Trading Hours Club Daily 9:00am until late Courtesy Bus (See website for Western and Eastern timetables) Welcome all members and guest to another edition of the Port City Bowling Club’s “Pulse” magazine. Since the renovation of the Club and the introduction of the Drift bar.cafe.restaurant its overall popularity has grown. With constantly high quality food options and the atmosphere of the space has contributed to the Board’s decision to approve stage 2 of the Clubs current DA. As discussed, this upgrade will create an alfresco dining area with additional seating as well as increasing the size of the kitchen. This will extend the offering from the Café which has been limited by the relatively small size. The new addition will also require that the No 1 bowling green will have to moved and incorporate the small “kids green” to create the required space for the upgrades and create a new No 1 green. The Board has decide that this new No 1 green should be a synthetic surface. Management are in the process of organising quotes for the design and construction of both these facilities. Once these have been finalised a timetable for construction will be advised. On the community front, staff member Claudia Buckby has completed her trek to the Base Camp of Mt Everest. Claudia raised $6,200 individually and the group raised $59,750 for our staff charity recipient YP Space an amazing achievement. The Club is also supporting the local “Give me 5 for Kids” in conjunction with Triple M. A Barefoot bowls day has been organised for the 29th of June. Members and guests who are interested in supporting this worthwhile event can contact the Club to enter a team or can nominate individually and the Club will organise a team for you. With our financial year just completed it is worth noting that the Club had 16,440 financial members as at 31st May 2019. This is a significant increase since the Club undertook our renovation in 2016. Memberships have increased 5,000 over this period. A big thanks to all the staff at Port City who have worked tirelessly to make this Club such as success. As always there are exciting times ahead for the club and our members Hope to see you at the Club.

Braised Duck Leg Curry Ingredients:
• 1 tablespoon vegetable oil • 3 x roast duck legs • 1 tablespoon of either pre-purchased or home-made Red Curry Paste • 2 x 400ml cans coconut milk • 1/3 cup brown sugar • 1/4 cup fish sauce • 8 kaffir lime leaves, bruised • Small can of pineapple chunks • 1 cup fresh Thai basil leaves, plus extra to serve • Steamed jasmine rice
Try creating your own Red Curry Paste at home using the ingredients below: • • • • • • • • • • • • •
1 teaspoon of cumin seeds 2 teaspoons of coriander seeds 1/2 teaspoon of black peppercorns 10 dried chillies (20g) 1 teaspoon grated galangal 1 stalk of lemongrass 1/4 of kaffir lime, finely chopped 6 coriander roots, finely chopped 2 shallots, finely chopped 4 gloves of garlic, crushed 2 teaspoons of shrimp paste 8 Birdseye chilli seeds 1/2 teaspoon of salt
STEP 1 Heat a casserole pan to a medium heat with a tbsp. of olive oil and sear the duck legs on all sides for 2-3 minutes or until golden brown. STEP 2 Remove the duck legs from the pan for now. Return the pan to the heat and add your home-made red curry paste or pre-purchased version. Cook and stir for 2 minutes or until fragrant. Add coconut milk, fish sauce, lime & basil leaves plus brown sugar to the pan and bring to the boil. STEP 3 Return the duck legs to the pan. Then place a lid on the casserole pan. Cook in the oven at 180oc for 1 hour and 20 minutes until the legs are tender. STEP 4 Remove from the oven, skim off the excess fat from the duck legs. STEP 5 Add pineapple chunks to the red curry sauce with fresh coriander and serve on a base of jasmine rice.

WHAT DO YOU WORK TOWARDS IN YOUR FREE TIME?
I am a proud ‘fur mother’ of two Great Danes. A 2 year old named Mouse and a 1 year old named Luna.
I am currently planning my wedding, so lots of saving and preparation as this is my main goal and focus at the moment. My partner and I also built our first home and would one day love to build another.
HOW LONG HAVE YOU BEEN WITH THE CLUB? WHAT DO YOU ENJOY ABOUT WORKING AT PORT CITY? I have been at Port City for two and half years now, I love the diversity of my job and being able to work in many different areas of the Club is a major plus. My current role within the Club includes almost every area from banking, functions, gaming and reception also including bar work of course. IF YOU HAD SIX MONTHS WITH NO OBLIGATIONS OR FINANCIAL CONSTRAINTS, WHAT WOULD YOU DO WITH THE TIME? I would love to spend this time travelling. I am honeymooning to Italy in October this year so to be able to continue travelling from there would be amazing. I would also love to see more of our beautiful surroundings too.

IF YOU WERE TALKING TO SOMEONE VISITING PORT MACQUARIE FOR THE VERY FIRST TIME, WHERE WOULD YOU TELL THEM TO VISIT AND WHAT WOULD YOU TELL THEM ABOUT THE CLUB? My favourite part of Port Macquarie is our access to the beach and bush. As someone who grew up on a dairy farm I suggest taking some time out to see parts of our beautiful bushland, or a trip to one of the nearby waterfalls. Of course I would suggest a visit to Port City Bowling Club! Kick off your shoes with a game of barefoot bowls or relax and enjoy a lovely meal at Drift bar.café.restaurant with friends and family. As a foodie I can guarantee you won’t be disappointed.

YP Space MNC Everest Challenge
On 27th April 2019 I reached the base of Mount Everest, Nepal altitude 5364 meters above sea level with our YP Space team. It was an incredible journey with 11 of our 12 team members reaching Everest Base Camp. Of the 12 participants, 11 were from the Port/Kempsey area. Reaching Everest Base Camp was our goal but raising much needed funds for YP Space MNC Inc was our mission, raising just shy of $60,000 to help and support homeless youth in and around Port Macquarie. Port City Bowling Club has partnered with YP Space MNC Inc for the past two years to help raise awareness within the local community of youth homelessness. YP Space MNC Inc provides short term crisis accommodation, transitional housing, early intervention and prevention and ongoing support to our youth. My journey was not always what I expected it to be. We had to be physically fit but it was the mental strength that I found I needed to get through most of the long days and cold nights in our tents. Our World Exibition guides, led by Mani from India did everything in their power though to make sure our health and safety came first and we could get as far as possible into our journey. Reaching Everest Base Camp is a huge bucket list item for so many people around the world. When we got our first glimpse of our destination I wondered at how huge the camp is and how many people are in the camp preparing for their own massive journey. And then you look out over the Khumba Icefall – the first part of their trek leading up to Base Camp 1 and the magnitude of what they are going to attempt starts to hit home. 381 permits had been granted to exhibition teams this year in what ends up being one of the most tragic years in summit history.
From Base Camp you don’t actually get a view of Mount Everest. I knew this and deep down wanted to achieve the teams challenge the next day – ascending Kala Patthar. This was optional for the team and in the end only 3 out of 12 of us decided to take the challenge. I was joined by Anthony, Damo and our guide Bolli and together we made the slow ascent to the top of the ridge. By this stage the effects of high altitude can really be felt. From 5500m, there is only approximately 52% of the oxygen at sea level. It starts to feel like you have an elephant sitting on your chest making it hard to get a full breath and after every 10 or so paces you need to rest to help lower your heart rate. But with all adversity, this was the most amazing morning of my journey as once we arrived at 5545 meters and at the top of the Kala Patthar ridge we had the most breath taking view of the tallest mountain in the whole world – Mount Everest! At the end of the 14 day hike, the YP space group spent a day at Mahankal Secondary School in Galfutar, Kathmandu helping to clean and repaint 6 classrooms. Mahankal Secondary School has 476 children from kindergarten to year 12. No one really knew what to expect but it was an incredibly rewarding experience. Despite the fact that it was school holidays, at least 200 kids turned up to help the team. Not only were the classrooms painted, the YP Space team gained an insight into the local culture and workings of the community. A portion of the travel costs the each participant paid went toward supplies for the day. We ate and worked and danced with the school community, rounding off an unforgettable journey!
