GENERAL MANAGER MESSAGE Dear Members, Cooler weather is just around the corner. We have had a great summer and we would like to thank all of our new and existing members for this. Thank you to each and every one of you for using your Club! We have many Labor Day weekend plans for our members to enjoy, starting with the last Chef’s Grill of the season! On Saturday, the 5th, we will be having a good ole Lobster Bake! We are excited for this new dining event and we will have lobster bibs and gloves to enhance the experience! Then on Monday, join us for lunch with live music and our Lobster Roll special! Also, at the pool, we will be giving complimentary snow cones for our PYC kids! Just a reminder, the pool will continue to be open every day through the month of September! Wine Society is back in full swing and we have are excited to be able to schedule the rest of the year again with our wine events! Please look on page 9 to see the schedule for the year. We have planned a couple of lakeside events for our members to enjoy! We have a Scavenger Hunt on September 19th which is a family fun event! Then a Droppin' a Hook event will be October 10th. Don’t worry if you don’t have a boat as the PYC has boats that you can rent! We will have live music out on the lake and it will be a great time to see other members while social distancing! Pulpo a la Gallega (Galician-Style Octopus) Serves: 4
Ingredients: 1 yellow onion, coarsely chopped 3 cloves garlic, peeled and crushed 1 large bay leaf 1 ½ teaspoons smoked Spanish paprika 1 ½ teaspoons kosher salt 1 tablespoon olive oil ½ cup white wine Octopus: 1 (1 pound) piece Spanish octopus 2 tablespoons olive oil Sauce: 1/3 cup braising liquid 1 tablespoon fresh lemon juice 1 tablespoon extra-virgin olive oil 1 pinch salt to taste 1 pinch cayenne pepper to taste Step 1 Place chopped onion, garlic cloves, bay leaf, paprika, salt, and 1 tablespoon olive oil into saucepan. Cook and stir over medium-high heat until onions start to soften, about 5 minutes. Add white wine to create the braising liquid. Bring to a simmer. Step 2 Transfer octopus into braising liquid, turning to coat with the liquid. Cover; reduce heat to low. Simmer 20 minutes and turn octopus over. Continue cooking until octopus is tender, another 40 to 45 minutes. Step 3 Remove from heat; transfer octopus to a large bowl. Pour braising liquid over octopus. Place bowl above a bowl of ice water to cool to room temperature. Step 4 Cover bowl with plastic wrap when octopus and liquid are cool. Refrigerate until thoroughly chilled, at least 2 hours or overnight. Step 5 Transfer octopus to a work surface and mop off braising juices with paper towels; remove as much of the purple skin as you want. Cut octopus into 3 or 4 serving-size pieces. Brush with olive oil. Step 6 Transfer braising liquid to saucepan. Bring to a boil; remove from heat. Strain out solids; transfer liquid to a mixing bowl; let cool about 10 minutes. Stir in lemon juice, extra-virgin olive oil, parsley, salt, and cayenne pepper to make the serving sauce. Step 7 Heat a grill pan or outdoor grill to high heat. Transfer octopus pieces to grill. Cook until flesh is seared, almost charred, 3 or 4 minutes. Turn and cook other side until dark brown, caramelized, and heated through, another 3 or 4 minutes. Transfer to a platter. Step 8 Slice octopus into fairly thick diagonal slices. Place on a serving dish. Spoon braising liquid mixture over the top. Dust with a bit of cayenne pepper, if desired.

Sunday, August 23, The PYC partnered with two young students, Connor and Reese, from Community School of Davidson. Their project was to help homeless families that lost there houses due to the COVID-19 pandemic. They were asking for help to make 100 bag lunches for Roof Above in Charlotte. Chef Andres and the team thought it was a great cause and couldn’t help but to offer our support on there project. We want to thank US foods for their generous donation and to all the PYC Team Members that volunteered their time. Thank you also to Conner and Reese for their wonderful idea to help people in the community during this time

Wow what a crazy but busy season it has been! Lucky for us we have the luxury to always have the water to provide that natural therapy to help carry us through these different times in our lives. Fall & Winter Boating In case you didn’t know this is prime boating time!! Don’t start thinking about winterizing just quite yet. Cooler temps, less traffic, beautiful sunsets and fall foliage make for great boating on Lake Norman!!

THE SAILING SCENE All Hands on Deck! I hope everyone remains well and safe. Our summer sailing season is almost behind us with fall closely approaching. For those on the water this summer, we have had wonderful weather with fair winds and relatively cool temperatures (especially for July and August) – with an occasional downpour to cool us off and amazing rainbows and sunsets to see us back to port! In addition, the number of talented singlehanded sailors out there is truly inspiring! The PYC Fleet Committee and Sail Fleet continue to meet regularly and adjust our events according to safety guidance. As such, and given the safe execution and success of several summer sailing events across the Lake, we are pleased to announce that our Fall Fellowship Series and Pen Cup regatta will proceed in September and October. Refer to the Sailing information page on the PYC site for Notices of Race and registration details. Whether it be racing or cruising , I continue encourage sailors to get out on the water to enjoy our amazing Lake and regularly monitor the PYC Sail Calendar for future events! COMMODORE'S COMMENTS First of all I hope you and your families are safe and healthy during these challenging times we live in. With safety always at the forefront the Fleet Committee has and continues to try to do some fun things on the Lake always keeping with Social Distancing in mind. I hope folks have enjoyed so far the awesome LAKEWIDE History Tour’s that John and Betsey Johnson have provided. The feedback has been awesome and the Johnson’s do a wonderful job, thank you John and Betsy! Your Power Fleet is working hard to put on a couple of events on the Lake making it as safe as possible for our members to enjoy. Would like to thank the Power Fleet of Chris Slocum, Pamela Black and Wade Laughey for all your efforts and coming up with some exciting events on the Lake. On Sept 19th there is a fun boating adventure being scheduled, Scavenger Hunt on the Lake with some surprises. Families can participate using their own boats, preferably with their own immediate family. We will also be holding our first Silent Auction on Sept 19th to support the two charities, Davidson-Cornelius Child Development Center and Levine Dickson Hospice House in Huntersville along with the Calvin Newman Youth Boating Safety Fund. During these very uncertain difficult times the Fleet Committee felt now it is even more importantly that these charities could use our help. The final Silent Auction will be held Sept 27th.

The team is also working on what a modified Raft Up would look like in small groups with social distancing. You would participate using your own boat and preferably with their own immediate family. More to come but looking at Oct 3rd. Also, mark your calendars for a PYC Concert on the Lake scheduled for Oct 10th. Live music on an anchored boat for all to listen and enjoy while on your boat. Special thank you to Ann and Vince Watkins for volunteering the Band to use their boat as a performance stage so make your plans to Rock the Lake. This is not a Raft Up and the committee is putting together the final pieces in place for social distancing. These events promise to be exciting Lake events for the entire family while practicing social distancing. On Sept 27th the 2020 PYC Fleet Commissioning will occur as a combined Live and Zoom ceremony. There will be dinning with several tents to practice social distancing and a special treat along the way. The final Silent Auction will occur this day too. I know this has been a very challenging year with the pandemic for all of us, our hope is these boating events with practicing social distancing will bring some fun on the Lake for you and your family to enjoy.
