FROM THE EDITOR January arrives with a quieter pace, inviting Plymouth to pause, reset and look ahead. The festive sparkle may have faded, but there’s something refreshing about this time of year. Longer days slowly return, routines find their rhythm again, and there’s a shared sense of possibility as we step into a new chapter.
23
This edition embraces that feeling of renewal. January is a chance to reflect on what’s gone before, set intentions for the months ahead and rediscover the small things that bring purpose and joy to everyday life. I’ve loved putting this issue together and hope it offers inspiration, clarity and a gentle nudge to start the year feeling motivated and grounded. As always, I’d love to hear from you. Your thoughts, stories and suggestions help shape this magazine and keep it closely connected to the people and places that make Plymouth special. You can reach me at [editor@oracle.uk.net](mailto:editor@oracle. uk.net), and I’ll always do my best to respond.

Why KF Kitchens Should Be Your First Choice for a 2026 Kitchen As homeowners across Plymouth and the South West look ahead to 2026, one priority stands out: transforming the kitchen into a space that enhances everyday living. Increasingly, clients want considered layouts, premium materials, and designs tailored to how they cook, gather, and enjoy their homes. KF Kitchens, the award-winning independent showroom at Faraday Mill, continues to lead the region in delivering kitchens that combine luxury, functionality, and intelligent design.
Award-Winning Service and Design 2025 was a landmark year for the business, led by Nathan and Derinda Damarell. KF Kitchens won both the KBSA Customer Service Award and the BKU Customer Service Award, and was named a finalist for NEFF MasterPartner of the Year, KBSA Best Kitchen Design (£25k–£50k), NEFF Best Island Solution, the KBB Focus UVLA Sustainability Award, and Häfele Kitchen Designer of the Year. These achievements reflect what Plymouth customers already experience: a level of care, creativity, and professionalism that stands apart.
Case Study: Lewis & Kylie Furse – A Warm, Traditional Shaker for Modern Living For their first home, Lewis and Kylie wanted a timeless, welcoming kitchen without exceeding their budget. KF Kitchens designed an elegant open-plan layout featuring Burbidge Chartwell cabinets, a contrasting island, Silestone worktops, oak accents, and premium Neff appliances. A bespoke false chimney created a strong focal point, while thoughtful storage ensured the large room felt cohesive. Installed in partnership with the homeowners’ builders, the project was completed smoothly and submitted for the KBB Awards 2025 (Under £50k).
A Large, Luxury Showroom with Working Appliances KF Kitchens operates one of the South West’s most comprehensive independent kitchen showrooms. The displays showcase German Nolte and Nolte Neo, British Burbidge and Kitchen Makers, and a wide range of premium finishes—from real wood veneer to concrete, slate, and metal door fronts. Working appliances from NEFF, Siemens, BORA, Miele, Gaggenau, and Quooker allow customers to experience real-world performance, including venting hobs, steam ovens, and boiling-water taps. The showroom is designed to be relaxed and pressurefree, giving visitors time to think, explore, and ask questions.
Case Study: Mr. and Mrs. Garcia – Modern German Design with Everyday Practicality During a full renovation and extension, the Garcias needed a kitchen that matched both Nick’s professional cooking standards and their growing family’s needs. KF Kitchens designed a sleek Nolte scheme in Plus Lava and Artline fronts, complemented by natural light from new Velux windows.
Start Your 2026 Project with Confidence A successful kitchen begins with early planning. Whether clients want a luxurious contemporary space or a warm, traditional design, KF Kitchens offers awardwinning expertise backed by a large showroom, premium brands, and a proven, end-to-end service.
KF Kitchens is known for more than cabinetry. Nathan’s design approach regularly includes moving doorways, adjusting sightlines, improving natural light, coordinating with trades, and solving spatial constraints. Whether it’s a modest redesign or a full structural re-imagining, the result is a kitchen that feels intentional and personalised. Multiple design concepts are offered with no pressure and no deposit required until customers feel confident in the direction. Installation is delivered by trusted, highly professional teams—or KF Kitchens can coordinate seamlessly with clients’ own builders. Read our reviews
A clever secondary worktop created space for casual seating and allowed pendant lighting to be installed without blocking the daylight—a feature the clients had thought impossible. High-performance Neff appliances and a Quooker Pro-3 Vaq with Cube elevated functionality while maintaining a clean, modern aesthetic. The project was later submitted for the NEFF Best Island Solution Award, where it became a national finalist.

Megabus Falcon Service - A Vital Link For Plymouth And The South West For people living in Plymouth and across the South West, reliable and affordable transport is more important than ever. Whether travelling for work, visiting family, exploring local towns or heading further afield, having consistent, well-connected services makes a meaningful difference to daily life. That is exactly what the megabus Falcon coach service has been delivering since its launch almost a decade ago, and why it remains one of the region’s most valued transport links.

or people living in Plymouth and across the South West, reliable and affordable transport is more important than ever. Connecting Plymouth with Exeter, Cullompton, Wellington, Taunton, Bridgwater, Bristol Airport and Bristol city centre, the Falcon is a lifeline that supports residents, businesses and communities across the region. In 2026, the service will mark its 10th birthday thanks to the millions of people who have used the route since its launch.
The Falcon operates 19 departures every day and night, running 24 hours a day, all year round, including Christmas Day and New Year’s Day. This commitment from the Falcon team ensures that local people have access to dependable, frequent travel whenever they need it. The route is used by thousands of customers each week and has become a trusted network for local people and visitors to the region alike. With services running up to every hour, the network offers an impressive level of flexibility, and whether you are commuting between Plymouth and Exeter, travelling to Bristol for the day, or catching an early-morning or late-night flight from Bristol Airport, the timetable is built to support real-life schedules.
The year-round operation means passengers can rely on the service during quieter periods and businesscritical travel times alike. For many, this reliability removes the stress of driving in all weathers, unpredictable rail schedules or last-minute transport issues. Connecting Communities Across the South West One of the strongest advantages of the Falcon service is the way it links towns and cities that can otherwise be time-consuming or costly to travel between and park in. Plymouth residents benefit from seamless connections to numerous destinations along the corridor. This makes it easier to visit family and friends, or attend events or appointments in locations along the route such as Taunton, Wellington, Bridgwater, Cullompton, Exeter or Bristol. It also provides reliable and affordable transport to reach Bristol Airport for international travel and lets local people explore other parts of the region without relying on multiple transport changes. These connections strengthen local economies by encouraging movement between communities,
supporting tourism and facilitating access to education and employment. Supporting Local Business and the Regional Economy Reliable transport is a cornerstone of economic resilience. By providing regular, accessible services through both major hubs and smaller towns at affordable prices, the Falcon helps bolster local businesses across the South West. Day visitors bring footfall to high streets in local towns and workers can attend training, conferences or client meetings without running up business costs. Students and young people also have improved access to opportunities beyond their immediate area, which is vital for their growth and development. For Plymouth in particular, the Falcon helps ensure the city remains connected to regional growth, business investment and wider employment options. This level of connectivity helps local prosperity flow more evenly across the South West. A Sustainable Travel Choice With sustainability becoming an increasingly important consideration for many, coach travel offers a lower-emission alternative to private car use. The Falcon service supports the region’s environmental goals by encouraging shared travel and reducing congestion on major routes such as the M5 and A38.
to comfort, modernity and passenger experience. On board, travellers benefit from features designed to make journeys smoother and more enjoyable. These include comfortable, modern seating, air-conditioning, power sockets, and free Wi-Fi and the focus on comfort ensures the service remains a practical choice for long-distance commuters, business travellers and holidaymakers alike. Falcon in 2026 As we move into 2026, the South West has a wide range of events, attractions and business opportunities to look forward to across the route. As always, throughout the year across the region will be a host of local events, theatre performances, exhibitions, shopping opportunities, and a calendar of local markets, independent festivals and community activities throughout the towns the service connects, not to mention beautiful coastal walks near Exeter. The Falcon places all of these within easy reach, allowing residents to explore, engage and participate fully in all that the region has to offer. At the centre of the megabus Falcon apart is its role as a communityfocused service. Its consistent timetable, affordability and regional reach support everyday life for thousands of local people. The service keeps families connected, opens
doors for businesses and provides a high-quality, dependable link across some of the South West’s most important locations. For Plymouth residents and those living along the route, as well as being a coach service, the Falcon represents a trusted, long-standing part of the region’s transport landscape — one that continues to evolve, invest and serve with reliability at its core. The Falcon’s team of committed employees - most of whom also live along the route - work hard 365 days of the year to deliver coach services that they and the region can be proud of. This includes providing real time information for passengers, regular social media updates, caring customer service and at times, managing challenging situations on the local road network. In summary, the megabus Falcon launched in 2016 and remains a vital, year-round transport link for Plymouth and the wider South West, offering reliable, affordable, 24/7 travel and seamless connections between key towns, Bristol Airport and major hubs. Its modern fleet, sustainable approach and strong community focus help residents, businesses and visitors stay connected, supporting local economies, access to opportunity and everyday life across the region. Affordability also remains a key advantage. Compared with rising fuel prices, parking charges or peaktime rail fares, coach travel continues to be one of the most cost-effective ways to move between cities in the South West. For many residents, this makes regular travel more accessible, whether for work or leisure, which is an important factor for local economic prosperity. The Falcon fleet has recently been refreshed with a new-look livery, reinforcing the service’s commitment

Shake off the Monday Blues Blue Monday – 19th January 2026 The third Monday of January is supposedly the most depressing day of the year therefore we have compiled a list of ways to shake off those Monday Blues.
J
anuary can be a tough month for a lot of people. Typically, by the 3rd Monday in January, the excitement of the Christmas holidays has left, New Year’s resolutions are falling short of success and the work routine seems to be dragging. Not to mention the shorter days and increased rainfall resulting in Season Affective Disorder (SAD).
1. Blast some music on! Whether you’re in the car on your way to work or cooking up some breakfast in the kitchen, an upbeat playlist can start the day off right.
2. Treat yourself Indulge in a takeaway, buy yourself some flowers or head to the online shops and order yourself a new outfit. Purchasing items that make you happy have a short-lived, but positive effect on your mood and it also gives you something to look forward to when they arrive.
3. Talk to someone Reaching out and having a conversation with someone can instantly brighten your day. Pop over to your loved ones for a catch-up and a cuppa or ask your work colleagues about their weekend. If you are in a position where you need immediate support, you can text SHOUT to 85258 for a free 24/7 support line.
4. Pamper yourself Light a candle, run the bath, use some essential oils to completely relax. It’s important to take some time out of
your day to completely switch off from everything and allow your mind to feel at ease. Turn your phone on silent for the duration of your bath and maybe read a book, listen to a podcast or put on some relaxing music.
5. All dressed up If you’re having a day lounging about the house, or perhaps you’re working from home and don’t necessarily need to show yourself to anyone, get dressed regardless of your plans. Taking the time to pick out a great outfit, styling your hair or giving your beard a fresh trim not only makes the time fly by but also helps give you a confidence boost. ‘Look good, feel good!’
6. Get some exercise in Even if you don’t feel like working out, it will help! Even a home workout releases happy mood chemicals called endorphins which in turn reduce stress and alleviate anxiety. A workout doesn’t have to be highintensity either, it can simply be a stroll around the park or a walk around the glorious South West Coastline. Whilst you’re on your walk, or if you have decided to do a spot of yoga, remember to take in all the senses of being outside. Being in the present moment helps you to appreciate the world you live in and stops you from taking these things for granted. With all this in mind, I hope your Blue Monday becomes a little less blue this year.

Ways to stay healthy this New Year...
January is here, it’s time to kickstart those resolutions!
I
f you’re still struggling for a New Year’s resolution for 2026, you can never go wrong with starting with the basics.
Perhaps you are looking to start the year by changing your eating habits, or maybe you’ve joined a gym/fitness centre and have no idea where to start. Don’t worry, we’ve all been there - and there a plenty of ways of getting into a routine that works for you. With all these things, you have to remember that it’s not just a new diet or a new exercise regime that you are going to fit in around what you are currently doing, it’s a lifestyle change.
A lot of people view healthiness as eating ‘bland’, low calories foods and spending hours on a treadmill; but it just doesn’t work like that. Now that may sound quite daunting at first, but it will work for you much better both physically and mentally in the long run. For example: if you just carry on with your regular day-to-day life but then decide that you’re going to start a new diet and then also do a thirty minute exercise per day on top of this, to begin with it doesn’t seem like much at all. But as you go on there will be times where you suddenly can’t fit in your daily exercises, or you don’t have time to prep a healthy meal before work; and then before you know it you’re back to normal because it’s easier than trying to add these new things on top. If you approach it this way; as something extra added onto your already pre-existing routine - you are almost guarantee to fail every time.
Remember that fitness isn’t a short-term fix. Nothing will get you completely toned and fit in a month. It takes patience, time, and it definitely shouldn’t be something that you dread every single day. It shouldn’t stress you out (in fact, it should do the exact opposite!), it should be enjoyable, yet challenging at the same time. It should be filling foods that give you energy and fuel your body. And you must always remember that if something is working really well for someone else, that doesn’t mean that it will work for you.
Everyone is different: some see results quickly, some will take longer. Nobody is the same and that’s very important to remember.
Tips on how to keep up a healthy lifestyle: Don’t restrict yourself - A lot of people fail these diets because they tell themselves “I can’t eat this or that, only small, lowcalorie foods.” When the truth is, that isn’t actually healthy for you at all. Now you shouldn’t go to the opposite end of the spectrum and over indulge, but don’t tell yourself that you can’t eat something because there shouldn’t be boundaries on what you eat. Just always remember that you can eat that McDonalds and not feel guilty, because one time isn’t going to hurt. Don’t count calories - This is where people go wrong all the time! The thought process behind it is that if you eat less calories, you’ll lose weight and becom e healthy - and you may lose weight- but you definitely won’t become healthy. What will happen is that you will feel very fatigued and exhausted, and then won’t have any energy to workout: that’s a bit contradictory to what you’re aiming for isn’t it? What you want to be looking at are the macronutrients of what you’re eating. There’s loads of information about this online that can properly aid you in your fitness journey.
There are lots of different ways to get into a healthier lifestyle. All require a bit of motivation, but a good mindset and dedication can see you through. If you’re struggling for places to start with, then maybe taking up a challenge that thousands of people also take part in will be the right place for a proper kickstart. This month is Veganuary, where the aim of the month is to eat vegan all throughout January. This means no meat, no dairy products and eggs, essentially nothing that comes from animals.
Veganuary launched in January 2014 in the UK. They are a registered charity that encourages people take on a vegan diet throughout January.
traditionally been the main motivation, recent years have seen a clear shift. Interest driven by environmental impact and personal health has risen significantly, and when combined, these reasons have now overtaken animal welfare as the primary factors encouraging people to take part in Veganuary.
The charity says that going vegan can reduce obesity, lower blood pressure, and help to reduce the risk of other health issues such as diabetes and heart disease. They also state how it has a more positive effect on the environment than it would if you were to give up your car.
Did you know... Livestock emissions make up anywhere between 14.5% 18% of total global greenhouse gas emissions. Veganuary 2025 broke all records! The Veganuary campaign has continued to gain remarkable momentum, growing by 183 per cent in 2018 alone, with more than 16,000 people signing up to take part. Notably, 79,000 of those participants identified as omnivores, highlighting a growing curiosity about plant-based living beyond the vegan community. While concern for animal welfare has
There are also loads of recipes to follow online for anyone struggling for inspiration of where and how to start. The official Veganuary website has a large list of various recipes for anyone to try out, just to help make your transition a little bit easier.
Even just using the power of social media and searching #vegan on Instagram will greet you with 70.5 million posts, so you won’t fall short of ideas quickly!
The whole month is dedicated to changing attitudes towards veganism. They aim to help support anyone who is wanting to transition into veganism, or to just provide the right information for those who want to know more about a vegan diet/lifestyle. Campaign organisers say that following a vegan diet - even if only for a short period of time - can have a lot of benefits, not only for health reasons but also for environmental reasons.
to consume anything outside of what you should be.
A vegan diet contains only plants (such as vegetables, grains, nuts and fruits) and goods made from plants A lot of people assume that because vegans cut out so many food groups, that there can’t be a lot left for them to eat, but this is definitely not true. To begin with, a lot of standard households will already be stocked with vegan foods without them even realising. Peanut butter, baked beans, dried pasta, tea, coffee, many biscuits you get the point. There has also been a large increase in vegan foods that are available. Supermarkets stock a wide variety of vegan alternatives, including various ready meals - so no, you won’t have to do extensive amounts of cooking if you don’t have the time. The NHS website gives a rough guide of what to eat for a vegan diet, and how to get the various nutrients necessary without having
With the lifestyle and diet being more popular than ever before. more and more people are opting for veganism over other lifestyles. There are 2.5 million vegans in Great Britain as of 2026, that’s about 1.6 per cent of the U.K’s population. That number has more than doubled since 2014, when the reported number was around 150,000. But will you be adding to that number this year? More information can be found by visiting veganuary.com

WALK YOUR DOG MONTH Every year in January, we celebrate National Walk Your Dog Month! As a way of celebrating this, we have found some of the best walks around Plymouth with some reasons why walking your dog twice a day, every day is so beneficial to you and your dog’s health.
A
fter a month of Christmas celebrations and roast dinners, it is all to easy to stay inside with the comfort of a warm fire but getting a walk into your routine once or twice a day will help to keep you fit without needing to hit the gym. Depending on the breed of your dog, they all require different amounts of walking to maintain a healthy weight. Alongside a healthy diet, the correct amount of exercise will help to regulate their weight. Getting some exercise in each day will also make a positive impact on your mental health and wellbeing and will allow you to be more motivated and less anxious in your day-to-day life. Put the phone on silent and focus on your dog for the entirety of your walk, watching them run around getting up to mischief. Your dog will find your engagement more exciting and you will enjoy living in the present moment. Always bring a phone with you just in case there is an emergency or if you are walking in the evening. The fresh air will do yourself and your dog a world of good. Heading to a space free of cars and lower pollution
levels such as Dartmoor will not only smell much more pleasant but it will also reduce the risk of cardiovascular diseases such as heart attacks and respiratory diseases like asthma. Although Plymouth is an ocean city surrounded by green open spaces, back in 2018, Plymouth was actually classed as one of the UK’s most polluted cities. With this in mind, it is important to escape the city regularly and give yourself and your dog a breath of fresh air.
Where can I walk my dog near Plymouth? Fortunately, we are very blessed to have an abundance of stunning walks right on our doorstep with low pollution levels and space for your furry friend to run around, complete with a paw friendly pub to end the walk.
Bovisand Bay to Heybrook Bay & back (2.5 miles) Arrive at Bovisand car park and join the South West Coast Path heading down past the holiday chalets and up towards the next cove. Enjoy picturesque views of the sea and the countryside as you take a gentle stroll along the trodden
path. After 30 minutes of walking, you will arrive at Heybrook Bay, a stunning natural beach nestled into the South Hams coastline. You can either choose to turn back around, stay for a paddle, carry on further down the coast path or enjoy a hot drink and some grub at the Eddystone Inn. The Eddystone Inn is a charming village gastro pub, complete with a log burner fire. Enjoy panoramic sea views sat on the terrace in the summer months or cosy up next to the roaring fire after a brisk walk. The bar area is dog friendly. If the 30-minute walk there didn’t work up an appetite, head back along the South West Coast path back to Bovisand car park and then take the 5-minute drive to The Mussell Inn. The dog friendly pub hosts a delicious food menu and a wide range of drinks to satisfy your tastebuds. The country décor feels a far cry from the bustling city centre.
Buckland Abbey Woodland Walks (1-3 miles) With a choice of three different walks to try out, there is something for the whole family at Buckland Abbey. Located besides the River Tavy, the 700-year-old, grade I listed house boasts 20,000 acres of stunning gardens and woodland walks. The routes are as follows; yellow, red and blue which increase in difficulty and length.
The yellow route is a short 10–15-minute walk, suitable for wheel chair users and push chairs and ideal for elderly dogs who just need some fresh air. The red route is a 45-minute trek around the picturesque countryside, through woodlands and fields. Walking boots or wellies are a must for this walk, especially after a heavy down pour. The blue route is the most challenging walk of the three, taking 1.30hrs and taking you into the depths of the woodlands and overlooking The River Tavy. Walking boots are essential.
stay out of the lake for the welfare of the wildlife. This gorgeous spot can become very popular in the warmer months but in the colder months, it’s an ideal spot to come for a walk with flat paths and tranquil waters.
Your four-legged friends are welcome in all three of the walks but they ask for you to keep them on a lead. There are no doggy poo bins on the grounds therefore they suggest either ‘Sticking it and flicking it’ into the hedgerow or pick it up and dispose of it at home. In need of a refreshment after the walk? Head to the restaurant for a delicious hot chocolate and to dry off those muddy paws.
The Middle Dart Valley Walk (5 miles) An easy walk, perfect for those winter days when your usual walks get too muddy. With surfaced paths and lanes between Totnes and Darington and no styles or steep hills, this walk is perfect for the long-distanced walkers.
There are two trails to follow at Bellever, both similar distances that begin at the car park. To read the guided walks in detail, please visit www.visitdartmoor.co.uk/belleverforest Although a lot of the walks involves tracks, this is Dartmoor so it’s always good to wear a suitable pair of walking boots as you never quite know how boggy it’s going to be.
Begin by strolling through Totnes and follow the route to finally end up in Dartmouth. You can find the details for the walk here: www.visitdartmoor. co.uk/the-middle-dart-valley-walk
In the summer months, Bellever Forest is a great destination to have a picnic next to the river. You can even enjoy a little paddle in the water to cool off and wash off those muddy paws.
Bellever Forest (3 miles)
Stover Country Park
Bellever Forest is a must see for anyone who loves a picturesque country walk with mossy woodlands and babbling brooks.
A peaceful lake, lots of picnic areas, wildlife to spot on route and toilets in the paid car park. Dogs are allowed off the lead here but ask for them to
After your walk, why not take the 10-minute drive up to Ilsington’s local pub for some delicious food from the bistro pub, The Carpenters Arms. They are a dog friendly pub and offer home cooked and homemade traditional pub food nestled in Dartmoor National Park.
Mount Edgcumbe Country Park (4.3 miles) Hop on the Cremyll ferry or take a drive in the car to Maker Church car park. Make sure you bring some suitable walking boots as it can be muddy in the winter months with some steep inclines and steps. This moderate circular walk will take you around the perimeter of the Mount Edgcumbe estate with fantastic views of the Plymouth sound and surrounding coastline. You will also come across eighteenth-century follies, fountains and shelters along the path. This route follows the South West Coast Path which is of course, open all year round. In the warmer months, you could stop by at the mid-sixteenth century house and have a tour of its formal gardens and even have a spot of lunch in their tea-room! To download a step-by-step guide of this walk, head to: www. southwestcoastpath.org.uk/ walksdb/135/ So, what are you waiting for? Wrap up warm, put the walking boots on, grab the dog lead and start exploring some more of what Devon has to offer!

OUR FAVOURITE
VEGAN
RECIPE IDEAS VEGANUARY IS HERE! If you’re struggling for some delicious vegan recipes to help you through the month, look no further. Here are our favourite vegan dishes and sweet treats!
Tuscan Vegan Gnocchi (Serves 5)
• 2 tablespoons olive oil • 2 vegan Italian sausages (7-8 ounces), sliced, I used Field Roast • 4 cloves garlic, minced • 1/2 cup vegetable broth • 13.5 ounce can full fat coconut milk • 2 teaspoons fresh lemon juice • 1 teaspoon dried Italian seasoning • 1/3 cup sun dried tomatoes, sliced if whole • 1 pound uncooked gnocchi, the dry packaged kind • salt + pepper, to taste • 2 cups loosely packed baby spinach • 1/2 cup Vegan Parmesan, + more for garnish • 1/4 cup chopped fresh basil ONE In a large skillet, sauté the vegan sausage over medium-high heat for about 5 minutes, until browned. Add the garlic and cook, stirring constantly, for 30 seconds until fragrant. TWO Pour in the vegetable broth, coconut milk, lemon juice, Italian seasoning, sun-dried tomatoes and gnocchi. Give everything a good stir. THREE Bring to a boil, then lower heat to medium and cook, uncovered for 5 minutes, stirring occasionally. Add salt + pepper to taste, and stir in the spinach. Cook for another 2 minutes, until the spinach has wilted. FOUR If using, stir in the vegan parmesan. At this point, the gnocchi should be cooked through but not mushy, and the sauce thickened somewhat. Cook an additional minute or two if necessary. Serve immediately garnished with vegan parmesan and fresh basil.
Vegan Carrot Cake (Serves 12-15)
For the icing
• 4 sachets (200g) creamed coconut • 1 tbsp lemon juice • 2 tbsp cashew nut butter • 50g icing sugar • 60ml oat milk
For the cake
• 250ml jar coconut oil , melted • 300g light brown sugar • 1½ tsp vanilla essence • 210ml dairy free milk , we used oat milk • 420g plain flour • 1½ tsp baking powder • 1½ tsp bicarbonate of soda • 1 tsp cinnamon , plus extra cinnamon to decorate • 1 tsp ginger • 1 tsp ground nutmeg • 1 orange , zest only • 4 medium carrots , grated (you want 270g grated weight) • 75g chopped walnuts , plus extra to decorate ONE Start by making the icing first. Mash the coconut cream with 2 tbsp hot water and the lemon juice until smooth. Add the cashew butter then whisk in the icing sugar followed by the oat milk. Continue to whisk until fully combined, set aside in the fridge until needed. TWO Heat the oven to 180C/160C fan/gas mark 4. Grease 2 x 20cm cake tins with a little of the melted coconut oil and line the bases with baking parchment. Whisk together the oil and sugar, then add the vanilla and milk. Combine the flour, baking powder, bicarbonate of soda, spices and orange zest in a separate bowl. Add these to the wet mixture and stir well. Finally stir in the carrot and the nuts. Divide the mixture between the prepared tins and bake for 25-30 mins until a skewer inserted into the middle of the cake comes out cleanly. Cool in the tin for 5 mins before transferring to a wire rack to cool completely. THREE Sandwich the cakes together with half the icing then cover the top with the remaining icing (add a splash of oat milk if the icing feels too firm). Scatter over the nuts and dust the cake with a little cinnamon
Vegan Jambalaya (Serves 2) • 2 tbsp olive oil • 1 large onion (180g), finely chopped • 4 celery sticks , finely chopped • 1 yellow pepper , chopped • 2 tsp smoked paprika • ½ tsp chilli flakes • ½ tsp dried oregano • 115g brown basmati rice • 400g can chopped tomatoes • 2 garlic cloves , finely grated • 400g butter beans , drained and rinsed • 2 tsp vegetable bouillon powder • large handful of parsley , chopped ONE Heat the oil in a large pan set over a high heat and fry the onion, celery and pepper, stirring occasionally, for 5 mins until starting to soften and colour. TWO Stir in the spices and rice, then tip in the tomatoes and a can of water. Stir in the garlic, beans and bouillon. Bring to a simmer, then cover and cook for 25 mins until the rice is tender and has absorbed most of the liquid. Keep an eye on the pan towards the end of the cooking time to make sure it doesn’t boil dry – if it starts to catch, add a little more water. Stir in the parsley and serve hot.
Spinach & Apple Smoothie (Makes 1) • 1 apple • 1 date • 1 celery stick • 4 cubes of frozen spinach (100g / 3.5oz ) (or sub for a handful of fresh spinach) • squeeze of fresh lemon juice • small handful of walnuts • 250ml / 8.5 fl.oz almond milk • 250ml / 8.5 fl.oz water ONE Quarter the apple and remove the core, top and tail the celery and cut it into small pieces and remove the stone from the date. Add all three ingredients to a blender along with the spinach, a squeeze of lemon, the walnuts, almond milk and water. TWO Blend until smooth then serve.
Recipes from bbcgoodfood.com
Vegan Meringues (Makes 10-12) • 400g can chickpeas • 100g golden caster sugar • soya cream and fruit, to serve (optional) ONE Heat oven to 110C/90C fan/gas ¼ and line a baking tray with baking parchment. Drain the can of chickpeas over a bowl, saving the chickpeas for another recipe. TWO Using an electric whisk, beat the chickpea water until soft peaks form (similar to egg whites). Add the sugar a little at a time, whisking constantly until thick and glossy. This step is crucial to helping the meringues hold their shape and you’ll be whisking for up to 10 mins – far longer than for a traditional meringue. THREE Spoon or pipe the meringue mixture over the tray in 8cm blobs. Bake for 1 hr 15 mins until crisp. Leave to cool, then pile with the soya cream and fruit, if using.
Vegan Thai Green Curry (Serves 4) • 200g baby potatoes, halved • 100g green beans, trimmed and halved • 1 tbsp rapeseed oil • 1 garlic clove, finely sliced • 1 tbsp Thai green curry paste (check the label to make sure it’s vegetarian/ vegan) • 400g can light coconut milk • 1 lime, zest pared in thick strips • 80g sugar snap peas, halved lengthways • 150g cherry tomatoes, halved • 100g firm tofu, chopped into small cubes • small bunch coriander, chopped • 200g jasmine rice, cooked following pack instructions ONE Cook the potatoes in boiling water for 8 mins. Add the green beans and cook for a further 3 mins, then drain. TWO Heat the oil in a wok or pan, fry the garlic for 1 min, add the curry paste and cook for 1 min, or until it starts to darken a little and smell fragrant. Stir in the coconut milk and bring to a simmer, drop in the lime zest and gently bubble for 5 mins to thicken the sauce a little. THREE Add the potatoes and beans followed by the sugar snap peas and cook for 1 min before stirring in the cherry tomatoes and tofu. FOUR Cut the lime in half and squeeze the juice into the pan, then stir in the coriander and serve over the rice.
not just rushed out of the kitchen. This steady standard has earned Shapla loyal regulars as well as the respect of wider food circles. The restaurant’s recognition with a Good Food Awards Gold Seal reflects years of hard work and Mr Ali’s commitment to excellence. Awards like these are not given lightly, and the achievement speaks to the dedication behind every plate that leaves the kitchen.
Shapla Balti Cuisine: Plymouth’s Gold-Standard in Indian Dining T ucked along Ridgeway in the heart of Plympton, Shapla Balti Cuisine has earned a reputation as one of Plymouth’s most reliable and enjoyable dining experiences. It is the kind of place locals mention with pride and visitors remember long after they have left. Warm, welcoming and consistently delicious, Shapla has become more than a neighbourhood Indian restaurant. It is a place where good food, genuine hospitality and community spirit naturally come together. Much of that atmosphere comes from the presence of its owner, Mr Ali, whose dedication and warmth are felt in every part of the restaurant. From the moment you walk through the door, you notice the influence of a handson owner who truly cares about the people he serves. Mr Ali is known for greeting guests with an easy smile and a sincere welcome, often stopping at tables to chat, ensure everyone is comfortable and check that the dishes suit each guest’s taste. His passion for hospitality is unmistakable. Regular customers often speak about how he remembers their favourite dishes, asks
after their families and makes newcomers feel instantly at home. His leadership sets the tone for the entire team, and the result is service that feels effortless, personal and genuinely thoughtful.
Shapla’s inviting interior reflects that same care. The space is bright, clean and comfortable without being pretentious, creating a setting that works just as well for a family meal as it does for a relaxed evening with friends. Under Mr Ali’s guidance, the restaurant has maintained a level of consistency that diners appreciate. Even on busy nights, the service remains smooth, the food arrives hot and beautifully presented, and guests feel well looked after. Of course, the heart of Shapla lies in its cuisine. The menu is a celebration of rich Indian flavours crafted with skill and authenticity. Under the direction of Mr Ali, the kitchen team has perfected a balance between traditional favourites and more adventurous dishes. The Baltis are vibrant and aromatic, the tandoori plates are tender and full of depth, and the biryanis are fragrant and satisfying. Diners often comment on the freshness of the ingredients, the tenderness of the meats and the generous portions that leave you fully content without feeling overwhelmed. Vegetarian and vegan dishes receive just as much attention, ensuring that every guest finds something to enjoy. What truly stands out is the consistency. Whether you dine in or order takeaway, the quality never slips. Each dish feels as though it has been prepared with care,

Value also plays a big role in Shapla’s popularity. In a time when eating out can feel costly, the restaurant offers generous portions, fair pricing and a level of quality that exceeds expectations. Add convenient parking and a takeaway service that maintains the same high standard as dining in, and it becomes clear why so many local households turn to Shapla again and again. For anyone seeking authentic Indian cuisine served with warmth and heart, Shapla Balti Cuisine stands out as one of Plymouth’s finest choices.
