This month we look forward to Maifest, an event guaranteed to become an annual tradition. The celebration takes place for the first time in Doha at the InterContinental Doha May 4 to 6. The event will include traditional Bavarian food and the sensational Bavarian band Maybach Gaudi Express. Live music continues to be an ongoing trend in Doha, with swing legend Matthew vanKan livening up the Spice Market in W Doha May 1 with his sensational act. For this month’s food roundup, we bring you the fastest and greatest lunches in town with our express lunch roundup. We sampled course after course of amazing lunchtime treats so that we could fill you in on the best reasons to escape your office for a quick lunch. We also faced new food frontiers at the high-class Chinese restaurant Tse Yang, a dining establishment that manages to elevate the normally-greasy food into fine cuisine. Our sports section is jam-packed, as usual, with information on events ranging from the 2011 Qatar Junior Open to the upcoming handball championships in Doha. On the fashion front, we asked some VCUQ fashion design grads to put together daytime and nighttime looks for us. These bold fashion pioneers didn’t disappoint, with looks that manage to be both daring and wearable. May is our How to Do Anything Better issue, so this magazine is chockfull of tips for everything on how to plan a great party to how to fight cellulite (the answer is much easier than you think!). We hope these handy hints for life will make your life a little easier and motivate you to learn new things.

QH TEAM If it’s true that April showers bring May flowers, then we are in for a floral frenzy this month! While last month’s mild weather was unusual, things are definitely heating up for the month of May, with plenty of hot events to look forward to, such as the first-ever Maifest at InterContinental Doha. Did you know Maifest celebrations often include dancing around an actual maypole, decorated with ribbons and food?

QH Regrets: In our April 2011 issue we incorrectly stated that Ahmed Hamada El Sayed will be the first male to graduate from VCUQ's fashion design program. In fact, fellow male fashion design student Vanja Smitran will also be graduating from the program this year. Both Smitran and El Sayed are tremenduously talented and we wish them all the best as they start their careers. QH regrets the error and apologizes for any confusion it may have caused.

QH RECOMMENDS Femme Fatale Is it cliché to say Britney’s back? Cliché or not, Britney Spears is definitely out to prove she’s still got it, with her latest CD Femme Fatale. While we’ve lost track of how many comebacks Brit has made, we instantly forget she ever left the music scene with her latest album. A funky mix of pop, dance and sick beats, we are absolutely in love with her latest foray back into the spotlight. This upbeat album is the perfect anthem for a night out on the town, with songs that make you want to move your body. Standout singles include Till the World Ends, Hold it Against Me, Inside Out and Criminal.

With intense cocoa flavour in just every bite, we can actually get our daily fix of chocolate in one piece. Swing sensation Matthew vanKan wowed audiences at the W Doha during his shows last month. An Evening with Matthew vanKan and Friends, the artist’s phenomenal show in the Great Room, featured a 10-piece swing band, a violinist, and the fabulous Tina Jackson. If you missed his legendary performances last month, check him out at the Spice Market at W Doha May 1 during an intimate show. QH: How did you get your start in the music industry?
QH: What attracted you to the world of swing?
MvK: I've been singing for as long as I can remember but my first professional job was playing Aladdin for a live Disney show in London and then Paris. I sang A Whole New World whilst floating above stage on a magic carpet with Princess Jasmine.
MvK: The songs of this era are like poetry to music. Life was simpler in those days and the songs reflect a less complicated reflection on life. The lyrics and melodies are timeless and I wanted to be a part of that.
QH: How would you describe your music style and sound?
QH: Who are some of your musical influences?
MvK: Swing, jazz and ballads from across the decades‌ It's a celebration of some of the greatest music ever written. I think it was Sinatra that said 'If it looks like hard work then you're not working hard enough.' Swing should look fun and easy. I'm still working at it but I have definitely found my passion in this genre.
MvK: My mom used to listen to a lot of country music so I was inspired to learn to play guitar and most of John Denver's song book. I listen to a lot of different artists from Josh Groban, to The Script, Lady Gaga and Bruno Mars but Nat King Cole, to me, is one of the greatest singers of all time.

QH: Tell us about some of your most memorable performances. MvK: I recently sang at The Ivy Club in London for a charity event with the resident pianist Joe Thompson. We didn't rehearse; I'd just suggest a song and he'd play. We had a lot of fun that night. I sang lead vocals with a 200-strong gospel choir a few years ago, which was amazing. The power of all those voices behind you is just incredible. There's a great jazz club in Knightsbridge, London called Pizza On The Park where I was invited up on stage during a show. The audience there are real music lovers and you could hear a pin drop they were so quiet. I sang Mr. Bojangles and got so lost in the moment I had a tear in my eye at the end. Last week I was invited to sing at a birthday celebration and during the course of the evening a gentleman called Peter Phillips asked me if I would sing the song Smile. Peter's father John Turner Phillips wrote the lyrics of Smile in 1954, along with Geoffrey Parsons, to music composed by Charlie Chaplin back in 1936. I have been asked to record my version for Peter and his wife when I get back to the U.K., which will be a great honour.
QH: What are some of the challenges you face as a musician? MvK: Memorizing words! I've learnt so many songs over the years I think I'm running out of storage space in my head for new lyrics! Also, the bigger the shows become and the larger the audience, the greater the nerves but they're quickly forgotten once I'm on stage. QH: What are your plans for 2011? MvK: I have some more overseas work coming up - mostly private parties in fabulous locations. I'm going to start writing again too. I've been too busy this last year but I'd like to try and put together a selection of new songs, with beautiful lyrics, strong melodies and all recorded live without using any of the newfangled digital technology used by artists these days. I'd also like to collaborate with some DJs, mixing some classic songs with dance music. Cafe del Mar Ibiza meets the Rat Pack!
QH: Where would you like to be in five years? MvK: I'd like to be based in London close to my nephew and family but travelling world-wide for shows. I hope my performance at the W Doha will not be my last. If I'm singing, I'm happy and the opportunities and bookings are coming in thick and fast. I'm really living for the moment and want to enjoy every minute so I'm not really thinking ahead that much – I'm too busy thinking about right now. QH: If you weren’t a performer, what would you be doing? MvK: I studied tailoring years ago and used to design men’s clothes. I'd like to explore that possibility again in the future. Property development is another passion. I have renovated two houses now and would like to do more. It's very hard to imagine not being a performer though and even without any kind of success there's always a platform somewhere – local open-mic nights, amateur shows... the shower!

DID YOU KNOW? Maifest, an ancient festival dating back to the 10th century, used to revolve around an actual maypole, which villagers would put up in the local square and decorate with sausages, cakes and multi-coloured ribbons. Villagers would then dance around the maypole, believing that it would bring good luck and wealth. Maifest has since evolved into a modern-day celebration in Germany, Austria and other countries. While many Maifest parties still involve a maypole, bonfires, May punch (also known as “Maibowle“) and plenty of amazing German delicacies, such as breads, sausages, pickles and summer salads, also play a big role in the celebrations.

Rock Karaoke Before there was Rock Band, there was karaoke. Possibly the easiest way to embarrass yourself publicly, karaoke is also the best way to claim your 15 minutes of fame without resorting to posting videos on YouTube. Anyone can do karaoke, but some do it better than others. Here are some ways to rock the mic with confidence. Picking the right song is usually the difference between being famous for your karaoke prowess and being infamous for making people’s ears bleed. Upbeat songs are more fun for everyone, as slow ballads usually have more instrumental parts and awkward silences. While you don’t have to know every word, being familiar with the lyrics usually helps with your confidence and style. Cheesy but popular songs are the best picks. Classic karaoke songs that anyone can rock include Gloria Gaynor’s I Will Survive, Madonna’s Like a Prayer, Journey’s Don’t Stop Believin’, Tiffany’s I Think We’re Alone Now and let's not forget the Frank Sinatra classic My Way. If you’re nervous, do a duet with a friend or bring a group of friends on stage with you. Not only will you feel more comfortable with a group, you’ll be able to interact with each other and the audience during instrumental parts or guitar solos. The most essential part of being good at karaoke is your attitude. Go up there with a confident smile and don’t take yourself too seriously – it’s karaoke, not an American Idol audition. Have fun and sing your heart out!
Throw a Great Party Hosting a fabulous party doesn’t have to be stressful. Having guests over should be a cause for celebration, not a reason to rip your hair out. Here are some simple tips for ensuring your party goes according to plan.
THE GUEST LIST Decide immediately what kind of party you would like to have. Are you picturing an intimate dinner with your closest friends or a lively shindig with everyone you know?
THE THEME Is this party a special occasion, like a birthday or holiday? If so, plan accordingly.
THE INVITATIONS Your invitations should match the style and size of your party. If you’re having a few friends over for drinks and appetizers, a simple phone call or Facebook event invite is fine. If the event is formal, handwritten invitations are best. Send out all invitations at least two weeks prior to the event to allow people time to plan your party into their schedule.
THE FOOD Sit down dinner versus appetizers is one of the biggest decisions you will have to make. Again, the theme and size of the party should play a role. It’s easier to plan a formal meal if the party is less than 10 people. Any more than that and trays of appetizers are the best solution. If you hate to cook or simply don’t have time, don’t be afraid to get a caterer or buy prepared appetizers.
THE MUSIC Music is usually the easiest way to bring a lively atmosphere to any gathering. For big events, a live band is always a great choice. For small gatherings, play CDs or use your iPod to play a preset list of songs. Soft, slow music is good for formal events, whereas more casual soirees require a carefully planned mix of up-tempo songs and all-time favourites.

VIRGIN RECOMMENDS
Here’s how you can find out what’s hot this month: QH brings you the top selections from Virgin Megastore. And watch for the QH heart in stores!
21 ADELE The wait is finally over for 21, the sophomore album from British singer-songwriter Adele. The album is the follow-up to Adele’s critically acclaimed, Grammy award-winning debut album 19 (both albums are named for her age at the time the songs were written). Recorded in Malibu and London, 21 gave ADELE the opportunity to work with such luminary producers and songwriters as Rick Rubin, Paul Epworth, Ryan Tedder, Dan Wilson and Fraser T. Smith, as well as continuing to work with Francis “Eg” White and Jim Abbiss.
Doo-Wops & Hooligans Bruno Mars Bruno Mars has one of those voices that makes you want to lie back with your eyes closed and just enjoy. His latest album, Doo-wops & Hooligans, features 11 tracks, including the hit singles Grenade and Just the Way You Are.
Goodbye Lullaby Avril Lavigne
Recovery Eminem The album won’t be perceived as Eminem’s best album. But there are significantly more highlights here than on either of his previous two. Contributions from Rihanna and Pink work surprisingly well, providing a different flavour to his always arrogant and insulting lyrics. In this work, it is noticeable there is a more genuine sound than on previous albums.
22
Avril Lavigne’s new work, Goodbye Lullaby, sees her embracing her maturity and dealing with some potential grudges in her heart. The album is full with break-up lyrics, acoustic guitars and mid-tempo musings. Lavigne manages to communicate some real feelings and her music is still as powerful as it has always been.
The Very Best of Gipsy Kings Gipsy Kings There's very little doubt that the Gipsy Kings are good at what they do. The band has become the signature sound of pop-oriented flamenco style. Even if you don’t speak Spanish, their songs don't require knowledge of the language to feel the power.

The greatest strength and perhaps the very own uniqueness of the Qatar Music Academy is its diversity – be it in the variety of music and musical instruments that are taught, or the synergy of the musical elite who offer their priceless expertise and unique touch. The inimitable bond between language and music is what I wanted to demonstrate when I took up this assignment as the principal of QMA,” Al Heeti said. QMA’s vision is to be the champion of musical excellence and guardian of Arab and Western music traditions. “A nearperfect balance between the intake of Arabic versus Western music is what we are striving to achieve at the academy here,” said Stephen Stocks, head of marketing and public relations at QMA. “So we encourage all our students to take an equal interest

Located in the Katara Cultural Village, QMA seems to add to the glory of this remarkable cultural society that was build exclusively to promote arts and heritage. The academy is situated next to the premises of the Qatar Philharmonic Orchestra, making its location even more apt, as most teachers are members of this distinguished ensemble. More than 27 musicians are employed in the academy to impart their musical knowledge to two major programs. The preparatory program for children aged eight to 10 years offers an intensive series of one-on-one music sessions conveniently scheduled after school hours. The Music for All program, on the other hand, is intended for all ages and its main goal is to foster music appreciation in the wider community. As the title of the program suggests, variety is the spice of life! Anyone can join, from toddlers to adults or from amateurs to professionals. Though the QMA’s current focus is training students on classical Arab instruments such as the Ó‘ud, Nay and Buzuq, Boulus plans to expand the musical palate by creating a research-oriented team that would focus on bringing in musical influences from within the immediate and neighbouring cultural environments around Middle East. HOW TO ENJOY ARTS AND CULTURE
HOW TO PRETEND YOU UNDERSTAND ART
By Dale Whitice

Does the thought of being invited to visit a museum, attend an opera or listen to classical music make you smile with delight? Or do you quickly come up with a believable excuse to avoid attending such events?
A lucky few in this world are blessed with a natural gift for recognizing art. They can tell that a coiled piece of rope is not merely a discarded rope – it is art! They can look at a painting of coloured blobs and see the beautiful vase, or lady, or whatever it is supposed to be.
Many of us have come to view art and museums as lacking any relevancy in the fast-paced, digitalized, Lady Gaga world we find ourselves living in. Museums, operas and classical music have come to be viewed by many as things people did when they had nothing else to do. Nothing could be further from the truth. With museums popping up all over Doha and the Qatar Philharmonic Orchestra playing concertos almost every week, we are blessed to have an abundance of opportunities to learn how to enjoy them.
Sadly, many of us are not blessed with such a gift. To us, a paint blob is just a paint blob. But to say that to those who truly appreciate art would make us seem like unsophisticated hicks who wouldn’t know good art if Picasso clobbered them over the head with it. To avoid such awkward scenarios, try these handy tips for pretending you know/understand/care about art.
Under the guidance of the Qatar Museum Authority, Doha is home to the Museum of Islamic Art, Mathaf: Arab Museum of Modern Art and the National Museum of Qatar. These museums bring to light thousands of years of culture that define the past and present and provide insights to the future. The Qatar Philharmonic Orchestra and Doha Community Orchestra give us a chance to enjoy one of the greatest gifts to humankind – music. To get the best out of these cultural events: • Be informed. Research the production online before you go so you are prepared for it. • Dress to fit. It is appropriate to dress elegantly for these events as a sign of respect and willingness to merge with the traditional atmosphere created. • Arrive early. This will allow you time to relax and be seated before the function starts. • Enjoy without disruption. Cellphones are never appropriate, nor is flash photography. • Pass on the experience. Share your experience with your friends and colleagues so they also feel comfortable attending a new cultural experience in Doha. Teach your kids early so they learn to appreciate the joy of culture, music and the arts.

• Go to a museum and grab a guidebook. Loudly reference a sentence from it if anyone should so much as look at you as if you are in the wrong building. • When pretending to admire paintings, remember these three key moves: step back, frown and sigh. Look at a painting, step back slightly from it as if you are studying it, frown as if you are critiquing it in your mind, and then sigh as if the very sight of this art wounds (or speaks to) your soul. • Buy one of those adorable buttons at the gift shop at Mathaf that say “art is not one-sided.” This will show you a) care about art; b) have been in a museum (or at least the gift shop); and c) have good taste in buttons.

Language Bridges is a program that aims to teach basic English language and literacy to migrant workers and labourers in Qatar, said founder Julie Zawadzki. Zawadzki has a background in language teaching. When Zawadzki moved to Doha, she realized that there was a big portion of the population that were completely isolated from the rest of the country because they didn’t speak English.

Language Bridges focuses on helping people learn to communicate in everyday situations, such as going to the bank or store. “The ability to communicate properly and the ability to communicate in English is really the key to being able to participate in society,” Zawadzki said. To date, they’ve had more than 120 students in classes led by volunteer teachers, primarily university students. The program has received a lot of strong support from Carnegie Mellon University, such as assistance with the logistics and materials for the program, said Zawadzki. Language Bridges is proving to be very popular. A lot of the students who attended the first level of classes are already on their second round of lessons. The classes, which are free for students, take place in labour camps or site offices. The language classes have benefited both the students and teachers. “One of the effects of the program that I didn’t anticipate is the effect on the volunteer
teachers,” Zawadzki said. “For them it’s been a great opportunity for the first time in their lives to meet these labourers and understand their lives and their backgrounds better. Likewise, for the labourers, it might be the first time they get to meet a Qatari. They’re very appreciative of the effort and the relationship that is built.” The 28 volunteers come from a variety of countries and represent eight different nationalities. The volunteers work in teams to prepare the classes together, so that if one of them can’t make it, the other one can handle the class. “We have more volunteers than classes,” Zawadzki said. The program is scheduled to continue after the year of World of Difference funding is over. Zawadzki is currently looking for corporate sponsors and volunteers for the Language Bridges program. When she started the program, Zawadzki didn’t realize how big of an impact it would have on the community. “What’s been good is that the organizations that have hosted the program who were maybe in the beginning a little skeptical are now committed to running through the programs,” Zawadzki said. “I’ve got the satisfaction of the feedback from the student in the classes. And it’s been a really great experience working with the volunteers and seeing their commitment and passion to making a difference.” For more information about Language Bridges, contact Julie Zawadzki at world_of_difference_jz@gmail.com.
World of Difference recipient Mohamed Kamal is a 20-year-old Qatari student who dedicated his gap year to the World of Difference program. His project focused on raising awareness in Qatar about the impoverished people living in the country. People in Qatar often do not realize that there are people in the country living below the poverty line, said Reem Al Nabti, a student volunteer who worked with Kamal on his project. “These people don’t have documents and most of them don’t go to school; most of them just have low, low income jobs. They live in an area of Qatar that no one really knows about or cares about,” Al Nabti said. “[Kamal’s] number one motivation was that no one knew about these people in Doha.” See the Other Side also focused on the importance of education. It is estimated that two-thirds of children living in impoverished areas do not go to school because they cannot afford it, said Al Nabti. See the Other Side partnered with Reach out to Asia (ROTA) to sponsor four children to go to school. Al Nabti volunteers, along with about six others, to help Kamal with the project. The volunteers are all students from Education City. Kamal hopes to sustain the project after the one-year mark is up. See the Other Side has also started a youth service program through ROTA. Kamal hopes students from the community will help run the project. For more information about See the Other Side, contact Mohamed Kamal at worldofdifferencekamal@gmail.com.

Lunch Roundup
By the QH Team
QH has ordained 2011 the Year of the Roundup. This means we’ll be scouting out restaurants, coffee shops, cafés and hotels all over Doha to find the best of the best in the food and beverage industry. This month we bring the best express or business lunches in Doha. You’ll never eat at your desk again after trying these quick but tasty lunches.
Al Hubara at Sheraton Doha
Possibly the fastest way to lunch with style, this lunch buffet features mainly Arabic dishes. To start, fill your plate with a heaping helping of their delicious hummus or moutabal and a hearty amount of fresh bread. A quick way to fill up without consuming a ton of calories is sampling the wide variety of sushi or trying some shrimp cocktail. Other great hot starters include the vegetable samosas and lamb kebbeh. For main courses, the beef Wellington, roast duck with orange sauce, ouzi, beef goulash and lamb stew will satiate you without overstuffing you. The standout main dish is the hammour sayadia sauce, which is mild but filling. There is a wide variety of desserts available, including sweet coconut macaroons, a variety of fruit and a pleasantly mild crème brulee. The ultimate comfort dessert is the warm, nutty um ali. Overall, if you are in a hurry and don’t want to be tied down to any specific dishes, this buffet is a great option with lots of variety and can be timed the way you choose.

Wok Mee
at Mövenpick Tower and Suites
This business lunch offers a wide variety of cuisine from Indonesia, Thailand, Vietnam and China, mixed together to showcase the best the Far East has to offer. Start your meal with some hot, crispy Wok Mee spring rolls, available in vegetable, chicken or duck, the fresh and crisp green papaya salad, or the mildly sweet Tom Kha Talae. While all the starters are great, the Tom Kha Talae is by far the best appetizer. For your main course, dive into a massive bowl of roast duck and Chinese noodle soup. The broth is rich enough to flavour the entire dish but not so strong that it overpowers the taste of the duck. Another great alternative is the tasty wok fried chicken with ginger, black fungus mushroom and red chilli. It’s full of flavour but not too spicy. To cap off your delectable feast, indulge in the sinfully sweet pandan and coconut crepes with watermelon granite. For something just as delicious but not quite as saccharine, try the yummy almond jelly with mixed fruits and lychee syrup.
Spice Market
The Cellar
This express lunch features southeast Asian street food with a fusion twist. Sous chef Darsin Joseph shows off his Malaysian roots with a wide range of delicious nibbles, including the best of the best from the restaurant’s previous bento box express lunch and other amazing items from the restaurant’s regular menu. The slightly sour chicken and coconut milk soup is only one of many phenomenal starters. Other fabulous appetizers include the tender and juicy charred chilli-rubbed beef skewers with Thai basil dipping sauce and the spicy Thai fried chicken wings with mango and mint. The wings, possibly the hottest offering at Spice Market, have a lovely lingering spiciness that won’t cause smoke to pour out of your ears. There is also a great range of entrees, including a soft, lightly grilled rack of lamb with a powerful smoked chilli glaze and herb puree, crispy, moist hammour with Malaysian chilli sauce and Thai basil and melt-in-your-mouth ginger braised short ribs, served with mild egg noodles in an aromatic broth. To cap off your one-hour express lunch, try the sensational Jasmine rice pudding with passionfruit or mango sorbet. If homemade ice cream is your thing, a must-try item is the Vietnamese coffee ice cream or the matcha green tea ice cream, served in an adorable takeout carton. Coffee lovers will go nuts for the tart chocolate and Vietnamese coffee tart with condensed milk ice cream.
This express lunch offers an array of quality cuisine, beautifully presented, in a timely manner. Guests have a choice of two or three courses but with choices this tantalizing, you’ll be tempted to do all three. For starters, try the fresh, tangy ceviche of hammour and salmon with crispy garden greens, a filling treat that is so full of flavour it can almost be a meal in itself. If you prefer beef, try the air dried beef and rock melon. The salty beef, the closest thing you can get to prosciutto in Qatar, is perfectly paired with the slightly sweet mango. For something more traditional, try the sliced tomatoes and mozzarella cheese with pesto dressing, a nice, light treat that is always satisfying. For main courses, a sure bet is the grilled hammour on vegetable julieene with lemon butter sauce and vegetarian raviolis. This fish, crispy on the outside but oh-so-soft on the inside, goes well with the tender ravioli. On the lighter side, the papaya salad with grill Australian Black Angus beef medallions offers juicy meat and pure flavour that isn’t overwhelming. Another good option is the grilled baby chicken with baby roasted potatoes, served with barbeque sauce. This huge portion of chicken is cooked just right, with a slightly smoky barbeque flavour. Afterwards, enjoy the restaurant’s legendary mango cheesecake, a soft, full-flavoured piece of heaven. Other delightful desserts include the sorbet and the warm chocolate cake with vanilla ice cream.
at Oryx Rotana Doha
at W Doha
Mykonos
at InterContinental Doha
This deliciously Mediterranean business lunch features the best of the restaurant’s regular menu. Enjoy a quick bite while enjoying the view from Mykonos’ patio for a lunch that is yummy, fast and mentally healing. To begin your meal, try the dense but delicious quiche, a crispy tart filled with broccoli, chicken and winter salad. Other wonderful starters include the caprese salad, consisting of sliced tomatoes and aged mozzarella with basil pesto, and the hearty Greek salad, full of thick hunks of feta cheese, fleshy kalamata olives and caper berries. For main courses, dig into the warm, cheesy mousaka, a filling dish that includes layers of potatoes, eggplant, minced meat and béchamel sauce, or the al dente mushroom risotto, which is full of gooey cheese without being overly creamy. Pasta lovers will enjoy the penne al tonno, penne pasta paired with tuna, basil, caper berries and fresh tomato sauce. While you have your choice of two or three courses, you’ll be missing out if you skip dessert. Lap up the sensational Greek coffee crème brulee, served with Madagascar vanilla ice cream and chocolate syrup, or the airy cheesecake, served with raspberry coulis. For something on the lighter side, sample the fresh fruit salad with tart lemon sorbet.

Lunch Roundup
Il Teatro
at Four Seasons Doha
Al Dana
Sharq Village and Spa
This business lunch is ideal for those who appreciate really amazing seafood but can also be enjoyed by those who prefer to explore other options. For starters, try the seafood tomato soup or salad of the fishermen with mussels, salmon and prawns for a tasty seafood-based treat. But if you really want to indulge in incredible creatures from the sea, try the crispy calamari and tartar sauce. The calamari is cooked to perfection, crispy and not at all soggy. If you do not eat seafood, the staff will be happy to accommodate you with a lovely spring salad. For main courses, a hearty choice is the chicken breast and mashed potatos with gravy sauce, while the goat cheese and eggplant wrap with spring vegetables is a lovely vegetarian option. But the ultimate main dish is the grilled hammour and steamed vegetables with lemon butter sauce. This light, flaky fish has a slightly smoky taste, nicely complimented by the lemon butter sauce. For dessert, you can’t go wrong with the chocolate moelleux and vanilla duo or the fruit cup but you won’t want to miss out on the lemon zest and mint crème brulee. This surprising variation on the classic dessert is fresh, fun and extremely yummy without being too sweet.
46
The restaurant’s espresso lunch changes weekly but the constantly evolving menu always promises delightful French cuisine. Amazing appetizers include “the three bruschette,” a lovely plated bruschetta featuring goat cheese, Tuscany chicken pate, Portobello mushrooms and pesto, plus a tasty side salad with a sensational vinaigrette. The mozzarella and buffalo starter is a wonderful surprise, with the softest mozzarella we’ve ever sampled and sensational peeled tomatoes. The chickpea soup and whole wheat Maltagliati pasta with black truffle oil is light and comforting. For the main course, try the penne with beef bacon, stewed onions, fresh tomato sauce and grated ewe cheese. The beef bacon adds a wonderful smoky taste to the dish and compliments the perfectly cooked pasta. For a hearty meal, try the grilled chicken with mustard and spicy bread crumbs, sautéed bokchoy and salmoriglio herb dressing. The chicken is warm, comforting and slightly spicy. For something on the lighter side, try the baked grouper with rosemary and smoked sea salt, tomato caviar and light sundried tomato emulsion. Desserts are a must here, with amazing choices such as the slightly sweet traditional tiramisu, the fresh and unique apricot tiramisu or the classic raspberry and pistachio cheesecake. Those with a sweet tooth will enjoy the figs in raspberry sauce served with pistachio and orange brioche bread and butter pudding.

French By Sydnee Bryant
Les Deux Magots is more than just a fine dining establishment; the French restaurant is an institution, steeped in a rich history dating back to its flagship branch in Paris in the 1800s. QH looks at the roots of this elegant restaurant, in addition to sampling some of its current triumphs.
S
ince 1884, Les Deux Magots has been a haven for artists, writers and creative types in old Paris. Located in St-Germain-des-Pres, the French café was a familiar hangout for creative legends such as Ernest Hemingway, Oscar Wilde and Picasso. The landmark was as well known for its customers as it was for its strange name and amazing menu. Today, the café remains an institution in France and gives the newest Les Deux Magots, located at The Pearl-Qatar, quite a reputation to live up to. The restaurant had their soft opening in August 2010 and will officially launch May 20. Les Deux Magots will celebrate their official opening with a romantic, intimate gathering at the restaurant, complete with amazing food and a French singer for entertainment. At first glance, Les Deux Magots is an intimidating establishment. With its fancy, French name, gleaming windows and elegant architecture, the restaurant seems like it might be too formal for anything less than a special occasion. But if you step inside the romantically lit, cozy space at night, you realize that the restaurant is the ideal place for an intimate dinner. During the day, the sunlight streaming through those fabulous windows completely changes the atmosphere, transforming the restaurant into a sunny, casual space for a long lunch with coworkers or afternoon tea with your closest friends.

The restaurant’s vibe changes depending on the time of day, but one constant remains: incredible, authentic French cuisine, prepared by executive chef Charbel Chalouhi. Chalouhi arrived in Doha from Lebanon three months ago. In the past three months, Chalouhi has transformed the menu at Les Deux Magot into a wonderful mix of classic French dishes and incredibly appealing meals anyone can appreciate. Each meal starts with warm, nutty bread that is so soft it almost melts in your mouth. The restaurant is famed for its soup and presents several excellent choices. The soupe a l’oignon gratinee (French onion soup) is a must. The slightly sweet soup is delicious and filling but the flavour is subtle and not too cheesy. The soup crème d’asperges (asparagus soup) highlights the taste of asparagus and takes the vegetable into another dimension. For appetizers, the feuille d’aubergine (eggplant with mozzarella cheese, pesto, bread and tomato sauce) is excellent, with a light, balanced taste. The tartare saumon (fresh salmon, smoked salmon, ginger, parsley, onion, garlic and dill, accompanied by green salad) is tangy, fresh and light, with a creamy sauce that goes perfectly with the salmon. The salad Magot (mille feuilles, fresh mozzarella, tomato, rocca, pesto sauce, zucchini, lettuce) consists of tangy pesto sauce and soft

veggies slipped between layers of flaky phyllo pastry. The dish is crunchy, filling and tasty, the perfect appetizer or snack. There are many choices for main courses, ranging from beef and lamb to salmon or duck. The executive tournedos (grilled tenderloin, grilled vegetables and baked potato) is exquisitely served atop a wooden platter. The thick, succulent tenderloin is soft on the inside, with a slightly crispy outer layer. The meat is juicy and so tender that a knife slices through it with ease. The grilled vegetables are surprisingly delicious, roasted to perfection and slightly smoky. Another excellent main course is the carre d’agneau (rack of lamb, grilled potato, grilled vegetables). The taste of the juicy lamb is nicely accented by the delicate sauce and perfectly accompanied by the crisp, grilled slices of potato. Where French cuisine really shines is its desserts, and Les Deux Magots is no exception. The dome choco orange (chocolate mousse with orange flavour, orange sauce and chocolate sauce) is creamy, rich and oh-so-decadent. This delicious dome, encased in a chocolate shell, is the ultimate dessert for chocolate lovers. The strawberry cheesecake is fluffy, with an amazingly soft crust and incredible strawberry sauce. This fresh-tasting cheesecake is anything but bland. But the restaurant’s top dessert has to be their crème brulee. The softest crème brulee ever to touch our lips, we adore the thin, delicate caramelized sugar crust sitting atop the creamy vanilla bean custard. The vanilla taste dominates the dish, resulting in a strong crème brulee with an irresistible texture. If the restaurant’s current “soft opening” phase is any indication of future success, the restaurant’s official launch will only serve to motivate the restaurant to reach elevated levels of excellence. 49

Chinese Food at its Finest By Sydnee Bryant
Chinese food, or at least the Chinese food we’re used to, can be a fickle mistress - it tastes good but not great; it fills you up quickly but leaves you feeling hungry again 30 minutes later. We thought all Chinese food followed these patterns until we tried Tse Yang, the fine dining Chinese restaurant at The Pearl-Qatar.
W
alking into Tse Yang is like walking into a glamorous Asian dream world, one filled with detailed art, high ceilings, beautifully set tables and stunning chandeliers. We sit directly beneath the massive red Bonbori chandelier, a custom-made chandelier created from 9,000 red Chinese tassels. It is impressive and almost overwhelmingly stunning.
Tse Yang is not your average Chinese joint down the street. The menu is not filled with sweet and sour chicken balls or any Americanized Chinese dishes. Instead, it is fine dining at its best, with a menu that boasts an array of high-class Chinese dishes showcasing the most wonderful food the region has to offer. Tse Yang first opened in Paris in 1980. Outlets in New York, Geneva and Munich followed, before a branch finally opened in Qatar at The Pearl-Qatar in June of 2010.
When we first glance at the menu, we realize it is massive. We know we cannot tackle it all. But we are determined to sample a wide variety of dishes. We begin our meal with delicious deep-friend yam croquettes with minced chicken, pan-fried radish cake with smoked duck and bird’s nest soup with crab meat. The croquettes are flaky and warm, the perfect start to any meal. The radish cakes are a unique dish, nicely matched with the smoked duck. The slightly sour soup is a delicate dish with a nice consistency, a great find for anyone with adventurous taste buds. We also sample the steamed shrimp dumplings “Har Kaw.” The shrimp is fresh and cooked just right, while the dumplings manage to remain perfectly firm. The portions are fairly big, and we wonder aloud how we will handle what is sure to be a massive feast.
For my main course, I decide to be more adventurous than I normally am when it comes to ordering food. While I usually don’t like duck, I want to give it a second chance. I vow to tackle the Tse Yang Signature Crispy The restaurant’s name refers to a part of Beijing’s Forbidden City but the dining establishment is beautiful Peking Duck. However, I get far more than I bargained for when they bring out an entire duck, cooked to crispy and welcoming. The walls are adorned with artwork and the room contains several unique sculptures. Strong golden perfection. Normally, one duck is meant for two to three people; however, the kitchen staff generously reds and bold purples fill the room with colour, from bring out a whole duck so that I can share with my the elegant table settings to the splashy chandeliers. Mirrored walls separate the main dining room from the dining companions. The first serving of the duck is a memorable experience. The server carefully carves off reception and bathroom areas, respectively. The room itself is a piece of art, carefully designed and decorated the crispy skin of the duck and folds it into traditional pancakes with cucumber, spring onion and hoisin sauce. to reflect the Tse Yang esthetic while pleasing critical eyes. But the room is not stuffy or pretentious; instead, The duck skin is juicy and full of flavour, while the hoisin sauce compliments the duck nicely. The duck pancakes it invites guests in with its warm tones and big tables. 50

are so good that I stuff pancake after pancake in my mouth, forgetting that there is more to come. After a round of tasty duck pancakes, I am given a choice for my second serving of duck: wok-fried sliced duck with black pepper sauce, stewed rice vermicelli and shredded duck, or fried minced duck and vegetables, served in a lettuce wrap. I decide to try the wok-fried duck. A huge platter of delicious duck coated in a spicy black pepper sauce soon arrives in front of me. The duck is tender and filling, with plenty left over for lunch the next day. My dining companion orders the crispy-fried free-range chicken with spring onion sauce. The savoury chicken is a treat for the senses- lovely to look at, pleasant to smell and divine to eat. The chicken is soft and tender but still crispy on the outside. For dessert, I treat myself to the crispy date spring rolls with chocolate sauce. The warm date filling is sweet, warm and comforting, while the chocolate sauce adds an extra layer of sweetness to the flaky spring rolls. My dining partner boldly orders the homemade black
sesame ice cream in almond tulipe. The ice cream, at first glance, is a bit startling – grayish-purple mounds of ice cream atop a delicate almond tulipe. But the second we both take that first sensational bite, we forget all about the unusual colour of this frozen dessert. The ice cream is light but creamy; sweet but not saccharine. Overall, this unique dish is a must-try treat. Tse Yang is an amazing example of how unique recipes, quality ingredients and attention to detail can elevate a somewhat average food into extraordinary, high-class cuisine. The food is delicious and unique but the portions remain generous, as is the tradition with Chinese food. The restaurant offers guests a chance to enjoy authentic Chinese food that won’t leave them feeling peckish by the time they start their drive home. 51
Eat Healthier
Eating right can be tricky. But knowing what to eat and what to avoid is half the battle. We tell you how to make healthier choices for both meals and snacks. SNACK SMARTER By the QH Team
Dried fruit seems like a healthy option but the store-bought versions are usually loaded with sugar. Buy a dehydrator and make your own dried fruit at home for a healthy snack on the go. Add some unsalted almonds and sunflower seeds and you’ve got yourself a second snack alternative: trail mix! If you like nuts, go ahead and treat yourself to a handful of plain cashews, almonds or walnuts. But don’t go too overboard with nuts, as they are high in fat. A good amount is 20 plain, unsalted almonds, which equals about 100 calories. Studies have shown that spicy food may make you feel fuller sooner than bland food. Enjoy a healthy snack with a spicy kick, such as spicy baked plantain chips or chickpeas with Thai chillies, to satisfy your cravings with smaller portions. Crunchy veggies like baby carrots always make a great snack. But the high-fat, calorie loaded dips we often eat them with are a health disaster. Swap out creamy dips for protein-packed hummus or moutabal, a dip made from eggplant. An apple with peanut butter is a cliché healthy snack for a reason: the apple provides a serving of nutritious fruit, while the peanut butter provides protein to help you feel full longer. Another healthy alternative is to pair your fruit with a small serving of spreadable cheese. While regular cheese is full of fat, light spreadable cheese contains fewer calories and less fat. One wedge of Laughing Cow Light Creamy Swiss has only 35 calories. The QH Team is full of snacking experts. Constantly forced to avoid the evil that is donuts, the QH staff is always on the hunt for snacks that are both yummy and nutritious.

COOK A HEALTHY LUNCH By May-Britt Searty
Use proteins Fry or grill a piece of chicken, lamb or fish. Always marinate the meat overnight. This can be done with garlic, olive oil, soy sauce, honey, coriander, rosemary or whatever is on hand. Or boil a whole chicken, rib it for its meat and gently fry it in soy sauce for two minutes. Even chicken mince can be used. Form nugget-like pieces by turning them in corn flour and fry slowly in a pan. Add salt and pepper to taste.
Use greens Cut sticks from carrots, celery, cucumber, paprika, cauliflower, local salad and cabbage. Place them in a container or in a plastic bag designed especially for fruits and veggies. Make some yogurt dip with garlic and dill or use olive paste or hummus as a dip.
Use healthy oils Have a box or glass jar with sunflower seeds, pumpkin seeds, almonds, walnuts, hazelnuts or cashew nuts. Fill another jar with raisins and dried figs, plums and peaches. Take a small handful from each jar and eat separately or mix them together. If you crave a bit of sweetness, have another jar with almonds turned in cocoa powder. Always have Lindt 85 per cent dark chocolate in your fridge, should you ever be desperate for more than just cocoa powder. All I know is that every muscle in my body is relaxed and my mind is clear. Having two massage therapists work on you at the same time is the ultimate guilty pleasure – twice the number of hands means that your groaning limbs are attended to twice as fast, and twice as long as they would be during a normal massage. They start with one leg each but eventually they divide up my body parts, with one therapist working on my feet while the other gives me a scalp massage. I fall into a trance-like state, where I am semi-aware of what is going on but am too relaxed to care - not quite asleep, but not quite conscious. How to Dress for a Formal Event Dressing for everyday events can be stressful enough. But add in the pressure of figuring out the perfect outfit for a formal event and it can be enough to make you wish you could get away with wearing a bathrobe for every occasion. But dressing up doesn’t have to be stressful. Here are some easy ways to look your best on a big night out. Hint: preparation is key. • Find out the dress code for the event you are attending. A major source of stress can be worrying if you are overdressed or underdressed for an event, so take the guess work out of the equation and ask. If you still aren’t sure, it is better to err on the side of overdressed rather than risk being underdressed. • Plan your outfit in advance. Nothing is worse than dressing for a big night out and realizing your bra straps show or you have visible panty lines an hour before you have to leave your house. Pick out at least one outfit a few days prior to a big soiree and ensure that you have a bra, underwear and hose (if necessary) to match. •
If your outfit does not allow you to wear a bra, be sure to put doublesided tape on your dress so that you don’t accidentally fall out of your dress.
•
If you buy new shoes for a formal extravaganza, start wearing them around the house every day for a week before the event so that they are “broken in” by time you actually have to wear them for an entire evening. If you skip this step, you risk blisters, limping and overall pain. This is also a good chance to make sure your shoes match your dress.
•
Find a nice clutch big enough to fit your phone, keys, cash and a lipstick. Big bags might be handy but do not go well with formal attire and should be left at home.

READ Lanvin by Elisabeth Barille This hardcover biography covers the life of Jeanne Lanvin, the French designer who created her namesake brand. The book details Lanvin’s career, from her humble start as a seamstress in Paris, through her rise to her position as one of the most famous couturiers of her time, to her death in 1946 at age 79. Barille uses information from the House of Lanvin’s carefully documented archives to paint a vivid picture of Lanvin’s inspirations, work habits and mannerisms, giving readers an in-depth look at the influential designer. The best part of the book is the collection of photos depicting Lanvin’s creations throughout her career. This biography is ideal for those who like to examine the roots of fabulous fashion. Lanvin is available at Virgin Megastore.

QATARIS IN TRACK AND FIELD Qatari athletes are known for their strength in middle and long distance. That is the case of jumper Mutaz Essam Barshim, who has performed exceptionally in many international events by bringing home many medals. But it was in May 2005, at the Qatar Athletic Super Grand Prix when the country met its new hero. Saif Saaeed Shaheen became one of Qatar’s biggest sportsmen when he set a world record in the 2,000-metre steeplechase event (a record he still holds). He is also the last local athlete to emerge victorious on home soil. During the same event, another Qatari athlete made the country proud, as Daham Najim Bashir set a personal best with a time of 3.31.04 and finished second in the 1,500m race behind World Champion Daniel Komen. Since then, Qatar has not seen any of its athletes step onto the podium to receive a medal in an international event stage in Qatar. Let’s see if during the kick off of the Diamond League an athlete under Qatar’s flag will repeat the past triumphs of Shaheen and Bashir. These are some of the Qataris that may make history this year: Mustaz Essa Barshim, High Jump World Junior and Asian Champion (2010) Hamza Driouch, Silver medalist at the Youth Olympic Games in Singapore (2010) Mohamad Al-Garni, bronze medalist at the World Junior Championships in Moncton (2010)

Play Handball and Fly Kites
The IHF Super Globe and the Katara International Kites Family Day are some of the biggest events taking place this month. QH gives you some tips on how to play handball and fly a kite. TIPS FOR FLYING A KITE TIPS FOR FLYING A KITE Flying a kite can be a very liberating and special experience. It an extraordinary way to connect with nature, as it is a solely outdoor practice. Also, flying a kite is something you can do with a friend, which means you can share that moment with another person creating a personal bond. However, flying a kite is not an easy task. It requires a certain technique. Find a friend to help you get the kite off the ground.
TIPS FOR HANDBALL Handball is very similar to racquetball or tennis. The main difference is that instead of using a racquet, your hands are directly in contact with the ball. Once you are playing, you need to hit the ball against the wall and your opponent must hit the ball back before it bounces more than one time. As with any other sport, if you don’t play it safe, many injuries can occur. By following these safety tips and wearing the proper equipment, you can protect yourself and enjoy one of the greatest and fastest sports ever invented. Do not play while you are under the influence of any medications. It may affect your reflexes and blur your mind. This advice applies to any sport. Before you step onto the court, be sure to remove any jewelry, including watches, rings bracelets, earrings and body piercing accessories.
One of you should hold the ball of string while the other is holding the kite. Unwind about 23 metres of string. Signal to your friend to let go of the kite. Pull the string to launch the kite into the air. You have to pay attention to the wind direction; make sure is going in a straight line from you to the other person. To allow the kite to go higher, release the length of the string. The more you release the higher will go. But it has to go in balance with the wind. To bring the kite lower, pull in the string.
Handball is a progressive game. Don’t get frustrated if you don’t play like a pro at the beginning. It is important to keep in mind that with practice and persistence, you can move forward until you reach a competitive level.
76
Always fly a kite in an open field, away from any power lines.
