YAKWA Honey cookie

Ingredients:

30gsweetriceflour(ormochiflour)(30g=3Tbsp)

1/2tspsalt

40gsesameoil(40g=3Tbsp+1tsp)

VegetableOiloranyoilgoodfordeepfrying

SyrupforDough

1/4cupwater

1/4cupsugar

2Tbsricesyrup

GingerHoneySyrup(forsoaking)

1/2cupricesyrup(jocheong조청)

1/2cuphoney

1cupwater

1/2Tbspgratedfreshginger

Toppings(extra)

1-2Tbspchoppedpinenuts

Koreancheonilyeom(seasaltcrystals)

Makethegingersyrupbymixingricesyrup,honey,waterinasautepanorasmallpot.Turnonheatandkeepmixinguntileverythingis mixed.Bringtoboil+quicklylowertosimmerfor2-3min.TURNOFFHEATandaddgratedginger.Leaveitonthestovebecauseyou willneedtoreheatiteverynowandthenifthesyrupbecomestoothick.

Makesyrupfordough–Inasmallbowl,addsugar,waterandricesyrup.Microwaveforabout30secsandmixuntilsugarmelts completely.Ifyoudon’thaveamicrowave,youcanalsojustheatitinapotuntilthesugarisfullymelted.Setaside.

StarttoHeatOilforfrying–upto130℃(265℉). Makedough–Inalargemixingbowl,addflour,sweetriceflour,salt.Mix.

Addthesesameoiltoabowlwiththeflourmix

Mixandrubtheflourbetweenthepalmofyourhandssotheoiliswellmixedwiththeflour.Keepdoingituntilnobiglumpsremain. Tothesesameoiledflour,addthesyrupfrom2andmixwithaspatulathenwithyourhandsandgatherthedoughtoformaball Shapeyourmold:Forthesiliconmold,about28gsizeofdoughisperfect.Justbrushthemoldwithalittlesesameoilfirstthenpushthe doughintothemold.Pressgentlyandevenlywiththepalmofyourhands.Thenreleasetheyakgwacookiefromthemoldandsetit aside.

Ifyoudon’thaveanymold,rolloutthedoughintoabout1/4inchthicknessthencutintosquares,diamondshapesoryoucanalsousea cookiecutter.

DEEPFRY–StartfryingYakgwaat265℉(130℃)andcontinuefryinguntilthepiecesfloattothetop(whichshouldbeabout6-7minor so).Maintainthetemperaturebecauseyouwanttomakesuretheinsideisallcookedbeforeitstartstobrownoutside.

Onceallthepiecesrisetothetop,turnuptheheatandraisethetemperatureto300–320℉.Keepfryinguntilthepiecesbecomenicely brownedlikebelow.

TakeoutYakgwafromthefryerandletoildrainforafewsecondsthensoakthefriedchapssalyakgwaintothegingerhoneysyrup.

TransferYakgwafromthesyruptoacookierack.Letitdryonthecookierackforacoupleofhourssotheyarenottoostickybuttheyare certainlyreadytoeatassoonastheyarecooled.Optionally,sprinklethetopwithchoppedpinenutsorpumpkinseedsorevensome seasalt!Letitdryandcoolontherackandcompletelycoolbeforeservingorstoringinacontainer.
