1: Know your sunburn risk
According to the British Association of Dermatologists, people with pale skin that burns easily, a history of severe sunburn, many or unusual moles, a close family history of melanoma, a suppressed immune system, or a history of sunbed use or regular sunbathing may be at higher risk of developing skin cancer. Risk also increases with age and prolonged lifetime sun exposure, including through outdoor work or hobbies. If any of these apply to you, taking steps to protect your skin in the sun is especially important.

2: Use the right Sunscreen
Sunscreen products have separate ratings for UVA and UVB protection. The SPF (Sun Protection Factor) measures protection against UVB rays. Everyone should wear at least SPF15, whatever their skin type, although SPF30 to SPF50 provides higher protection. The level you need depends on your skin type and how easily you burn. If you’re unsure, ask your pharmacist for advice.
Many sunscreens also provide UVA protection, usually shown with a star rating. A sunscreen with SPF30 and a four or five star UVA rating offers a good standard of protection.
3: Apply Sunscreen Correctly
Once you’ve chosen the right sunscreen, it’s important to apply it correctly. Most people don’t use enough. An average-sized adult needs around 6-8 teaspoons (35ml) of lotion to protect the whole body. Using less than this means you won’t receive the level of protection stated on the bottle.
Apply sunscreen around 30 minutes before going outside and reapply just before or after going out. Cover all exposed skin, including your face, ears, neck and scalp if you have thinning or no hair. Reapply at least every two hours and immediately after swimming, sweating or towel drying, even if the product is labelled water resistant.
Whether you’re staying at home or going abroad during the summer holidays, it’s essential to protect your skin from the sun’s UV rays. Here’s how to stay safe and still have fun in the sun.
4: Cover Up
If you can’t stay in the shade, cover up as much as possible. Loose-fitting clothing with a close weave offers the best protection, and a widebrimmed hat helps shield your face, neck and ears.
5: Protect your eyes
Sunglasses do more than reduce glare. A good pair with adequate UV protection helps reduce the risk of eye conditions, including cataracts, and skin cancer affecting the eyelids. Look for sunglasses carrying the CE mark or UV400 protection and choose category 3 or above if you’ll be in strong sunshine.
6: Keep children safe
Children’s skin is especially vulnerable to sun damage. Babies under six months should be kept out of direct sunlight, particularly during the middle of the day. Children should wear sunscreen, loose clothing, a wide-brimmed hat and sunglasses, and spend as much time as possible in the shade. Reapply sunscreen after swimming and towel drying.
7: Beware of heat exhaustion
Hot weather can lead to heat exhaustion and, if untreated, heatstroke. Symptoms include dizziness, tiredness, headache, nausea, muscle cramps, heavy sweating and a fast pulse. Move to a cool place, drink plenty of water, cool the skin with cold water or wet cloths and rest. If symptoms don’t improve within 30 minutes, or if the person becomes confused, loses consciousness or has a seizure, call 999.
8: Treat sunburn effectively
If you do get sunburnt, overthe-counter pain relief such as paracetamol or ibuprofen can help reduce pain and inflammation. Cool the skin with a damp sponge or flannel, apply an aftersun or calamine lotion, and stay out of the sun until the redness has disappeared. If you feel unwell or the skin becomes badly swollen or blistered, seek advice from your GP or pharmacist.

Makes 6 small jars
Ingredients
400g fresh strawberries (plus a few extra for topping)
150g raspberries (optional, for colour)
2 tbsp icing sugar
1 tsp vanilla extract
400ml double cream
150g Greek yoghurt or mascarpone (helps it hold for picnics)
6 - 8 small meringue nests, roughly crushed
Mix half the strawberries with raspberries and 1 tbsp icing sugar. Lightly crush into a berry sauce. Whip cream with vanilla and remaining icing sugar until soft peaks form. Fold in yoghurt or

Chorizo, Manchego & Olive Skewers
Makes about 20 mini skewers
Ingredients
200g Spanish chorizo ring (or cooking chorizo)
200g Manchego cheese
20 green olives (garlic-stuffed or queen olives work well)
20 cherry tomatoes
1 jar roasted red peppers
Fresh basil leaves or flat-leaf parsley (optional)
Cocktail sticks or small bamboo skewers
Honey Paprika Glaze (optional)
1 tbsp honey
1 tbsp olive oil
½ tsp smoked paprika
Splash of sherry vinegar or lemon juice
Method
1: Slice the chorizo into thick coins.
2: Fry in a dry pan for 2–3 minutes until lightly crisp and the oils release. Drain on kitchen paper and leave to cool.
3: Cut the Manchego into bite-sized cubes.
4: Mix the glaze ingredients together and lightly coat the cooled chorizo.
Make this recipe your own by adding any veggies of your choice.
Spanish Tortilla
Serves 6–8
Ingredients
700g waxy potatoes, peeled and thinly sliced
1 large onion, finely sliced (optional but adds sweetness)
6 large eggs
150ml olive oil
1 tsp sea salt
Freshly ground black pepper
Small handful flat-leaf parsley, chopped
Method
1: Heat the olive oil in a large nonstick frying pan. Add the potatoes and onion, cooking gently for 15 - 20 minutes until soft but not browned. Stir occasionally so they cook evenly.
2: Drain the potatoes and onion, keeping a little of the flavoured oil.
3: Beat the eggs in a large bowl with salt and pepper. Add the warm potato mixture and gently stir. Leave for 5 minutes so the flavours combine.
3: Heat 1 - 2 tbsp of the reserved oil in the pan. Pour in the mixture and cook over a low heat for 6 - 8 minutes until the edges are set.
4: Place a large plate over the pan, carefully flip the tortilla, then slide it back into the pan to cook the other side for 3 - 5 minutes until golden.
5: Leave to cool slightly before slicing into wedges.
Chicken Caesar
Tortilla Pinwheels
Makes 24–30 pinwheels
Ingredients
4 large soft tortilla wraps
2 cooked chicken breasts, shredded or finely sliced (approx. 300g)
4 tbsp Caesar dressing
2 tbsp cream cheese (helps hold the rolls together)
40g Parmesan, finely grated
1 baby gem lettuce, finely shredded
4 rashers crispy bacon, chopped (optional)
Black pepper
Small squeeze of lemon
Method
1: Mix the Caesar dressing with the cream cheese, Parmesan, black pepper and lemon.
Stir through the chicken until lightly coated.
2: Lay out the tortillas and spread the chicken Caesar mix evenly over each one, leaving a small border.
3: Sprinkle over shredded lettuce and crispy bacon.
4: Roll each wrap up very tightly like a Swiss roll.
5: Wrap each roll in cling film and chill for 30 - 60 minutes to firm up.
6: Slice into 2 - 3cm rounds and pack into a container.
