Welcome all members to the Port City Bowling Club’s magazine ‘Pulse’. This new magazine will keep members and nonmembers up to date with all the news concerning your locally owned Club as well as its events, promotions and entertainment. Our first edition of ‘Pulse’ ushers in a new era at the Club. Over the last 10 months the Club has been undergoing a dramatic renovation to bring new and improved facilities to our members. As well as the new section of the building the existing clubhouse will also have been given a new lease of life with refurbished bar, carpet and painting to create a seamless flow from old to new. As you enter the Club you will now encounter a modern entrance and foyer that welcomes you immediately into the centrepiece of the new renovation that is ‘Drift Café-Bar-Restaurant’. The new modern feel, a mixture of beach and industrial, will be reflected in new Chef Dempsey Green’s innovative menu offering a range of meals to satisfy all your taste buds. Drift offers a panoramic view over the bowling greens and offers family friendly facilities with an outdoor children’s play area and our indoor ‘Splash Kids Club’ room for the “littlies’. I close by thanking all our loyal members and guests for their continued support during all the disruptions. Also a big thank you to the staff who have remained up-beat during the process and have provided exceptional service under difficult circumstances. I know that they are all eagerly awaiting the opening of the renovations so they can fully showcase their skills.

A new look, the start of a new era for your local... The Board and Management Team at Port City Bowling Club are excited to announce the launch of your brand new look local Club, to the city of Port Macquarie. Renovations kicked off early October, 2015 with the new areas of the venue opening to the public in early August 2016. The 10 month extension project managed by Paynter Dixon (a big thank you to Lindsay Verdon, Matt Ring and Jamie Vlatko for their efforts) has brought to the venue a brand new 100 seat café, bar, restaurant, an outdoor kids play area, an indoor play area for small children, a modern outdoor gaming area housing 47 machines, a brand new indoor gaming area, new bar, amenities, and welcoming new reception area.

Meet the Chef
Introducing Port City Bowling Club’s new Head Chef, Dempsey Green Dempsey Green recently moved to Port Macquarie from the Central Coast to head up the new Drift kitchen team at the Club. Dempsey has a passion for food and an interesting story so we caught up with him for a chat.. WELCOME TO PORT CITY, DEMPSEY. WHAT AN EXCITING TIME TO BE AT THE CLUB WITH THE OPENING OF DRIFT! Yes, it has been fantastic! YOU RECENTLY MOVED TO THE AREA FOR THIS POSITION, HAVE YOU ALWAYS BEEN A CHEF? I am originally from the Central Coast. I always wanted to be a chef but spent a bit of time in a few different roles, as a parts interpreter for BMW, and I worked in a hospital as a theatre assistant. THAT IS PRETTY DIVERSE! HOW DID YOU GET INTO THE INDUSTRY? One of my friends who was a chef offered me some work in his kitchen in exchange to teach me some cool stuff in the kitchen. Two weeks later I replaced the second year apprentice and then not long after that took over from the third year apprentice. For a period I was working from 6am in the hospital all day and then 4-11pm in the restaurant. I eventually staged in a hatted Italian restaurant. This is where I did my apprenticeship. WHAT COOKING STYLE IS YOUR ‘GO TO’? I love Italian style cooking but I usually borrow what I like best about each style. I have cooked Italian and French style which are my two major influences so I will cook my pasta Italian style, cook my fish French style and then have my vegies Asian style. Gives you the best of everything! ANY SPECIAL INGREDIENTS YOU LIKE TO USE? I spent time cooking in Cairns, Kakadu and Ayers Rock and really loved using Indigenous ingredients. It excites me to use produce that is native to Australia. For example, Port is fortunate enough to have one of the best lemon myrtle suppliers in Australia just down the road. I am using this in my barramundi dish at Drift. WHAT CAN DINERS EXPECT FROM THE MENU AT DRIFT? Diners can expect simple food, done well, and food that can be shared. I think fine dining has had its day with people enjoying more relaxed dining these days. People are more educated about food too which is great, it makes us work harder and we can respond to people’s feedback on what flavours and ingredients they enjoy. We want each person to have a unique experience they are truly part of. We want people to leave happy and tell all their friends about their wonderful experience they’ve had with us. 12
Dempsey’s Dark Chocolate and Jack Daniels Tart This recipe came from a passion we chef type folk have for eating and drinking and combing the two. That, and I think from my roommate Grant who must be one of the biggest Jack Daniels fans I know be it Sinatra , Sliver Barrel Select , Gold, Distiller Number 3 or Gentleman Jack. We must have tried them all.
Method
For the Pastry 250g plain flour 125g butter, cut into small pieces and slightly softened 1 egg 1 tsp caster sugar ½ tsp fine salt 50ml cold water 20g cocoa powder For the Chocolate Ganache filling 225g good quality dark chocolate (Valrhona) 255g cream 60g butter 10g glucose 25g of inverted sugar (or normal white sugar) 60ml Jack Daniels For the Glaze 120g cream 180g sugar 150g water 60g cocoa powder 5 gelatine sheets
For the Pastry. Flan Pastry (Pate a Foncer) Mix flour and cocoa powder together. Then heap on a bench and make a well in the centre. Put the butter, egg, sugar and salt in the middle. With your fingertips, mix and cream the ingredients in well. Little by little, draw the flour into the centre and work the dough with your finger tips to a grainy texture. Add the cold water and mix in until the dough begins to hold together. Using the palm of your hand, push the dough away from you 5 or 6 times until it is smooth. Roll the pastry into a ball, wrap in cling warp and rest for at least 20 minutes. Roll the pastry to around 3mm thick and place in a tin or baking dish of your liking (I use a long tart tin). Rest in the fridge for 20 minutes - this helps to stop the pasty from shrinking in the cooking process. Prick the base and bake blind at 190oc for 20 mins, remove blind baking beans or rice and bake for a further 15 mins or until cooked through. Cool on a wire rack.
For the Ganache
Break up the chocolate and place in a food processer with the butter. In a pot bring the cream sugar and glucose to a simmer around 90oc. Start blending the chocolate and pour the hot cream over it. Blend until smooth. Add the Jack Daniels - I have used 60ml here but feel free to play around with it to your own taste.
For the Glaze
Place the cream, sugar, cocoa powder and water in a pot and bring to a simmer or until all the ingredients have combined. In cold water bloom the gelatine sheets. Add gelatine to warm mix and allow to dissolve. Strain and put aside.
To assemble the tart
Pour the chocolate ganache into the tart case leave about 2mm from the top for the glaze and refrigerate until set. Poor warm glaze over tart and set in the fridge. Enjoy with a side of heavy cream or double cream and a nice Porter ale, port or a Gentleman Jack on ice. 13

Port City Bowling Club has a long tradition of providing support to our local community both through the Club Grants contribution scheme and via fundraisers, community events and sponsorships. Through sponsorship and donations, your local, Port City Bowling Club is able to provide assistance to many groups in the community including charities, social clubs, community action networks and sporting groups. The Club’s ‘EastiesCrew4U’ help us take this local support further! The Easties Crew for you lost their locks on Saturday March 12th alongside radio personality Mark “Strawny” Strachan and 10 keen locals for the 2016 World’s Greatest Shave. Having all known someone who has battled cancer our Easties Crew was inspired to shave their heads showing support of families and individuals going through the difficult journey of cancer. Shave Day came around very quickly, the Club was full of patrons supporting the cause enjoying the face painting, waxing, hair colouring and of course shaving that was on offer for a donation. There was literally nowhere to sit! Our staff were completely overwhelmed with the support and donations we

received on at the event, for a few of us the afternoon was quiet emotional losing our hair was a massive decision but it was worth every strand when we saw how much we had raised to support those with Blood Cancer. The event was a great success with the team goal of $10,000 exceeded with $20,368.74 in donations raised in just 5 weeks. Two of our wonderful shavers also saved their locks and will be donating it to wig makers for those battling cancer and have lost their hair. On June 30th the Leukaemia Foundation announced Port City’s Easties Crew 4 You team as one of the top fundraisers in the state for the World’s Greatest Shave. The Easties Crew were invited to Sydney to celebrate their achievements and accept an award on behalf of the Port City.

AT PORT CITY, WE LOVE OUR COMMUNITY Port City Bowling Club takes pride in its position in the local community! Port City distributes funds through the Port Macquarie Hastings Club Grants scheme. For the year funding year 15/16, $40,000 has been allocated to Club Grants Category 1 Funding. This is a significant contribution from Port City to our local community with recipients being as follows: • Port Macquarie Public School • Hastings Early Intervention • St Vincent de Paul Port Macquarie Centre • Port Macquarie Neighbourhood Centre • Alzheimer’s Australia NSW • Endeavour Mental Health Recovery Clubhouse
• Port Macquarie Community College • Port Macquarie Youth Hub Port City will be presenting cheques to these following recipients at a presentation ceremony held on Thursday 4th August 2016. In addition to this Category 1 funding, Port City has also provided a large sum in donations, grants, sponsorship and room hire via Club Grants Category 2 funding. Much of this assistance goes to groups that are run by volunteers and the funding is vital to their existence and the services they provide to the community. Without the grants, funding or assistance provided by Clubs such as Port City many of these groups would cease to exist.

NSW State Pennant Finalists
What a super effort from the Grade 5 Port City Mens Pennant Team at the recent NSW State Finals at Harbord Bowling Club (Brookvale) in Sydney, 30th July to 1st August! The bus left the Club on time at 7.30 am on Friday morning, and after a short stop at Heatherbrae for a pie and coffee we arrived at Harbord at approx 1.30. Green space had been allocated for 2- 4 pm for our roll up. After the roll up the boys had a short bonding session before travelling to the motel. Saturday morning the first game was against Lismore Heights, with the boys on song from the first bowl, eventually winning 10 – 0 (82-49). The afternoon game was against Pennant Hills who proved to be much tougher opposition. Port City eventually prevailed 8-2 (73-62) to end the day leading our section.
The final section game was against the “Ghosts” from Campbelltown City. After overnight dew the green was fairly slow, and it was Campbelltown who adjusted to the green better than our boys. The final result going the way of Campbelltown 9-1 (57-44). Pennant Hills won our section with 2 wins and 21 points, with Port City runners up with 2 wins 19 points. It was a great achievement to win the district, zone and make it through to the state. So near and yet so far. Port City can be proud of their efforts. Congratulations to all 12 players, reserves and coach Greg Keft. Also thanks to the coach “M.C’s”, president Paul Brady and board rep. Leigh Hardingham, who kept us informed and amused.

Meet the Port City Team! Tara Carter Q How long have you been at Port City Bowling Club? A I’ve been here close to 3 years working in the bar as a barista and as a gaming host. Q What’s been your highlight to date, working at the Club? A For me it is more about the little things – having a conversation and joke with the patrons and seeing them smile, the joy they exude when they show me pictures of their family, it really makes my day! I have a quirky sense of humour too and there are some members exactly like me who embrace it, I especially love talking with them! I also sold a winning 7 number keno ticket, that was pretty exciting to see a member win $17,000 from a ticket I sold them. Q You are a budding artist, tell us more about your works. A I mostly use paint and what I create mostly depends on my mood. I love painting abstracts and most of my work I like to use a lot of expression and colour. My style and method is quite playful and childlike so it is fun, flowing and free. Q If you could invite anyone famous to dinner (dead or alive) who would you invite and why? A David Attenborough. What an incredible life he has led, I would love to hear all about his experiences... and that voice of his - wow!
Dean Wignall Q Hey Dean you are coming up to 20 years’ service at the Club! Do you still remember your first shift at Port City Bowling Club? A I was working two jobs at the time and came over to work casually on the greens. Prior to starting I did work experience here for green keeping, my job was to weed the school green. I then completed my trade certificate in Sydney before moving back home to Port. Q What has been the biggest change you’ve seen in your time here at the Club? A The size and the professionalism of the Club has been the biggest change I’ve noticed. Q What do you like most about working at Port City Bowling Club? A Working alongside the great, friendly team that we have here at the Club. Q What do you do for fun outside of work? A I like to spend time in the water fishing and surfing and also spending time with family and friends. All the good things Port has to offer.
