GENERAL MANAGER MESSAGE Dear Members,
May is here and we have so many events for our members that we believe you will enjoy! Cinco de Mayo will be celebrated in the dining room with a tasty menu and drink specials on May 5th. The pool opening kick off party will be a Mexican Fiesta this year! There will be popsicles for the kids, games and a DJ. Mark your calendar for Saturday, May 7th. Ladies Day Out is back and this month it will be boating safety. Make sure that you make a reservation so that you do not miss this fun event. The Fleet Commissioning is Sunday, May 29th. The Saturday before we always have a complimentary breakfast hosted by the Fleet Committee. We round off the weekend with a Memorial Day cooking out on Monday, May 30th. There will be a silent auction in conjunction with the Fleet Commissioning. Harry and the Dockhands are here to serve the needs of our members. If you have any questions or need assistance, please call 704-999-4160. One of the most beautiful views of the sun going down on Lake Norman is the Wine Down Cruises we have on the Nopkehee. Please contact Nikole Taylor at ntaylor@peninsulayacht.com to reserve your spot! Commodore’s Hours are every Friday with complimentary light hors d’oeuvres and a member charge bar. The date of our Member Mixer is May 13th. It is a great way to meet other members and mingle. We ask that you please make reservations when dining. We want to be able to make sure that we have availability for you and your guests. We believe that safety at the SHPYC is very important so there will be a PFD education seminar on the 21st of May followed by a Progressive Dock Party. CHEF'S CORNER
SCALLOP AND TUNA CEVICHE Makes 6-8 Servings
SEAFOOD • 8 king scallops, cleaned and each sliced thinly into 2 or 3 slices • 4oz of tuna loin, cut into 1cm dice To prepare the dressing, mix together all of the ingredients except the salad leaves. Check for seasoning - it should taste sweet, sour, sharp and hot all at the same time • 1/2 mango, ripe, cut into dice • 1 slice of fresh ginger, finely chopped • 1/2 green chilli, deseeded and very finely chopped • 2 tbsp of pomegranate seeds, fresh • 4 tbsp of mango purée, tinned • 2 limes, juiced • 1 pinch of salt • 1/2 tsp black sesame seeds • 1/2 green mango, cut into dice Pour the dressing over the seafood and stir lightly. Leave for 3-5 minutes to allow the dressing to cure the seafood

BOATING & MARINA NEWS It’s Officially Boating Season Safety on the water Never assume anything! Aways be aware of your surroundings and be sure to anticipate the action of other boaters. If you know you have the right of way don’t assume that other boaters know the same. Safety on the water means patience and giving way to the other vessel when needed. As we get further into the active boating season be safe and be educated. You’re never too old to take a boaters education course! Here are a couple suggestions. FLEET COMMITTEE NEWS It’s the most wonderful time of the year! With a nod to Frank Sinatra who calls us to be of good cheer in December, May brings a bounty of happiness to me. The days are longer, the sun shines brighter and for more hours, the weather is warmer, and we celebrate moms, grads, and freshly waxed gelcoat on the lake. The Fleet Commissioning is SHPYCs official launch of the boating season and the brief ceremony, complete with bagpipes and celebratory remarks from club leaders, sets the stage for a grand ShrimpFest, lively band, and dreams of a summer full of new memories on Lake Norman. This is the largest event at SHPYC during the entire year, so snag your tickets for May 29th today! This year, we launch a new program for boaters of all types to earn digital badges that acknowledge their participation in education and safety events. Think of it like earning merit badges in scouts. The program is free and open to all SHPYC members. In 2022, you can earn up to eight badges including May’s focus on life jackets. To earn the life jacket badge, simply join us at the SHPYC pool for Life Jacket Demo Day on May 21th from 9-11am. You’ll learn about different life jacket types, have your current life jackets evaluated, be able to try out an assortment of styles in the pool, and even purchase new ones on the spot.
