When Andy Clark’s (owner and baker at Moxie Feed + Seed) son Maxwell started having digestive issues, Clark made a discovery that changed his family’s life. Andy’s research and experimentation led him to believe heirloom grains, which pre-date the 1960s/1970s industrialization of American agriculture, are easier to digest and provide greater nutritional benefits than modern grain varieties. That discovery led him to create Moxie Bread Co. and Moxie Feed + Seed which have won awards including inclusion in 100 Best Bakeries in America and a semi-finalist honor in the James Beard Awards. All of the company’s breads undergo a long, slow fermentation process that “pre-digests’’ the grains, decreasing inflammatory qualities and making their breads more tolerable for individuals who are sensitive to processed white flour breads. This last year has led many people to discover Andy’s passion for old school European baking using heirloom-grain flours. Andy said, “When the pandemic started, I absolutely freaked out. I froze in my tracks. But as a team we adapted quickly and got set up for to-go products. We changed our business model; we had lots of flour from our mill and we had direct farm access. As people got excited about baking their own bread, we realized what we should do. We offered sourdough starter, put together instructions on how to use heritage grains to bake bread. We were here to help. As a result, the pandemic has been very kind to us.” Andy started baking back in coastal Massachusetts. “Then I moved to Boulder, bailed out of college, and stayed on a friend’s dorm floor at CU. I started working at Daily Bread with an amazing artisan baker who showed me the ropes for baking artisan bread.” His first company location was Moxie 6 CU & BOULDER’S BEST 2021

Feed + Seed, the North Broadway location in Boulder, features the same breads and pastries Andy and his team developed, as well as freshly milled flour and heritage grains from their adjacent Boulder Mill Site. He explained, “The back of the house is the mill, the front is the Feed + Seed.” “We’ve changed what we serve,” Andy said. “We’re proud to grow the mercantile aspect of the shop. We added pantry goods like butter, eggs, beer, wine and pasta, working with wonderful local producers and it has been a total joy. We continue to make pastry, bread and sandwiches, but now we partner with local food producers and share a ton of their stuff. “ Feed + Seed is not yet offering indoor seating, but they are looking forward to doubling their space in the coming months – including a coffee bar and even a mill-to-order fresh flour station. They might have great vegan or gluten-free food or good old-fashioned eggs, bacon and pancakes.” Dana said the most popular breakfast is Eggs Marcos, which is scrambled eggs, cream cheese, melted cheddar cheese and bacon. “The Walnut Café has been here since 1983 and we’re part of the community,” she said. “The No. 1 thing we pride ourselves on is that our staff is genuine and authentic, funky and fun. We believe kindness is our superpower. We’ve been in the restaurant business long enough to know the food better be good, but what sets us apart and has kept us successful for all these years is the service we give back to the community.” When the Southside Walnut reopened, it gave away 200 Boulder Strong T-shirts, then ordered another 200 and gave those away. “We spend our money on being a good community member,” Dana said. At Walnut Café and Southside Walnut Café, the main vibe is “comfortable.” Dana Derichsweiler explained, “Breakfast is kind of unique as a meal. It’s not nearly as pretentious as lunch or dinner; people don’t have to think about what to wear. They might come in sweats or Ugg boots or whatever is comfortable. I love that we’re a smart part of your day. It’s amazing because we get so many

Alec Schuler, founder, owner, chef and designer of Tangerine, knows how to change with the times. He even added bubble tents to the restaurants to increase the amount of available space during COVID restrictions and add to the fun. When brunch customers started asking for Tex-Mex food, Tangerine added burritos, huevos rancheros and breakfast tacos. In the restaurant the chefs have creative freedom to create their own specials. But as a trained chef himself, Alec has never lost sight of what’s important. “We provide the best food,” he said. “We’re food-focused and we concentrate on quality. Of course, you need everything else to go right, but food is first up to bat. I think we have great service as well, and in the long term we take pride in showing people a good time. We are in the hospitality business, after all.” Alec added, “I’m a CU grad myself, and we just want to say, ‘Thank you, Buff Nation!’ for this honor! The secret to The Sink’s success? “We work really hard and every day we show up and do our best,” said Mark Heinritz, co-owner with his brother Chris and Paul Jones. “We’ve learned that people love us. The support we have gotten during the pandemic is very much appreciated and we genuinely do thank everybody who has supported us this last year.” The Sink’s popular hamburgers and pizza are made with freshly ground grass-fed beef from Nederland. The toppings are varied: of course, there’s the regular burger with cheese, crispy onion straws, mushrooms, ale onions, guacamole, jalapenos, fried egg or bacon. The Tandoori Grill is an Indian restaurant tailored for the American palate. “Quality is key. We make your food only when you order it,” said Gurjeet Dhanoa of the neighborhood restaurant that has been around more than 20 years. “It’s cooked fresh every time, and people keep coming back year after year.” Both for the food and the friendship, of course. Chef Paul Dhanoa provides “an amalgamation of the best of American regional produce, North Indian spices and flavors as well as traditional Indian and modern gastronomic techniques.” His specialty is healthy food, sometimes vegan, full of flavor. People don’t come to our place hungry; that’s a real advantage. We have a feel-good nostalgic item, based on 125 years of families all going out for ice cream together. Ice cream is so popular with college students because, say you have a stressful day, you just go get an ice cream cone, and you feel better.” Sweet Cow has 14 percent butterfat and the company is devoted to quality ingredients. The best-selling flavor is Cookies and Cream. “We don’t just add Oreos at the end of making the ice cream,” Drew said. “We put Oreos in the beginning, in the middle as it’s being made, then in at the end, so the ice cream is Oreo cookie color all the way through. Greg Carelli and his father Gene founded Carelli’s together 27 years ago. The restaurant has been cited for Best Design by the American Institute of Architects, with a 360-degree fireplace and an outdoor patio. Greg said Carelli’s is “tan tablecloth,” rather than “white tablecloth,” which means it’s casually elegant rather than starchily formal. All of the chefs are accredited, including Greg who started as an Italian sub sandwich shop. The Italian standards mix with fresh dinner specials every COLORADO DAILY
night. A full meal might start with antipasti such as carpaccio, then zuppe e insalate (soup and salad) and end with Pollo alla Marsala (chicken with sweet wine). But you could have just as easily moved right to pizza, paninis or calzone. The original idea behind T/aco was to make Taco Tuesday an everyday affair. The longtime Downtown Boulder taqueria succeeded so well it took home the award for the best tacos in town. “Thank you, Boulder, for naming us Best Taco. We make tacos for our guests not for the awards. This award truly belongs to our loyal guests that have unconditionally supported our business and our staff throughout this last year,” says Peter Waters, owner of T/aco. The Top 5 best selling street tacos at T/aco are pork belly, cotija, duck, barbacoa and shrimp, according to Waters. All are served traditionally on freshly made corn tortillas paired with one of the eatery’s fresh salsa variations including salsa rosa, pineapple salsa, green salsa and fiery habanero salsa. For more than 40 years, Abo’s Pizza has been all about the crust. We’re talking about a chewy crust that’s also crunchy, a crust that makes a New Yorkstyle slice you can fold over and eat when you walk down the street a la “Saturday Night Fever.” “We have won this award many times but we’re really happy to have it in 2021 after the past year. It’s really an honor,” says Tom Smathers, owner of Abo’s Pizza flagship store in North Boulder. “We have been working hard on making the best pizza possible because there are so many great pizzerias in Boulder now,” he says. With humble beginnings, in 2009, Nicole Christensen started a CrossFit gym in her 150 square foot garage. Twelve years later, the gym is now housed at a 10,000 square foot facility in central Boulder, and the female-owned and operated gym has seven full-time trainers on staff who each hold a CrossFit Level 4 certification (including Christensen herself ). “I truly believed that CrossFit, the methodology, and its combination of performance and health results could turn people on to hard work and earned results, address obesity and chronic diseases, and truly save the world,” she said. “I still believe this today.” CrossFit Roots caps their sessions at 12 athletes per class so that more individualized coaching can happen within a group setting. Earth Yoga is stepping into a new phase of serving the community. During the COViD-19 pandemic, founder and co-owner Shannon Paige and co-owner Evalie Horner watched deeper mental health and societal issues unfold both at home in Boulder and around the world. As they brainstormed about what to do to face these challenges head on, they decided to integrate mental health care into their yoga studio.“The first responders, their work is about done, but now it is time for the yoga studios and self-care promoters to work,” Horner said. How exactly do they plan to help the physical, spiritual, and mental converge? Through offering both yoga and psychotherapy for their clients. Horner has practiced psychotherapy for nearly a decade. When she started learning yoga and then training to be a teacher with Paige, she realized that yoga could help people move through trauma more quickly. “I want to give students the opportunity to work in a yoga class, and when they have gotten more in-touch with themselves, they can come to therapy and process… from a more connected place,” Horner said. “Sometimes talk therapy can be disembodied and in the head. And then sometimes yoga can bring up lots of feelings that someone might not understand. So bringing these two together is a perfect recipe for offering healing.” Their classes are also strongly inclusive. “You should walk out of our studio feeling like you belong, like you are supposed to be there,” Paige said.
