menzies’ August catalogue, the work reflects Onus’s distinctive approach to combining ecological knowledge and cultural memory. Its title translates to Two Fish, referring to the fish concealed within the dark waters of the painting. Another auction debut comes from John Olsen’s Wattle and the Chasing Bird Landscape 2009, estimated at $160,000–$220,000. The work features a self-portrait of Olsen chasing a bird through one of his characteristic Australian landscapes. Arthur Boyd and Charles Blackman are also represented, alongside an important selection of contemporary sculpture. Among the sculptural highlights is Bronwyn Oliver’s Horn 1992, estimated at $200,000–$250,000. Created during Oliver’s residency at Auckland City Art Gallery, the woven verdigris copper sculpture has remained privately held since 1992 and will also make its auction debut. The collection extends to contemporary First Nations art, with works by Emily Kngwarreye, Sally Gabori, Danie Mellor, Reko Rennie and Gaypalani Wanambi. An installation by artist collective Tennant Creek Brio, One Eyed Man 2020, will mark the collective’s first major appearance at auction. The auction will be held at Menzies Gallery, 1 Darling Street, South Yarra, from 6.30pm on Thursday 27 August, with the exhibition open from 20–26 August. ■
