FOOD + FUN If the pandemic has taught me one thing...it’s an appreciation of restaurants. I have always loved to cook, but knowing that there was no break to be had, even when I needed one, got to me after awhile. It becomes just another daily box to tick off my list rather than an exercise in creativity. Of course, I did takeout when possible, but even that leaves dishes to be done and don’t even get me started on the constant kitchen cleaning. I am over it. So, along with many of you, I’m sure, I am rejoicing at the return of in-person dining. I’m happy to let someone else do all of the cooking and cleaning again, while I truly take a break. Just in case you need ideas or just want to know how your favorite spots are doing, this issue is chock-full. And speaking of things to look forward to, many summer events are making a comeback, bringing old-favorites along with the new public safety measures. Overall, there’s a lot to spark joy this season—get out and take advantage of it.

THE RESTAURANT SCENE CHANGED DURING THE PANDEMIC from crowded dining rooms to outdoor seating and curbside service; from plastic menus to QR codes; from the normal way of doing business to a “new normal.” Restaurant owners have a renewed respect for their loyal customers, who have weathered this strange time with them. Justin Brown, owner of Gourmet Grub in Greeley, said that, despite being a relatively new business when the pandemic started, the restaurant has gotten through this time better than it should have. “I think a lot of that was catering to people and feeling what they’re feeling,” he said. “We were there right with them.” Bryan Jones, owner of Henry’s Pub in Loveland, said, “This last year has taught us to not be comfortable. Things can change in the blink of an eye. We have adapted and overcome and will continue to do so as the rules and regulations keep changing.”

The restaurant has been in business for a little over three years. “We were barely new before the pandemic, grasping at business to be honest,” Brown said. “We were right on top of the hill in the fact that people were recognizing us;

Henry’s Pub also pivoted from full restaurants to a lot of takeout and delivery through various delivery platforms. “We have adapted to the ever changing regulations, from being closed for dining to 25 percent occupancy to 50 percent occupancy along with social distancing of tables,” Jones said.

Brown said that chefs have also had to look at what they were serving. There have been food shortages, price hikes. “We’ve had to change our menu up a bunch, which we did anyway. But we’re looking to change again. Cases of wings have tripled in price, for example,” he said.

He added that guests have commented on how their strict protocols have made them feel safe to dine at the restaurant.

They started doing a lot of family take home to-go meals. They got creative hunting for deals from the food distributors, which Brown says helped the business get through this time. Since the restaurant is spacious, they were able to adequately social distance and make people feel safe. The restaurant has a loyal fan base that has supported them through the lean times with takeout and delivery, he said. They have had no problems filling every seat they’re able to have open. Their sales are down 35% compared to pre-pandemic. They had a lot of takeout and delivery, but loss of alcohol sales didn’t help. Servers and bartenders have also taken a loss of income.

A downtown building with a long history has a new lease on life – and, with COVID restrictions finally beginning to loosen, a busy future ahead as a local location for events and activities. The former Greeley Masonic Temple, located at 829 10th Avenue, has been completely transformed into Mason’s Event Center, a modernized events facility, with state-of-the-art sound and a roomy but historic feel, ideal for weddings, banquets and other post-pandemic activities. Interestingly, the 1927-era building’s rebirth was overseen by two well-known local physicians, Dr. Maurice Lyons and Dr. Chris Michael – respectively a cardiac surgeon and cardiac anesthesiologist at Banner’s North Colorado Medical Center – who were both looking for their first joint venture outside of medicine. They discovered that the home of a once-thriving Masonic lodge, host to gatherings of the semi-secretive fraternal organization, might be available as an investment. “We’ve worked together for roughly 18 years,” Lyons said. “About five years ago, we heard that there were only six Masons left at the Greeley temple, and they were looking to sell the building because it was hard to keep up with operating costs. We loved the building, but realized it needed a lot of work.”

plumbing, a three-phase electric system and modernized floor and walls. It’s also received a new audiovisual system designed and installed by Gaff Michael, a two-time Emmy Award winning sound engineer, who just happens to be Chris Michael’s younger brother. “This is the largest local event center and the only event center of historic importance, given the location of the Masonic temple,” Lyons said. “The building has been deemed an architecturally significant structure as it was designed by William N. Bowman, arguably the most famous Colorado architect. As such, the building is an event center with ties to the very significant architectural history of the era.” Mason’s Event Center had worked out most of the bugs and was ready to welcome guests at the end of 2019, but like many businesses in Colorado, the COVID-19 pandemic came along and state regulations led to a total suspension of activities.

the remaining members for $100,000 and had budgeted approximately $350,00 for renovations. Unfortunately, due to code regulations, the renovation budget jumped to more than $800,000, but Lyons said the Greeley Historic Society was able to find a variety of federal and state tax credits to defray some of the costs. Now, the former temple building has an ADA-accessible elevator, four new bathrooms, a new roof and upgraded

“We maintained the same staff with their same salaries, and have now enjoyed increased bookings as state regulations have eased regarding pandemic restrictions,” Lyons said. “We are fortunate to have an event coordinator, a building maintenance provider, as well as other individuals who help with the setup and cleanup after events.” The facility is once again ready for activities and has about eight events already scheduled; Lyons said they hope to eventually host three to four events per month, including weddings, graduation parties, prom events and quinceanera parties.

CHARCUTERIE BOARDS:

Public taste for charcuterie boards surged during the COVID-19 pandemic, though they’ve been around for centuries. Not just meats and cheeses anymore, the boards range from birthday party treats to a full spread for a picnic or corporate meeting. And during the shutdown, families and couples replaced eating out with a board brimming with sweet and savory flavors. “It brought fun to the living room,” said Nick Moss, co-owner of Loveland Chocolate Co., housed in the Eclectic House Artisan Market at 528 N. Cleveland Ave. “People wanted to have more fun at home and that was one option to bring some light and happy energy into the house.” Moss founded Loveland Chocolate Co. in February to 16 NORTHERN COLORADO LIFE

offer organic premium dark chocolate bars and bites. They appear on charcuterie boards made by Paul DeLongchamps, owner of Across The Board NoCo, which opened in March and also is housed in the Eclectic House.

TRADITIONAL CHARCUTERIE BOARDS A traditional charcuterie board features cured meats and cheeses, but since the pandemic, boards have become more complex with a variety of foods, like candy for a birthday party; pancakes, waffles and bacon for a breakfast get-together; and chips and dips for a graduation party. “People were looking for that comfort food, something they were not used to eating pre-pandemic,” DeLongchamps said. Technically, a charcuterie board is just a selection of cured meats, said Tina Mooney, owner of The Fox and The Crow Cheese Shop & Bistro, a cut-to-order specialty and artisan meat and cheese shop in Fort Collins that also sells meat and cheese boards and platters and offers catering services. “In our shop, if it’s a true meat board, we call it charcuterie. Otherwise, we call it a cheese and meat plate,” said Tina Mooney, owner of The Fox and the Crow and a certified cheese professional, adding that when she started her business seven years ago, charcuterie and meat and cheese boards were popular but have become even more trendy in recent times. “Now, with the pandemic, it’s absolutely at a fever pitch. People are at home and now are doing their own boards. … Now, they have an interest in specialty cheeses.”

STARTING WITH CHEESE, MEAT

For a traditional charcuterie board, DeLongchamps recommends starting with a selection of three different cheeses, since any more than that is too many for the palette, he said. He suggests picking one hard cheese, such as an aged cheddar, parmesan or a manchego, and two semi-soft cheeses like a brie—blue cheese and washed rind cheeses also are options. Next, add in cured meats, such as calabrese, prosciutto, soppressata, coppa or dried genoa salami, followed by JUNE 2021

marinated olives and an assortment of accompaniments. Examples of accompaniments can include hummus or artichoke dip with crackers, cornichons, chocolate-covered pretzels, roasted nuts, grapes, apples, and dried cherries and apricots. “Americans on a daily basis don’t eat cured meats like Europeans,” DeLongchamps said. “Here, people look at it as a break from their regular diet.” On top of everything, DeLongchamps likes to add cookies and chocolates, such as hazelnut chocolate spread, hazelnut truffles and dark chocolate or honey pecan bites from Loveland Chocolate Co. The company’s label is yellow and red, bringing color to the beiges, yellows and reds of the cheeses and meats, he said. “Just placing those chocolates at the end makes the board pop,” DeLongchamps said.

THINGS TO CONSIDER Flavor also is important to consider, so DeLongchamps starts with the tastes of the cheeses—many of them are nutty, earthy, buttery, toasty, tart or herbaceous. He then picks out accompaniments and sweets to enhance their flavor profiles. For instance, parmesan pairs well with salami or honey, which can be drizzled on top—honey also works for brie, he said. Mooney assembles her boards to have different colors, textures and cuts, such as cheeses shaped as triangles, circles, batons and crumbles and not the standard cube. The accompaniments on her boards—fresh and dried fruit, nuts, jams, mustard, pickles and chocolate—pair with the meats and cheeses. “My platters are very much in a circular formation,” Mooney said. “I do a lot of waves and curves. It really is an art form.” Mooney makes boards and platters customized to the palette. For cheeses, the mild includes a brie, cheddar and a Gouda; the middle has a spreadable cheese, a manchego and an alpine; and the wild includes stinky and blue cheeses. She also mixes up the cheeses for repeat customers and combines sweet and savory flavors, such as something sweet for a brie and pickles or mustard with an alpine, while cheddar goes with either. She also offers crudité boards, essentially vegetable platters with roasted and raw vegetables, spreads, fruits and nuts. “It’s really nice to have variety,” Mooney said. “Different flavors and textures in your mouth is better than having one big entrée where you get bored halfway through.”

ADDING IN FLAVORS

A board can have as many as 10 different flavors on it, allowing guests to pick and choose what they like, Moss said. 18 NORTHERN COLORADO LIFE

The presentation often is a mix of foods or one item, like store-bought candy on a candy board or an assortment of chocolate on a chocolate board. For a chocolate board, for example, DeLongchamps might combine five to seven different chocolates, such as Loveland Chocolate Co.’s chocolate hazelnut spread, chocolate bites, mixed nut dark chocolate bars, lemon zest bars, ginger truffles and salted caramel cashew chocolate bars. “In addition to tasting really good, they add to the board; it gives a little extra love,” Moss said. Boards work as an appetizer or something to snack on while the host finishes preparing a meal or before a group goes out to eat. The boards can be served before a main course, constitute an entire meal, or anchor other food around it as part of a full spread. DeLongchamps offers two board sizes, a medium that serves four to six people and a large that serves eight to 10. Mooney’s plates serve four, while her small platters serve 10; the medium, 15; and the large, 20, plus she creates grazing tables to serve even larger groups. “People get to choose what they want and have fun with it,” DeLongchamps said. “It’s more like a proliferation of ideas and expansion of ideas of a staple of what we’ve always loved.” NORTHERNCOLORADOLIFE.COM

Some northern Colorado eateries have always focused on takeout including Loveland’s classic Dairy Delite with its burgers and soft serve cones. Founded in 1996 in Fort Collins, Silver Mine Subs was built as a carryout business. “When the pandemic started business was down for a while, but we already had our own delivery system set up,” says Lance Jones, co-owner of the Silver Mine Subs shops in Fort Collins. “A lot of people have discovered carryout and ordering online and it’s a safe assumption that they will keep ordering that way in the future,” Jones says. Among the more than 20 varieties of hot and cold sub sandwiches on loaves baked in the shop, Jones says the top takeout faves are the Georgetown Sub (filled with tur-

key, bacon, provolone and avocado) and the Silver Mine’s Italian variations: The Silver City and Dodge City subs. Because it had been dishing take-out fare for more than 20 years in Loveland, Canton Palace smoothly made the transition last year to all takeout and delivery, according to restaurant owner Toby Deng.

“Even now that we have indoor dining again, the takeout and delivery remain just as strong as they were,” Deng says. The most ordered dishes on the Canton Palace menu continue to be sesame chicken, the combination lo mein, Szechuan beef, cream cheese wontons and pan-fried dumplings, according to Toby Deng. In operation for 11 years, Krazy Karl’s Pizza, had a different experience from most restaurants in the past year, according to Nate Haas, owner of the three Krazy Karl’s locations in Loveland and Fort Collins. “Initially we lost all our dine in customers for beer and sports but pretty soon the line a line formed for carryout and delivery. We were busy and hiring all through the pandemic,” says Nate Haas. The items that customers order haven’t changed much. “The classic Works pizza is still huge; Also, any of pizzas with cream cheese like the North of the Border, the Hawaiian and the Mile High. We have seen a lot more salads in deliveries and wings,” Haas says. “Now that we are finally using all our tables and chairs again, the carryout and delivery hasn’t slacked off. I think there is a certain part of the community including people in my family that will never really get back to dining-in the way they used to,” Haas says. 22 NORTHERN COLORADO LIFE

FAT TIRE CONTRIBUTES $100,000 TO RESTORE WATERSHED VIA NOCOFIRES FUND Encourages community to donate to support long-term river recovery plans In fall 2020, the Cameron Peak and East Troublesome fires devastated Northern Colorado’s watersheds, burning for 100 days and consuming over 400,000 acres of timber and vegetation. The NoCoFires Fund is working to restore the Cache la Poudre and Big Thompson watersheds by getting our vital rivers and streams back to sustaining wildlife, recreation, and agriculture, as well as supplying high-quality drinking water for 1 million people. New Belgium Brewing’s flagship brand, Fat Tire, understands the need for clean water firsthand; the process to create the U.S.’s first certified carbon neutral beer begins with clean, mountain water that comes from the same watershed affected by last year’s fires. Water quality and consistency are crucial to the production of craft beer, and Fat Tire has a long history of returning water used in its brewing process back into the river cleaner than it was before. “Water is not only the most important ingredient in beer, it’s the lifeblood of everything we love about Northern Colorado, from our world-class recreation to a nationally recognized economy,” said Katie Wallace, director of social and environmental impact at New Belgium Brewing. “The devastating impacts of fires can last for years as forests grow and the health of the landscape returns. The region faces a significant challenge to mitigate the long-term effects this fire will have on the watershed.” The Community Foundation – with support from Bohemian Foundation – launched the NoCoFires Fund to respond to the impact of the fires. The Fund will focus on mitigation, address critical JUNE 2021

needs such as flooding in the burn areas, and long-term recovery work with a coalition of partners representing both government and nonprofit sectors. These partners have identified mitigation projects – covering between 6,000 to 10,000 acres – at a cost of $20 to $35 million that will take several years to complete. Both the acreage and dollar amount could increase, depending on the severity of this spring’s runoff. “Our goal is to raise $1 million, then further leverage this to secure three to four times that amount ($3M - $4M) in state and federal assistance, bringing additional recovery dollars into Larimer County, “said Ella Fahrlander, chief engagement officer for the Foundation. “We will begin providing funding this spring to help the ‘boots on the ground’ be responsive to evolving needs as additional government dollars arrive.” To date, approximately $750,000 has been raised, and Fat Tire wants to help by leveraging the impact of its donations and encouraging others in the community to donate. ODELL BREWING ANNOUNCES THE OBC WINE PROJECT TAPROOM GRAND OPENING

After a year of construction and renovation, Odell Brewing Co. is excited to announce the grand opening of The OBC Wine Project’s Taproom, located at 824 E .Lincoln Ave., adjacent to the Fort Collins brewery. The OBC Wine Project launched in June of 2020 with a line of four canned wines distributed across Colorado. Since the package launch, The OBC Wine Project has been busy making various small batch wines and working on the construction of the winery’s taproom. The space was finally ready to host guests as of Monday, May 12. As the taproom was under construction, Winemaker Travis Green has been busy blending, racking, canning and bottling eight small batch wines that will be available on tap at the taproom grand opening. “We’ve been extremely busy with the production side,” explains Travis Green. “We’re so excited to be able to offer our guests such a wide range of flavor profiles and innovations with these wines.” The Winery taproom will have eight taps and a number of limited bottle releases, which will only be available at the winery. Half of these taps will be dedicated to small batch and experimental wines made from grapes sourced across Oregon, Washington, and Colorado. Among the Colorado wines to be featured are a skincontact Aromella aged in Friek beer barrels, a red blend 24 NORTHERN COLORADO LIFE

“The spirit of this winery is rooted in experimentation. That’s where the project of the OBC Wine Project comes to life,” explains Travis Green. “We believe that great wine can come from different appellations and climates. Working with local farmers is just as exciting as chasing the harvest with our vineyards in the Pacific Northwest.” The 2,000 square foot space, previously used as an overflow production and storage space for the brewery, was completely renovated into the winery and taproom. While the production side of the winery, complete with 13 fermenters and aging tanks, oak barrels, and dedicated canning line, has been operational for the last year, construction of the taproom and patio has been under renovation with the help of RB+B Architects and Brinkman Construction who assisted Odell Brewing with the construction of their most recent Sloan’s Lake Brewhouse The opening of the OBC Wine Project taproom follows just one month after the opening of Odell Brewing’s new Sloan’s Lake Brewhouse and Pizzeria. The brewery’s second Denver location is on the corner of 17th and Perry St. in Denver’s growing Sloan’s Lake neighborhood. This new taproom features 16 taps and a 10-barrel pilot brewhouse and a pizza kitchen with a full menu. Do you offer outdoor dining? Currently we are serving pizza and beer on a large patio on the south side of our building. It’s a great space! Future plans include closing it in and maybe installing some garage doors so it can be utilized year-round. Now that the weather is turning nicer, we really want to offer a full service experience out there.

What is special about your menu? We have an eclectic menu loosely based upon pub classics such as fish and chips and bangers and mash. We pay attention to the trends without being trendy.

What is your most popular dish? Our biggest selling menu item is, without a doubt, our fish and chips. We take North Atlantic cod, hand dip them in our Fat Tire beer batter to order, and fry to golden brown perfection; served with house made tartar sauce and pub wedges.

Any new items for summer? We plan to add items back to our menu that we pared off due to COVID limitations. We will also bring back our weekly lunch and dinner specials.

Vegetarian/vegan/gluten-free options? We do offer vegetarian and a few vegan options ranging from salads and pumpkin ravioli to our house-made quinoa veggie burger—made vegan by request.

Dine-in guests make reservations to prevent gathering at the door and enter through the front, takeout guests enter through our back door to prevent walking past seated guests.

What is your most popular dish? This is like picking a favorite child—impossible—because we take such pride in every dish we create. Some of the “fan favorites” are our house made Skillet Cinnamon Roll, Corned Beef Breakfast Skillet made with house cured corned beef, The Monkey Burger (our rendition of In-N-Out’s ‘Animal Style’ burger), and our Chicken Pot Pie.

What is your most popular dish? Our Baja Fish Tacos are definitely a customer favorite. Whether you choose grilled, fried, or blackened, you can’t go wrong; always served with cabbage and chipotle aioli on corn or flour tortillas with rice and beans on the side.

Any new items for summer? We’ve added new selections to our fajitas, cactus bowls, and tacos: chipotle steak and chicken fajitas, sesame ginger veggie bowl, and wasabi teriyaki shrimp tacos just to name a few.

Cactus Grille is owned by Mike Severance and his daughter Chrissy French. Mike managed and then owned the Cactus Grille and others for 20 years before closing in December 2008. In 2012, they decided to resurrect the Cactus Grille and the rest is history. Being voted Best Margarita, Best Patio, Best Mexican Restaurant, and Best Happy Hour over the last 8 years has proved the decision to reopen the Cactus Grille was the best choice they could have made.

Do you offer outdoor dining? We are partnered with Wicked Tequila Room to create Margarita Alley! It’s a little taste of Mexico right in the heart of Loveland—the BEST outdoor dining you could i experience i ld ask k ffor.

How are you serving customers while complying with restrictions? Not only have we rearranged our dining room to meet state and county requirements over the last year, but we have also extended our patio all the way across margarita alley for more outdoor seating than ever before.

From our veggie fajitas to our veggie Cactus Bowl, we have a ton of great vegetarian options! You can even customize some dishes and make your own creations like veggie nachos.

What is special about your menu? All of our spirits are handcrafted and organic from the agave syrup to the garnishes. Growing up in the South, I have always had an interest in Moonshine and distilling. After working in the oil and gas industry for 18 years, I decided that it was time for me to be my own boss and The Shine Shop & Craft Spirits was born.

What is your most popular beverage? Our most popular spirit is our Wood Chopping Moonshine, this is our 110-proof force-aged Moonshine. This spirit has hints of caramel, vanilla, and oak. Our most popular drink is our Grapefruit Ginger Sour made with our Wood Chopping Moonshine, house-made ginger syrup, and fresh squeezed grapefruit juice.

Any new items for summer? We will be serving smoked barbecue this summer including pulled pork, brisket, tri tip, and other special items. We plan on doing tasting events that will offer an entrée and spirit flights, bar trivia, karaoke, and we will also be purchasing pool tables in the near future!

Our inspiration starts with everyday food that we fall in love with when we are young. We love to have fun and push it to a new level. We also love to introduce food from other countries. The new combinations of food from around world are always challenging us.

What is your most popular dish or beverage? We feature a smoked tri-tip that we smoke daily. There is a toasted coriander and fennel house rub we use then we smoke it for about three hours. It is sliced to order and served with Roasted Garlic Au Jus, Smoked Gouda Mashed Potatoes and our mixed vegetables with Rainbow Carrots, Haricot Verts Green Beans and Baby Patty Pan Squash.

We do have a vegetarian option with our Cashew Yellow Curry. No vegan options as of yet but, we do have a myriad of gluten-free options.

All kid meals are $5. We want to feed the kids well and not worry about a huge profit.

Loveland Chocolate launched on Valentines Day, 2021, but around 16 years ago, Juan Diego Lavalle was living with his family in Ecuador, near the lush Arriba Cacao trees that produce the finest cacao beans in the world. Today, and we’re excited to bring organic Ecuadorian 70% dark chocolate to Loveland, Colorado. Our popular artisan chocolate bars and bites are all crafted by hand, in small batches, in Downtown Loveland.

Sweet, luscious, and delicious dessert cocktails are a great way to satisfy a sudden craving for something sweet. Whether you’re going out for a nice meal or a get-together with friends—or even a special occasion like a bachelorette party or girls’ night out—you can skip the beer and shots and try something different and indulgent. Try a dessert drink. This category of cocktails includes a wide range of possibilities in both flavor and texture. Many feature chocolate flavors, some feature citrusy fruits like lemon or orange. Some include the rich tones of coffee, while yet others have that pleasant tingle of mint. Whatever your tastes, you have a lot to choose from.

Brandy Alexander You might have seen this drink referenced in an old movie but never knew what was in it or that it’s considered a dessert drink. Considered by some the adult version of a White Russian, a Brandy Alexander is made up of equal parts cognac, cocoa liqueur, and fresh cream and is said to have been John Lennon’s favorite drink.

The Grasshopper This is for everyone whose favorite ice cream is mint chocolate chip. To make it, all you need is creme de menthe, white creme de cacao, some cream, and a bit of crushed ice. This is a great drink to order in a bar or restaurant as its distinctive, almost-glowing green color makes it easy to spot as the server approaches your table.

Classic Mudslide Some classics are classics for a reason, and the mudslide is probably the most iconic dessert drink. The recipe is as simple as it is delicious. Irish Coffee Good Irish coffee is more than simply adding a dash of whiskey to a mug of coffee. Connoisseurs will experiment with different types of whiskey and coffee blends, sometimes incorporating Kahlua and Amaretto. A dollop of whipped cream gives the beverage a creamy texture, and a dusting of chocolate can give it a bit of a mocha taste.

Mexican Spiked Coffee Also known as a Carajillo, this cocktail first gained popularity in Mexico and then the rest of Latin America. The drink is similar to Irish coffee, but instead of adding whiskey, one adds Licor 43, a Spanish liqueur that contributes notes of sweet vanilla, chocolate, and citrus to the coffee flavor.

It’s most often made by combining Amaretto, coffee extract, and chocolate liqueurs then garnished with a ladyfinger. The idea is that it mimics the popular layered cake dessert.

S’mores Pudding Shot These shooters make a great cap to a full meal. It’s made with chocolate pudding, marshmallow, and vodka—although you could substitute bourbon or cognac if you wish. We talked to a couple of local experts on dessert drinks for their thoughts and recommendations. When asked, Chrissy French, the owner of Wicked Tequila Room in Loveland, had this to say: “I travel to Puerto Vallarta twice a year to taste tequila and learn more about the culture. Puerto Vallarta was where I tried chocolate tequila for the first time. We have taken the chocolate tequila and developed wonderful cocktails for after dinner. We have done a chocolate-covered strawberry drink, thinmint inspired cocktails, ice cream sundaes with chocolate tequila, and a few others. They are very rich, flavorful, 56 NORTHERN COLORADO LIFE

and perfect for after dinner. You can make these kinds of things at home by buying a rich chocolate liqueur of your choice, but I always suggest coming into the bar and asking for our drink specials of the week.” The Shine Shop & Craft Spirits in Greeley offers custom and classic cocktails made from locally distilled spirits. Owner David Pennington recommends one of their newer offerings, a lemon drop martini. As Pennington describes it: “Lemon drop martinis make for a delicious combination of sweet and sour, creating a treat that plays on the tongue. The cocktail relies on vodka as the main spirit and either triple sec or Cointreau for an extra boost. Simple syrup is included for sweetness, and fresh lemon juice for its distinctive flavor. Using fresh lemon juice is an important part of this cocktail as bottled lemon juice doesn’t have the same bright taste you need.” Right now, they’re still developing their dessert cocktails, but if the lemon drop martini is any indication, they’re on the right track.

DESSERT DRINKS WHILE HOME AND WHILE OUT Judging from the ingredients in the popular dessert drinks above, a selection of liqueurs is an absolute must—especially Kahlua, Amaretto, creme de cacao, and something citrusy such as orange liqueur. And what’s nice about liqueurs is that most come in distinctive, attractive bottles that make for a fine display in your liquor cabinet. There is no shortage of drink recipes available online and in books. You can get recommendations and tips from your favorite restaurants and bars. During some of the most exhausting stretches of the COVID pandemic, the alleyway between the Cactus Grille and the Wicked Tequila Room in downtown Loveland served as a kind of oasis. That space between the two establishments allowed patrons to keep up a social life of sorts, even as it allowed the owners to keep their businesses afloat. The Cactus Grille and Wicked Tequila Room took advantage of the

city of Loveland’s Patio Assistance Program, an initiative designed to help restaurants, bars and gathering places in the city expand their outdoor spaces to safely welcome customers in the pandemic era. The grants from that program allowed the restaurants to turn that alleyway into a gateway into another place, one where the stresses of the outside world melted away and customers found a temporary reprieve in food, drinks and friends.

This community has been amazing since the very beginning. That has really driven me to want to stay open and to be here seven days a week, 18 hours a day. “Even when the inside of both establishments was closed, we could accommodate customers. Wicked patio seats about 75 people. The Cactus patio can seat about 25,” said Brandon Dill of the Cactus Grille. “The best way to describe the patio space is that we bring a little taste of Mexico to the heart of Loveland. We have flowers and flags and lights that give off the vibe of any small town in Mexico. It’s all meant to give people a break from reality.” Thanks to the city’s Patio Assistance Program, as well as a good deal of creativity, ingenuity and hard work by restaurant and bar owners across the city, the alleyway between Cactus Grille and Wicked Tequila Room isn’t the only place in Loveland where diners and drinkers can find a welcome escape in a COVID-safe setting. The pandemic drove many businesses to up their patio game, and the result is a set of inviting patio options that may very well outlast the pandemic. Fadil Astafaj, owner of CJs Patio Grill, said the establishment’s namesake patio space played a key role in

helping the business survive the worst pressures of the pandemic. Astafaj, who also took advantage of the city’s assistance program, said the fenced section fronting the restaurant on Eagle Drive became its saving grace when the indoor dining area was completely shut down. Thanks to vinyl tents, Astafaj and the staff were able to ensure that diners could eat, drink and relax in a safe environment, and that the restaurant was able to make it through the worst of the restrictions. Now that those restrictions are starting to ease in earnest, and now that the springtime is in full bloom, Astafaj said that he’s come to appreciate the value of the outdoor seating area of about 10 tables even more. He’s treated the patio like a homey extension of the indoor space, adding flowers, plants, hanging baskets and other elements designed to create a sense of welcome. “Our patio is a huge part of this place. It’s in our name. People love our patio. I want it to feel like a comfortable place to be,” he said, adding that summer plans may even include live music. “This community has been amazing since the very beginning. That has really driven me to want to stay open and to be here seven days a week, 18 hours a day.” Those kinds of additions to patio spaces are set to long outlast the city’s formal assistance program, which wrapped up in April. and First Watch on North Lincoln Avenue feel permanent. At the Backyard Tap, for example, visitors find a completely distinct and separate vibe on the taproom’s outdoor patio space. A firepit warms drinkers and diners on cold days and chilly nights, while lovingly tended green spaces and rock pathways offer options for bar games and fun during the spring and summer. At the First Watch, a ‘daytime café,’ a wraparound patio offers customers who still may be getting acclimated to dining out again an option for a safe, socially distanced dining environment. Indeed, the expansion of patio spaces across the city have served as a way to ease customers back into socializing, dining out and grabbing a few drinks. Brandon Dill noted that the carefully decorated and curated space between the Cactus Grille and the Wicked Tequila Bar has become more than just an overflow space for patrons. Strollers exploring downtown now stop to check out the sounds, lights and senses from the little slice of Mexico tucked into a Loveland alleyway. “A ton of people who walk through don’t stop at the restaurant or bar – they just want to walk through and see what it is. This alley is completely different – it’s a Mexican oasis,” he said. “That’s part of the reason we’re making it permanent.”

As the weather heats up and pandemic restrictions recede, many of the local events you look forward to every summer are back on for 2021. While some of the logistics have changed in light of COVID-19, you can still expect to enjoy all the essentials — fun, food, and community.

While the TBK stage features performances for all ticket holders, separate tickets are required to attend the Superstar Concert series which will be held in the Arena. According to event marketing coordinator Kevin McFarling, tickets to all five Arena concerts are available for $100. To ensure optimum safety for all guests, McFarling calls this year’s event “a modified event from what we’ve had in the past.” To allow for social distancing, they’ve changed the park layout. They’re also scheduling additional cleaning of high traffic areas and will make hand sanitizing stations available throughout the park. “We are doing everything we can to have a safe event for everybody,” says McFarling. Buying an Interagency Annual Pass is an excellent, cost-effective way to enjoy multiple parks throughout the year with one caveat that is crucial to your park experience: Your annual pass does not guarantee admission to all Federal recreation sites on any given day at any given time. Because of park overcrowding and the resultant detrimental environmental impact on some of our greatest national treasures, at least six national parks including Yosemite, Glacier, Rocky Mountain, Acadia, Great Smoky, and Carlsbad Caverns have moved to a reservation system with other parks likely to follow suit. For parks with a reservations system in place, passholders still need a reservation to enter. In addition
