This year, the Annual Shareholders' Meeting is scheduled for Saturday, March 28th at 12:00 noon in the Grand Ballroom. Stockholders should take note of this very important date and are encouraged to attend the meeting. Additional information, as well as ballots will be mailed to each stockholder within the upcoming months.

Luminary tradition The Christmas Eve tradition to light thousands of luminaries along the roads throughout Ramsey Golf and Country Club came to us close to 50 years ago when the Bacon family on Ronald Court lit luminarias at their home. This was such a hit with their neighbors that the following year all of Ronald Court put luminaries in front of their homes. After that year, the entire Club followed suit. It takes close to 50 Street Captains to distribute candles and bags to each of the over 550 families who live within the Club grounds, all over the island and around the lake! At 5:30pm, on December 24th, members in every house light seven candles across the front of their homes. It is a sight to behold. Thousands of candles light the way along every street within the Club and around its lake. The tradition has been spread to various other streets in Ramsey. People come from all over to drive the streets of the Club on Christmas Eve. This past Christmas Eve might have been one of the best! We were able to get our now required special fire retardant bags in the regular size and had our normal real candles! The streets looked amazing! A huge thank you to our Head of Luminaries and all of our Street Captains, this simply would not be possible without you! Thank you!

t is with a humble appreciation that I embark on the 9th year as your General Manager. At times, I can’t help but take a stroll down memory lane and look at the many years that have gone by and how each season was better and more enhanced than the previous. The key is not to sit on one’s laurels, or become comfortable with one’s results – but – rather, to always keep reinventing, thinking outside of the box and doing everything possible to ensure that we not only provide you with the experience, services and amenities that you have become accustomed to but more importantly to continuously build upon them to ensure that RG&CC continues to grow, thrive and set new benchmarks each and every new season. To that effect, what a year 2019 has been and how exciting to see what the near future has in store for us all! The passing on the Club’s Long-Range Master Plan, has been one of those pillars of success which will long be remembered. We will improve and enhance not only all of the physical facilities but the operational aspects as well – truly bringing our Club into the 21st century. As always and as you have come to expect, my professional staff and I are unrelenting in planning new initiatives, new offerings and new programs which are bound to yet again surpass the levels that we have proudly achieved in years past. Our Paddle Tennis season is as strong as ever and we’re looking to build further upon it by hiring a Paddle Pro to help us with players’ clinics, one-onone training and help create competitive programming for all player levels. Building on the success of our Pickleball launch last year, we will be bringing it back bigger and stronger than ever before – please be sure not to miss this new up and coming sport activity! Our golf operations are on track with our golf course preparations to ensure a timely and smooth opening of the golf season on April 1st, weather permitting. Our PGA Head Golf Professional, Noah Bodt and his team of professionals have been busy at the PGA show planning and securing new merchandise and equipment to help us look our best and play our best while out on the course! The Clubhouse is as vibrant as ever. After our traditional shut-down, during which time carpets were shampooed, windows cleaned, walls and ceilings painted, deep cleaning all of the front and back-of-house areas to name just a few, have all helped in getting us ready to serve you in this new year! We have revamped our Lakeside Grille Lunch and Dinner Menus, a new Wine List will be launched by mid-Spring and new social events have been planned to make sure that we keep you entertained and satisfied each time you join us! Please stay tuned for upcoming announcements on social events and Grille Room offerings – we can’t wait to have you sample everything that we have to offer. It is hard to believe another busy year at the Club has come and gone. In fact, busy is truly an understatement as this may have been one of our best years yet with more lavish weddings and cheerful holiday parties booked than ever before. Business remains steady throughout the snowy winter months, but even so, we are using this “quiet� time to work on some minor projects and renovations in order to ensure both the Grand Ballroom and Abbey are ready to go by spring. We have certainly set the bar high for 2020, but we are as eager as ever before to welcome this new year. Before we officially say goodbye to 2019, please join us in looking back and formally congratulating just a few of our newlyweds who celebrated with us over the last twelve months. uring our annual shut down this year- one of our main focuses for our reopening has become one thing: New Year, New Food! After our Restaurant Survey was sent out to our membership and additional feedback we received throughout the year, we will be taking an extra fresh approach to the experience in the Lakeside Grille & Bar. One major concept will include more seasonally appropriate items, while also keeping a fresh take on our daily specials. Chef Jim and our House Director have worked to create comfort foods that will also incorporate fresh ingredients. In addition to winning the 2019 Diner’s Choice from OpenTable, we would like to continue to surpass our diner’s expectations in 2020! The holiday season may be behind us, but we still have many things to continue to celebrate. Join us to honor love on Valentine’s Day February 14th, Friday in our stone-walled Abbey for our pre-fixed menu selections or in the Grille Room for the a la carte option. Reservations for the Abbey are limited, so please call ext. 301! For small gatherings up to 25 people, our Atrium can be the perfect fit! Birthdays, business, or simply a friendly gathering, reach out and see how we can help you make your event a lot easier! Likewise, our Bradford Room, although with limited availability, can also provide the intimate atmosphere for sit-downs of up to 20 people. We are taking a steady approach to our first quarter with main focuses in menu reinvention and food. The remainder of winter will give us a good start into our creative process in the restaurant, but will certainly pave for substantial creations for the Spring and Summer. The Renovation Plan will still take time with the forming committees, but in the meantime, we will reinvent the restaurant! We look forward to serving you this season! The Perfect Winter Meal From Our Kitchen To Yours

Garlic Braised Short Ribs with Red Wine 1. Heat oven to 275 degrees. Heat oil in a large Dutch oven over mediumhigh heat. Season short ribs on all sides with salt and pepper. Working in batches, sear short ribs on all sides until deeply and evenly browned, 6 to 8 minutes per batch. Transfer browned short ribs to a large plate and continue with remaining ribs.

2 tablespoons vegetable oil

5 pounds bone-in short ribs

Kosher salt and freshly ground pepper

2 large heads garlic, halved crosswise

1 medium onion (about 10 ounces), chopped

4 ribs celery (about 8 ounces, chopped

2 medium carrots (about 6 ounces), chopped

3 tablespoons tomato paste

2 cups dry red wine (about half a bottle)

2 cups beef stock or bone broth

4 sprigs thyme

1 cup parsley, coarsely chopped

½ cup finely chopped chives

1 tablespoon finely grated lemon zest

2. Pour off all but 2 tablespoons of remaining fat, leaving the good browned bits behind. Reduce heat to medium, and add garlic, cut side down and cook, undisturbed, until golden brown, about 1 to 2 minutes. Add onion, celery and carrots and season with salt and pepper. Toss to coat and continue to cook until vegetables are softened but not yet browned, about 5 to 10 minutes. Add tomato paste and stir to coat. Continue to cook, stirring occasionally, until tomato paste has started to caramelize a bit on the bottom and up the edges of the pot, about 2 to 3 minutes.

3. Add red wine and, using a wooden spoon, scrape up any browned or caramelized bits. Let this simmer 2 to 3 minutes, just to take the edge off and reduce a bit. Stir in beef stock along with thyme. Using tongs, return short ribs to the pot, along with any juices that have accumulated, nestling them in there so that they are submerged (if they are just barely covered, nestle them bone side up so that all the meat is submerged, adding more beef stock or water as necessary to cover). Bring to a simmer, then cover and transfer to oven.

4. Cook, undisturbed, until short ribs are meltingly tender and falling off the bone (you should be able to shred the meat with a fork), 3½ to 4 hours. 5. Using tongs, remove the ribs from the pot and transfer them to a large plate. (While you could serve the short ribs right out of this pot, the vegetables have all given up their flavor and texture and aren’t worth much now, so feel free to strain the sauce for easier eating.) Scatter parsley, chives and lemon zest over the top of the short ribs. Separate the fat from the sauce, season with salt and pepper and serve alongside.

Lessons will be on an appointment only basis, and an email will be sent after the new year listing the days and times that David, Bill or myself will be available. It’s the best way to maintain any progress you made on your game during the season or to get a jump start on the upcoming golf season.

Entering tournaments is as easy as going to the event on the calendar approximately one month before its date. Invitations are no longer used and emails will be sent sparingly so we strongly encourage regularly looking at the calendar to register for events.

W

hile the winter so far has been milder than expected, we are still ready for anything that mother nature may throw our way. In the meantime, under the direction of the Greens Committee we are continuing with our tree management program on the entire golf course. A proper tree management program is not only important for improving playing conditions and course conditioning, but in eliminating potential safety hazards for players which may be caused by dead limbs and/or trees. We’ve been also keeping busy in the maintenance shop with our equipment technician performing preventive maintenance on all equipment as well as sharpening the blades on all of our golf course mowers. In addition, weather permitting, we are continuing to add and upgrade the drainage on the course overall with a special concentration on holes #4, 5 and 10. The Rough on #2 as well as the #12 Tee-box are being renovated to improve playing conditions as well as ensure better turf health. While the weather has indeed been milder, it has allowed us to apply additional layers of sand top-dressing on all Greens. This will be instrumental in improving the firmness of the Greens and offer an enhanced and much smoother putting service. My team of greenskeepers and I continue to remain committed and to constantly find ways of elevating the golfing experience out on the course and most importantly your enjoyment of playing the “greatest game ever played”! From the 90’s to the Early 2000’s

Street Names at RGCC with Old English Charm Within the gates of Ramsey Golf & Country Club are street names reminiscent of England and a clubhouse of stone, modeled after an English castle. The street names were chosen with an eye toward shaping the image of our neighborhood. Street names such as Canterbury, Nottingham, Morton and Norman which are also cities and towns in England. Buckingham Drive is like Buckingham palace, Home of the royal family. Sherwood Drive takes its name from Sherwood Forest in Nottinghamshire, England. There are other street names such as Balfour, Oxford, Eaton and Byron Court. All leading to RGCC which just happens to be a castle along Lakeside Drive. You will also find Abbey Court which is just like a street made famous by the Beatles called Abby Road. This now takes us on a good segue to the 90’s and the Abbey!

The Abbey: Once upon a time not only was the Abbey a wonderful facility for wedding reception cocktail hours, birthdays and sweet 16 parties but, also for the membership. For years the Abbey was an elegant fine dining experience. In the evenings membership would arrive and dine in jacket & tie. There was a separate menu of high end cuisine much different from the grille room. Though the dress code was later relaxed of formal attire, most members still dressed appropriately. The room (30’ x 70’) Had stone columns, Rich carpeting and a fireplace which gave the room a warm glow. Beside the fireplace a player piano was added which played soft music in the background as you dined. There were two waiters named Tony and Collin who were always dressed in tuxedos. These gentlemen were known as “ The A Team” and , their service was non-compare. They added a touch of class to the Abbey. In later years a member by the name of Marcia would sing accompanied by a piano player. It felt like a dinner lounge. A special room, a special ambience, a special place.

Paddle Tennis: Paddle tennis grew so much in popularity in the 80s that people were literally waiting in line to play. So much so that by the mid to late 80s a second paddle tennis court had to be added - today, we now have three! Paddle tennis had flights A, B & C along with championships and eventually interleague play with other neighboring clubs. Members were also provided with a paddle tennis room (now known as the paddle hut) where they could warm up, drink coffee (or a beer) and get ready to play.

18 Hole Golf Course: In the late 80s and early 90s a golf course expansion committee was formed in an attempt to take RGCC from 9 to 18 holes. The committee was led by 8 members, the pro and other volunteers. After putting this exploratory committee together, 2 members with one being a pilot took to the sky's in a small airplane over Ramsey and took photos of the terrain below. A stretch of land was found where holes six and nine are today along with additional property which belonged to the Spruce Run townhome complex and also Rockland Electric.


Preliminary drawings for the new course were drawn and meetings were held with Spruce Run (Whereas a 99 year lease was negotiated) Ramsey officials, the DEP, contractors and engineers. The original RGCC golf course architect Hal Purdy, was hired for the new layout. It took some time but, after three years of negotiations and with a $1.5 million dollar construction loan, construction began on the new golf course. Completed in 1995 Ramsey’s new 18 holes finally came true! Fortunately during construction, the original nine hole course was still open for play. A new associate program was created which would help to pay down the loans. The changes made to the golf course were that a par 5 was made into a par 3 and a par 4. ( Holes # 4 & 5). Constructed were holes # 6, 7, 8 & 9 with holes 6&9 having a shared Fairway. Hole #10 changed from a par 4 into a par 5. A par 3, 13th was added. Hole #14 changed from a par 3 to a par 4 with an island tee. Holes number 16 & 18 were completely new and hole 17 was made to stretch from a par 4 to a par 5. Though Ramsey is par 69 being only 5,500 yards long, it’s tight and not as easy as it may seem. Also, a round of golf was reduced from 5-5 1/2 hours to 4 hours or less.

2000: The millennium changed and so did RGCC. It was now the year 2000. About this time circa 2000-2001, A study was made on the open outdoor patio. It was determined that we were only using the outdoor patio 30 days a year due to inclement weather so.. The club decided to enclose the patio for dining year round. The name of this new facility that came with a glass enclosure became “The Atrium”. At the same time the bar was changed to an oak square bar with rounded edges. It was placed at the lefthand side of the bar area with the right side having chairs, tables and lounge couch seating. Also the Ballroom downstairs was expanded so RGCC could handle larger wedding receptions and, like the Atrium the addition had a glass enclosure.

9/11: That same year in 2001 was a very tragic time for our country: 9/11. Our nation cried and mourned but, we were resolute and so was RGCC! A committee formed and after careful thought, 10 days later the Ballroom was packed with RGCC members for a Fundraiser. There were American flags and balloons red, white and blue. Patriotic songs were sung as the music blared and speeches were made of pride for our country. All told, we raised $23,000 and the money given to a family in Ramsey affected by this horrific event. Our event was called: RGCC CARES!

Fun Facts & Tid Bits: 1: Did you know that that Crystal & Mirror Lakes we’re dredged during the early 80’s circa 1982 and the mud, slime & sludge was sold off to the Meadowlands and NYC properties. It’s true! 2. Did you know that golf groups in the 70’s, 80’s & 90’s had nicknames? The Hardy Boys, Rat Patrol and Monty’s started it all, along with others. 3. Did you know that at one time RGCC had packaged goods. At one time you could purchase Ramsey liquor at the end of the year for your minimum. 4. Did you know that the New Years Eve party at the club was the hottest ticket in town. Couples would wait in line for hours for the chance to go and dance in the ballroom. 5. Did you know that RGCC once had paper placemats on the dinner tables in the Grille Room that had a map of the golf course! 6. Did you know that at one time a ranger would wave a flag to allow you to tee off tees number 6 and 9? It’s true! We guess that’s why they nicknamed the shared fairway, “ The Train Wreck”.


Most Loved Staff Members from this ERA Norman Forsieth: Norman worked at Ramsey from 1989 to 2001. He was an assistant manager and in 1994 was promoted to general manager of Ramsey golf and country club. Norman worked very hard with both the board of directors, staff and members to insure that all events and daily activities ran smoothly. A member favorite, Norm left Ramsey for Hackensack Golf Club because of a great opportunity and, we wish him all the best. Cheryl Veltman: Cheryl came to RGCC in 1997 and was with us fourteen years. Cheryl started as a waitress in the Grille Room, then was a hostess, night time manager, director of catering and eventually was appointed club manager where she served from 2002- 2007. Always a hard worker and, greeting the membership with a smile, Cheryl was always Ramsey’s sweetheart! Willie: For 13 years from the 90’s to mid 2000’s, Willie was our head chef. Willie loved Ramsey and the members loved Willie. In the culinary world, Willie was the best. He would sometimes walk outside the kitchen , greet the members and say.... outside of the menu, what would you like to have this evening? ***** We hope you have enjoyed reading and learning the history and memories of RGCC from the 90’s through the early 2000’s. It is said that before we can go forward, we must also know our past. In our next and final article we shall take a look at the late 2000’s to our current year 2020 and will be inviting more members to participate in the next session. Ramsey Golf & Country Club’s insignia is RARA AVIS which means Rare Birds. It also means “A Thing Unique”. Ramsey Golf & Country Club is indeed unique as we are a family club. RGCC is home! *****
