Rachel allen

In conversation with Marissa Reidy

SHE’S one of the most recognisable faces in the Irish culinary industry, having starred in her own TV shows here in Ireland and across the globe, and written numerous best-selling cook books. And just when you think Rachel Allen deserves a little down time as the year comes to an end, the beautiful Cork -based cook, TV star and author is elbow-deep in the promotion of her brand new cook book, Recipes from My Mother. The book, which hit the shelves on October 20, is full of heart-warming recipes in which she uses gorgeous ingredients to create what she tells Connect are ‘comforting, vibrant meals.’ As the name suggests, Rachel’s new book is heavily inspired by her Icelandic mother Hallfridur, with whom she fondly remembers sitting in the kitchen as a child, helping and tasting as food was prepared. As well as celebrating some of these exciting, Scandi recipes which she picked up from her mother, the book also features recipes from other mothers, including family members and friends and, of course, her equally famous mother-in-law, Darina Allen. “The book is full of old, homely recipes, some of which are inspired by my own mother and feature her Scandinavian influence,” Rachel told us during a break from filming an up-coming Channel 4 documentary on Northern Irish food. “But there are lots of other recipes that have been handed down from other mothers – and fathers – to their children, including my own friends and family.” Having grown up in Dublin, Rachel never had a plan to become a cook. It just happened after she travelled to Ballymaloe Cookery School in east Cork to learn more about what was then just a pastime. “I always knew I’d be doing something creative or something in design but I honestly thought it would be more in the line of shoes or fashion,” Rachel admitted. “I always loved to cook and loved baking all through my childhood, but I never thought of it as a career when I was growing up.”

CONNECT KERRY November 2016

Rachel’s new book , filled with over 250 pages of breakfast, lunch, dinner, dessert and baking suggestions, is published by HarperCollins Publishers.

She even joked about how her older sister may well have had something to do with her eventual career path. “She was four years older than me and as children we would always pretend to be on a cooking show on TV and I used to be her assistant,” she laughed. At 18 years of age, Rachel spent time at the famous Ballymalloe Cookery School to hone her skills – a move she hoped would allow her to travel around the world. “I decided that if this [travel] was to happen then I needed a skill and so I spent some time there learning how to cook,” she said. “The travelling part actually happened later, but I just loved the way of life there. Life on the farm and all the local produce.” Rachel’s love of Cork took over, so much so that she still lives there today with her husband Isaac and three children, Josh (17), Lucca (14) and seven-yearold Scarlett. As well as a busy TV and writing career, Rachel continues to teach at the school where she received her formal training. “I absolutely love where I am and am really happy there, but it’s nice to get back to Dublin when I can,” she said. “It’s a happy balance.” One of the most recent experiences in which Rachel got to combine her cooking skills and her love of travel was during her latest TV show which saw her travel along the Wild Atlantic Way.

Unsurprisingly, she was bowled over by our lovely county. “We had possibly the best weather of the summer and the crew – most of whom were English - were blown away by Kerry’s amazing scenery,” she said. “We got to cook on the beaches, cliffs and on the piers and saw such beautiful places as Dingle, Valentia and Slea Head. It was so, so lovely and made me realise that I don’t visit Kerry regularly enough.” When, on the rare occasion, the mum-of-three is not working she loves nothing more than having a lie-in, followed by a cup of tea in bed. And again, her surroundings play a huge part in her down time. “When the children are at school I enjoy nothing more than getting out for a run on the beach with my friends. I also love to get away and get out for lunch.” Because Rachel is such an accomplished, high-profile cook, it’s fair to assume that the cooking duties always fall to her at home. Thankfully, that’s not the case. “Not at all. Everyone chips in. My husband is actually a great cook,” she says, revealing that before she spoke to Connect he had phoned to say he’d have dinner ready that evening when she got home from Northern Ireland. As for Christmas dinner in the Allen household? It’s also a joint effort, with all the trimmings. This latest addition to Rachel’s catalogue of stunning recipe books is full of meals that anyone can try their hand at, she says, before quickly dismissing the notion that there are people out there who ‘can’t cook.’ “I think if you enjoy eating then you can cook,” she says. “If you think you can’t cook but want to learn then start with something simple and something you enjoy eating. I suppose it’s easier for people who have grown up watching meals being cooked – in more recent years that hasn’t been the case – but there is absolutely some type of cooking for everyone.”

A selection of Rachel’s titles 6

CONNECT KERRY November 2016

As we got talking about the wholesome, nutritious meals that are scattered throughout Rachel’s new book, the conversation turned to the sugar tax that will be introduced here next year. Rachel supports the move. “I certainly agree with a sugar tax on fizzy drinks because it’s insane what people are consuming,” she said, “But if you cook everything from scratch you see how much of everything is going in.” The issue of society’s reliance on convenience food and the nation’s poor dietary habits is something which the renowned cook is passionate about - and she makes no apologies for it. “People need to be more sensible about what they are eating and this has to start from an early age,” she said. “Schools need to step up in this regard and take an important role. People should be leaving school with the basic skill of being able to feed themselves.” As for the argument that people now lead busier lives than ever and simply don’t have time to cook every evening? Rachel is having none of it. “I completely understand how busy people are but I bet these same people find time to watch TV in the evenings, so I don’t agree with that. It’s a balancing act,” she said. “There is nothing more important than taking time to cook for yourself and your family - and children need to see it in order to learn.”

Connect | Christie Hennessy

Aonghus PrePAres for Christie hennessy tribute ConCert The Christie Hennessy Celebration is a weekend promoting Irish musical & song writing talent all done in the name of Tralee’s own Christie Hennessy. This year the Christie Hennessy Celebration takes place on November 25th & 26th with a special show on the 18th of November at Siamsa Tire. This year to start the festival the organisers have a special show celebrating the songs of Christie Hennessy brought to life by renowned musician and actor Aonghus McNally on in Siamsa Tire on Friday 18th November. Featuring all his best loved songs including Messenger Boy, Jealous Heart, Don’t forget your Shovel, If you were to Fall, All the lies that you told me and the iconic Roll back the clouds. Connect spoke to Aonghus ahead of this special show…

a real insight into a brilliant human being who left school at 12 and was on his way to international stardom when, sadly, he died at 62.

Aonghus you are well known as an RTE Presenter but you sing too, tell is how all that came about? I started playing guitar when I was 13, and a actually started my career as a musician back in the early 70s in a traditional rock group called “Mushroom”, and we had great success with a song called “Devil Among The Taylors” and we recorded an album called “Early One Morning”. From there I went on to play with a whole variety of people in bands, orchestras, recording sessions and my own concerts. Music is my soul and I play music all the time. I couldn’t imagine a life without my guitar and my music.

You are still presenting on the radio, but you were also well known for the very famous LYRICS BOARD, do you think programmes like this should be revived? The Lyrics Board was a fantastic television programme which I thoroughly enjoyed doing. I think Irish people enjoy singing and will burst into song at the drop of a hat! I am very proud to have been at the helm of the biggest selling music game show in the world of television! If there was a revival I would be more than happy to do it again!

You are doing a concert here in Kerry in November and of course Christie being a Kerryman it should be special what do you think will be the highlight of this? It will be very special to perform in Christie’s hometown again at the Siamsa Tíre on November 18th. I’m really looking forward to it as I played there a couple of years ago with a play about Christie’s life and the reaction was phenomenal so I can’t wait to get back to Kerry. About two years ago I was a special guest at the Christie Hennessy Festival in Tralee, and I played 6 or 7 of his songs, but for me one of the highlights of the evening was Hermione and Tim, his daughter and son, came on stage and I played guitar with them and they sang “If You Were To Fall”. It will be an incredible evening and I think we will all sense Christie in the room that night!

Any other tours or tributes coming up or is it back to the day job after this tour? Well at the moment the tour is my focus of attention, and then of course there is the small matter You choose to do this amazing tribute concert to Christie of starring in the six part TV series on TG4 “Fir Bolg” which Hennessy around the country? Any particular reason for begins on November 3rd. It’s a very funny musical comedy choosing Christie? Christie and I became great friends after I met him in the early 90s over in London when I was drama, with a great cast including Sean McGinley, Don Wycherley, Patrick Bergin, Amy Hubberman, Steven Rea doing a program called “Both Sides Now”- an emigration and Caroline Morahan. It was great fun to do and we are based programme, and we hit it off fairly quickly and we planning a second series already. I’ll be returning to the stayed in touch. I played at one of his concerts in the incredibly brilliant Joe Duffy and Liveline in mid December, Gaiety Theatre in Dublin ,I launched one of his albums, but we are already planning the second round of tour and I recorded a poem “The Box” for one of his album. Then, in an extraordinarily humbling request, his wife Gill, dates for the Christie Hennessy Celebration, such has daughters Hermione and Amber and son Tim asked me to been the reaction so far ,including selling out the National concert Hall on November 27th! As Christie would say “ ah speak on their behalf at his funeral service in Tralee. We were great friends and I wanted to share with people the that’s lovely , I feel much better now!” beauty of his wonderfully tender love songs, and give them 8

Kolumbus Born in Kilkenny, Ireland, Mark Caplice moved to Wicklow at a young age, where he still resides. His performance name Kolumbus derives from the fact that he has always had a passion for travel and exploration, even from a young age. The 26- year-old believes life is too short to dwell, so his philosophy is to do. Kolumbus’ first release, a Christmas single ‘You Know It’s Christmas’ hit the No.1 spot on the Google Play Music Charts and Top 20 on iTunes, ahead of heavy hitters Adele and Justin Bieber, with all proceeds going to Inner City Helping Homeless and Baltinglass Lions Christmas appeal. The follow up single ‘Leave The Light On’, received coverage in 20 countries around the world and the latest release called “I Hope You Find Happiness” has been playlisted by RTE and nominated for single of the year by PureM music magazine.

Karrie “Karrie O’Sullivan is the best kept songwriting secret of the past decade” - Jimmy Smyth Karrie - farmer, horse-breaker and self-confessed ‘reluctant performer’ - released her new song collection ‘Perpetual Motion’ in Whelans, Dublin and the Triskel, Cork in October of this year accompanied by Grammy nominated Jimmy Smyth and with Special Guests. Ballyhar, County Kerry is the birthplace of singer/ songwriter Karrie O’Sullivan. In a former life, Karrie was a successful Horse-Breaker and still remains a woman of the land and lives and works on her farm. Karrie’s other lifelong passion has been, of course, music. Like any ‘real’ artist, she only writes music that comes from her soul, and is, in fact, a selfproclaimed ‘reluctant performer’. Karrie has also sang with Declan O’Rourke on several occasions, once, notably with the RTE CO at the NCH. These, and many more endorsements from very credible Music Industry sources, have validated Karrie’s - and others’- belief in the importance of her songwriting talent.

Roy Buckley Roy Buckley is a singer, songwriter, musician, recording artist, Guinness World Record breaker and founder of The Song Collector Sessions from Cork City, Ireland. His music has been described as passionate and real by his peers, and he creates an indelible atmosphere and a memorable experience for the audience with his unique voice and folk sound. Buckley’s knowledge of folk songs and stories, combined with the vast amount he has in his repertoire, have earned him affectionate nicknames such as “The Irish Song Book” among friends in the music business. In 2017, Roy Buckley will celebrate 15 years in the music industry and continues to bring his music to new audiences in countries all over the world including Denmark, Sweden, Portugal, Spain, Finland, Estonia, Holland, Norway, the UK and the USA. From Cork to all over Ireland, Roy has helped to refresh folk music to both young and old. He has collaborated with, recorded and shared stages with some of the best in Irish music including Phil Coulter, Mike Hanrahan (Stockton’s Wing), Liam Reilly (Bagatelle), Derek Warfield (formerly of The Wolfe Tones). John Spillane, Francie Conway and Finbar Furey among others...Roy Buckley is in constant demand both at home and abroad, to great acclaim for his live performances. 10

It’s time to get your This month we are talking about fabulous festive fashion from everyday casual chic to glamorous occasion wear. As the days get shorter and darker, it’s time to get your sparkle on - and embrace some brighter and bolder looks to get you through the Christmas season in style. The festive season is all about getting together with family and friends and this happily gives us lots of excuses to dress up, go out and have some much needed fun! However, too often, I meet both men and women, who tell me they don’t go to an event because they feel they won’t be dressed up enough or wearing the ‘right’ look. This is so wrong, and fashion is failing us if it makes anyone feel excluded. So make up your own rules and decide what you want to wear. Remember that fashion is about visually expressing your own personality and you will always be happiest and most confident when you wear what you feel really good

Connect | Christmas Tips

The lifestyle magazine for Kerry

Tips for a Stress Free Christmas Tip #1 Plan ahead.

Put your menu together. I know it may seem obvious, but we rarely do that. Write it down! Don’t just think it out, as you may miss something or simply forget it within time. Print out all your recipes, look at all of the cooking times and make a plan. See what you can bake/ cook ahead of time. Avoid shopping the weekend before Chirstmas – shops are crazy busy and some things might be already out of stock

Tip #2 Is turkey the only option? It doesn’t have to be a turkey! Think of how many people you’ll be hosting, if it’s only a few, how about a duck? Goose is also another great option. Those two birds have an amazing taste, are really easy to prepare and you will probably use/eat all of it. If you do have a bigger number of guests coming for Christmas dinner, turkey might be the best option, but make sure to check cooking times properly (don’t forget to include stuffing into calculations) and cook it ahead of time, so the meat has a chance to rest before carving.

Tip #3 Check what you can make & what you can buy. You don’t have to break your back making everything from scratch! Remember that spending quality time with your family and friends is what really matters, this time of the year especially. Decide which dishes you want to focus on and then fill in the rest with store bought or semi-homemade items. By all means it’s not “cheating”, it’s simply managing your time and resources.

Tip #4 Ask for help. It’s so important to ask for help, especially if you’re having crowds coming over. Don’t put yourself under unnecessary stress, you don’t have to do it all by yourself. Are your children old enough to help with baking? And if you have guests coming over, they will probably ask you if they can bring anything, simply say yes! For example, put someone in charge of the drinks, or ask for help in the kitchen with prepping. Even though you are hosting, you should be able to enjoy yourself too.

Tip #5 The night before. It happens to all of us at some point, you’re ready to put the turkey on a platter and you can’t find it! Or you can’t find that favourite bowl for the roasties. You will probably take out your outfit from the closet the night before, why not do that with your serving bowls and platters? Put out all your serving bowls and platters and match them up with serving utensils, along with sticky notes for all of the dishes. Check your menu and make sure you have a serving dish for everything. 16 CONNECT KERRY November 2016

Turkey guide What size to buy? 2-2,5 kg serves 4-6 people 3-3,5 kg serves 6-8 people 4,5 kg serves 8-10 people 5,5 kg serves 10-12 people 6-6,5 kg serves 12-15 people

Thawing your turkey

Your turkey can be thawed in a fridge or a cool, unheated room. If thawing in a fridge (4C) allow 8-12 hours per kg. If thawing in a cool room (around 17C) allow 3-4 hours per kg. Please note those times are approximate.

Roasting turkey

Set your oven to 190C/gas 5. For accurate timing, always weight turkey after it’s been stuffed. If turkey is over 4 kg, calculate 20 mins per kg + 90 mins. If the bird is less than 4 kg, calculate 20 mins per kg + 70 mins. To test if it’s done, make sure the juices run clear when you pierce the thigh where it meets the body. If not, put it back in the oven for another 20 mins, then test again.

Storing leftover turkey

You can keep cold, cooked turkey in the fridge for up to 3 days. Slice it from the carcass so it can cool quickly on a cold plate somewhere cool (an unheated room is ideal). Leftover stuffing should be cooled too. When both are completely cooled, wrap the meat and the stuffing separately in foil/cling film and store in your fridge.

Christmas Buttery Cookies

A recipe for Connect readers to try from Rachel Allen’s ‘Recipes From My Mother’

This recipe have been in my family since I can remember. When I was a little kid I would always make them with my dad. We would bake them about 1 week before Christmas and store in an airtight cookie box, although sometimes not that many survived till Christmas... Now, as I have moved out from my family home, I can’t imagine Christmas without those lovely little treats. I know that the quantities are quite “generous”, but with giving away good few of them and the fact that they keep well for so long, I always make a big batch. You can easily divide the recipe by half (then use 2 egg yolks + 1 whole egg).

Roast Goose with cRanbeRRy &

INGREDIENTS 1 kg self-rising flour 1/2 kg unsalted butter, cut into small cubes 5 egg yolks + 1 whole egg 1 1/2 cup sugar 2 tablespoons cream, you might not need it at all 1 teaspoon salt 1 egg, lightly beaten, for glazing (I usually use the whites that I have left from the yolks that went into the dough, less waste!) caster sugar, sprinkles etc., for coating In a free standing electric mixer, mix the eggs with the sugar till pale in colour, almost white. Still mixing, on a lower speed, slowly add the butter, bit by bit. When everything is smooth and well mixed together (on a rare occasions it might look “split”, but don’t worry it will come back together!), take the bowl from the mixer stand and gradually add the flour, with a pinch of salt, mixing everything together with a wooden spoon. If you feel that the dough is too ‘dry’, add a little bit of cream (you may not need all of it, or nothing at all), you’re aiming for a “playdough” consistency. Cover the ready dough into a cling film and put into the fridge for minimum of 1 hour. Take the dough out of the fridge (work here with small pieces of dough, keeping the rest in the fridge) and roll to about 0,5 cm thick. Working quite quickly (so the dough doesn’t get too warm again, as it will be hard to work with it) cut out the stars or any other shapes you like. Glaze the cut cookies with egg wash and sprinkle with some sugar to get a nice ‘frosty’ finish, or sprinkle with sprinkles (imitating baubles on the Christmas tree) or leave the cookies plain and decorate with fondant after the baking. Bake in the preheated to 180 C oven, till golden brown (it’s hard for me to give you exact time, as I always work here by the look of the cookies and also ovens vary between them a lot, but you’ll probably need minimum 5-7 minutes). Be careful when transferring baked cookies to a wire rack, as they’ll be quite soft and fragile at this stage. Leave the cookies on a wire rack to cool completely and hardening before handling/decorating/eating!

apple bReadcRumb stuffinG SERVES 8–10 The Icelanders love their roast goose at Christmas time, and this fruity cranberry and apple stuffing is particularly festive. The stuffing can be made in advance and frozen, if you wish. Make sure it’s thawed completely before stuffing the goose, though. Spiced Red Cabbage (page121) and Icelandic Caramel Potatoes (page121) compliment this dish perfectly.

Ingredients

1 Whole goose, giblets removed, and saved for the stock if you wish 2 tbsp plain flour for the gravy (optional)

For the stuffing

100g (3½oz)butter 300g (11oz) shallot, finely chopped 300g (11oz) celery, finely chopped 300g (11oz) cranberries fresh or frozen 450g (1lb) eating apple, peeled, cored and finely diced (weigh when prepared) 1 tsp sugar 300g (11oz) breadcrumbs 2tbsp chopped thyme Sea salt and freshly-ground black pepper First make the stuffing. Mel the butter in a saucepan over a medium heat until foaming, then add the shallot and celery and season with salt and pepper. Turn the heat down to low, cover with a butter wrapper or a piece of baking parchment and the saucepan lid and cook for 8–10 minutes until the vegetables are soft and tender. Remove the paper and the lid and stir in the cranberries, chopped apple and 75ml (3floz) of water, then cover again and cook for 7–10 minutes until the fruit is cooked. The cranberries will burst and soften when they’re ready. Stir in the sugar to dissolve, then tip into a bowl, add the breadcrumbs and chopped thyme and taste for seasoning. Allow the stuffing to get quite cold before you stuff the goose. To prepare the goose, remove the wing tips and then the wishbone for ease of carving. Put them into a saucepan with the giblets and the remaining giblet stock ingredients, if you are making it. Cover with 900ml (1pint 12fl oz) of cold water and bring to the boil, then turn the heat down and simmer for 2 hours. Strain and set aside for the gravy. Preheat the oven to 180°C (350°F),Gas mark 4.Season the cavity of the goose with salt and pepper and fill with the cold stuffing. Sprinkle some sea salt over the breast and rub it in to the goose skin, then roast for 2–2½ hours. Take the roasting tin from the oven three or four times during the cooking and carefully pour off the excess fat into a heatproof bowl. (Store this fat in a jar in the fridge – it keeps for months and is wonderful for roasting or frying potatoes.)

Festive Finger Food & Nibbles

With Christmas fast approaching, with one of the things that I always look forward to is having friends and family over for a few pre-Christmas drinks and nibbles. As with all entertaining at home, the key is preparation and having all of the hard work done before your guests arrive. Simple, freshly prepared, moreish, tasty little bites are the way to go. A selection of hot and cold is nice, as well as something sweet for the end of the evening. I often do small shot glasses of vanilla ice cream, drizzled with Baileys and sprinkled with grated chocolate. This month I am sharing 2 of my favourite quick and easy Christmas finger food recipes that are guaranteed to have your guests hungry for more.

Cranberry & Sage Sausage Rolls

Bake before your guests arrive and then just pop into a hot oven to warm through. INGREDIENTS 1 packet of shop bought ready-rolled puff pastry, 200g sausage meat 50g dried cranberries, pinch dried sage, 1 small egg, beaten Preheat the oven to 200C/400F/ Gas 6. Cut the pastry into 10 rectangles, about 7x10cm/2¾x4in. Mix together the sausage meat, cranberries and sage. Lay the sausage meat on the pastry pieces. Roll the pastry over the sausage, brushing the join with the beaten egg to seal. Place on a greased baking sheet, sealed-side down, and brush them with the egg to give a nice shiny glaze when cooked.

Baked Camembert with Crisp Bread

1 x 250g packs Camembert in boxes. 3 sprigs thyme, plus extra to serve 50g toasted walnuts of hazelnuts 2 tsp honey Crisp bread to serve (see recipe) Remove the cheese from their boxes and peel away the wrappers. Place the lids under their bases for support. Return the cheeses to their boxes. Score the top of each cheese in a crisscross pattern with a sharp knife and use the tip to push the thyme into the cheese. Preheat the oven to 190°C, gas mark 5. Place the cheeses, in their boxes, on a baking sheet and bake for 15 minutes or until soft in the centre. Scatter the tops of the cheeses with the toasted walnuts, some more thyme leaves and a drizzle of honey. Serve with the crisp bread to dip. Simply return the cheese to the oven if it starts to become solid again. For the crisp bread - Makes approx 20 peices 1 par baked demi bagauette, olive oil, Sea salt flakes Freshly ground black pepper Pre-heat the oven to 200c/gas mark 6/400f. Thinly slice the baguette at an angle. Place in a bowl, drizzle with some olive oil and toss, so that the bread slices are all evenly covered with the oil. Place on a baking sheet, season with salt and pepper, bake in the oven until crisp and golden (approx 3-4 minutes). Remove from the oven and leave to cool and crisp up on the tray. 20 CONNECT KERRY November 2016

Donal Skehan shares this recipe for delicious and healthy QUINOA HALLOUMI CAKES from his new cookbook I do love a good recipe that makes use of the leftovers sitting in my fridge. These quinoa cakes, spiked with salty halloumi cheese and spiced with paprika and cayenne pepper, are a perfect example – serve them with a dressed salad for a light lunch. The uncooked cakes can be kept in the fridge for up to 5 days and also freeze well, should you want to prepare some in advance. Hands-on time: 30 minutes | Total time: 30 minutes SERVES 4 INGREDIENTS 200g cooked quinoa 200g halloumi, coarsely grated 3 tbsp wholemeal flour 1 large free-range egg 1 garlic clove, finely grated 3 spring onions, finely chopped 1 tsp smoked paprika 1 tsp cayenne pepper Sea salt and freshly ground black pepper Olive oil, for frying TO SERVE 6 tbsp natural yoghurt ½ tsp smoked paprika Dressed salad leaves 1 Place all the ingredients for the cakes in a large bowl and mix well until evenly combined. Divide the mixture into eight and shape into burger patties. 2 Heat a large frying pan over a low-medium heat and add a glug of oil. Fry the cakes in batches for 3–4 minutes on each side until golden brown. 3 Mix together the yoghurt and smoked paprika and season to taste. Serve the cakes with a dollop of the spiced yoghurt and some dressed salad leaves on the side.

Two Minute Time Out

With Anne O’Neill, Tralee Pharmacist 1. If you didn’t do what you do, what would your dream job be? I love books and am a big fan of radio and podcasts. I never miss an episode of Open Book on BBC Radio 4, hosted by Mariella Frostrup and think that she has a dream job. Either that... or a rock star 2. What advice would you give your 18-year-old self?

My eighteen-year-old self would have been too headstrong to listen to advice from her older self. 3. Are you an ‘out on the town’ or ‘dinner and wine’ type of person? I love a good night on the town when the occasion demands it and will always give it socks and am always the last to turn out the lights. On an average Saturday night, I relish a dinner out with friends – good conversation flowing as freely as the wine. 4. Twitter or Facebook? I’ve found that my social media brain prefers to flitter with Twitter these days. 5. What’s your favourite film of all time? La Vie En Rose 6. If you could choose anyone to be stuck in a lift with, who would it be? Stephen Fry, for obvious reasons. I don’t think I’d be bored 7. Who is your hero and why? Like every girl, my dad… 8. What inspirational quote do you like to live by?

These lines from F.Scott Fitzgerald’s The Great Gatsby are ones are try to live by: “Whenever you feel like criticizing any one,” he told me, “just remember that all the people in this world haven’t had the advantages that you’ve had.” 9. If a genie granted you one wish, what would it be? I’d wish for an end to the conflict in Syria. What’s happening is particularly shocking and vile. 10. What do you love most about Kerry? I love the Kerry beaches and spectacular scenery. CONNECT KERRY November 2016

Hi readers,

A question for you - which of the following Christmas shoppers would best describe you? (1) the person who is out first thing St. Stephen’s Day for the bargains and January sales, and buys wraps and labels the gifts for following Christmas. (There are tablets available for that condition now)

Michelle Collins & Simon Parkinson Bride & Groom

(2) the person who starts in October and has everything done for December (that’s the real me desperately trying to escape out of this body) (3) the person who leaves the shopping until the last minute (this is where most of you nod and smile). The little elves at That’s Perfect will try take the stress out of your shopping this year. It looks like the most popular gifts this year will be scarves, brooches, and bags. Scarves start at €5 and go up to €35 for a luxurious pashmina style in many colours. Always an affordable but excellent gift, brooches range in price from just €10 to €20. If you are looking for a gift for yourself, you can always tell your partner or children what you actually want, just come in and select a bag and put it aside. We also secure any item with a deposit if you want to pay it off on the run up to Christmas. The pictures show some of what is in stock at the moment and the price range for the bags is €25 to €39. Please call in and we can look over some ideas for pressies. I will take this opportunity to wish you all a wonderful Christmas from all at That’s Perfect. LEARNING HOW TO ASK FOR WHAT YOU NEED As adults, we are responsible for getting our own needs met. All too often, though, we are brought up to believe that it’s somehow selfish or rude to ask for what we need, and we end up using indirect methods to try to meet them. For instance, do you sigh and wait for somebody to ask you what’s wrong? Do you sulk for a while and hope that somebody will notice? Do you drop heavy hints that something is bothering you? This is indirect behaviour, and can become very counterproductive in relationships. It can lead to withdrawing affection, or cold silence in place of communication. It can lead to resentment and misunderstanding that hardens into dislike and unwillingness to compromise. Fairy tales, popular culture, romantic fiction all give the false idea that when we meet that “special person” he or she will just magically know the right thing to do to make us feel cherished forever, to fulfil all our emotional needs and to take responsibility for making us feel good, In reality, people are not like that. Nobody is responsible for our wellbeing except ourselves. Having a partner or a lover is wonderful, but it’s not a magic solution to our emotional needs. Learn to ask for what you need, in simple, direct terms. You’ll be surprised how empowering that is. (More on this next month)

HEALTHCARE MATTERS

Diabetes

with Brian Kearney

Welcome back everyone,

November 14th is World Diabetes Day so I thought it would be appropriate to bring attention to one of the most prevalent conditions affecting the Irish population. In Ireland it is estimated that there are 225, 840 diagnosed diabetics and by 2030 it is estimated that this could rise to 278,850. Diabetes is a condition which is caused by a lack of or inefficiency of the hormone, insulin. There are two types of diabetes. Type 1 is normally diagnosed in childhood/ early adulthood. Symptoms can include extreme thirst, lack of energy, frequent urination, high temperature and unexplained weight loss. This type of diabetes is always treated with insulin injections. Type 2 normally develops in adulthood. Risk factors of developing type 2 diabetes include being overweight, having high cholesterol, high blood pressure or being mostly sedentary. Symptoms include frequent urination, rapid weight gain/loss, frequent infections and extreme thirst. Type 2 diabetes can be treated with diet/exercise but can often require the intervention of medication and in some cases insulin injections. It is important that we are vigilant with the amount of sugar we take in our diet and that we take steps to eliminate the risk factors associated with the development and progression of Type 2 Diabetes. In Sam McCauley Chemists Tralee we offer a Health Screen for just €10. This includes a cholesterol check, a glucose test and a blood pressure check. If you would like more information or would like to make an appointment please call us on 066 7161250. Always remember that your local pharmacist can be your first point of call with any non-emergency health queries you may have. Feel free to call in to Sam McCauleys Tralee to speak with me if you have any queries about diabetes or diabetic medication.

SEPSIS CARE with Dr. Angela O’Donoghue Lately there have been several articles in the media about sepsis, raising awareness, but also perhaps many questions, about this life threatening condition. What is sepsis? It is a reaction by the body to severe infection, which starts to damage the body’s own tissues and organs. The infection can be caused by a bacteria, virus or fungus. Some people are more vulnerablethose most at risk include the elderly and small children (under 1 year old), people after surgery, alcoholics/drug users, people who suffer from diabetes, those with compromised immune systems including those on longterm steroids or chemotherapy. Unfortunately the symptoms may be very vague but seek urgent advice if you suspect someone may have it. The most common symptoms include fever, confusion, increased heart and breathing rate. There may also be symptoms relating to the underlying infection such as a cough with pneumonia, pain passing urine with a urinary tract infection and symptoms may be worsening despite antibiotic treatment. In those with a weak immune system and also in the very young or old, body temperature may be very low rather than high. A person with sepsis may have cold and clammy hands and feet although their temperature may be very high. There may be a blotchy appearance to the skin. A child with sepsis may feel abnormally cold to touch, have patchy mottled skin which may be very pale or even bluish, have a rash that does not fade with applied pressure and may be very tired and difficult to wake from sleep. An infant may be off feeds, vomiting and have no wet nappies. Sepsis is a medical emergency and if suspected the person should be immediately brought to hospital. The outlook can be good if it is diagnosed and treated promptly. Diagnosis involves blood tests including blood count and blood cultures and treatment involves intravenous antibiotics and fluids, and may need to be given in an intensive care setting. Blood pressure support is often required. The HSE launched guidelines for sepsis recognition and management in 2014Sepsis-6 involves 6 steps that must be undertaken in the first hour of a patient presenting to hospital with suspected sepsis- these are giving oxygen, IV antibiotics and fluids, taking bloods, blood cultures and measuring urine output. There are many conditions that may present similarly so prompt diagnosis is essential. If you are concerned that someone you know may have sepsis, please seek urgent medical advice.

FERTILITY AWARENESS: TOP TIPS with Dr. Mary McCaffrey Fertility Awareness Week is just coming to an end. Approximately 1:6 couples experience difficulties conceiving and there are a number of important messages for people.

Female Fertility

• A woman is born with the number, and quality, of eggs that she will have for the rest of her life. Ovarian reserve gradually diminishes over time but this process accelerates from age 35 onwards. • Ovarian reserve can be assessed as part of a fertility check using a specialised blood test, AMH, and a detailed ultrasound scan that measures follicles. • Healthy Lifestyle is an important part of preparing to conceive. Cigarette smoking, exposure to toxic substances such as BPAs in plastics, maintaining a healthy weight and reducing stress are as vital to improving fertility as medications • Polycystic Ovarian Syndrome (PCOS) is the most common reason why ovulation does not happen. In addition to medical treatment we often recommend nutritional expertise and homeopathy.

A wide range of treatments now exist and are outlined on our website www.scotiaclinic.ie

Male Fertility

• Sperm factors account for difficulties conceiving in about one third of cases. • Male fertility can be assessed by a semenalysis testing. More specialist tests include Sperm DNA Fragmentation testing. • Sperm quality and quantity may be affected by many factors including certain prescription medications and environmental factors such as excessive exposure to heat, WiFi and radiation.

The Scotia Clinic provides detailed information on our website. We also have a FB group “Scotia Fertility News” keeping couples update on all the latest health information. 28

PEARLY WHITES Dr. Susan Crean

Have you always wanted straighter, whiter teeth but didn’t like the idea of metal braces?

Short term, cosmetic (white) braces could be the solution for you! Short term braces are specifically suited for adult patients who may have previously thought they were too old or outside the criteria category for regular braces. Frequently, in practice I encounter patients who are not happy with the appearance of their misaligned teeth but believe they are too old for braces! This is simply not true!! With Six Month Smiles the braces are white, therefore, no unsightly metal is evident. They are mainly used to treat crowded, prominent, spaced and/or rotated front teeth. It is cosmetically focused orthodontic treatment therefore there is no age limit for the treatment. However, patients must be 18 years or over and must be able to maintain proper gum health before treatment (i.e. no evidence of gum disease). The treatment is for front teeth only and so it will not correct or alter your bite. It does not alter the position of the posterior (back) teeth.Unlike, conventional orthodontics (metal brace treatment) this treatment time is usually a lot shorter normally 6 -9 months. The treatment time is generally faster than using clear braces, as it still involves placement of a bracket and wire on the tooth. Short term braces do not require extractions as the treatment involves tipping and tilting teeth and therefore one would expect minimum or no discomfort during treatment.

Before

After It is also suitable for patients who may have had previous orthodontic treatment but might have suffered from relapse (further tooth movement). Generally the treatment is cheaper than conventional orthodontic (brace treatment) After treatment, patients are required to wear a retainer to ensure their teeth do not move afterwards. This can be either a small wire retainer which is permanently bonded to the back of the front teeth (not visible) or a plastic removable retainer which is worn at night or both! At the end of treatment, once the teeth are aligned (straightened). The colour of the teeth can be adjusted using the removable retainer (gum shield) and whitening paste. A free cleaning prior to the start of treatment and whitening gel if required, is included in the treatment plan. Finally, if the length or width of some teeth needs to be altered after treatment this can be created through the use of cosmetic resin material. I will normally tailor a package to suit each individual patient.

Well ladies,

As difficult as it may be to finally accept we need to fold away our summer clothes and bring our heads up out of the sand, there is no denying that the season of sparkle is once again approaching- and fast! It’s not all bad news however as the days get shorter and hems get longer as we have the most beautiful of autumnal and winter looks to embrace. This is the season that sparkle is given free reign and glitter is king. If you love the idea of glitter but want to kept it classy and elegant why not try a simple sweep of metallic shadow just under the brow along the bone, replacing highlighter. Alternatively, a slick of glitter along the lash line on the top or bottom of the eye looks amazing and was worn by the models recently at the Burberry show during Paris fashion week. Two lip trends that are very much on trend this winter are the dark lip and the glitter lip. The dark lip is an instant glamorous look that can be achieved using either matte or gloss textures and when worn with lip liner looks fierce and ultra-sophisticated. The glitter lip can be achieved very easily and is a lot of fun! Simply apply your favourite shade of lipstick (mine is red but a fuchsia pink looks stunning in a glitter lip) and dab some lash glue on top with a flat brush. Taking the brush to the glitter (art supplies stores here we come!) Gently press the glitter pigment on top of the lip. As an alternative this can be done in just the centre of the lip to add a spotlight effect. Why not be bold as brass and mix up the glitter colour to contrast the lipstick shade? It’s such a playful look and the colour combination choices are endless. Remember that less is more with these looks if you want to keep it classy so maybe try a glitter eye with a neutral non glitter lip or vice versa. Whatever you do have fun and don’t forget it’s nicknamed the silly season for good reason! Next time I’ll be sharing my tips on how to achieve fresher, rested and glowing skin and better still - how to maintain it while partying the nights away. Ciao,

Lorraine xx

A probationary period is a period of evaluation and training, but the advantages of a probationary period are more in terms of putting a time reference as to when a decision to retain or dismiss the employee will be made. When including a probationary period it is important to remember the following: Policy: Have a clear Probation Policy in place, separate to the Disciplinary Policy. This should clearly define what length the probation period is, to what length it can be extended and what notice period is required during this probation period. Contract: The employee must know in advance that their employment is subject to probation. The employment contract should specify a defined probationary period, which can be extended up to 11 months. Any offer letter extended to the employee should also confirm the probation period attached to the role. Induction: The new employee should be briefed on the contents of the Employee Handbook and sign an attendance sheet for such a briefing/training session in addition to acknowledging receipt of the Company handbook/policies and procedures including the probation policy. If you want to learn more about how to manage probation effectively in your organisation The HR Suite will be holding training for Employers and Managers this November in Tralee on Probation Management. For details on this training day or for details on any of our other training sessions please contact us in the office on 066 7102887. www.thehrsuiteonline.com

Budget 2017

Time will judge this Budget on whether it was compromised, or a solid approach given the ongoing international uncertainties such as Brexit. Main highlights are as follows: Housing

A real focus in the Budget with measures both to increase housing and encourage lettings. Help to Buy Scheme for new housing 02/06/2016 2 introduced. Rent-a-Room Relief increased, Loan Interest Relief on rented property increased by 5%.

Self Employed/ Business

Overall little to get excited about but a move toward equality with PAYE workers welcomed as Earned Income Tax Credit increased to €950. Minimum wage increase of 10 cent unlikely to have any significant impact. Start your own business Relief also extended to 2018.

WHY ONLINE ISN’T KILLING RETAIL AFTER ALL! Much has been said and done to try and combat online retail killing off small stores…but at the end of it all ‘blocks n mortar’ retail still exists, and in some cases, they’re thriving! So, why are some retail stores doing well while others are fading away? It comes back to the simple philosophy of having kick-ass customer service and a unique store…and then telling the world about it.

Great Shop + Great Digital = Success

Everything is digital, for small retailers that simply means having a presence online that shows your target customer how good you are in reality. Customers still prefer to experience your goods in reality, rather than hoping what they buy online is any good. Note: Online sales always do better when the customer can come in and see the product they want in a physical store first, why else would Amazon start opening major stores throughout America! 32

The introduction of Low Cost Loan Fund for Farmers could yet prove vital to a sector that continues to struggle. Extension Farm Restructuring Relief, Vat Rate of 5.4% and income averaging adjustments, unlikely to provide little comfort given the impact of Brexit uncertainty and current milk prices.

Hospitality & Tourism

Retention of 9% VAT Rate remains hugely important for Kerry.

Thinking Out Loud

Is our addiction to technology gone beyond the point of no return? By Marisa Reidy THE other day my six-year-old daughter asked me if she could have a mobile phone for Christmas - and she was deadly serious! Through the laughing, I told her there wasn’t a chance and she was really annoyed and genuinely couldn’t understand why. Eventually accepting that it wasn’t going to happen any time soon, she tried to negotiate – asking me instead if I could ‘download Snapchat’ to my phone so she could ‘Facetime her friends.’ Can I just repeat that she is six years old and I genuinely didn’t know what she meant. Yes I have a (very old) smart phone and enjoy Facebook and Twitter, but I don’t have Snapchat and the first time I ‘facetimed’ anyone was last week, through Facebook messenger (which doesn’t really county apparently). Such an informed request from such a small little girl got me thinking about children and social media and indeed how much time we all spend on our electronic devices. Has it reached a dangerous point of no return? It really struck a chord with me a few weeks ago when my husband and I and our little girl were out to Sunday lunch. A family of five arrived at the table next to us – two parents, two boys about eight and 10 and a little toddler who was no more than two. As we were sitting and chatting about our food and what we planned to do later, the parents beside us were both playing with the phones, while the two older boys were engrossed in their iPads – complete with headphones. Oblivious to any of them, the toddler was in his high chair banging on his tray desperate for attention. It wasn’t until he threw something at the table that his mother put her phone down – but only momentarily to pacify him. Don’t get me wrong, I love social media and have been guilty of handing my daughter my phone to keep her quiet several times, but incidences like that on our lunch date are becoming frighteningly more common. Go into any cafe, bus station, airport, or even the pub and it’s nothing but smart phones in every corner. No one talks to each other anymore, which is not only sad but quite worrying. Of course we need to keep up with technology, but when it comes to the stage when good, old-fashioned conversation and precious family time is replaced by an addiction to phones and ipads then we are in very serious trouble.
