Sustainable & stylish Leeds showroom first to offer groundbreaking kitchen.

L

eeds kitchen showroom, Four Season Interiors, were recently announced as the first UK Retailer to offer a groundbreaking kitchen from Finland. The kitchen range, the Puustelli Miinus, differs from conventional kitchen ranges in that it was developed entirely on ecological grounds and incorporates an innovative biocomposite carcase frame made from polypropylene and wood pulp. Owner and Design Director Ian Sandford explains: “The resulting cabinets are lighter, stronger and their make-up almost halves the carbon footprint of conventional counterparts.” The Miinus kitchen is sure to appeal to the growing number of buyers who are now purchasing ethically, but that’s not the only reason Ian believes Miinus will prove to be a popular draw. “Miinus improves upon a number of specifications of existing ranges. The door finishes are not only innovative in their use of a honeycombed inner core that prevents stress on hinges, the styles and colours are extremely appealing, both to the eye and to the touch. The range also arrives with lengthy warranties and there’s no MDF or chipboard that are present in the majority of kitchens.” The range recently debuted at the

popular Ecobuild exhibition at London’s ExCeL and Ian, along with Four Seasons Interiors designer Liam Hannon, were present on the stand to discover, first-hand, an impressive reception from the professionals who attended. “It’s a great measure of how good a range is when a busy stand, full of architects, designers and specifiers, are left utterly smitten after witnessing a kitchen that ticks all the boxes.” Puustelli invested £1.5million in the development of Miinus and, including stores across Finland, the range already has an established and growing network of showrooms in Sweden and has recently been introduced into the United States. Every component in a Miinus cabinet is recyclable and all wood components within the range are sourced from highly sustainable forestry. The company have also been busy on social media so that Twitter and Facebook users can engage with them and follow their progress as they grow their network of reputable retailers across the UK. Ian adds: “Miinus kitchens are a breath of fresh air within the kitchen industry and we’re proud to be the first in the network of UK retailers. It’s great also for the people of Leeds

that our city, which figures high among sustainable cities in the UK, will be the first to offer a truly pioneering kitchen for our time.” To celebrate the launch there will be an open event, in association with AEG, at the Roundhay showroom on 7 May, running from 11am until 3pm. With live cookery demonstrations from food stylist Tom Guise and other entertainment planned for the day, it’s a great opportunity to see the pioneering range of Scandinavian furniture and learn all about the AEG appliances within it. B

ack in March, protests, strikes and widespread publicity and social media campaigns took place following Jeremy Hunt’s proposed new contracts for junior doctors. The junior doctors then made the bold decision to take the Government to court. In order to raise the funds for judicial review, the doctors turned to Crowd Justice, a legal crowdfunding website dedicated to enabling would-be litigants to raise money for cases in the public interest. The NHS crowdfunding campaign hit its initial target of £25,000 within just 24 hours, and the junior doctors have (at the time of writing) raised over £97,000 from over 3,000 backers. This raises important legal questions on the subject of costs. Litigation is undoubtedly an incredibly expensive process; is crowdfunding really a potential model for financing legal proceedings? It is no secret that the legal system cannot keep up with the digital revolution and the development of companies that allow individuals or bodies to appeal for financial backing from the everyday man in the street is certainly attractive to potential claimants. Historically, funding someone else’s litigation so that the action could go to court, in exchange for a share of the potential proceeds, was a crime called champerty. Similarly, the law did not allow legal claims to be funded (or ‘maintained’) by a third party; this was on the basis that a third party may manufacture evidence or inflate claims in

order for them personally to benefit. Even though the principles of maintenance and champerty are still in existence, with the erosion of legal aid, parliament and the courts are currently more receptive to third party funding arrangements. Ultimately, the rules against maintenance and champerty are to protect the purity of justice and the public interest. Is the crowdfunding of this NHS campaign in the public interest and protecting the purity of justice? There are certainly those who think so. It is argued that the difference between champerty and what crowdfunding does is that the funders are donors rather than investors; the donors will not receive anything back from their donation. So what does this mean in terms of costs? If the doctors’ claim fails, could their backers be liable to pay the other side’s costs?

The case of Arkin v Borchard Lines Ltd examined the costs liability of a third party funder. The Court of Appeal held that, in the circumstances of that case, liability should be limited to the extent of funding provided. However, it recognised that, although that case did not amount to champerty, other third party arrangements that did could be liable for the entire costs of the proceedings. So could the successful party go after over 3,000 backers in order to enforce a costs order? Probably not, as the backers don’t stand to benefit from the proceedings and practically it would be difficult and costly to do so. Further crowdfunding projects for legal disputes have arisen, including Action For Cabbies – Black Cabbies v TfL where over £345,000 of a £600,000 target has been pledged so far. We will have to wait and see if crowdfunding becomes the norm for litigation in the future, and how the courts deal with it if it does. For those seeking advice, visit www.LawBlacks.com.

Tough task Here are three bikes perfect for riding L’Etape du Tour, all available at the Specialized Concept Store, Harrogate.

ith less than a month to go before the 2016 edition of the L’Etape du Tour, we thought we’d take a look at some of our best road bikes for tackling this type of epic road cycling challenge. Firstly, a little bit about the Etape. Running since 1993, it’s a chance for amateur riders to emulate their professional heroes by riding the route of one stage (or ‘etape’ in French) of that year’s Tour de France. It’s run by ASO, the same company that organises the Tour, as well as the Vuelta a Espana. For many cyclists, this event is high up on their bucket lists – constituting as it does the culmination of a childhood dream for many of us! The course is always tough, with most editions running along one of the Tour’s mountain stages. 2016 is no exception with the route including four serious categorised climbs. There’s an extra-special element this year too, because the stage the organisers have chosen to feature will be the 20th of the professional race – the one before the final day riding into Paris.That means whomever is wearing the yellow jersey as the race reaches the Alpine town of Morzine will be the winner of the 2016 edition. For the general classification guys it’ll be the final chance to take a victory, so we can expect plenty of fireworks on the slopes. Tarmac The Tarmac is the bike favoured by Alberto Contador, who will be challenging for the yellow jersey come July, and could even be wearing it already by the time the pros reach Morzine two weeks after the Etape comes into town. The Beast has landed As Europe’s Strongest Man takes centre stage at First Direct Arena this month, we catch up with leading contender, Eddie Hall.

A

t 6ft 3in and with a 63in chest, it’s easy to see how Eddie ‘The Beast’ Hall lives up to his name. He is currently Britain’s Strongest Man and is also the world record holder in the deadlift with straps. We caught up with the 29-stone tower of strength as he was preparing for Europe’s Strongest Man, which comes to Leeds First Direct Arena on 9 July. What was the moment that defined your career? Probably seven or eight years into my career when I broke the world record deadlift. That made me realise if I could break the world record then maybe I could be the World’s Strongest Man one day. Who inspires you? From day one it’s got to be Arnold Schwarzenegger. Probably subconsciously as a child at five or six years old, watching Terminator and seeing such a huge guy on television being a movie star, that inspired me to get into body building, lifting weights and from there, into Strong Man. What has been the biggest challenge in your career? Making the transition from being an amateur to pro strongman – that six month period of having no money and taking a risk was tough; it took a lot of balls to do that and move into being a pro but it worked out for the best.

How do you feel about the upcoming competition? I feel pretty good. There’s a very big figure being mentioned about the deadlift – the half tonne kilo – and I was probably one of the first people on the planet to say that it’s possible, so I’d like to be the first person to do it. How do you stay motivated? Always think about who you’re impressing. If someone says you can’t do something then use that as inspiration and give them the middle finger when you do it. Another one is family. For me, my wife and kids are everything so I’m doing everything for them. It’s so nice to think one day I will be the world’s strongest man and my kids will be able to live off that heritage. Not just the financial side, but it will also it give them someone to look up to in the family. What does it take to become a strong man? Probably 20-30 years ago you could have got away with winning World’s Strongest man weighing 18 or 19 stone. But the sport has progressed so much through science and recovery methods that unless you weigh upwards of 25 stone you’re not going to be anywhere near the top. It’s the good-old theory that weight moves weight; the heavier you are the stronger you are. I’m 29 stones and you have to maintain that to compete with the big guys because if you don’t, you’re never going to win.

Eddie has to consume a whopping 10,000 calories a day to retain his physique. An average day includes: 7am – Wake up and drink a protein shake followed by an hour of cardio 8-9am – Breakfast – a huge bowl of porridge, fruit and beef jerky Mid-morning snack – 100g of cashew nuts, Lunch – around 1kg of chicken/steak, pasta/rice and vegetables, 1kilo in total plus cheesecake or yoghurts 3.30pm (second lunch) – a bowl of porridge, lots of flapjacks to carb-load before the afternoon training session Afternoon training session, throughout which Eddie consumes a couple of litres of fruit juice and a litre of protein shake Post workout – steak/chicken/spag bol/curry Supper – Another high-calorie meal to help his body repair while he sleeps Bed – Eddie takes a protein bar to bed with him to eat if he wakes up during the night.

pain has been a firm favourite destination for British holidaymakers for years and this summer there is expected to be a rise in the numbers of visitors who fly there to soak up the fantastic weather, enjoy the culture or sample the great Spanish tapas. Vueling, Spain’s low-cost airline, has recently introduced flights from Leeds Bradford Airport to Barcelona. Flights to the Spanish city and Catalan capital are on Mondays and Fridays, giving passengers a choice of a long weekend away, a short midweek break or a full week’s holiday. Holiday fun

Keep the whole family entertained this summer with a trip to Leeds’ Museums and Galleries.

chools are out and it’s time to conjure up a plan to keep your kids occupied for the summer. Luckily, Leeds Museums and Galleries have many festivals and activities to keep them busy. It all starts off on 1 July with a toddler Tour De France at Kirtkstall Abbey.The cloister has been kitted out with a mini grass course ready for toddler races, big races and games. Then it’s onto to the largest community festival in Leeds on 9 July. The Kirkstall Festival will host a battle of the bands, a comedy gala, a parade and a lot of food and drink. The Multisensory Museum will be searching for the sixth sense with a themed invisibility activity (27 July- 4 September). For six weeks, the museum will be testing your ability to taste, smell, touch, see and hear.

Despite the schools finishing, there’s plenty for children to learn about history, science and art at the museums in Leeds. There’s a chance to explore what’s lurking under the Leeds and Liverpool Canal with the Leeds Industrial Museum, study the landscape around Temple Newsam House for the 300th anniversary of Sir Lancelot Capability Brown and to look at the diaries and letters from people affected by the First World War at the In Their Footsteps exhibition at Leeds City Museum. It’s not every day there’s an opportunity to drive a 1946 steam crane. But at Thwaite Mills Watermill there are activities to witness the crane in full power lifting objects out of the water (4 & 18 August & 1 September) as well as building your own cranes and creating robots and a Mars Rover (4 & 18 August

& 1 September). Leeds will also be heading back in time to celebrate the annual Edwardian Gala at Lotherton Hall on 16/17 July. With picturesque scenes, people will be treated to a brass band as well as family activities including face painting. Leeds Industrial Museum and Thwaite Mills Watermill will also be turning back the clocks as they offer free rides in some vintage buses to and from the museums. The 1950s and 60s buses will be joined by a classic car show and other transport themed activities throughout the day (21 August). The vintage theme carries onto the new exhibition at Abbey House Museum, which is hosting The Vintage Youth Club. Discover what it was like to live in various decades as they explore young people’s lives from different eras. As it’s summer, it’s the perfect time to go out for a picnic and Kirkstall Abbey are hosting one every Thursday with a twist. When tucking into your sandwiches you will be joined by Barry the dragon. Bring your own food but make sure Barry doesn’t eat them. To stop your children turning into little dragons during the summer holidays, Leeds Museums and Galleries might just tame them for a little while yet. July 1986 Westside Published in the summer of ‘86, the first edition of Westside was just 32 pages but, such was its popularity, within the year it had doubled in size. From the very beginning local restaurants played a key part and in the first issue Marvin Close served up a selection of his favourite tried and tested restaurants – Deakins and San Remo in Sheffield, Ye Olde Cheshire Cheese Inn and the George Restaurant and Hotel in Derbyshire all came up trumps. We have continued to support local restaurants over the years and now, the annual Westside Restaurant Awards, which celebrates the region’s finest, is one of the hottest events on the Sheffield social calendar. Our gossip column Gnome appeared very early on. This anonymous spy infiltrated the lives and parties of Westside people and gave readers a banquet of salacious gossip to feast upon. “Who is the Gnome?” became the question on everybody’s lips. Of course, we never told. In May 1989 Westside went on the hunt for the region’s most beautiful people. Women in the fashion business nominated from the ranks of men and Barnsley hairdresser Simon Nicholls was chosen for his effortless style. Managing director Tony Morgan was nominated by beautician Lynda Price who said: “He’s not a towering six footer but he’s got everything else and he looks good whatever he wears.” The first Westside June Guide was produced in 1991 to celebrate the World Student Games coming to Sheffield. This magazine is now an annual listings guide including restaurants, shops, and things to see and do in the region. Looking forward to the Millennium, in 1999 Westside got all geared up with its guide to the best Champagne. We gathered a panel of restaurateurs at Fischer’s Baslow Hall for a tasting. They tried 13 different bottles at varying prices and the winner was a budget bubbly, Tesco’s Champagne Brut. Westside has always tried to take a light-hearted approach wherever possible and in 2011 we cocked a snook at the recession with a typical quirky look at the various ways at which you could squander a lot of money very quickly. From buying a sports car with plummeting value to having your locks trimmed at a high-end salon, we discovered there’s plenty ways to splash the cash. Of course, none of Westside’s longevity would have been possible without the backing of our advertisers and some – including the likes of Blundells and PA Jewellery, who advertised in the very first issue – have been with us from the start.

June 1989 Eastside In the first issue of the quality magazine for Doncaster, Rotherham and North Notts we investigated the ins and outs of owning a racehorse, meeting a syndicate based in the Pilgrim Father pub in Scrooby, who paid £450 each for a part-share in a nag that might one day lead them to the winner’s enclosure. With our official partnership status with Doncaster Racecourse and the St Leger Festival, Eastside has retained a strong equine focus and the magazine regularly features upcoming race days and photos from the many events. We’ve always enjoyed a good gossip here at Eastside, and our resident party animal Toad has been at the heart of the social scene for a long time, making its debut in the spring of ‘97. Rather like Doctor Who, this is a beast that changes form every few years, but our appetite for party pictures and local lifestyle news never fades. The new millennium saw Eastside enjoying an exclusive face-to-face with Doncaster’s own Jeremy Clarkson. He was quick to deny national newspaper reports that he had been rude about his home town but, in the same breath, could not resist having a dig at Rotherham and Mexborough. Eastside has always kept a very close eye on the local dining scene and three years ago we stepped up our support Recipe for for the region’s fabulous restaurants with our first Eastside Rules of success attraction Restaurant Awards, which has enjoyed great success each True romance year at The Crown Hotel, Bawtry. Most recently, in last month’s issue, writer Andy Waple took a look at the Sheffield Olympic Legacy Park, which will be built on the former site of Don Valley Stadium. This £55million project will nurture the region’s sports research and development, health and wellbeing, as well as providing a school, college and some small stadia to support basketball and rugby. With world-class venues such as the English Institute of Sport already in place, the development of the Olympic Legacy Park will be the final piece of the Lower Don Valley Jigsaw. FFB has survived in an era in which many print publications have become obsolete. This is a clear reflection that FFB has always delivered what its readers want and has a strong standing within the local business community.

August 1994 Sixer From fun, local features, and interviews with the likes of Sheffield Wednesday women’s team captain Steph Spence in 1999, to more serious topics, like how local businesses bounced back after the flood of 25 June 2007, Sixer has been at the heart of North Sheffield. In March 2004 we selflessly went in search of Hillsborough’s tastiest pork sandwiches. Four sandwich shops were put to the test. Baps from the Hungry Wolf, Béres Pork Shop, Biltons and Lily’s were all judged on quality of meat, bread, stuffing and sauce. Béres (which has been around since 1961) was declared the winner, with Lily’s in second place, and Biltons and Hungry Wolf in joint third. Always keen to keep in touch with local celebs, in January 2008 we caught up with Chapeltown lad Steve Peat. He grew up riding in Wharncliffe Woods and trained as an apprentice plumber, and it was his boss who introduced him to his first race. By 2008 he was twice World Champion, seven times British Champion and twice European Champion. In October 2011 we featured amateur dramatic society, the Stannington Players, who were celebrating 60 years of entertaining locals with quality theatre. The group has a rich history that dates back to just after the war; they actually began as a play-reading society in people’s houses. There were many name changes over the years but the group formally formed as the Stannington Players in 1951. First For Business (FFB) delivers the latest business news and views from the Sheffield City Region to the desks of business leaders in South Yorkshire and the North Midlands. It offers a strong, independent voice which has given it a standing within the local business community since it launched over 25 years ago. While plenty has changed over the last 26 years, much of what matters to the business community remains the same. As far back as 1990 hot topics included transport, manufacturing and city centre regeneration. Sound familiar? Of course, these are the issues that matter when you are trying to make your city – or region – as economically successful as possible and no doubt in years to come we’ll still be discussing them. And we’re sure you’ll be reading all about them in FFB! Here are some highlights from the last 26 years. In March 1995 we ran a feature about the way new trademark laws (introduced in the 1994 Trade Marks Act) were making things easier for companies. The same issue included a feature on the latest phase of the Victoria Quays project including news that Nabarro Nathanson would occupy newly-built offices on the site. The following year we asked: should businesses be on the internet? There followed a detailed explanation of the various uses of the internet, including a relatively unknown form of communication: the ‘email’. Would it ever catch on? We thought it had a chance. Back in June 2008 the cover of now-monthly FFB featured none other than Sheffield golden girl Jessica Ennis-Hill. Andy Waple wrote: ‘Jessica Ennis, one of Britain’s top athletes cruelly robbed of an Olympic challenge in Beijing, is a perfect example of the new kind of export that is helping to reinforce the message that Made in Sheffield is still an international mark of quality’. As well as a keen focus on business news, FFB has interviewed some influential business people, including former director-general of the BBC, chairman of the Football Association and Sheffield hotelier Greg Dyke and TV Dragon James Caan, who was FFB’s cover star in 2010. He shared his views on business in an accompanying interview. In September 2014, FFB became an official media partner for MADE: The Entrepreneur Festival. This issue featured speaker Michelle Mone on the cover and included interviews

November 1995 Northside Northside’s first issue was delivered to select homes in Leeds in November 1995 and, by June 1996, it was also being read in York and Harrogate. The cover of the inaugural edition featured Emmerdale actor Ian Kelsey, who had been judged Leeds’ most eligible bachelor by our editorial team. In the same year, Ian was nominated for Most Popular Newcomer in the National Television Awards for his role as Dave Glover in the soap. We picked a winner whose good looks have stayed on our screens, more recently Ian has appeared in Doctors as Howard Bellamy. Also in that first issue we reviewed two of the area’s best-loved restaurants at the time. Paris at Calverley was praised for its deep fried prawns in filo pastry, with cinnamon and ginger chutney starter and roast lamb joint. Northside predicted Paris would ‘thrive on its own genuine individuality for years to come’ and we were right; Paris continued to flourish for 12 years after our review. Our dish of the month came from The Drum and Monkey in Harrogate. Fillet of whiting with crab stuffing and glazed hollandaise was on the menu, and The Drum and Monkey’s chef Tina Nuttall explained how Northsiders could recreate the dish at home. At the time the

restaurant had been running for 23 years after being transformed from a pub, and today it is still a strong favourite for seafood in Harrogate. From fine dining to fast cars, motoring has always been a big part of Northside, and over the years we have put a host of luxury cars through their paces. In 2015, to coincide with the launch of the latest James Bond movie Spectre, Northside’s Adam Kay was given the opportunity to live out his Bond fantasies behind the wheel of the latest Aston Martin, the DB9 GT model. Our reporter was also treated to a viewing of one of Bond’s most iconic cars, the Aston Martin DB10, and a chat with Bond stunt driver Mark Higgins.

A magazine for young city dwellers in Sheffield. The latest trends, hotspots and events have always been a mainstay of City. The Hipster pages keep readers up to date on new additions to the city’s bar, restaurant, music, arts and fashion scenes. City has featured some of the biggest names in popular culture since its inception. In the first year alone the magazine spoke to hairdresser Nicky Clarke, chef Raymond Blanc and actor Christopher Eccleston. Ian Brown, Tinie Tempah, Duffy, Joan Rivers and Ellie Goulding have all graced the pages of City; more recently the magazine spoke to pop superstar Meghan Trainor. Sheffield’s annual inner city music festival Tramlines has taken up a residency in City; the magazine has stood at the festival’s side as it’s grown in both popularity and size since it began in 2009. City features illustrations as its cover, often by local artists. April 2016 issue featured a design from renowned Sheffield artist Pete McKee ahead of his hugely popular Six Weeks to Eternity exhibition at Magna Science Adventure Centre, whilst other editions have featured work from local illustrators including Tom J Newell, Faunagraphic and Grace Louise Taylor. >

June 2002 Image Image was launched in June 2002 as a new voice for the Sheffield area surrounding Crystal Peaks, Mosborough and Handsworth. In our first year we interviewed Trisha Cooper. A popular voice on our radios at the time, Eckington based Trisha co-hosted the BBC Sheffield breakfast show and then went on to produce radio all over Yorkshire. In the same issue we spoke to rock and roll legend Dave Berry. In 2012 we caught up with Dave again, after what he described as the “the best ten years of my career” and he was still playing music too, performing around the world but for relaxation he was selling antiques in Sheffield. Image often champions promising local musicians and The Mosborough Music Festival has been a summer highlight since it began in 2010. Image has had a long and harmonious relationship with Crystal Peaks, producing shopping guides at important times of the year such as Valentine’s and Christmas. Crystal Peaks celebrated its 25-year anniversary with us in 2013, and in 2014 we featured the centre’s famous bees who have set up home on the roof. Our reporter met the couple who take care of the hundreds of thousands of honey makers buzzing around the roof of one of Imageland’s biggest landmarks.

March 2003 Southside Southside launched in March 2003 and has been a household name in Chesterfield, Dronfield and surroundings areas since. In 2004 we focused on the historic Flagg Races, the UK’s only remaining horse race meeting to feature a cross-country race on natural hunting ground. The Chatsworth International Horse Trials are also a Southside regular and the world renowned equestrian event fills the magazine’s pages with previews of dressage, cross country races and show jumping each summer. Southside has featured some of the area’s most talented sportsmen before they’ve made the bigtime; in 2004 we featured 12-year-old golf whizz Scott Campbell who told us his dreams of one day becoming a professional. Today Scott has accomplished his dream and travels the world playing the sport he loves. Chesterfield FC’s star striker Jack Lester was interviewed ahead of his team’s 2-0 victory over Swindon at Wembley in 2012. Chesterfield won the Johnstone’s Paint Trophy that year. Southside featured the Spireites later on in 2012 but this time it was because their home ground was being taken over by the rocket man himself, Elton John. The megastar played to a sell-out crowd at the then B2net stadium in his first and only gig in Chesterfield to date.

PULSE AT THE HEART OF YOUR COMMUNITY

Pulse was launched in 2013 and went straight to the heart of the Chapeltown and Ecclesfield community, where it has remained ever since. In its first issue Pulse featured the Chapeltown Forum. The official aim of the group was to champion the needs of the Chapeltown area and in talking about the group in the magazine, Pulse supported and promoted a great community cause, setting a trend that has continued through the magazine to the present. Later in 2013 the magazine featured the Grenoside Reading

Room, and spoke to the group of volunteers who took the building on when it was handed to the community. They transformed it into a heritage centre which has grown to become a hub of the community today. In 2015 Pulse met the volunteers who saved Eccesfield Library and managed to protect the library’s future after the council were forced to make cuts to the service. Alongside charitable community causes and events, Pulse has featured some of the area’s most interesting characters, including: entrepreneurs, such as Nose Warmer inventor Sally

tried to do our bit H always to make the world a better place, raising money for national and local good causes through cake sales, quizzes and charity days... and we will always continue to do so. But to celebrate our 30th year in business, we are also looking to do something a little different. This time, rather than shaking the charity tin and asking others to contribute, we’ll be getting stuck in and making our own practical contribution to the many good local causes that are close to our hearts. 30 Happy Returns is RMC Media’s modest way of putting something back into our community. As individuals and collectively, we will be going out and about over the next year, doing anything from litter picking to volunteering in animal shelters. We’ll return to this story regularly over the coming months and you can see how we get on, both in the magazines and on our website. You may spot us out and about in the community – we’ll be wearing the rather snazzy t-shirts worn by managing editor Chris Wilson (see above). Meanwhile, to get the ball rolling, Chris spent some time volunteering at a new cafe that takes a unique approach to sourcing ingredients.

The Real Junk Food Project, Sheffield So how do I find myself wiping down tables and chopping vegetables in a café where people are invited to ‘pay what they feel’ for their meal? It starts with the fact that 15 million tonnes of food is ditched in the UK every year. That’s three wheelie bins of food per person, making us the most wasteful nation in the EU. Food for thought – especially when, like me, you are fortunate enough to have a job that involves quite a lot of eating out in rather nice restaurants across Yorkshire and North Derbyshire. I first became aware of The Real Junk Food Project, Sheffield last summer when a friend told me she had spent the day after Tramlines, a weekend music festival in Sheffield, helping out in a pop-up restaurant where the main ingredients consisted of food left over after the bands moved on and the fans went home. The food was not past its sell-by date or contaminated in any way, but after events like this, the simplest thing for the vendors was simply to dump it and move on to the next event. Most of it was destined to end up in a landfill site. A small band of volunteer chefs, kitchen hands, pot washers and general helpers was trying to do something about this. Diners could pay what they could afford, or what they thought the meal was worth. Those who believed in the cause and could afford it might decide to pay more; those with empty pockets could volunteer, washing dishes in return for food. It turned out this pop-up restaurant was far from a one-off but part of a movement that began when Leeds-born chef Adam Smith found himself working on a farm in Australia where he witnessed the vast scale of food waste, in

agriculture and the catering industry. He came home and set up a café in Armley, Leeds, in 2013. There are now 95 across the country, staffed by volunteers cooking food that would otherwise go to waste, donated by local businesses, supermarkets, catering events, local households, food banks, farms and wholesalers. The Real Junk Food Project, Sheffield is now a year old and has grown from pop-up events to having its own café, at Regather Works on Club Garden Road, very close to London Road’s bustling array of restaurants, pubs and shops. Project director Jo Hercberg spent a decade in the online travel industry before deciding to leave the corporate world and do something she really believed in. The café is staffed by volunteers whilst food comes from local businesses, supermarkets, catering events, local households, food banks, farms and wholesalers. “Hopefully there will be pay-as-you-feel cafés all over the country soon,” says Jo. “But if the message spreads, and people start to think and act more about food waste, there will come a time when they close down because they won’t be needed.” As for my own small contribution, a morning spent wiping down and setting tables, putting the chalk boards outside and making a salad to go with the lunchtime quiches that Jo had cooked the previous day, was rewarding, and fun too. Dr Raashed replied: Breathlessness is a common problem and one that increasingly limits our functional capacity with age and diminishing fitness level. There are a number of causes for this and often we are focussed on a diagnosis related to heart or lungs. Careful assessment of both heart and lung conditions to clarify their relative contribution is important. Accurate assessment of lung health by detailed history – particularly occupational history, examination, lung function test and a chest X-ray is a good start. Occasionally, a CT scan of lungs and further lung function testing is required for clarity. Breathlessness can be caused by a

number of different things and changes in weight and loss of fitness and conditioning can contribute significantly towards it. Advancing age with diminishing musculoskeletal reserves does not help matters. Often losing ten per cent in weight (if you are overweight) helps greatly together by increasing level of fitness. Health and lifestyle choices we make early on in our lives maintain our functional capacity for longer. Whilst maintaining a normal body mass index (BMI) and a certain level of fitness; it is important that people report changes they experience in their lives to their doctors so that early investigation can be performed. nimals have always been the main attraction of the Great Yorkshire Show (GYS), but there will also be plenty more events to keep even the most rural family entertained this summer. Taking place in Harrogate from Tuesday 12 to Thursday 14 July, GYS highlights the best of British farming and the countryside with thousands of animals in the competitive classes. International show jumping is always a thrilling experience as the crowd cheer on four riders from four nations to see who will

win the most prestigious title of Ripon Select Foods Cock O’ the North. There will also be livestock and equine judging events to put the cattle and horses through their paces. This year, as well as being expected to attract an estimated 130,000 visitors, there will also be a record number of sheep – perfect for the GYS’s regular sheep shearing event. Other animal events include horse shoeing, a cattle parade and grouse shooting demonstrations in the Country Pursuits Area. There will also be a number of farming seminars taking place throughout the three days.

Organised by the Countryside Alliance and National Gamekeepers Organisation, A Year in the Life of a Grouse Moor is a new addition to the daily arena programme and will be presented by John Cavana of Patanavac Gundogs from near York. It will explain the management processes, flora and fauna and individuals involved in the upkeep of these unique habitats, how important they are to remote rural economies, and how their careful management benefits a host of other bird species, including curlew, lapwing, golden plover, merlin and ring ouzel.

Bringing new ideas

New Show director Charles Mills is hoping to see fresh faces walk through the gates of Harrogate Showground between 12 and 14 July.

M

odelling is not a career Charles Mills has ever considered. He grew up on the family farm, near York, where his childhood summers would include a trip to the Great Yorkshire Show with his parents. As he grew up he became involved in the show himself, taking on a number of roles over the years until being appointed as Show Director in 2015. A job which, on top of heading up one of the country’s premier agricultural shows, requires Charles to showcase the latest in great Yorkshire fashion. He has been amongst the first to try on a

Great Yorkshire tweed jacket, of which 300 have been specially commissioned for the show, each with ‘Yorkshire Born and Bred’ woven under the collar and a white rose on the lapel pin. “It was a great honour to be one of the first to model these jackets,” said Charles, who is getting ready for his first Great Yorkshire Show as director. The jackets are a result of a unique collaboration between five great Yorkshire institutions: the Yorkshire Agricultural Society, Brook Taverner, Abraham Moon and familyowned retailers Clarksons of York and Eric Spencer of Ilkley.

Despite a history in the agriculture side of the Great Yorkshire Show, Charles is looking forward to the fashion show, which will see budding designers showcase their work alongside big fashion brands, and welcome a more diverse range of visitors to the show. He said: “It’s quite exciting, we have some wonderful local students showcasing their work.” Students from colleges and universities in Yorkshire will be showcasing their latest designs at the show, and some will be selling their designs to raise money for St Leonard’s Hospice, a York based charity.

Getting young people involved in the Great Yorkshire Show has been a big part of Charles’ first year as Director, and he hopes to see fresh faces walking through the gates between 12 and 14 July. He said: “We need to keep reinventing and bringing in new ideas. The industry requires new people to come into it, and they need to come to the show.” And setting the bar high for new ideas is Charles himself, who has been working hard to bring new attractions to the show since the gates closed on last year’s show. He said: “Preparations started as soon as we finished last year’s show and this year there are going to be so many different things for people to go to. Hopefully I have brought some fresh ideas in.” It’s all part of Charles’ plan to get new, younger visitors from within the farming industry and all other walks of life through the gates of the Great Yorkshire Show. One of the biggest attractions this year will be the food emporium, in the brand new £11.5million Hall 1, which is more than double the size of the previous venue. At the heart of the hall will be The Great Yorkshire Cheese and Dairy Show, and cooking demonstrations from chefs including Rosemary Shrager will take place within the Great Yorkshire Cookery Theatre. There will also be hundreds of local products available for visitors to buy. Charles said: “It is in a much better, controlled environment now and the hall is bigger than previous years, making room for the great local produce. I love that local products are supported, and this year we have a much bigger choice.” Charles has previously worked as the

joint chief cattle steward at the show and has a keen interest in the agricultural industry, he wants to bring the most exciting innovations to Harrogate so people not involved in the industry can learn about farming in the modern age. He said: “On the President’s Lawn we will have two brand new combine harvesters and an old thrashing machine, it will showcase to the public how farming used to be done and how it is now.” For the first time there will be a live Lely Robotic Milking Demonstration at the show, an exclusive for British agriculture shows. A purpose-built dairy unit has been built on the showground in preparation for the demonstrations, and 40 cows are travelling from a farm near Leeds to be milked at the event. “The public can watch the cows being milked by themselves,” said Charles. “They have been conditioned to walk in themselves when they are ready to be milked, it is a fascinating thing to watch.”

The robotic milking system recognises each cow giving them access to the robot 24/7 so they are milked when they choose. Over 200 pieces of data are taken each time, it is then presented to the farmer and enable them to supply each cow with all her needs for optimal health, milk production and well-being. Cows will take centre stage again at the Great Yorkshire Show when they enter the clipping area before the show, which will mean the public get to watch them getting a pre-show haircut. The new dairy features are part of Charles’ plan to encourage dairy farmers to visit the Great Yorkshire Show. “We have definitely got more dairy cattle this year, it’s been important to me to encourage involvement from dairy farmers,” said Charles. “We’ve had a magnificent response and I would like to thank all the dairy farmers for getting involved, I am extra pleased that they are coming.” As well as dairy farmers, Charles wants to encourage children and families who aren’t involved in the agriculture industry to visit the Great Yorkshire Show and learn about the countryside. “In our discovery zone we have information all about the countryside and all things related to the countryside. It is something everybody should look at to learn about new ideas.” ¯

And it’s not just on the show days that local children can learn about agriculture, Charles said: “It’s not only on show days we are busy, we recently had 6,000 kids come to the show ground to participate in countryside workshops to learn about where their food comes from.The Great Yorkshire Show is not just a three day event.” The public will also get the opportunity to get up close and personal with some pigs at the show, with guided tours of their pig barn being led by two young farmers from Future Farmers of Yorkshire, a group which aims to improve knowledge transfer with a

social, but informative, group for younger farmers. The group is close to Charles’ heart and plays an important role in his vision of the future for the show, which has 15 new stewards this year. “We need new ideas and new blood. Fresh ideas keep the show current and keep it moving forward,” said the director. With the show around the corner it seems Charles’ plan to create an exciting, innovative Great Yorkshire Show to attract visitors from within the industry, and those who want to learn more about farming, is coming together. He said: “For some people the show is a social gathering, they meet with people here that they only see once a year, for others it’s a great chance to come and learn about the industry.” “The whole show is going to be brilliant. I have worked incredibly hard with a lot of incredible people helping me, I am very proud of them. I would like everyone to come and see what we are doing at the Great Yorkshire Show.”

Box of delights

A change of tack has brought true French flavour to Boston Spa.

A

s the Tour de Yorkshire and the Yorkshire terrier French bulldog cross has proven, Yorkshire-French combinations make a surprisingly good match and Le Box Bistro is no exception. Based in the picturesque Georgian village of Boston Spa, just outside Wetherby, Le Box Bistro serves fabulous French-inspired food using the finest fresh Yorkshire ingredients. It was still daylight when my partner and I arrived on a summer’s evening, but the candlelit tables were just as cosy. From the carefully laid out cutlery, to the old fashioned apothecary drawers mounted on the walls, it’s the little details that make the dining experience at Le Box so special. Our accommodating host and manager Gildas Blin explained that these box-like wooden drawers are original sets hinting at the building’s previous life as a chemist shop, hence the name. Previously named The Spice Box, the French restaurant reopened under the more fitting title of Le Box Bistro in January 2014. It is still a completely French menu, but with fewer frills and more modest price tags to match. I started with the Croquettes de Saumon, gorgeously light and fluffy salmon chilli and lime fishcakes in a crispy coating, on a bed of sweet caramelised onions and topped with a dollop of cool tartare sauce. A good homemade soup is a good indicator of a chef’s overall ability, and my partner was certainly pleased with his tomato and herb Soupe de Jour with its sweet

flavour and undertones of basil. For mains, I was enraptured by my Poulet à I’Occitane – a juicy chicken breast filled with aromatic sage leaves, coated in lemon oil and garlic and wrapped in salty Bayonne ham. Served on a bed of Parmentier potatoes with roasted tomatoes and griddled asparagus, every mouthful revealed delicious new flavours. Meanwhile, my partner was quickly making his way through his Filet de Boeuf – a medium cooked Yorkshire fillet steak served with peppercorn sauce and chunky chips. I managed to try a piece before it disappeared off his plate and found it was cooked to perfection – juicy and pink in the middle and relatively well-done on the outside. Our mains were accompanied by crisp green beans topped with shallot and basil butter – like I said before; it’s all about the finer details. All of Le Box’s desserts are made inhouse, whilst their ice creams are sourced from a local dairy farm in the Yorkshire Dales. I sampled three of the flavours the farm has to offer with scoops of vanilla, rum and raisin, and maple and walnut, whilst my partner was smiling from ear to ear as he dived into his Rudgate Chocolate Stout Sticky Toffee Pudding with butterscotch sauce and cinder toffee ice cream. You needn’t travel to France in search of the perfect dish. Le Box Bistro truly is a box of delights. Every dish is infused with the kind of unique and delicious flavours France is known for, whilst Gildas and his team provide the kind of warm and welcoming atmosphere Yorkshire people are known for. Picture of perfection

How times have changed. The Timble Inn is now far removed from its previous incarnation as a rough and ready local pub.

A

friend with fond memories stretching back a few decades of hearty hikes in the Washburn Valley also recalls cosy postwalk lunches in a certain pub. “Do they still have outside loos?” she asked, on discovering that I planned to dine at the Timble Inn. “And can you still bring your own sandwiches?” When I next see her I will tell her the answers: no, and no. This is still fabulous, unspoiled walking country, close to the Swinsty and Feston reservoirs, but if you choose to refuel at the Timble Inn, expect something several notches above what apparently used to be a rough and ready local pub. There is still a lovely warm welcome with enough original wood and stone to give a cosy first impression, while nine luxury ensuite bedrooms make stopping over for a day or two an attractive option. But with Harrogate, Ilkley, Otley and Skipton all within a picturesque 20-minute drive, it’s not quite as isolated as it may first appear, and word is clearly out that this is a destination restaurant worth driving to; on a recent bustling Thursday evening there were only to be a couple of empty tables. And while new owner Mike Stainsby has only been at the helm for eight months, he inherited a key cornerstone to the Timble Inn’s recent popularity in head chef Georgina Welburn. Hearty pies and fish and chips may be the

order of the day at lunchtime, but in the evening there is no doubt The Timble Inn is a full-on restaurant, with a menu full of classic gastro-pub touches and posh plates, cutlery and wine list to match. And as well as knowing her way around the kitchen, Georgina clearly believes in presenting a beautiful plate of food. Nothing is piled high here, this is high end cooking that looks as good as it tastes. We began with scallops, gorgeously caramelised and served with apple, black pudding and truffle foam, and gin-infused salmon which came with pickled cucumber, wasabi and fennel. With delicious freshly baked bread rolls and soft, salty butter this was a more than promising start to the evening. For mains, I stayed with seafood and a plate of monkfish served with potato croquettes, avocado and king prawns. With a sprinkling of edible flowers to complete a dazzling picture, in which generous slices of thick, snow white and juicy monkfish dominated, I was very impressed. My companion’s main course was a trio of lamb (loin, belly, shoulder) with smoked violets, turnips and jus. Star of this formidable show was the slow-roasted shoulder, immaculately tender and spiked with fried capers, while the miniature whole turnips were bursting with flavour. A pre-dessert palate cleanser of mango sorbet, biscuit crumbs, fruit jelly and micro mint showed those plating skills to their full

glory once again and paved the way for a couple of showstopping desserts – warm stem ginger treacle tart with liquorice icecream and a classic sticky toffee pudding, simultaneously light and rich, with stout icecream and honeycomb. I think it’s time for my friend, long departed from the region, to revisit those hiking trails of her youth. She’ll find The Timble Inn much changed and definitely thriving.

here’s no denying Leeds has stylish restaurants in abundance, but few boast a canal-side location and top-class fabulous French cuisine quite like Brasserie Blanc. Since a renovation last September, the brasserie has transformed into an informal, elegant venue featuring exposed brick, rustic wooden tables and a larger bar area. The converted Victorian mill has a stunning outside seating area, perfect for dining alfresco overlooking the water on fine days. On our visit one Saturday lunchtime the weather, sadly, was not on our side, so we took an inside window seat to enjoy the view instead. Open every day for breakfast right through to dinner and everything in between, this authentic French brasserie caters to many tastes and appetites with an excellent variety of seasonal dishes. From the al la carte menu my companion chose the chilli and ginger squid accompanied by coriander, roquette, grilled courgette, and aubergine. A beautiful smoked paprika and red pepper dressing added a delicious finishing touch and another dimension to this all-round excellent dish. I enjoyed the stuffed tomato with prawns and crayfish from the specials menu, which came beautifully presented and served with a fragrant pesto dressing – an ideal fresh summer starter. For mains, my Piémontaise chicken salad arrived with tender sliced chicken breast arranged on a bed of peppery roquette, crisp baby gem lettuce, and topped with indulgent

grana cheese, black olives, and a creamy caper and anchovy dressing. Packed with flavour and plenty of crunch, this was the perfect light-buttasty dish. Across the table my partner was delighted with her seared Cornish king scallops, which came accompanied by a side of prawn and spring onion crushed new potatoes and an indulgent buttery citrus dressing. We enjoyed our feast with a bottle of Chateau Du Seuil, from an organic independent grower, recommended by assistant manager Steph Jobson and it’s clear she knows her grapes. Crisp, lemony, with a distinct smoky flavour it complemented both of our mains beautifully. If wine’s not your tipple though, the brasserie also offers an excellent range of beers, including many of which are locally sourced. On to dessert and – for me – the real highlight; pistachio soufflé with chocolate ice cream. Light and a fluffy – like a cloud that melted in my mouth – with an alluring green hue, despite the sizeable portion, I was disappointed when it came to an end. My companion’s baked lemon tart was everything you could want from a tart and more: crisp buttery pastry, lots of zingy filling and a crisp caramel topping. Every last bit was readily savoured. As well an impressive menu, Brasserie Blanc also offers an excellent cocktail menu. Their current offer is £5 cocktails 5-8pm Thursday and all day Sunday and, on Thursdays customers can enjoy live funk and soul music. For classic French cuisine in a venue filled with character, look no further than Brasserie Blanc at Victoria Mill.

After 70 years in business, Kettley’s Furniture’s customers are still sitting pretty.

A

lot has changed on Yeadon’s high street since the 1940s, but Kettley’s is one family business that has stood the test of time and still sells high quality furniture from the same spot it began trading 70 years ago. Before it became one of the north’s leading chair specialists, the site of Kettley’s furniture showroom was a pub before being transformed into a furniture store in 1946. The focus on chairs began when Stephen Collop took over in 1978, and the business

became so successful that in 1992 they doubled the size of their store. Today, in its 70th year of trading, the business is run by siblings Nicola Davison and Andrew Collop and their cousin David Butler. They sell a wide range of furniture for every room of the home, with the comfort of the customer at the heart of everything they do. At Kettley’s the well-being of their customers is always a priority, from the initial inquiry to settling down with their new furniture in their home. Much of the firm’s

trade comes through recommendations from happy customers, so the staff are eager to please and the customer service is of the highest quality. The team continuously go above and beyond for their customers, and have added new services to support their clients over the years. In 1992, the company began their free home visit service, allowing customers who struggle with leaving the house to shop for their chair. Staff talk to the customer before bringing a selection of chairs to their home, staff genuinely want customers to make the right purchase for their needs and will often try out many different styles and sizes to ensure the right fit. The firm also offers free delivery within a 40-mile radius, and will remove old furniture for free, taking away the stresses of buying new furniture from the customer. Fun, fun, fun was the order of the day The Yorkshire Haven breast cancer charity has raised almost £8,000 by throwing an It’s a Knockout challenge. Teams from all over Yorkshire wore the original costumes to compete in the challenge which involved jumping across inflatables and getting covered in foam. The event was won by CLG M&E contractors and ID Maintenance. The team hopes to regain its crown at next year’s It’s A Knockout.
