GENERAL MANAGER MESSAGE Dear Members, Happy New Year! 2024 will be a fabulous time at the club with all the terrific improvements to share with you! I will start with an update from Matt Albert, VP of Construction and Development:
Seasons greetings from the Construction and Development team at Safe Harbor. During a recent trip to the Safe Harbor Peninsula Yacht Club I had the opportunity to walk the property while reviewing the work that has taken place these past two years. It’s been a remarkable transformation of a remarkable Club. From the Outrigger and the new Outrigger patio, to the interior and exterior Clubhouse enhancements, the updates have touched nearly every facet of esthetics and infrastructure on the property. As we look towards some of our capstone property investments being completed, I can’t over emphasize how important the partnership between you our Members, the local Operations Team and Safe Harbor’s Central Services staff has been. Without all of us rowing in the same direction, we would have been hard pressed to see the current results. As we enter 2024 we look to put the finishing touches on three remaining projects. First, the parking lot repave and concrete repair project will be completed before Christmas. Second, bringing the newly installed parking lot gates online is a priority and we are actively working with our vendors to make this a reality. These two projects will give us all a long lasting and much needed positive parking experience. Lastly, we are 25 percent of the way through our Clubhouse HVAC refresh. We appreciate your continued support as we wrap up these final projects. The HVAC refresh will see 100% of the units replaced with new, more efficient systems. We have completed replacement of several of the non-member facing systems, and the bulk of the remaining HVAC work will take place in January. Given the size and complexity of the systems supporting the kitchen, January will see some limitations on access to certain areas of the Clubhouse at certain times. The Operations team has worked diligently on a plan that will keep the Club open for Member enjoyment and our long-term General Contractor, Modern Construction, has a solid plan in place to ensure a smooth replacement process. Please be advised, there will be heavy equipment onsite during the larger rooftop unit replacements. Use care in January when the work is active onsite. It’s difficult to list all of the improvements we’ve completed since becoming involved with the Safe Harbor Peninsula Yacht Club. I can say we’ve touched nearly every major area of the property. I’m confident our investments will contribute to many years of continued enjoyment. We gratefully thank you for your continued support. Merry Christmas and Happy New Year! Matt Albert VP of Construction and Development We have Cleaning Week from January 2nd-7th and open up in the Commodores Room for dining January 8th. We look forward to serving you and to a wonderful 2024. Kathee Dishner General Manager 2 | PeninsulaYacht.com

CHEF'S CORNER Broccoli cheddar soup Serves: 4 - 6 People
Directions 1. In a small saucepan, add 1 tablespoon butter, the diced onion, and sauté over medium heat until the onion is translucent and barely browned, about 4 minutes. Stir intermittently. 2. Add the garlic and cook about 30 seconds, stirring constantly so it doesn’t burn. Remove from heat and set pan aside.
Ingredients ·1 tablespoon + 4 tablespoons unsalted butter divided ·1 small or medium sweet yellow onion diced small ·1 clove garlic peeled and minced finely · 1/4 cup all-purpose flour · 2 cups vegetable stock · 2 cups half-and-half · 2 to 3 cups broccoli florets diced into bite-size pieces + 1 cup stems · 2 large carrots trimmed, peeled, and sliced into very thin rounds · 3/4 teaspoon salt · 3/4 teaspoon freshly ground black pepper · 1/2 teaspoon smoked paprika (optional) · 1/2 teaspoon dry mustard powder · pinch cayenne pepper (optional) 4 | PeninsulaYacht.com
3. In a large heavy-bottom pot, add 4 tablespoons butter, flour, and cook over medium heat for about 3 to 5 minutes, whisking constantly, until flour is thickened. You are making a roux and it’s very important the mixture is thick or soup will not thicken properly later. 4. Slowly add the vegetable stock, whisking constantly. 5. Slowly add the half-and-half, whisking constantly. 6. Allow mixture to simmer over low heat for about 15 to 20 minutes, or until it has reduced and thickened some. While mixture is simmering, chop the broccoli and carrots. 7. Add the broccoli, carrots, and the onion and garlic you previously set aside to the pot once simmer is complete. 8. Add the salt, pepper, dry mustard powder, and optional cayenne & paprika. 9. Allow soup to simmer over low heat for about 20 to 25 minutes, or until it has reduced and thickened some. 10. While soup simmers, grate the cheese. It’s important to use a high-quality cheese because the flavor of the soup depends on it. After simmering about 20 to 25 minutes, add most of the cheese, reserving a small amount for garnishing bowls. Stir in the cheese until melted and incorporated fully, less than 1 minute.

Gaff-Rigged Flag Poles "What is the proper way to fly flags on a gaff-rigged pole?" That is probably the most frequently asked question received by the USPS Flag & Etiquette Committee. Gaff-rigged poles are used by navies, boaters and yacht clubs around the world. Onshore, the "yacht club style flagpole" with a gaff represents the mast of a ship. A gaff-rigged pole may, or may not, have a yardarm or crosstree. A gaff-rigged pole with a yardarm is illustrated below flying a yacht club burgee and an officer flag. (Gaff-rigged pole flying USPS flags) Many people are confused about the proper way to fly the national ensign from a gaff-rigged pole. As depicted in the drawing below, the national ensign should be flown from the gaff and the club or organization burgee should be flown at the masthead.
The gaff-rigged pole had its origins at sea. Because of all the sail carried by the rigging of these vessels, the flag of a nation could not be clearly viewed if it was placed at the top of the mast. The stern of the vessel was the position of command and the captain's quarters were located aft. Early boats also had the nobleman's banner, king's banner, or English ensign staff fixed to the stern rail. As sails changed, long booms sweep across the stern rail every time the ship tacked, so the ensign staff had to be removed when the ship was under way. Since the captain and other officers were still aft, the nearest position from which they found it practical to fly the ensign was the gaff. Over time, this became the place of honor to display the national flag. When the ship was moored, the ensign staff was set up again on the stern rail. 7

FLEET COMMITTEE NEWS
BY: CHRIS SLOCUM - 2024 COMMODORE Welcome to 2024! In writing this article, I reread Past Commodore Steve Hosler’s sentiments about 2023 in the December issue of The Watch – WOW! What an impressive year. Record setting on many levels, starting with the Polar Plunge and the donations the Fleet Committee raised for Special Olympics. If you haven’t seen Master Captain Harry Smith do a backflip into the lake in February, you must attend just to see his prowess! Moving forward to June, Laura Wendt, Beverly Brewer, and an army of many others put forth an impressive event with the Silent Auction and the Chips for Charity! Our Charity Partners were amazed by the efforts of our Membership. During the same weekend we also had the 25th running of the Poker Run. SHPYC was absolutely the place to be in June! Then in October the Sail Fleet hosted the 31st Peninsula Cup Sailing Regatta and it was an absolute blast. Congratulations again to all the Winners and to our very own Professional Race Officer Jim Hill and to the Sail Fleet Team for an exceptional race weekend. Past Commodore Steve, you had an amazing year, and I am sincerely proud for you, my friend! I am also most grateful for your kind leadership and guidance as you help me prepare for my 2024 year as Commodore. Planning for 2024 began months ago and it is going to be similar to 2023 with many exciting events. Here are just a few for your to consider adding to your calendar: ▪ February 10th – Commodore’s Ball and Dueling Pianos ▪ February 17th – Polar Plunge benefiting Special Olympics ▪ March 21st – Volunteer & Sponsor Reception ▪ March 24th – Spring Fellowship Regatta ▪ April 7th – Sail Crew Party ▪ April 20th – Spring Lake History Tour ▪ April 27th – Car, Boat Show and Blood Drive ▪ May 18th – Raft Up ▪ May 25th – Pancake Breakfast ▪ May 26th – Fleet Commissioning ▪ June 15th – Parent-Child Fishing ▪ June 21st – Dueling Pianos

Post-Covid we have spent time traveling, seeing family and friends, and experiencing new adventures. It has been wonderful because connection is an important part of life. But when the travel is over and the adventure experienced, it is refreshing to know you are returning home. To a place that is comfortable, warm, and familiar. This Club is home to many. It is where you are greeted by name, where you see your friends and where you long to be when you aren’t traveling. It is home – so I say: Welcome Home! I look forward to seeing you in 2024 at the Commodore’s Ball with Dueling Pianos, or any one of our many events. Please let me know your thoughts on how we can make your member experience even better. Safe Harbor Peninsula Yacht Club is doing an exceptional job making our Club on Lake Norman a special place to enjoy with family and friends.
