Summer is definitely here and while the sun is shining why not eat outdoors? Having any meal with the sun on our backs always seems to taste better, maybe it is the novelty of it for us. I have two recipes here which are easy to make, perfect to share with your family or if you are planning to have a few friends over. Both the Homemade burgers and Greek Spinach and Feta Filo Pie will make any summer meal unforgettable. • 600g Beef mince (Allow around 130g each burger)
• 1 large onion diced
• 1 clove of garlic crushed
• 100g bread-crumbs
1. Cook the onions slowly in a pan with a little oil; add the garlic and a pinch of salt. Allow it to cook for about 4 minutes add the herbs and mix well. Allow this to cool and then add it a bowl.
2. Add the mince, breadcrumbs, mustard, egg and the Worcestershire Sauce. Season well with salt and pepper. Mix it well together. Take a small piece of the mix and fry it on a pan. When it is done taste it and adjust the seasoning if necessary.
Repeat this process until you have discovered the taste you require.
• Spoon of mustard
• Chopped herbs such as thyme, parsley and tarragon
• 1 egg
• Salt and Pepper
• Dash of Worcestershire Sauce
3. Once you are happy with the taste, shape the mix into burgers and place in the fridge for at least 2 hours; this will help to burgers to hold their shape.
Have the bbq. a medium hot, brush the grill with some oil, add the burgers and allow them to cook for about 3 minutes then turn them, every 3-4 minutes until they are cooked (75ºc in the center). Once they are cooked take them off and allow them to rest for about 3 minutes.

• olive oil
• 800g spinach leaves, washed, drained
• 4-5 spring onions, chopped
• bunch of dill, finely chopped
• 300g feta cheese, crumbled into small pieces
• 2 eggs, lightly beaten
• pinch of nutmeg
• pinch of black pepper
• 1 packet of filo pastry, have it thawed out and covered with a damp cloth
• olive oil, for brushing
1. Preheat the oven 190ºC
2. To make the filling, choose a pot that is large enough to take all the spinach. Add the spinach and cook for about 2-3 minutes. Strain any excess water from the spinach and add it to a bowl, add the spring onions, dill, feta and eggs. Mix this all together and season with a little nutmeg and black pepper (no need to add salt as the feta should be salty enough).
3. Brush an oven dish (30cmx 25 cm approx.) with some oil and then place a sheet of filo along the bottom of the dish (you can leave some come up over the sides). Drizzle some oil over the pastry and add another sheet, repeat this until you have about 4 sheets. Spoon in the mixture, place another 3-4 sheets of filo over the mix remembering to drizzle a little oil between each one. Tidy the top sheet of the pie and brush with some oil.
4. Bake this in the oven for about 30-35 minutes.

This past February I spent some time volunteering at an orphanage ‘Hogares Luz y Vida’ - nestled in the foothills of the Andes Mountains in Bogota, Colombia with my daughter Alazne and the experience was life changing.
Nestled in the foothills of Bogota, Colombia is a home and haven for children… those who have been orphaned or abandoned - by parents who simply could not provide… or understand.
made a vow that she would not leave Colombia until every abandoned child was provided with a home and family. Sister Valeriana began her commitment by converting a dirt floor garage into a home for blind children – many with additional compromised and complex conditions – each of whom had been abandoned. Within months, children with various disabling conditions were brought to her doorstep, and she welcomed each one. Her heartfelt desire and devotion was to bring LIGHT and LIFE into the seemingly hopeless lives of these children. It was just after midnight one night when a five-week-old abandoned baby diagnosed with cerebral palsy and countless other medical issues was placed in her care. The hospital physicians had deemed her ”terminal”. However, Sister Valeriana decided to adopt her as well… a second daughter - she named her Rosita. In February 2022, Rosita celebrated her 31st birthday; while Hogares Luz y Vida celebrated its 31-year anniversary. Rosita, Valle, Sister Valeriana and Hogares Luz y Vida - the Home of Light and Life - are testimonies of inspiration, determination, perseverance, and boundless love.
The children in this orphanage, challenged with both birth and developmental anomalies, are part of a steadily growing family of over 235 precious children who do not consider their challenges as limitations. All of this is credit to Sister Valeriana Garcia Martin, a nun originally from Spain, who has devoted over 31 years to creating “home” for each of them - a home based on Biblical principles - where they receive and give affection, dignity, respect, honor, kindness, love… family.
While volunteering in a hospital for the blind in Bogota, Sister Valeriana was distraught over the number of children who were brought to the hospital, struggling with multiple disabling conditions, and frequently abandoned. She adopted a blind, nameless toddler from that hospital and gave the child her own name, Valeriana – Valle. Soon thereafter, she
The orphanage consists of a main home, a farm in the mountains, a home specialising in the care of children with complex additional needs, a school for the local community and a life skills centre.
At each venue, we stepped into the lives and hearts of the 235 children who call this home.
Children and adults who live with such a variety of additional needs; Children who are para- and quadriplegic, children who are deaf and blind, children who suffer unbearably painful lifelong ailments, children with autism,
Children who continue to smile and live life to their fullest no matter what.
Both Alazne and I cannot wait for our next visit.

Fine Gael councillor, Jim Finucane, has been elected Cathaoirleach of Kerry County Council at its Annual Meeting at County Buildings in Tralee today.
Cllr Finucane, who has been a member of Kerry County Council since 2009, is a Tralee-based auctioneer and is currently chairperson of the Kerry Education and Training Board. He is a former Mayor of Tralee and was a member of Tralee Urban District Council for fourteen years.
Speaking following his election as Cathaoirleach today, Cllr Finucane said:
‘It is a tremendous honour to be elected Cathaoirleach of Kerry County Council. We live in and represent a very special place.
‘My focus will be to enhance and protect all that is important to us but, at the same time, drive an economic programme to provide meaningful jobs to re-energise our rural and urban communities.’

The new Kingdom of Kerry Greenways offers locals and tourists beautiful breath-taking views and scenery. It is a welcome safe space for all ages and abilities. The Greenway enables walkers and cyclists the opportunity to explore the stunning landscapes of the beautiful countryside along which the trains travelled many years ago. The Greenway is a shared space and best practice is to respect other users. A few key points to remember when cycling along the Greenway.
On Friday, June 23rd, Cathaoirleach of Killarney Municipal District, Cllr Niall Kelleher officially opened the new Killarney Skate Park ‘Cluiche’.
The new skate park, which is situated in the grounds of the Killarney Sports and Leisure Centre, was developed by Kerry County Council, in consultation with the local skateboarding community in Killarney, and with the Killarney Skateboard User Group.
The €260,000 project was funded by Kerry County Council and the Department of Tourism, Culture, Arts, Gaeltacht, Sport and Media under their Sports Capital Programme. The park itself was designed by Vulcano Skateparks and built by Brown Brothers Site Services Ltd. under the supervision of Kerry County Council.
Speaking at the launch, Cllr Kelleher welcomed the opening of the park, pointing out that it provides a safe, traffic-free environment for young and old to practise their skateboarding, roller-blading, scooter and BMX skills.

Kerry International Film Festival hosted a special preview screening of the film, SUNLIGHT, at Siamsa Tíre Tralee recently,. The screening was followed by a Q & A with writer and KIFF Board member, Ailbhe Keogan and actor, Barry Ward.

People started to arrive from 1.30 and large crowd had assembled by 2.15 when Chairperson Dan Horan welcomed everyone and thanked them for attending. Fr Tom Looney followed assisted by Reverend Jim Stephens and Thomas O’Callaghan with a short service and the bus was blessed and its driver Mike Brosnan from Castleisland cut the ribbon to a very positive cheer from everyone present.
Breda Dyland from Kerry Cancer Support Group said that they were delighted to see so many people attending especially past service users. She was very thankful to everyone who had made it possible for the charity to put this bus on the road and said that the real job of keeping it there now starts. She also thanked the drivers, who were all present, for their dedication to the service and said that it would be nothing without them.
Kerry Cancer Support Group was established in 2007 and has been transporting the people of Kerry, West Cork and West Limerick to hospitals in Cork and Limerick for their cancer related treatments since 2010. Their motto is that “No one should face their cancer journey alone” and having transported over 75% of those diagnosed in the region since foundation they hope that they are living up to this. They also provide information and support to families experiencing cancer and to schools and groups in the region with their different campaigns. Their centre at Maine Street in Tralee is very welcoming and people are always encouraged to drop in to discuss anything relating to their journey. Call 066-7195560 for information.
he team from Kerry Cancer Support Group along with many service users, volunteers and funders gathered at the Rose Hotel on Sunday to officially launch their new wheelchair accessible Cork bus.
As the summer holidays approach and children are out of their normal routines, it is important to still be mindful of ensuring they are brushing their teeth at least twice a day. For two minutes in the morning and two minutes in the evening with a fluoride toothpaste. Introducing flossing is also a great way to build a healthy habit for the future. Although some checkups will be provided by the HSE for children in school, it is recommended to visit your dentist for check up every 6months. Ideally, children should attend for their first check up around age 1, or when the first teeth erupt, so the dentist can give oral hygiene and diet advice. This also ensures the first visit is a positive one and this helps to build the child’s confidence in attending the dentist regularly as they get older.
Regular visits can help to highlight any problems that may be arising early so that they can be treated in a minimally invasive way. The need for orthodontics can also be assessed and an appropriate referral made as necessary. Early loss of the baby teeth can increase the need for orthodontic treatment in the future as there may be a loss of space for adult teeth to erupt.
When talking to your child about their first dental visit it is good to keep the tone positive, tell them the dentist will count their teeth, read them a story about a dental visit. If you happen to be nervous about dental treatment, don’t mention this in front of the children as they can be influenced by this and become nervous also. Try to avoid phrases like ‘Be brave‘ as saying this can sometimes suggest there is something to be frightened off.
Finally, a good diet and limiting sugary snacks and drinks (including fruit juices and fizzy drinks) will help to set your child up for a healthy smile for life.

I am excited and honoured to bring our Innovative Reggio Emilia Inspired Practice to our Montessori Schools in County Kerry through our Casa Dei Bambini, Outdoor Montessori Schools & Gardens. I was selected as one of only 24 Delegates included to represent Ireland at Reggio Children, Reggio Emilia, in Italy. Our Irish delegation was included amongst 406 International delegates from 27 countries across the 5 continents. Organised by Early Childhood Ireland and funded through National Pyjama Day, we were included within the global gathering from April 17th to 21st, the first such event hosted at Reggio Emilia, Italy, since Covid 19 struck. It was a moving and emotional gathering in a magical and inspirational city with a cohort of inspirational people. Malaguzzi says #NothingWithoutJoy and this was an opportunity full of inspiration, awakening of endless possibilities, a deep hope for the possibilities for the future and profound joy.
As Director and Founder of the Mounthawk Montessori School Group , amongst Irish Early Years Professionals and interested sectoral stakeholders and policy makers; our experiences in Italy have brought nothing but inspiration to us .We now look to the future and at how we can merge the best of Reggio Emilia with the best of Aistear, The Early Years Curriculum Framework and Síolta , Quality Framework, in our Montessori Schools, at home in Ireland. On my visits to the Reggio Emilia Early Years environments, abending workshops, conferences, and Ateliers, I found that there was a palpable sense and aura of calm at Reggio Emilia. Within the educational contexts and settings, Children and adults were allowed time space and opportunity to engage in their experiences and projects. There was a feeling of collegiality from the arrival at the settings, until one departed. This has continued at home, within our schools through our Community of Practice, where the generosity of spirit and sharing of Reggio Inspired practice is vibrant. We are Healthy Ireland Smart Start Pre-schools and The Department of Education has awarded us Excellent in all 4 areas, in their Inspection and Assessment of our Early Years Curriculum In Mounthawk & Maureen’s. We have been announced by the All-Ireland Business Foundation as the All-Ireland Montessori School of the Year for the 3rd Year in A Row. We are proud and honoured to share best practice with our children and families through the high-quality early year’s education provided by our teachers in our schools.

American-style razzmatazz, the likes of which has never been seen in Kerry before, will ensure Killarney is a riot of colour and excitement for this year’s eagerly awaited 4th July celebrations.
This will be the landmark 10th year of the festival which will be more spectacular than ever before and the proof of that can be found in the incredibly packed and exciting programme of events lined up.

Festival Chairman, Diarmuid Leen, Killarney Chamber of Tourism and Commerce Events Manager Katy Jacobi and their dedicated committee of volunteers have organised a wonderful celebration to mark Independence Day which, this year, will see great entertainment and fun-filled activities not only on Tuesday, July 4th but also on Monday, July 3rd.
An open invitation has been extended to everyone to celebrate America’s big holiday in Killarney which is a town with a very close association with the US for generations.
The great celebrations will include a gala and colourful parade through the streets, open air concerts and music sessions, an outdoor screening of a movie classic, a bumper street party and so much more.
The festival will get off to a rocking start on Monday, July 3rd when hugely popular local band Truly Diverse will perform at an open air concert at Killarney House and Gardens from 9.00pm to 9.45pm and that will be followed at 10.00pm by an open air screening of the smash hit movie Mamma Mia with the audience invited to singalong to all the favourite ABBA hits.
The gates of Killarney House and Gardens will open from 8.30pm and tickets for the free admission event, which are in huge demand, are available from Eventbrite.
The Independence Day festivities on July 4th will get underway, appropriately, with the traditional raising of the American flag at the town hall with the Mayor of Killarney and the President of Killarney Chamber of Tourism and Commerce presiding at 3.00pm.
The ceremony will be followed by a musical performance by the Three O’s who will deliver a string of finger-clicking classics at Kenmare Place from 3.15pm with all the old favourites from Frank Sinatra, Nat King Cole, Dean Martin and Elvis Presley on the playlist.
Main Street, Killarney will take on a distinctive downtown Manhattan vibe all afternoon with the Statue of Liberty and Uncle Sam forming a perfect backdrop and selfie props as patrons can enjoy the atmosphere with an interactive drum show while street entertainers, balloon artists and face painters will be roaming the streets.
The local sheriff has been tipped off to expect an influx of colourful cowboys on the Tuesday afternoon but he expects them to be on their best behaviour as they join in the fabulous Independence Day party.
Brass bands will be performing on the streets from 6.00pm, a lively DJ will get the street party going from 6.45pm and at 7.00pm will be the great highlight of the Killarney’s 4th of July celebrations with a big parade winding its way through the streets.
It will feature spectacular floats, marching bands, cheerleaders, Disney characters, leather-clad motorcyclists on their dream machines and colourful flag bearers and it really is a visual feast that should not be missed.
The parade will be led by visiting American footballers all the way from Georgia Tech and in attendance will be their star kicker, Castleisland native David Shanahan, a former Kerry minor footballer.
And the celebrations won’t end there as a Beat on the Street, with DJ Brendan Fuller, will keep partygoers on their toes as Killarney soaks up the unique atmosphere of Ireland’s greatest 4th July festival.
The celebrations are organised by Killarney Chamber of Tourism and Commerce with the support of Kerry County Council, Fáilte Ireland and the National Parks and Wildlife Service and with the generosity of sponsors Heineken, Killarney Park Hotel, Great Southern Hotel Killarney, O’Donoghue Ring Collection, GMIB, Reidy’s, The Grand and others.

national school student and most senior further education and training learner. The 91-year age gap between these two learners demonstrated that the ETB’s provision spans the full lifelong learning journey.
Kerry Education and Training Board (Kerry ETB) launched their Strategy Statement 2023-2027 and new brand during a special event held at the Tech Amergin Further Education and Training Centre in Waterville. The strategy sets out the pathway for the organisation's strategic development for the next five years, aiming to strengthen Kerry ETB's position as a leader in education and training provision, focused on the highest quality of learning experiences for all learners across the county.
The Strategy Statement 2023-2027 encompasses five key objectives with the overall aim of enhancing the learner experience, reinforcing organisational cohesiveness and achieving excellence in education and training service delivery. The strategy will be monitored and reviewed, ensuring progress is documented and aligns with Kerry ETB's commitment to maximising educational and training opportunities across the county.
Speaking at the launch event, Jim Finucane, Chairperson of the Board of Kerry ETB, emphasised the significance of the new strategy: "The Strategy Statement 2023-2027 outlines five ambitious strategic goals and related objectives for the next five years to establish Kerry ETB as a leader in education and training provision in the county. This strategy presents numerous opportunities for us to strengthen, expand, and further develop our education and training infrastructure across Co. Kerry."
Launching the Strategy Statement 2023-2027 and the new brand identity marks an essential milestone for Kerry ETB as it builds on a decade of change, growth and development.

Colm McEvoy, CEO of Kerry ETB, addressed the organisation’s development over the past decade and its future aspirations, "Since our establishment in 2013, Kerry ETB has made good progress in developing the organisation in delivering education and training services across the county. We have experienced much change since our establishment in 2013, and the organisation has adapted very well to the everchanging environment, including a pandemic in recent years. With this new strategy, we are focused on the continued development, expansion and refinement of our education and training service provision to meet the needs of learners, promoting the development of a lifelong and life-wide society in Co. Kerry. We are looking forward to implementing the strategy provision over the next five years with the focus on striving for excellence in all aspects of our service provision.”
Kerry ETB is a key education and training service provider in Co. Kerry, employing approximately 1260 staff (c.670 part-time and c.590 full-time staff), with c. 3,100 full-time students, and c. 14,000 beneficiaries of further education and training programmes, including apprenticeships in 2022. The organisation's comprehensive education and training services include three Community National Schools, eight Post-Primary Schools, coordination and administration of youth services, Music Education, and comprehensive further education and training provision, including Kerry College, all supported by corporate support functions of Human Resources, Finance, Capital and Technology.
