Returning to the Melbourne Convention and Exhibition Centre from 26 – 28 March, MICE is a unifying moment for the coffee community within the city that’s considered the beating heart of Australian coffee culture. The program promises to be packed with opportunities to learn, network, taste, and do business. For many, it’s the highlight of the year – a chance to reconnect with the coffee crowd, uncover new ideas, and celebrate our wins during the past 12 months.

This 2026 Coffee Lovers Guidebook is more than just a directory of exhibitors or an information guide to MICE. It’s a window into why Australian coffee culture –Melbourne’s in particular – continues to earn global recognition.

Part of that story unfolds in our conversation with three Australian cafés named in the inaugural World’s 100 Best Coffee Shops list. Among them is Jody Leslie, General Manager of Toby’s Estate, whose Chippendale flagship topped the 2025 rankings. So, what’s the special sauce behind Australia’s coffee success? Turn to page 16 to find out.

he Melbourne International Coffee Expo (MICE) is an annual pilgrimage for the coffee community. Just like Coachella or Glastonbury is a music lover’s paradise, MICE is a coffee lover’s feast for the senses that brings the industry together to connect, innovate, and drink incredible coffee. This will be my ninth year participating at MICE, and I can’t wait. I first recall visiting the expo in 2017 when it was held at the Melbourne Showgrounds under a big tent. I had only been working at Single O coffee for two weeks. It was the greatest baptism into the industry. I remember Single O Founder Dion Cohen leading me around the show floor and meeting so many people, including Shae MacNamara, who was fresh off winning the Australian Coffee in Good Spirits Championship. Who would have known this humble event would have evolved in international status and become a signature of our industry’s annual calendar?

Since that first encounter, there’s been so many MICE highlights and memorable parties – shout out to La Marzocco for some of the best! Most of all, my best MICE memories are highly caffeinated days, lots of networking with industry colleagues, learning different points of view, being introduced to new products and innovations, and coming home inspired by all the ideas and concepts to embrace in our business.

In 2025, the MICE Organising Committee launched an Advisory Board with representatives across the chain to help guide and influence the future direction of the show. It was a great commitment from MICE to listen to the needs of the industry, and I was very humbled to be invited as a representative of the industry. As a Board, we’re committed to having open lines of communication and promoting positive solutions and outcomes to make the event better each year. We want to be a positive voice and push MICE into a space that continues to be something special, and an event we look forward to each year. We need it. Last year was a real turning point for MICE. We levelled up. Attendance almost doubled,

and the exhibition space was busy and buzzing. It was a much-needed injection of energy for the industry, highlighted by the inaugural launch of the Roasters Playground, which gave all featured roasters an even playing field with the same setup and half day rotating positions. This means the focus is all about coffee and conversations, with quick service and great vibes. I also personally loved the Breville activation with masterclasses throughout the show. It was a great way to invite consumers into the coffee conversation. I’m excited to say activations like this are back for 2026, and I’m looking forward to what the expo delivers.

MICE continues to be the number one destination for the Australian coffee community to connect. We, at Single O, believe it’s important to have a forum to discuss, debate and innovate on topics like automation, the café business model, or even coffee grounds. If we don’t get together annually as an industry and attempt to talk and push the boundaries, we risk the industry becoming more divisive, the opposite of what specialty coffee is meant to be about. Ultimately, it’s about inclusivity, diversity, collective opportunity, and awareness of what specialty coffee is; how we buy, source, roast, and make beans into liquid gold. It’s about the role coffee plays in so many lives throughout the value chain. It’s this visibility that gives further meaning to consumers and brings more people into the business of coffee.

MICE is a show for the industry, for coffee people. It’s a tradeshow at heart. People are there to do business, but around and within it, is a festival of learnings, parties, connection and celebration of equipment, beverages, and all segments of the market.

Australia has one of the most special coffee industries in the world. It’s why we’re world leaders. If you’re a café owner, restaurant operator, barista, or coffee fan at heart, MICE is where you need to be in March. On behalf of the MICE Advisory Board, welcome. Just like the biggest annual sporting events have their time in the spotlight, from the Australian Open tennis tournament to Formula 1 Grand Prix and AFL Grand Final, MICE is another incredible Melbourne-based event that has fans making their annual pilgrimage to be part of the action in the country’s biggest and best dedicated coffee event.

MICE means something different to everyone. For some, it’s sparked those career-defining moments; the first time they watched a barista competition, the genesis of an industry connection, the inspiration for a business or brand opportunity. Whatever the reason, MICE is a champion and cheerleader for the Australian coffee industry.

The Melbourne International Coffee Expo is back – bigger, sharper, and packed with new features, reimagined awards, and an exhibition floor unlike anything you’ve seen before. From 26 to 28 March, here’s your preview of what’s brewing.

The coffee industry can be understood through the journey of a single bean –born in tropical highlands throughout the world, carried across continents, and shaped by the hands, tools, and innovations of countless people.

That global reach is precisely why the Melbourne International Coffee Expo (MICE) matters. For three days each year, the Melbourne Convention and Exhibition Centre becomes the meeting point for coffee’s entire ecosystem – from origin producers and equipment manufacturers, to café operators and baristas. It’s where connections are forged, ideas are tested, and deals are done. It’s the reason the expo is so popular, with the 2025 event attracting a record 31,000 attendees. It’s also why suppliers ring-fence March as a key time to do business, including big names like Breville, La Marzocco, and MILKLAB (Platinum Sponsors), as well as T2, Grounded Packaging, Riverina Fresh, and Venus Packaging (Gold Sponsors).

Touching every corner of the coffee market, MICE is also backed by StreetSmart’s CafeSmart and leading associations, including the Australian Specialty Coffee Association, Australian Grown Coffee Association, New Zealand Specialty Coffee Association, Reground, and Restaurant & Catering Australia, bringing together the partners,

In an era of fluctuating green bean prices and shipping volatility, the 140-plus exhibitor trade expo allows roasters and café owners to secure direct-trade contracts that encourage growth and ensure long-term resilience in the industry.

Across the expo floor, ticket holders can engage directly with roasters, machine manufacturers, grinders, milk, and ingredient suppliers. For cafés planning upgrades or venues thinking ahead, this face-to-face access turns curiosity into confident and informed business decisions.

“It’s a more complete trade floor this year – the whole café ecosystem is being represented beyond coffee machines and beans,” says Prime Creative Media General Manager – Events Siobhan Rocks, noting attendees can expect to see more companies operating in the technology space, with automation and front-of-house systems high on the agendas of café owners.

“Automated order-taking and similar tech is extremely beneficial for hospitality, allowing staff to be more present with customers,” she adds.

“We’re also seeing growth in complementary categories. Even though it’s a coffee show, there will be a stronger presence of tea, food products, and other items you’d find inside cafés.”

Siobhan says there are two key factors that have bolstered MICE numbers and engagement in recent years.

The first is a warmer embrace of a consumer audience.

“Even though the focus of MICE is B2B, we deliberately welcomed more consumers because the more educated they are, the better it is for the industry,” Siobhan says.

“They influence what baristas seek out of beans, and it helps with that education around charging higher prices for coffee – something that many experts believe is necessary in Australia.”

The second key factor is the Roasters Playground, back by popular demand after a successful debut in 2025. Supported by La Marzocco and Riverina Fresh –with alternative milks supplied by MILKLAB – MICE26 is inviting strong participation from this vital market segment. Café owners can benchmark the latest flavour trends to diversify their menus and capture the evolving consumer demographic.

The 2026 line-up brings together established favourites and new roasters, allowing attendees to taste profiles, talk sourcing, and understand how coffees perform across espresso and milk-based formats –featuring world class roasters such as Single O, ST. ALi, Pablo & Rusty’s, Fonzie Abbott, and Veneziano Coffee Roasters.

This opportunity for connection will continue afterhours with MICE at Night, an inaugural MICE feature that will turn the exhibition floor into an industry party for one night only (Friday 27 March).

Siobhan says the event unlocks greater access to the show for members of the coffee industry.

“Although MICE typically runs across three actionfilled days, we have found café owners and operators can sometimes struggle to engage with the show as it falls during peak business times,” she says.

“We know how hard baristas, managers, and café owners work, so MICE at Night will be an opportunity for them to let off steam while they network.”

AROUND THE WORLD IN THREE DAYS

Travelling to coffee origins is a privilege few coffee professionals get to enjoy, but a new feature to MICE26 – Trip to Origin –might be the next best thing to connecting with farmers.

The dedicated exhibitor section will welcome coffee farmers, green bean traders, coffee boards, and embassies from origin hotspots to address the challenges and opportunities coffee growers face, as well as the growing commercial need for transparency throughout the supply chain.

Representatives from Brazil’s specialty coffee scene will appear alongside other origin representatives, including from the Australian Latin American Business Association, the Nepal Coffee Producers Association, and the Coffee Board of India (exhibiting as Coffees of India), with Peru, Uganda, and Papua New Guinea also represented.

It will feature an education stage built for panel discussions and presentations, interactive tasting areas, and opportunities for direct engagement.

“We’re excited about the momentum that’s been building behind this new initiative of MICE26 – and we’re thrilled many of the key origins will be represented,” Siobhan says.

“It’s key chance to pay homage to the labour behind a cup of coffee – not just the barista’s labour, but the planting of crops in far-flung places and everything nature throws at our farmers.”

KNOWLEDGE TRANSFER

While café owners will be heading to MICE to consider new equipment, suppliers, and services for their business, they can also update industry knowledge through a comprehensive education program.

The Australian coffee context will come into even sharper focus with the Café Owners Education Series, moderated by BeanScene and Global Coffee Report

Publisher Sarah Baker. The event is a rare opportunity for roasters, operators, and industry decision-makers to hear directly from leaders who have successfully navigated the challenges of the industry, and are ultimately flourishing within it.

While the program will focus on the challenges and opportunities for café owners in the domestic Australian scene, attendees will glean plenty of insights that can be applied in overseas markets.

Topics include the fundamentals of modern café business ownership, with attendees hearing from seasoned professionals about their mistakes and triumphs.

Menu diversification and trends will also be debated, covering topics like the cold coffee revolution, matcha movement, coffee’s wellness era, and signature drinks.

“Australian cafés, especially in Melbourne, are considered cultural institutions, and the expectations for flavour, service, and design are some of the highest anywhere in the world,” Sarah says.

“For international visitors, Melbourne offers a real-time snapshot of a mature, highly developed specialty scene – one that continues to shape global trends, from beverage innovation to machine engineering.

The Global Coffee Report (GCR) Leaders Symposium will be the other main feature on the Café Education Stage. Taking place at 8am on Friday 27 March before MICE kicks off for day two, it’ll feature figureheads of some of Australia’s biggest specialty roasters like Coffee Supreme, ST. ALi, Di Pacci Coffee Company, and Nomad Coffee Group that operated Veneziano Coffee roasters.

“We’re excited to welcome some of Australia’s most revered roasters to the GCR Leaders Symposium to share their wealth of knowledge and insights. It’s rare to have four of Australia’s largest company directors and CEOs on the one panel,” she says.

“But that’s only part of the story. Starbucks Australia CEO Braeden Lord will join the symposium for a keynote discussion examining the lessons of Starbucks Australia’s past, the realities behind its current resurgence, and the future of the brand as it looks to grow sustainably within Australia’s world-leading coffee culture.”

Braeden will be joined by Winnie Nawei, Managing Director of Kenangan Coffee Australia, who is leading the brand’s growth

as it brings Indonesia’s most loved coffee experience to Australia. Also presenting will be Kate Langford, CEO of the Big Group, Mark McKenzie, CEO of Freedom Fuels, and Martin Nguygen, SSP National Coffee Operations Manager, detailing the expansion of quality coffee into category segments beyond the café.

With the expansive lineup of the GCR Leaders Symposium and Café Owners Education Series, Sarah considers it’s MICE’s most comprehensive and relevant education program to date.

“MICE is where ideas meet practicality,” she says. “It’s where café owners can step back from the day-to-day and see the bigger picture of where the industry is headed, while picking up actionable tips they can implement tomorrow.”

LEGACY AND LEADERSHIP

Alongside opportunities for networking and education, MICE will feature the return of the Coffee Industry Heroes Awards, sponsored by FoodPEEPS, aimed to recognise the personalities leaving their mark when it comes to craft, industry, and the people around them.

How Australia came to dominate the inaugural World’s 100 Best Coffee Shops to cement its status as a global leader in café culture.

What is it that makes Australian café culture so special?

It’s a question that can provoke many different responses, depending on who you ask. A highly competitive roasting community, the emphasis on customer service, or the expectation every cup should meet a consistently high standard? Perhaps, it’s the technical skill of its baristas – after all, Melbourne’s Jack Simpson, from Axil Coffee Roasters, is the reigning World Barista Champion.

For years, Australia has had an outsized influence on the global coffee scene. The fact its café culture has been transplanted into cities, towns, and villages across the world – where baristas craft flat whites and long blacks alongside Aussie-inspired dishes – is proof of this. So too is the fact many manufacturers see the market as the ideal place to stress-test their latest inventions.

It’s all anecdotal evidence of a market that not only consumes coffee well, but actively shapes how it is made, served, and experienced.

That reputation was reinforced in 2025 after the inaugural World’s 100 Best Coffee Shops list featured nine Australian cafés, second only to the United States that has 12 times the population.

and Coffee Anthology in Brisbane (8th) also featured prominently.

It provided further validation of Australia’s position at the vanguard of global café culture. But how did we get here?

Toby’s Estate General Manager Jody Leslie says great coffee is expected now – it’s the baseline. What really keeps people coming back is the vibe.

“The energy on bar, the team who know your name and know their craft. When a café can deliver that consistently, people feel it,” she says, noting this is something she will unpack on the MICE Café Education Stage, exploring how others are pushing café culture forward.

“Being named the number one café in the 2025 World’s 100 Best Coffee Shops was a huge moment for Chippendale. There are world-class cafés everywhere, so to be recognised at the very top is something we are really proud of. It’s a nod to the team who show up every day obsessed with making exceptional coffee and creating a space where people want to hang out.”

Veneziano Coffee Roasters – whose Melbourne Airport flagship ranked 19th – stands out by listening closely to its customers and designing experiences around how, when and why people engage with coffee.

Sarah Eagles, Brand Strategist, says Veneziano’s approach is a microcosm of the Australian specialty coffee market.

“Australian café culture stands out globally because it’s deeply customer-led,” she says.

TRACING AUSTRALIA’S RISE

How Australia came to lead a specialty coffee revolution – and continues to stand as a global icon of independent café culture – requires a little excavation. The story is shaped as much by what Australia embraced as by what it resisted.

A defining feature was a reluctance towards large chains and external influence and a celebration of independent and boutique coffee shops, a trait that shaped Melbourne’s café scene in particular.

While debate still swirls over whether Sydney or Melbourne deserves the title of Australia’s coffee capital, what is beyond dispute is the influence of Italian migrants who arrived in the 1950s and 1960s. Bringing with them a deep-rooted espresso culture, they transformed a nation still largely tethered to British tea-drinking traditions.

With easy access to high-quality dairy, Australia’s appetite for milk-based coffee gathered pace – eventually giving rise to menu mainstays such as the flat white (though even that origin story remains contested, with New Zealand).

Today, that drink quality is paired with outstanding service. That’s where Australia gains its edge, according to Adam Wang who founded Coffee Anthology in Brisbane, echoing Jody’s sentiments.

“It’s not just about the coffee itself; it’s the whole package. That includes the coffee, customer service, and the organic engagement we have with customers,” he says.

“In Australia, baristas treat customers like friends. They’re excited to talk about coffee and the overall experience. Skillwise, Australian brewers are right up there with the best, and there’s also a very strong roasting community.”

Adam says Coffee Anthology stands out for the way it celebrates coffee.

“We’re one of the largest multi-roaster cafés in Australia. Every day, we run at least four different Australian roasters at the same time,” he says.

“On top of that, we have an international coffee bar inside the same shop. So if you come into Coffee Anthology, you can try at least four different Australian roasters and at least one dedicated international roaster.

“We’re really proud of giving customers options – different single origins, different roasters – without charging extra. Everything is one standard price.”

For Veneziano, Sarah says differentiation comes from listening closely to its customers and designing experiences around how, when and why people engage with coffee.

The business invests in understanding trends and behaviours, brand collabs or new ways customers want to interact, and translates those insights into meaningful experiences.

In the spirit of evolution, it begs the question: what will the most successful cafés be offering in future?

“The question then, is how the World’s 100 Best Coffee Shops will view Australia’s coffee shops in 2026, and what sets our venues apart from international counterparts,” says Jody, from Toby’s Estate.

“We set the bar pretty high last year. From here, it’s about seeing how the industry blends innovation within automation on one side, and a real desire for cafés to slow people down on the other. However it shakes out, café culture keeps evolving, and so will we. But the priority stays the same: coffee quality comes first.”

From Veneziano’s perspective, Sarah says the most successful cafés will be those that combine strong brand thinking with deep customer insight.

“They’ll continually listen, adapt and evolve, responding to shifts in consumer behaviour while staying true to a clear brand purpose,” she says.

“Technology will play a critical role in driving consistency, efficiency and quality behind the bar, freeing teams to deliver better

movement. People are drinking all sorts of alternative beverages, and those kinds of drinks are really coming into their own.”

The secrets to becoming a globallyrecognised coffee shop will be explored further on day two of MICE during the Café Owners Education Series. Jody will feature alongside Nolan Hirte from Proud Mary Coffee, in the session called What Does it Take to Become the World’s best coffee shop? where they will discuss bringing attention to a café on a local/national and international stage. They will also canvas how to sustain attention with high standards and consistency beyond being a social media haven and influencer paradise.

The World’s 100 Best Coffee Shops is a new global recognition system for which coffee shops are judged on the criteria of quality of coffee, barista experience, customer service, innovation, ambience and atmosphere, sustainability practices, food and pastry quality, and consistency.

The competition voting system consists of two main components: public voting and expert evaluations.

Creating coffee connoisseurs

The rise of home machines and the educated ‘prosumer’ is shifting the landscape for cafés, but in ways people might not expect.

For the longest time, the act of getting a coffee was an inherently community-based experience. Customers would pull up to ‘their’ café – that might even remember their name and order – and walk out with their favourite brew and a smile.

Recently, that ritual has shifted. The rise of the home barista and educated prosumer continues to alter when and where coffee is consumed. However, that doesn’t mean the age of the buzzing local café is coming to an end. In fact, it could galvanise the professional industry.

Accommodations are already being made for these at-home coffee connoisseurs, with manufacturers advancing home machine technology, roasters offering fresh coffee delivered to the front door through subscriptions and retail propositions, and cafés retailing home equipment and beans to open a new revenue streams.

Airport, and Veneziano Coffee Roasters, where she became National Training Manager after overseeing national retail operations and being responsible for barista training for wholesale partners, she’s now fully dedicated to training the next generation of baristas with Melbourne Coffee Academy.

The 2016 Australian Barista Championship runner-up –where she finished behind Hugh Kelly – teaches a range of standalone classes including Basic Espresso, Latte Art, Advanced Espresso, and Filter, as well as a four-day Barista Apprenticeship course.

She says an eclectic mix of students ranging from café owners to home enthusiasts attend her classes, but the number of prosumers looking to upskill has surged in recent years.

“We have a mix of students from café owners, baristas wanting to upskill, home espresso enthusiasts, school students wanting to gain employment, through to professionals wanting a career change,” says Jade.

“Without a doubt, this has definitely increased since Covid. Although we don’t like to think back to that time, we all remember what it was like to not be able to go to our local café, and the industry saw a huge rise in customers wanting to make café quality coffee at home.”

Despite this rise in home barista expertise, Jade – who is speaking on the How to turn a hobby into a career panel as part of the MICE26 Café Education Series – says

cafés aren’t being left behind due to this change in coffee consumption. Rather, they have a key role to play in building and guiding interest among this cohort.

“Hospitality fosters loyalty, and the customer becomes the spruiker for your business,” she says. “Businesses simply can’t afford to give substandard service; the competition is too high. It just gives the customer the opportunity to try the café next door.

“Customers are always going to be loyal when they receive great hospitality. Maybe they can be more discerning and hold us to a higher standard with more coffee education, but again this can only be a positive thing. We all know the difference between a good service or product and a bad service or product.”

“Customers always want to support local businesses, so cafés have the opportunity to expand their offering to include retail, work with their roaster to educate staff on approachable ways to make coffee at home, either using blends for customers that prefer their coffee with milk, or rotating single origins for those that like to explore different processing methods and flavours.”

Jade believes proper training of staff is critical to creating this good hospitality, and cafés have the opportunity to tread their own path in creating closer engagement with their customers.

“If you are going to introduce retail into the café, staff need to be trained on how to sell it. Don’t be afraid to

come out from behind the bar and speak with customers at the retail point to assist them with making an informed choice,” she says.

“Simple questions could be ‘how are you making coffee at home?’, ‘do you drink your coffee black or with milk?’, and ‘what flavours do you like in your coffee?’. These will help narrow down what the best beans are for them.

“You could also offer samples in an air pot of single origins, offer a small free coffee with any retail purchase, or run a frequent Q& A session where the Head Barista goes through a different brew method that uses a simple recipe and allowing the customer to have a go themselves.

“This can only be a positive for the industry as it forces us to stay ahead of the curve. I know for myself I get excited when I can share my coffee knowledge with customers that want to learn more and I can make that connection.”

There are few coffee machine manufacturers with as much influence on both the home and commercial sectors as La Marzocco.

A favourite of cafés across Australia, La Marzocco has been steadily expanding its range of home coffee machines with its Linea machines and range of grinders.

2026 marks 11 years since the launch of La Marzocco Home, almost 80 years after Giuseppe and Bruno Bambi first started the business in 1927.

Brand and Marketing Manager at La Marzocco Home, Alexios Antonopoulos, says the passion people find for coffee will, more often than not, start in the local café.

“Top cafés absolutely set the benchmark. When customers experience beautifully dialled-in espresso, precise milk texture and a thoughtful workflow - that becomes the expectation everywhere, including at home.

“Cafés are really the frontline of coffee education. Most prosumers didn’t start with a spec sheet - they started by talking to a barista.”

“Good cafés demystify coffee. They explain origin, processing, extraction, why something tastes the way it does. That curiosity grows naturally, and for some people it turns into a real passion.”

“Coffee is inherently social. It’s about conversation, shared spaces, enjoying great coffee together. Showing up locally matters. You can’t build real community purely online.

“For us in Australia, it’s about keeping the ecosystem connected - cafés, roasters, technicians and home baristas. Education keeps standards high, but community keeps the industry healthy. At the end of the day, coffee is about people. If we keep showing up locally and investing in those relationships, the rest follows.”

TAKE A TRIP TO ORIGIN

Origin is taking centre stage at MICE26, with producers and importers from all over the world converging on one of the world’s top locations for coffee consumption.

The Melbourne International Coffee Festival is a vehicle for connection in the coffee industry. From roasters to café owners, equipment manufacturers to milk suppliers, and everything in between, MICE is where relationships are formed and strengthened.

In 2026, the scope of that connection has expanded with the introduction of Trip to Origin – a new section of the show highlighting some of the best coffee producers from all corners of the world.

Among the attendees is the Brazil Specialty Coffee Association (BSCA), which hopes to display the best of Brazilian coffee at the expo.

“Australia is a highly important market for Brazilian specialty coffees. Melbourne, often considered the coffee capital of Australia, brings together the country’s main specialty coffee players and attracts professionals … from neighbouring markets,” says the BSCA.

“The passion Australians have for specialty coffee mirrors the same passion that drives Brazil to produce high-quality coffee for the most demanding palates worldwide.

“Being present at the most important coffee event in the country is both strategic and a source of pride, as it allows Brazil to showcase its specialty coffees, strengthen relationships, and reinforce its position in this influential market.”

While Brazil is known for being the largest producer of Arabica coffee – and coffee in general – in the world, there’s an impressive scope of varietals grown throughout the region.

From the full-bodied and fruity Cantuaí and Mundo Novo beans associated with Sul de Minas in Minas Gerais, to the balanced varietals of Mogiana in São Paulo, and

Conilon from Atlantico Baiano, the BSCA hopes to display the diversity of its coffee, and those who produce it.

“The sensory range of Brazilian coffees goes far beyond the cup … this diversity of varieties, post-harvest processes, and research is expressed in every cup,” says the BSCA.

“More importantly, behind each cup there is a family, a story, and the work of thousands of people who bring Brazilian specialty coffees to the world.

“At MICE, we will present this diversity through our brew bar and cupping sessions, and we look forward to welcoming specialists, buyers, baristas, and coffee enthusiasts to share an excellent coffee and meaningful conversations.”

From specialty coffee associations like the BSCA, to collaborations like the Australia PNG Economic Partnership, and local green bean importers including Southland Merchants and Upstream Coffee Imports, Trip to Origin is positioned as one of the must-see areas of MICE26.

Following a record-breaking year in 2025, CafeSmart is showing no signs of slowing down in its important mission – despite the fact it’s been a tough trading period for cafés, they still rose to the challenge.

“It was our 15th anniversary last year, so it was quite fitting it was our biggest year so far,” says Alan White, CEO of StreetSmart Australia – a charity organisation aimed to fight homelessness by raising funds for grassroots organisations.

Among the 499 organisations StreetSmart supported in 2025, CafeSmart plays an important role, as cafés donate $1 for every coffee sold during CafeSmart Week, which takes place annually in August.

“Those grants translate to over 7,400 people supported, so it’s an amazing impact – we’re super proud of it,” says Alan.

people prioritising meeting rent payments over meals.

Alan says CafeSmart works to respond to that, with 40 per cent of 2025 grants going towards food relief programs such as community pantries, ready-to-eat meals, and hampers.

“It’s really important for us at StreetSmart to plug the funding gaps wherever it’s needed – we saw that food insecurity was a growing concern for more people than ever in 2025, so we’re doing what we can to respond to that.”

The magic of CafeSmart lies in its localised impact – communities taking action for their own communities. A single dollar from a CafeSmart coffee goes on quite a journey – joining thousands of others before being returned to the community it came from, to support people without a safe place to call home.

CafeSmart’s 2025 campaign saw 823 cafes and 51 roasters participate – the highest number on record – which was incredibly special to Alan.

“At StreetSmart we know the hospitality and not-for-profit sectors have really had it

tough the last few years, so to have that support and everyone come together around CafeSmart time is really special,” he says.

“We feel very lucky that even though it has been a tough year for many, everyone really does rally around CafeSmart time.”

The StreetSmart team is expecting to carry that momentum; with around 30,000 cafés in Australia, Alan says the team “would love to tap into even a tenth of that”.

“It’s probably a bit bold for 2026, but crossing the 1000 participants mark has been a goal for a long time, so we really hope to cross that this year.”

MICE26 will serve as the CafeSmart’s official 2026 campaign launch, where cafés and roasters will be encouraged to sign up for this year’s initiative. Attendees will also be able to pre-order this year’s merch, featuring designs created by the coffee community through a dedicated design competition.

“Our big goal for 2026 is trying to involve cafés and roasters in the whole campaign, in terms of giving them the opportunity

to co-design elements of the campaign. We don’t want CafeSmart to be a campaign we’re just delivering to them – we want cafés and roasters to really feel part of it,” says Alan.

Getting involved in CafeSmart is straightforward: interested cafés can sign up on the CafeSmart website and follow the prompts.

Come CafeSmart Week, participating venues are encouraged to display posters (all necessary materials are sent out), along with a $1 donation from coffee sold on the Friday of CafeSmart Week.

“CaféSmart is going from strength-tostrength, which we’re absolutely loving. Each year we’re blown away by the support, but unfortunately, the reality is the campaign is still very much needed. Demand for housing and support services continues to grow, which is why we’re so focused on rallying the industry and recruiting more cafés each year.”

Across 22 sessions, the Café Owners Education Series will tackle the realities of modern café ownership – from profitability and people management to menu innovation, sustainability, and growth.

SETTING STRONG ROOTS

Café businesses face challenges not because of poor coffee, but often because of compromised foundations. Several sessions will focus squarely on setting businesses up correctly from the start – or fixing problems arisen without solid foundations set early on.

With the average café charging $5.50 for a coffee, fair pricing is returning as one of the headline topics in 2026.

The Coffee Value Gap will delve into the disconnect between low local coffee prices, the higher costs of production and international pricing. Lucy Ward, Head of Operations and Sourcing at ST. ALi Coffee Roasters, Abdullah Ramay, CEO of Pablo & Rusty’s Coffee Roasters, and Andre Selga, Co-founder and Director of Southland Merchants, will feature in what may be one of the most consequential sessions at MICE26.

“We recently saw the Australian Bureau of Statistics that coffee has emerged as one of the strongest inflation drivers, with prices for coffee, tea and cocoa surging more than 15 per cent in the year to November 2025,”

Sarah says. “Making pricing decisions is easier said than done, but when green bean prices are nearly double what they were a year ago – thanks to lower coffee-bean supply from overseas producers, and below average rainfall in Brazil combined with the strength of the Brazilian real – there’s immense pressure but also reluctance among roasters and cafés to pass on those price rises.”

Beyond this discussion will be a panel session dedicated on How to price your coffee and the key considerations when starting your menu from scratch. The session is ideal for operators looking to make pricing changes or for those questioning how other professionals are tackling this thorny topic in the face of competitors and customer concerns.

Meanwhile, Café Management 101 will offer a practical reset, unpacking the essentials of running a sustainable hospitality business. From understanding profit and loss statements to navigating legal obligations and retail rights, the session is designed to help owners avoid costly missteps.

That conversation continues in How to Establish Your First Café and Be Profitable examining the financial and operational decisions that shape success early on.

Independent versus franchise models, supplier relationships, lease considerations, and cash flow planning will all be addressed by the panel comprising Restaurant & Catering Association of Australia National President John Hart, Brisbane-based The Hideout Specialty Coffee Owner Eddie Cho, and Junnie Phyu who runs a coffee training workshop and Melbourne-based café More Coffee.

For established businesses, sessions such as How to Scale Smart and Longevity in the Café Market will shift the focus to controlled growth, resilience, and how to stay relevant and profitable in a dynamic and, at times, volatile market.

UNLOCKED

MENUS THAT WORK HARDER

Menus often sit at the intersection of creativity and commerce. Several sessions in the program will examine how café menus are evolving – and how owners can latch on to meaningful trends.

Curating the Ultimate Café Menu will look at balance: offering enough choice to excite customers while maintaining operational efficiency. The Wellness Era of Coffee will explore how health-conscious consumers are influencing drink and food offerings, from functional beverages and protein-forward options to portion size and ingredient transparency.

Organisers are turning the lights down and the volume up with the inaugural MICE at Night, an after-hours twist bringing a fresh buzz to the show floor.

For many café owners, operators, and baristas, attending industry events during standard business hours has always been a challenge – but a new sunset soirée is about to change that at MICE26.

A natural extension of the exciting roster of events throughout the expo, MICE at Night has been designed to better serve the people powering the industry every day.

“We know how hard baristas, managers, and café owners work, so MICE at Night will be an opportunity for them to let off steam while they network,” says Prime Creative Media General Manager – Events Siobhan Rocks.

Taking place on day two (Friday 27 March) of MICE, the initiative will extend show hours into the evening to allow coffee professionals to attend after service, connect with peers, network with industry suppliers, do business, participate in educational discussion, and experience the best of the expo – all at night.

Following its recent international debut, La Marzocco’s Jay Grinder will take flight at MICE26.

Whether it be favourite commercial models like the Linea Classic S or GB5, home machines like the Linea Mini and Linea Micra, or future-facing innovations like the Modbar, La Marzocco has an enviable reputation for blending high performance with practical barista workflow.

The manufacturer is staying true to this legacy with the new Jay Grinder – its third grinder in as many years.

Following its debut at Host Milano in 2025, the Jay Grinder has been available in Australia since early 2026, and trialled and tested by several of La Marzocco’s roaster partners, including Coffee Supreme and Veneziano Coffee Roasters. MICE attendees can get up close and personal with the grinder at the Roasters Playground, offering the opportunity to see the Jay in action.

It’s the first in the La Marzocco range to be equipped with blind burrs, which are magnetically mounted from the back of the chassis. This design has eliminated screw holes that can interrupt the cutting surface of the 68-millimeter flat burrs set at a 45-degree angle.

La Marzocco’s design team put plenty of thought into the angle of the burrs to minimise coffee retention in the grinder, equating to less purging for grind adjustments. Dialling in has also been simplified, reducing waste.

La Marzocco Sales Manager and Product Strategy Lead, Brydon Price, says simplicity and high performance are at the heart of the company’s latest grinding innovation.

“The Jay Grinder importantly focuses on simple, reliable interaction with those functions critical to the barista during coffee

service. Rather than multiple menus of unused options, the Jay makes it easy for any barista to understand and manage dose, grind, extraction. With minimal retention these parameters are super easy to realise,” says Brydon.

“The revolutionary magnetic burr carrier also simplifies the cleaning and maintenance of the Jay Grinder. So quick and easy, it encourages this critical task to be completed every day in no time at all, ensuring long term peak performance.”

Aligned with all La Marzocco equipment design, coffee contact is limited to stainless steel when using the Jay. The material was used on every surface of the grinding chamber, while the machine itself is built on a painted aluminium frame.

Every Jay is also grind-by-weight compatible when paired with a La Marzocco connected scale, contributing to the brand’s long-held goal of creating a high-quality, interconnected system behind the coffee bar.

“Jay is designed around real bar workflow: reducing waste, simplifying consistency, and integrating seamlessly into a connected coffee bar rather than adding unnecessary complexity,” says La Marzocco Commercial Brand and Marketing Manager, Johanna Hahn.

Brew Guide: Moccamaster KBG Select

1. Pour fresh, good quality cold water into the water reservoir. Fold the filter paper at the seams so it fits snugly into the filter basket (if they are Moccamaster papers there is no need rinse the filter paper at the sink, otherwise, unbleached papers will need to be rinsed).

2. Add freshly roasted, ground coffee to the filter basket at a ratio of 60 grams to 1L of water. The grounds should be medium grind with a consistency like sugar, or coarse sand. A level scoop that comes with

the machine equals 10 grams, otherwise use a scale to weigh your coffee.

3. Select the half or full carafe setting at the switch on the machine and the dual element will determine the flow rate, then flick on the power switch for the correct extraction.

The coffee will brew between 92 and 96 degrees Celsius – the perfect temperature –and you’ll end up with perfectly balanced brew.
