Store and use leftovers safely

Few meals are created and then eaten in their entirety. That’s especially true of holiday meals or other special events. Leftovers are to be expected, and in many cases, leftovers are eagerly anticipated. Sometimes leftovers can be even more delicious than when the meal was originally served.

Storing leftovers may not be so simple, as poorly stored foods may end up causing illness when eaten later. Learn the basics of leftovers and how to prolong the shelf life of foods left behind.

Foodborne illness, also known as food poisoning, is caused by harmful bacteria growing in food. Few people can detect changes in the taste or texture of contaminated food, so it can be difficult to know if an item is dangerous to eat, says The Mayo Clinic. Bacteria grow well in what is termed “the danger zone.” This is between 40 F and 140 F.

Many instances of foodborne illness can be prevented through proper food handling, which begins when food is purchased and continues during the cooking process, culminating in the safe storage of leftovers. The U.S. Department of Agriculture’s Food Safety and Inspection Service recommends refrigerating leftovers within two hours of cooking food or holding it hot. All food that has been

left out for more than two hours should be discarded if it is perishable.

The Mayo Clinic advises that most leftovers can be kept between three to four days in the refrigerator. If they will not be eaten in that time frame, it’s best to freeze the food for a later time. When frozen, some foods can last between three and four months.

To cool food rapidly and deter the growth of bacteria, separate food into small, shallow containers. Cut large items of food into smaller portions to cool. Do not allow foods to cool on the counter before storing them in the refrigerator. Thawing out leftovers presents another possible safety issue. Use a cold water bath, the refrigerator or the microwave to defrost frozen leftovers. Refrigerated foods can simply be reheated.

When reheating leftovers, make sure they reach 165 F. Gravies, soups and sauces should be brought to a rolling boil. The USDA also recommends covering leftovers to reheat them. This retains moisture and ensures that food will heat all the way through. When cooking foods in the microwave, check for cold spots in the food, and reheat accordingly. Safe handling of leftovers can help prevent illness and ensure that leftover food does not go to waste.

n old Italian proverb advises, “Age and glasses of wine should never be counted.” Wine can complete a meal or enhance a snack, and many people are devoted wine afficionados.

Pairing wine with food is not necessarily complicated, but people may not know where to start. That’s because most think there are strict rules governing which wines go with which foods. You can likely enjoy any wine you want with a meal as long as it’s pleasing to you. • Match the most prominent elements. When pairing wine with food, matching the wine to the most prominent element of the dish is key. This could be the seasonings. For example, an earthy mushroom sauce will need red wine. But a light lemon sauce on chicken pairs better with a white wine. Wine connoisseurs often recommend pairing wine with the sauce of the dish instead of the meat.

• Know the body of your wine. Food-wine pairing experts often suggest matching the body of the wine with the weight of the food. Full-bodied wines work well with powerful, strongly flavored foods, while light-bodied wines work with lighter fare. Body sometimes follows alcohol content, but typically is moderated by the tannin profile of the wine.

• Keep acid in mind. Pairing high acid wines with a corresponding acidic food is a good rule of thumb. But fatty cheese or meats can soften the palate of a tart wine, so

that’s also a consideration.

• Champagne goes with salty. Many dry, sparkling wines actually have a touch of fruity sweetness. This can make them refreshing when served with salty foods. Sparkling wines also can cut through the richness of fried foods.

• Rosé all day with cheese. Some cheeses may pair better with white wine and others with red. But for a safe bet, most will work alongside rosé. This wine has the acidity of white wine and the fruit character of red. Rosé also is a fine choice with a charcuterie plate.

For those who need a more concise “cheat sheet,” consider these pairings.

• Chardonnay and salmon

• Pinot noir and earthy flavors

• Cabernet and red meat

• Pinot grigio and seafood

• Rosé and cheesy dishes

• Zinfandel and rich foods

• Red zinfandel and pizza

It can take time to develop a palate that blends the right wines with foods, but practice makes perfect. Plus, it’s important to remember that rules are made to be broken. If there are certain flavors or wines you prefer, then that should take precedence.

Restaurants can be ideal spots to celebrate special occasions or simply get a night off from cooking. One of the joys of dining out is having a delicious meal prepared and served without having to worry about postmeal cleanup.

Dining establishments are in the business of keeping customers happy, but diners can do their part to make their next dining experience as enjoyable as possible.

When planning your night out, call the restaurant or make a visit in person to inquire about the establishment’s reservation policy. Find out how far in advance reservations must be made, and discuss the size of the party you plan to bring. Restaurant employees can advise you as to which days tend to be the least busy and which times ensure you will have a smoother dining experience, especially if your dinner party will be large.

If possible, become a regular patron at a particular restaurant you like. This allows you to develop a rapport with the staff and possibly even the owners. Like the restaurant’s page on social media and sign up for email alerts about specials so you receive advance notice about upcoming events.

For special requests that go beyond regular restaurant offerings, consult with the manager well in advance of your party. Many restaurants are able to

accommodate special requests, such as renting out the space or bringing in flowers. The restaurant may have a set of protocol they follow or vendors with whom they contract, and that can make the dining experience even more special. Discuss the extra costs involved and work out the details thoroughly so nothing is left to chance. Call ahead a few days in advance and confirm the reservation and special plans, if any. This way there will be no surprises come the night of the dinner.

Chew your food! Not only will thoroughly chewing your food help slow down your eating, it also releases digestive enzymes and makes food particles easier to digest.
