The lifestyle magazine for Kerry I know it’s been a hard year for you being sick but you have come through and are still smiling so what’s your tip to ladies of your age out there on looking after their health? Prevention is better than cure! For anyone out there, who is worried about their health, or feels that there is something not quite right then you need to do whatever it takes to get an appropriate health check, no one else can do it for you. Even if it’s something small, go see you’re G.P, just to put your mind at ease. For anyone who is going through some form of Cancer, or any other illness for that matter, Your mind is the most powerful thing, so keep strong and be positive and anything can happen. Having a support network around you is key also. I had massive support around me when I was ill and it meant the world to me. So what’s next for julett?
JULETT PREPARING TO REPRESENT KERRY IN ROSE OF TRALEE
T
his month we are delighted to catch up with the newly crowned Kerry Rose Julett Culloty, A native of Kilcummin she was handed the sash from last year’s Kerry Rose Mary Hickey at the Ballyroe Heights hotel recently. It was a fantastic night and all the participants had a wonderful experience, Julett tells us a little about herself and her plans for the next few months. Julettt you must be thrilled to be wearing the Kerry Rose Sash for 2015, tell us a little about yourself and where you come from? Hi, Yes, I’m absolutely thrilled to be representing Kerry in this year’s Rose of Tralee festival. It is a huge honour for me. I’m 25, I’m from and live in Kilcummin, I have five brothers and two sisters and I am the second youngest. I am a social care worker; I studied in I.T Tralee and graduated from there in 2011, and have since worked in a

number of different organisations around Munster Has it always been a dream to represent Kerry in the Rose of Tralee? Honestly, being a Kerry Rose was only something I wanted to do with the past couple of months and I feel so lucky now for entering the competition because I have made some amazing lifelong friends from it and have had one of the best experiences ever. You graduated in Social Care in 2011 what does your daily job have you doing? Well, I have primarily worked with children in care, so what that means is that I work with children who have been placed into the care of the HSE, and I then help to care for them on a daily basis and also help them with whatever problems or issues that they may be having. It can be very challenging at times, but it’s really worthwhile, I love it.
I’m extremely excited and looking forward to the Rose festivities and meeting the rest of the roses. For now, I’m being kept busy attending events and working with a local charity and enjoying every minute of it. I’ve been asked to attend the opening of the Dorothy Henngeler walkway in Tralee, Dorothy who was the 2011 Washington Rose sadly passed away in 2013, so to be there on the opening of this, I feel is a huge honour. So I’m looking forward to being busy and enjoying every minute of it.

ZoĂŤ is a teen blogger and writes about life as a teen today, fashion, beauty and lifestyle. Follow ZoĂŤ on twitter @Zobo2402 or visit her blog teentimeszoc.blogspot.ie I am not quite old enough to begin my life on my own, but I am apparently too young to not be living my life independently. A statement which took a long time to put together, but no matter how you look at it
to be intelligent to achieve in your career. From what I have experienced so far anyway, street smart is at least valued on par with intelligence when you are eventually thrown into the real world. I know that people can make you believe that you are only as good as your next test, but that isn’t true.
As a part of transition year, we are required to participate in work experience. But really I see this task as more life experience than anything else. Because, if all things go well, we will be working for the rest of our lives; cue the term life experience.
If you choose to pursue what you love, then you can succeed.
I am lucky to be friends with some very intelligent people, but if I have learned one thing from this work experience module, is that you don’t necessarily have
My most recent work experience taught me a lot of things. After day two, I made the big realisation that everyone wasn’t out to get me, and everyone was actually
I am not saying that someone who belongs in the Dumb and Dumber movie is going to be CEO of some major company someday, but just because you fail a test every once in a while, doesn’t mean that you aren’t going to achieve.

really nice. I know that this may not translate too well into every backstreet in Dublin but you can’t just hide in the corner the whole time. You have to put yourself out there, and be ready for what life is going to throw at you. I can say that if this whole work environment is in-fact life experience, then it is a lot better than any school hallway that I have ever walked in. And I am saying this from the experience of answering phones and brainstorming ideas, it can only get better from here. So, who cares what I got in my maths test the other week, it only goes up from here. But if you see my Dad, I got an A, okay?

Having a Healthy Baby
What is the latest expert advice
Daly has a specialist preterm birth clinic and liaises with us to put care plans in place for women at risk of preterm delivery.
Prenatal Testing Until very recently the only test available to Irish couples wishing to assess the risk for chromosome abnormalities was quite invasive ie Amniocentesis or Chorionic Villus Sampling. In more recent years a blood test has become available known as NIPT (Harmony / Panorama). This involves a blood test from the pregnant woman and fetal cells are analysed for genetic conditions such as Edward Syndrome, Patua Syndrome, Down Syndrome and sex related abnormalities. The test can be taken as early as 10 weeks with the result being available within 2 weeks. Recent studies in scientific journals suggest that Harmony / Panorama is now the best acceptable first line test for couples wanting to asses in pregnancy. An ultrasound scan and counselling are an important part of prenatal testing. Which babies are at risk of premature birth Premature delivery has significant implications for babies. All of the risks including cerebral palsy are greater the
more premature a baby is. There are now increasing medical interventions that can help when a women is threatening premature labour. A recent presentation at the American Congress of Obstetrics and Gynaecology suggests that ultrasound screening of the cervix (neck of the womb) could help identify women at risk of cervical insufficiency which contributes to premature labour. Women at risk could then have preventative interventions to halt delivery such as inserting a cervical stitch or taking progesterone supplements. Where women do threaten to go into premature labour there are many drugs now available to prevent or delay labour. Other medications such as Magnesium Sulphate can be given to protect the baby’s brain should it be delivered early. It is now almost universal that women who are at risk of premature delivery are given steroid injections prior to delivery to mature the baby’s lungs and lessen the risk of problems breathing at delivery. We occasionally refer couples to Professor Sean Daly at The Coombe Women’s Hospital, Dublin. Professor
Who needs Folic Acid There is a lot of concern with in the medical profession, in recent times, that Irish women are not taking Folic Acid supplements. Folic Acid taken prior to pregnancy and for the first three months of pregnancy has been clearly shown to reduce the risk of Spina Bifida/ Anencephaly and Cleft Palate. This is an simple, cheap, intervention with huge benefits. An Over The Counter preparation is adequate for most people and should be commenced in the months prior to becoming pregnant as we do not get enough Folic Acid in our food, or cooking processes destroy it, to receive adequate Folic Acid. For women with higher BMI or those who are on certain medications such as epilepsy medications should be on a prescription dose of 5mgs Folic Acid.

This month’s Beauty Buys Urban Decay 24/7 Waterproof Liquid Eyeliner €19.50 The catwalks for spring/summer 2015 focussed on striking, colourful, eye-lining definition. Urban Decay’s 24/7 liquid liner comes in a delicious selection of highlypigmented shades to make those peepers pop! It’s also waterproof – a perfect partner for days spent frolicking on the beach.
Nivea Q10 Plus Goodbye Cellulite Gel-Cream €13.29 When the swimsuits come out, it’s usually accompanied by a string of “does my bum look big in this?” Ladies, do yourself a favour this summer and enjoy being you in the body you have! Easier said than done, I know, which is why a little boost can help give you the confidence you need. Nivea’s Goodbye Cellulite Gel-Cream targets problematic areas such as the thighs, stomach and buttocks. It melts in fast, smells fresh and leaves skin feeling firm. I’ve been testing it out for the last week and already I can see a difference. A little gem.
Roberto Cavalli Paradiso €47 - €88.90 There’s nothing I love more than a signature summer scent. Roberto Cavalli’s Paradiso paints a picture of sun, sea and tropical trees. With hints of jasmine, cypress and bergamot, it’s easy to see just how influential Italy’s summer Mediterranean coast was in the creation of this fragrance. Take a deep breath and float away with this wonderful woody floral scent.
No 7 Hair Protect Spritz €8.50 While we may crave sunshine and seaside, our hair certainly doesn’t. Exposure to the sun’s rays and salty sea water can damage hair, leaving it weak, brittle and faded. Enriched with vitamins and antioxidants, No 7’s Hair Protect Spritz helps to protect your hair against environmental damage. Non-greasy with a summer scent, it’s a perfect addition to your summer beauty regime.
Revlon ColourBurst Matte Balm €10.99 A fresh summer face with a pop of bold lip colour is the in thing this season. Revlon’s fantastic matte balm comes in an easy-to-apply stick, allowing you to top up quick whenever you need to. With a fabulous selection of colours and moisturising Shea, Coconut and Mango butters, this little beauty nourishes your lips whilst giving you a matte finish.

Treatment of the month P
reparing for the summer has its duties and one of those is to have our skin fresh and ready to take on the extra heat (we hope), I was invited recently by Linda O Shea who has just opened her beauty business in Ballybeggan bedside Ballybeg Hair to be treated to a radiance facial which is tailored to your skin type using a range of products from the PHYT’S beauty care range, these products are amazing, they are full of natural ingredients, Made in France the ingredients are organic and from plant extracts so therefore full of goodness for your skin. My treatment began with a soothing cleanse of the skin where Linda analysed the extent of what my skin needed. The exfoliation was completed with a face scrub that had ingredients such as Ylang Ylang and aloe Vera, it eliminates dead skin cells, and reduces skin imperfections and is ideal for tired skin, my particular favourite was the serum that was used I could almost
instantly feel my skin breathe back life, these can be got in capsule form so therefore it’s a fresh touch to your skin each time. So when all the hard work was done the rich moisturiser completed my treatment, Crème Absolue as it’s known as is a genuine rejuvenation treatment, the rich cream reduces wrinkles and firms the skin. Its luscious texture is ideal for mature skin. All in all I had the most relaxing hour and half of the week, the subtle lighting and heated treatment table all added to the ambience and I will certainly be back for more. So if you want to treat yourself or someone you care about to a little r+r make sure and call Linda who will take good care of you.

T
ralee woman, Brenda Doody will undertake an epic challenge of completing 12 marathons in the next eight months to raise funds for the Mercy University Hospital Cork, where her husband was treated for oesophageal cancer in 2014. Brenda is set to take on the challenge of a lifetime in what she hopes will become a major fundraiser for cancer facilities and research at the Hospital, and will be joined for the Dingle Marathon by Mr Tom Murphy, Consultant in General and Oesophagogastric Surgery, who leads her husband’s cancer care team. Mr Murphy and his team at the Mercy University Hospital treated Brenda’s husband, Pat as he underwent a minimally invasive oesophagectomy last September, after developing oesophageal cancer. Before undergoing the 7-hour surgery, 45-yearold Pat received both chemotherapy and radiotherapy following the diagnosis in May 2014. Since then, Pat has been given the all-clear, and now Brenda is gearing up for a massive challenge that will start in Tralee next month. As a health and fitness instructor, Brenda is used to 10k runs and half-marathons, and
thought this fundraiser deserved a bigger commitment, so Tralee will be followed by Connemara, Limerick, Cork, and Waterford. She will tackle Killarney in July, and four marathons in as many days in Donegal in August. Her challenge culminates with Dingle in September and Dublin in October. Pat is planning on doing the last marathon with her, health permitting. Funds raised through Brenda’s marathon challenge will go towards funding research programmes in oesophageal cancer and expanding the minimally invasive cancer programme in the Mercy University Hospital. Mr Murphy said “It was a privilege to treat Pat and I’m very pleased that he’s returning to work soon and getting out on the road training. Brenda’s fundraising venture honours the tremendous hard work of the multidiscplinary cancer team in the Mercy University Hospital and I am very proud to be working with such dedicated team. I’m looking forward to the hills of the Dingle peninsula this September.”

Brenda said that Mr Murphy and the team at the Mercy University Hospital were so amazing and helpful during this tough time that she wanted to give something back. She said “I’m ready for this challenge and I hope it’s going to become a massive fundraiser. I really wanted to do it for the Mercy and the work of consultant Tom Murphy, who took care of Pat. Tom and his team were amazing and I just feel the least I can do now is to raise as much money as possible for research at the hospital.” To get involved and join Brenda and Dr Murphy, go to facebook.com/ mercymarathons, or to make a donation, go to fundraise.mercyfundraising.ie and click on Brenda’s Mercy Marathon Challenge.

“Get the shoe right and dance all night” Nothing puts a dampener on an occasion like an illfitting shoe and that statement is from my own experience. A few points for you to consider. 1. Buy shoes sometime before your event and wear them around the house to “break them in”. 2. If you are used to a certain height of heel in your shoes, choosing something completely different wouldn’t be a great idea.
3. If you are wearing a full length dress steer clear of a stilettos, is so easy to trip on the hemline and do an uninvited summersault at the reception! Wedges or block heels are a lot more suitable with full lengths. If you already have a comfortable pair of shoes you could look for something similar in colour to match your outfit as this way you will be sure of comfort, I Have found here in the shop, if a customer buys a pair of shoes in one colour and finds that they are easy to wear they will often come back and buy the same shoe in some of the other colours available. Another tip if like me, you like a little bit of elevation without the pain, is to think about a shoe with a hidden platform. Although the heel may seem high, they are surprisingly comfortable, as the sole is built up and pressure on the ball of the foot is a thing of the past, which lets face can’t be bad. As for colour, a comfortable gold, silver and black shoe should match most outfits. Finally, always have a pair of pumps or flip flops in your bag for the long night of dancing, as you have probably been on your feet all day and deserve a little comfort, (at that stage nobody cares what you’re wearing anyway). Till next time

HI EVERYONE WELL WE’VE FINISHED THE COMMUNION AND CONFIRMATION SEASON FOR THIS YEAR AND THE WEATHER IS GETTING BETTER, SO THIS MONTH I’D LIKE TO INJECT A BIT OF COLOUR INTO YOUR WARDROBE FOR THAT SUMMER WEDDING, GOING RACING WITH THE GIRLS OR COOL SUMMER CASUALS. First I want you to ask yourself are you more a plain jane(one block colour) or a busy lizzie (floral/ patterned)in your style of dressing. There are beautiful colour options available this summer in plain, patterned or floral prints. Of course it’s great to mix patterned and plain together, and makes a nice simple introduction to print. Few of us are brave enough to dress head to toe in a print, but the real beauty of a patterned garment is that it will become such a versatile item in your wardrobe. In Annburys at the moment we have some beautiful patterned tops, which can be matched with a variety of different coloured trousers. Sometimes selecting one of the less dominant colours in the pattern as your base plain garment colour can have a striking effect. Not everyone is a print lover and that is perfectly fine, as there are such a range of colours out there to choose from that everyone will find a colour to suit their complexion. Shades of blue from navy, baby blue to the rich royal blue are huge this summer as are pinks, greens and corals. The old reliable such as the classic pairing of black and white are a timeless double act, a little like Morecambe and Wise (I’m really showing my age here so for those of you too young to know who they were, they were the original Ant and Dec).Be as adventurous as you dare and have fun mixing up the colours in your outfits. A very flattering way to wear colour is to dress entirely in one colour palette, whatever your colour of choice, this look has a very sophisticated yet relaxed feel to it.Finally as you know I am a big fan of accessories and summer is the perfect time to brighten up your wardrobe with some bright, colourful statement headpieces and jewellery. Well that’s all for now, don’t forget for more style advice tune into Radio Kerry’s talk about the second Thursday of every month for fashion fix with Deidre Walsh and myself, hope the sun shines down on you all, BEST REGARDS,

I went to Tralee to get my hair done in BALLYBEG Hair Salon, the salon came highly recommended by you guys and it didn’t disappoint it was so fab. The decor had a boutique feel it was small cozy and the staff were so nice. The location was ideal because I wanted somewhere that had parking so for this was perfect for me.The girl who did my hair was Edel, I asked for silky straight blow dry and she also put in a treatment into my hair it was so glossy afterwards, they stock L’Oreal which is one of my favs!!!! The best thing about the salon is the prices they are so cheap, I was in shock the service is 5 star but you don’t have to pay a fortune. They do all group party’s be it communion confirmations weddings. I would definetly go here for my wedding hair the salon is so stunning your wedding pics would be amazing.

Pearly Whites
Marcas Mac Domhnaill
Pearly Whites Keep Them Safe ( Dr Marcas Mac Domhnaill) Dia is Muire Dhaoibh go léir arís. We all know that our teeth are often one of the first things that we notice about people when we meet them for the first time. Whether this is just a social occasion or a job interview, it often means that first impressions last. Our teeth deserve to be kept safe from all dangers, not only tooth decay and gum disease but also from trauma. According to the Dental Health Foundation in Ireland, approximately one in eleven children in the country will have broken one or more of their permanent teeth before they reach the age of fifteen years. The damage can range from a minor chip to a deep fracture involving the nerve chamber of the tooth. Teeth can also be displaced in the mouth or on rare occasions, they can be knocked out of the mouth in one piece. Traumatic injuries to teeth can be difficult to treat and may have long term financial, aesthetic and function problems for patients. Prevention is always better than the cure. The importance of sports mouthguards cannot be underestimated. It is now mandatory in many sports that they are worn. This has insurance consequences, in the event of a dental injury where the player was not wearing a mouthguard. Since the start of 2014, it is compulsory for all Gaelic footballers of all grades, to wear a mouthguard. Car seatbelts and /or car seats should always be used, as is the law. Cyclists should always wear safety helmets. All of these things can reduce the chances of dental injury during accidents. What to do if a tooth is knocked out? Despite all our care and attention, accidents do happen and teeth can be knocked out as a result. Baby teeth should never be put back into the gum. If you are in doubt as to whether it is a baby or adult tooth, then err on the side of caution and do not put it back in the mouth, as to do so could possibly damage underlying adult teeth. If it is an adult tooth, calm the person down and pick up the tooth by the white enamel part. Do not touch the darker root part. It if is dirty, wash it for 10 seconds in milk or running water. An adult can replant the tooth into the socket using the adjacent teeth as a guide to line it up correctly. If this cannot be done, store the tooth in milk and go to a dentist as soon as possible. Telephone the dentist in advance of your arrival. Adults can store the tooth in saliva inside the cheek but this is not suitable for children and storage in milk is better, while on route to the dentist. Avoid storing the tooth in water. In all other dental injuries where teeth are chipped and/or displaced from their correct position, then a trip to the dentist is a necessity. A poster on this topic is available in Irish and English from www. dentalhealth.ie and should be on display in every school and sports club in Ireland. Níor bhris focal maith fiacal riamh – A good word never broke a tooth. Beir Bua

Moments in Sport Monika Dukarska
KILORGLIN BASED LADY CHAMPION ROWER This month we meet Monika Dukarska, Kilorglin based lady champion rower.
The Quick Fire Section: TELL US A LITTLE ABOUT YOURSELF? Currently I’m back in Cork and I train full time at the National Rowing Centre in Farran Wood, Inniscarra, and Cork. Recently I have competed at the Piediluco Regatta in Italy where I won two gold medals in the Women’s Pair event. Women’s pair in rowing terms means two people in the boat with one oar each ( it’s called sweep rowing) as oppose to sculling where a rower has an oar in each hand. This is my first season in a women’s pair boat. Now we are entering the anaerobic phase of our training, which consists of fast speed, interval training in preparation for the upcoming European Rowing Championships. The preparation consists of side by side races which vary from short sprints to longer races. The European Championships are held in my hometown Poznań, Poland. The event takes place on Malta Lake, I lived only 10min drive from the regatta venue before moving to Ireland. I have raced there in 2009 but I never expected to return to my hometown wearing the green jersey and representing my new home country Ireland. It will be great to have the support of my family in Poland at the championships. Outside of rowing I am occupied with administrative duties for the Killorglin Rowing Club. I am the Secretary of the Club and I’m delighted to be still involved and help out as much as I can. Occasionally when I visit my parents in Killorglin I also do some coaching, which gives me a huge satisfaction. It’s great to see new talent taking on to the water. New champions in the making. Focus for me however is on training hard and recovery after training. Unfortunately being a full time athlete does not end the minute you leave the gym or finish a water session. It is a 24/7, 365days a year job. Without proper self-management you cannot deliver the performance when it matters. I have to be on top of my game daily. WHAT IS YOUR EARLIEST SPORTING MOMENT? I think my earliest sporting memory is getting

3rd in a swimming competition. I was in a primary school at the time. I swam in the back stroke event. I think I still have the diploma somewhere in my drawer. YOUR BEST MOMENT IN YOUR SPORT? Actually it is scientifically proven that the tendency is to remember our worst rather than best sporting moments. There are a number of races that meant a lot to me, like for example winning my first National title, realising that I can go as far in rowing as I want, becoming the 2009 World Coastal Rowing Champion but the most important must the recent win. The two gold medals in the Women’s Pair event at the 2015 Piediluco Regatta in Italy. It took me a lot of effort and hard work to adapt to the new boat, partnership and the situation in general. It was my first international performance in this boat category, I didn’t know what to expect, and I just lined up on the start like and raced as fast as I could. This win was important especially as this year is the Olympic qualification year. FAVOURITE MOMENT OUTSIDE YOUR SPORT? I think it must be my graduation. I like excelling outside of sport as well and I’m driven academically. I feel idle if I don’t engage my brain in some structured/ challenging activity. I have completed a research Master degree at the Institute of Technology Tralee. It was a full time, two year programme. I had to juggle the research work with full time rowing. I managed it. Of course I could not do without the support of ITT lecturers and my family but at the end of the day I wrote every word and I produced a thesis that I am proud of. It was hard and I struggled few times but looking back at it now – it was well worth it.
by Padraig Harnett Padraig is also an experiecned MC and is available for all events. Pat Harnett Events run fundraisers such as Race Nites, Gigs and Fashion Shows and can be contacted on 087 2731321 or at patharnett16@gmail.com
WHAT IN LIFE ANNOYS YOU? Inconsistency, lack of routine and a plan annoys me. I like things that are structured, well planned and executed. My attention to detail is above normal. Sloppy work and carelessness drives me mad. Also I like knowing what I am doing and I always have a contingency plan in place. I work well under pressure and I can adapt to situations as they happen but I always follow a path. NOISE OR SOUND THAT EXCITES YOU? The sound of the boat moving through the water is the most amazing sound I can think of. The water ripples on the side of the boat. It is very distinctive. In my mind it represents work, speed, efficiency, perfection. NOISE OR SOUND THAT ANNOYS YOU? The first thing that came into my mind was a barking dog. Especially in the evening or during the night when I try to fall asleep. It is very hard to ignore and I slept in a noisy places before without a problem. 4 PERSONS, LIVING OR DEAD, THAT YOU WOULD INVITE TO YOUR DINNER PARTY. I don’t know to be honest. I would invite my grandmother. She passed away in 2005. She thought me the importance of believing in myself and she always had a lot of time for me. I wish to tell her about all of my achievements. She would be proud I hope. I would also invite Paul O’Connell (Rugby) (I admire his determination and I think he is a great leader! The team isn’t the same without him on the field). Two rowing legends: Ekatarina Karsten (Rowing) – hopefully she would give me few tips as she is the most accomplished single sculler of all times and perhaps Mike Spracklen (the best rowing coach of all). I would hope he could coach me for a bit after dinner.

Capital Gains Tax Capital Gains Tax (CGT) generally applies to the sale, gift, exchange or transfer of assets such as land, buildings or shares. The current rate of CGT is 33%. The gain is normally the sale price, less purchase price and enhancement expenditure.
I sold bank shares last December and made a gain of €500 do I need to pay CGT? Yes you are liable to CGT but you are entitled to an annual exemption of €1,270 so you should not have a CGT liability. However if you made any other gains and you exceed this amount, then you will have CGT liability.

If I transferred a site to my children, will the transfer be subject to CGT? There is an exemption from CGT, to allow transfers of a site of up to one acre, subject to certain conditions.
I sold a rental property at a huge loss, is there any tax relief? Although there is no immediate tax relief available, the loss can be offset against current, and /or future Capital Gains. The losses can be carried forward each year, until they are used.
I recently sold my home I own and made a substantial profit… CGT doesn’t apply to the disposal of a private home in most cases. Conversely any loss would not be allowable against other taxable gains.
TIPS: → Make sure to keep track of CGT losses; they could ultimately save money. → Annual exemption of €1,270 can be claimed by both spouses, provided disposals are in joint names. → File Return on time, potential 10% surcharge for late filing plus interest.

All 16 contestants received a uniform, certificate, cookbook and specially monogrammed chopping board.
Stephanie Kearney’s winning dish was pan-fried sea bass with gnocchi, asparagus and shellfish bisque and crab spring rolls. I entered because I wanted to find out more about a career as a professional chef and learn more about healthy food and ingredients. I have learned so much about the importance of “Good Mood Foods” in the diet and how it really can make such a difference to your well-being. The mentoring that I received from chef Mark Doe was fantastic and I loved working in a busy professional kitchen.”
The Munster Apprentice Chef project, sponsored by Flogas Ireland and Failte Ireland, is now in its third year. Munster Apprentice Chef project. It is part of a larger three year strategy to target 60 schools in Munster in 2016 and a longer term goal to involve secondary schools at national level. Co-founder Mark Doe added, “Another aim of the project is to promote the advantages of locally sourced food from health and economic perspectives, and how this can also benefit the local economy by keeping jobs in the region. Accordingly, a huge vote of thanks to our sponsors Flogas Ireland and Failte Ireland for their support to date and we’re looking forward to building on its success in the coming years.”

SIZZLING SUMMER BBQ SALMON
WITH MARK DOE
With Summer on its way, it is now time to brush of the barbecue, and start grilling. Recently I was in Copenhagen at the Weber grill academy where I spent 2 days learning how to use my barbecue in other ways rather than just grilling the regular sausage or burger.I learnt how to smoke, grill, roast, bake pizza and even how to stir-fry and make a risotto, all on a barbecue. After attending the course we are pleased to announce that we are one of only 3 cookery schools in Ireland to be an official Weber grill academy and now I will be barbecuing all year round! Try this tasty teriyaki salmon recipe next time your are barbecuing. Smaller pieces of salmon cook nice and quickly and the sugar in the teriyaki sauce gives them a beautiful caramelized flavour. So get barbecuing and happy cooking!
INGREDIENTS For the salmon 4 salmon fillet portions cut into four pieces each, approx the width of your thumb For the marinade 2 tablespoons of white wine, 3 tablespoons of soy sauce, 1 tablespoon of soft brown sugar, ½ small onion, grated on a fine grater, 1 small garlic clove, crushed , Dash of Tabasco sauce, Freshly ground black pepper, 2 tablespoons olive oil 24

FATHER’S DAY
It’s that time of year again, Mother’s day usually happens in March and let’s face it we hear about it in all the adverts and promotion leading up to it from at least January, but with Father’s day it tends to come and go quietly, I disagree with this and I think if your still lucky enough to have your dad with you spoil him and make sure you treat him to something nice, it doesn’t have to break the bank as long as he knows he’s appreciated. Here are some ideas we have found and we have some nice giveaways too.

The Castleisland Vintage Run is returning. For the last 4 years, the run has brought vintage vehicles from all over the country into Castleisland. This year, the run will start at 1pm at the Halfway House and see its way through Farranfore, Currow and Castleisland before getting back to the Halfway House for food and refreshments. The entry fee per vehicle is €20 and all the money goes to Breakthrough Cancer Research. While tractors take up the main bulk, vintage cars and bikes are more than welcome to join. After a fight with cancer in 1999 that led to him losing a lung, Noel O’Connor wanted to help others survive the disease. Thanks to Noel and his team, the previous runs have been a huge success, and have raised over €15,000 for Breakthrough Cancer Research. Hopefully, this year will bring in even more support, while giving vintage vehicle lovers a fine day out. Legal Compliance
CREDIT CARD TIPS The common rule of tips is that they belong to the employees those whom the tips were paid, given, or left for. An employer that permits customers to pay tips by credit card shall pay the employees the full amount of the tip that the customer specified, without any deductions for any credit card payment processing fees or costs that may be charged to the employer by the credit card company. Payment of tips made by customers using credit cards shall be made to the employees no later than the next regular payday following the date the customer authorised the credit card payment. Tips from customers (e.g. service charges in hotels, tips in restaurants etc.) paid to the employer and subsequently paid out to an employee should be included in pay for the income tax week or month in which they are paid out. Question: My staff get tips from customers - some are cash and some are via credit cards. How are they treated under the new arrangements? Answer: Where the tips are channelled through the employer, PAYE/PRSI must be applied to the amount paid (including employer PRSI). If tips are received directly from customers, there is no obligation on the employer to operate PAYE/ PRSI on the amounts received. (The employees are obliged to declare the tips received in their annual return of income). In the case of credit card tips the employer must operate PAYE/PRSI on the amounts of the tips received. Recommendation: The HR Suite would recommend that you assess all the tips received over the last year via credit card and see how much they amount too. In addition we would recommend that you no longer permit customers to give tips when paying by credit card. The HR Suite can provide further advice on this topic. You can reach us on on 066-7102887 .

How To Handle Negative Feedback On-line Social Media Management is not for the faint-hearted. When you manage a business, feedback can sometimes be ruthless. Some businesses hide their head in the sand, you must always, always, always respond! Here’s my advice on how to: Delegate: Never underestimate how many people see a negative comment or review – so delegate responding to one person who can respond immediately and then follow up yourself on what needs to be addressed that caused the complaint in the first place. Always aim for a response time under 1hour. Identify the Type of Issue Not all negative feedback is the same. • Heads-Up: “Hey your website won’t open” This type of feedback is simply an observation on a problem you might have to act on immediately. • Constructive: This type of feedback is usually well intentioned. An example would be, “I can’t buy that dress because you don’t stock a size 12” – this gives allows you to modify certain things in the future. • Disgruntled: People can get nasty on social media, over both big and little things. Generally these people are very upset because of something and they can’t be reasoned with. The best thing to do in this instance is apologize once and move on. • Trolling: This is just an annoyance – block and move on. Respond to Everything You should make a point to respond to all feedback. Simply apologising and offering up a solution can go a long way. Sometimes there are people that are just out to be unreasonable and antagonistic. In this case, I’d apologise once and then opt out of continuing a conversation. Have Patience, Make Changes The number one priority is having patience. It can be easy to dismiss feedback as ill-informed, but keep in mind that the better you handle a situation, the more respect you stand to gain. Even if they’re complaining about something that is their error, take a deep breath, apologise for the inconvenience and move on. Remember once it’s online everyone is watching how it unfolds! Give Your Audience a Chance Your customers are often well-versed in your company and industry. It’s always important to give your audience the opportunity to voice their opinion. Know When to Take It Offline If your conversation starts to spiral, don’t be afraid to send them a DM or a Facebook message instead of letting it drag on in everyone’s news feeds. Some things are best handled behind closed doors. Don’t Take It Personally Don’t lose sleep over this stuff. Social media is destination #1 for negative feedback and complaints, but don’t take it too much to heart. CELEBRITY CHEF NIGHT SUPPORTING PIETA HOUSE
Connect Publications and Kirby’s Brogue Inn welcomed over 100 guests to an evening of fine dining with lots of fun recently where ‘The Celebrity Restaurant’ recently. County Footballers Kieran Donaghy and Barry John Keane both of whom are no strangers to competitive action and running up a sweat for their county on the football pitch, put their cookery skills to the test in the heat of the kitchen, they served up a delicious meal to the diners and the panel of judges who included Pat Spillane Sports analyst, Melanie Harty food consultant, Paul Treyvaud Chef and Cindy o Connor of Pieta House. Menus from both chefs were outstanding including some delicious smoked salmon on a bed of potato salad, to the cod baked in parma ham or ring of Kerry rack of lamb. It came down to the final test and I believe there was only one point in the difference at the end of the night, a feeling both chefs are very familiar with, but in the end it was to be a night for the Narries as Barry John Keane won out the kitchen title, Star of the Rock Kieran Donaghy did not feel hard done by at all and mentioned to the audience that it was nice to see the narries win something this year, so that was just a taste of the fun that was had in the kitchen between these two stalwarts of Kerry sport.

CONNECT Motoring THIS MONTH SUZANNE KEANE HAS BEEN TESTING OUT JEEP’S NEW COMPACT SUV – THE RENEGADE. Designed to compete with the ever growing range of mini SUVs the Jeep Renegade is the smallest vehicle Jeep have ever manufactured. It may be compact but it carries all the trademark looks of its bigger brothers including the 7 slot grille & round headlights and overall has the look of a rugged offroader while being small enough to survive on city streets. On the road it feels like a small car and despite being firm the suspension is smooth. Off road is where the Renegade really shines with 198mm road clearance and 4 wheel drive (optional). The 4 wheel drive system in the Renegade has been developed using technology from the larger Jeep Cherokee and allows for 5 different driving modes – Auto, Snow, Sand, Mud and Rock if you opt for the range topping “Trailhawk” model. Standard equipment includes air-con, alloy wheels, electric windows and a tyre pressure monitoring system. There are plenty of optional extras but the top of the range Trailhawk spec will get you a more powerful 2.0l engine and additional off-roading capabilities. In keeping with its tradition of open roof vehicles (1941 Willys MB Jeep and the Jeep Wrangler) the Renegade will have two “My Sky” open-air roof systems available – both manual and automatic.
Safety wise the Renegade comes with a 5 star Euro NCAP rating and a host of safety features such as 7 airbags and ESP. Blind spot monitoring and a reversing camera are available to order along with a lane departure warning system. Designed in the USA and built in Italy the Jeep Renegade starts at just €22,950 for a front wheel drive version in 5 speed Manual and the top of the range 4 wheel drive model will set you back €38,750.
