INFLUENCER Longmont is Delish! I like food. I LOVE good food. I have permanently instated a “nocook Friday” in my household just so I can try out different restaurants—even though I do enjoy cooking. I even tailor my vacation plans around where the good restaurants are. And honestly— it’s summer, the last thing I want to do is fire up the oven when it’s 98 degrees outside. I’m perfectly happy to let someone else take the reins on that one. Luckily for me, here in Longmont, you can’t throw a rock without hitting a great restaurant, brewery, or bar and I don’t even have to drive far—bonus. In this edition we dish on foodie fare from the classic to the complicated. Think great burgers to Pacific island infused menus. If you’re into it, you can probably find it around here. Speaking of summer, our favorite events are back! Finally, after entertaining ourselves for two years, we can just show up and let other people do the work. That really makes this summer something to look forward to.

Is it the onee you grill yourself with the caramelized onion ns, garlic mash and a whopping half pound of bison chuck? Too complicated? Perh haps you just succumb to the tim meless joy of a Big Mac attacck and call it good. It’s kind of a ridicu ulous question. How can n anyone say what the best local burger is—or the best way to make one— —when everyone’s tastes and preferences and co ooki king i styles differ? BY LINDA THORSEN BOND for LONGMONT MAGAZINE Dry. Sober. And fun? The upand-coming approach to nightlife in Longmont is stone cold sober. Yes, you heard me. It’s bars with no alcohol, no way, no how. But is it fun? Apparently, if the growing number of fans is an indicator.

Dry or sober bars are popping up all across the nation. Longmont’s Colorado Mountain Kava Bar co-owner Sam Monastra said the biggest job has been informing people that there’s something new to try. “People are kind of surprised, but they’re having a good time and telling their friends about it. It’s nice because we have a mix of people having great conversations, genuine conversations without alcohol,” he said. Kava is a root tea grown in the vol12 LONGMONT MAGAZINE

Tobin has been in Longmont a little less than five years and felt that it was hard to find a place that’s somewhere between coffee shops and bars, especially at night. “People are happy to have something that’s open late at night but doesn’t serve alcohol,” Sam said. “There’s less hassle, less trouble. It’s especially good for young people who are maybe going to college or in the work force but want to go to a safe, positive spot. We are a chill bar. It’s not super loud, so you can talk or read a book; there’s a pool table and everyone is really nice. It’s a good place to meet people, an awesome place to socialize with no triggers like alcohol.” If the taste of Kava is hard to take, why do people keep coming back to

BY ELISE OBERLIESEN for LONGMONT MAGAZINE Sean Gafner, owner of Swaylo’s Tiki, Jefes, The Roost, and the beloved Smokin Bowls, which he closed and converted into a bakery—undeniably, is one of the hardest working humans in the restaurant industry. Considering his accomplishments running several successful restaurants in Longmont, it’s a wonder whether he sleeps. When asked why he does what he does, his candid re16 LONGMONT MAGAZINE
No stranger to putting in a hard days’ work, Gafner attributes his work ethic to earlier days working long hours on a dusty, heat soaked 40-acre farm—in California. Here, Gafner shares the makings of his successful restaurant operation that many Longmont locals have come to adore.
Q
uestion—With three restaurants and a bakery, what drives you to continue adding new restaurants and growing your business? First, I just feel super fortunate that, at 41 years old, I’ve been able to
really identify what exactly I want to do with my life. And second, I’m surrounded by the people that want to do this with me—an with people who are great at it. I’ve realized after 25 years of just doing nearly everything, mostly in restaurants, I have it narrowed down to two things and that’s all I’m doing. These two things for me are creating and developing.
Q
What do you like to create and develop the most? And how do you do that? I create food and beverage concepts and develop the leaders who run them. That’s it. I’m not a believer of multitasking. That means I’m finding the person who also does one of their two things well, like social media. Before running my restaurants, for last 15 years, I did all social media for all restaurants where I’ve previously worked. And it’s just a bottleneck, because with social media, it’s just one out of 100 things I was doing. If someone else can do it better, and really wants to, then that’s what they get to do—instead of asking everyLongmontMagazine.com
body to do everything. Tasks like paying invoices, setting up employee schedules, data entry. So I brought this concept of doing the top two tasks to our whole company, [so it can run more efficiently.]
Q
What is it you most love about your job running restaurants?
I love to create. I write every recipe and every menu. I love designing the kitchen. I love designing the kitchen brigade and everything about creating a restaurant. But I’m not great at being a restaurant manager five days a week for the rest of my life. I also really love seeing other people become great leaders. I’ve always been passionate about development and leadership. I read 50 books a year so I can develop leaders and help them grow—

whether it’s time management or restaurant management. And I get to do what I love to do.
Q
What has made you so successful, given the times we’re living in, coupled with the tumultuous nature of the restaurant and food service industry?
It’s the people, our amazing staff. The whole world had a really hard time between 2020-2021, but the way we went through it as a team made a difference. We had about 130 employees at the time and laid off 130 employees at the time. But we sat in it with them. We sat there for weeks helping 100 employees apply for

unemployment. My wife and I also made Christmas gifts for all the

employees in December 2020. We drove around to all our employees’ houses to deliver Christmas gifts. When we came out of the pandemic and restaurants re-opened in 2021, we were so much stronger as a team. And we had plenty of staff, despite other restaurants that struggled with staff. People always tell me we have such great staff.
Q
On your recent travels to Costa Rica, what was the tastiest food and drink? And did it inspire any new creations for the menu at Jefe’s? My favorite food there is also my favorite here, ceviche and fresh fish, like Pacific red snapper and shrimp. When you’re hot and on the beach, there’s just nothing better than good ceviche. Every time I go there,

I definitely grew up working really hard on a farm, so transitioning into restaurants, it hasn’t really felt like hard work.
How is the bakery coming along?
We have two great pastry chefs and this big bakery. We’re baking tons of desserts and breads and making all the ice creams, like our fried ice cream. It’s what we serve in our restaurants.

Out of all your restaurants, do you have a favorite?
No way. I love them all, they’re all so unique. Each restaurant is so

brings social change to the community BY ADAM GOLDSTEIN for LONGMONT MAGAZINE A pair of tragic deaths sparked El Comité de Longmont’s decadeslong push for justice, equality and civil rights. In 1980, Longmont police officers shot and killed two Latino teens, and the violence sparked outrage across the local Hispanic community. Latino leaders organized protests, grassroots action and candlelight vigils; hundreds marched on El Comité de Longmont assists community with resources for a wide variety of need. Doing things virtually makes it more difficult,” Nelson said. “Moving forward, we want to offer learning sessions on technology to help our clients more easily connect.”

The pandemic also waylaid the agency’s annual fundraiser, but that critical event is coming back this year. “The Ties That Bind Us,” a fundraising dinner slated for Aug. 20, will mark an important milestone in El Comité’s return to normal. “It’s going to be our first fundraising event since 2019,” Nelson said. “We are a Latina-led agency, and it’s really great that we’re able to do these community events again.”

People-Powered Approach Grows a Nationwide Movement
The national nonprofit empowers local volunteers to become catalysts for change in their communities Longmont— Can’d Aid, the people-powered nonprofit with a national footprint, is creating a movement that rallies people from all walks of life to become catalysts for change in their communities. At the core of Can’d Aid’s mission is a sense of community and a genuine belief that everyone has the ability to give back and do good. Since its inception in 2013, the organization has built meaningful relationships with community leaders, nonprofit organizations, volunteers and corporate partners to drive real change. Through a unique and integrated approach that incorporates sustainability, disaster relief, physical health and mental wellness, Can’d Aid’s programs provide critical resources to communities in need and are July / August 2022

creating transformational impacts across the country. While those impacts are tangible, you can see them throughout communities in murals, on kids biking with Can’d Aid logos on their helmets, and in parks where volunteers help clean up outdoor spaces, the movement that Can’d Aid is building is more abstract. The movement, and the feeling of doing good that Can’d Aid makes accessible to volunteers nationwide, is woven into the hearts of communities.
Paying It Forward One of Can’d Aid’s core programs is disaster relief, where the nonprofit works to deliver emergency drinking water to communities in need. In 2016, at the height of the water crisis in Flint, Mich., Can’d Aid delivered 200,000 cans of drinking water to the community. Five years later in 2021, a Flint resident who had received and relied upon Can’d Aid’s clean drinking water for several months became a part of the movement again, when they volunteered with their emLONGMONT MAGAZINE 25

This pay it forward moment reinforced the power of what a single act of kindness can do, and how easily the ripple effect of goodness grows. “Working with Can’d Aid on building skateboards was a full circle, surreal experience for me,” said Shelby Coleman, Journeys employee and Can’d Aid volunteer. “Can’d Aid donated water to my city when we were in dire need during the beginning of the water crisis and it felt so good in my soul to help them out by working on boards for kids.”
Inspiring an Inclusive Park
In 2021, Can’d Aid partnered with a Colorado-based company to provide volunteer opportunities for employees. As the company worked with Can’d Aid to build and distribute bicycles and skateboards for youth in the area, one employee was determined to continue the mission to provide healthy outlets for all children. 26 LONGMONT MAGAZINE
That employee was Lauren Bowling. Lauren and her husband Richard are the parents of six -year-old Braxton and five-year-old twins Mack and Miles. Miles has cerebral palsy and is dependent on a wheelchair for his mobility. Lauren’s family does not have access to an accessible playground in her community, and she had a dream to build one that would provide inclusive opportunities for all children in the area. Once Lauren was introduced to Can’d Aid’s mission to provide underserved youth with the tools they need to lead healthy and active lives during the work-sponsored volunteer project, she became a part of the movement. Lauren brought her idea to build an accessible park to the Can’d Aid team, and the nonprofit is now working to make this park a reality. The Berthoud Adaptive Park Project is well underway with the goal to build a fully inclusive park that will provide access to healthy play for all children in the area.
In communities nationwide, Can’d Aid’s programs also provide an opportunity for people to share their love of the arts and to foster creativity and joy. The nonprofit creates community murals, where neighbors volunteer to help paint and create on a local wall. These murals not only allow individuals to tap into their inner artist, but also act as meeting places for neighbors to connect and learn more about one another. Through its Music + Arts program, Can’d Aid also facilitates instrument donations to support music programs in underserved school districts. On the day of the donations, Can’d Aid works with awardwinning professional musicians, like the Steep Canyon Rangers, to provide inspiring live performances for students. Artists stop in classrooms across the US while on tour – sharing their experiences as professional musicians, providing hands-on musical interaction and often introducing students to new genres of music like bluegrass, funk and Americana. Beyond being great opportunities to inspire children to become the next generation of artists, something more simple is at work: music inspires and heals. for America’s youth continues to play an important role in combating skyrocketing rates of mental illness, anxiety and depression. “It’s really beautiful to see the pure joy of kids. They are clapping and cheering about getting to play their new instruments with us. It’s what music is all about,” said Josh Fairman, who plays bass and synth for the electrofunk band SunSquabi. After years of partnership with Can’d Aid’s Music + Arts program as TUNES Ambassadors, Josh and the band joined Can’d Aid in Colorado this spring for a donation of instruments in their hometown. “I was so excited to work with Can’d Aid to give the students in Longmont, Colo., new instruments. It

was really meaningful to give back to a school in my hometown where I was also introduced to a love for music,” said Kevin Donohue, guitarist and keyboardist for SunSquabi.
The Can’d Aid Movement With help of Can’d Aid volunteers nationwide, more than 2 million
cans of water have been distributed, over 9,600 skateboards and bikes and 4,000 art kits have been built for underserved youth, more than 3,000 instruments have been donated and the equivalent of 73 million aluminum cans have been recycled. “It turns out that doing good also feels good, and people are excited to share that feeling,” says Ralston. “That’s what keeps our volunteers and partners coming back to Can’d Aid. Whether they were introduced to us at work, were the beneficiaries of one of our programs, or from a friend that is a part of the movement already, we’re seeing that people are looking for ways to be part of something larger than themselves and are continuing our mission in ways that are most meaningful to them.”

What’s new to your summer menu? Every summer we replace a lot of our produce with local, seasonal items. We also replace some heavier winter dishes with lighter, more refreshing dishes like our grilled avocado appetizer, our grilled 60 South salmon with red curry sauce, arroz on polio and many others.
Do you have vegetarian/ vegan menu options? Absolutely. Part of having a locally sourced menu is providing the freshest in produce. NIWOT TAVERN Niwot Tavern
Niwot Tavern was established in 2005. Purchased by Stacy Szydlek & Tara Shaheen, employees, January of 2020, right before the pandemic hit. We survived doing take-out for 18 months and turning our patio into a music stage for the parking lot. Not ideal, but we made it! We love Niwot and try to do what we can for our and surrounding communities.
Tell us about the inspiration behind your menu and what’s special about it? We make food that we love to eat! We get inspiration everywhere. From TV and magazines to pow wows with our chefs. We make things try it as a special, and if people love it as much as we do, it usually makes the next cut. We try and change the menu up every six months. A new one launched on June 9!
Describe your most popular dish. Most days our Blackened Salmon Sandwich is actually the top seller; blackened salmon with avocado, onion, spicy remoulade, lettuce and tomato on a brioche bun. However, as I am writing this, our new menu is not yet published so this could change.

Describe your most popular dish. Our traditional wings tossed in garlic hot is what we like to think put us on the map. But, our retro classic crinklecut fries and our shack salads have a special place in a lot of hearts.
What’s new to your summer menu? We are excited to launch a new meatless chicken sandwich for all the buffalo loving vegetarians out there.

Mahi Mahi tacos are a hit, with mango salsa, avocado sauce and cabbage in
crisp corn tortillas served with Thai basil rice and black beans. The Big Bowls are a unique feature on the menu. Choose from salads, ramen or rice and customize with your chosen protein. The cocktails are also reminiscent of something you would order on a Hawaiian vacation, complete with whimsical tiki glasses.

The Pumphouse opened in May of 1996 as an independently-owned, single-unit brewpub housed in a Historical Landmark building. The Red Zone was opened in October of 2004 as an expansion to the established Pumphouse, with sights set on providing Longmont a first-rate sports bar.

trading post in the 150- to 200-seat restaurant and brewery. “A chain restaurant is a highly corporatized structure, and we are just a site of a lot of creative spontaneity, elevated beer making and cuisine, and storytelling,” said Nicc Fuller-Elgh, cofounder, co-creator and general manager of Outworld Brewing, a black woman- and LGBTQ+-owned and -operated business. “We wanted to brew, but we also felt like the experience of drinking beer was lacking something. … We wanted an immersive world where people can come to where strange things can happen.”
The story of Outworld Brewing, a family-friendly restaurant, brewery and event venue that opened in February 2020, is that Earth, or Terra, is an outer-lying planet or off-planet location for tappists, an intergalactic order of brewer-trader monks. The word “tappists” plays on beer taps and Trappists, monks who brewed Belgian beer. Outworld Brewing serves 16 original brews with mostly local ingredients in traditional styles and rotating and seasonal offerings that “explore the boundaries of experimentation,” as stated on the website. The cuisine is in Belgian, Bavarian and Creole/Cajun styles and features appetizers, entrees, sandwiches and salads, with the favorite sausage platter soon returning. There’s also a kids menu and at least one to two desserts.

The tappists’ trading vessel broke down on Earth, specifically in Longmont. The tappists remained invisible until their density camouflage generator failed, so they turned their trading vessel into a trading post. The bar front is carved with tappist elements in bold, and the décor has those elements, glyphs for the Outworld alphabet, symbols for the speculative universe and the four elements of Earth. The main symbol is the Armilliary sphere, symbolizing being stranded on Earth and the main component of the Outworld logo.

Collision Brewing Co., which opened in Longmont in September 2018, combines a passion for beer with a passion for building cars in what looks like a ’50s style garage. The front of the garage is the restaurant, bar and brewery, plus event space, and in back is an automotive shop, where the co-owners rebuild classic hot rods. “We absolutely love cars and automobiles, and when the concept was created, it was a collaboration of our passions,” said Eric Blythe, co-owner of Collision Brewing with his father, Kent, and brother, Jason.
The car theme shows up in multiple places, such as the names for food, beer and cocktails, like a kolsch called Blinker Fluid and an IPA with the name Road Rash. Behind the bar, there is a classic Chevy grill that lights up. The tap handles are tools, the overhead lights are made to look like car headlights, and classic car logos are engraved in cutout metal on top of the bar.
“When you sit down, they’re right in front of you,” Blythe said. “People love the cars and see the old logos. And they think it’s cool.” The bar has 20 beers on tap, including eight staples and 12 that rotate, along with cider from four local

The food is upscale pub fair and vegan with favorites like burgers and mac ’n cheese, and it’s made in a scratch kitchen, so the menu is always changing. “With a lot of our food names, the car names dropped off,” Blythe said. “Most of the car names stuck with the beer.” The restaurant is family-friendly with a kids menu, and the patio is dog-friendly. Car shows and car club visits are welcome and can include tours of the garage and restored cars in back. There are even large carthemed murals down the hall and gas pumps in front. “It’s pretty much the whole building,” Blythe said. “It’s very upbeat, friendly and welcoming.”

“It’s a pretty wild thing we’re doing,” said Sean Gafner, executive chef and owner of Swaylo’s. “We’ve gone way over the top with this thing.” The focal point of the restaurant is a hand-built, 1,000-foot pirate ship rising 13 feet above the roofline. The ship, made out of Colorado pine, has seating inside with additional seating surrounding it in the form of beach bungalows and Tiki huts against a tropical beach paradise made to look like Hawaii or another Pacific island. “It’s family friendly on the outside and dark inside. There are skulls, mermaids and lots and lots of rum,” Gafner said. “The entire bar is in the entire ship.”
The bar has 50 seats, there’s 150 seats in the dining room, and another 50 are on the patio. The roof is covered in palm thatch, large decorative fish hang from the ceiling, and weaved banana leaves cover the walls. “Think ‘Pirates of the Caribbean’ or ‘Goonies.’ There are treasure chests, gold doubloons and topless mermaids,” Gafner said. “Everything is fantasy and escapism.” The décor includes more than 100 handmade Tiki mugs, and there are 100 rums from 16 different countries, including three from Longmont. The menu features 20 types of seafood from the Pacific. “We spent a lot of time researching Tiki bars and the heart of Tiki, Hawaii and tropical locations,” Gafner said. “We embrace the theme of Tiki and all things Pacific island.” LONGMONT MAGAZINE 53

Menus continually change, depending on the harvest, Burton said. She stays in communication with all the chefs who prepare the meals and menus. Each dinner features a different local chef and non-profit fundraiser.

“We send out what we are harvesting two weeks ahead of time and the chefs make the menu from that. And we also get produce from other local organic regenerative farms.” At the dinners, chefs enjoy meeting
guests, Burton said. They are enthusiastic when it comes to educating people about how regenerative agriculture works—and ways it could mitigate atmospheric carbon while improving food production and sustainability practices.

Black Cat Farm
Ever eaten at Bramble and Hare, in Boulder? No doubt, Owners Eric and Jill Skokan have put their hearts and souls into food—and providing locals with farm fresh locally sourced fare. This includes both at their restaurant and the farm. During the pandemic, they made some impressive upgrades to the farm dining experience. “We built private cabanas for people to enjoy dinners at the farm. And we 58 LONGMONT MAGAZINE
sold out every night for a year and a half,” he said. And now, the construction updates continue, which means the farm table dinners are on pause. “Boulder County is asking us for more construction,” Skokan said. “The construction process has been arduous.” Construction efforts include more ADA-approved restrooms and commercial plumbing updates with some recertifications, he said. Keep in mind, these farm buildings were built in 1883. As the Skokans wait for approval seals from Boulder County, their plan is to bring memorable farm-totable dining experiences back this fall. Check their website to stay up to date on the grand re-opening. In the meantime, the farm continues doing what farms do—grow and produce food—over 8,000 pepper plants and 10,000 tomato plants, to be precise, Skokan said.
Once they re-open, the farm can accommodate about two dozen guests per night. Guests can choose the pergola area or a cozy cabana.

sheep, 10 cows, 200 pigs and 500 laying hens across about 800 acres, 43 of which they own and the rest they lease. It’s quite an impressive operation considering that just a decade ago Johnson and Scariot weren’t farmers. In fact, they were living in a loft and they’re quick to joke that, back then, they didn’t know whether you needed a rooster for eggs and they definitely had no idea how to shear sheep. scientists say regenerative agriculture practices can help remove carbon from the atmosphere and put it back in the soil. The animals live on pasture year-round and the farm is GMO and soy-free. In 2016, Johnson and Scariot opened SkyPilot Farm at the site that was previously the Haas Family Farm. Located on Airport Road and across the street from a regional airport, the couple thought SkyPilot was a fitting name (and it gave them an opportunity to dress up a fictional sheep as Amelia Earhart for their logo). Then, what happens next almost sounds like the plot of a children’s book. They wanted more space for their dog Charlie. With more space, they got a couple backyard chickens. Then a goat because he seemed nice. And then another goat because goats need friends. Then they thought “why not sheep, too.” Soon they had a 128 square-foot organic garden with 30 chickens, a couple dozen sheep plus four dogs and a couple barn cats. Then, they decided they needed a real farm and in 2016 they opened SkyPilot, a GMO and soy-free farm
where animals live on pasture yearround. “It was a hobby that quickly escalated,” says Johnson. “We figure that people eat three times a day so there’s got to be a way to make this work.” A challenge for farmers, she says, is finding land to farm. The land where SkyPilot farm is located has been a farm for more than 100 years. It was placed under a conservation easement in 1977 to preserve local farmland. got cooking this summer. Here’s some dishes you can try at home! Coleslaw with fresh ingredients. “There’s nothing better than a really fresh coleslaw with a sandwich or barbecue,” says Johnson, who prefers the vinegar-based ones over cream sales. She uses finely shredded cabbage and carrots for her coleslaw, with a little fennel. Add in some ground mustard and apple cider vinegar. With a little imagination, it’s a crunchy, versatile summer dish, she says. Make your bacon in a cast iron. Pop it in the oven. It’s easy to clean, plus you can save the fat that comes off the bacon, she says. Use the reserved fat on green beans or in root veggie dishes for bacon-flavored goodness. Make marinade by combining oil, salt and pepper, onion, celery, garlic, mushroom and cilantro with raw pork and let marinate for 1 to 3 days. Then when ready, remove marinated pork from fridge, gently wipe off marinade, and sear pork in a pan with hot oil, being sure to caramelize all sides of the meat. Then, combine the braising liquid with seared pork and braise until pork is tender, approximately 4 hours at 275°F. Let pork rest to room temperature, then shred pork to desired consistency. To reserve, cover in braising liquid and refrigerate for up to one week. To make salsa, combine ingredients and let sit overnight. When ready to make tacos, warm tortillas on cast iron griddle with a small amount of fat, frying tortillas on both sides until hot. The Boulder County Fair will be a four-day event this year running from Thursday, August 11 through Sun nday, August 14. The fair has seen many manifestations in its 153-year history, from a weekend of horse racing and agricultural shows in Roosevelt Park in the 1920s to the 150th celebration in 2019 which spanned 10 days. This is so important to the local music scene in the community, because with the pandemic many musicians were unable to play in person, so this provides a safe space for them to play. It also gives smaller musicians a chance to be seen
and heard and can promote themselves. It also builds a stronger, wider reaching community around the farm.” Acoustic Jamboree starts at 4 p.m. and ends at 8 p.m. Advanced sign-up is required to play.
