I’m determined to be the best I can be… MARTIN JONES, SALES AND MARKETING EXECUTIVE, ROYAL ARMOURIES INTERNATIONAL aving experienced the diversity of the

sector around the world, H hospitality Martin Jones realised it was time to

put down roots. So when he met his partner in 2011, Martin jumped at the chance to relocate to Leeds, bringing his experience and expertise to the north. Seven years later, Martin ensures all aspects of sales and marketing for the Royal Armouries Museum are managed, focusing on controlling and issuing new enquiries, website management, public relations and social media. Here, he tells Northside what life is like in and out of the Royal Armouries, what the future holds, and why he loves Leeds. What is a typical working day like for you?

I start work, check my emails and distribute new enquiries to the sales team. I then compile feedback and distribute it, perform diary checks and keep in touch with the museum directors and managers so they are aware of what events we have on. In between that, I write up contracts, input payments and book entertainment for clients. I also keep a close eye on our social media channels, continually pushing our business, and if a client asks for help advertising their event, I publish social media and blog posts. What has been the highlight of your career so far?

Everything I have achieved while working for the Royal Armouries, especially progressing through the ranks. I am extremely thankful to RAI for their support and guidance. What do you enjoy most about your job?

I enjoy every aspect of the role - no day is ever the same - and I work in a unique venue, with a fantastic team. But if I had to pinpoint a specific aspect, it would be the freedom to design, as I’m a creative person. What advice would you give to anyone thinking of a similar career?

If you want something, go and get it! Keep your head down, work hard and ask questions. You WILL get to where you want to be. What is the toughest part of your job?

more determined to be the best that I can be. What do you enjoy doing outside of work?

Eating out with my colleagues, as we’re all friends and have a laugh. Spending time with my family is also very important to me. Where do you see yourself in ten years?

I would like to see myself as the marketing manager possibly marketing director - but my partner and I also own our own theming company, so I would like to grow that business, too. What made you apply for the job at the Royal Armouries Leeds?

Most of my previous roles have been within the hospitality sector, and RAI always hire at the end of the year for the Christmas party season, so as my partner already worked there, he got me an interview, and the rest is history - I am still here after sevenand-a-half years. What do you love about Leeds?

The liveliness of the city - it never sleeps. But there are also so many beautiful parks and countryside walks if you need a break. What projects are you working on at the moment?

I’m currently working on our Christmas door-to-door marketing and I’ve also just finished a new project which has been added to our website called: A Doll House, which is a virtual 3D walkthrough tour of our venues. I’m also always finding new and innovative ways to market the business, which is a project in itself.

World Cultures Curator, Antonia Lovelace is one of the minds behind the exhibition, and has used her background in anthropology and years of experience to create a one-of-akind showcase, which is also her last installation at Lotherton due to her retiring after 31 years in the industry. With beautiful garments including silk brocades, geometric Dhaka cotton weaves and whole rainbows of printed prayer flag sourced from Tibet, Nepal and Bhutan in the distinctive country house setting of Lotherton Hall, visitors are promised a day full of cultural history. Here Antonia talks about her favourite pieces on display, what the exhibition brings to the community.

What should visitors expect from the exhibition?

I have a degree in Anthropology and have done a lot of work in museums, including ten years in Glasgow and almost 21 years in Leeds which is why I am retiring. My predecessor used to go to Nepal three or four times, and she provided the 22 Northside | www.northsidemagazine.co.uk

foundations of the exhibition by bringing back some materials and the head dress as well. The exhibition also features a collection of silks, wools and geometric patterns in an amazing range of colours. And the Liverpool Museum has a lot of Tibetan materials, which after a meeting with the curator last spring, they quickly said they would support us and offered us some pieces for display. What do you think this exhibition will bring to the local community?

We’ve got three or four interactions for family audiences so I’m hoping that it will attract families, especially the Map of the Himalayas which you have to guess which place different things come from. There are some fabrics hung up on special wall panels so you can actually touch the silks and some of the cottons, so that’s really good for younger people. We’ve also got model masks from Nepal to try on in the mask corner, and we’ve got a table with lots of big books so hopefully people who come to the exhibition will really enjoy it as well as those who deliberately seek it out because they are already interested in the Himalayas.

What do you hope people take away from the exhibition?

I hope that they realise how complex the region is, how people’s lives are changing and the pressure of tourism. And hopefully people will find it interesting to see a modern twist on the Gurkha’s. What two key pieces should visitors see?

The 1920’s costumes from Tibet and the elaborate head dress that has fabulous turquoise and coral jewels in. It will be great for people to learn about how people wear them to bed, how you support them whilst you’re sleeping and how they were chosen to wear for celebrations. What would you say to people coming to the exhibition?

Do come and really enjoy the country’s colours and have a think about the amazing region of the world. Simply put, just come, have a fantastic time and hopefully learn something new.

I consider myself to be an educationist as well as a writer. For me, writing should make people think as well as give pleasure. I’ve taught in schools, colleges and in Professional Development at Manchester University where teachers would come to my courses. I worked as facilitator, helping them learn from each other, and the way I think children get wise. When I worked in the Greater Manchester Advisory Service, facilitating was always my mantra. Where did your passion for poetry come from?

What would be one of the most difficult things about writing a book?

The most difficult part of writing a book is getting started. It’s the same with essays students sit pondering looking at a blank sheet of paper. The thing is to get something written as it can always be discarded later. Writing is like making a hole in the imagination and letting it out, and what’s special is you never know what will come up. But it’s exciting to enter those dimensions of yourself you didn’t know you had.

It is also where I have Mary meet her lover Gilbert Imlay, who fathered her first daughter, Fanny. I like to make each chapter as exciting and valuable as the next. It is a bit like running a relay – you have to keep hold of the story and can’t drop the baton. What message do you hope readers take away from the book?

Mary Wollstonecraft was a pioneer feminist and though she lived a long time ago – from 1759-1797 – her book, A Vindication of the Rights of Women (1792) where she argues that women take an inferior role in society because they lack education and are never given the chance to show their intellectual worth, has parallels with today. It’s important we don’t lose her message, which doesn’t lack compassion and respect for the role of wives and mothers and the difficulties women are faced with in such a noisy and busy world. Finally, what is next for you?

What can we expect from your latest book?

My latest novel The Passions of Mary Wollstonecraft was inspired by a student on a train while returning to York from London, as she was studying Mary as part of her course and had been reading biographies. I was very interested in Wollstonecraft at the time, and she said it would be good to read a novel about her. The student had imagined a lot of her life, like many do, including myself. For instance Mary did not, so far as I know, meet the

I’m now working on the sequel, which is a novel about Mary Shelley. Mary Wollstonecraft died from complications, less than a fortnight after giving birth to the girl who would marry Percy Bysse Shelley, the poet, and eventually write her famous novel, Frankenstein. he Great British Food Festival is returning to Harewood House this May Bank Holiday weekend for the fifth year running. Taking place from 26 to 28 May, the festival is a great way to unite the community, as well as bringing in families from afar. Since its launch in 2011, the Great British Food Festival has grown from a one-location festival, to an annual event touring eleven venues across the country, including Harewood. Asked what inspired him to start the festival, director Daniel Maycock said: “We had worked in a foodie background and had noticed a gap in the market for a big food and drink event, and linking with some amazing venues like Harewood gave us a great point of difference.” Located in the heart of Yorkshire, the 18th century Harewood House is a treasured heritage site, boasting more than 100 acres of luscious gardens to explore and focusing on the protection and development of wildlife habitats. The beautiful landscapes surrounding the house provide the perfect location to host a quintessentially British food festival. With easy

access to the house and parking, and as a canine-friendly location, Harewood has proved to be an ideal location over the last few years. Last spring, the festival team introduced goodie bags for the first 1,000 people to arrive, and a traditional cake-off alongside past Great British Bake-Off contenders Val Stones and Howard Middleton proved particularly popular. The Men Vs Food challenge was another highlight of the weekend and provided entertainment for contenders and spectators alike. This year, the festival is bigger and better than ever with plenty to look forward to. The festival will feature a new drinks stage, and the bake stage will be much more interactive. My four-day-old baby is having problems breastfeeding. He does not seem to be able to latch on properly and often breaks off crying. He also has colic and isn’t gaining much weight. My midwife says he has a “tongue-tie” and suggests he would benefit from having it divided. What does this involve and will it be painful for him? Answer

Tongue-tie (or ankyloglossia) is a condition that affects the way the tongue moves in the mouth. For some babies, their frenulum – the cord-like strip of skin joining the underside of the tongue to the floor of the mouth is shorter than usual making it difficult to breastfeed. Tongue-tie affects around 4-11 per cent of newborn babies. It is more common in boys than girls, and sometimes runs in families. Signs of tongue-tie in newborns include gulping, making clicking noises and breaking suction while feeding because they cannot latch on properly, causing distress for both mother and baby. If a baby has a tongue tie but can feed without problems then no treatment is necessary however it sounds like your baby is struggling and may well benefit from a tongue-tie division. In very young babies a tongue-tie division is usually carried out without anaesthetic in an out-patient clinic by a consultant surgeon. It is a relatively painless procedure as there are few nerve endings in the floor of the mouth. The baby is held by a parent or a specialist paediatric nurse. he tongue is lifted by the consultant and the frenulum is cut with sterile scissors. The tissues are then pushed apart to divide them. It takes less than a minute and there is very little blood loss, if any. The benefits of tongue-tie division are usually immediate and the baby can usually breast feed very soon afterwards. Thai trailblazer SUKHOTHAI HAS BEEN LEADING THE WAY SINCE 2002 - AND IT’S LATEST INCARNATION KEEPS IT AHEAD OF THE PACK, WRITES CHRIS WILSON. f you’re familiar with Sukhothai’s Leeds city centre restaurant, at first glance it pretty much looks like business as usual. However major changes have taken place behind the scenes (in the kitchen to be precise) with new dishes added to a menu that had remained constant for 15 years. The menu is also a lot more readerfriendly, thanks to some clever streamlining. What was a pretty daunting book running to several pages has been condensed, so all the food choices are now contained on a single large piece of stiff card. So what’s missing? Nothing as far as I can tell; there is certainly no shortage of choice with familiar favourites still present, alongside some exciting new additions reflecting up-tothe-minute trends in Thai restaurant cuisine and street food. So if you love authentic Thai food but find the process of selecting from a seemingly endless array of curries, salads, stir-fries, rice and noodles just too exhausting, the good news is that Sukhothai have distilled their formidable food knowledge into one easy-toread masterclass in taste and texture. It’s still worth taking a few minutes to make your choices, especially with new dishes to consider, so select a cocktail from the very smart bar and relax. Our evening began with a couple of classic cocktails - The Thaistar Martini, an

awesomely sharp blend of vodka, passion fruit and lemon juice served with a shot of Prosecco on the side (£8.25) and a Slingsby Harrrogate gin and tonic (£9.50), and seeing as they’ve gone to the trouble to introduce some new dishes, it seemed rude not to try them out, alongside a few of the old classics. For starters one of the new dishes, Laab Gai Krob (£7.25) packed a real flavour and heat punch. Crispy chicken was shot through with tastes of lime, fish sauce, chilli, mint and shallot with toasted ground rice for extra crunch. Equally satisfying was the Pou Nim (£8.95), deep-fried soft shell crab with peppers, onion and garlic in a black pepper sauce. Recent menu additions also dominated our main course selections. Bream Yang, the whole fish grilled and dressed with sweet soy sauce with lime, green chilli sauce and a mixed leaf salad, was light in texture and while lacking the fiery heat of some of our choices was still delicious. The bream was expertly cooked, fresh and moist with forkfuls of pure white fish lifting effortlessly off the bone. But perhaps our favourite dish of the night was Kua Kling (£11.50), an intensely spicy minced chicken dish from Southern Thailand with aromatic herbs and spices including lemongrass and lime leaves. This dazzling dish, deservedly given a three-chillies rating (handy for heat seekers) looked deceptively

bland but while the dominant colour may have been beige, the taste combined a full rainbow of flavours. Side dishes play a key part in any Thai meal and alongside Thai sticky rice (£3.25) and stir-fried noodles (£3.75) we loved the Som Tum (£7.95) a zinging, crunchy combination of spicy papaya salad and chilli in a sharp dressing. With excellent strong coffee (£2.25) to round things off (essential after that knockout Thaistar cocktail) we were replete. Sukhothai was many people’s introduction to Thai cuisine when it opened its first branch in Chapel Allerton back in 2002, and it continues to blaze an innovative trail for delicious food and immaculate service. BED, BREAKFAST AND DINNER TO DIE FOR... HANNAH SANDERS ENJOYED THE FULL EXPERIENCE AT THE CLEVELAND TONTINE. he Cleveland Tontine in the heart of North Yorkshire is no ordinary venue. It is idiosyncratic and eclectic with a hint of English eccentricity and personal style, which still makes it ‘the’ place to eat, drink and stay in this beautiful part of the country. Originally built as a coaching inn in 1804, the hotel was a popular resting place for travellers before being taken over in 1976 by the McCoy brothers, and finally in 2016 Provenance Inns and Hotels made it their ninth acquisition. The Cleveland Tontine still pays tribute to its rich history by retaining many original features. Georgian in style and impressive throughout, the hotel did not disappoint, as not only were we greeted by a stunning grand exterior and crackling log fires, but our superior double room (from £170 bed and breakfast) – named The Coach House – with its fabulous wallpaper designed by Deborah Bowness, a staircase leading up to a beautiful bathroom and views of the Cleveland Hills, made me feel like I was Elizabeth Bennet enjoying a night away with Mr Darcy. The bistro, with its small candlelit tables,

huge 17th century stone fireplace and an intricate grapevine pattern across the Grade 1 listed ceiling, is the perfect place to relax and unwind. The head chef and his team work with a range of local suppliers to create delicious seasonal menus, and this was reflected in the taste of seafood starter (£11.95). Beautifully presented, the oyster emulsion was heavenly when paired with the crab, langoustine and Scottish salmon and the king scallop and smoked mussels provided the dish with the perfect balance of flavours. The Provençale fish soup (£18.95) arrived with a delicious stone bass alongside a helping of mussels, langoustine, and crisp sourdough finished with a rich bisque resulting in a sublime combination of tastes. No meal would be complete without a show-stopping dessert, and the indulgence of chocolate (£10.95) with its decadent sour cherry and chocolate sphere, chocolate delice, white chocolate fondant and iced cherry and pistachio was just that. After a restful night’s sleep in the comfiest of beds, an award-winning, locally sourced breakfast of eggs benedict and royale, and

freshly baked pastries in the exquisite drawing room was just what we needed. Unfortunately, thanks to the temperamental British weather we weren’t able to enjoy as much of the surrounding area as we would have liked, but, if you are lucky to be graced with sunshine there’s some stunning walks around the North Yorkshire Moors and the Yorkshire Dales National Park, and you could even visit Mount Grace Priory – one of the best and most accessible of the ten medieval Carthusian houses in Britain. Contemporary fine dining isn’t all about starched white linen, it’s about research, experiments, taste testing and fine tuning.” The Horto menu is constantly evolving, and for Murray, this can be a long process: “creating new dishes takes time, but it’s definitely worth it to see the reaction from guests. And with summer drawing ever closer, I’m looking forward to utilising the ingredients grown in the Rudding Park kitchen garden – my favourites are English peas and tomatoes.” The inspiration behind Murray becoming a chef, he didn’t have: “the necessary skills to become an astronaut.” And his culinary heroes: “all chefs who have ambition and drive.”

Minal’s interest in gastronomy began at a very early age: “As a child, I loved learning about food, and would often cook for families in my village. With friends, I would play ‘restaurants’, and I would always be the chef. This interest has now blossomed into a career, since meeting my husband Bobby, and I feel god has answered my prayers.” Her idols include not only culinary luminaries, such as Atul Kochhar and Gordon Ramsay, but also her mother-inlaw, Kaushy: “Kaushy has always inspired me – her style and method is quite different to mine, and I relished learning from here, and her nurturing personality. “I also admire Atul Kochhar, as he has taken Indian cuisine to great heights. And finally Gordon Ramsay, as he came into our lives at a very early stage and put us on the map. Having the privilege of learning from his advice has helped Prashad (which stands for quality) strategically make decisions.” The menu changes seasonally, but some of Minal’s favourite dishes include rhubarb pickle, rainbow chard pattra and biryani. “I love using mangos for pickle, lassi and sorbets, avocados in our vegan icecream, and I am looking forward to introducing aubergine and seasonally grown broad bean curry to the menu.”

When Paul Leonard was a child, he enjoyed baking with his mother, and his grandparents owned a chain of health and home brew shops, so pursuing a career as a chef was a natural progression. “Andrew Fairlie is a massive hero of mine, so to speak. His entire ethos and the way he looks after his team is amazing. He and Stevie (his head chef) run the kitchen in a perfect manner and are a true inspiration. “We have a fantastic team in the Burlington kitchen, which helps keep the food consistent and allows us to utilise the amazing produce we get from our suppliers.” In January this year (2018), The Burlington was refreshed and revamped as part of a £500,000 makeover, which included new light fittings and soft furnishings. And the menu is constantly changing to make use of the Devonshire’s garden produce, with signature spring and summer dishes including: cured chalk stream trout, salt baked beetroot and Yorkshire hogget. “Each year, spring takes a long time to come around, and this year was no different. Fresh produce is a key part of our cooking, so we use what is best each day. “I absolutely adore the asparagus, peas, beans and mushrooms that we have in abundance in spring, and the soft fruits that become available in summer. I really try to stick to the seasons, so when these products arrive in the kitchen we really embrace it.”

Ben Turner and his team take pride in using locally sourced produce and culinary innovations to excite diners, and with a menu based on the seasons you’re in for an unforgettable experience at The Fairfax Arms. After starting his career as a kitchen porter, Ben Turner was draw to a career as a chef after being immersed in a busy, bustling kitchen. Taking inspiration from his culinary heroes, Gordon Ramsay for his rawness and push of perfection and Tom Kerridge for his unique take on traditional food, Ben uses his imagination to create dishes that excite and entice guests. “With the warmer seasons coming up, I really enjoy cooking with wild garlic, asparagus and spring lamb. Spring is such a brilliant time for chefs, especially in Yorkshire as we have so many great products on our doorstep. “I also really like using port in my dishes, as it is so versatile and can add so much flavour.” The Fairfax Arms is constantly evolving, with the addition of an orangery extension last summer, and has recently been awarded two rosettes by the AA. “In five years’ time I am not sure where I see myself – life is such a rollercoaster. Although I wouldn’t mind trying to get into the Michelin Guide.”

Ban Kaewkraikhot launched the first Sukhothai restaurant in 2002 in Chapel Allerton, and such is the brand’s reputation, she has since opened Harrogate, Headingley and Leeds city centre. The Sukhothai menu focuses primarily on Thai fine dining and, as Ban was taught to cook by her mother, the majority of the food is authentic – using meat and vegetables sourced locally, and importing all the spices from Thailand. “Being a chef is all about making people happy, and there aren’t many jobs that let you use food to do so. I’m very grateful to the good people of Yorkshire for supporting us – Kob Khun.” Earlier this year (2018), Sukhothai launched their first menu makeover in 15 years, and stand out dishes include: roaring rib-eye (a new 12oz cut of steak for Sukhothai), yum phed krob mango (duck breast with crispy duck crackling, fresh mango, chilli, onion and lemon), kua kling (minced chicken and a mixture of Thai herbs including lemongrass and lime leaves), talay pad cha (mussels, prawns and squid served with a mixture of Thai herbs, fresh peppercorns and Thai baby aubergine) and rumwong hed (a selection of exotic Asian mushrooms, including white jelly mushrooms, black jelly mushrooms and Enoki mushrooms, in a specially made Thai salad dressing). Ban’s advice for aspiring chefs: “Don’t stop believing and don’t stop working. My dream started out in a tiny village in Thailand, and now there are four Sukhothai’s. You have to believe in yourself and work your hardest every day.”

CATHEDRAL TOUR FOR GIGGLESWICK CHORISTERS Young choristers from Giggleswick School have joined a sacred music elite in singing in the country's greatest cathedrals. The pupils, part of the school's Schola Cantorum group, have sung at a professional level in Liverpool, Gloucester, Durham and St Paul's Cathedrals over the last year, entering a world usually the preserve of university and college choirs.

Quality mark awarded to Queen Ethelburga’s Chapter House, the Early years, Infants and Juniors School at Queen Ethelburga’s Collegiate, has just been given a prestigious Primary Quality Mark Award for English and Mathematics by the national programme The Quality Mark. The award is given in celebration of good practice and commitment to continuous improvement in these subjects, as the ‘bedrock of a good education’. The award comes in swift succession to the school’s Silver Primary Science Quality Mark, earned in September 2017, which celebrates excellence in science teaching and learning, and enables schools to work together to share good practice. To achieve the award, Chapter House underwent an assessment, against the ten ‘Elements’ of the Quality Mark framework. Landmark Leeds hotel gets a new lease of life as investor Simon steps in with a multi-million pound investment Leading Yorkshire businessman Simon Pollard is promising a five-star future for a waterfront Leeds hotel that went into administration earlier this year. Simon Pollard says he intends to transform 42 The Calls Hotel into a ‘breath-taking’ luxury experience as part of a multi-million pound investment. Simon, who has been named as one of Yorkshire’s stand-out business leaders by The Insider magazine and has spent the last 23 years building several highly successful businesses, aims to ‘reignite the brand, rebuild and develop a five-star luxurious experience with the beautiful backdrop of the River Aire.’ The hotel’s refit will blend high-end contemporary suites into the footprint of the 18th century corn mill, while ensuring protects the building’s heritage is protected. It’s been a difficult time for present staff at 42 The Calls, but they will be staying on as the hotel is revitalised. The hotel will remain fully operational and any bookings made prior to the new management will be honoured. Plans are yet to be unveiled, however if Simon’s past ventures are anything to go by, Leeds can prepare itself for a breath-taking

new hotel. Simon said: “I’m extremely excited about the future and potential of this hotel and look forward to creating something special in support of our longstanding customers. “I’m of the firm belief that I have the ability to reset the vision whilst reigniting the fundamental core values of 42 The Calls Hotel. Out-of-this-world experience for Cundall pupils Pupils were treated to an experience of a lifetime when a former NASA astronaut Richard Mastracchio visited Cundall Manor School, near York. Rick’s advice to the fascinated pupils was to excel at their studies, but also to challenge themselves and acquire a wide variety of skills. Rick’s unique and valuable experience on the astronaut selection board later in his career taught him that being an astronaut was not all about academia. He said anything from playing a musical instrument and competing at sports, to being good with their hands, contributed to creating a well-rounded person. The visit was arranged as part of the Space Lectures' outreach program. The next in the series of lectures will see astronauts Dr Rhea Seddon and Captain Robert Lee Gibson come to Yorkshire in October. SOUND LEISURE EXTENDS LEASE Following a successful six-week collaboration with Leeds City Council and Victoria Gate Shopping Centre, Leeds-based Sound Leisure Ltd, the only jukebox manufacturer in the world to make a new vinyl playing jukebox, have extended their lease in the centre for a further five weeks to run throughout May.
