West Creek® Restricted Melt Pasteurized Process American Cheese Slices have a creamy mouthfeel, buttery flavor, and a restricted melt, otherwise known as slow melt/hi-temp. These cheese slices are more stable when held for long amounts of time in hot boxes, under heat lamps, in coolers, freeze/thaw applications, deep-fried applications, and stuffed applications.
