Nailing the kitchen rules By BELINDA HARRISON

IT’S a timetable rather than a set of battlelines which rules who’s allowed in the kitchen, and when, and the proof is in the cake (or cookie mixture) for Wangaratta’s Corena Bennett and daughter, Olivia (known as Livvie). Both women’s veins are stirred with a passion and knowledge for cooking, the desire to create visually stunning - and delicous - cakes and cookies baked deep within their DNA. For 13 year old Livvie, her earliest cooking memory is baking and decorating cupcakes with her Ma (grandma) when she was just three years old. “Ma is a retired Home Economics (Food Tech) teacher,” Livvie said. “I’ve spent a lot of time cooking with her since I was young and I’ve learnt so many skills and baking tips from her. “She was the one who encouraged me to enter the Wangaratta Show when I was 11 years old.” ‘Ma’ entered her cakes frequently at the Wodonga

Show in the 1960s so one can only imagine what tips and tricks she’s had to share with her granddaughter to ensure victory over more seasoned cake-baking entrants. Livvie’s great-gran also imparted an important tidbit, along with her lamington recipe, before she passed away: “She would say that the best tasting lamingtons are the ones you ice by spreading the chocolate icing with a flat knife on each side of the lamington (not dipping them in chocolate), then sprinkling them with coconut,” said Livvie. “I always enjoyed talking to her about baking and I look back fondly on those times and on all the time I’ve spent cooking with Ma or Mum because it’s nice that we have a passion we all share.” Livvie’s goal is to one day open her own cafe-style bakery with a cute and creative interior to display her freshly baked desserts, special orders and an eat-in or takeaway option.
