MEET THE CHEF

Jiayou Li China Red Restaurant
City centre restaurant, China Red, was established in 2008 and Jiayou has worked in the kitch-en for the duration. China Red specialises in authentic Szechuan (Sichuan) cuisine, known for its bold and spicy dishes like hot pot, lamb with cumin, and house-made pickled vegetables and chilli oil.

“Chefs are traditionally trained in Sichuan culinary techniques, indicating formal education and experience in the culinary arts,” said Jiayou. “The dedication

Ryan Christian Cubana
Ryan started working at Cubana over 11 years ago and recently took over as head chef. The Leopold Square bar and restaurant is renowned for its homemade classic Spanish tapas dishes and an abundance of Latin American favourites.
The chef started cooked at school and at home before embarking on a two-year course at catering college whilst working part-time at Santino’s Italian restaurant on Ecclesall Road.
“I love to create new dishes and the buzz of running service in the kitchen of a very busy restaurant,” said Ryan. “It’s also really nice receiving compliments from customers on the quality of our food.”

Fresh seafood paella is one of Ryan’s favourite dishes and he also enjoys cooking an array of different dishes and trying different foods.
Asked if he had any advice, he said: “You need be passionate about the job, be prepared to work unsociable hours and weekends and above all work hard under pressure.”
Saiful Alam Cutler’s Spice
This Gleadless restaurant re-opened in October 2025 under new ownership with Saiful Alam as head chef. Previously, Saifal was owner and head chef at Bayleaf and Beyond in Doncaster (2020-2025) and was head chef at 2019) and Mogul Room

Saiful started cooking from a young age – “It was always my hobby as a child and I enjoyed experimenting with new things and bringing different spices from around the world into one dish,” he said.
This love of food made becoming a chef and easy choice and now creates and serves a variety of Indian and Bangladeshi dishes at Cutler’s Spice.
His signature dish is a tandoori roast with pilau, which is his own recipe and prepared on every special occasion.
Saiful enjoys being creative and brining his imaginative ideas to life and advises other chefs to: “Don’t hold back and let your cooking skills do the talking. Practice makes perfection.”
Darmiyan Singh Mezwaani Restro & Bar

Darmiyan serves everything from North Indian favorites like butter chicken, biryani, naan,

vegetarian and vegan options, fresh tandoor-grilled items, and classic Indian desserts.
Like many chefs, his passion for cooking started at a young age. He learned traditional recipes and techniques by training in professional kitchens and working alongside experienced chefs, while also drawing inspiration from home-style Indian cuisine.
“Becoming a chef allows me to be creative while also honoring the recipes and techniques passed down through generations,” he said. “It’s very rewarding to see guests enjoy and connect over the dishes I prepare.”
Asked if he had any advice for other chefs, Darmiyan added: “Cooking is a craft that takes time, discipline, and hard work to master. Respect the basics, learn from experienced chefs, and don’t be afraid to start from the bottom.
“Stay curious, keep experimenting, and most importantly, cook with heart—because that passion is what truly shows on the plate.”
Alfredo Geci Maranellos
After being in the UK for two years, Alfredo started college studying catering and hospitality. This quickly grew into a passion for cooking, which in turn developed a hunger to have his own restaurant.
Alfredo has now been the proud owner of Maranello’s restaurant on Ecclesall Road for 12 years. He serves authentic Italian food, inspired by his time living in Italy, and his signature dish is Agnello Siculo, a succulent lamb dish which is slow cooked for four hours. It’s steaks. The recently-updated menu has been enriched with some

vegetarian and gluten-free dishes.
“This job requires passion and a lot of patience,” said Alfredo. “The reward is satisfaction and not always money.
“I enjoy seeing customers walk out of my establishment happy and they return. It’s a great evening when they buy me a drink rather than the other way round!”
Matty Dodd Nonnas
When asked what he most loved about being a chef, Matty said: “The better question to ask would be what don’t I love about being a chef? Kitchen banter?

Prithiraj was opened by Mohamed Sobuj Miah in 2012 and serves authentic Indian cuisine, combining traditional recipes with modern presentation, using fresh ingredients and bold, aromatic spices.
Mohamed leads the kitchen team having gained experience in both traditional and contemporary Indian cooking before opening the Ecclesall Road restaurant.

His passion for cooking at a young age, inspired by family recipes and Indian culture. He developed his skills through hands-on kitchen experience and professional training.
“Cooking allows me to express creativity, culture, and passion while making people happy through food,” he said. “Seeing customers enjoy the food and return again is the most rewarding part.”
A typical day for Mohamed includes prepping ingredients, overseeing the kitchen team, maintaining high standards, and ensuring every dish leaves the kitchen perfectly cooked.
Mohamed has three signature dishes - the Raj Special, Raj Mixed Grill, and the Sylheti Raj, a tribute to his hometown, Sylhet.
“My advice for aspiring chefs is be patient, work hard, learn every day, and never compromise on quality or passion,” he added.

Saheen Ahmed Rajdhani
Chef Saheen Ahmed brings all his experience of working in Bangladesh restaurants to Rajdhani, delivering a truly authentic experience. He was inspired by his mum and would watch her intently as she prepared meals.
“I was intrigued to see how she did it and started imitating her,” he said. “I was very young but grew up with the interest of wanting to cook more and more.”
Saheen has been with the Dore restaurant for three years and loves the fact that you never stop learning. His advice for aspring chefs is: “Start with patience and humility – no-one begins as a great chef. Be willing to learn, make mistakes, and take feedback. Even peeling vegetables teaches discipline.”
He also says to cook with heart, respect food and people and build teamwork within your kitchen.
Saheen’s signature dishes include Gosht Hydrabadi - tender pieces of Lamb cooked with Naga chilli (equivalent to scotch bonnet), a touch of vinegar and caramelised onions – and Chicken Tikka Madrasi, cooked in a sauce with a his very own Henderson Relish twist.
Kyle LeekSpooner Rafters at Riverside House Hotel
After starting at this Ashfordin-the-Water gem in December 2022, Kyle was promoted to head chef in December 2025. He’d previously worked at the sister restaurant, Rafters, in

Kyle started his working career by doing an apprenticeship in joinery and it wasn’t until he started watching things like Masterchef and Great British Menu that he knew I wanted to become a chef – he always wanted to do something practical for a living and loves food.
“Knowing that something as simple as food can be the difference between our guests having an amazing experience,” said Kyle on what he most enjoyed about being a chef.
And for advice?
“Work somewhere that is right for you, don’t burn yourself out working for some egotistical chefs that treat you as a tool rather than a family member.”

After a collection of local cooks have shared their kitchen secrets, culinary loves and Simon Harrison...
There are only so many things you can cram into a year but The Peacock at Rowsley seemed to exceed all expectations in 2025.
The year started with a change of ownership – Longbow Venues taking over from the Manners family – as well as the appointment of a new general manager and new head chef. And then there was matter of being crowned Westside’s Restaurant of the Year for the second year running.
Simon Harrison joined as head chef in November, bringing a wealth of previous hotel experience as well as, most recently, a lengthy stint at Deacon’s Bank in Chapelen-le-Frith.
“As a chef you’re never really not looking,” said Simon. “And I know Steven [Atkinson, operations director at Longbow] personally. I fancied a bit of a change and missed working in a hotel.”
Now settled at the Peacock, Simon and his team consistently produce three AA rosette-quality food that he describes as

But things could have been very different for Simon, who didn’t set out to become a chef.
“I wanted to be a lawyer – I’ve got A-Levels in IT, English Language, Psychology and Law and could have gone to university but hated the law course,” he laughed. “I was a pot-washer at 15 then
chefs offered to put me through college, which I did on day release. It just went from there.”
Simon’s favourite part of being a chef is the creativity and he’s no stranger to staying up until the early hours perfecting dishes to get them just right. All new dishes are tasted by the staff and all feedback is taken on board.
Asked if he had any advice for any upcoming chefs, Simon said: “Be a sponge.

You can have ten chefs telling you ten different ways to do the same thing, and you may have an 11th way that works better for you, but take on board the things people are saying to you and write things down.”
Starting just before Simon was new general manager Cat Koch, who herself brings a wealth of experience.
“The interview was quite intense but one thing Rob and Steve could take from me was how much I genuinely care about
looking after my team and looking after guests who walk through the door,” Cat said. “And Simon’s food is fantastic, the team are really proud to take his food out.
Both Simon and Cat are well aware of The Peacock’s reputation, which only drives them on further.
“We are all aware of where it’s been and we don’t want to slip anywhere, we want it to maintain and, for us, we want it to improve,” the echoed.

The diet starts MONDAY!
After a long cold week, me and my business partner decided to have
some food on a Friday night as the start to the year had been full of jobs that have been put off for the last months.

We asked the young waiter what wine he recommended, and he suggested a bottle of Argentinian malbec which was an excellent choice.
Only minutes later we were brought a brilliant charcuterie board with warm ciabatta, some excellent olives and a tomato dip to cut through the indulgent cured meats.
Roasted vegetables; sweet succulent prawns in paprika and chilli; roasted chorizo; goats cheese with mushrooms and spinach; two giant meatballs in tomato sauce; rice cooked in tomato sauce; slow tender beef with black beans and just a hint of cumin. All the dishes stood out on
their own offering different textures and in all, a really well thought out set menu. Which I’m glad we ordered as I have made the mistake before at tapas when ordering dishes, I like the sound of but not complementing each other.
My advice is let the professionals who see the food day in day out make the
chocolate dessert with candid orange (as if I hadn’t had enough chocolate oranges over Christmas).
The food, service, wine and atmosphere was all brilliant. So if you are looking for a casual Friday night with friends or family my advice to get over this bad weather and blues is to get out of your front room and regime. Go to Cubana, soak up the live music, order the deluxe set menu and enjoy yourself as soon it will be summer and you will be on another diet to make sure you look your best around the pool on holiday.

Proud PEACOCK
Lunch is an altogether different proposition at this Derbyshire favourite, writes Richard Abbey.
hen I visited The Peacock at Rowsley around this time last time for the boutique hotel and restaurant as it had been recently taken over by Longbow Venues after being part of the Haddon estate for over two decades.
Any readers of this magazine will be more than familiar with Longbow Venues who also own The Maynard Grindleford, The George Hathersage, The Ashford Arms and The Peacock at Owler Bar.
Twelve months on and you’re probably wondering if anything has changed. On anything different, you still get that same warm welcome, impeccable service and location. Behind the scenes, however, there with the appointment of a new head chef, Simon Harrison, as well as a new general manager, Cat Koch. Both starting towards the end of last year, they have built up an instant rapport that translates both onto the plate and into the service.

The winter blues were well and truly banished after a recent trip to this Ecclesall Road Italian, writes Richard Abbey.
fter what felt like the longest month on record (are Januarys always like that?), if felt like a bit of normality was restored on our Friday visit to Maranellos. Heading down Ecclesall Road, the many bars, restaurants and pubs appeared to be in full swing - and this little trattoria was no exception.
Our early evening visit was welcomed with an already busy restaurant, a mixture of couples, friends and larger parties.

The recently updated menu, now with more vegetarian and gluten-free options, consistently delivers good quality, traditional Italian food with plenty to please everyone and there’s always the specials board if you prefer to try something a little different.
Seated near to the open kitchen, we started with drinks – a bottle of Peroni red (£4.95) for me, a house Montepulciano
(£7.95 for 250ml) for my wife and a San Pellegrino orange (£3) for my teenage son.
The latter is at an age where he’s quite easy to please, no starters, a pizza pepperoni (£14.50) and he was happy but it would be remiss of my wife and I to not enjoy the whole Maranellos experience.
I’d recommended the arancini al prosciutto (£8.95) to my wife which I’d enjoyed on a previous visit to the restaurant. She was not disappointed. The three crisp rice balls, coated in breadcrumbs and served in a rich tomato sauce, were delicious and a great start to the meal.
Swayed by the specials board I was tempted by an extremely fresh dish of grilled sardines served with capers, cherry tomatoes and garlic. It was simple but tasty

Lunch is full of SURPRISES
Richard Abbey indulges a sense of adventure at China Red.
very visit I’ve made to China Red has thrown up a surprise or too and my latest excursion to the city centre favourite was no exception.
Arriving for lunch, my dining companion and I afforded the owner of the restaurant, Kelvin Quick, to recommend some dishes
China Red is known for its Szechuan cuisine, which is characterised by the use of chillies, peppercorns and aromatics. There’s often plenty of heat to the dishes

Such is the restaurant’s reputation, it was voted Best in Sichuan Cuisine at the Golden Panda awards in 2023 and remains incredibly popular.
All the dishes we tried were exceptional but one that really stood out was the salt and pepper shredded potato (£11.50). It looked and sounded such a simple dish and in essence it was – shredded potato mixed with salt, peppercorns, spring onions and
was on another level with smokiness, spice and plenty of aromatic undertones from the peppercorns.
The texture worked really well too with the top layers of the dish being quite crisp whilst the shredded pieces underneath took on a softer form – together it worked beautifully.
We also tried a China Red favourite, twice booked pork belly with pepper (£14.50), as well as some deep-fried king prawns with black beans and chilli (£17.50) and steamed mussels in black bean sauce (£15.50). Portions of stir-fried noodle (£6.50) and egg fried rice (£5) completed our lunchtime picture.
I’m almost embarrassed to say that we barely left a thing, but that’s more down to the quality of the food than our excessive appetites. Every time we thought we’d had enough we kept dipping in for a little bit more.
The prawns were plump and juicy with plenty of spice, whilst the pork was a incredibly tender but had that roasted
texture that works so well with such a cut.

Some hot Chinese tea worked wonderfully as a palate cleanser and, again, worked really well with the different dishes.
China Red’s Szechuan dishes offer something different to usual Chinese fare and can be guaranteed to throw up a few surprises. My only recommendation is to seek the advice of Kelvin and his staff who will no doubt pick something you would never have thought of.
As my dining companion said: “It’s like getting a Christmas present you would have never have thought of buying yourself but then being absolutely delighted with it.”

his is my villain era,” says Kym Marsh, with a laugh so warm it is hard to imagine the multi-talented actress with her friendly, likeable persona, being remotely villainous.
Yet, in her latest role, as Hedy, in the world premiere stage adaptation of the iconic nineties’ psychological thriller, Single White Female, audiences are in for a surprise and are going to be unsure whether she’s friend or foe.
The play is about to begin a six-month tour of the UK, taking in 21 venues across the country. It tells the story of recently divorced mum Allie, who is trying to juggle childcare with starting a new business. When she advertises for a lodger to help make ends meet, along comes the seemingly delightful Hedy - but quickly we see that all is not as it seems and their new friendship takes a sinister turn.
So, does portraying someone who appears lovely but might have a darker side come hard to Kym, who was one of the
most popular characters, Michelle Connor, in Coronation Street for 13 years, has won a multitude of acting awards and, amongst other things, has starred in Waterloo Road, Strictly Come Dancing and presented BBC One’s Morning Live?
“Actually the last few roles I have done have been pretty villainous and I love it,” she says.
“It’s so easy to play the typical moustache twiddler. But I want to make Hedy a little bit more layered and actually have people be a bit taken aback, unsure if she’s good or bad right up to the last minute and even feeling sorry for her, particularly near the end. So, it is a bit more complex and nuanced than you might imagine.”
How did she end up being asked to take on such an interesting and chilling role, that thrilled audiences in the 1992 worldwide hit movie?
“After I played Alex Forrest in the stage version of Fatal Attraction, we started to have discussions about what potential other projects there might be and we came up with the idea of Single White Female because it had never been done before,” she explains.
“It was also within that kind of genre impact on people at that time. So I have been attached to it from the start and it’s really exciting - the character of Hedy is so interesting and challenging to play.
“Without giving too much away to

The new, stage version of Single White Female will appeal to a new generation who have never seen the movie, but it will also give a new perspective to fans of the author, journalist and broadcaster, Rebecca Reid, with a focus on social media, playing on the themes of ambition, identity and isolation through that lens.
Kym says this has done more than just give it a contemporary spin, it actually makes the story feel even more relevant.
“There obviously wasn’t social media back in the 90s,” she says. “But if you know the essence of the plot and what it’s about, it works very well because we see people trying to imitate people’s lives online all the time.
“We hear about these stories of people are elements of that within Single White Female that make it feel up to date and its themes are even more relevant today than

they were then.
“I think the world of social media is a wonderful place, but it’s also to be handled with care, because there is always that element of danger about it. And when you have a character like Hedy, and then you put social media into her hands, it can be tricky to the point of dangerous.”
Kym says that having been in several stage productions recently, including Mike Leigh’s Abigail’s Party, has given her a real love of the stage, while she continues to enjoy her television career.
“I’m so lucky that I am able to enjoy both being in front of the camera and also being on stage,” she says. “Obviously on stage you get an instant kind of reaction which is very rewarding - you know immediately how much people are enjoying what you’re doing when you are on stage. Television can be very different from that. But there is a real buzz being on stage, you get that atmosphere straight away. And I really like travelling around, seeing different places and some beautiful theatres. It’s interesting that everywhere you go, the audience reacts differently to different parts. Then again, in front of a camera you always get to go again!”
So even now, she gets nervous?
“Of course I do!” she admits. “Theatre is way more nerve wracking, that’s for sure. My dad passed away last year and I have found myself standing in the wings before I go on stage saying, “Come on Dad, come on Dad.” Because you want to feel that someone is helping you out when you are out there, you really hope that nothing’s going to go wrong, that you give a great performance and people enjoy it.”
Aged 49, Kym has not stopped working since she auditioned for the TV show
Popstars, 25 years ago, joining the band Hear’Say. She says she is grateful that she has such a warm reception from the British public.
“I feel very fortunate and very lucky that I’ve been allowed to have the career that I’ve had and to have been received in the way that I have,” says the mother-of-three, who is also a grandma.
“I think maybe it’s because I come across as a sincere individual. I’ve never tried to hide anything. I make mistakes and hold my hands up and I think that gives me a girl next door feel - perhaps everyone knows someone a bit like me.
“I was brought up by a family who are very caring and open. My family means everything to me. I absolutely adore my kids and my grandchildren. I think I try to only ever be caring and open, too, when I’m being interviewed or meeting new people, because, to be honest, I don’t know how to be anything else!”
There are many places on the Single White Female Tour that Kym is excited to visit - particularly Brighton’s Theatre Royal where the play opens in January and, as she hails from the North West, Manchester, Liverpool and Blackpool venues will be special. But the very last night of the tour will be particularly memorable for her in more ways than one.
“We will be in Malvern and it’s my 50th birthday,” she explains. “I am not sure exactly what we will be doing that night

“Every day is different,” says Katie, who divides her time between serving customers, unpacking orders and merchandise and ensuring the shop and window display is appealing to customers. She will also visit trade shows and suppliers to source new brands and stock for the shop.

“We constantly have new products arriving and I have to buy these usually a year in advance,” adds Katie. “I also have to keep our website up to date with all the new products which is very time consuming! I try to remember to post on social media every day to let customers know about what is happening in the shop such as new product arrivals and promotions.”

Should there be a DIGITAL DETOX?
Should mobile phones be banned in schools? It’s not as simple as ‘yes’ or ‘no’.
he debate over mobile phones in UK schools is currently at a fever pitch, especially following the government’s 2024 guidance which gave headteachers the green light to implement bans. By 2026, we’ve moved from “guidance” to a landscape where a vast majority of secondary schools have some form of “gate-to-gate” ban.
However, like most things in education, the reality is more nuanced than a simple “yes” or “no”.
Proponents of a total ban – including many parent-led groups like Smartphone Free Childhood – argue that schools should be a sanctuary from the digital world. But critics of a blanket ban argue that schools have a duty to teach children how to live with technology, not just hide from it.
Most UK schools now fall into one of these three categories:
1. Gate-to-Gate (The “Hard” Ban): Phones are handed in at the start of the day or kept in magnetic pouches (like Yondr). This is becoming the standard for state secondary schools.
2. “Away for the Day” (The “Soft” Ban): Phones must be switched off and kept in lockers or deep in bags. Usage during break or lunch results in

A landmark study, conducted by the University of Birmingham, of 30 English schools published in The Lancet last year provided a counter-narrative that is vital for a balanced argument.
The study followed 1,227 students and found that while school bans reduced phone use by about 40 minutes a day, they did not or wellbeing.
The researchers argued that a school ban isn’t a “silver bullet.” If students simply binge on social media for six hours the moment they leave the gates, the “detox” during school hours isn’t enough to reverse the negative effects of sleep loss or cyberbullying.

A charity at the heart of NORTH DERBYSHIRE
Ashgate Hospice has been caring for local people through illness, death and grief for nearly four decades. Here’s why its work matters now more than ever.

ost of us prefer not to think too far ahead about death, dying or serious illness. Life is busy, and these are conversations we often put off until we have no choice but to face them. But when illness changes everything, knowing that calm, skilled and compassionate support is there can make all the difference.
For people across North Derbyshire, that support is Ashgate Hospice.
Founded in 1988 to serve the local community, Ashgate provides specialist palliative and end of life care for adults living with a life-limiting or incurable illness, as well as support for the people important to them. In 2025, Ashgate’s care was once again rated Outstanding by the Care Quality Commission – the second time in a row the hospice has received the highest possible rating, recognising over a decade of consistently exceptional care.
But hospice care is about far more than a building. It is about meeting people where they are, physically and emotionally, and helping them live as well as possible for as long as possible.
What hospice care really means
A common misconception is that hospice care is only for the very last days of life. In reality, Ashgate supports people much
earlier, often from the point of diagnosis, alongside ongoing treatment.
Most of Ashgate’s care takes place in people’s own homes and communities. Specialist nurses, doctors and therapists work closely with GPs, district nurses and other professionals to manage symptoms, reduce distress and help people remain in familiar surroundings wherever possible. For some, this means avoiding unnecessary hospital admissions. For others, it means being supported to die in the place that feels right for them.
Alongside clinical care, Ashgate offers a wide range of support services, including physiotherapy, occupational therapy, lymphoedema care, social work, spiritual care, counselling and complementary therapies. This holistic approach recognises that serious illness affects every part of life, not just the body.
Support also extends beyond death. Helping people navigate grief is an important part of hospice care, and Ashgate has long been a specialist in supporting people through bereavement. Grief looks different for everyone, and support needs individual.
Last year alone, Ashgate supported over 2,600 patients and the people important to them across North Derbyshire.


Funded by the community, for the community
Despite providing essential healthcare, Ashgate is a charity. Less than a third of its income now comes from NHS funding, and that proportion is reducing year on year.
The rest must be raised through the generosity of the local community –through donations, fundraising events, charity shops, the weekly lottery, gifts in wills and countless hours volunteered.
This community support is not an ‘extra’. It is what keeps Ashgate’s doors open and its teams out in the community, day and night.
Demand for hospice care is growing as the population ages and more people live longer with complex conditions. At the same time, funding pressures are increasing.
Like many hospices across the country,

Ashgate Wellness Services brings together paid-for counselling, bereavement support and complementary therapies under one


umbrella. These services draw on Ashgate’s specialist expertise in death, dying, grief and wellbeing, while being open to people who may never need hospice care.
Every booking directly helps fund Ashgate’s free hospice services for people across North Derbyshire.
The counselling service offers specialist support before or after someone important to you has died, or while living with a life-limiting diagnosis. Sessions are delivered by professionals who work with death and grief every day, offering a without judgement.

Alongside counselling and bereavement support, Ashgate Wellness Services offers a wide range of complementary therapies designed to support both mind and body.

Treatments are delivered by experienced therapists in a calm, welcoming setting at Ashgate Hospice. Sessions are always tailored to the individual, with time taken beforehand to understand health needs and what someone hopes to gain from the treatment.
Rosie Humphreys, Complementary Therapy Coordinator, sees these therapies as an invitation to pause: “Wellbeing isn’t a luxury – it’s part of how we cope with everyday life, stress and illness. Our therapies give people permission to stop, breathe and reconnect with themselves. For some, it’s about easing physical tension.
