on the water in the Ocean State than just the ocean. Narrow River, for example, offers a wealth of the life aquatic and for 25 years now Narrow River Kayaks has been helping paddlers get out and discover it. Owner Jason Considine took the business over ten years ago and has been steadily expanding ever since, offering canoe and kayak rentals, as well as the increasingly popular standup paddleboards (“It’s the closest you’ll get to walking on water,” he says.) But the expansion hasn’t been limited to types of watercraft. Narrow River Kayaks offers a slew of guided tours, each offering a deeper understanding of Rhode Island’s wild side. Jason took me out for a guided eco tour along with Narrow River Kayaks’ Master Guide and Naturalist, Ron Wofford, a Florida native who splits his year between Narrow River in the summer and the Everglades in the winter. Over the course of several hours on the river, Jason and Ron provided an eco-commentary while we paddled and explored the John H. Chafee Natural Wildlife Refuge. They called attention to marsh restoration projects and spoke of the area’s rich colonial history. Meanwhile, some of the river’s star wildlife made their presence known. Gorgeous egrets stood at the water’s edge, soaring gracefully to a safer distance once we got close. Ospreys called out from their perches high up above the river. Every now and again the head of a cormorant would pop up from below the surface, and later we saw a whole mess of them drying their wings out in the sun. Around them where the shells of devoured marine life, the remains of the freshest all you

can eat seafood buffet in Narragansett. There are other guided tours offered, like sunrise and sunset tours, as well as full moon tours and starlight paddles. Given the surroundings, any option will be a gorgeous day or night on the river, but what really made the experience for me was the knowledge and narrative that I got from Jason and Ron. Seeing this vast, protected space and the creatures that inhabit it only means so much when you can’t tell a willet from a sandpiper. Though I’m sure Jason and Ron only just scratched the surface of what was happening in and around the river, I left in awe of the wealth of eco-diversity in our own backyard. “It’s like a living classroom,” Ron said as we drifted

along. Jason, who was a teacher before taking over Narrow River Kayaks, sees it that way too. “I’ve always enjoyed Narrow River, ever since I was a little kid,” he says. “I enjoy being able to take advantage of the natural surroundings, getting people out on the water to teach them about the ecosystem and give them an opportunity to appreciate it.” Of course if you just want to rent a kayak for a few hours, pack a picnic and paddle to the mouth of the river for a day on the beach you can. Meet Your Makers at Field of Artisans The summer is the perfect time to visit outdoor art markets and hunt for carefully created treasures. With Field of Artisans, the traditional market gets a twist as artisans pop up in beautiful parks and beaches all over South Kingstown. Katrina Meehan founded the project about a year ago when she moved back to Rhode Island. Her work in New York and background in fashion fostered a love of the creative process. “I was very inspired by collaborations and unexpected partnerships,” Katrina explains. “I think really cool things come out of people partnering together.” That inspiration lead to the founding of Field of Artisans, a consistent platform for artists to sell their wares, gain exposure and connect with colleagues. “I wanted to create a space where everyone feels welcome,” says Katrina. “It’s very much a supportive, collaborative environment.” Katrina also helps artisans create connections that can lead them to new clients and opportunities.

The ever-changing, pop-up nature of the market helps with the collaborative vision, as creators meet new people each weekend. Over 250 artisans are a part of Field of Artisans’ network, most of them from Rhode Island, and each pop-up features 20 unique vendors. Katrina works hard to ensure that there is a variety of artists and styles at each market, including everything from photographers and yogis to jewelers who use leaves to print designs. As they browse the vibrant shopping space, customers can also observe the artists at work or take workshops. For jazz playing multi-hyphenate Manuel Morales there’s no such thing as “too busy”

personal differences playing out for the benefit of a dedicated radio audience. He leans back, eyes closed, playing quick matching scales on a fine imaginary trumpet. At nine years old, Manuel Morales hung his rented trumpet out a bedroom window, serenading the street with wobbly riffs and almost-songs, searching for his sound. They were the early stylings of a dedicated student of music’s primal, open stretches that make jazz so unique and the beginning of a true jazz man.

9am: He’s racing across campus to practice his horn with other seniors completing their Jazz Performance majors, then it’s off to teach young students the basics of jazz, its intonations and styles, subtleties and personalities. 8pm: He pulls a Superman-like clothes change and heads for the city to play Dixieland all night with Larry Brown’s Swinglane Orchestra. “Why do I play the trumpet?” he asked back at me, “Because it led the band, because I wanted to be the loudest.” He’s a student of Coltrane, Baker, Davis and Jamie Cullum, whom he performed with to close last year’s Newport Jazz Festival. He plays everyday without fail; “If I’m not practicing I’m rehearsing, if I’m not rehearsing, I’m playing a gig.” He always worked hard; in high school, he earned an Eagle Scout badge, bussed tables and rented kayaks to help pay for lessons and college. His mother, Annie, has been there at every step, and he loves his momma. “I’m very grateful for the support of my family,” he smiled. He’s a cool cat. Manual has a rare, singular focus on a career as a performer, composer and bandleader, where success is difficult and often decades away. “I’ll fall back on music therapy,” he said, but his life is live jazz. Some nights he’s the John Allmark Jazz Orchestra’s roadie and “once in a blue moon,” gets to sit in and blow that horn. Other nights he plays with the SouthCoast Jazz Orchestra. He’s proud to be from southern RI, but after college there’ll be a move to a bigger city, maybe to play his own compositions in Cuba. “I’ve got to stay focused, no ties other than family,” he says seriously, tapping out Baker’s “Let’s Get Lost” on the table. –Todd Corayer

Ocean House’s Food Forager Chef Paul McComiskey leads us on a delicious, farm-to-table scavenger hunt Photography and Story by Grace Lentini

I’m in the kitchen at Ocean House. It’s swarming with busy chefs prepping fruit and potatoes, grilling pounds of chicken, taking orders and rushing off to hungry guests. I’ve spent the morning with their Food Forager, Chef Paul McComiskey, traveling from farm to farm, dock to dock, farmer’s market to farmer’s market searching for the best oysters, shallot blossoms, radishes, tomatoes, gooseberries and anything else in season. What he finds ends up on the expertly crafted dishes at Ocean House after discussing how to use each component with the many other chefs on staff. The discussion goes a little something like this: “Here’s some micro greens I found,” says Paul; “these gooseberries are perfect,” remarks another chef; “these carrots are so sweet,” mentions a sous chef that quickly grabs a spring carrot, takes a bite and hurries away. It’s absolute chaos. Like bees to a freshly opened flower, these chefs couldn’t be happier or more interested in the bounty Chef Paul has brought to them. It’s part of their weekly routine where Paul returns after a morning of sourcing local produce and has an impromtu – and delicious – meeting to discuss how each ingredient will be used in their seasonal menus. From the last of the seasonal raspberries to the crisp radishes, every chef is taking bites, smiling, discussing and planning. It’s poetry in motion.

Down on the Farm(er’s Market) It’s around 11am in the morning when I meet up with Paul at the South Kingstown Farmer’s Market. It’s the longest running farmer’s market in Rhode Island, established in 1982. I’m a little early, so I take in my surroundings. Live music, happy dogs and the smell of fresh herbs and baked goods envelop my senses. I stick out like a sore thumb, taking photos and notes, so it wasn’t hard for Paul to find me. We meet and head over to S&P Gardiner Farm where he talks to one of the owners. They’ve clearly been working together for years. He picks up a few cases of “the best tomatoes around,” along with other peak-of-the-season produce, including the last of S&P’s strawberries, picked specially for Paul. He’s taken the time to build relationships with most of the vendors, and it’s apparent when we head over to the Matunuck Oyster Bar stand and he starts talking about patty pan squash with the vendor. They’re just coming into season, and Paul was explaining how he would roast the squash as part of a vegetable dish or even use it as a garnish. He orders ten pounds for the following week and picks up some parsley and pea shoots Matunuck has available. “I love buying from [Matunuck August 2016 | SO RHODE ISLAND

Oyster Bar] because they’re such a success story. They started as an oyster farm [and branched into] a restaurant, then to a vegetable garden,” he says. The RI Mushroom Company was the next stop. He speaks with Jim Smith, who also forages for Paul from time to time. Although trout lilies and violets are out of season (two wild edibles Paul was looking for), Jim offers to search for some other mushrooms the next time he’s out. New England Grass Fed is next on the stroll, and we speak with owner Pat Beck. “Paul and I have known each other four years or so since he was cooking at [Ocean House’s sister restaurant] Weekapaug Inn,” says Pat. “It’s a small enough community where you sort of collect people and know who’s going to like what, and you build relationships together.” Pat raises 100% grass fed cattle (which graze in Little Compton and Matunuck), silver fox rabbits and red wattle pigs, and offers non-traditional cuts to chefs like Paul. “Pat’s the perfect guy to call up at the last minute when you need something, but wouldn’t necessarily be able to find at the other farms or be able to order from the regular producers,” Paul explains. “So he’s a great resource. I’ll call him up and ask if he’s got a pig’s head. He’ll say yeah, I’ll be there in an hour.”

Produce On Demand After the South Kingstown Farmer’s Market, we take a drive through bucolic back roads to Exeter’s Our Kid’s Farm. This greenhouse farm sits on five acres and offers annuals, perennials, vegetables and more. What struck me during this particular stop was how in tune owner Gina Thurn was with Chef Paul’s and other restaurants’ produce needs. With enough notice, she can take vegetable orders and have a product ready for consumption. It reminded me of build-to-suit in realty, except grow-to-eat for food events. “Things like radishes, arugula, mixed greens and kale, romaine, that stuff, if there’s a big event coming up and you can give me three weeks notice, I can have a good volume for you,” says Gina, describing how long it takes for certain veggies to grow. “I seed every week, so I tend to seed when I know what I approximately need for farmer’s markets and a couple of other restaurants that I’m already supplying. But if you can give me notice, I can seed no problem.”

The Perfect Oyster It was time to head back to Ocean House to share the spoils of our morning with the other chefs. On our way we made a quick stop along Shore Road in Westerly to check out the Watch Hill Oysters stand. Paul picks up around 400-600 oysters every week. “You always get the perfect oyster,” he explains. “Winnapaug Pond is absolutely fantastic for growing oysters. It’s tidal and there’s only one section where the ocean water can come in. Then underneath [the pond] are natural aquifers that come from ancient glaciers up in the north, pass underground and pass through Westerly Granite before it gets into the pond. So it’s naturally filtered by the granite, which makes this pond pretty clear.” In addition to the Watch Hill Oysters, Paul sources 400-600 Venus Oysters and 1,000 from Matunuck Oyster Farm for use between the Ocean House, Weekapaug Inn and sister property Spicer Mansion.

Back in the Kitchen It’s hard to keep track of where all the produce goes once the chefs get their skilled hands on it. Between mouthfuls of radishes I learn that Paul put in an order to Our Kid’s Farm for a tray of radishes. In three weeks he’ll pick it up for use in Ocean House’s Seasons’ kitchen. The tomatoes Paul picked up from S&P Gardiner Farm are split between Ocean House and Weekapaug Inn. The Inn will use it for their pomodoro sauce, while Ocean House will use it on Seasons’ Vegetable Composition plate accompanied by cheese, other veggies and a ramp tortellini. The oysters from Venus Oysters and Matunuck Oyster Farm will be shucked to order at The Verandah at Ocean House. It’s one thing to know that what you’re eating, especially at Ocean House, came from a local farm. It’s quite another to go to the farm, pick up produce, bring it back to the kitchen and watch as it’s prepped to go on someone’s plate. It’s given this writer, and hopefully you, dear reader, a new appreciation for all the work that goes into making the perfect dish. loved raising their two sons in the village of Scituate, but the couple always knew that when the birds flew the coop, they would retire in South County. The family had long spent summer getaways in the charming coastal enclave of Bonnet Shores, a generational locale for Eileen. South County’s laid back vibe, friendly neighbors and convenience to shops, markets and points of interest made a lasting impression. “We just really, really love the beaches of South County and said long ago it was the kind of place we’d like to plan to live for retirement,” says Eileen. “We looked around and found this home and it was just the perfect location.” At nearly 2,800 square feet, the single family Colonial style

home with four bedrooms and three bathrooms sits tranquilly on a quiet dead end street overlooking Pettaquamscutt Cove. The cove is bordered by more than 300 acres of salt marsh and surrounding forest habitat that make up the Pettaquamscutt Cove National Wildlife Refuge (which was renamed the John H. Chafee National Wildlife Refuge in 1999). The preserve lures casual birdwatchers and waterfowl enthusiasts alike as great egrets, herons, several species of plovers and other shorebirds can be spotted there, as well as the largest American black duck population in Rhode Island. “We felt the setting was quiet, pastoral looking, but I’m at the store in two minutes,” Eileen says. “I used to have to travel 20 minutes!”

Though in the ideal location, the home, built in 1981, was undeniably dated. “We wanted to open it up to brighten it up,” explains Eileen. One room, which was likely built as a library, was seemingly hidden from view yet boasted three oversized windows which fills the space with natural light. Though the kitchen was considered sizable and offered a generous dining space, it was cumbersome. “It felt segmented,” describes Eileen. The couple turned to DiStefano Brothers Construction, a family owned and operated builder who has worked throughout Rhode Island and surrounding communities for the past decade. The Wakefield based designbuild firm specializes in kitchen and bath remodels, so the Schancks knew

they were in the right place. “They are wonderful to work with,” says Eileen. “They worked closely with us to see what we wanted to do and they came up with solutions.” To create an open floor plan, a living room wall was removed. It immediately merged with the underutilized library to create a larger, cohesive space awash in natural light. To maximize the cohesive feel of those rooms, the eat-in kitchen was opened up to flow seamlessly into the living room. “There was an exposed support beam hanging, so they buried that, which gave it a much more open look,” explains Eileen. To accomplish that Herculean task, the DiStefano team had to remove the visible structural beam in the middle of the kitchen and replace

creation of a whole new space – quite a pricey endeavor – DiStefano Brothers proposed an unexpected solution: reinvent the space by allowing natural light to pour in and add an eye-catching barn door in a slate blue hue that adds visual interest as well as practical function. “The barn door was included to provide the lavette with more interior space, then the bold color was added to make it a feature piece,” says Marisa Navakaujus, Client Advocate at DiStefano Brothers Construction. In the living room, Marisa says builtins were added in optimal locations which now provide a place for Eileen to enjoy family photographs and

meaningful accessories. “We also added recessed lights in the living room to provide her with better light. That was not part of the original plan,” Marisa says. To marry the spaces, the couple chose new hardwood floors throughout. Upstairs, DiStefano Brothers tackled an equally dated and dysfunctional master bathroom. “It just didn’t work,” explains Eileen. “The master bathroom’s sloped ceiling did not allow enough head space for Don to shower, creating a unique design challenge. By reconfiguring the bathroom and existing closet space, we were able to create both a larger shower area with ceiling height and a walk-in

While it might be challenging to choose a favorite space in all of the home, what with the improved balcony over the two-car garage overlooking the preserve, the master suite with its new, contemporarymeets-classic bathroom and the entirely reimagined first floor, but Don and Eileen seem to agree the living room, where the fireplace was fitted with a new custom mantle and an unobtrusive flat-screen television above, feels most like home. “That’s where we spend the majority of our time,” says Don. It’s the morning of July 5. I’m regretting every barbecue-covered decision I made yesterday, and I’m praying I make it through the next hour of Awesome Arms & Pilates with Debbie Durniak alive. Walking into the fitness studio at Luxe Fitness Club, the first thing I noticed was how wonderfully air-conditioned the room was, being someone who suffers from constant upper lip perspiration during the month of July. The second thing that immediately struck me was how welcoming and energetic Debbie, our instructor, was. When helping me setup for Awesome Arms, a half hour of upbeat arm exercises, Debbie suggested I go for the smaller weights (phew!) and asked if I had any neck or back issues as a newcomer to the class. Being a personal trainer for the past 32 years, she is in awesome shape. However I was happy to hear her share that she too enjoyed Del’s & Grey Goose cocktails during the Fourth. I love a gal who adds vodka at the sign of the lemon.

After a brief warm-up and stretch session, our biceps and triceps were getting toned to the beat of Enrique Iglesias and Katy Perry. The arm exercises were varied enough so that it never felt too repetitive, and Debbie also offered modifications for each exercise for those of us with neck or back issues. There was an exercise for each arm muscle, with my favorite being the “skull crusher.” Not nearly as scary as it sounds, this triceps’ workout felt easy at first but by the last repetition I could feel the burn. In addition to weights, Debbie incorporated pushups, planks and mountain climbers. Though I don’t have neck or back issues, I do occasionally break a sweat while walking up the steps, so my arms thank her very much for the modified version of each. Before I knew it, the class was over, making it the quickest half hour of 2016 so far. We were now moving into the next class: Pilates. This involved two toning balls, a stretch band and the softest, squishiest, most comfortable

workout mat that I wish I could have taken with me. I was excited for Pilates because I thought it involved a lot of sitting and laying down. I quickly realized that this was a “core” workout. My stomach muscles, inner thighs, outer thighs, arms, lower back and lower lower back were going to lift, push, roll, tuck and lift some more. Back to the workout props. Debbie incorporated them into each workout, making a seemingly standard exercise, dare I say… fun? Anything disguised as fun to trick me into exercising I am a huge proponent of. A half hour had yet again flown by and it was now time for my favorite part of any workout – the cool down. Debbie made sure we thoroughly stretched and relaxed our muscles to calming background music, and I wished the cool down lasted for another half hour. I’m looking forward to my next class at Luxe, as they have a wide range of about 20 different classes to choose from, from cardio and muscle conditioning, to spin, zumba and step and yoga. Knowing they have plenty of showers and changing space is also a great reason to burn off some calories and boost those endorphins before work. Is it too late to make my New Year’s Resolution?

It’s amazing that you’ve been in business since 1989. Tell us how you started. My mother Johanna, an amazing artist, potter and quilter, started The Purple Cow in Narragansett as a pottery store. Mom and I ran the store together for years. In 2009 she handed over the reins and partly retired from retail to pursue her artwork and explore. She is still involved in buying and going to the shows. I couldn’t do it without her.

You carry a great variety of affordable jewelry. What’s been popular this summer? Sea glass jewelry is always popular in the summer. We also sell lots of great sterling silver and turquoise rings this time of year. When you get a great tan silver looks amazing.

The Nordic is a South County treasure, an attraction visitors travel great distances to behold, and there’s a reason folks keep coming back for more. A Veritable Shmorgasbord From surf to turf, The Nordic has a taste for every appetite people travel to southern Rhode Island from all over the country. They come to visit our beaches, fish in our bay, vacation with celebrities in Watch Hill and some come just to go to The Nordic. Most southern Rhode Islanders know about The Nordic, but how many of us have actually been there? Not being known as a light eater, I knew I needed to give it a try. I packed up the car with my family, and we made the journey from North Kingstown to Charlestown. The Nordic is located on 100 acres abutting Pasquiset Pond. The property is pristinely manicured and just flat out breathtaking. The Nordic has set up clusters of Adirondack chairs, hammocks and even a fire pit to help you relax and take in the peacefulness. If gorging yourself on the buffet isn’t your thing, they offer drinks and a la carte appetizers out by the pond.

While waiting for your table, The Nordic has cornhole and volleyball available. They also have a small farm area with horses and alpacas. The restaurant has been owned and operated by the Persson family since 1963, and they have the operation down to a science. Each year, The Nordic is open from mid-April until just before Christmas, and it’s only open three days a week (Friday-Sunday). The hostess told us the best time for locals to visit is on Friday nights, which was good because that’s when we happened to be there. Saturdays and Sundays are busier times because people literally drive here from all over the country. When you first walk in, you give the number of people in your party, and you get a pager. When your table is ready, you pay the hostess prior to sitting down. The adult cost is $93, which includes everything on the buffet, non-alcoholic drinks, 10% gratuity and taxes. Kids age 3-7 cost $30 and kids age 8-12 cost

$55. After you pay, you are taken to your table where the fun begins. My family was seated in a small room overlooking the lake, and we were introduced to our excellent server, Stacey. Other than the food, which I will get to soon, the service was the surprise standout of the night. Everywhere you went, the servers, cooks and mangers went out of their way to be helpful and to make sure you were having a good time. Stacey kept our table in perfect condition (not easy with such a messy meal), brought extra napkins as necessary and refilled our drinks without any prompting. Though alcoholic drinks are not included, there is a full bar available. The buffet is set up perfectly. I was concerned there might be long lines to get food, but we never had to wait. My family started with the raw bar. On the night I was there, there were littlenecks from Narragansett Bay, Watch Hill oysters and good-sized cocktail shrimp. I managed to eat a dozen Watch Hill oysters without any trouble. Along with the usual raw bar selections, there was an excellent lobster salad and a tasty crawfish salad. Other appetizers we enjoyed included scallops wrapped in bacon, hot peppers stuffed with provolone and prosciutto and their homemade garlic bread. We had all agreed we weren’t

going to fill up on bread, but the garlic bread proved too tempting. After our stomachs were properly primed, it was time to move onto why we had all come to The Nordic… for the all you can eat 1 ½ lb lobsters of course. The restaurant serves between 6,000 and 7,000 pounds of lobsters every weekend. They are so popular that two staff members manage the lobster station. One places the perfectly steamed lobster on your plate and the other gives you a cup of drawn butter. I overhead people talking about eating obscene amounts of lobster (in the seven to ten range), but I managed just two. In one word, the lobsters were fantastic. I wasn’t at all embarrassed to be sitting at the table in my lobster bib, lobster broth dripping down my arms, as I greedily dunked my lobster meat into the butter. The Nordic knows how to cook lobsters, and these were perfect. Even the tail meat, which can sometimes get chewy, was tender and sweet. I probably could have eaten more lobster, but in the interest of journalism, there was more food to try. In the “meat room,” there were steaks cooked to order, and the piece de resistance was prime rib. I am extremely picky about my prime rib, and frankly it usually doesn’t live up to my expectations. the slice that was carved for me. The rub on the outside was flavorful, and the Black Angus meat was yummy, too. There was no sauce to add, but it didn’t need it. I hadn’t meant to eat my whole piece, but I couldn’t help myself because it was that good. We sampled most of the buffet, but even for our family of big eaters, we didn’t get to try everything. My brother was a big fan of the king crab legs. He asked for one, but the server must have known he’d regret his choice, so he gave him five, and he ate them all. My father enjoyed the lobster fritters and the lobster bisque, but we never found room to try the lobster macaroni and cheese. The dessert station is a wonder to behold. There are all manners of desserts – cakes, pies, puddings,

pastries, cookies and more. There is also a separate ice cream station with Häagen Dazs ice cream and the fixings for banana splits, brownie sundaes and root beer floats. My family laughed at the size of my Ghirardelli brownie sundae and though I couldn’t finish it, it was really good. I will also mention how good the fruit was. After failing to finish my sundae, I grabbed a bowl of blackberries, raspberries and fresh cherries to help settle my stomach, and everything was fresh and delicious. If The Nordic is on your bucket list as it was on mine, just do it. Their brochure calls it “a truly unique dining experience,” and I have to agree. The whole experience is pleasant – from the atmosphere to the service to the food. Life is short; enjoy it while you can.

Back in October 2012,

Superstorm Sandy gave South County a beating. The area has come a long way since the sustained 58mph winds blew through. The sand in the streets is back on the beaches where it belongs and many restaurants have reopended, like Maria’s Seaside Cafe. “The damage done to Maria’s Seaside Cafe was shocking to me,” says owner John Bellone. “I walked up Montauk Avenue towards Maria’s and was one and a half blocks away and I noticed a one liter bottle of Italian water that was offered in our cafe come floating down the Avenue. I knew this wasn’t a good sign. Then I saw a bar stool floating.” As he approached the building he realized two sections of the building were knocked over and the entire front wall was gone. There was three to five feet of sand inside of the entire restaurant. Nothing was spared. Family pictures from Sicily lay buried in sand on the floor. It was a life changing moment for John to say the least. Fast forward to today and the cafe has been successfully rebuilt, albeit with some changes. To begin with, John decided to only rebuild half of the cafe to make room for a 31-unit boutique hotel, which is slated to open spring 2017. It will also bear the name of his mother who recently passed away: The Hotel Maria. The cafe has an open air feeling to it, with walls constructed to open up onto two outdoor patios. To keep some consistency between then and now, John has brought on Chef Rafael Rosas who was at the cafe prior to Sandy. Chef Rafael prepares everything from scratch and uses local and organic ingredients whenever possible. He’s inspired by Mediterranean cuisine, and focuses his menu on that region. No seaside retreat is complete without stellar cocktails. John insists The Hotel Maria Margarita is a must try. There’s a lot of things you can do on a farm. A kids’ camp isn’t necessarily the ﬁrst thing that comes to mind. Where did the farm camp idea come from? My partner Kelly is a fourth grade teacher at Paul Cuffee School, which is a charter school in Providence. She’s a great teacher, and lives on the farm with me. I used to be at Casey Farm for years, and [while there] we started just talking about stuff on the farm that she would want to do. I’ve been involved in agriculture for a lot of years, and education for a lot of years and she’s involved in education, so it was kind of a natural path to have a camp. Kelly and a few of the other teachers at the school are the lead counselors. She’s running it, and I’m the background farmer. What’s your vision for a farm camp? It’s deeper than a petting zoo, or just agro-tourism kind of thing. It’s really allowing the kids an intense experience for the week. Our farm is a beautiful spot, and there’s a lot of nature and woodlands. Kelly and I have this idea that kids need to be outdoors and in nature more. You know, most kids don’t even get recess in school. Sometimes just having kids being able to run on a green lawn is pretty awesome. We have a great farm for

that, not only the animal and vegetable side of things, [but] the natural and wild parts of the farm as well. Have you had any ‘aha’ moments over the years? One that always sticks out is when we were doing field trips. We’d have kids show up and they’d look in the chicken coop and ask, “why do you keep your eggs with your chickens?” They were confused by the idea that eggs and chickens go together. [I’d ask] “Where do you think they should be kept?” and they would say, “the refrigerator.” Frankly a lot of adults would think that too. Connecting them to where their eggs come from was a surprise. I’ve got to ask about eating. What are some snacks at the farm camp? We’ve done these garden burritos over the years. It’s where the kids get to harvest a lettuce leaf (the burrito shell) and put all the ingredients from the garden into it. We’re also growing strawberries this year that will ripen up

around the time when the kids will be in. I’m excited to see their faces when they taste strawberries that they handpicked when they are as ripe as can be. We want to give the memory of where their food comes from for these kids so they can remember it throughout their lives. I had an experience when I was a kid at a farm that spoke to me. That’s what we’re trying to do here. You mentioned that your farm isn’t all farmland, that there are some wild areas. How will the kids get to learn about them? [We’re] trying to get them to explore what’s in their environment, then they’ll either draw about it or write about it or do rubbings of leaves. We have a lot of woodland areas, so kids will get to explore leaves, roots and seeds… those kind of things. We have the Scrabbletown Brook here too so they’ll get to check that out and explore a freshwater wetland area. We’ll probably wind up harvesting acorns out of the woods from last season, feed them back to the pigs and talk about how the pigs are recyclers. They’ll also get to see all the wildlife. We have lots of great birds, deer, woodchucks… they’ll get to see Mother Nature a little uncultivated.
